Readers share their favorite holiday recipes Editor’s note: The following holiday recipes were submitted by Journal-World readers.

Candied Peanuts 1 cup white granulated sugar 1/2 cup water 1 Tablespoon molasses 16 ounces (3 cups) raw Spanish peanuts Boil together ingredients including peanuts in heavy pan stirring constantly until most liquid is gone and the sugar crystalizes around the peanuts. Be careful to not let it burn. Pour the mixture on a buttered jelly roll pan or cookie sheet spreading it evenly. Sprinkle salt lightly over the mixture and bake in 300-degree. oven for 15 minutes. Remove from oven, turn the peanuts over and sprinkle salt over them again. Bake an additional 15 minutes. Remove from oven and let cool on the pan. If there are clumps of peanuts break up with buttered hands. The idea is to have sugar-coated nuts when finished.

Soft Ginger Cookies 1/2 cup cinnamon sugar 2 cups sifted all-purpose flour 1 tablespoon ground ginger 2 teaspoons baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 3/4 cup shortening 1 cup white sugar 1 large egg 1/4 cup dark molasses Preheat the oven to 350 degrees. Place cinnamon sugar in a bowl; set aside. Sift flour, ginger, baking soda, cinnamon, and salt into a mixing bowl. Stir the mixture until blended, then sift a second time into another bowl. Beat shortening in a large bowl with an electric mixer until creamy. Gradually beat in white sugar. Add egg and

Sift 1/3 of the flour mixture into the shortening mixture; stir to thoroughly blend. Sift in the remaining flour mixture and mix together until a soft dough forms. Pinch off small amounts of dough and roll them into 1-inchdiameter balls. Place balls in cinnamon sugar and roll to coat, then place 2-inches apart on ungreased baking sheets. Bake in the preheated oven until tops are rounded and slightly cracked, 8-10 minutes, switching racks halfway through. Cool cookies on a wire rack

Butternut Squash Bisque with Bacon

Bring to a boil and then reduce heat to a simmer. Simmer until squash is tender 30-35 minutes. Allow the soup to cool, then puree the soup in batches using a blender or an immersion blender. At this point, if desired, you may place the soup in a covered container and refrigerate until ready to serve. When you are ready to serve the bisque, return the soup to a large saucepan. Add in the half and half and lemon juice. Allow to simmer for 15-20 minutes. Season with more salt and freshly ground black pepper.

While the soup simmers, slice bacon into small pieces and cook in a skillet until well browned. To serve, ladle bisque into small bowls and top with sour cream and cooked bacon.

Pumpkin Lasagna Dessert

2 rows golden Oreos 2 rows gingersnaps or vanilla wafers 8 tablespoons unsalted butter (melted) 8 ounces cream cheese (softened) 1/2 cup butter 1 cup powdered sugar 16 ounces Cool Whip (divided) 2 (3.4-ounces) packages instant pumpkin pudding 3 cups milk White or regular chocolate bar (to make curls) Crush Oreos in a food processor or Ziploc baggie and add melted butter. Mix until it is well combined.

Press into the bottom of a 9-by-13 pan, covering the entire bottom of the pan. In a medium bowl, combine cream cheese, 1/2 cup of butter, powdered sugar, and half of the Cool Whip. Mix well and pour over Oreo crust. In another bowl, make pudding by adding milk to a bowl and the instant pudding. Whisk until pudding thickens. Pour over the cream cheese layer. Refrigerate for 5 minutes or more. Top off with the rest of Cool Whip. Add chocolate shavings to top. You could also sprinkle more of the crushed cookies on top instead of the chocolate. Refrigerate at least 1 hour before serving.

Creamy Harvest Soup

2 tablespoons butter 1/2 cup onion 1 8-oz. package mushrooms, diced 1 cup pumpkin puree 1 small apple, peeled and diced 2 medium carrots, peeled and diced 2 cups chicken or vegetable broth 1 cup water 1/2 cup half and half or heavy cream 1/2 teaspoons dill Salt and pepper to taste Sauté onion in butter in a large soup pot. Add mushrooms and cook 5 minutes. Add pumpkin, apple, carrots, broth and water. Simmer covered until soft, 15-20 minutes. Let cool and then blend with immersion blender or in small batches in a regular blender. Pour back into pot. Add dill, salt and pepper and cream. Warm over low until heated through. Serve warm or at room temperature.

Roasted Cinnamon Brussels Sprouts 2 pounds (about 3 cups) small Brussels sprouts, ends trimmed, outer leaves removed, and halved

3 tablespoons olive oil 1 1/2 teaspoons salt 1 1/2 pounds sweet potatoes (2 medium), peeled and cut into 1-inch cubes 1/2 teaspoon ground cinnamon 3 tablespoons maple syrup 2 cups pecan halves 1/2 cup sweetened dried cranberries 3 tablespoons crumbled goat cheese Preheat oven to 400 degrees. Stir together Brussels sprouts, 1 1/2 tablespoons olive oil, and 1 teaspoon salt on a rimmed baking sheet. Stir together cubed sweet potatoes, cinnamon, 1 1/2 tablespoons maple syrup, the remaining 1 1/2 tablespoons olive oil, and remaining 1/2 teaspoon salt on another rimmed baking sheet. Bake vegetables, stirring and rotating pans halfway through, until Brussels sprouts are lightly browned, and potatoes are tender, 20-25 minutes. Stir together Brussels sprouts, potatoes, pecans, and cranberries in large bowl. Stir in remaining 1 1/2 tablespoons maple syrup, and top with crumbled goat cheese.

