For many years, Radford Cox and Milly Rayos were stationed in and around Bahrain with Rad serving at the US Army. During that time, the only BBQ on the island was Nap’s located in the US Naval base. The pair was inspired to pay homage to the renowned American barbeque tradition of smoking meat “low and slow.” They imported a smoker from the United States, purchased US meat, attended barbeque cooking school in the United States, and established Big Texas in Bahrain. Big Texas Barbeque & Waffle House opened its flagship store on the island of Bahrain in 2015 offering a unique taste of true southern American cuisine in the heart of Juffair. Seven years later we’ve become the go-to restaurant for good times and great food, with a plan to open new locations in Bahrain and beyond. The couple’s childhood memories of their mothers and fathers cooking and grilling meals for them are the inspiration for Big Texas cuisine. From New York-style pizza and Italian entrees to Southeast and Midwest-style meat rubs and smoke, all the way down to the to the sides and sauces representing every states, Big Texas menu transports Americans back to their roots. Although the hardwood furnishings and informal setting are more sophisticated than your typical spit-and-sawdust establishment, Big Texas BBQ and Waffle House maintains a down-to-earth vibe, owing to a vibrant environment, mostly American guests, and weekly live music. The restaurant’s best-selling items include 14hour applewood-smoked beef brisket, deep-fried pickles, and a variety of waffle variations. Over the next theree years, Big Texas plans to expand to the GCC region starting in Jeddah, Saudi Arabia. To help facilitate this expansion, the fast food, drive-thru, Big Texas BBQ Halal concept is being created. This will be the franchise model moving forward, and it will cover the whole GCC. The US Navy / US GovernmentcContract market is a high-growth area for restaurants and “Trusted Protein”; a new brand Big Texas is establishing for the retail (grocery/deli) and home protein/meals markets.
