In Memory of Victor Santiago – aka Papo As I was finishing our last issue of 2005 –I received a phone call from my mother and found out that my cousin Victor had just passed away; I was overcome with sadness at the loss of this incredible person. After a long hard battle, Victor died of cancer today. I would like to dedicate this issue to him, for his incredible love of life, and for his strength even during the most trying of times, he continued to fight, always managing to put a smile on the faces of everyone. BIZ BLOCK TAX TIPS & FREE HELP The Prosperity Campaign of Hillsborough and Pinellas Counties promotes community awareness of the Earned Income Tax Credit (EITC), free tax preparation and financial education classes. The Prosperity Campaign seeks to ensure that those who are eligible for EITC claim their full, earned share, use free tax preparation sites to increase participation and reduce fees related to commercial filing, and learn about financial education programs that help families build assets through savings and investment of tax refunds. The Earned Income Tax Credit is a refundable federal income tax credit designed to benefit families and individuals. Each year millions of dollars go unclaimed by working families. Eligible taxpayers who have not claimed EITC could file for three previous years. These tax credits give families more disposable income to pay bills, purchase goods and services or save for a major investment such as a new home.

Jolie Gonzalez, Publisher and Editor in Chief of Latin Times Magazine recently spoke to the Pinellas Business community at the Pinellas Chapter, Tampa Hispanic Chamber of Commerce luncheon, which was held at the Columbia Restaurant at The St. Petersburg Pier. Ms. Gonzalez spoke about the rapid growth of the Hispanic community in Pinellas and offered business owners valuable solutions on how to best reach this market. FREE tax preparation sites are available throughout Pinellas and Hillsborough Counties. Certified tax preparers will help process and e-file taxes, and refunds are available in a short time. years as the General Manager of an offshore bank in Willemstad, Curacao. He then managed back-office brokerage operations for Heptagon Securities LTD in Caracas. After 17 years in Venezuela, Frederick and his family returned to the U.S. in July 2000. Although he acknowledges that it was “traumatic” to start over in the U.S., he joined MassMutual Financial Group in Tampa as a financial advisor in 2001 and immediately earned the 2002 New Associate of the Year Award.

I n this issue, Latin Times talks with Al Frederick, recognized throughout Tampa Bay for his active support and championship of Hispanic causes. Originally from Ohio, Frederick became involved with the Hispanic community as a high school exchange student to Venezuela. Although he’s fluent in Spanish and reads and writes French, you might be surprised to discover that Frederick’s heritage is Pennsylvania Dutch Mennonite and West Virginian. After earning a B.A. in Spanish, Mathematics, and International Business from Ohio Wesleyan University, Frederick completed his MBA in Finance and International Business from the University of Florida in Gainesville. With degrees in hand, Frederick returned to Caracas, Venezuela in 1984 where he served as Vice President of International Operations for Banco Latino, the second largest bank in Venezuela. In 1993, Frederick joined Banco Exterior for several

While Frederick’s career achievements are impressive, his extensive contributions to the Hispanic community are remarkable. As Membership Director for the Tampa Bay Hispanic Chamber of Commerce, Frederick grew membership from 150 members in 2004 to over 600 members in 2005. As Chapter Program Officer for the National Society of Hispanic MBA’s (NSHMBA) in Tampa Bay, Frederick encouraged growth in membership as well. His claim to fame is his weekly email communications to keep community members informed of local, non-commercial Hispanic events. On a state level, Frederick serves as Communications Officer for the League of United Latin American Citizens (LULAC) which advances the economic condition, educational attainment, political influence, health and civil rights of Hispanic Americans. In recognition of his assistance, Tampa Hispanic Heritage, Inc acknowledged him with their prestigious 2005 Amigo Award.

Frederick says one of his future goals is, “educating the community about xenophobia (fear of those who are different)” and “removing barriers to what Hispanics (can accomplish) in the U.S.” He admits that he frequently experienced career challenges as an American living in Latin America where he often heard, “Yanqui go home!” He hopes to change this perception.

