Thanksgiving: Savoring turkey and nostalgia By Brian Fernandes bfernandes@lakerlutznews.com
It’s that time of year again. Turkeys stock home freezers. Plans are made to gather with friends and family — whether they live a few miles away, or across the country. There’s the anticipation of a veritable feast of Thanksgiving football games, and the not-so-subtle signs
that Christmas is just around the corner. And, as this day set aside for gratitude approaches, millions of Americans may choose to observe decades’ old traditions, while others try something new and spontaneous. For some, it will just be a regular Thursday. We talked with residents in The Laker/Lutz News coverage area to
see if they have special plans for Thanksgiving, and what the holiday means to them personally. For Carol Duren, a homemaker from Lutz, the spirit of Thanksgiving is not something attached to a specific day on a calendar. “Every day is thankfulness to God,” Duren said. As a native Californian, Duren reSee THANKSGIVING, page 15A

Celebrating Native American Heritage Students at Saint Leo University had a chance to learn more about the Native American people and culture during a week-long series of programs during Native American Heritage Month. Activities at the campus on State Road 52 in St. Leo included giving students a chance to make their own rain stick or dreamcatcher. Trying to keep the exercise as authentic as possible, the group used natural hemp for the dreamcatcher web and followed the Ojibwe tradition for the stitches. Traditionally placed over cradles, the item is used as a protective charm, as well as a way to filter out bad dreams. The dreamcatcher web replicates a spider web — to catch anything that comes into contact with it. The Multicultural and International Services office provides aid and support for the university’s international and study abroad students. Above, 18-year-old freshman Rashawnda Smith, of Tampa, left, places the finishing touches on her dreamcatcher as Paige RamseyHamacher, the executive director for Saint Leo University’s Multicultural and International Services office, helps by holding it in place.

A closer look at 20-year-old sophomore Carla Sanchez’s hands, as she weaves yarn around the hoop of her dreamcatcher. Trying to keep it as authentic as possible, natural hemp was used for the web and the Ojibwe tradition for the stitches was followed.
Crafted by using construction paper, aluminum foil and lentils, 19year-old freshman Dinesh Kittusamy holds his rain stick to his ear, to listen to the sound it makes, which is similar to falling rain. Native Americans construct rain sticks out of hollow cacti that are dried in the sun. During times of drought, they use the instrument with the belief that it can summon a rainstorm.
Dade City Dade City author debuts suspense novel remembers Chief Raymond Velboom By Brian Fernandes

It was standing-room only at the Army National Guard building in Dade City, as police officers in dress uniform and members of the community turned out to honor the life of the community’s Police Chief Raymond E.Velboom, who passed away on Oct. 27. Velboom’s death, at age 67, followed a lengthy battle with throat cancer. The celebration of Velboom’s life began with the solemn presentation of the colors by members of the Pasco County Sheriff’s color guard. The audience stood as the color guard marched to the front stage, placing an American flag on one side of the podium, and a flag for the State of Florida on the other side. The celebration took on a different tone, when “I’ll Fly Away” — one of Velboom’s favorite songs — was played in his honor. See VELBOOM, page 15A
Birth, death, fear, hatred and love are the complexities of life, which all happen to be packed in Penny L. Freeman’s debut novel, “Heartache to Happiness.” The Dade City native has been working on her book for three years, and it has now seen publication through RoseDog Books. The story revolves around Kelsi, a young, pregnant woman whose world is turned upside down when her parents are brutally murdered and she becomes a prime suspect, sending her on the run. The plot continues to escalate after Kelsi gives birth and her newborn is then kidnapped by her parents’ murderer. Freeman said the story came to her spontaneously, with one idea leading to the next. She hopes readers will take away the message that, like the story’s main character, they too can overcome life’s obstacles. As a member of a fifth-generation Dade City family, Freeman said her humble beginnings were a far cry from that of her story’s main character. Her father was a professional roofer and she had a stay-at-home mother. “We had a great childhood – didn’t have much money, but we really enjoyed ourselves,” said Freeman, describing her growing-up years with her parents and her sister.“It was wonderful.”

