“How’s 2 Bravo?” muffles through the headset as my ears pop for what seems like the hundredth time. Floating roughly 4,000 feet in the air in a yellow T-34 airplane with a 360-degree canopy view of the clear, blue sky, I grip the seat with my legs and pull tighter on the crisscrossed buckled straps holding me in—bracing myself as the nose of the plane takes a sharp, upward pitch into an aerial cartwheel. Before I can comprehend that this 3,000-pound warbird is defying gravity and flipping my world upside down, we do it again before heading back and landing on the comfort of solid ground. For me, this was a once-in-a-lifetime opportunity, but for Skip “Scooter” Aldous and Roger “Fritz” Fritzler of the Lima Lima Flight Team, it was just another flight.

Originating on the outskirts of Chicago in Naperville, Illinois, The Mentor Flyers, Inc.—a 15-member flying club—evolved into the Lima Lima Flight Team: the world’s original six-ship civilian formation aerobatics team. Aerial acrobatics—or aerobatics—consists of performing vertical and horizontal maneuvers like rolls and loops with high-skill precision and concentration. Unlike the Blue Angels or the Thunderbirds, which are military-led flight demonstration squadrons, Lima Lima uses smaller T-34 Mentor planes equipped with piston engines versus jet engines, which allow them to perform tighter, quicker maneuvers—some as low as 250 feet off the ground in an airshow environment. This national team currently consists of five members— including San Diego-based Roger Fritzler, who joined the team in 2014 with experience as a US Navy and commercial pilot, and Lake City local Skip Aldous, who flew with the Air Force for almost 30 years before enlisting with the team in 2000. “I’ve been flying 56 years,” Skip says. “Roger’s been flying since Christ was a corporal.” Contrary to traditional military training, which encompasses all phases of flying including tactical and formation, aerobatics is like a skyline ballet in that it’s a production, but requires more practice and a meticulous approach to display such jawdropping feats, which certainly aren’t for the faint of heart. Skip, who’s been the team lead since 2013, was almost eliminated during his pilot training in the air force due to flight sickness, but as they say: the third time’s the charm. After his third attempt, he fell in love with flying and finally gained his footing—or in this case, his wings. After retiring, he became a certified civilian pilot and joined the Lima Lima Flight Team, which takes basic flight procedures to the next level. “What’s unique about the stuff that we do, if you own an airplane or you just fly—let’s just say you enjoy flying, okay—it elevates it when you can do flying with a group in formation with the aerobatic maneuvers we perform. It makes it more complex and more challenging, but sometimes that’s what we gravitate toward. We like a challenge,” Roger says. Lazy eights and pitch-out-and-rejoins are just the warm-ups to more stomach-churning formations that take the intensity of a twisting, turning roller coaster and raise it to 4,000 feet, which can cause more than just an adrenaline rush. A g-force, which is the pull of gravity on the body, can be measured in positives, which makes people feel heavier, and negatives, which evokes a feeling of weightlessness. A positive g-force, which occurs when the airspeed accelerates like during the ascent of a 360-degree loop, pushes the body into the seat and reduces blood supply to the brain, which can lead to tunnel vision or even blackouts. These physical limitations are why becoming an aerobatic pilot requires patience, practice and a strong equilibrium.

Each tactic is practiced hundreds of times before being placed in Lima Lima’s 12-minute routine, which can be adjusted to accommodate for low-lying clouds that eliminate aerobatic maneuvers and nearby flight traffic. “We’ve got two, three and four-ship shows. We have flat, low and aero,” says Skip, who’s been a part of 250 or more shows since joining the team over two decades ago. “I’m always thinking of how to improve the presentation. I’m pretty happy with the presentation we have right now, but, you know, there’s always something else to do.” Formation configurations used in their demonstrations range in difficulty from basic finger-four and diamonds to the complex two-plane heart in the sky and the emotional missing man act that pays tribute to fallen soldiers, sailors, airmen and marines. Whatever the lineup, the routines are briefed and performed one-to-two times before show day, with changes or adjustments demanding a week or more of rehearsals two-tothree times a day. Of course, all that hard work pays off in the end when they get to witness the amazement of the spectators below—especially during small-town and military events, which are their favorite to attend.
and the requirement of safety-dependent teamwork, not everyone can or wants to join a formation team—let alone become involved in aerobatics. With only three out of five Lima pilots certified in aerobatics, their five-ship shows are reserved for parades and flyovers. “Not many pilots outside of the military can or want to do it. There are probably less than a thousand civilian formationcertified pilots in the country,” Skip says. Despite a lack of recruits, with almost 34 years of experience captivating audiences in Canada, Mexico, the Dominican Republic, the contiguous United States and Alaska, the Lima Lima Flight Team won’t be making their final approach anytime soon. Are you looking for an excuse to have a fiesta? Well, Cinco de Mayo is it! This holiday commemorates the Mexican Army’s victory over the French Empire at the Battle of Puebla, on May 5, 1862, and is widely celebrated in America as well. In celebration, each year there are parades, festivals and dancing in Mexico, but just because you are not in Mexico does not mean you cannot celebrate this holiday in style! Local restaurant owners Jorge Sr. and Irma Carillo share a few great ways to celebrate the holiday this year and give us some details about their beloved restaurant, El Potro Mexican Restaurant.

So, how did this family restaurant come to be? In 1995, Jorge Sr. was working in Savannah, Georgia, when he met a man who owned a restaurant in Lake City. After becoming quick friends, Jorge Sr. was offered a job at the restaurant, El Potro, along with the opportunity to become part owner. The deal was too good to pass up, so Jorge Sr. packed up and relocated to Lake City to learn all about the restaurant, beginning in the kitchen and eventually experiencing every job within the restaurant industry. As the years went on, Jorge Sr. became very passionate about the business and purchased more shares in the partnership, eventually buying his partner out when he was ready to retire. Now, the Carrillo family have owned El Potro for nearly 24 years! Aside from the delicious cuisine and community loved atmosphere, what sets El Potro apart is the Carrillos’ commitment to family. Their children are all involved in the restaurant in some capacity, working as servers or cashiers, along with assisting with customer service.
“We all started out by learning how to seat customers, or by helping to make silverware packs and running chips to the tables. Then as we got older, around 16 and 17 years old, we started waiting on tables and helping with cashier or hostess duties. We are more involved with customer service now,” Irene Carrillo, Jorge Sr. and Irma’s daughter, shares. “Everyone plays a part.” When asked about their favorite part of owning a restaurant, Jorge Sr. and Irma both explained that it was having the entire family involved. Through their restaurant journey, the Carrillos have been able to learn and grow together, instilling values of hard work, dedication and gratitude in their children. Jorge Sr. also expressed that he appreciates being a part of the thriving Lake City community and its small-town feel. Everyone here is like family, which makes living away from their family in Mexico a little bit easier. “I feel so grateful to be in this town and I am so grateful for our customers. They are so supportive through the good days and the bad times. When we had to close our dine-in option last spring, our customers were still faithful and ordered takeout to support us,” Irma expresses. “We never had to close down completely, so I am very grateful.”

