Greenbush plans to expand restaurant, food and beer menu

AWYER, Mich. — On an average afternoon at Greenbush Brewing Co. the long bar is typically full of people chatting amicably as they enjoy slices of pizza, house-made sausage and, of course, the craft beer that has influenced people from all over Michigan, Illinois and Indiana to make the trek to Sawyer. But amid the chatter is a new sound; the distant but detectable sound of a mechanical tool grinding away. And if you haven’t already heard the buzz — that’s the sound of Greenbush growing bigger. On May 11, co-owner Scott Sullivan announced on Facebook that Greenbush would be purchasing the property next door, formerly known as the restaurant Fitzgerald’s, to expand its ever growing beer empire. In the post, Sullivan cited the opportunity for more space and the chance for Greenbush to offer a whole different menu and beer selection to customers. This is of course in addition to their already famous menu — known for its brisket, from Sullivan’s secret recipe and full bodied craft beer that is never under 6 percent alcohol volume. “So, armed with a lot of customers and still not anywhere near enough space we figured ‘Why not give people a new venue to drink up some Greenbush beer but with a completely new theme?’ Cue Greenbush 3.0, diner version,” Sullivan wrote in the post. Aaron Darling, marketing manager — or “dude” as he prefers — said the plan for the new space is to create a diner that has a menu with lots of southern eats. A few things on the new menu will include, heaping plates of chicken and waffles, savory grits, lox and bagels and other diner delicacies such as meatloaf, open-faced turkey sandwiches, burgers, fries and new to Greenbush, a pilsner. As for that buzzing — Darling said that is the sound of Paul Sypian working away on making “Greenbush 3.0” ready for business. Sypian is also a Greenbush cook with a specialty in sausage making with former experience in brick work. The work to the building will include, changing the exterior to match the brick work of Greenbush’s other buildings and possibly adding an entrance from the

Today, the original seven barrel copper kettle that brewed up the first batches of Greenbush beer is secured over the door. For Greenbush, Darling said what moves them all forward is the ability to never get too comfortable with the walls around them. “We are going to evolve we are going to keep pushing the boundaries with our beer, with our food, with our marketing, all that,” Darling said. The names and flavors of Greenbush beers seem to hold some of this spark of creative force. Take Anger. It’s one of the first of its kind — a black India Pale Ale with chocolate notes and a smoky flavor reminiscent of and as classy as scotch. This is one of the first beers brewed up in Greenbush and remains a popular beer, said Darling. It is also his favorite. There’s also 400 Divine Rabbits inspired by an Aztec myth involving rabbits thirsty for an agave based alcohol. Or the Unicorn Killer a cinnamon and pumpkin flavored beer. hree oaks, Mich. — At age 13, most adolescents have no idea what they want for breakfast, let alone what they want to do with the rest of their life. That wasn’t the case for a Shaun Hague. When other people his age were playing video games and learning the ropes of teenage life, the Somerset, Massachusetts, native was discovering a passion that he would carry with him into adulthood. “I immediately took to the guitar. I was hooked,” Hague said in an interview recently. “I could listen to a song, and learn it almost verbatim on my own. It was at that time I realized I had a great ear for music.” Jamming out to classic rock icons like the Beatles and Bruce Springsteen, Hague would spend several hours a day playing music on his guitar — which he learned to play only by ear. To this day, despite the countless hours he has devoted to his passion, Hague admits he has never really learned how to read

sheet music. “Everything I know is just based off of using my eyes and my ears,” he said. Today, Hague is 32, and he still spends several hours a day playing music. He says his biggest moment, though, was when he discovered Eric Clapton. It was the English guitarist and three-time Rock

and Roll Hall of Famer who Hague connected with through blues and who “hit a nerve” in him. Attending Eric Clapton concerts were what Shaun called both “an honor and learning experience.” He attended his first in 1998. “I left that concert full well knowing that being a musician was what I want-

