MOCHACCINO CUPCAKES

MAKES ABOUT 36 CUPCAKES HANDS-ON TIME 40 MINUTES TOTAL TIME 65 MINUTES

1 3/4 cups all-purpose flour 1 cup cocoa powder, sifted (plus more for dusting) 1 tsp baking soda 3/4 tsp baking powder 1/2 tsp salt 1 cup 2% milk 1/2 cup strong brewed coffee, cooled 3/4 cup unsalted butter, softened 2 cups granulated sugar 3 eggs, at room temperature 2 tsp vanilla 1 cup coarsely chopped bittersweet chocolate Coffee Buttercream Icing (recipe, this page)

Preheat oven to 350°F. Line (Makeahead: Can be stored in airtight container at room temperature overnight or frozen for up to 1 month.)

PER CUPCAKE about 275 cal, 2 g pro, 9 g total fat (6 g sat. fat), 47 g carb (1 g dietary fibre, 40 g sugar), 35 mg chol, 85 mg sodium, 0.9 mg iron. (Make-ahead: Can be covered and refrigerated overnight. Bring to room temperature and beat with electric mixer before using.)
