Wander th e Lakes Whatever the weather the Lake District is one of those breath taking places, home to endearing mountains and enchanting lakes. Ennerdale is located the most westerly of the lakes and has some of the clearest waters. Even in the summer this hidden gem is the quietest of them all, perhaps it's due to the lack of roads nearby, but this is what gives you a real sense of countryside escapism.
A drive away you will find places such as the Apple Pie shop found in Ambleside, which is located next to the beginning of one of the captivating treks featuring a beautiful waterfall in the hills. Grab a fantastic sandwich and of course an apple pie as you wander the fields and end the trip taking enough flavoured fudge with you to get you through your next few weeks.

Everyone once in a while we experience a need to escape, run away and wanderlust. With hectic lifestyles and demanding jobs a twenty-minute drive to the countryside creates a new way to switch off for an hour or so. Nothing can beat enjoying home cooked food with locally sourced ingredients, followed by the freshest ice-cream in every flavour imaginable. In a beautiful farm house buried away in the countryside, dairy farming with jersey cows has taken place since 1925. A mere

few years ago Loucinder, wife of farm owner, followed her dream to open a homelike ice-cream parlour. A parlour where you would feel right at home, with quaint miss matching chairs, fresh wild flowers on wooden tables and chickens running freely in the apple plum orchard. A wonderful dream made into reality, and a perfect way to escape city life. A short drive out of Newcastle and you couldn't be more immersed in the countryside. Wheelbirks provides award winning ice cream, milkshakes and luxury desserts all produced fresh from the farm itself.
As you enter the homely parlour, you are immediately greeted by welcoming staff and taken to a table of your choice. Upon every table sits a little wooden cow, each named after an animal on the farm, giving that personal touch.
Around the barn there are little hidden windows, where you can spy on the cows as well as straw filled pens where you are able to meet the new members of the farm family; the baby calves.
You can simply order scones and tea, cakes and coffee or a full meal of freshly made soups with locally sourced ingredients.
As fantastic as the food may be, you visit an ice cream parlour for the ice cream. Indulgent chocolate mousse, New York cheese cake, classic cookies and cream, true to flavour strawberry or the popular peach and raspberry, are just

Understandably you can still shop and drink cocktails any time in your own city but there is always your stresses which linger with you. However, with a different scene for the
weekend you tend to leave your worries back at home. New York- home of everything imaginable. Visit Times Square, where digital billboards will catch your attention, or alternatively, Central Park an urban oasis, a paradise in the middle of Manhattan. A landscape containing a secret city, visit iconic land marks, cycle through the winding paths or hire a boat on the lake for the afternoon.

Our top rated designers from London fashion week include; MARINA HOERMANSEDER: Up and coming designer Marina Hoermanseder had one of the most captivating shows of LFW. We loved the young designer's use of plastics and buckles which created a new generation
of silhouette. Looking at her designs it may come as no surprise that Hoermanseder interned with Alexander McQueen. We reckon the young French-Austrian designer is definitely the one to watch!

fESTIVAL ROUNDUP Our Number one festival pick for 2014 is... TOMORROWLAND. Each year Tomorrowland tops the ranks of the world's greatest festivals but this year it gets even better as Tomorrowland celebrates its 10th birthday, so a big show is to be expected. Tomorrowland takes place in Boom, Belgium just ten miles south of Antwerp, so if you fancy mixing one of the world's greatest music festivals with an exciting city break this may be just the festival for you. This year's festival is expected to reach an attendance of 500,000 keen festival goers, That's more than the entire population of Antwerp! Unlike other years 2014's festival will be held over two weekends from 18th20th of July and 25th27th of July which means an even larger line up! Tomorrowland will include the likes of Armin Van Buuren, Carl Cox, Afrojack, Alessso, Hardwell and Tiesto. Tomorrowland's music is mostly electronic so if you're looking for a pop, rock or indie festival maybe Tomorrowland isn't the place for you.