Despite his considerable professional achievements, Frederick is most proud of his Venezuelan wife and talented three children who are dual citizens of Venezuela and the U.S. When he’s not networking, communicating, and collaborating, Al Frederick is out leading Boy Scout Troop 45. Business

Many believe that the American dream is to one day start your own business and experience financial freedom! I am willing to bet that at one point during our lifetime we have thought about owning our own business and making it big. We have all heard the story about the secretary who used her own kitchen blender to mix up her first batch of liquid paper or “white out” and later sold her company for $47.5 million. The stories can go on and on, but what separates those trailblazers that start their own business and from those who spend a lifetime thinking about it, was their willingness to take risk. More then likely, those who took the risk and succeeded were diligent, flexible, laser focused and not afraid to ask for help from those with more experience. However, before you take the plunge, allow me to raise a few issues that every potential entrepreneur should consider before investing valuable time and money.

A-B-C's 1.IDENTIFY YOUR SKILLS AND EXPERIENCE. Generally small business loans require that you have at least five (5) years experience in the business that you will be engaging in. For better or for worse, five (5) years experience seems to be the threshold as to the likelihood of success for the business. Whether you have the five years experience or not, every entrepreneur needs to perform an analysis of their skills and experience. You need to sit down and make a laundry list of your skills and experience (similar to develop a personal resume). Your skills or experience may include your education, work experience, community involvement, hobbies or languages. You could have experience in sales, marketing, importing/exporting, public speaking, graphic design, art, dancing, event planning, project management, leadership or creativity. Open your mind and think outside the box when truly evaluating your skills or experience, you’ll be surprised with what you come up with. Don’t be discouraged if you feel that you do not have the sufficient skills or experience. At the very minimum, identify your weaknesses or lack of experience and skills, and develop a tangible plan to build them up. Remember, to be honest with yourself when doing this exercise of self analysis. 2. IDENTIFY WHAT GOOD OR SERVICES YOU CAN OFFER. Once you have successfully evaluated yourself, the next step is to play matchmaker. No, not matchmaker with other people, but matchmaker between your skills and experience and a business that best suits your skills. This process can be agonizing if not properly structured. You need to first realize the free resources that are available to you when searching for the right business.

You obviously have internet search engines, such as google.com and yahoo.com. If your not internet savvy, go to the business section of your local library. You can also call the U.S. small business administration or the local chambers of commerce for advice or guidance. Even better, pick up the yellow pages and flip through all the different businesses that have synergies with your skills and experience. Make sure to be flexible in your search. Once you have developed a list of business possibilities, you can begin analyzing each one, with “cabeza fria”, and truly narrow down what best suits your skills and experience. 3. MAKE YOUR IDEA A REALITY BY PREPARING A PLAN. Now you should have a list of your skills and experience, along with a list of potential business opportunities. Now what? Well, what increases your chances of business success is to prepare a business plan. Bare in mind that this does not have to be a 50 page plan. However, to truly identify if you business will succeed you need to develop some type of business plan. The major components of a business plan include: - An executive summary which summarizes the strategies and goals of the business; - key investment consideration which contains a description of the reasons why the business would be viable and would be worth financing - Marketing plan which describes the good/service to be offered, the price for the good/service, placement or where the services will be offered and the promotions, or marketing behind the good/service. These are known as the 4 P’s in marketing: Product, Price, Placement and Promotions. - Operations plan that identifies the management of the business and the roles and responsibilities of each.

