It was important to us that in 10 years the hotel still feels modern and relevant – and arouses the curiosity of the guests. In 2004, MoMA redecorated its main building, focusing on Danish design. Danish design principles, which emerged in the mid-20th century, emphasise simplicity, functionality, and craftsmanship, and share a symbiotic relationship with art. It is a design tradition that values functionality and aesthetic expression and offers a compelling narrative within the context of the museum’s overall collection. Wildflowers grow alongside the paths creating an authentic Nordic and natural vibe as a sharp contrast to the backdrop of modern residential housing and Copenhill - a powerplant transformed into a skiing hill designed by BIG – an urban reminder amid these rural surroundings. Here, guests enjoyed an atypical city view while sipping a glass of wine and enjoying a Noma burger packed with umami and a little magic from their fermentation cellar.

Naming the bakery ”Mel” – the Danish word for flour - sets the tone in this inviting place where the owner’s focus on local grains is met with her love for the Danish ideology of quality, simplicity and functionality.

The Rhubarb Garden’s goal is to serve meals sourced from the nature surrounding them and inspire their guests towards a more ecological mindset. They work hard to be self-sufficient, aiming to produce everything they need for their animals, restaurant, and general store. Nothing goes to waste on their farm, with every part of their production being seen as a resource.