#2: Host at home! Not in the mood to go out? No problem! Host your very own Cinco de Mayo celebration from home sweet home. Decorate your space with colored streamers, stuff a piñata and blast your favorite Spanish tunes. Make colorful fruit smoothies for the kids or try out a new margarita recipe for those who are 21+. Grab takeout from your favorite local spot or try your hand at creating a full Cinco de Mayo menu from scratch. Don’t forget to bust out the Fiestaware and throw on a colorful, celebratory outfit for your night in.
#3: Set up a margarita bar. This is sure to spice up your celebration! If you are a margarita enthusiast, consider setting up a margarita bar to enjoy. Set out fun margarita glasses, margarita mix, salt and sugar, and your choice of tequila. Offer a variety of different fruit mix-ins or flavors of your choice, along with ice and a blender for those who enjoy frozen margaritas. You can even add festive drink picks and toppings for your creations. Want to make this family-friendly? Skip the alcohol and make non-alcoholic frozen beverages for the kids!
#4: Learn to salsa! If you love to dance, this one is for you. Take Cinco de Mayo as your opportunity to learn a new style of dance, like salsa. Find a video on YouTube that teaches you the dance of your choice, throw on your dancing shoes and grab a partner. Not only is it a fun form of exercise and a great bonding experience, but it is also a great opportunity to learn more about a beautiful culture.
#5: Learn about the history of Cinco de Mayo. While you may not be able to physically travel to Mexico this year, there are still so many great ways to embrace the holiday and experience the culture. Consider diving into a book about the history of Mexico or watching a documentary about the culture. It would also make a great learning opportunity for your children, so consider planning some arts and crafts projects to go along with your studies. Happy Cinco de Mayo!

Queso Fundido (Queso with Chorizo)
Ingredients: • 1 bag of Chihuahua shredded cheese • Chorizo (Mexican sausage) • Flour Tortilla (optional) • Corn chips (optional) Instructions: Begin by adding the desired amount of shredded cheese into a glass dish or pan and bake in the oven at 350 for 2-3 minutes, or until the cheese is melted and bubbling. In a separate pan, cook the Chorizo for 4-5 minutes, or until it is brown in color and completely cooked through. Drain the oil that it contains before moving on to the next step. Finally, smother the chorizo with the melted cheese, and the dish is complete! Enjoy with flour tortillas or fresh corn chips.
Chile Rellenos
Ingredients: • 3-4 Poblano peppers • 3-4 Potatoes • 8 oz. block of Pepper Jack Cheese • 3 eggs • All purpose flour, for dusting • Cooking oil of choice (Olive oil, coconut oil, etc.) • Salt and pepper to taste Instructions: Begin by roasting the poblano peppers in a hot pan, periodically turning them to prevent them from burning. Once they are roasted, place the poblano peppers into a plastic bag to make it easier to peel the skin and remove the seeds. Next, peel the potatoes. Cube the potatoes and pepper jack cheese into rectangular slices. Add the cheese and potato mixture into the clean inside of the roasted poblano peppers, then cover the outside of the pepper with flour to prevent anything from spilling out. Next, grab a bowl and add the egg whites into it and mix it until fluffy, while adding 2-3 yokes and a pinch of salt. The final step is to grab the pepper and dip it into the fluffy egg whites mix, placing them in an oiled pan. Cook until it turns a nice golden brown. These can then be served with the tomato sauce of your choice, or the topping of your choice. Enjoy! ■

Spring can be the happiest time of the year with flowers blooming and bees buzzing after a dull winter, when the life in plants and bugs tends to lay dormant.

Maybe spring makes you think of flowers, a garden, or the upcoming warm days of summer to follow. Blooming flowers are lovely and are commonly found growing in planter pots around one’s yard, or even inside one’s home. However, did you know that some people actually grow food in planter pots? This style of gardening is commonly referred to as container gardening. Container gardening is perfect for small spaces, or while you’re in a rental home.
The potted plants are easily moved, making them mobile where you can have more control over the moisture, sunlight and temperature. They can be grown on windowsills, on patios, along fences, next to walkways and driveways, on porches and balconies, and even on roofs. It’s a wonderful way to garden if you want to grow one plant or if you would like to grow an entire garden’s worth of plants. Container gardening also gives the ability to have more influence over the soil as well as minimize weeds.

Step one: Choose your plants You can grow almost any vegetable in a container. You can even look into the dwarf versions of the plants you want to grow; dwarf plants come in a wide variety from lettuces to tomatoes to cucumbers to beans. The dwarf varieties of plants are especially helpful if your growing space is limited.
Vegetables such as peppers, eggplants and squash will need an 18- to 24-inch-diameter pot. Plants like herbs and lettuces will need pots that are 10- to 14-inch-diameter pots.
Step two: Choose your container(s) You can grow in a ceramic pot, a tiered vertical garden, a 5-gallon bucket, seed starters; you can build your own box and more. Basically, you can get creative with the type of container
Step three: The soil First thing to ask yourself is what type of end product do you want your crop to be? Traditionally grown, organic or a mixture? There are multiple types of soil to choose from such as peat, perlite, vermiculite, granite sand, bark, coconut husks, and composted animal manure. S P R I N G 2021 | 23
What’s great is that if you do not end up liking your soil this year, you can choose something different next year.
The following are some tips to help make your container gardening efforts successful.
Step four: Plant the plants When planting, consider looking into companion planting; it is where you plant different crops in close proximity to one another. There are several benefits to this, such as pest control, pollination, providing habitat for beneficial insects, maximizing use of space, and to otherwise increase crop productivity. Another thing to consider before putting your plants in the soil is planting plants together with similar needs, such as how much water and sunlight they need.
· Watch water. Planet Natural Research Center says plants with thin leaves typically need ample water, and plants with thick leaves need less. Use this as a guideline to gauge water needs.
You can start your plants from seeds or go to a local store and purchase plants that have already been started for you. Step five: Placement of the containers Have fun and make your setup be artsy or keep the containers simple and practical. Either way, move the containers around as needed for light, water and temperature. Once you have harvested your crop, enjoy the fresh produce! If there is more to go around than you can eat, consider sharing with a friend or trading crops with another gardener. You can also look up ways to store your crop for the future, such as canning or freezing. Gardening is beneficial in various ways. Some of the health perks associated with gardening include improved mood, increased vitamin D levels (which benefits bones and immune system) and reduced risk of dementia. In addition, if gardening efforts include growing herbs, fruits and vegetables, it can be a costeffective way to eat healthy.
· Size correctly. Plants should be sized to the container. Consider dwarf varieties of certain plants if your containers are small. · Choose the right soil. Fill containers with a commercial potting soil rather than soil from the garden. Garden soil can dry into a solid mass, while commercial mixtures have amendments like peat moss, vermiculite, compost, and other ingredients to help with soil texture and moisture retention. · Mix it up. When planting containers of flowers and other greenery, Good Housekeeping says to include “a thriller, a spiller, and a filler” as a good rule of thumb. The thriller is the focal point; the spiller a trailing plant; and a filler has smaller leaves or flowers to add bulk and color. · Poke holes. Drainage holes are essential so that soil will not become waterlogged. Holes don’t need to be large, but there should be enough of them so that excess water can drain out readily.

“Classes have been running out here since the early ’70s,” says Prell Gwinn, who is the Associate Director of Law Enforcement Corrections at FGC and is a prior graduate of the program. “We house the Law Enforcement Academy, Corrections, Emergency Medical Services and the Fire Academy.” These four career paths can be broken down into specializations with the Law Enforcement Academy featuring the option of obtaining an Occupational Certificate in CMS Law EnforcementBasic Recruit or an Associate in Science

