Wilted Spinach Bryan Blue

2 Eggs 1/2 lb Bacon - browned & drained 1/4 C Vinegar 2 Tbsp Water 1/2 C Sugar (more or less to taste) Brown bacon and drain fat. Whisk together Eggs, water, vinegar and sugar. Add crumbled bacon. Cook over low heat until thick and bubbly. Immediately pour hot dressing over large bowl of cleaned baby spinach leaves. Lightly toss. Serve immediately. Spinach should wilt down from the heat of the dressing. This does not keep well.

2 Cans Beets Vinegar Sugar

10 - 12 Peeled Hard Boiled Eggs Salt

Drain beets reserving liquid. Measure beet juice and add to it an equal amount of vinegar to a large sauce pan. Add a dash of salt and sugar. Add beets to liquid and warm through. Remove from heat, add the eggs and store in the refrigerator.

1 lb Hamburger 1 Large Onion 1 Bag Taco Flavored Doritos速

2 Large Tomatoes 1/2 Head Cut Up Lettuce 1 C Shredded Colby Cheese

Dressing

1 C Salad Oil 1/3 C Vinegar 1/2 C Mild Taco Sauce

3/4 C Sugar 1/2 C Ketchup

Brown and drain hamburger, let cool. Chop tomatoes, and onion. In a large bowl combine all with crushed Doritos速. For the dressing, mix all ingredients in a shaker bottle. Shake well and pour over salad mixture right before serving.

Cranberry Salad Marcia Blue

3 Packages Cherry Jello 1 Package Cranberries 1 C Diced Celery 1 C Ground Walnuts

5 C Hot Water 1 1/2 C Sugar 1 C Diced Apples

Grind the cranberries. Prepare jello using the 5 cups of water and add the sugar; stir until dissolved and let rest 15 minutes. Add the cranberries, celery, apples and nuts; mix well. Refrigerate until set.

Pickled Beets Marcia Blue

1/4 C Brown Sugar 1/2 C Vinegar 1/2 C Cold Water

Stick Cinnamon 3 - 4 Whole Cloves

Boil all together for 10 minutes. Pour over freshly prepared beets and let stand for several days. Add hard boiled, peeled eggs to the liquid and pickle for at least 2 days more before serving.

Ramon Noodles Coleslaw Salad Cristi McFadden

2 Pkgs Ramon Beef Flavor Noodles 2 Pkgs MannÂŽ Broccoli Cole Slaw 1 C Sun Flower Seeds Green Onions - chopped Dressing

1 C Vegetable Oil 1/3 C Balsamic Vinegar 1/2 C Sugar Salt & Pepper Flavor Packs From Noodles Mix noodles, slaw mix, sun ower seeds and chopped green onions (to taste). For the dressing, combine all in a sealed jar. Shake well and pour over salad just before serving.

Celery Seed Dressing Lena Blue From Nora, used at Wynford School on the chef salad

5/8 C Sugar 1 tsp Salt 1 tsp Prepared Mustard 1 tsp Celery Seed 1 C Vegetable Oil 1/4 C Minced Onion 1/2 C Vinegar Beat in a mixer or blender for at least 30 minutes (the long beating is the secret of thick dressing). Will keep well in the refrigerator. If you like, you can add a little basil or Italian seasoning as well.

Celery Seed Salad Oil Lena Blue

1 Quart Vegetable Oil 4 tsp Mustard 1/2 C Grated Onion Celery Seed to taste

2 1/2 C Sugar 1 1/3 C White Vinegar 1 tsp Onion Juice

Combine all and shake well.

Overnight Layered Salad Marcia Blue

1 Medium Head Lettuce, chopped 1 Medium Head Cauliower, chopped 1 Lb Cooked Bacon, crumbled 1 Sweet Onion, sliced

2 C Mayonnaise 1/2 C Sugar 1/3 C Parmesan Cheese

Layer ingredients as follows without stirring: lettuce, cauliower, onion, mayonnaise, bacon, sugar, cheese. Let set overnight. Mix well right before serving. This can easily be divided in half for a smaller family size portion.