Saint Leo presentation sheds light on anti-Semitism
By Kevin Weiss
kweiss@lakerlutznews.com
At Saint Leo University’s Center for Catholic-Jewish Studies, the date was originally slated to be an enlightening presentation on rabbinical text study, Hassidic tradition and other esoteric Jewish spiritual teachings. Instead, it became a much more somber affair for dozens of university students, faculty and community members. The university organized an interreligious dialogue that explored the subject of anti-Semitism in the United States. The talk was in response to the Oct. 27 murder of 11 congregants of the Tree of Life Synagogue in Pittsburgh — the deadliest attack ever on the Jewish community in the United States. The Nov. 14 discussion was led by Dr. Matthew Tapie, the center’s director, and Rabbi Jason Rosenberg, of Congregation Beth Am in Tampa. Weeks removed from the tragic event, Rosenberg still has trouble processing it all. “I’m ticked off,” Rosenberg said.“I don’t want to have to talk about why people hate me just because I’m a Jew. “The worst part of this is there are 11 dead people,” he added. Rosenberg also noted the massacre shouldn’t be discussed just in the realm of anti-Semitism, but should include the issues of mental illness and gun culture in America. The rabbi explained: “Anyone who’s claiming it’s about (anti-Semitism) is dodging part of the issue. Schools get shot up. Malls get shot up. Clubs get shot up. I think that you have to have both truths in your mind at the same time. This was an act of blatant, specific, targeted anti-Semitism, and at the same time, this is what it means to be alive in America in the 21st century.” Tapie expressed similar sentiments about the attack: “I was horrified. I was shocked that it happened in a sacred place in Shabbat, in a house of worship. “I have a sense of shock and horror that we’re moving further away from the American tradition of religious freedom,” Tapie added. For many years, Rosenberg believed antiSemitism — the prejudice or discrimination that includes hatred, distrust or unfair treat-

ment director toward Jews — was “mostly dead” when he was ordained nearly two decades ago. The rabbi used to tell congregants and anyone willing to listen that while there were undoubtedly anti-Semites living in America, he didn’t believe there was any form of systemic anti-Semitism. During the last couple of years, he’s become less sure of that. Rosenberg put it like this: “When I tell people,‘It’s dangerous to be a Jew,’ it’s more honest than it used to be. “I don’t want to overstate the danger of anti-Semitism, but (last month) somebody walked into a synagogue, during prayer time, and opened fire simply because he wanted to kill Jews. That’s the country we’re

living in right now,” the rabbi said. Much of the hourlong interfaith discussion focused on the roots of anti-Semitism, which Rosenberg described as “one of the longest running hatreds in human history.” The speakers explored historical events like the Holocaust and the Dreyfus Affair, and the early 20th century publishing of The Protocols of the Elders of Zion, generally regarded as the most notorious and widely distributed anti-Semitic publication of modern time. “For thousands of years, people have hated Jews simply because they’re Jews,” Rosenberg said frankly. They also discussed more recent examples of anti-Semitism in the United States, such as last August’s white nationalist Unite
the Right rally in Charlottesville, Virginia, where marchers displayed swastikas on banners and shouted slogans like “blood and soil,” a phrase drawn from Nazi ideology. Tapie labeled the Charlottesville march as “dangerous” and “especially pernicious.” He characterized the rally this way:“This is Nazism. It’s here. It is Nazi ideology.” The speakers noted other acts of antiSemitism have hit closer to home. Two years ago, for instance, a desecrated American flag with an anti-Semitic message was found at Congregation Zedek in south Tampa, blaming Jews for media bias and immigration policies. “Some of these conspiracy theories are still present in our culture,” Tapie said. “Unfortunately, people are still buying these things and spreading these ideas around,” he added. Besides addressing the history of antiSemitism, the speakers offered up some ways to possibly combat extremist forms of violence toward race, religion, sexuality and so on. They said it starts with loudly and consistently condemning hate speech. “I think that ultimately speaking out and speaking against all these forms of hatred is absolutely essential,” Rosenberg said. Added Tapie:“If you hear a comment or a joke made about somebody, perhaps don’t laugh.” Tapie also suggested: “And, maybe ask that person later who made the comment, ‘Hey, do you realize that might hurt somebody?’” Tapie said more interfaith community forums like the Saint Leo event are key. “I like to say dialogue builds bridges of peace between different groups that otherwise have nothing in common,”Tapie said. He added,“These dialogues can impact people, because they allow for others to hear the voices of those whom they wouldn’t otherwise talk to or know at this level, so it does create more favorable attitudes.” Conversations are important, Rosenberg agreed, but he doesn’t see any single practical solution that will eliminate anti-Semitism and other group hatred in his lifetime. “We are talking about a 2,000- to 3,000year-old tradition of anti-Semitism,” the rabbi said. “It’s hard to overcome a millennia of pattern.”