- Financial projections of the business for at least five years, identifying startup costs, revenues, expenses and annual budgets. This section is absolutely key when trying to raise the sufficient capital to start the business. Remember that you do not need an MBA or be an accountant to develop a business plan. This exercise is crucial when assessing the viability of the business. There are many non for profit organizations within the area that offer seminars or technical assistance when preparing a business plan. I highly recommend the Hispanic Business Initiative Fund, (“HBIF”) as a potential resource for assistance. Obviously it’s difficult to explain every detail in starting a business, but I wanted this article to be a primer or general overview of the major areas to contemplate when starting your business. I wish you the best of luck as you trail blaze into the world of owning your own business. Remember that taking risks can pay off greatly! Best of luck! Latin Times Magazine Goes One On One With Rosa Chavarria - President of the Hispanic Professional Women Association! Latin Times Magazine: Where were you born and raised? Rosa Chavarria: I was born in Varadero, Cuba. In 1961, at the age of two, I moved to the United States to flee the Castro regime. Latin Times Magazine: Where are your parents from? Rosa Chavarria: My mom is from Matanzas, Cuba. My dad is from Cuba, not sure what city. Latin Times Magazine: Tell us about your family. Rosa Chavarria: I have two brothers, one is a firefighter the other a developer. I have one sister; she is a retired postal worker. Latin Times Magazine: When did your term as president of Hispanic Professional Woman’s Association begin? Rosa Chavarria: It began in July 2004. Latin Times Magazine: What changes have taken place since you began your administration with HPWA? Rosa Chavarria: In 2004, we began revamping to where we are now focusing

Rosa Chavarria: We are a cohesive team of intelligent and dedicated Latinas, focused on a mission to promote our organization and to let everyone know that we exist. Recently I joined in a partnership in the firm of Whittermor, Carrigan & Chavarria, CPA. Latin Times Magazine: What message can you give business owners looking to more effectively reach the Latina community in Tampa Bay? Rosa Chavarria: I would tell them to become members of the Hispanic Professional Women Association, the Hispanic Chamber of Commerce, as well as other Hispanic chambers and/or organizations. Latin Times Magazine: What benefits can HPWA offer today’s business Latina? Rosa Chavarria: We have many wonderful benefits to offer today’s business Latina. The HPWA offers assistance and education in many subjects including empowerment, and teaching Latinas about professional attire, conduct and social skills. One of the most valuable benefits of becoming a member of the HPWA is that we offer a unique opportunity to meet and conduct business with other business women in the community, and to develop and form meaningful friendships with

these hermanas. We also offer excellent opportunities and assistance in promoting our member businesses within the community, and offer our members the opportunity to participate at our events. Members also have access to our data base. HPWA works in conjunction with area schools such as USF, HCC and others in developing and implementing mentoring programs for young Latinas, working toward increasing leadership skills and empowerment. Members of HPWA also serve as a referral source for each other, assisting Latinas prepare for tothe challenges of tomorrow.

The Hispanic Professional Women’s Association, Inc. was founded in May 1990 as a non-profit corporation registered in the state of Florida. Our mission is to enhance the professional image of Hispanic women by creating opportunities to share knowledge and to promote the value of higher education. Paella Serves 8

If you are making stock for this purpose from the chicken parts, throw in the shrimp shells for additional flavor. Ingredients: 1 frying chicken, about 3-1/2 pounds, or 2-1/2 pounds chicken parts 1/4 cup olive oil 1 medium onion, finely diced 4 cloves garlic, minced 2 teaspoons salt Freshly ground pepper to taste 1 large red bell pepper, roasted, peeled, seeded, and diced 1/2 cup sliced green onions 1 pound squid, cleaned, sacs cut into rings 1/2 teaspoon (about 1/4 gram) saffron threads, or more to taste 1 pound medium or large raw shrimp, peeled and de-veined 3 cups (1-1/2 pounds) short-grain rice (preferably Spanish or Italian) 6 cups warm chicken stock 1 pound live mussels, scrubbed and debearded, or 1-1/2 pounds small live clams 1 cup fresh or frozen peas What to do! Divide the chicken into parts, with a heavy cleaver, chop each breast half into 3 pieces, each leg into 4 pieces, and each wing in half. Remove the wing tips and reserve along with the back and neck for stock. The giblets can go in the stock or the paella as you like. Combine the oil, onion, and garlic in a 12to 14-inch cazuela or paella pan and place over low heat. When the onion begins to sizzle, increase the heat to medium. Add the chicken pieces a few at a time and cook until lightly browned, sprinkling them with a little of the salt and pepper as they cook. As they brown, move the chicken pieces to the outside of the pan to make room for more in the center.

