Dear Members, For those who left sunny and hot Miami Beach for the summer, welcome home. Hopefully you have noticed the projects we completed this summer to enhance the club. We are looking forward to a great season. During the off season, in addition to the physical improvements we made, the management team focused on staff training. The staff and I completed KemperSports TRUE service training modules 1 through 4 and established training leaders headed by Food and Beverage Director Jose Mera. Our service and kitchen staff completed training sessions focused on service techniques, menu knowledge and preparation techniques to provide a more consistent, improved level of quality. We are also excited to welcome new staff who have joined our team including Director of Tennis Santiago Pinzon, Pastry Chef John Maieli, Sous Chef Julio Guevera, Outside Services Supervisor Joe Healy, Head Mechanic Brian Cooley and our 8 international student interns who have joined our food and beverage operation. This season we have enhanced our tournament schedule, our food and beverage and social offerings as well as fitness and tennis. I implore you to review the recent calendar that was created by Member Relations & Communications Manager Brittany Fierman to plan your season. We have expanded our seasonal hours of operation beginning Monday, November 2. Please see the posted hours of operation in the back of this newsletter, on our website www.lagorcecc.com, in the calendar and posted around the club. I look forward to my second season at La Gorce and invite you to continue to provide your feedback. La Gorce is your home away from home and our dedicated staff and I are committed to ensuring that we exceed your expectations.

After an extensive search of very skilled candidates we have selected Maiya Tanaka and Kelly Cobb to join us for the 2015 – 2016 Golf Season. We are thrilled to add these incredible professionals.

Ernie Ruiz, PGA Golf Professional

Maiya joins us from Atlantic Golf Club in Bridgehampton, NY. Over the past year Maiya has been an instructor at

Atlantic and has been under the tutelage of Rick Hartmann. Prior to joining Atlantic, Maiya was a touring professional on the Symetra Tour. She has appeared on the Golf Channel’s Big Break television series as well as CBS’s The Amazing Race. Maiya was a letterman at UCLA where she completed her course studies and graduated with a Bachelor of Arts in Sociology. Maiya will join our team in October and will be an instructor as well as work with Julie on the WGA and with merchandising. Maiya Tanaka Kelly joins us from Fox Chapel Golf Club in Pittsburgh, PA. He is a recent graduate of Mississippi State University’s Professional Golf Management program, where he earned his PGA Class A card as well as a bachelors degree in business administration and marketing. Over the past four years Kelly has completed internships at incredible clubs such as, The Country Club of North Carolina, The Broadmoor Golf Club, Cherry Creek Country Club and The Country Club of the Rockies. This past season Kelly began his professional career at Fox Chapel and has been responsible for administering Member events and club operations. Kelly will join us in October and will assist Ernie with tournaments and daily operations. He will also assist in our instruction program. HITTING OUT OF THE DEEP ROUGH Over the summer the Bermuda rough tends to get a little long due to all the heat and rain. At times it can be very penal. Here are a few quick tips on how to get it out of the rough successfully: 1. Make sure you take a club with enough loft on it. The biggest mistake I see is people try and hit too much club out of the rough and the ball doesn’t get enough loft to get out of the rough. 2. At address try and put a little more weight on your front foot and keep it there throughout the swing. A lot of people try and help the ball out and end up falling back on the shot. In order to get the ball up you need to get thru the shot, not hang back. 3. Move the ball position towards middle of stance and try to swing more upright. Getting more vertical with your swing will help catch the ball first and not the grass. Hope these help. See you on the range. Dear Member’s Welcome back to South Florida and La Gorce Country Club. We have been looking forward to this year’s golf season and hope that you enjoy many great rounds of golf and find course conditions satisfactory on a consistent basis. During your absence we have made considerable efforts in preparing the course for what we hope will be a great golf season for each of you. This has included a brief course closure during the middle of August to perform various mechanical and maintenance practices that we hope will provide outstanding playing conditions this fall. In previous years the highs and lows of seasonal weather in South Florida have been a determining factor in how the department approaches daily and even seasonal maintenance at La Gorce, but with the approved restoration scheduled for next summer the course maintenance department will be entirely focused on playing conditions this season. CADDIE CORNER Caddies from our team have been spread around the world including California, Michigan, Wisconsin and Massachusetts and as far away as China. This summer, everyone has checked in and reported they are having a great summer. Here at La Gorce, we have worked hard to develop the team that remained behind and worked the “Dog Days” of summer. A special congratulations to Thomas Rose who recently married his bride Stephanie in Lima, Peru as well as stepped up to assist Cameron Gleaton to help drive the caddie program this year. We would also like to congratulate Keith Fowler and Joey Cruz who each had beautiful baby girls over the summer. This season, we look forward to providing the very best caddie Cameron Gleaton, Head Caddie Manager

experience for our members and it will all start at the driving range, as you will see more caddie and professional assistance. We hope this enhanced service will help transition better game-play to the golf course for our members. We look forward to welcoming everyone back to the club and having our very best season!

