fter a year off, Lawrence’s OldFashioned Christmas Parade will return at 11 a.m. Dec. 4, but this time the organization will be a 501(c)(3). The designation will increase the nonprofit’s funding opportunities, making it eligible for federal,

SADDLE state and foundation grants, says Robin Dunn, vice president of the Old-Fashioned Christmas Parade.
“We’re still a nonprofit, but we just have a different lettering (that) opens us up for all kinds of
other benefits,” Dunn says. “It takes thousands to put this on every year.” Marty Kennedy, president of the board, estimates that the event requires $40,000 annually. Some of its expenses include hotel rooms for the 60-plus entrants, renting the fairgrounds arena, advertising and cleanup crew fees.

Annual Festival of Trees benefiting the O’Connell Children’s Shelter. Viewing hours begin Monday, Nov. 29, at 10 a.m. and continue through the week until Sunday, Dec. 5, at 2 p.m. There is a suggested donation of $5 for those over the age of 12. Pumpkin, Apple Butter & Pecan Pie
Ingredients: 1 can pumpkin puree 1 cup apple butter 1/4 cup brown sugar 1 teaspoon pumpkin pie spice 1/4 teaspoon salt 3 eggs, beaten 1 can evaporated milk 1 10-inch unbaked pie crust Streusel topping: 3 tablespoons butter 1/4 cup flour 1/4 cup quick-cook oatmeal 1/3 cup brown sugar 3/4 cup pecans Directions: Heat oven to 350 degrees. In a large bowl, mix pumpkin, apple butter, brown sugar, pumpkin pie spice and salt. Stir in eggs and evaporated milk. Pour into pie shell. Bake 50 minutes. For streusel topping, mix butter, flour, oatmeal and brown sugar until resembling crumbs. Stir in pecans and sprinkle over pie. Continue baking another 20 minutes or until a knife inserted in the center comes out clean.
Carrot Casserole
Ingredients: 3 cans sliced carrots (can substitute 5 or 6 cups of cooked fresh carrots) 8 oz shredded sharp cheddar

Saute onion in butter. Mix in flour, salt, mustard, pepper and celery salt. Add milk and cook until thickened into a white sauce, stirring occasionally. In casserole or baking dish, arrange carrots and cheese in layers, ending with carrots. Top with buttered bread cubes.

Ingredients: 9-inch baked pie crust Bread cubes should be golden 1 1/2 cups milk, divided brown. 1 cup stout beer Nana’s Apple Cake 1 cup sugar, divided Ingredients: 1/2 cup cocoa 1/4 cup flour 1 1/2 cup canola oil 1/4 cup cornstarch 2 cups white sugar 1 teaspoon vanilla 3 eggs 2 tablespoons butter 3 cups all-purpose flour 1 cup whipping cream 1 1/2 teaspoons baking 2 tablespoons powdered soda sugar 1 teaspoon salt Directions: 1/2 teaspoon cinnamon Heat 1 cup of milk, stout 1/2 teaspoon ground cloves and 1/2 cup of sugar in 1/2 teaspoon nutmeg saucepan. Mix 1/2 cup of 1 teaspoon vanilla sugar, flour, cocoa, corn3 cups chopped, unpeeled starch and 1/2 cup of milk apples (Gala preferred) 1/2 cup walnuts or pecans, in a bowl until no clumps are left and add to saucechopped pan, stirring constantly. Directions: Heat oven to 325 degrees. Bring to a boil, and boil for 1 minute. Remove from Cream oil and sugar until

Add the remaining ingredients and gently stir. Put pan in fridge to set up for a couple of hours. (For a formal dinner, may be served on a lettuce leaf.)
Cranberry Salad Supreme
Ingredients: 1 cup raw cranberries, chopped 1 cup sugar 1 cup seedless red grapes 1/2 cup crushed pineapple, drained 1 cup walnuts or pecans, chopped 1 cup whipped cream 1/2 cup mini marshmallows Directions: Combine cranberries and sugar. Refrigerate overnight. Drain off liquid. Combine grapes, pineapple, nuts and whipped cream. Fold into cranberry mixture. Add marshmallows and mix until evenly distributed. Chill.

“It gets gobbled up pretty fast,” Kennedy says. “We like to have a little bit of money left over every year — just seed money to get started — but we rely on contributions from the community and local businesses, and a lot of that is inkind donations: There are a number of businesses that help put up signs and set up barricades.” In 2018, Marty and his wife, Patty Kennedy, feared the parade would collapse because of a lack of new volunteers and diminished funding. Now they are more confident in the parade’s sustainability because of

its 501(c)(3) status and increased community support. Envista Credit Union, 1555 Wakarusa Drive, is helping sponsor the event, providing a $2,500 grant and multimedia advertising support throughout the month of November. Another major contributor is Kennedy Glass, 730 New Jersey St., which will send employees downtown on the morning of the event to build and set up parade stands and take them down afterward.
This will be the 28th parade, and its route will be subtly different than in the past. It will still start at Seventh and Massachusetts streets, but the procession will continue beyond South Park, the usual stopping point, and end at 15th Street instead. The two extra blocks of seating will help with the parking situation and allow people to spread out more. Currently the parade has 60 entries with seven newcomers. Some of the entrants will be coming from Missouri, Iowa, Nebraska and Oklahoma. “We are glad to have some younger kids stepping up and coming,” Patty says. “So far we’ve got about 60 entries, which consist of 10 riding groups. We like to
limit our riding groups because we’d really rather see the stage coaches, the buggies and all that.” Among the new entries is a miniature pony named Cookie. “Two young gals are coming for the first time, and they’ve been exercising their pony since June to get him ready,” Patty says. Other highlights will include a six-mule hitch and a group out of Nebraska called the Harness Hustlers. Horses in the parade will be dressed in holiday regalia, and there will be no motorized entries. Dunn will be aboard the final stagecoach along with Santa and Mrs. Claus. Organizers are hoping for good weather on the day of the event, but the parade has only been
canceled a couple of times throughout the years because of icy conditions. According to Dunn, who has participated in the event for all but one year, people will come to watch the parade no matter what the weather is like. “Lawrence supports us very nicely,” Dunn says. “If it’s raining, they’re there anyway. If it’s cold and blustery, they’re there anyway. If we’re there, they’re there. Rain or shine, they’re out there for us.”