for Criminal Justice Technology while Corrections provides the opportunity to earn an Occupational Certificate in Correctional–Basic Recruit. “In addition to Corrections and Law Enforcement, we offer crossover programs between the two. So, if you’re a currently sworn law enforcement officer, then we offer a program that will utilize the courses that you have and apply them to a corrections program,” Gwinn says. The Emergency Medical Services Academy delivers the basis for students to earn an Associate in Science for Emergency Medical Services Technology or a College Credit Certificate as an Emergency Medical Technician or Paramedic. Finally, the Fire Academy trains students for an Occupational Certificate for Firefighter Minimum Standards or an Occupational Certificate that combines both EMT and Firefighting.
“If you are interested – if a student is interested in any type of public service – then, you know, come out and take a tour because we offer tours. We like to talk to people about different aspects of the program. My message would also be that we need people, good people in public service now more than ever,” Prell says. Being a part of the FGC community for almost five decades, the technological advances each of these programs has implemented over the years have been astronomical in giving students real-life, hands-on experiences. “The Baker County Sheriff ’s Office, in addition to several others with Florida Gateway College, acquired a grant that allowed us to secure the MILO training system. Basically, we utilize it for interactive training so recruits can actually go in there and be subjected to a number of scenarios in which they would have to interact with subjects that appear on the screen. They have weapons on their side—of course, these are training weapons—and so they’re placed in live scenarios, so that has really enhanced our scenario training program. In addition to recruits using this, we allow outside agencies in our district to come in and utilize this as well,” Gwinn says. Other advances include the use of an Anatomage Table for the EMS department, which gives students interactive training with digital body
parts and allows them to perform simulated operations. While having up-to-date technological tools is a great achievement, hands-on learning is only half of the curriculum. To ensure book-based learning is just as beneficial, the Olustee campus hires expert instructors who are currently or have previously served in the field they’re teaching. “That’s what we pride ourselves on is basically getting students up out of those seats and providing that hands-on learning from instructors who are, you know, highly skilled and experienced and connected in those fields that they teach,” Gwinn says. “These students aren’t just learning from a book; they’re learning from experience and they’re provided handson learning.” These core principles of appointing expert instructors and encouraging active participation will be carried over to a fifth program that’s expected to be offered at the training center by spring 2022.
“Right now, a multi-million-dollar expansion is currently underway next door to us and that is going to house our CDL program,” Gwinn says. “It’s going to also be used for our Law Enforcement Program, our EMS program and it’s going to hold a vehicle track out there to where we can utilize emergency vehicle operation training as well.” From putting out fires to treating medical and trauma conditions, if you’ve ever felt a calling to be a part of the public safety or criminal justice field, Gwinn suggests coming out to the Sanderson-based campus to see if such a career-path is the perfect fit. ■

“My daddy all my life told me: ‘Suzette, whatever you decide to do, just make sure you love it,’ and I do,” Suzette says. “I had always said, like, I just wanted to give fresh product and a smile and make people feel good, and the Lord could just take care of everything else.” Though there was a learning curve of figuring out how to work with fresh flowers versus silk, Suzette welcomed the experience of those who previously worked in The Flower Shop before finding her footing and developing her own style and artistic flair. 28 |

Suzette Maddox was destined to spend her life surrounded by flowers. The year she was born, her father bought a nursery—a career choice that filled her childhood with the knowledge of repotting plants and the strength to withstand rose-pricked fingers—but it wasn’t until after she got married and raised four children that flowers would become the basis for her own profession. In 2006, while driving down Main Street in Branford, she noticed a “For Sale” sign in the window of the aptly named The Flower Shop. Wanting to add a role to her life beyond the title of wife and mother, she bought the business and used her background in silk plants and a crafter’s eye for design and entered the world of floristry. “I just love flowers, and they make people happy. They bring so much joy to people,” she says. Rather than relying on traditional choices like baby’s breath or tulips, Suzette sets herself apart by using a wide variety of flowers in her arrangements from delicate anemones and spice-scented dianthus to layered ranunculus and vibrant dahlias. “It’s nice to introduce people to flowers, like, everybody knows what a rose or a carnation is, but they don’t
necessarily know what a stock is or delphinium,” she says. Besides going beyond the basics, Suzette also prides herself on following and incorporating the blooms, greenery and filler that’s trending in the industry. “Staying on trend is really important to me and, you know, knowing what are the colors of the seasons? What are people looking for? Succulents, of course, are huge right now. Eucalyptus is huge right now. Anything that looks clean and fresh,” she says.

In 2015, after moving and refurbishing an old dollar store into The General Store, which features The Flower Shop, home décor, farmhouse pieces, gifts and clothing, Suzette had less time to create her signature bouquets—leaving the task instead to her designer, Terri Carver. Despite the new responsibilities associated with the expansion, delivering the arrangements herself is still her top priority. “I do love designing flowers, but I love delivering them,” she says. “I cannot let that part of it go away. It is too special.” “The very first arrangement I ever delivered was to a mom who had not seen her daughter in three years, and when she opened the door and she saw them, she just sobbed. It was the most special thing to get to experience her feeling that love from her daughter,” she says. “That very moment…I was like ‘oh, I’m right where I’m supposed to be in this world; like this is what I’m supposed to be doing with my life.’” Part of the struggle of being a florist is the budding belief that flowers quickly wilt, so buying a vase of them is wasteful. Nevertheless, in Suzette’s experience, the joy they bring is far greater than the sight of fallen petals. “One of my favorite things to say to someone who says that— and I truly believe it to my core—that’s true they do die, but you could probably ask any person that’s ever received flowers, they could tell you a memory that they had of —Suzette Maddox receiving a flower arrangement,” Suzette says. “Whether it’s receiving flowers when you have a baby or for a birthday or an anniversary or whatever, like everybody who’s ever received flowers can tell you that there is a memory attached to that, that does not die.” With almost 15 years of experience selecting and arranging flowers into nature-based works of art, Suzette appreciates the visual awe behind every blossom. “There’s beauty in every flower. There’s something special about—I mean, I wear a shirt all the time that has a dandelion on it, and it says: ‘some people see a weed; some people see a wish.’ It’s the truth about our industry and what it has to offer,” she says. “It’s just such a blessing to be able to do this every day.” ■

Dredge each chicken breast on all sides with flour mixture. Set aside. In a large skillet over medium-high heat, heat oil until shimmering but not smoking. Add chicken and sear until golden, 6 minutes. Flip and cook until opposite side is golden, around 6 minutes more. Remove from pan and set aside. Turn heat down to medium and add butter to pan. When butter is melted add garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted, 1 to 2 minutes. Add chicken broth, cream, and remaining 1/2 cup Parmesan and season with more salt and pepper. Stir to combine. Add lemon slices and bring to a simmer and cook until thickened slightly, 3 to 4 minutes. Return chicken to skillet and simmer until chicken is cooked through, 5 to 6 minutes more. When chicken is cooked, remove skillet from heat and garnish with basil before serving.

Craft Corner
Faux Stained Glass Supply List: • Wax Paper • Mod Podge (liquid glue will also work) • Colored Tissue Paper • Scissors • Paint Brush • Construction Paper • Staples Directions: Cut out two of the same sized shapes of wax paper (could be a heart, 4-leaf clover, a square or rectangle). Then tear or cut multiple colors of tissue paper into small pieces. Using the paint brush, paint the Mod Podge onto the wax paper and begin attaching the small pieces of tissue paper onto the wax paper. Continue this process until you reach your desired results. Cut and staple a thin border of construction paper to the edges. Display in front of a window and enjoy your DIY faux stained glass.

Crayon Shapes Supplies: • Gather up the broken or unused crayons around your house or purchase a new pack of crayons and break them into pieces. • Molds (can use a muffin pan) • Oven Directions: Step 1: Preheat oven to 200 degrees. Step 2: Let crayons soak in warm water for 10 minutes to remove peel/glue. This will save you so much time. Step 3: Break crayons into small pieces. The smaller the pieces, the quicker they will melt.
Step 4: Fill molds with crayon pieces. It’s okay to overfill molds — the crayons will take up less space when they melt. Step 5: Place molds on baking sheet and bake for 10-15 minutes, until crayons are melted through. Step 6: Carefully remove cookie sheet from oven and transfer to freezer for 30 minutes. Step 7: Release the crayons from molds by pushing them out. They also make a fun and creative gift for friends and classmates!

