City to host inaugural Camp Leavenworth By LISA SWEET Special to the Times
Axe throwing, ziplining, a s’mores tent, photo booths and a silent disco are just some of the fun and unique experiences festival-goers can participate in Sept. 20-21 at Camp Leavenworth. The city of Leavenworth, together with O’Neill Events & Marketing, know the value of the First City and they hope that fair attendees young and old, families and singles, locals and visitors will discover their “worth” through a multitude of events, local shopping, delicious food and non-stop music in historic downtown. This is the premier year of Camp Leavenworth, the first city-funded festival in town, which is set to become a highly anticipated and annual event. According to Leavenworth Mayor Jermaine Wilson, “The festival helps the city of Leavenworth by providing a free community event for our residents to enjoy each year. We hope that this festival becomes a point of pride for our residents and a draw for visitors. I’m looking forward to seeing everyone come together over something positive. I want to see neighbors and friends and strangers spend some time together and enjoy themselves at a fun, positive event.” Camp Leavenworth was created to celebrate the city’s rich history with the military and its love for adventure and the great outdoors. Each section of the event is named in a thematic fashion along with events. Among the various parts of the fair include the Mess Hall where people can discover local food vendors and the Trading Post where local shops and artisans will have their items on display and for sale. In addition to traditional food and shopping opportunities, Camp Leavenworth will also showcase two music stages featuring bands from around the local Kansas City area. Artists and bands like Grand Marquis and Ryan Manuel & the Getaway to LA Jones and Sara Morgan will be playing on the Camp and Airstream stages with tunes that range from soul, pop, blues and jazz to rock, country and mountain music. Along with live music to enjoy the festival will
feature one of the hottest new trends in music and dancing – a silent disco. The silent disco will be held both evenings and attendees can boogie on a dance floor that is adjacent to a DJ stage. Upon entering the party, dancers put on wireless headphones and dance to music generated by two dueling disc jockeys. While guests are jamming to the tunes, onlookers won’t hear a thing. It should be as much fun to watch as it is to participate. Camp Leavenworth is 5-10 p.m. Sept. 20 and 11 a.m. to 10 p.m. Sept. 21 at the streets and park-
ing lots near Leavenworth Landing Park. After a full day of excitement, each night will conclude with an impressive fireworks display over the river. Parking is available and will be free at any cityowned lots in the downtown area. Mark your calendars and come and enjoy all of what downtown Leavenworth has to offer. Make a school lunch your kids will actually eat It’s back-to-school time. While shopping for school supplies and new sneakers, thoughts about “What to pack for lunch” can cause a ridiculous and irrational amount of stress in the age of Pinterest parenting. It’s true, we’ve come a long way from white bread and bologna sandwiches. If you do an internet search on school lunch ideas, you’ll see highly involved school lunch themes complete with sandwiches cut to look like LEGOS or an entire meal designed to look like a rainforest complete with a panda bear sandwich. Pinterest has ruined my mom cred and now my kids come home wondering why they don’t have fruit kabobs adorned with jello stars or a trio of artfully arranged deli meats that look like a bouquet of roses. Rest assured, I will never attempt these because sometimes it’s all I can do to get a napkin tucked in their lunchbox so they don’t use their sleeve. You will not see me attempting zucchini ribbon origami anytime soon, trust me. I could just let my kids purchase a hot lunch every day. Their cafeteria is actually pretty good and there are a plethora of choices – compared to the

mystery meat of my day – but my guilty mom conscience pushes me to want to pack a lunch and be a little like June Cleaver as I hand them their sacks with LISA SWEET a peck on their cheeks as they run out the door. So here are some quick ideas I have for back-to-school lunches your kids will actually eat. Some involve cooking, some are prepackaged, but for the most part there is minimal prep.
Hot lunch alternatives I’m a big fan of saving money and time is also money, so leftovers are a lifesaver. Minimal prep, just heat up the next day and go. There is nothing like a thermos full of something warm and comforting during the cold months. Ideas for hot lunches include: • Turkey 3-bean chili • Chicken soup • Swedish meatballs and noodles • Tomato soup and grilled cheese
• Chicken nuggets • Meatloaf and mashed potatoes • Macaroni and cheese • Noodles with grated cheese • Fried chicken • Spaghetti with cut up meatballs • Pea soup with a cut up hot dog • Stir-fry with fried rice
Sandwich alternatives Let’s be honest, a sandwich can get pretty boring so anything to change it up is pretty welcome. Some ideas I’ve come up with over the years include: • Cooked pasta mixed with pesto and mozzarella pearls • Pinwheels, tortillas or flatbreads spread with hummus, shredded carrots, lettuce and turkey rolled up and cut into rounds • Quesadillas with salsa • Cream cheese and jelly on mini whole wheat bagels • Tuna or chicken salad served with crackers on the side • California rolls • Veggie burgers • Cooked taco meat with taco toppings on the side • Yogurt with Granola and fruit
Creative snacks Snacks are the easiest part of the lunch. Most of the time my kids throw in an apple or yogurt tube but every now and then I like to make it a little special and provide some variety. So here are a few ideas: • Trail mix • Dried fruit • Fresh fruit salad • Freshly popped popcorn • Homemade cookies • Granola bars • Cheese and crackers • Mixed berries • Cut up veggies with dip • Pumpkin bread • Muffins of any kind As a special treat I’m providing you with my family’s favorite chili recipe. Whenever I make it I get requests for the recipe because it is filling and delicious and as a bonus it is a slow cooker recipe, perfect for those busy school days. Pet Festival slated Sept. 28 in downtown Leavenworth

