MARTIN’S BBQ Healthy Fast Food

Martins BBQ has been a family owned business since 1962, the founder Martin Rosado sold it to his grandson, Raul

Rosado, in 2000. And that is when he began developing Martin’s BBQ as a franchise. There are 22 locations across the island, nine of which are franchises and thirteen are still under Raul Rosados’ ownership. Aguadilla is home to two of the franchised chain. For twelve years, Martin’s BBQ has served us healthy fast food out of their store front on Rd. #2 and less than a year ago they opened up a store front on the booming restaurant lane Rd #110 outside of Gate 5. They currently provide jobs to twenty-seven residents of Aguadilla. Martin’s BBQ prides itself in good service and is committed to providing the healthiest fast food around. “We are in the fast food business, therefore there is no comparisons when if comes to other fast food restaurants, lets take the big fast food chains for instance; they don't come close to our

standard of quality, we have rotisserie chicken, made to order, broiled root vegetable, our rice is made regularly…” explained Carlos Nuñez, one of Aguadilla’s franchise partners. “And as for the road side trucks they use frozen grade C chicken.” He went on to explain that the chicken is never frozen, it goes from the farm straight to processing where it is seasoned then shipped to the 22 locations across the island and is used with in 1-2 days. Martin’s BBQ is a healthy option for a quick meal that uses local products. They even have a special menu that is 600 calories or less. En Martin’s BBQ el buen servicio es primordial y están comprometidos en servirle la mejor comida rápida y saludable en esta area. “Nosotros somos un fast food pero no hay comparativa con los demás fast food, si venimos hablar de las cadenas de fast food no hay manera de que toquen nuestro producto, el pollo es asado, hecho al momento, tenemos el arroz constantemente hecho fresco, viandas hervidas…”, explica Carlos Nuñez, socio de las franquicias de Aguadilla. “En cuanto las guaguas de pollo asado, los precios son iguales que nosotros pero el pollo es congelado y de grado C”. Luego explicó que el pollo de Martin’s BBQ nunca es congelado vá directamente de la granja al procesamiento donde se sazona y es enviado a las 22 tiendas alrededor de la isla el mismo día y se utiliza en 1 a 2 días. Martin’s BBQ es una opción saludable para el ámbito de la comida rápida que utiliza productos locales. Incluso tienen un menú especial de 600 calorías. THE ART OF CARLOS SANTIAGO Archeological Artifacts & Resilient Reminiscence by Alexander Rosado

Carlos Santiago's solo exhibition at the Guanica Museum opened recently and as I entered the well lit gallery space I immediately felt both a welcoming force and a surrounding almost humid sense of earthy nature as I began to notice the paintings on the walls. A furtive feeling floods me as if being suddenly transported to a collective ancestral reunion space, a shamanic cave where materials and symbols present express a desire of transferring and communicating some ancient shared dialect, visceral in spirit, and somewhat foreign in ways with respect to time. The vernacular was made understandable at a deeper level where the magic of the land, the earthen sedimented clay which life has haunted, consumed, and made its abode, maker of men, myths and collective memories, fused with the grace of Carlos memories filled the space. Gaia, Sophia, Boriquen, mother land, common spirits present in our muses – deep rooted presence felt transcending time and space. The beauty, reminiscent of pigmented archeological artifacts and findings, reflecting muted hued tones where irrepressible and resilient memories disperse and impress themselves, possessing the body of work. Carlos states the following: “I believe that the recurring theme in my work is the quest for an identity and an archeological memory. My work is a reflection of what I am and what I have been, my identity and my work go hand in hand and I can not detach myself from my identity. The elements that make my work persuasive are the drawing or draftsmanship which is our DNA in art, and my life experiences which are also unique, and I believe that we must add the character with which we embark in the work. I am a laborer of art and nothing immerses me more than when creating, in that moment the best version of Carlos Santiago comes forth.”

In 2012 he treated us to a cabaret-like atmosphere with his first Ep, La Nave De Los Locos, with a sound that served as his introduction into the local scene and passport to Mexico City.

When Julitza Nieves first participated

in the Mayaguez Mango Festival in 2006, she didn’t realize she was starting a business. She crafted her first mango jam and her mother entered it in the dessert competition at the festival. She won. Three years later, Productos Montemar opened their first certified kitchen in the Camaseyes neighborhood in Aguadilla. Julitza started with and maintains the vision of a sustainable food system, bringing high quality products that use only ecologically grown fruits from the island. She even keeps it local with her sweetener, using evaporated sugar cane juice, and maintains the highest percentage possible of purity in the products.

The company believes in providing

accessible and delicious products and fresh, organic fruits to their island community, while being true to the land and maintaining the highest quality. Julitza can’t do this alone. Her partnerships with other farms allow Productos Montemar to keep a wide selection of local products. While most ingredients come from the small farm where the factory is located, she also partners with Guillermo, an organic farmer that owns two farms in Cabo Rojo and San German, where the rest of the fruits (and their delicious peanut cookies) come from. No source is too small and even the tamarinds come from a neighbor’s yard.

Productos Montemar is in a unique position of being an agricultural company and a certified artisan. They are Certified Naturally Grown, but are also licensed as artisans because of the focus on using local fruits for their products. Some of the ingredients that are a challenge to find include jobos, guava and mamey. This season you can find new kinds of products from Productos Montemar. One of the most popular is a green mango-turmeric chutney. In addition, you’ll see more no sugar added jams and juices, as well as gourmet products with flowers. The clubhouse was built with the Gulf Concrete Technology system, consisting of a foam interior and a concrete exterior on the walls and roof to keeps the interior cool and comfortable and reducing the need for continual air conditioning. The entire project was designed to protect the environment by collecting rainwater from the roof, using grass-crete in the parking lot, gravel driveways and pathways in which all the water is used or absorbed on site. The lighting Taino Mini Golf installed is mostly Solar powered LED lights or conventional LED lighting so as to minimize our use of electricity.
