SHRIMP TACOS AND MANGO SALSA SWEET AND SPICY GREEN BEANS AND CARROTS OVEN-TOASTED LOBSTER RAVIOLI

Roasted Corn and Mango Salsa

2 tbsp. Texas Pete® Original Hot Sauce 6 ears of corn, roasted and kernels cut 2 large mangos, cubed 2 large avocados, cubed 2 cloves garlic, minced 1 large red bell pepper, chopped 1 red onion, chopped 1/2 cup chopped cilantro Juice of one lime 1 tbsp. chipotles in adobo sauce, pureed Salt and pepper to taste

Stir all ingredients together in a large bowl and season with salt and pepper to taste. Adjust heat level with the chipotles and add lime juice if needed.

Shrimp Tacos

6 oz. Texas Pete® Extra Mild Wing Sauce 2 lbs. small peeled and deveined shrimp 1/2 lb. shredded cabbage mix Flour tortillas

Marinate the shrimp in the Texas Pete® Extra Mild Wing Sauce for one hour. Drain and sauté in a hot skillet with a little oil until they have turned bright pink and curled into a nice “C” shape. Warm the tortillas and f ll with the cabbage and shrimp. Serve with the salsa and enjoy. 2 tbsp. Texas Pete® Hotter Hot Sauce 1 cup chopped carrots 1/2 lb. green beans, chopped 2 slices bacon, chopped 1 medium onion, sliced in half-moons 1 apple, sliced in half-moons 1 tbsp. brown sugar 1/2 tsp. salt Pepper to taste

Blanch the carrots and green beans until nearly tender. Strain and set aside. In a large skillet, cook the bacon until nearly crisp. Add in the onions and cook until translucent and soft. Add in the apple, Texas Pete® Hotter Hot Sauce, sugar, salt and pepper. Cover and cook until apples are tender, 3-4 minutes. Stir in the beans and carrots; heat through and serve immediately. 2 tbsp. Texas Pete® Buffalo Wing Sauce 1 egg 1/2 cup milk 1 package lobster ravioli, cooked al dente’ 1 cup seasoned breadcrumbs 1 cup fresh breadcrumbs 1 cup grated parmesan cheese Texas Pete® Buffalo Wing Sauce for dipping

Preheat the oven to 425 degrees. Whisk together the egg, milk and Texas Pete® Buf alo Wing Sauce and soak the cooked ravioli for a minute. Combine the seasoned and fresh breadcrumbs in a bowl. Press the ravioli gently into the breadcrumb mixture and place on a greased baking sheet. Spray the breaded ravioli on both sides with oil and bake in the hot oven for 15 minutes, turning once. Sprinkle with the cheese and serve hot with Texas Pete® Buf alo Wing Sauce for dipping.