n second places is BENICASSIM Benicassim is an annual festival which takes place on the sunny beaches of Benicassim, Spain. This festival is situated right by the sea, during the day you can sunbathe and swim and by night you can

But do remember when considering booking a festival on the beach that the heat can reach extreme temperatures, especially in early morning, so do not expect a lot of sleep! Benicassim attracts around 50,000 people each year, however, 2014 marks the festivals 20th Birthday so it is expected to be the biggest party yet. This year's line-up includes the likes of Kasabian , Paolo Nutini, Chase and Status , Kodaline and Paul Weller. Benicassim is well known for

ur 3rd favourite festival is SZIGET Sziget may not be as well known as Benicassim or Tomorrowland but it has just as much to offer. Sziget takes place ever year on 'old Buddha Island', Hungry and is one of the largest music and cultural festivals in Europe. Sziget is the ideal festival for any music lover, it contains a blues
stage, a jazz stage and a world music stage so there's no excuse not to be up dancing. The festival takes place from the 11th18th of August, a single day ticket costs around ÂŁ40 and a full week plus camping will set you back ÂŁ173, coming in just slightly higher than Benicassim, but not to worry as drinks are mega cheap you're basically saving money! Some of the acts include The Big Pink, Macklemore and Ryan Lewis, Skrillix, Imagine Dragons and Calvin Harris. Sziget is well known for proving acts from a wide 49

If you wish to avoid the hassle of pitching tent, Rock Werchter provides the option of staying in 'rock village' which involves small chalets with a heated pool, plug sockets and showers. This however comes at a hefty cost of around £270 per person! Camping can be quite challenging but it's also part of the whole experience of attending a music festival , plus nearly all large festival have amazing facilities such as self-contained bathrooms and phone charging stations, so you won't be left too uncomfortable.
The festival takes place from the 4th -7th of September, a standard ticket will set you back a modest £140. The main highlights of Outlook are the boat parties, where you can set sail with your favourite DJ's mk's, a fully stocked bar and a blasting sound system!
Outlook festival is the largest bass music and sound system culture festival in Europe, so if you're looking for a relaxing indie pop festival you may need to search elsewhere. The 2014 line-up includes Busta Rhymes, Goldie, DJ Markey, Zinc and Parring Von Levy. 50

To many to count elegant vintage bags, displayed in the fabulous Shipley Art Gallery in Gateshead, which the building itself is a stunning piece of architecture, that is overlooking a park with a carpet of spring flowers. The current bag exhibition 'To have and to hold', shows an exquisite collection of beautiful evening bags, including some rather unusual ones. Such as binocular clutches and purses so small that they are only designed to fit a few old pounds. A truly beautiful collection by Melanie Fearon, who has been gathering vintage bags since 1988 and one not to be missed. Take a trip through history looking
at the variety of exquiste multifunctional bags, this collection of bags has been collaborated with the Discovery Museum's own collection. Each bag is beautifully designed and carefully displayed hanging off interesting door handles or within wooden painted draws that are lined with decorative paper. With sustainable fashion becoming ever more important, we at Compass have been doing some digging to find you the most cutting edge, environmentally aware brands that are sure to become your new wardrobe staple. With that in mind, we'd like to introduce Reclaim. Creating stunning, no fuss bags and accessories primarily made from recycled rubber inner tubes, they are truly ground breaking. The concept of the brand is to create sustainable accessories that will change the perception of recycled products. We have an exclusive interview with the innovative designer and creator, Sophie Postma. There really is no reason not to pick up that new bag when it looks fab and is great for the environment! 58
WHAT WAS THE INSPIRATION BEHIND THE BRAND?
WHICH ITEM IS YOUR FAVORITE WITHIN THE COLLECTION?
CAN YOU SEE RECLAIM EXPANDING INTO CLOTHING?
The brand was born whilst I was studying Fashion at Leeds College of Art. I was working on a project based around innovation, which led me to explore unusual materials. The recycled rubber inner tubing was one of those materials. I knew immediately that it was something I wanted to work with and saw the potential in the material itself.
The bags I use the most are the Black PVC and Rubber Shoulder Bag, I use this as my day-to-day bag, and the PVC and Rubber Large for occasions when I want something that stands out a little more.
I have thought about expanding into clothing and it would be something I would like to do. I think it will come further in the future.

