we’d check in with Chef Rick Bruggeman and see how things are going. Many customers know Chef Rick from Pottawattomie Country Club, where he was Executive Chef for 26 years.

rt is alive and well in Michigan City and the Franklin Art District Artists (FADA), a collective of working artists, artisans, photographers, and makers, recently moved to a new space at 617 Franklin Street. Their former location was just a block or so away, but it was on the 2nd floor of a building without a working elevator. The new street-level space will provide much greater visibility and will be ADA compliant and, thus, accessible to all. Visitors will have the opportunity to see FADA artists at work and, while not all artists will be there all the time, during the week one or more artists are typically in residence, working in their respective studios.

New Speakeasy at the Spa in Porter

A

90-year-old horseshoe bar salvaged from a Chicago saloon is the focal point of the new Speakeasy at the Spa, which opened recently in Porter. General Manager, Ed Kis, invites everyone to check out the venue, which also features a tin ceiling and a vintage Seeburg jukebox. The atmosphere harkens back to the Prohibition era, when people flocked to speakeasies to imbibe bootleg liquor, listen to music, and socialize. The Speakeasy at the Spa is open seven days a week (4-11pm) and will feature live entertainment and light fare. hen Marie Price and her husband moved to Long Beach from Elmhurst, IL, they really didn’t know anyone. One day Marie wandered into Posh, a tiny consignment store on Whittaker. She told the owner that if she ever needed help, she would enjoy working there on a part-time basis because she thought it would be fun and a good way to meet people. Marie began working there and within a year or so, the former owner approached her about buying the business. Without hesitation, Marie agreed and the two formalized the agreement in August of 2013. When the lease on the original space ended, Marie moved Posh to a neighborhood nearer downtown New Buffalo, doubling the size of the store. With more room, it also meant that Marie could double the number of consigners, who provide Marie with a wonderful inventory of clothing, shoes, jewelry, and accessories. Marie accepts designer and other distinctive brands—all high quality and gently used—which customers may purchase at a price far below the original retail cost. The merchandise is attractively displayed and Marie and her staff are both knowledgeable and helpful. Women are sometimes accompanied by their spouse and Marie has a seating area where husbands or boyfriends may read the paper while their partner shops. Consigners’ items are kept for three months, at the end of which items are either returned to the owner or donated (with the consigner’s permission) to charitable organizations such as Samaritan Counseling and The Changing Room, which helps homeless military. Marie believes in giving back to her community and this year will donate a percentage of her net profits to local charitable organizations. Posh Upscale Consignment is located at 109 Barton St., and is open every day but Tuesday from 12-5pm EDT. According to Marie, “At Posh, we accept everything from casual to formal and from cotton to mink. We also have a fabulous collection of jewelry and accessories and a limited number of men’s items.” She adds, “When I began working at Posh one day a week, I never expected to become the owner, but I have had the best time and have met the most wonderful people, not just from New Buffalo, but from all over. A Perfect Match

T

here’s something to be said about being in the right place at the right time. If Miles Buell had declined, rather than accepted, a last-minute invitation to attend the United Way Fall Gala at the Blue Chip Casino just over two years ago, he might not have met Alexis Pontius, the woman who became his wife in September. Alexis serves on the United Way Board and attended the Gala that night. She noticed Miles from across the room and mentioned to her cousin, who was also in attendance, that he looked like the kind of man she’d like to meet. Later in the evening she was introduced to Miles and the rest, as they say, is history. Miles contacted Alexis the next day and they had their first date shortly thereafter. By Thanksgiving they were seeing each other three or four times a week, and by Christmas they knew that they would spend their lives together. To others it may have seemed like a whirlwind courtship, but, as Alexis says, “People say ‘when you know, you know,’ and I wasn’t sure I believed that until it actually happened to me.” Miles added, “I knew from the beginning that