Backyard Fun Hopscotch Obstacle Course This is a great activity to do as a family, with friends or just to keep the kid(s) entertained for the afternoon. It only takes a few minutes. Supplies: • Chalk • Cleared concrete space Note: the size of your concrete area will depend how long the course is or how creative you need to get with your space to make it fun. The smallest space I’ve used was 6ft x 10ft.
The Obstacle Course—Draw: • Hopscotch using 10 spaces • A circle and write “spin around 3 times” • 10 circles to walk like stepping stones • A circle and write “do 5 jumping jacks” • A line to walk like a tight rope or balance beam • A starting line and then a line to jump over • A curvy line to skip

Rustic Fennel & Pork Fricassee
What you’ll need to get started: • 2 (6- to 8-ounce) boneless pork chops (around 1/2-inch thick) • Salt and ground pepper for seasoning • 1/4 cup all-purpose flour • 3 tablespoons unsalted butter • 8 ounces sliced mushroom blend (white mushrooms will work too) • 2 cloves minced garlic • 1 tablespoon Dijon mustard • 2 cups low-sodium chicken stock • 1 15-ounce can artichoke heart quarters, drained (about one cup) • 1/4 cup heavy cream • 2 tablespoons lightly chopped fennel fronds Instructions: Step 1: Use a paper towel to pat dry your boneless pork chops. Season with salt and pepper; dredge in flour, shaking off excess. Heat 1 tablespoon butter in a large skillet over medium-high. Add pork and cook, flipping once, until

browned, 2 to 3 minutes. Transfer to baking sheet and finish in the oven at 300 degrees for 20 minutes. Step 2: Add remaining 1 tablespoon butter and mushrooms to skillet; season with salt. Cook, stirring occasionally, until golden, about 8 minutes. Add garlic; cook, stirring, 1 minute more. Stir in mustard and broth; cook until reduced by half, 10 minutes. Stir in artichoke hearts and cream. Return pork and any juices to skillet; cook until thickened slightly, about 3 minutes. Stir in fennel; serve.
Spatchcock Chicken
This meal is as fun to say as it is to eat, and it’s perfect for spring and summer because it cooks in about half the time, keeping the chicken juicy and your kitchen nice and cool!
Instructions: Step 1: Preheat oven to 425 degrees. Cover sheet pan with parchment paper. Step 2: In a small bowl, add the butter, poultry herb blend, garlic, lemon zest, smoked paprika, salt and pepper. Whisk or mash with a spatula until well combined. Step 3: Place the chicken breast-side down and the legs towards you. Use a pair of kitchen shears to cut up along each side of the backbone, cutting through the rib bones as you go. Open the chicken out and turn it over, then flatten the breastbone with the heel of your hand, pressing down so that the meat is all one thickness. Cut the wing tips off as well. Step 4: Season the inside of the chicken generously with salt and pepper, then flip it over so that the breast side is up. Apply compound butter: Run your fingers under the chicken skin (breasts and legs) and rub half of the compound butter under the skin. Spread the rest of the mixture over the top of the bird. Sprinkle lemon juice over the bird. Step 5: Place the chicken on the sheet pan, bake uncovered for 45 minutes or until it registers 165 to 170 degrees on an instantread thermometer. The time can vary if using a different size chicken. Let the chicken rest at room temperature for about 15 minutes before carving and serving.
Every season needs a stew, and this one is spring-tastic! No meat in this one, so it’s perfect as a vegan option.
Spring Vegetable Stew What you’ll need to get started: • 1 pound dried large white beans (such as lima or gigante), soaked overnight, drained • 1 onion, trimmed, peeled, halved through core • 3 ribs celery, trimmed, halved • 1 ounce dried shiitake mushrooms (about 10 large caps) • 8 sprigs parsley, plus 3/4 cup parsley leaves with tender stems • 1 head of garlic, halved, plus 1 garlic clove, finely grated • 1 tablespoon plus 1 teaspoon kosher salt, plus more • 3/4 cup plus 3 tablespoon extra-virgin olive oil, plus more for drizzling, divided • 3/4 cup mint leaves • 1 bunch radishes • 1 bunch medium-size asparagus (about 1 pound) • 1 10-ounce bag frozen peas, thawed • 1 4-inch piece fresh horseradish root, peeled • 1 lemon, cut into 8 wedges Why let spinach and spanakopita have all the fun? This asparagus tart will provide color and flavor to any spring meal!
Asparagus Tart What you’ll need to get started: • 1/4 cup part-skim ricotta cheese • 1/2 cup softened cream cheese • 1/4 cup chopped fresh flat-leaf parsley • 2 tablespoons minced white onion • 1 tablespoon fresh thyme leaves • 1 garlic clove, grated • 1/2 teaspoon kosher salt, divided • 12 (14- by 9-inch) frozen phyllo pastry sheets, thawed • 3 1/2 tablespoons olive oil, divided • 1 1/2 pounds medium asparagus spears, trimmed to a length of 6 1/2 inches • 1 ounce Parmigiano-Reggiano cheese, shaved (about 1/4 cup)
Instructions: Step 1: Preheat oven to 400 degrees. Step 2: Stir together ricotta, cream cheese, parsley, thyme, garlic, and 3/8 teaspoon salt. Step 3: Place 1 phyllo sheet on a baking sheet lined with parchment paper. (Cover remaining dough to keep it from drying out.) Lightly brush phyllo sheet with oil, and top with another phyllo sheet. Repeat layers with remaining phyllo sheets and oil, reserving 1 teaspoon oil to brush on asparagus. Step 4: Spread ricotta mixture on phyllo stack, leaving a 1/2-inch border. Arrange asparagus spears side by side over ricotta mixture. Brush asparagus with remaining 1 teaspoon oil. Step 5: Bake at 400 degrees until phyllo is browned and crisp, 22 to 25 minutes. Sprinkle with remaining 1/8 teaspoon salt; top with shaved cheese.

a large Dutch oven. Bring to a simmer over medium-high heat, cover, and transfer to oven. Bake until beans are fully cooked, tender, and creamy through and through, but as intact as humanly possible, about 1 hour, depending on the type, brand, and age of beans. Start checking every 10 minutes after the first 45 minutes. (When checking beans for doneness, stir gently and taste at least 3 beans—it isn’t finished until they’re all tender!) Step 2: Using tongs, fish out aromatics and discard. Season with salt. Be generous! Under-seasoned beans are barely worth eating. Let sit on stovetop, uncovered, until ready to serve. Step 3: While beans are cooking, make your pistou and prep the vegetables and garnishes. Using your sharpest knife, finely chop mint and 3/4 cup parsley leaves. Nothing brings a meal together like a good dessert, and when I was growing up, you couldn’t do better than Grandma’s berry cobbler; it’s sweet and fresh and everything that spring should be!