A very ‘sweet’ donation
Supporters of New Port Richey FarmNet delivered an initial donation of more than 60 pounds of locally grown organic sweet potatoes to Metropolitan Ministries in Pasco County. The potatoes were grown at gardens affiliated with NPR FarmNet, including Grand Gardens and East Madison Gardens. So far, gardens and micro-farms in the FarmNet community have produced more than 700 pounds of sweet potatoes. FarmNet, in cooperation with the Tampa Bay Network to End Hunger, partners with Metropolitan Ministries in a harvest-sharing project to regularly supply high-quality locally grown organic fruits and vegetables to persons served by the ministries. In order to help the community during the 2018 holiday season, Pasco County Tax Collector Mike Fasano is sponsoring the following events. Put a smile on a child’s face by donating to the Marine Corps League’s annual toy drive,Toys 4 Tots. All five tax collector office locations in Pasco County will be drop-off sites up to Dec. 15, for toy donations for children of military personnel. The Gulf Harbors and Wesley Chapel offices will collect for the Salvation Army’s Red Kettle drive, on Dec. 8 and Dec. 15. Stop by between 8:30 a.m. and noon on either day to make a contribution to the programs the Salvation Army provides throughout the year. Collection jars will be on display in December in all five tax collector offices in the county, for The Volunteer Way/Farm Share. These donations will help purchase fresh food for families in need this holiday
season, and into 2019. If you’d like to play the role of Santa, claim an ornament from a “Giving Tree” and ‘Be a Santa to a Senior.’ Each ornament has a Christmas wish from a senior citizen in the community. Ornaments will be available until all have been claimed, at all five offices of the tax collector. Gifts will be collected up to Dec. 15. “Please join the staff of the Pasco County Tax Collector’s Office as we celebrate the holidays by reaching out to those most in need,” said Mike Fasano, in a release. “Your support of these wonderful local programs will help countless people enjoy the holidays this year. Your gift of any amount will go a long way towards helping our community have a joyous holiday season,” he said. For details about each program, information on office hours and locations, or general questions about tax collector services, call Greg Giordano, assistant tax collector/communications and special projects, at (727) 847-8179.
County expected to amend digital sign ordinance The Laker/Lutz News Staff Report
The Pasco County Commission is expected to decrease the dwell time on digital signs from the current 60 seconds down to 15 seconds. During a previous meeting, commissioners directed staff to make the change. Then, the issue went before the Planning Commission on Oct. 11, which recommended approval of the change. Now, the County Commission is expected to adopt the change at its Nov. 27 meeting. Commissioner Ron Oakley requested the change, noting the 60-second dwell time makes it hard to communicate the number of events that are planned at the Pasco County Fairgrounds, which has a digital sign.
pr resents:
“They have four or five events in a week or two; they want to be sure they advertise them all,” he said. While other commissioners favored the change, Commissioner Kathryn Starkey expressed reservations.“Is that a safe idea? I’ve done a lot of research on signs. Changing signs like that, I’m just not a fan of them. I think they’re dangerous for the public. Everything I’ve read says they take your eye off the road,” she said. County planning administrator Denise B. Hernandez said that regional attractors, by their nature, have many different events. One message on the sign is unrelated to the next message, she said. By reducing the duration of the message, Commissioner Mike Moore noted,“there’s a better chance the next time they (motorists) come by, they’re going to see something different.”

Holiday Open House at Dance Gear Etc. By William Jacko Special to The Laker / Lutz News
Dance Gear Etc., a Lutz boutique store specializing in shoes, attire and accessories for just about every technique of dance, is hosting a Holiday Open House on Small Business Saturday, Nov. 24 from 10a.m. - 5p.m. Owner Carolyn Jackson invites you to visit her store, located at 1705 Dale Mabry Highway in Paradise Square Plaza, just before the U.S. 41 apex. Refreshments will be served, new dance fashions will be modeled and shoppers will receive generous discounts. “We carry dancewear from basics to high fashion, for dancers of all ages for ballet, tap, jazz, lyrical, contemporary, acrobatics, flamenco, gymnastics, cheerleading and ballroom. We even stock sensory approved tights for children with those needs, said Jackson. As a special needs mom herself, Jackson understands the need for inclusivity in the dance studio. Trained by master fitters from Russia, Italy, Bulgaria, England and New York, Jackson has been fitting pointe shoes for more than 10 years and is exceptionally qualified as now a master fitter herself to size dancers with the correct shoe and perfect fit. “There is probably no more important decision in ballet than the purchase of a first pointe shoe. An ill-fitted shoe can lead to injury temporarily or permanent." said Jackson. The pointe shoe has to fit perfectly, Jackson explains, because if the shank is broken, aka ‘a dead shoe,’ a dancer could roll her ankle also leading to shortening her career. “I get to know the shape, style and dimensions of your foot, and how the foot works going from flat to demi-pointe to pointe, said Jackson. Dance Gear can also accommodate custom shoe orders for sizes wider or longer than the normal, we even can size pointe shoes for boys/men.
Jackson enjoys getting to know her customers and educating them so they understand the fitting process and the importance of a properly fitted dance shoes. “Parents appreciate how I follow their children as they grow, mature and advance in each level of dance. This personal knowledge helps me fit their child for their next shoe or garment, said Jackson. As a dance mom herself, she knows from personal experience how knowledge helped her children become better dancers. Jackson believes in giving back to her community and local schools, and participates in the Youth America Grand Prix scholarship competition program when given the opportunity. “Sometimes a dancer’s family may not be able to buy new tights or shoes for a performance, she said. “I have inventory that isn’t always going to sell, which I give to local schools to help a child whose family cannot afford to buy those items. Jackson encourages everyone to give ballet a try. “Any adult can try ballet if they can find an appropriate class, said Jackson. "Ballet is about flexibility, balance and being well-centered.