ed to be,” he said. “It changed my life and set me on a path that I am still happily on today.” Inspired, he began playing Eric Clapton’s music. Some of his favorites include “Bell Bottom Blues,” “Pretending,” “The Core,” “Layla” and “Broken Hearted.” “I leave every concert of his thinking, ‘I could be so much better.’ He’s just that good.” Years of passionate playing and touring led to the concert Hague will play at the Acorn Theater in Three Oaks Saturday. Hague will be going “back to his roots” performing a tribute to Eric Clapton. “[The Acorn] is a great little spot hidden away up the road. The building is so old with so much history. It’s unique,” said the musician, who owns a summer home in Grand Beach, a straight shot down Red Arrow Highway to Three Oaks. “There’s good energy in there — great sound. It’s great for a band of that size.” Hague has also booked a great deal of his clients at this location for that reason. “It’s nice to finally get

to play there myself,” he said. “I’ve seen a lot of people play there and it’s great.” The concert begins at 8 p.m. and will last approximately 90 minutes. Doors

open at 7 p.m. Tickets are $20 and can be purchased on the Acorn’s website. Hague will be playing music from Clapton’s entire career, ranging from the mid ‘60s to the ‘90s.

The Annex will remain open and continue to serve as a place for people to hangout or wait for a table. “So that’s really helped alleviate our summer crowds,” Darling said. This crafty thinking is a trend in the brewery’s history. From the beginning, coowners Scott Sullivan and Justin Heckathorn, both of Harbert, had a vision for a brewery that they would be able to continually make bigger and better, while producing flavorful beer full of character and complexity that would be easy to drink. After some experimenting with home brewing, Sullivan asked Heckathorn to join him in the brewery venture and now the two friends are seeing their vision come to fruition. Three expansions later including the brewery main building expansion, Annex expansion in 2014 and beer garden addition and Greenbush has gone from producing 15 barrels a year to 15 barrels a week — ­­ or around 8,000 barrels a year — from employing a hand-

ful of people to employing more than 100 and from seating 112 people to more than 300 people after the diner opens. Sitting at a table near the window, Arnav Dutt and Tommy Maranges enjoyed a flight of beer and a basket of fried goodies. Both are from Chicago and, while Dutt is a regular at Greenbush, Maranges is new to the brewery. Dutt said that before he came to Greenbush, he had heard from friends that it was one of the best breweries in the Midwest. As a regular, he said he concurs with this opinion. “This might just be my favorite brewery,” Dutt said. Neither Dutt nor Maranges had heard that Greenbush would soon be expanding, but both said it was exciting news. And this expansion will not be the last of the Greenbush growth. Darling said, in the works, is a plan to have a bigger area to brew more beer and eventually to have their own deli. And while Sawyer is

Balancing art and life

F

or those who delve into the creative world, there exists a balance that has been on my mind of late. It can be a struggle to create in a culture that often places a premium on production over creation, of progress over art. The challenge comes in the difficulty of making a career from art or finding space for it while maintaining a more standard source of income. It also reveals itself in the decisions made in the type of creation an artist focuses on, searching for level ground between what the artist wishes to say and what will be successful with audiences. In the light of these thoughts, it seems appropriate to share the rest of my COLUMNIST conversation with South B e n d ’ s Analecta. The music of Analecta, with its atmospheric, instrumental ambience, may not immediately Justin Flagel appeal to those more attuned to pop music or radio rock. Creating the most universally appealing songs has never been their goal, however. Instead, Patrick Quigley and Calvin Maloney have worked to explore the ranges of music, finding rhythms and other sounds less obvious and working to match them together. This is not to say their music is simply noise. After an attentive listen, the opposite becomes obvious. What sets the music of Analecta apart is that it calls for your attention. I had the privilege of attending the album release party for Analecta’s latest release, “aes sídhe.” While food and camaraderie were certainly part of the event, the focus of the evening was a darkened room with the entirety of the album playing for the attentive audience. In the age of digital music, where it can be rare to sit and simply listen to music without outside activity, this was a welcome experience. Paying attention solely to the audio journey reminded me that music is much like the popular world of wine or craft beer, where continued experi-

ence can lead to tastes we may not have previously considered. “It’s a dangerous line to walk when you’re making art for money,” Patrick said. He was pointing out the negative influence financial pursuit can have on art and the importance of remaining aware of original inspiration for creation. This is not to say that art and career need to be separate, but that in a world where the two are combined, the emphasis should stay on saying something important or exploring something new versus simply pursuing what will sell more easily. “If people are listening to our music and getting something out of it, I would consider that successful,” Calvin said. “Money is not the goal. Neither is getting famous.” Both Calvin and Patrick are living lives with an emphasis on creativity. Patrick sacrifices sleep and leisure time, working full time while playing in multiple bands, booking music at The Well and other venues, and continuing as a part of an effort to grow the local music scene. He spends lunch breaks planning and strategizing how to best use his time and energy. Coming to this point was a slow build without intentional planning, simply gravitating toward that in life which attracted him while avoiding getting caught in the