Step 4: Trim and wash radishes, then slice as thinly as possible into coins (a mandoline really helps here). Transfer radishes to a small bowl, cover with cold water, and chill until ready to use. Step 5: Wash asparagus and trim woody stems by bending each spear near the cut end until you find the place where it wants to break naturally. Cut off tips, then cut each tip in half lengthwise. Slice now-tipless stalks crosswise into thin coins. Toss asparagus coins and tips and peas in a medium bowl; set aside. Step 6: When you’re almost ready to serve the stew, return beans to a gentle simmer over medium heat, taking care not to stir too much—you don’t want to bust up those beans! Step 7: When beans are simmering, add reserved asparagus and peas; cook, stirring gently, until asparagus coins are barely cooked but still bright green and crunchy, about 2 minutes. Step 8: Drain reserved radishes. Place horseradish root on a plate with a Microplane (the way you’d serve Parmesan). Bring Dutch oven full of stew directly to the table. Serve with fried bread, pistou, radishes, lemon wedges, and horseradish alongside. ■
What you’ll need to get started: • 1 package (16 ounces) strawberries, sliced • 1 package (6 ounces) blackberries • 1 package (6 ounces) raspberries • 1 package (6 ounces) blueberries • 2 tablespoons fresh lemon juice • 1/2 cup plus 4 tablespoons sugar, divided • 3 tablespoons cornstarch • 1 1/2 cups all-purpose flour • 1 1/2 teaspoons baking powder • 6 tablespoons butter, chilled and cut into pieces • 3/4 cup heavy cream Instructions: Step 1: Preheat oven to 350 degrees. Step 2: Combine berries and lemon juice in a medium bowl; set aside berry mixture. Step 3: Mix cornstarch with 1/2 cup sugar in a small bowl. Pour cornstarch mixture over berry mixture. Stir berry mixture gently until ingredients are evenly combined. Pour berry mixture into a 2-quart or 9 x 9-inch baking dish. Set aside berry mixture. Step 4: Place flour in a large bowl. Add 3 tablespoons sugar and baking powder. Cut in butter with a pastry blender or two knives until mixture resembles coarse crumbs. Stir in cream to make a soft dough. Step 5: Drop spoonfuls of dough over berry mixture. Sprinkle remaining 1 tablespoon sugar over dough. Step 6: Bake about 50 minutes or until top is well browned and juices are bubbly. Serve warm with whipped cream or ice cream.

When Elke Westberry had daughters of her own, she was determined to raise them differently than she was. Her mother wasn’t mean or cruel to her or her siblings, but she possessed a strict and cold approach to motherhood, was guarded with her affection and raised her children to be independent and care for themselves. In her defense, she had to be that way. It was just a sign of the times. Elke Vetter was born August 9, 1939, in Berlin, Germany – just a few weeks shy of the beginning of World War II. It was a period that left her with memories of taking her first steps in a bomb shelter and being evacuated from her home on two separate occasions – once to Czechoslovakia and once to Prussia. The last time she saw her father, who was a German soldier, was when she was three years old.

What she knows of him, which is very little, is that he was taken as a prisoner of war and died somewhere between Russia and Romania either of starvation or disease. As to his reasoning for joining the German military, it was either fight or be killed. Any beliefs he held personally, she’ll never know, but the misconception that every German soldier was presumably a member of the Nazi party is something that to this day still haunts Elke and others with a similar background. When the war came to an end in 1945, the plight against Berlin was just beginning. Germany was divided into four quadrants – the Soviet Union controlling the east side and the rest of the allies: France, Britain and the United States, controlling the west. Berlin, which was in the middle of Soviet-occupied East Germany, was broken up in a similar way. In an attempt to have complete control of the city, the Soviets enacted a blockade to prevent food and supplies from entering the western part of the German capital. The only way Elke and her family managed to survive was with the Berlin Airlift, which was a movement by the allies to bring goods by plane including care packages from the US containing three-pound tubs of margarine, cheese and dried sweet potatoes. “That’s what kept us alive,” she said. The Airlift lasted for over a year, but that wasn’t the end of Berlin’s struggle. In 1961 the Berlin Wall rose and stood for the next 28 years. Constructed of barbed wire and concrete and armed with guarded watch towers and land mines, the wall was meant to stop Germans from leaving East Berlin and keep the westerners out. When she was 16, Elke left Berlin for Egypt but returned a few years later to meet her future husband, Tom Westberry, who, at the time, was stationed in Berlin with the US Air Force. With Tom, Elke learned to sew and cook, but most importantly, she discovered what love was. Being raised by a widow of war, Elke and her two brothers quickly became self-reliant. When she was nine, Elke walked herself to the doctor’s office to have her tonsils removed. If they were eligible for socks or underwear they would go to the missionary barrel and pick them up themselves. They were responsible for their schooling and keeping house while their mom worked. It was a turbulent era that made for an unhappy childhood, but it was an experience that helped shape the person Elke would become.
“She is the most selfless person, the most selfless person that I know,” Monika Couture, Elke’s youngest daughter said. “They [her parents] were very active in our church but always behind the scenes, never wanting to take credit for what they did.” Whether it’s donating her time, financial help or handmade quilts and pillowcases, the insight of going without made a lasting impact on her character and her role as a mother. Elke was never one for reading nursery rhymes or fairytales as bedtime stories – finding them foolish and silly, especially Dr. Seuss. Nevertheless, she offered her daughters – Monika and Bettina – something she never got from her mother: her time. Aside from helping them with choir practice and drama
recitals; teaching them manners and etiquette or the simple appreciation for a cup of hot tea, the biggest lesson Elke instilled in her daughters is that time is more valuable than objects. “We get together a lot because family is very important to each and every one of us,” Monika said. From holiday traditions like stuffing shoes with candy for St. Nicholas Day or filling a plate with fruit, nuts and chocolate for the Bunter Teller to unprompted family brunches featuring open-faced sandwiches, rolls, and tea, whatever the occasion or lack thereof, Elke, Monika and Bettina always find a way to be together. Elke found ways to become the kind of Mum that she always wanted to be: fun, loving, witty and most importantly, present. It’s been over 50 years since Elke moved to America – the only one in her family to do so – and though she hasn’t been able to return to Berlin like she used to, Germany will always hold a special place in her heart that she keeps alive with traditions and customs that she passes down to her daughters and grandchildren. ■ S P R I N G 2021 | 51

An exercise program for moms and their little ones

If you’ve had a baby or know someone close to you who’s had a baby, then you understand the struggle of being a new mom. Although each pregnancy, postpartum recovery and baby is different, many mothers face a strenuous journey the first couple of months after giving birth. And while some can cope with the “baby blues” better than others, everyone needs a support system. “We were created to have community,” says Goldi Garber, who is the instructor for Revive Fitness’s Mommy & Me Class. “We started the class because we wanted a whole support group specifically geared towards women in this stage of life because I absolutely remember how difficult it was.” Postpartum depression, also known as the “baby blues”, is very common for new mothers to go through after having a baby. But luckily, there are things you can do to help get you back on your feet—literally. JOIN SUPPORT GROUPS Maybe you find yourself at home, spinning your wheels, trying to take care of a baby all day and you’re searching for an outlet. As the pandemic hit last year, many in-person group activities stopped happening, which caused mothers to find alternative ways to find support such as online support groups. Fortunately, Revive Fitness, located in Lake City’s downtown area, created a class that meets a couple times a week that’s solely dedicated to mothers who are trying to get back in shape or, simply, trying to survive. All you need is a baby, a stroller and the willingness to show up to class. “I know that sometimes when you have your first baby, it’s like living in a whole other world,” Goldi says. “You feel like you’re on an island by yourself and no one around you understands. This class is solely dedicated towards helping new mothers feel supported.” Entering into parenthood is something that no one can really prepare you for, but being around other mothers and people alike, can help make the transition easier. 54 |

EAT A WELLBALANCED DIET On top of making sure your new baby gets the best nutrition he or she needs, it’s vitally important that you, as the mom, are making sure you are getting the adequate amount of sustenance as well. “When you’re wanting to be a mother, you’re wanting to do it right, it’s really stressful,” Goldi says. “But you have to make sure to feed yourself in order for you to heal. You are recovering from one of the largest things that has ever happened to you.” Goldi is also the owner of NutraLean, a local food restaurant that offers healthy meal choices, so she encourages new mothers to eat the right type of food. After giving birth, she says that new moms typically are either trying to lose weight as quickly as possible or they’re just trying to survive. And in both cases, they usually end up not getting an ample amount of needed nutrients. Mothers should eat plenty of protein and drink plenty of fluids to keep energy levels up and stay hydrated, especially if breastfeeding. GET SOME DAILY EXERCISE After having a baby, most women are pretty eager to lose the pregnancy weight they just gained over the course of nine months. But when you are up all hours of the night with a baby, recovering from a surgery or just plain exhausted, it isn’t always easy. Joining a fitness group with other moms is one option. But, like a lot of mothers nowadays, you might have to go to work and can’t join a class during the day. So, what can you do? Search online for exercises that involve pelvic floor exercises, Goldi says. It’s also good to do exercises that include anything that is quick, HIIT or compound exercises. “Women like to target their tummy area, so they decide to go do some abdominal workouts,” Goldi says. “But you should be very cautious with that. You should look up what abdominal workouts are best for a new mother first. The tummy area is 80 percent diet and 20 percent exercise.”