Authentic Farrm To Ta Table at Benedetto’’s
I
f only Ben Pumo’s grandfather was still alive to witness the bounty of his grandson’s toil on his family’s land in rural Pasco County. Pumo’s grandfather was 92 when he died two years ago, leaving behind his citrus groves and farmland in St. Joseph. It is here that Pumo grows vegetables for his Land O’ Lakes restaurant, Benedetto’s Ristorante Italiano. “This is real farm to table,” said Pumo. “W Wee’ve gone back in time to my family’s f il ’ roots, t picking i ki vegetables t bl from gardens on my family’s land that goes back five generations, and serving them to our dinner guests the very same day.” Pumo spends seven to eight hours every day tending to his gardens, returning to Land O’ Lakes with the fruits of his labor in time to prepare for the evening’s restaurant guests. “Some Some days our servers come to the farm to help with the picking, so they can see firsthand how our produce is grown,” said Pumo. “Our servers get so pumped up when they come out to the farm, that they can’t wait to tell their guests back at the restaurant about their experience, and how they actually picked that tomato or eggplant on their plate.” Benedetto’s has been in business at its State Road 54 location since 2001, and has always offffered fresh produce. But, vegetables from the Farmer’s Market in Ta Tampa don’t compare to the fresh taste you get with vegetables grown without chemicals and picked the same day. “As any gardener will tell you, nothing is better tasting than vegetables you grow yourself,” said Pumo.
Ben Pumo looks forward to preparing these eggplants for his guests at Benedetto’s Ristorante Italiano.. Over 3,000 vegetable and fruuit plants are grown in Ben Pumo’s hydroponic garden,, which are served fresh to customeers at his Land O’ Lakes restaurant.
“Plus, when we say our produce is fresh, you can believe us, because we grow everything ourselves!” Benedetto’s menu has always had a few items from his family farm, in particular kumquats, pineapple and bananas. In fact, kumquat pie is one of Benedetto’s legendary desserts. But, it has only been since last December that Pumo added vegetables grown at the farm. It was a year after his grandfather died that Pumo and his wife, Liz, started a hydroponic garden of 250 plants at the family homestead. Their first plantings were kale, chard, toma-
to oes and squash, and the couple had th heir first harvest three months later. “W Wee had never grown vegetables b before, and I can’t tell you how excited we were,” said Pumo. “Our guests lo ove the freshness of the vegetables frrom our garden, and I love being a able to continue connecting with my g grandfather by having a garden on his laand.” Last December the Pumos had an o opportunity to expand their garden teenfold, when a longtime Benedetto p patron asked if they wanted some h hydroponic equipment she was not u using.
RISTORANTE ITALIANO
“Of course we said yes, and before we knew it, we had over 3,000 plants,” said Pumo, who added that the hydroponic equipment from his friend was a much larrg ger gift than he ever imagined. Soon Ben and Liz were hard at work expanding their garden to include herbs, green beans, peas, cucumber, purple and white eggplants, cauliflower, broccoli and peppers. In addition, they added an inground garden for vegetable roots, and d planted l t d carrots, t turnips, t i onions, i beets and potatoes. “Growing our own vegetables has made me a very creative chef,” said Pumo. “I first had to learn how to grow vegetables, and then had to come up with ways to use them at the restaurant,” said Pumo, “W Wee are changing our menu all the time, based on what is being harvested at the garden. garden ” While most of the vegetables he grows are for farm fresh side dishes, Pumo has also created new main courses to showcase his produce, including eggplant parmesan (using both white and purple eggplant), Carbonara pasta sauce and butternut squash ravioli. “Many restaurants claim to be farm to table, but very few actually are,” said Pumo. “When you come to Benedetto’s, there is no question that our produce comes from a farm that was picked earlier that day, because I am the farmer and my family helps me with the harvesting. “W Wee invite you to our restaurant, and look forward to serving you the absolute freshest, and best, food in Tampa Bay.” Ta