Don't be worried if what you are doing doesn't conform, the best ideas never do.
HOW DID YOU SUCCESSFULLY ERADICATE THE STEREOTYPE OF RECYCLED FASHION? I think to say that the stereotype of recycled fashion had been eradicated wouldn't be right. People's opinions are changing; the success of the brand over the past year shows this. I think the key to making recycled fashion socially acceptable is to not only work to the values you hold, but to also stay in tune with the fashion industry and what is current.
DO YOU HAVE ANY PLANS FOR FUTURE COLLECTIONS?
I have just finished some new pieces, including two new backpacks and a larger shoulder bag, which will be available soon. I have also got plans to launch a range of men's products, which are in the development stage. Eventually, I would also like to expand into homeware.

Elvis and Kresse, who create bags out of recycled fire hose, are a big inspiration for the brand and I would love to work with them. I think the materials would be a great contrast with each other. Fortune Tealing Explore the corners of your mind feeling relaxed and gaze into your future. Tealeaf reading has been used for years to look into ones fortune and unfold the forthcoming. Tealeaf reading is both personal and subjective which is often compared as being similar to Rorschach. When tealeaf reading, you are more likely to have a bearing or a connection where you will steer towards specific symbols and interpret your own meanings, which is how tealeaf reading is very selfanalysed and more relevant for each individual.
The art of tealeaf reading
Mentally divide the cup into three sections; rim, middle and base, note where you first make eye contact with a particular symbol, one you seem most drawn too. The first symbol you see represents your powerful character or someone near or inspiring. Symbols in the rim section apply to this moment in time and the middle section is the near future a fortnight or so. Finally the base of the cup represents an possible answer, a conclusion or an end. As far as unique business ventures come we think Oonagh Sims and Kim Galloway have got it aced, after a chance meeting the two twenty something fashion and food lovers set up their own business selling gourmet marshmallows in Portabello market. Since the formation of the Marshmallowists business has been a nonstop success resulting in appearances on the one show and Paul Hollywood's pies and puddings as well as appearing in the pages of vogue, you and style magazine. I meet up with Onnagh Sims to find how she tuned as classic, to a modern day foodie favourite.

W HOW DID THE CONCEPT FOR THE MARSHMALLOWISTS COME ABOUT?
ARE YOU SURPRISED BY THE AMOUNT OF ATTENTION YOUR PRODUCT HAS GAINED?
Like all good stories, it starts with 'we met in a bar'. I (Simms) had just returned from a four-year stint in Paris where I trained as a chocolatier, and Smart was ordering a drink. Conversation soon sparked about our shared love of all things French and confectionery-related. A few drinks later (Sally Cinnamons, to be precise), we got tipsy and made a plan to start baking together. After deciding that we definitely wanted to join forces we spent a good few months figuring out exactly what we wanted to make. Having trained as a chocolatier I had been making marshmallows for a good few years and we noticed no one else was doing them in the UK at that time, also marshmallows allowed us the ability to be as creative as we liked with different combinations of flavours.
We're constantly taken aback by how much publicity we have gotten in the short time we've been running. The only reasons we can think of is that it was fortunate timing- an interesting product brought out at the right time; when people want to buy from smaller producers that they feel they can support. Customers now want to feel engaged in what they're buying - we're very social media happy and try and do as many events as we can so we can get out and meet the customers. WHAT HAS IT BEEN LIKE WORKING WITH RENOWNED BAKERS SUCH AS PAUL HOLLYWOOD? In short - bloody terrifying! No, of course it's been absolutely incredible - but the 5 second pause between Paul trying our marshmallows and his response ('best marshmallows he's ever eaten') was quite possibly the longest 5 seconds of our lives.... For me, it's definitely been a highlight since starting The Marshmallowists.