in enough oxygen. Now, when this happens, the airline specifically states to do your mask first before helping anyone else. Why is that? “Because if you can’t take care of yourself, you can’t take care of your child,” Goldi says. “Someone said this to me seven years ago, and I still implement it and tell others because of how much it helped me.” Self-care is important as a new mom because it’s easy to forget about your self-worth when you are busy taking care of another life. While it’s important that your baby gets the best care possible, it’s also important to set healthy boundaries and know your limit. Being a new mom is tough, but it’s also very rewarding. Goldi says, “Its like being in heaven and hell at the same time.” And it’s important to know there are groups and fitness classes out there for every mother who’s just trying to make it one step at a time. Jeanie Stanley Allinder is a walking encyclopedia of bluegrass and country music, its artists and the famed Stanley Brothers bluegrass band who also played country. She came by this talent naturally – her father was Carter Stanley, and his brother Ralph was her uncle. Together, they performed for 20 years as the Stanley Brothers in the US and all over the world. The Stanley Brothers became known as one of the most respected and influential pioneering groups of a new genre that later came to be known as “bluegrass.”

Photo by Tom Gray Jeanie followed her family’s bluegrass/country music footsteps, starting her own band and traveling the South entertaining for a couple of years. Today she seeks to honor the Stanley Brothers once more. Jeanie hopes to get the Stanley Brothers inducted into the Country Music Hall of Fame (CMHOF). Thousands of Stanley Brothers fans joined this effort. About 14 years ago, Jeanie turned in 10,000 signatures to the CMHOF only to be told petitions don’t work. “The Country Music Association’s Special Voting Panel is the only ones who can vote inductees in,” she says. Carter played guitar and sang lead while Ralph played banjo and sang with a strong, high tenor voice. Their harmonies were much admired. “Bill Monroe once told folks Carter was the greatest natural lead singer he’d ever heard,” Jeanie says. Carter had a knack for simple lyrics that portrayed strong emotion.

Jeanie says she wants to get the Stanley Brothers into the CMHOF, overseen by the CMA. “People such as Bill Monroe, Flatt and Scruggs, Mac Wiseman and the Carter Family were inducted into the CMHOF, so why wouldn’t the Stanley Brothers be inducted?” Jeanie asks. “They have my daddy’s guitar and my uncle’s banjo there, so if they’re good enough to have their instruments there, why not put in the two men who played them?” she wonders. “The one thing Uncle Ralph wanted was for he and my daddy to be inducted into the Country Music Hall of Fame, ‘side by side, just as we started out’,” Jeanie says Ralph told her before he died. “His last request was that he and his brother be inducted into the County Music Hall of Fame side by side!”

Carter briefly played guitar and sang lead with Bill Monroe and his Bluegrass Boys. After Ralph healed, Monroe invited both to play with his band and get equal billing, but Jeanie said Ralph wanted it to be just he and Carter so Carter turned down the offer. They stayed together as a brother act until Carter’s death at 41. Ralph died in 2016 at age 89.

After Carter’s death, Ralph paired up with Larry Sparks, Roy Lee Centers and Charlie Sizemore to bring back the Clinch Mountain Boys. The band later welcomed Ricky Skaggs and Keith Whitely, who were teens then. In 1992, Carter was inducted posthumously into the International Bluegrass Music Hall of Honor. “All these important bluegrass musicians were placed in the CMHOF, but the Stanley Brothers have never been placed there. Jeanie feels they missed the Stanley Brothers in error. “They now fall into the veteran’s category, but the problem is way too many people fall into that category. The Veterans Era is any artist before 1980,” she points out. “The CMHOF only inducts three people a year!” Jeanie says. “They need to add another category or do another mass induction like they did in 2001 when 14 people went in,” Jeanie believes. In 1976, Ralph was awarded an honorary Lincoln Memorial University Doctorate of Music. Carter and Ralph were inducted into the International Music Hall of Honor in 1992. Jeanie proudly accepted for Carter. Ralph was inducted into the Grand Ole Opry in 2000. Carter had performed at the Opry but only as a member of Bill Monroe’s Blue Grass Boys. The Stanley Brothers’ music together and separately was featured in the film O Brother, Where Art Thou? Ralph won a 2002 Grammy for Best Male Country Vocal Performance for his performance of “O Death” in this movie. “I Am A Man of Constant Sorrow” was also nominated for Song of the Year that year at the CMAs. Jeanie continues to honor her beloved father and uncle each year in the hills of Coeburn, Virginia, for the annual bluegrass festival, Hills of Home, on Smith Ridge. This festival, founded by both brothers, is held now in honor of bluegrass, country music and both Stanley brothers. Ralph’s son, Ralph II, and his band, the Clinch Mountain Boys, play each year. Jeanie can be found on the stage often with her cousin to bring back the songs and music of the Stanley Brothers.
Carter Stanley and his younger brother Ralph grew up in the remote coal and timber fields of southwestern Virginia. Father Lee Stanley was a powerful singer in the Appalachian tradition, which his boys also experienced at the McClure Primitive Baptist Church. Mother Lucy Smith Stanley was accomplished at the clawhammer-style banjo. The brothers were close companions and shared a strong interest in the mountain music that surrounded them. They played widely at family and community gatherings, graduating from imagined instruments of kindling wood to the guitar (Carter) and banjo (Ralph) as young teenagers. In 1946, he and his brother Ralph formed the Stanley Brothers, ultimately becoming one of the most respected and influential pioneering groups of a new genre that later came to be known as “bluegrass”. Carter played guitar and sang lead while Ralph played banjo and sang with a strong, high tenor voice. Their harmonies are much admired, and many consider Carter Stanley to be one of the great natural singers in the history of country music. Carter also composed more than 100 songs, and many of them remain standards in the bluegrass genre. He had a particular knack for deceptively simple lyrics that portrayed strong emotion. Some of Carter’s famous compositions include “White Dove” and “The Fields Have Turned Brown.” His arrangement of “Man of Constant Sorrow,” originally popularized in the 1950s, saw fame again in the 2000 film O Brother, Where Art Thou?.

in music. After several years, Live Oak began to call her name. She decided it was time to go home. Today she says she is grateful for this grand experience but loves her life as a wife and long-time foster mom.
In 2005, Jeanie was invited by Dixie Hall, wife of Tom T. Hall, to record music with other daughters of country and bluegrass music, such as Rhonda Vincent, Dale Ann Bradley, Valarie Smith, Lorraine Jordan, Becky Buller, Gena Britt, Jeanette Williams and Frances Mooney. Jeanie was honored to be part of The Daughters of Bluegrass-Bluegrass Bouquet CD. “The two lines Dixie wrote for me in the song were ‘Carter Stanley was my dad, and I’m his baby girl,’” Jeanie remembers. The CD won the 2009 Recorded Event of the Year award at the IBMA Awards, held in Nashville, Tennessee. It’s a memory Jeanie will never forget. Jeanie, her brothers Carter, Bill, Bob and sister Doris Bradley all graduated from Suwannee High in Live Oak and found their way into adulthood. Jeanie, the only one to follow bluegrass/country music professionally, found a place at the Suwannee Democrat newspaper. She was encouraged by fellow workers to seek her place in the music world. Jeanie soon headed out to make her mark