“traditional status goals for modern American culture.” While he recognizes the sacrifices that have come from his lifestyle, he sees it as the best fit for him. “I love what I do,” he said. “I can’t imagine my odd personality being helpful to the general community that I’m in in any other way than what I’m doing right now. I can’t imagine life any other way.” Calvin got his start early on, taking music lessons as early as second grade and learning a variety of instruments including piano, clarinet, and other woodwinds and brass winds. He taught himself how to play his father’s unused guitar and took classes on music theory and vocal training during school and into his college years. He describes his work life as one with many non-traditional jobs, giving him the opportunity to play music as often as possible. He is happy and fulfilled despite a lack of much money or the other status symbols often valued in our culture. Currently, he earns money as a vendor at anime and comic book conventions, but his real work is his music. He was once told he looked more alive on stage than anywhere else. “I would be miserable if I weren’t playing music,” he said. “I can’t imagine doing anything else.”

In a band like Analecta, I see musicians who are true artists, stretching the limits of their particular field and living lives truly focused on creativity. I am reminded of Poet Laureate Ted Kooser, who wrote his poems in the mornings before heading off to his job in the insurance industry, and my own efforts to squeeze creative work into my life whenever possible. Whatever we each do and whatever our creative interests are, I hope we can all find a piece of that in our lives. he annual Summer Free Fishing Weekend will be Saturday, June 11, and Sunday, June 12. That weekend, everyone — residents and nonresidents alike — can fish without a license, although all other fishing regulations still apply. This year marks the 30th year Michigan has celebrated the Summer Free Fishing Weekend as a way to highlight the state’s vast fishing opportunities. With more than 3,000 miles of Great Lakes shoreline, 11,000 inland lakes and tens of thousands of miles of rivers and streams, fishing and Michigan go hand in hand. “Michigan is home to some of the finest freshwater fishing in the world, and we encourage everyone to take advantage of it during the Summer Free Fishing Weekend,” said Michigan Department of Natural Resources Director Bill Moritz. “Every year, since 1986, we’ve offered these

free fishing weekends as a fun, affordable way for people to learn about one of our state’s best outdoor traditions ­— and the many places there are to enjoy it.” To encourage involvement in Free Fishing Weekends, organized activities are being scheduled in communities across the state. These activities are coordinated by a variety of individuals, organizations, constituent groups, schools, local and state parks, businesses and others. Grand opening celebration scheduled for Third Coast Paddling retail store

ENTON HARBOR, Mich. — Third Coast Paddling — a new retail destination dedicated exclusively to kayaks, stand-up paddleboards, canoes, and related accessories — is hosting weekend-long grand opening festivities beginning on Friday, June 3, through Sunday, June 5. The store is located at 241 E.. Main St. in the Benton Harbor Arts District, and was previously home to Yakz, which was purchased by Third Coast Paddling earlier this year. All weekend long, select kayaks, stand-up paddleboards, and other merchandise will be on sale, and door prizes will be awarded. The celebration will kick off at 4 p.m. Friday, June 3, with a ribbon cutting with the Cornerstone Chamber of Commerce. The festivities will continue with a customer cook-out at the store from 11 a.m. to 2 p.m. Saturday, June 4. Anyone interested in a new kayak or stand-up paddleboard is invited to a product demo scheduled from 11 a.m. to 1 p.m. Sunday, June 5 at Third Coast Paddling’s Paw Paw River rental site, located at 601 Graham Avenue in Benton Harbor next to Renaissance Athletic Club. For a $10 registration fee, participants can paddle a variety of different kayaks and paddleboards on the river, and the fee will be applied toward their future purchase at Third Coast Paddling. This year the Edwardsburg Chamber of Commerce has made plans to improve the Memorial Day Festival in Gunn Park. The festival, held after the Memorial Day Parade, will be from 11:30 a.m. until 2 p.m. May 30.