Regional Medical Center Bayonet Point received an invitation to participate in the 2019 Donate Life Rose Parade float hospital CEO rose dedications. Only a select group of hospitals in the area have been asked to prepare a handwritten message honoring the patients and families who, with the support of hospital staff, have saved and healed lives through the gift of organ, eye and tissue donations. The float has grown into a national tradition featuring dozens of participants, including those who have received transplants, those who are living donors, and deceased donors memorialized in “floragraph” portraits integrated into the float’s design. One of the trademarks of the annual float design is the Dedication Garden, which provides an opportunity for the CEOs of hospitals; transplant centers; and organ, tissue, and eye recovery organizations to dedicate a Donate Life rose. Sharon Hayes, Regional Medical Center’s chief executive officer, will prepare the 2019 note to be placed in the float.
Prevention reminds the community that people do not have to wait for the next Take Back Day to dispose of unused or unwanted medications in a safe manner. Pasco County has seven permanent drop boxes for safe medication disposal (both prescription and over-the-counter). Find the nearest location by visiting PascoASAP.com. Medications also can be disposed of by using a Deterra Bag. These bags deactivate the ingredients of medications, making them safe to dispose of in the trash and unavailable for misuse. Bags are free, and can be picked up at the Florida Department of Health offices in Dade City, New Port Richey and on State Road 54 in Wesley Chapel.
NEW REHABILITATION PROGRAM
The Salvation Army Tampa Adult Rehabilitation Center, 13815 N. Salvation Army Lane in Tampa, will now be able to offer help and education to women for their drug and alcohol problems. The center has been providing a six-month to 12-month residential program for men. A separate residence will be constructed and will contain 10 bedrooms (each bedroom will house three women), an intake office, library/two classrooms, offices/conference room, kitchen, dining room, great room, recreation room, fitness room, laundry/haircutting station, and two resident managers’ rooms. The center also will have a chapel to seat 250 persons for both the men and women, their families and friends, and the public. The new program is expected to start in December. For information, call S. Richard Hodder at (813) 972-0471, ext. 59079.
TWO INITIATIVES BECOME LAW
TEAMING UP FOR BREAST CANCER
Florida Hospital (soon to be AdventHealth) and the Tampa Bay Buccaneers teamed up for the sixth annual Treasure Chests 5K and Fun Run on Oct. 21, to celebrate breast cancer survivors, and to benefit breast cancer research and patient services in Tampa Bay. The race started and ended at the Buccaneer’s indoor practice facility at the AdventHealth Training Center. All racers were invited to the Breast Cancer Awareness football game. The Honorary Race Starter was Carol Henderson, a three-time survivor currently living with Stage 4 metastatic breast cancer. Henderson also received pre-game VIP access and pirate ship passes, and was recognized on the field during the game.
The office of Congressman Gus Bilirakis has announced that H.R. 6, the Substance UseDisorder Prevention that Promotes Opioid Recovery and Treatment (SUPPORT) for Patients and Communities Act has been signed into law. The SUPPORT act is part of the bipartisan legislative package and will help continued efforts to combat the opioid crisis by advancing treatment and recovery initiatives, improving prevention, protecting communities, and bolstering efforts to fight deadly illicit synthetic drugs like fentanyl. The second initiative is the Sober Home Fraud Detection bill (H.R. 6092), which provides standards for Sober Living Homes. These two Bilirakis-authored provisions mark the 25th initiative the veteran lawmaker has written that have become law since 2015.

SCHOOL PSYCHOLOGY WEEK
Schools throughout the country recognized National School Psychology Awareness Week (Nov. 12 to Nov. 16) to highlight the work school psychologists and other educators do to help students thrive. This year’s theme was “Unlock Potential. Find Your Password!” A password is a personal key for unlocking any number of areas of potential in our lives. The goal is to connect with how modern youth and adults unlock things (such as gaming levels, phones, devices, codes) and to highlight how thinking about specific skills, assets or characteristics as “passwords” can lead to positive growth. School psychologists are skilled at helping students and staff in unlocking resources, proactive and preventive skills, and positive connections that are necessary to opening up one’s potential. The psychologists are trained to provide academic, mental health, and behavioral supports to children and adolescents, and can provide both direct and indirect services to students and schools.