Jeanie says it feels good to be part of the Stanley family. “I could not be any prouder of my heritage. I would like to see acknowledgement of the Stanley Brothers as one of the more elite groups in bluegrass and country,” she comments. “I’m proud of my roots. The least I can do to honor my heritage is lift up my voice so their music will be preserved forever, so they get the recognition they deserve,” Jeanie says. “I would like to have the big plaque with their picture on it hanging in that big rotunda beside all the other greats. It’s only right! Daddy had talked to Ralph about what he wanted…a bus and a big festival. Ralph got to live out the dream, but Daddy didn’t. I want the CMHOF to acknowledge them both,” she insists. “I was privileged to spend some quiet moments with my uncle, Dr. Ralph Stanley, before he was called home. He told me sitting in his kitchen the one thing he’d never achieved that would mean the world to him would be if he and Carter could go into the CMHOF together, side by side, just like they started out,” Jeanie says. “I don’t believe I ever felt the same after he said those words to me. I’d never realized there was anything he wanted that he didn’t already have. I decided if there was anything I could do that might help that, it was my responsibility to do it. And I
am doing just that,” she points out. “A very wise lady, Dixie Hall, who was such a good friend to me, encouraged me to stay the course, persevere and never give up until this happens! Lord willing, I’m trying my best to do just that. I need y’all’s help, though.” Jeanie says. Akaushi? Akaushi? Wagyu Trend Comes to Lake City By Hayli Zuccola Holly Frazier Photography
Akaushi (pronounced Aka-ooshie) isn’t a term that requires a “bless you” as a response, but is one of four breeds of Wagyu—a Japanese term that simply and straightforwardly translates to “Japanese cow.” The red cattle, praised by foodies as having the best marbling, entered the American market in 1994 when eight female cows and three male bulls were shipped to the United States to form a herd in Texas. Since their arrival, Akaushi have slowly grown in numbers and popularity—recently making their way to the Sunshine State, moreover to the farm of Lake City locals Mark and Lauren Ganskop. The Ganskops spent their childhoods surrounded by cattle, but it wasn’t until after getting married and starting a family that they decided to enter the world of agriculture once again. “We were both kind of familiar with cows, like we’ve kind of grown up around them, and so it was one of the safe options,” Lauren says. 66 |

especially with a breed that’s mainly valuable for its genealogy. Known as the “Emperor’s Breed” back in Japan, the lineage and DNA of Akaushi cows is vital—so much so that the Ganskops are registered with the American Akaushi Association, which tracks, maintains and verifies the purity of the breed. To illustrate how uncommon Akaushi are outside of Japan, let alone 100-percent Akaushi, it’s important to note that the Ganskops are only one of 100 registered purebred breeders in the United States, Australia, Canada, Colombia, Denmark, Mexico and South Africa combined and just one of three in the state of Florida, according to the American Akaushi Association website.
Being accustomed to the farm life, they chose to stick with what they knew best while harboring plans to venture outside the basic Florida livestock of Angus or Brahman cattle. During a talk with a friend, Mark learned about the latest Wagyu beef to cause a stir in the ranching industry and immediately became interested in the hard-topronounce trend. “It took me a couple of days to figure out what he was actually saying about Akaushi, what it was,” Mark recalls with a laugh. “Then I stumbled across HeartBrand, which is the ‘name’ in Akaushi. They’re kind of the folks that hold it together.” In August 2019, Mark and Lauren’s father, Don Lee, who manages the recordkeeping and oversees the well-being of the cows, flew to Harwood, Texas—the Akaushi capital of the US—to pick out a handful of cows to start a herd back home. Because the Japanese cattle are somewhat of a rarity in the States, the HeartBrand headquarters typically only sell bulls to outside farmers. Luckily for the Ganskops, Mark’s plumbing business paired with the Texas-based ranch’s need for his expertise helped them acquire one bull, three cows and two calves.
Company, LLC and Florida Akaushi when dealing specifically with the Akaushi breed, is also home to mixed-percentage Akaushi as well as other cattle like Red Angus, which brings their herd total to just over 100. While they began their Akaushi adventure to appeal to those with a refined palate or those in search of the perfect steak, they’re still several years off from selling their cattle for means other than grazing and roaming the land. Until then, they plan on maintaining their current method of raising free-range cattle and combining hard work, ancestral research and the help of embryologists to bring new Akaushi calves into the world. ■
Because cows are pregnant for nine months, they can only have one calf a year. To help increase the breeding of these 70-pound babies, the Ganskops work with an embryologist who collects viable embryos from the Akaushi cows and places them in surrogate cows of other breeds. After the Akaushi calf is born and weighed, its DNA is sampled and sent to the Akaushi Association where its percentage is confirmed and the calf receives a birth certificate to prove its authenticity. Though they’re important in expanding their presence in the world of Wagyu, the Lake City farm isn’t limited to their prized Japanese cattle. The Ganskops’ two-tier farming business, known collectively as Columbia Cattle

Joey will take over as Chief Executive Officer, Aaron will become Chief Financial Officer and Eric will become Chief Operating Officer—paving the way for new possible business ventures while still maintaining company-wide continuity with the family legacy. “I have admired Joey, Eric and Aaron’s work ethic, their ideas and their integrity,” Jeff says. “These are fantastic Christian guys that understand our work culture and our mission in serving people, and I will be able to have the privilege to act as their part-time advisor for the next five years.” Going through any kind of change in management can be unsettling for employees and customers alike, but Jeff
promises that this change is for the best. He believes that he is leaving the company in good hands. “It’s a real privilege to have one of my children continue this legacy that was started with my dad,” Jeff says. “We want the Cheek & Scott Family and communities to know there is a continuity of care with this transition. No one is getting abandoned. Joey, Eric and Aaron have been busy learning their new roles, and they are taking up the banner and running with it a little further.” Cheek & Scott is one of North Florida’s privately owned pharmacies and medical equipment providers. Its locations in Live Oak, Lake City and Jasper serve a unique purpose in bringing joy, hope, faith and healing to each of these communities and their surrounding areas. The pharmacy was founded in 1965 when Allison Scott partnered with Thomas Cheek. Together, the two pharmacists created a locally owned and operated business located in Live Oak’s downtown area. “In 1956, Mr. Cheek walked into my great uncle’s pharmacy with blue jeans and brief case of cash and bought the drug store that was at 111 W Howard Street,” Jeff says. After Tom bought the location, Allison was encouraged by his mother to get a job at the pharmacy with Thomas, where he worked as a student after school. And after completing pharmacy school, Allison went back to work for Cheek Drugs and later became a partner—sparking the start of Cheek & Scott Drugs. “At the age of 12, I started working with my dad,” Jeff says. “I delivered medical equipment; I was the trash boy; I did the vacuuming or whatever was necessary at the time to help.”