Six years ago, Don Brown, animal lover and president of the Leavenworth Animal Welfare Society, felt he needed to create a space for the overwhelming number of abandoned animals in Leavenworth County. He wanted to create a no-kill animal shelter and last year his dream, known as HOPE (Help Overpopulation of Pets Economically) Animal Shelter, came to fruition. HOPE, Inc. is a 501(c)(3) nonprofit organization which depends on donations from animal lovers in the communi-

The clinic can be found adjacent to the Kansas County Store at 728 Cherokee St. with a separate animal clinic entrance at 770 Shawnee St. The goal of HOPE Inc. is to control the overpopulation of dogs and cats by offering a low-cost spay and neuter clinic through Hope Spay Neuter, Inc. in which all procedures are performed by qualified medical professionals. Upon arrival, each rescued animal is spayed or neutered and vaccinated. According to Brown, “We spay and neuter and care for a dog and the first month, per dog costs $200. Then it levels down after that because you don’t have the vet costs, and it is around $50 per month. Per cat is about $100-$120 initially and then around $25-$30 per month.” So although the space is owned by the Browns and cuts out the need to pay rent, running an animal shelter still requires a lot of money. In addition to initial costs, there are utility bills, employees to pay, day-to-day animal care and maintenance at the facility. Some of the funds raised last year went directly to the expansion and renovation of the shelter. Now the shelter can house 20 dogs and 25 cats. There are new storage areas, an animal sick bay and a large, fenced outdoor play and run area for the dogs. The shelter will help defray costs by holding its second annual FurEVER HOPE Pet Festival. Brown said, “The festival raised $3,500 last year and I would like to raise $7,000 this year.” The FURever HOPE Pet Festival is 3:30-6:30 p.m. Sept. 28 at Haymarket Square, 7th and Cherokee. The event is free to the public and their pets.
Pets must be leashed and owners are responsible for cleaning up after their pet. There will also be many opportunities to donate money to help support the HOPE Animal Shelter. The festival will feature booths for pet vaccinations, microchipping and nail trimming as well as food and gift vendors. This year the Leavenworth Times will sponsor a Best Pet Costume Contest. All contestants should enter at the Kansas County Store booth during the festival between 4:30-5 p.m. Winners will be announced at 5:30 pm. Football Friday nights are special As the dog days of summer drag on with autumn beginning to come into sight, the most exciting sport prepares to kick off shortly after the school year begins. Football is finally back as we’ve seen nationally with the NFL getting underway, but the hidden gem of football has always been the games played on Friday nights. Long weeks in school or work are bookended by the feeling of Friday night under the lights. It starts in school where players showcase their jerseys on game day, letting everyone know they better not miss the big game. We gather that evening with the weekend just starting to support the team and community. These are important moments in everyone’s lives. Young athletes thrive on the support they get from their friends, family, classmates and community, so what better way to give it to them than
on a Friday night under the lights. I remember my years of high school at Blue Springs South where we went to every home JASON BROWN game and even traveled to most of the road games in support of our classmates and school. We traveled to road playoff games across the state and eventually to the state championship in St. Louis. Those Friday nights meant everything to me from beginning to end. So regardless of if you are a student or just a fan, support your local athletes under the lights on Friday or any night of the week. Jason Brown is the sports editor of the Leavenworth Times.

Cook turkey and onion in a skillet until turkey is no longer pink. Drain the meat and discard fat and add meat back to your slow cooker. 2. Add all other ingredients. 3. Cook on HIGH for 6-8 hours. 1. What is the brief history of your restaurant? Earthell Bynum opened Excellent Choice in 1996, cooking, serving and running the business by herself. As Ms. Bynum’s food became known throughout Leavenworth her customer base grew substantially to the extent that there was a long line wrapped around this small building and customers would wait at least an hour for this delicious food. To accommodate her eager and growing customer base, she relocated twice. It was open seven days a week for breakfast, lunch and dinner and 23 employees to guide. Being at the top of her game Ms. Bynum decided it was time to take a break and closed the doors in 2003. For nine years Earthell and her daughter-in-law Rachel Minnis discussed often about reopening the business. They knew it would happen when the time was right. One day it was brought to their attention that the building she started in was for rent again. They immediately