Holiday Coffee Cake

Powdered sugar 1/2 cup chopped walnuts 1/2 cup chocolate chips 1 1/2 cups sour cream 1/4 teaspoon salt 1/2 teaspoon ground nutmeg 1 1/2 teaspoons baking soda 2 teaspoons ground cinnamon 2 teaspoons baking powder 3 cups flour 2 teaspoons vanilla 3 eggs 1 1/2 cups brown sugar 3/4 cup or 1 1/2 sticks of butter or margarine Preheat oven to 350 degrees. Flour and grease a 12-cup Bundt pan. Using an electric mixer, mix butter or margarine at medium speed until creamy. Add the brown sugar. Mix until it is fluffy and light. Add eggs and vanilla; mix until it is blended well. Mix baking powder, baking soda, cinnamon, flour, nutmeg and salt in a large bowl. Combine with butter/margarine mixture using low speed and add the sour cream. Begin and end with flour mixture until blended well. Add the walnuts & chocolate chips, stirring until blended well. Cranberry Salsa Spoon the mixture into your 1 bag of fresh cranberries prepared pan. Mix butter and sugars until creamy. Mix in egg, pumpkin purée and orange zest. Stir in remaining ingredients until just combined. Drop by tablespoonfuls onto greased cookie sheet. Bake until golden and set, 8 to 11 minutes. Let cool on cookie sheet for 1 minute before removing. Frost when cooled. Burnt Butter Glaze 1/4 cup butter 2 cups powdered sugar 1 teaspoon vanilla 1-2 tablespoons milk Heat butter in a heavy pan until it turns a delicate brown. Do not let it burn. Remove from heat; stir in sugar and vanilla. Add just enough milk to make a good consistency. Makes 3 to 3 1/2 dozen cookies.

Baked Winter Squash with Apples and Cranberries

1 1/2 pounds uncooked butternut squash, peeled and cut into cubes 1/2 pound fresh cranberries 2-3 apples, chopped 1/4 cup raisins (optional) Juice and grated peel of 1 small orange 1 1/4 tablespoons maple syrup or honey Dash of salt and cinnamon Preheat oven to 350 degrees. Combine squash, cranberries, apples, and raisins in a small buttered casserole dish. Mix juice, orange peel, maple syrup and salt together. Pour over squash mixture. Lightly dust with cinnamon, cover and bake until squash is tender, approximately 30-45 minutes. Serves 4.

Nelda’s Sausage and Rice Dressing

5HH 1/4 cup butter or margarine 1 cup chopped onion 1 cup chopped celery 1 pound mild or hot bulk pork sausage, cooked and crumbled 1 box (6 ounces) stuffing croutons 1 can (2 ounces) mushroom pieces and stems 2 eggs, beaten 3 cups chicken broth 1/2 cup chopped walnuts or pecans, toasted 1/4 teaspoon pepper Poultry seasoning to taste Cook rice mix according to package directions. Set aside. In a skillet, melt butter. Saute the onion and celery until tender. Combine all remaining ingredients and place in a greased 13-by-9 inch baking pan. Bake at 350 degrees for 45 minutes. Yields 8-10 servings or enough to stuff a 12-pound turkey.

Turkey Corn Chowder 8 strips bacon 2 cups chopped onion 4 cups sliced, peeled potatoes 1 can condensed chicken broth 4 cups cubed or shredded cooked turkey 1 17-oz. can whole kernel corn 1 17-oz. can creamed corn 2 cups half and half Fresh parsley Cook bacon in 4-quart saucepan or Dutch oven until crisp. Remove and drain on paper towel; crumble. Pour off drippings; reserve 1/2 cup. Sauté onions in reserved drippings. Add potatoes and broth and bring to a boil. Reduce heat and simmer 10 minutes or until potatoes are tender. Add turkey, undrained corn, creamed corn and half and half. Heat well. To serve, garnish each bowl with bacon bits and parsley. Makes 3 quarts or 9 servings.

3 cups plain bread croutons 1/8 tsp sage 1/8 tsp ground black pepper 1/4 tsp salt Note: You can substitute 1 package of herb stuffing for the croutons, salt, pepper and sage. 1 cup canned or fresh oysters (chopped and minced) 1 large white onion (chopped) 2 green onions (chopped) 4 stalks of celery (chopped) 2 tablespoons oleo (aka margarine) Preheat oven to 350 degrees. Lightly coat a 9-by-13 inch casserole dish with oleo. Prepare the giblets: Combine the liver, gizzard, heart & neck with 1 cup of broth. Bring to a boil, then simmer for 45 min. Add more broth as needed to keep giblets covered. Save juices. Remove meat from neck bone and mince along with the rest of the giblet meat and set aside. Add green and white onion and celery in a pan with 2 teaspoons oleo and simmer until white onion is translucent. Combine crouton bread, giblets,

Cherry Cranberry Salad

3 oz. cherry gelatin (can be sugar-free) 3/4 cup boiling water 1 16-oz. can jellied cranberry sauce 1 8-oz. carton sour cream 1 8-oz. whipped topping In a deep bowl, dissolve gelatin and boiling water. Add cranberry sauce and sour cream. Mix with electric mixer until smooth. Refrigerate to set. Top with whipped topping just before serving.

Crockpot Green Beans 5 16-oz. cans green beans, drained 3 10-oz. cans cream of mushroom soup 1 pound bacon, fried crisp 1/2 cup dried minced onion 8 oz. Cheez Whiz Fry the bacon until crisp. Break into small pieces. Drain liquid from the green beans. Spray crock pot with nonstick cooking spray prior to placing ingredients. Place all ingredients in crockpot on low for 3-4 hours.