The Buells she was the one for me.” They felt an incredible connection and quickly knew that they had found their soul mates. Alexis and Miles had made plans to attend a First Friday event in the Uptown Arts District in Michigan City on March 6th of last year. When Alexis got home from work she found that Miles had gotten there first and decorated the house with lighted candles and photos from their courtship. He proposed and presented Alexis with a ring he had designed, based on discussions they had

and rings they had looked at together. Prior to asking, Miles had talked to Alexis’s father and gotten his blessing and had also told his own parents of his plan. Once Alexis said yes, they called both sets of parents who immediately rushed over to celebrate the engagement. Alexis is a graduate of St. Mary’s at Notre Dame, where she earned a degree in Communications Studies. Her family owns Al’s Supermarkets and from the time she was 14 years old, Alexis worked Continued on page 8.

rowing up, they once lived within a few blocks of one another at Stop 28, but it wasn’t until 5 ½ years ago that Bridgette Crowe met her future husband, Jordan Gallas. Bridgette, a Purdue graduate, had lived in Chicago for a decade, working in the finance industry as a regulatory compliance professional. In 2010, she moved back to the beach area and continues to work remotely from home and travels to see clients. Jordan, whom she met soon after her return, is a graduate of Indiana University and is a real estate broker with his mother, Micky Gallas, owner of Micky Gallas Properties. He is also the Head Coach for girls’ and boys’ golf and Varsity Assistant Coach for boys’ basketball for his alma mater, Marquette High School. Bridgette was out with girlfriends at Ye Olde Benny’s (now Swingbelly’s) when one of them introduced Bridgette to Jordan. When asked when she knew Jordan was “the one,” Bridgette answered, “Oh, I knew almost right away that he was someone special.” Jordan said that he knew, too, that Bridgette was someone he wanted to get to know

The Gallases better and once they met, they never dated anyone else. Their friends called them “The Long Beach Lovebirds.” They got engaged on Christmas Eve 2014 and were married just a few weeks ago, on New Year’s Eve at the Grand Beach Clubhouse. Jordan and Bridgette were married by Ryan Webb, the husband of Bridgette’s best friend, in an extremely personal ceremony. Jordan’s youngest brother, Braedan, walked Bridgette down the aisle and the couple wrote their own vows and recited them in front of 200 guests, many of whom

are from Long Beach and the immediate area. Jordan offers this advice to other couples: “If the planning is not fun, there’s a good chance that the wedding and reception won’t be either. Everyone is there to celebrate you and you need to make your wedding reflect who you are as a couple.” Bridgette agreed and added, “Non-traditional is the new traditional.” When asked to explain, she said, “Some would call our wedding non-traditional, but it was exactly what we wanted. in the family business, through high school and college. She always knew she wanted to work in the legacy business, which was founded by her grandfather and is now approaching its 70th year in business. She went on to earn an MBA from the University of Notre Dame and is now Vice President of Al’s Supermarkets. Miles graduated from Purdue with a degree in Business Management and has worked for Arcelor-Mittal Burns Harbor for eight years as an 80” Hot Mill Process Manager. Both are extremely organized, which helped enormously as they began planning their wedding. They were wed September 19th at the Journeyman Distillery in Three Oaks, located in the historic space formerly occupied by the Featherbone Corset Factory. The wedding was held outdoors, and Alexis was escorted down the aisle by her proud father. They were attended by Alexis’s twin sisters and Miles’s sister and brother, and were married by family friend, Bob Bline, who has worked for Al’s for more than 40 years. Alexis and Miles wrote their own vows and exchanged them in front of 100 family members and close friends. The reception followed the ceremony in the Journeyman’s beautiful, rustic event space and, as a local business owner, Alexis wanted to support local vendors—a commitment shared by Miles. Their cake and flowers were provided by Al’s, and, like their friends Bridgette and Jordan Gallas (with whom they share the cover of this issue of Lakefront Neighbors) they hired Chef Brad Hindsley of Spire Farm-toFork in La Porte to cater the reception, and Alison Hoover Photography (Alison shoots all of our cover stories) to record their special day. Miles, his brother, father and Alexis’s father even purchased their wedding day suits from local clothing store, LR Men’s Clothier in La Porte. Alexis and Miles are extremely organized in their professional and personal lives, skills that served them well in their planning efforts. Using spreadsheets, Alexis tracked every detail, which resulted in a stress-free wedding. Miles and Alexis share this advice, “The key to planning a perfect day is to remember that it’s not really about the wedding—it’s about the marriage and the relationship.” They obviously have their priorities straight, and keeping the focus on the relationship is sure to result in a long and happy married life.