ALUMNI CELEBRATE HOMECOMING
Pasco County Schools has adopted a new approach for its school choice programs. The district offers a variety of programs aimed at providing a variety of choices based on student interests and needs. Such choices include magnet schools, and programs like STEM, STEAM, Cambridge, and International Baccalaureate. It also offers educational options and programs such as AVID, AP Capstone, arts, career pathways, technical education, eSchool and more, according to a school district news release. Those interested in applying for school choice now have new timelines for submitting all applications. The application window for middle school and high school choice programs opens Dec. 3 and closes Dec. 14. Acceptances will be announced between Feb. 5 and Feb. 15. Applications for elementary choice programs will be available from Jan. 8 through Jan. 19, with notifications between Feb. 20 and March 1. Once the application windows open, parents and students will use a district software program called myStudent to complete the school choice applications. To access or set up a myStudent account, parents must use tinyurl.com/ybe2cygj.

THANKSGIVING, from page 1A
COURTESY OF RICHARD RILEY
The Pasco County Sheriff’s Department color guard displays the U.S. and Floridian flags at Chief Raymond Velboom’s memorial service on Nov. 15.
VELBOOM, from page 1A The uplifting, jazzy rendition by the Blind Boys of Alabama, had members in the audience clapping and waving white handkerchiefs in the air. Those attending the service had a chance to learn more about Velboom’s life. He was born in Clearwater on Jan. 15, 1951, to Ralph and Ethel Velboom. His dream of becoming a police office began in his childhood, and after graduating from Clearwater High School in 1969, he enrolled at Florida State University and earned a degree in criminal justice. He worked as a probation and parole office, before joining the Orlando Police Department. He became a special agent for the Florida Department of Law Enforcement in 1980, and in this position, he worked as part of the governor’s protective detail and also as an intelligence supervisor. He married Julie Scott in 1995, a longtime friend he initially met in Orlando. “Everybody that he met, he treated with respect, expected it back and got it,” his wife said, while fighting back tears. She talked about her husband trying to lighten the mood by having her turn on Howard Stern’s radio show, while the couple was on the way to Moffitt Cancer Center. While she wasn’t a big fan of the show, she said her husband found Stern funny and thought he was a great interviewer. So, she turned it on for his sake. The couple had lived in South Tampa until around a decade ago. Velboom had retired from FDLE in 2007, but just a year later — in March 2008 — he accepted the role as chief of the Dade City Police Department. “The main thing I wanted to talk to you about today was how much Ray loved his community,” said Julie. Sometimes he would call her and say he was on his way home, and then he would spend the next hour driving around. Sometimes he would stop to talk to people, at random, including the homeless. He
NOVEL, from page 1A genres, and traces of them can be found in “Heartache to Happiness.” “I put a little bit of everything in it,” said Freeman.“It has murder, it has mystery and some romance,” she said, but it is not graphic in nature. Freeman received her associate degree from what was previously known as PascoHernando Community College, before starting a family. It wasn’t until she was in her 30s, and was raising two children, that she decided to return to school. She now has a bachelor’s degree and a master’s in business administration from Saint Leo University, where she’s been employed since 1999.
calls a time when it was easier for families to spend Thanksgiving together. It’s harder to achieve that unity today because loved ones are scattered and people work odd work hours, she said. However, she said she’s looking forward to spending Thanksgiving with her children, who live out of state. She also plans to dine on traditional favorites, including cranberry sauce, pumpkin pie and mashed potatoes. Maryhelen Zopfi, also of Lutz, said Thanksgiving in her home is different from the Thanksgivings of her childhood. “When I was growing up, everybody came and had dinners together,” Zopfi said. “Now, everybody seems to go out to restaurants to have dinners.” She and her husband, Simon, have been married for 49 years. Sometimes, they host Thanksgiving dinner, while other times they travel out of town. In Zopfi’s mind,Thanksgiving is similar to Veterans Day — because it’s intended to be a day set aside for gratitude. She and her husband have shared the same holiday table for decades, but their choice of food is different. “He likes the turkey and I’m vegan, so I’ll go for the vegetables,” Zopfi said.
CELEBRATING OLD TRADITIONS, MAKING NEW ONES COURTESY OF DADE CITY POLICE DEPARTMENT
A memorial service was held Nov. 15 at the Army National Guard for former police chief of Dade City Raymond E. Velboom. Velboom’s style of policing was known as the ‘Ray way,’ as he was able to bond with the community in a friendly and cordial manner.
also was known for playing cards with everyday folks. To explain her husband’s commitment and work ethic, she quoted the lyrics from “It’s My Job,” by Jimmy Buffett, one of the chief’s favorite singers. “It’s my job to be different from the rest, to be better than the best,” those lyrics say. Father Dewey Brown of St. Mary’s Episcopal Church in Dade City described Velboom’s dedication to work as “the Ray way.” When he talked to Velboom, Brown said, the chief emphasized his concern about the need to bridge the gap between the community and the police. Velboom, Brown said, was a “peace officer” and “he lived out that love for every other person he came in contact with.” As the cancer progressed, Velboom was forced to have his voice box removed in the spring, but even though he couldn’t talk, he remained optimistic. He would assure family and friends that he was OK, by giving a thumbs up or a fist in the air. His wife affirmed: “While he may have lost his ability to speak, he never lost his big heart.” And, as she stepped off the stage, the audience applauded, and raised their thumbs in the air.
She has represented the university as a member of The Greater Dade City Chamber of Commerce for four years, which she characterized as “a really great experience.” She currently serves as the university’s senior academic coordinator for English, fine arts, philosophy, theology and religion. If she didn’t love her current position, she would probably be teaching in a classroom, instead of working in an office, she said. She still writes short stories, and said that her stories always come from her imagination — instead of from real life. One technique she enjoys using is to write out of sequence — creating the beginning of the story, then the ending, and then filling in the gaps. With a fresh new novel out, she’s ready to begin work on her second one.