FOOD & BE V E R AGE Dear Members, Welcome Back! We hope everyone had a great summer. Our staff have been busy preparing for the new season and the arrival of our 8 new international interns. While we have eight interns coming, five of the interns will be on the floor helping with our front of the house and dining service while the other three will be in the back of the house helping Chef David and his culinary team whip up some delicious meals. Some of you may be asking yourself why bring in interns? There are quite a few benefits:

MEET OUR NEW INTERNS: Vasilică Fati - VASILICĂ currently attends the American Hotel Academy in Brasov, Romania. Vasilică was a Waiter at Daios Cove Luxury Resort and Villas 5* in Vathi, Agios Nikolaos –Crete , Greece where he worked as a waiter in the restaurant. In addition to working in the restaurant he also assisted during events and helped in room-service. Costinel-Marius Javla - COSTINEL currently attends the American Hotel Academy in Brasov, Romania. Costinel was the F&B Assistant Waiter in Aldemar Olympian Village, Greece, Skafidia. Some of his responsibilities during this time was as a food and beverage server to the customers and prepare and serve specialty dishes at tables Mihai Martin Piroska - MIHAI currently attends the American Hotel Academy in Brasov, Romania. Mihai was a waiter at the “Kronwell” Hotel, Brasov/Romania where he not only helped to prepare for their events but also served. Alexandru Ioan Tecu - ALEXANDRU currently attends the American Hotel Academy in Brasov, Romania Alexandru was an Assistant Waiter at the Domes Of Elounda, Greece where he welcomed guests and served drinks.

Kiera Huntley - KIERA graduated from Grimsby institute in 2015. Kiere worked as a Chef at Warren Lodge, Scunthorpe where she planned menus, prepared, seasoned and cooked food or oversaw their preparation and monitored the quality of finished dishes. Daniel Chilton - DANIEL graduated from Grimsby Institute of Higher Education in 2012. Daniel worked at The Coach House in Humberston as a Commis chef. Daniel’s responsibilities include working as a part of a team in a busy restaurant and in the kitchen preparing and serving food made to order, often working in very busy kitchens. Jack Archer - JACK is currently a Student at Stratford-Upon-Avon College, working towards his Level 3 Advanced Cookery and Pastry and Confectionary qualifications. Jack worked at Jamie Oliver’s Fabulous Feasts as a Commis chef where he assisted senior chefs in preparation and service of high quality food, in mass catering style of fine dining service Catalina-Adina Topala - CATALINA is currently a student at University of Sunderland, BA (Hons) International Tourism and Hospitality Management. Catalina has worked in the past at Rustic Restaurant, Saveni as a Waitress where she learned how to successfully multitask.

HOW TO: THROW THE PERFECT HOLIDAY PARTY IN FIVE EASY STEPS The holiday season means plenty of gatherings, parties, and hosting duties, all of which can certainly get a little overwhelming. Organization is always key to ensuring a stress-free event. To help you stay on top of things and handle everything with grace, I’ve laid out five easy steps for hosting the perfect holiday party.

Step One: Give Plenty of Notice Send party invitations at least two to three weeks in advance. To save time as you’re gathering RSVPs, you can certainly list “regrets only” on the invitation, but I find this works best for more informal celebrations. Step Two: Stick to a Budget Create a realistic budget for your event and then make, buy, or borrow any decorations you’ll need to bring your party vision to life. Choose complementary details to ensure the overall look and feel is cohesive. Be Creative and do decorations at home for Example, leaf-shaped shortbread cookies and dip halfway in chocolate. Step Three: Play With Your Food Be creative with your menu and presentation. Shop locally and allow the season to dictate what you’re serving—it will always be more affordable and your guests will appreciate the freshness of your fare. These days, “naked” cakes are very popular and elegant. These simple, unfrosted cakes are easy to make and add instant charm to any dessert spread. Mother Nature is the ultimate hostess with the mostess, so take advantage of your surroundings to embellish your food presentation and decor. Step Four: Break the Ice Adding thoughtful touches, like a delicious signature drink or a hand-selected music playlist, will go a long way in making your guests feel festive and comfortable at your party. Nothing gets guests mixing and mingling like libations and/or a killer soundtrack. Step Five: Finish Well At the end of the evening, send guests home with a thoughtful parting gift. You could prettily package up the leftovers or perhaps offer a to-go sweet treat. Lastly, be a responsible host and keep the number of your favorite car service handy, just in case someone needs a hand getting home safely.

Santiago Pinzon, Tennis Director Dear Members, I would like to take this time to formally introduce myself and my staff. My name is Santiago Pinzon, and I was recently hired as the tennis director for La Gorce. Some of you might remember me because I worked here from 2011 to 2014 and I am really excited to be back and working together with all of you. I have a great team around me who help me take care of our 6 tennis courts and making sure all of our members leave the courts with a smile. Many of you probably already know Joe who has been with La Gorce for 35+ years. Joe is a true asset to our tennis staff. Joe takes care of scheduling all our lessons, organizing our clinics and making sure our members know about all our upcoming events. While Joe helps keep us organized at the Pro Shop, Diego, Gonzalo , Maddie, Juan, and myself are out on the courts providing lessons, tennis clinics, and from time to time filling in when a member needs an extra player for doubles. With all the tennis activity, Carlos and William take on the responsibility of grooming the courts daily, which is why our courts are always looking so good!