Flan When all the chicken has lost its raw color, add the squid, peppers, green onion, and the remaining salt, and crumble in the saffron. Stir in the rice, cooking for a minute or so to coat it with the oil. Add warm stock to within 1 inch of the rim of the pan (not all the stock may be needed). Arrange the shrimp over the top, and the mussels or clams in a ring around the outside, hinged side down. Cook at a lively simmer until the rice is just tender, about 20 minutes; scatter the peas over the top halfway through the cooking time. The paella may seem a little soupy when it first comes off the fire, but the rice will absorb the excess liquid in a few minutes.

Sangria 1 750 ml bottle of dry red wine 1 lemon, cut into wedges 1 orange, cut into wedges 2 tablespoons sugar 1 shot brandy 2 cups ginger ale, 7-Up or club soda Pour the wine, fruit, sugar and brandy into a ceramic or glass pitcher, stir and chill overnight. Before serving, add the soda. Pour over ice. Garnish with a fruit wedge. Note: You can add any fruit you like or throw in a shot or two of triple sec. If you don’t have time to prepare the drink ahead of time, mix up a pitcher quickly using wine that’s already been chilled.

If you are looking for something special to make for your sweetheart this Valentine’s Day, try preparing Flan it is one of the most popular Latin deserts of all time! It is simple to make yet very tasty. Flan is baked custard with caramel syrup. Here is our version of “Flan de Leche”. 1 can evaporated milk 6 whole eggs (If you prefer a more solid flan use one or two more eggs) 1 cup of sugar 2 tablespoons vanilla 1 teaspoon salt 1 cup sugar (for the caramel) 2 tbsp. water Caramel: In a mold, metal bowl or pot, blend the cup of sugar and 2 tablespoons of water then mix it well. Cook this on medium heat until the sugar turns amber and caramelizes to a soft stage. Swirl the caramel around the mold totally covering the interior. Flan: Blend all ingredients until completely mixed. Pour the flan mixture into the caramelized pan. Set the mold in a broiling pan (baño de Maria). Cook in a 350° oven for one hour. At 30 minutes check to see if it’s getting too brown on top – if so cover loosely with foil. Test the Flan to see if it’s done, by inserting a knife in the center. If the flan is still soft, let it cook longer, until a knife inserted again comes out clean. When the custard cools, lay a plate on top of the mold then carefully flip it over and slide the mold off. Decorate for a more “romantic” setting. SERVE & ENJOY!

PARA LAS LADIES Every day, many women across the country head to their local beauty and nail salons to indulge in manicures and pedicures. Not only are these services relaxing and inexpensive breaks from daily routines, nail technicians achieve looks that many cannot replicate at home. Oftentimes in the pursuit of beauty, customers put safety on a lower list of priorities when getting nail services. While instances of infection and illness are rare, manicures or pedicures involve close skin contact and tools that can break the skin or cause bleeding. Therefore, infection must be a concern. HIV and hepatitis B and C are among the more serious infections that can be transmitted by a visit. Pedicures also pose a problem. Customers are urged to soak their feet in baths of warm water or a whirlpool bath to soften calluses and promote relaxation. However, if these baths are not properly cleaned and disinfected, they can be a breeding ground for harmful bacteria. According to a report in the New England Journal of Medicine, leg-boil skin infections were associated with pedicure whirlpool baths at a salon in California. To head off future health problems, IntelliHealth.com, a Web site developed by Aetna health insurance with contributions by the Harvard School of Medicine, urges that nail salons comply with the following rules: * Instruments should be cleaned with soap and water and then disinfected. A federally sanctioned disinfectant that kills bacteria, viruses and fungi, like Barbicide, should be used. Some salons also sterilize tools with ultraviolet light to kill bacteria. * Footbaths should be regularly cleaned and disinfected. Inlet screens should be cleaned regularly as well as the baths themselves. At regular intervals, the baths should be cleaned with bleach. * The nail cuticle should not be cut. Your cuticle should only be pushed back gently. The cuticle protects you from infection, and any breaks in the skin around that area promote bleeding and possible infection. * Razors should not be used on calluses and should be avoided in other uses as well.