Then, after working with Tom and Allison for about nine years as a pharmacist, Tom retired and Jeff bought the company from his father in 2000, where he remained President and Owner of Cheek & Scott for the next 20 years—totaling 40 years working with Cheek & Scott since his early days. “In my time here, I have learned a lot,” Jeff says. “I learned in the process how I could create a culture that honored God and that people enjoyed their working environment. I also learned how we could spill those same virtues into the communities, where they had a place where they felt cared and provided for.” Over the years, the company expanded its services, as well as added new locations. Jeff is hopeful that Joey, Aaron and Eric will bring untapped potential for the business to grow even more. Aaron and Eric both began working at Cheek & Scott while still in high school and have climbed the ranks of the business through the years. They both started out by washing medical equipment, cleaning and vacuuming out vans, and Eric also helped in the pharmacy. After completing pharmacy school, Eric became the Pharmacy Manager at the Lake City location in 2012. Joey, who will become CEO, started at Cheek & Scott in 2014 and has quickly become a major asset to the business. He took on a role as the Clinical Director, where he took on the development and implementation of the Specialty Pharmacy.
“I’m proud of these guys and proud of the opportunity they have here,” Jeff says. “They have plans to maintain the things that are important to our culture, but also expand new offerings.” What sets Cheek & Scott apart from other pharmacies is the experience you receive when you walk through the front doors. Jeff said he believes his employees are experts at what they do and provide a level of care that’s different from the competition. The Cheek & Scott Family tries to learn their customers’ names and will go above and beyond to help you find what you need. Jeff recalls his father spending hours hunting for a special toothbrush for a customer. After searching for awhile, Jeff says he asked his father why he was spending so much time on it. Allison’s response was that if he could help find this lady her special toothbrush, she would hopefully come back to them every time.
“And I realized that not only did he gain a customer, he gained a life-long friend,” he says. Jeff also adds that he continued to recognize the woman who needed the special toothbrush for years to come. As Jeff ’s chapter with Cheek & Scott comes to a close, he says he’s thankful for all the memories and great stories that he has come to love. He will still remain at the business as a consultant for a few years, but will move onto his passion for helping young professionals that are interested in growing their professional career, as well as their spiritual walk. “I feel like this is a great team, and we can accomplish a lot,” Aaron says. “Our staff—especially those who have worked here for several years—are also extremely important, and we definitely rely on them and look to them for guidance. But I’m looking forward to new opportunities and continuing on the Cheek & Scott legacy.” ■

Joey holds a degree from the University of Florida College of Pharmacy and has been with Cheek & Scott since 2014, serving as Clinical Director. Joey grew up in Live Oak and is very active in the community through service at his church and the Lions Club. He is married to his wife, Samantha, and is a father to his three daughters: Madison, Bria and Abigail.

Eric started working at Cheek & Scott part-time while he was still in high school, which grew his interest in working in the pharmacy industry. Eric also holds a degree from the University of Florida College of Pharmacy and eventually became Pharmacy Manager at the Lake City Cheek & Scott location in 2012. Eric is married to his wife, Jessica, and is a father to Brant, Aubrey and Kamdyn.

Aaron, Jeff ’s son and Allison’s grandson, began his career path in the pharmacy industry when he started working at Cheek & Scott at the age of 14. He holds a degree in healthcare administration from Valdosta State University and is looking forward to growing the Cheek & Scott business. “It didn’t happen overnight, that’s for sure.” Josh Blackmon, the author of Roller Derby Vampire Girl, says with a warm laugh. Josh, the former Managing Editor for Family Magazine, released his debut novel in December of 2020. The content is a departure from the work he did for the magazine several years ago during his tenure. However, the writing still fully encompasses his heart and skill of helping the human element shine as his characters come to life on the page. 74 |

The book has been described as unpredictable and fun, a fresh and nostalgic mix of the best of cult classic horror movies with real stakes and engaging characters. A fierce standout in the New Adult Fiction genre. Josh himself urges that “If you grew up on Goosebumps and Sweet Valley High, this is the novel you’ve been waiting for!” Josh admits that he had been sitting on the idea for more than a decade, letting a first draft of the novel collect dust since the summer of 2011. “I had been talking about publishing the book for ten years,” he says. “At the time, 2020 felt like a year of infinite possibilities and the perfect time to publish a book. In hindsight, it might not have been the perfect year to launch something like a new novel, but is there ever a right time?” From cover design to the paper’s weight that the book is printed on, Josh meticulously saw his vision of roller skating vampires come to life. At the time of publication, the book holds strong with a 5-star Amazon rating, reaching #227 in the highly competitive vampire thriller genre, with readership continuing to grow. “It can be difficult to find your niche or space in a sea of books, especially in the vampire genre,” Josh says. “But there is a strong and dynamic network of selfpublished authors online, and I have been fortunate to be a featured guest on several podcasts and digital interviews. In this day and age, unless you are a celebrity with a built-in following, promoting a book as a new author is about really putting yourself out there.” While the premise might border on the absurd—a group of women fighting vampires on skates—the book’s heart is in its richly woven character growth and strong statement on female friendships and empowerment. Being a vampire novel, there is definitely a little blood and gore. Still, it never treats it as the star, nor does it depend on the supernatural elements to tell an
entertaining and engaging story. The book is categorized in a fairly new but growing genre, New Adult Fiction. It features some storylines outside the conventional elements of Young Adult Fiction but never crosses the line. Josh himself recommends the book for teenagers and older. “As a parent myself, and the uncle to an avid reader, I think the book is probably the equivalent to a PG-13 movie,” he explains. “Ultimately, every reader is different, but as a parent, like any media, if you’re on the fence, I would encourage you to read it first and make that call based on your perception.” When asked what advice he had for anyone looking to publish a book, “Go for it!” he says enthusiastically. “You have nothing to lose. Write, edit, rewrite, have fun. There are so many avenues out there to self-publish that provide little to no risk financially to authors, it is ridiculous not to try. Don’t wait ten years. Circle of Life and GSMS Developers Many people create businesses as a means to their own success, but for Milton Smith and Gary Sorensen, co-owners of Circle of Life Assisted Living Communities and GSMS Developers, they created their companies six years ago as a labor of love for the community. Simultaneously, the partners created two companies— Circle of Life and GSMS Developers—to generate long-term employment opportunities, as well as fill in the need for the best quality care for the rising elderly population in the area.

“Both of us have long histories in construction, with residential and commercial construction, and we simply had an interest in trying to give back to our communities through the creation of jobs and providing a better approach to care than what we see in the communities in which we live,” Milton says. Both partners have generations of builders, construction workers and engineers in their families. Gary, who lives in Kearny, Nebraska, says his grandfather was a carpenter and painter, his father spent his whole life in construction and his son, Drew Sorensen, recently graduated with a degree in engineering and now works with him. Milton, who is originally from Jasper, explains that his father, Gerald Smith, is the primary contractor on each project the company takes on, as well as his nephew, Ben Godwin, is one of the project managers.

“It’s one of those things that you’re just kind of born into,” Gary says. “When you’re able to work and learn the process from a very young age, its makes a big difference— you’re able to learn and then expand from an early start.” Milton and Gary met through a mutual project over ten years ago when Gary was down visiting Florida, and the two shared similar views on the concept of how a business should be run and the goals that should be met. Gary travels to Florida once a month, where he and Milton continue to share their ideas and build the communities, focusing on what’s best for their employees and residents that live in the long-term care facilities.

“One of my favorite sayings that I’m stuck on, and I tell this to people all the time, is that I’m not really in the construction business—I’m in the psychology business,” Gary says. “And Milton and I are incredibly similar in how we like to listen to people and take in what they have to say. It’s our everyday effort to have a business where we are continually improving people’s lives.” Over the past six years, Milton and Gary have built and/or acquired and remodeled six assisted living facilities throughout the North Florida area. They are currently working on remodeling two more and are breaking ground on a new location in Lake

City called Grande Cypress, which will be a 35-bed assisted living facility following Circle of Life’s approach to care. This new facility will be in the same area as GSMS Developers’ grand residential neighborhood called the Reserve at Jewel Lake, located on the west side of Lake City. “It’s a beautiful location,” Milton says. “It backs up to Jewel Lake, and we call it Grande Cypress because you have the beautiful view of the cypress trees on the lake every day. It’s rural enough to be quiet and there’s a calming atmosphere because of its location, but at the same time, it’s seconds away from the interstate and everything else people will need.”

Beginning this spring, Circle of Life and GSMS Developers is providing The dock at Jewel Lake. nine college scholarships for high school kids this spring—three for Columbia, three for Suwannee and three for Lafayette. “We are attempting to create a bigger social footprint than just simply building structures,” Milton says. “We are creating jobs and creating an environment where people can shine.”
