PAN CON L’OLIO
INGREDIENTS: bread oil salt Take oil, a slice of toasted bread and salt. Pour the oil on a slice of toasted Tuscan bread (bread with no salt), add salt.
SPAGHETTI ALLO SCOGLIO INGREDIENTS: Mussels 500 gr Clams 500 g 4 cloves garlic 1/2 cup Extra virgin olive oil 4 tablespoons chopped parsley 4 Prawns Squid 300 g Spaghetti 320 g ½ cup white wine tomatoes 300 g Broth of fish
Clean very well the mussels . Repeat the same with clams . Place the clams in a pan. Repeat the same procedure for the mussels. Clean the squid . Put in a saucepan, add a clove of crushed garlic and 2-3 tablespoons of oil . Add the squid . Add the white wine . Add the parsley and cook for 10 minutes. Wash, dry and cut the prawns . Add in the pan with the prawns . Wash and cut the tomatoes . Put 4 tablespoons of olive oil and two cloves of garlic. Add the tomatoes .
Boil the spaghetti . When they are ready, add to the pan, with the tomatoes, the squid and the broth, salt and pepper‌ Serve.
PASTA WITH TOMATO AND SAUSAGE SAUCE
Recipe for 6 people INGREDIENTS: 5 hg of pasta 3 Tuscan sausages 1 onion Tomato sauce Olive oil Grated cheese Pepper Salt
Fill a pot with water and boil the pasta. Heat 3 spoons of olive oil in a pan then put 1 sliced onion. Later when onion is transparent add the sausage, in pieces, and let it cook a few minutes.
When sausage is lightly browned, add tomato sauce and let every -thing cook for 10 minutes. Drain pasta, pour the sauce, add grated cheese and‌Enjoy your meal! ORECCHIETTE AND CIME DI RAPA It is a typical Puglia (south-Italy) dish
INGREDIENTS FOR 4 PEOPLE 1 kg of turnip or broccoli 400 g of orecchiette 5 anchovies 5 tomatoes Oil 1 hot pepper In a pan heat garlic and oil ,add anchovies until they melt, tomatoes, hot pepper and let cook on low heat. Boil the turnip/broccoli for some minutes. Cook the orecchiette, when they are ready drain and pour them in the pan with turnip. Mix them with the turnip for 14-15 min. and add the anchovies sauce . Mix and serve with pecorino.
TRIPPA ALLA FIORENTINA = FLORENTINE TRIPE
INGREDIENTS for 4 people: 1 kg pre-cooked tripe 300 grams peeled tomatoes 1 onion 1 carrot 1 stick of celery 1 clove of garlic 1/2 glass of white wine 4 tablespoons of grated parmigiano 3 tablespoons of olive oil Salt and pepper Cut the tripe into little strips. Pour olive oil in a saucepan with the minced vegetables, let it brown and then place the tripe. Cook for about some minutes and then add the white wine. Let it evaporate. Then add the tomatoes, salt and pepper. Cook about 2 hours, mixing it often. Switch off the fire, add the grated parmesan and mix.
� PARMIGIANA�
It is a vegetarian dish. It is very difficult but really good! INGREDIENTS: 2 Aubergines Parmesean 200 ml Tomato sauce 1 mozzarella Oil 100 gr floor 2 eggs 50 gr salt Do you want to cook the parmigiana? Well ,this is the procedure. Peel, slice and wash the aubergines, let them stand in a bowl with salt. Beat the eggs in a bowl . Squeeze, and deep the slices of aubergines. Fry
in a pan. Display on the pan a layer of tomato sauce, one of
aubergines, the Parmesean, cubic mozzarella. Put in the oven, 200
degrees, for 20 minutes. When it is ready place it on a dish and‌
ENJOY YOUR MEAL!!!
TORTANO
INGREDIENTS: Flour Water Salt Lard Barm 5Eggs Ham Bacon Parmigiano Mix salt, flour, lard and water. Add the yeast and let it rise for 2 hours. Dice the salami, the ham
and the Parmigiano and mince with the boiled
eggs. When the dough is swelled up, roll it and add the mixture filling it. Put in an oiled ring-shaped mould.
Oven for 40 minutes at 200째.
AUBERGINE BALLS
INGREDIENTS: 500 gr Aubergine 200 gr Bread 2 Eggs 50 gr Pecorino cheese 1 clove of garlic 6 leaves of basil Flour, oil, salt and pepper Boil the aubergines for a few minutes, then drain and mince them.