Works for Me! “I've advertised my dental practice in The Laker every week since we opened our practice in 2012. Five years later, we continue to get new patients from our ads. The Laker is our top referral source, and has been a great way to build continuous awareness about our practice."
Land O’ Lakes resident Frances Laverghetta has a personal claim on the holiday. “I was born on Thanksgiving, so it’s meaningful to me,” the Tampa native said. She plans to spend the holiday with her son and his family, in Spring Hill. And, she said there’s zero chance that she’ll decline a chance to enjoy a nice slice of pumpkin pie. Land O’ Lakes resident Anna Sykora, who originally hails from Ohio, has fond memories of old traditions — such as the sweet potato sauce, a special family dish that she still enjoys today. But she embraces creating new traditions, too. Celebrating the holiday is more than just a ritual, Sykora emphasized. It aims to honor what really matters in life. “I’m grateful for what I have – my family,” said Sykora, and, she added, she’s also thankful to be in good health. Land O’ Lakes resident Larry Peteet, a veteran of the U.S. Air Force, takes a certain patriotic pride in celebrating Thanksgiving. Now an independent software consultant, Peteet said his outlook about Thanksgiving differs markedly from when he was young. Back then, he said, it was all about being out of school for the holiday. “It was never about giving thanks,” Peteet said. His attitude has shifted because he now appreciates the value of gratitude.
Larry Peteet, a veteran, said his family lives in other states. He said he’ll take pleasure in spending this Thanksgiving with his British Labrador, Sandy Girl.
Maryhelen and Simon Zopfi, married for 49 years, always look forward to spending Thanksgiving with their granddaughter.
His enthusiasm for traditional Thanksgiving foods has not wavered a bit, however. “Turkey and ham [are] phenomenal,” raved Peteet.“I love the creamed green bean casserole. Sweet potatoes are awesome with marshmallows.” Living alone at Thanksgiving can be tough, Peteet added, noting his family lives in Alabama and South Carolina. Still, he plans to make the best of the holiday by spending it with his British Labrador, Sandy Girl. Seventy-one-yearold John Mathe, of Dade City, is looking forward to the holiday festivities. With grown children living in both Florida and Pennsylvania, it’s difficult to gather everyone together for the joyous occasion, John Mathe he said. “You always long for those old traditions – lots of people, long tables, lay down on the couch and you go to sleep,” he reminisced. He also noted, with a chuckle, that he looks forward to having foods he knows he shouldn’t — because he’s diabetic. Mathe said the holiday should prompt consideration of those who are less fortunate. “They need to be thought about,” Mathe said, and they need to know that people care about them. Kristine Johnson, a Dade City resident, said her family celebrates when they can get the family together — usually a day or two before Thanksgiving because her daughter works in retail. Though not celebrating on the specific holiday, the family does have a tradition: They enjoy wildlife and go camping, she said. Also, in her opinion, when it comes to turkey stuffing, there’s only one way to serve it properly: With the dressing in the bird, not on the side. Zephyrhills resident Betty Harris has lived in Florida for 45 years, by way of Tennessee. She adopted her daughter 25 years ago, and said Thanksgiving reminds her of the precious nature of life. Her Thanksgiving menu features many of the foods she enjoyed while growing up, including sweet potato casserole, green beans and mashed potatoes. Carolyn Clark, a Zephyrhills bus driver, said it’s a priority for her to spend Thanksgiving with her family — back where she grew up in Texas. When it comes to the menu, she said she won’t settle for anything less than ham, turkey and dressing.