in lieu of traditional bridesmaids and groomsmen standing up with us at the altar, we had our closest friends and family sit in the front row after walking down the aisle. They were designated with “noisemaker” boutonnières for the guys and flower rings for the ladies. We wanted our wedding to be a great celebration and having it on New Year’s Eve—the biggest party night of the year—was perfect.” Even Bridgette’s ring, which features a light yellow diamond, is unconventional. Yellow is her favorite color and during a trip to New York the couple went ring shopping. Bridgette had an idea of what type of ring she’d be getting, but had no idea when or where Jordan would propose. Jordan mentioned, “It’s a big purchase and you can’t really return it, so I wanted to make sure I got something she didn’t just like, but loved.” As for her dress, while in New York she tried on several dresses and when she got home she went to Paris House of Bridal in Michigan City, which is owned by her neighbor. She tried on the same dress she’d seen in New York and there was another dress she wasn’t even going to try on. The owner urged her to do so and, sure enough, that was the dress she picked. Jordan and Bridgette wanted to support local vendors and chose Chef Brad Hindsley of Spire Farm-to-Fork restaurant in La Porte to cater their wedding. They have nothing but the highest praise for Hindsley. Their good friends, Alexis Pontius and Miles Buell (with whom they share the cover of this issue of Lakefront Neighbors) ended up using him to cater their reception at Journeyman Distillery. Both couples also chose Alison Hoover Photography (Alison lives in La Porte and also happens to be Lakefront Neighbors’ official photographer). Bridgette and Jordan spent their honeymoon in Cabo San Lucas and reside in Sheridan Beach with their dog, Boomer, where their love story continues.

Chef Rick of Patrick’s Grille in Michigan City By Barbara Voris Eastman

W

hen you meet Rick Bruggeman, Executive Chef at Patrick’s Grille in Michigan City, you’ll be surprised that he is as young as he is. You’d expect someone who has been cooking professionally for more than 30 years to be much older, but Rick went straight from high school to learn his craft. He grew up on the north side of Chicago and is a graduate of Washburn Culinary Institute, which was founded more than 75 years ago and is one of the oldest and most respected culinary schools in the country. After completing his training, Rick worked at the renowned Zum Deutschen Eck, which was a landmark German restaurant in Chicago until it closed in 2000 after a successful 50 year run. In addition to giving Rick the opportunity to hone his cooking skills, it also provided him with his life partner. Rick met his wife there (she was a waitress), and they have two grown sons and live in Chesterton. After moving to Indiana, Rick worked for the popular Spa Restaurant in Porter, and then moved on to Pottawattomie Country Club, where he was Executive Chef for 26 years. It was there that he met Patrick Wilkins, owner of Patrick’s Grille. When Patrick approached Rick about coming on board as chef for the restaurant he planned to open in the former Rodini’s space in Michigan City, Rick was excited to make the move. Patrick and Rick worked together to develop the menu for the sophisticated, upscale restaurant that opened in early August. We did a story about the new

Chef Rick Bruggeman with a few of Patrick’s Grille fine aged steaks. addition to the local dining scene in the September issue of Lakefront Neighbors, and decided to check in with Chef Rick to see how things are going. “People have responded very favorably to Patrick’s, and in less than six months we have built a loyal clientele. Our customers like the fact that they can enjoy fine dining in a casual atmosphere. People particularly love our steaks—21-day wet aged Black Angus, which are trimmed and hand cut in house,” observed Patrick. He continued, “We offer Friday night fish specials, which have been well-received;