WHERE DO YOU FIND INSPIRATION FOR FLAVOURS? HAVE YOU HAD ANY CULINARY DISASTERS WHEN TRYING OUT NEW IDEAS? Through working as a chocolatier and in the food and drink world respectively we've always had a good inkling on what flavours tend to work well together and from there it's a matter about sourcing the best ingredients and good ol' trial and error! And there have been some serious errors it took my flatmates about a month to forgive me when I decided that a lime, basil and olive oil marshmallow would be a great addition to the menu - I got a little happy with the basil essence and we had to evacuate the kitchen for 4 days... YOU OBVIOUSLY HAVE GREAT TASTE WHEN IT COMES TO ALL THINGS SWEET, WHAT'S YOUR TASTE LIKE WHEN IT COMES TO FASHION? WHAT ARE YOUR FAVOURITE SHOPS, TRENDS AND DESIGNERS? We're both really quite keen fashion fans. Quite literally anything from Cos or French brands like The Kooples, Sandro or Maje are firm favourites come pay day. I'm definitely slightly more tomboyish than Smart - a lot more tailored blazers and cropped trousers - but if Pheobe philo can do it then that's fine right?
WHERE DO YOU SEE YOUR BUSINESS GOING IN THE FUTURE? DO YOU SEE YOURSELF BRANCHING OUT INTO OTHER TYPES OF CONFECTIONARY? We're still going to continue to make marshmallows for the moment - and continue to build up our company that way. We have plans to collaborate with a lot of cool other brands this year and we want to build upon that reputation- of doing one thing very well - before adding other lines into the fold. But we're always on the lookout for interesting new ventures and we have a book jammed full of ideas and concepts that we are starting to work on. FINALLY, WHAT HAS BEEN THE HIGHLIGHT OF YOUR CAREER SO FAR? There have been so many highlights this year - from supplying marshmallows to the Brit winners to doing pop ups in Topshop, it would be impossible to pick just one.

Now it’s your time to try... You will need
qFirst, soak the gelatine leaves. Measure 200ml cold water
into a shallow, microwaveable bowl, then, one by one, add the leaves to the water, fully immersing each leaf. Leave to soak for 10 minutes. Meanwhile, whiz the raspberries in a food processor, then sieve them and discard the pips - you need 175g of raspberry purée. Line a 20cm x 30cm tin that's 3cm deep with clingfilm so it covers the whole surface completely and smoothly. Lightly grease the clingfilm with a little vegetable oil.
q15 leaves Dr Oetker select leaf gelatine q300g raspberries qvegetable oil q300g white granulated sugar q240g liquid glucose syrup q2 tbsp Champagne (or prosecco) q75g cornflour q Heat the soaked gelatine and water in a microwave (category q75g icing sugar
B/650W) for 1 minute (or in a pan) until dissolved.
q Put the granulated sugar, half the glucose syrup and
100g of the raspberry purée into a medium heavybased saucepan and bring to the boil. Heat until a sugar thermometer shows 112 degrees celsius (this will take 4-5 minutes), then pour it into a food mixer. Add the remaining 80g of raspberry purée and the remaining glucose and mix on a low speed. q Whisking all the time, add the melted gelatine and liquid, then
increase the speed to medium. Once the consistency of the mixture thickens and is less liquid-like, and there is no danger of splashback, increase the mixer speed to maximum for a further 12 minutes until the mixture is thick enough to hold its shape on a whisk - it should have quadrupled in size. q Reduce the speed of the mixer to low, add the Champagne
to the mixture and continue whisking for a further minute. Tip the marshmallow mixture into the prepared tin, level and leave it to set at room temperature for 4-6 hours (or overnight). q Sift the cornflour and icing sugar into a bowl together. Cut
the marshmallows with a hot, wet knife and dust with the icing sugar mixture.