Put in a bowl the basil, the clove of garlic and the bread all well minced. Add the aubergines, the grated pecorino cheese, the eggs, salt and pepper and mix well all the ingredients. The mixture must be soft and compact. Make small oval balls with the mixture. Cover with the flour and fry them in warm oil. Dry the balls on kitchen blotting paper and serve them hot or cold with a fresh tomatoes sauce
LA SCHIACCIATA ALLA FIORENTINA It is a typical dessert from the city of Florence, this cake, was eaten during the medieval festival and at the end of long lunches, accompanied by the sweet wine: Vin Santo
INGREDIENTS: 3 eggs 300 gr. of sugar 16 tablespoons of milk 8 tablespoons of oil lemon 400 gr. Flour 1 packet of yeast
take a bowl, break the eggs, mash and mix, then pour the milk and 'oil, grate a lemon, squeeze it and knead with the others ingredients. In another bowl pour the flour with the yeast, mix all the mixture for 3 minutes. take a buttered pan, pour the dough, and put it in the oven at 180 degrees for 20/ 30 minutes.
Here's it is the Schiacciata alla Fiorentina.
CASTAGNACCIO INGREDIENTS for 6 people 400g sweet chestnut flour pine nuts 50g rosemary 2 tablespoons of sugar salt, olive oil
Sift the chestnut flour. Add sugar and a pinch of salt, then pour about half a liter of cold water. Add two tablespoons of olive oil, pour the mixture into a baking dish.
Sprinkle the surface with the pine nuts, broken walnuts and a few leaves of rosemary, put it in a preheated oven (200 째). bake for 30 minutes.
STRUFFOLI
INGREDIENTS: 500g of flour 5 eggs 100g sugar lemon zest olive oil 250g of honey
Water 25G BUTTER coloured sprinkles or candied fruit. This is one of the best desserts from NAPOLI. They use to eat it at Christmas. Mix 500g of flour, 5 eggs,2 tablespoons of sugar, 25g butter, zest of half a lemon, a pinch of salt. Make small ball and fry. When they are ready pour them in a pan and mix in the hot honey.
CIAMBELLONE OR RING CAKE
INGREDIENTS: 500g Flour 250gr Butter 250ml Milk
16 gr baking powder 2 lemons a packet vanilla 300 g sugar 5 eggs salt/a pinch cooking time: 50 minutes Preparation: Start working the softened butter with the sugar until you get a good mixture. Add the salt and vanilla, add the eggs and continue kneading the dough for about 3-4 minutes. Add two lemons, mix them and add the flour with the baking powder, alternating the milk, then butter a baking pan and pour the mixture.
CHOCOLATE CAKE
INGREDIENTS: 5 eggs 250 g. sugar 250 g. butter 250 g. dark chocolate
Mix eggs with sugar, add melted butter and chocolate. Bake the cake at 180° for 45 minutes.
SWEET SALAMI
INGREDIENTS type of biscuits: gr. 200 “le Marie” gr. 80 Sugar gr. 150 Butter 2 Egg yolks 2 Spoons of cocoa without sugar
1 Small glass of Marsala (liqueur) Work sugar with yolks to obtain a soft cream. Add melted butter at bain-marie, the cocoa, the Marsala and finally the biscuits breaking them into small pieces. Mix and give the shape of salami. Wrap up in a grease-proof paper and put in the fridge for few hours. Slice it and ...enjoy your meal!
BABA'
Dissolve yeast in a glass with warm milk . Place the flour in the center , pour the yeast , eggs, a pinch of salt and stir. Add the butter and sugar, work the mixture for ten minutes. Cover with a towel and let it rise. Butter a ring mold ( 30 cm ) , fill with half mixture , let it rise until
double in volume. Place in a preheated oven at 190 degrees and cook
for 40 minutes. Prepare the syrup pouring into a saucepan: water , rhum and sugar, put it on the fire , boil about15 minutes.Pour the syrup slowly on the BabĂ and punch with a long stick and let it absorb. In a small saucepan , melt 6 tablespoons, light flaming , of jelly apricots in a pan, heat up. Brush the Baba and serve.
TIRAMISU’
INGREDIENTS 150g chocolate 150g Pavesini biscuits 1 cup of coffee 4 eggs
150g mascarpone Separate the yolk from the clear , add mascarpone and mix. drench Pavesini in the coffee Make alternate layers with Pavesini, pieces of chocolate , and mascarpone; put in the fridge. Better if cold!