embers of Zephyrhills Fire Rescue Cadet Post 650 have a chance to find out what’s involved in the life of a firefighter and emergency responder through a program operated out of Fire Rescue Station 1, at 6907 Dairy Road in Zephyrhills. Billy Jeffries, the lead cadet advisor of Post 650, puts the youth through their paces. The Wesley Chapel resident also serves as the Florida Fire Chief Association section vice chair and has been a cadet advisor for 13 years. He knows how the cadets feel, as they’re learning about what’s necessary to become a firefighter, because he was one himself, 18 years ago. To be eligible for the program, hopefuls must be ages 14 through 20, must be enrolled in school and must maintain a 2.5 grade point average, must be free of a criminal record and must desire to help the community. The year-round program can accommodate 16 members; it has 13 presently. The purpose of the program is to give local youths a chance to get an early start at learning what it takes to be a first responder. There are weekly classes that include classroom instruction, and there is hands-on training and exercises. Cadets can earn certificates they can use in the future for their careers as first responders. Typical certifications that are earned include those for completing Emergency Medical Responder and CPR classes. Besides practicing, the cadets can test their skills in competitions statewide, including the Florida Winter Fire Games, scheduled to take place in Kissimmee, in February 2019. There is a one-time enrollment fee of $40, which covers insurance and membership fees for the Florida Fire Chiefs Association. For more information about the cadet program, email Lead Cadet Advisor Billy Jeffries at bjeffries@fire.zephyrhills.fl.us, or call (813) 780-0035.

The cadets train all year long and compete in many competitions statewide, including the Florida Winter Fire Games in Kissimmee, in February 2019.
With his turn on deck, 15-year-old Orin Vaughn, of Zephyrhills, receives words of encouragement while getting geared up by Ryan Thun, a Zephyrhills firefighter/paramedic, left, and Darron Branscum, an assistant advisor Lt. Paramedic. Vaughn said he’s interested in pursuing a career in law enforcement and wanted to join the cadet program because it teaches responsibility. As 16-year-old cadet Novalee Dries, of Wesley Chapel, observes, 17year-old Cadet Lt. Makala Hall, a Zephyrhills High School senior, left, gets help fastening her harness from Zephyrhills firefighter paramedic Ryan Thun, right. Hall has been a participant of the cadet program for four years.
Eighteen-year-old cadet Kayli Coleman descends the 75-foot aerial ladder during a recent training exercise. The Zephyrhills High School senior has been part of the cadet program for four years. The program is geared toward young people who are interested in pursuing a career in law enforcement or firefighting. Coleman said it’s scary being at the top of the 75-foot ladder, which is pitched at 60-degree angle. ‘You can feel the ladder move and shake.’ But, she also noted: ‘The view is amazing up there.’

PET PAWS SLOW DOWN FOR MANATEES Florida has more than 6,600 manatees swimming in rivers, bays and coastal waters. Manatees begin migrating to warmer waters during November, which is Manatee Awareness Month. Seasonal manatee protection zones go into effect in the fall, depending on the county. The zones are marked with waterway signs, and a map of local protection zones are available online at MyFWC.com/Manatee. Follow these tips to help manatees: • Wear polarized sunglasses to spot them moving, grazing and resting in the water. Keep a lookout for the circular “footprints” or ripples they leave on the surface of the water. • Follow posted manatee zones. • Observe manatees from a distance to limit disturbance. Disturbing manatees at warm-water sites may cause them to leave the areas during the winter. • Report injured, entangled, orphaned or dead manatees by calling (888) 404-3922, or #FWC or *FWC on your cellphone. • Purchase a manatee decal and license plate to support manatee conservation efforts. • Visit WildlifeFlorida.org and donate.
A new survey by the Polling Institute took a look a pet ownership and the holidays. Poll respondents were asked about their holiday spending on pets. The average pet owners anticipate spending or have spent on holiday gifts for their pets is about $250. “The spenders – they are called ‘pet parents’ – are individuals who treat their four-legged friends as if they are actually family members,” said Dr. Keith Jones, associate professor of marketing at Saint Leo, in a release. As a result, people continue to spend on their pets at holidays in a similar manner as to how they spend on their actual family members, he said. Saint Leo’s Dr. Rhondda Waddell, professor of social work who teaches an interdisciplinary course about therapy and service animals, also noted that “whether pets are replacements for children for empty-nesters or those who do not want children, or for those adding pets to families with children, a growing number of households hold their animals in high esteem.” She said,“Love is love. If you want to give to your pets and that makes you happy, more power to you.”