Saturdays people come in for our slow-roasted prime rib (available in 10-, 14-, and 18-ounce portions); and on Thursdays we do a succulent rack of lamb.” According to Patrick, “The bar has really been a hit. In addition to 21 craft brews on tap (and several others in bottles), we have a full range of traditional and specialty cocktails. People often sit at the bar and order a variety of appetizers to enjoy with their beverages. The number of “upscale bars” in Michigan City is very limited, and we seem to have struck a chord with adults of all ages who want a nice place to socialize, enjoy a drink and something to eat, and they very often move over to a table for entrees. “Among the most popular appetizers are the colossal shrimp cocktail with spicy sauce, and flaming saganaki, which we call “Tribute to Larry” (in honor of Larry Fegaras, who was the owner of Rodini’s). All of our desserts are made inhouse and the apple strudel recipe I learned to make years ago at Zum Deutschen Eck is on the menu and very popular, as is our New York-style cheesecake, crème brulee, and mud pie, served with coffee ice cream from Valpo Velvet.” Patrick’s Grille is located at 4125 S. Franklin and is open seven days for dinner. Lunch is served Monday through Friday until 2:00pm, after which we offer our bar menu from 2-4pm. There are daily lunch specials and Rick says that because some of the kitchen staff are originally from Mexico (including his sous chef, Danny Diaz), you can often get great, authentic Mexican food at Patrick’s. Preheat oven to 325º. Grease a 9” x 3” deep heart-shaped cake pan and line bottom with parchment paper cut to fit bottom of pan. Grease and flour entire pan, including sides, and shake out excess flour. In a heavy saucepan, combine chocolate and butter over med-low heat and stir until melted and smooth (about 2 min.). Remove from heat, let cool slightly. Combine eggs and sugar in a large bowl until well blended. Whisk in chocolate mixture; then stir in flour, vanilla and salt until combined. Pour batter into prepared cake pan and bake until cake is slightly puffed in center, about 1 hour and 10 min. Transfer to wire rack and let cool until warm. Invert onto serving plate, carefully lift pan off and carefully peel paper off and let cool completely.

Combine cream, butter, and corn syrup in a small, heavy saucepan. Bring to a boil and remove from heat. Stir in chocolate and then place back on low heat and whisk until chocolate melts and mixture is smooth (about 1 min.). Remove from heat. Tuck strips of wax paper under edges of cake; pour warm ganache over top and, using a frosting spatula, coax glaze over the edges. When glaze sets, carefully remove wax paper. Let cool and then refrigerate until set (about 1 hour). Melted white chocolate can be drizzled over top using pastry bag or plastic storage bag with a small corner clipped off. Refrigerate overnight before serving.

e define “love” as a warm personal attachment or deep affection for someone. Like us, dogs need more than love for emotional well-being and with Valentine’s Day approaching, I thought I would offer some guidance about the relationships we have with our dogs, which goes beyond making sure our dog has the necessities in life: shelter, a warm bed, exercise and a healthy diet. Spoiling them with lots of treats and new toys isn’t the answer either. What your dog truly needs is structure, discipline, rules and boundaries in order to feel secure and loved. Your dog needs you to be their leader and the only way to demonstrate that is through our SCHUCHAT actions. I’ll ask my clients to describe a typical day for their dog. Oftentimes, they’ll walk me through eating and exercise rituals. When I ask them. To tell me five things their dog earns, I usually get a puzzled look. I call this a “No Free Lunch” protocol and it’s as simple as it is effective! Whatever your dog values, they should do something to earn it and on YOUR terms. In other words, if your dog likes fetch, start the game on your terms (not after they’ve shoved the ball in your lap) and do a simple command like “sit” or “down” to start the fun! If your dog goes nuts for a walk, make sure it’s on your terms (not when they’re dragging your pant leg to the door) and be sure they earn it before you begin. As important as a task/ reward system is, variety is also key. Try not to be predictable by asking the same command each time- a “sit” before their dinner is fine, but mix it up and ask for a paw or “down” and you’ll not only strengthen your relationship, but also stimulate their brain! Like any relationship, work is a necessary component. Just make sure your dog isn’t your employer!