Improve Your Scapular Mobility With This Simple Shoulder Stretch Tight shoulders and poor posture are increasingly common ailments nowadays. Sitting hunched over in front of your computer or on your smartphone for countless hours every day creates a limited range of motion in the muscles surrounding the shoulders, and over time, this can cause all sorts of nasty issues such as pain, “frozen shoulder,” and kyphotic posture (the dreaded hunchback posture). That hunched over posture, which comes from too much scapular protraction and thoracic flexion, is worsened still by some of the most common exercises Rebecca Evans, practiced in the gym, including: Fitness Director • Bench press • Chest fly • Parallel bar dips These exercises are just a few examples of motions that exaggerate the postural issues most of us already have from our daily lives. I’m not suggesting that you necessarily remove these types of exercises; however, to fix or prevent these common postural issues, you’ll need to incorporate some restorative motions into your routine.

SCAPULAR MOBILITY PROGRESSION #1 Notice the angle of the elbows in this picture. Be sure to maintain that. If you’re particularly bound up between the shoulder blades, you’ll definitely want to start with this first progression. •

Start by lying down on your belly.

Keeping your belly on the mat, come up on your elbows.

The shoulder girdle is a complex area of the body, made up of at least 16 major muscles. The muscles of the shoulder girdle are responsible for controlling movement in the upper extremities, and even play a role in lower extremity stabilization and movement (from the connections from the shoulder to the spine).

Make sure your shoulders are directly above your elbows, keeping your elbows bent at 90 degrees.

So, when your shoulder girdle isn’t functioning optimally, you can experience movement limitations and/or pain throughout a large area of the body. When the shoulder blades and their surrounding muscles are limited or tight, it will negatively affect your posture and your ability to perform many exercises properly.

Push away from the ground with your elbows, rounding your back while keeping your head neutral.(Remember, keep your elbows at the same angle, and keep your belly on the mat.)

Hold for 3-5 seconds then relax down.

For example: When trying to do a pull up, you may not be able to achieve full flexion of the shoulder.

Squeeze your shoulder blades together, hold for 3-5 seconds then relax.

Repeat 5 times.

Your limited mobility will make it difficult to perform a proper handstand.

SCAPULAR MOBILITY PROGRESSION #2

You may not be able to do many movements on the parallettes, as you won’t be able to fully depress your shoulders.

Keep lower back in place while rounding the upper back.

UNDERSTANDING THE CAUSES AND RESULTS OF TIGHT SHOULDERS

And outside of exercise-related limitations, you may experience the following: • Difficulty reaching to get something off a high shelf. •

Pain when lifting heavy objects.

Rounded shoulder posture.

SCAPULAR MOBILITY STRETCH In an ideal world, we’d all lead active lives that didn’t involve so much time hunched over a desk or steering wheel. But that’s not the world we live in. So, the best way to combat the postural issues most of us battle – whether we already have or are trying to avoid them – is to incorporate some restorative mobility drills.

Once you’re comfortable with the first progression, you can make this exercise a little more difficult with this next progression. •

Get down on your hands and knees, keeping your knees bent at a 90-degree angle and your shoulders directly above your wrists.

Without moving the rest of your body, including your hips, push into the ground with your hands and round your back towards the ceiling.

Focus on relaxing the lower back, and only rounding your upper back.

Hold this rounded position for 5 seconds, focusing on opening up the back as much as possible.

COMBAT YOUR SHOULDER ISSUES HEAD ON Don’t let your shoulder issues get out of hand. The progressions above won’t take a lot of time out of your day, but with just a couple minutes every day, they’ll likely make a world of a difference in your scapular mobility. It’s up to you to figure out what level you’re starting from, and which progression you are ready for. But your success with this stretch, like everything else in fitness, comes down to feeling your own limitations, and figuring out what you need to work on.

Relax then drop your chest down to the floor, drawing your shoulder blades toward each other.

Make sure to keep your stomach tight and neutral, keeping the movement at the chest and upper back.

As you move through these progressions, you will find that, over time, your mobility and posture will improve. Your pain should decrease, and your ability to do all the exercises you want to do will drastically increase. So stick with this stretch, do it daily and as often as you feel you need to, and you’ll feel the positive effects in no time.

Keep your arms straight throughout the movement.

SCAPULAR MOBILITY PROGRESSION #3 Keep everything locked into place as you squeeze your shoulder blades together. After working with the second progression for a while and getting comfortable with that, you can work on this next progression. This will be quite a bit more difficult but will really enhance the stretch in that area. •

Come into a plank position with your feet together.

Lock out your knees, squeeze your butt, and pull your heels back.

With your hips locked into place, push away from the floor with your hands, rounding your back. Keep your head neutral.

Hold for 5 seconds then relax your shoulders.

Again, keeping your hips in place and your arms locked out drop your chest towards the floor.

Bring your shoulder blades towards each other, squeezing those muscles.

Hold for 5 seconds then relax.

Repeat 5 times.
