Rice balls are fried delicacies sold in many Italian specialty food stores and markets. Often filled with meat or cheese, rice balls can be bite-sized snacks or softball-sized meals. Due to some uncertainty about how to keep rice balls from falling apart, many home chefs shy away from recreating them in their own kitchens. However, with a little know-how, anyone can create delicious rice balls. Rice Balls 1 cup rice with a high starch content to make it sticky, like aborio 2 cups water Salt for flavoring Homemade or prepared breadcrumbs
2 to 3 ounces mozzarella cheese, cubed 1 to 2 eggs, whisked 1/2 cup homemade or prepared tomato sauce Few sprigs parsley, chopped Salt and pepper to taste Vegetable oil for frying In a saucepan, bring water and a pinch of salt to a boil. Add rice to boiling water and reduce heat to simmer. Cover pot and cook, roughly 15 minutes, until all the water is absorbed by the rice. Drain the water and put rice in a bowl. Add the tomato sauce and mix. Season with parsley, salt and pepper to taste.

Allow the mixture to sit and cool to room temperature before handling. Have beaten eggs ready in a shallow bowl. Pour breadcrumbs into another bowl and set aside. Take the rice mixture and gather some in your hand. (Wet hands between making rice balls to keep the rice from sticking to your hands). Cup and form into a bowl. Push a piece of the mozzarella cheese into the center of the rice ball and reshape. Roll the rice ball into the eggs and then place into the breadcrumbs to coat. Repeat the process if desired for a thicker coating. Repeat until all the rice is used.
Place the formed rice balls into the refrigerator for several hours or overnight to set. Heat oil in a deep frying pan. Place a few rice balls in at a time and cook until golden on all sides. Place on rack to drain. Repeat with all rice balls. Serve and enjoy.

Dear God, On The White House Blog, I read the following: Yesterday, during an interview with ABC News, President Obama said, “I think same-sex couples should be able to get married.” It’s no secret the President has gone through some soulsearching on this issue. He’s talked to the First Lady about it, like so many couples do. He’s heard from folks - gay and lesbian friends, staff members in long-term, loving relationships, as well as brave young servicemen and women he got to know through the fight to end Don’t Ask, Don’t Tell. He’s sat around his kitchen table with Sasha and Malia, who have friends whose parents are same-sex couples. As the President said during the interview, “it wouldn’t dawn on them that somehow their friends’ parents would be treated differently. It doesn’t make sense to them. And frankly, that’s the kind of thing that prompts a change of perspective — not wanting to somehow explain to your child why somebody should be treated differently when it comes to eyes of the law.” In the end, the President said, he believes it’s important to “treat others the way you would want to be treated."We need to recognize that people are going to have differing views on marriage and those views, even if we disagree strongly, should be respected. It is quite interesting to me that President Obama, who confesses to be a follower of Jesus Christ and a born again Christian, never mentioned that he sought counsel from God on this issue. In the following passages it states: Proverbs 19:21 “Many plans are in a man’s heart, But the counsel of the LORD will stand.” Romans 11:34 “For WHO HAS KNOWN THE MIND OF THE LORD, OR WHO BECAME HIS COUNSELOR?” Proverbs 21:30 “There is no wisdom and no understanding And no counsel against the LORD.” Psalm 33:11 “The counsel of the LORD stands forever, The plans of His heart from generation to generation.” The authoritative Word of God is the ultimate counsel that we as Christians must keep hold of. The Word of God will never change; it is the same yesterday, today and forevermore. We will all stand accountable to that Word one day, as will President Obama. Prep work makes weeknight dinners easier There is often no denying how busy the week can be for the average individual or family. Very frequently people eschew cooking dinner simply because they find the process takes too much time out of their already hectic days. Some people look to fast food or dining instead, but this can be costly and potentially unhealthy. Though home cooking can be time-consuming, planning ahead for weeknight meals can drastically reduce the time it takes to whip up a good meal. While it may seem like people are spending more time eating out, statistics point to the contrary. In a 2009 survey sponsored by CBS News, 43 percent of American respondents said they cook 6 to 7 nights out of the week, and 32 percent of the respondents said they cook 4 to 5 nights out of the week. Individuals who are still dining out
or ordering in instead of cooking may benefit from the following timesaving tips. * Make a meal schedule. Take a cue from schools and office cafeterias and create a weekly or monthly meal calendar. Come up with items you enjoy eating and combine them for meals. Use cooking magazines for inspiration if necessary. Having a schedule of what you will be cooking enables you to shop for the ingredients in advance and to know exactly what you'll be serving each night -- two time savers. * Create a detailed shopping list. Use the meal calendar to make a list of the ingredients you will need for each meal. Some ingredients will overlap (i.e. fresh spices, like garlic and parsley), but there may be some ingredients unique to a particular recipe. avoid the following mistakes that buyers make regardless of whether the market is up or down. * Failure to get qualified beforehand. Mortgage qualification is essential when buying a home, as it gives buyers preapproval for a loan before they make any offers. Making an offer on a home before you know what the bank is willing to lend you is a waste of time for everyone involved, including you, the seller and the real estate agents involved. Some agents will not show a home if you don't have a preapproval. Once preapproved for a loan, don't take any steps that might put that approval in jeopardy. This includes anything that might drastically alter your credit score. * Being blindsided by additional costs. First-time homebuyers, once they have moved into their home, often experience some sticker shock when the additional expenses associated with home ownership arise. These additional expenses include property tax and insurance costs and can be substantial. Even those buying a condominium or co-op should expect monthly maintenance fees even if their new place is brand new and needs no maintenance. * Shooting for the moon. The ongoing recession is in part the result of predatory lending that saw

The result was many people buying homes they could not afford, and then suffering some steep consequences, including foreclosure, when the first mortgage payment came due or the interest rate rose. First-time and even veteran buyers must avoid shooting for the moon when it comes to buying a home, and instead only buy one they know they can afford. What the banks says you can afford isn't always the same as what you know you can afford. Only buy a home you know you can afford, regardless of whether the bank has approved you for a larger loan. * Pigeonholing yourself into an inadequate living situation. Just like buyers shouldn't go overboard, they also must avoid compromising on the things that are most important to them. For example, many of today's buyers, fully aware of the rash of foreclosures and all the housing horror stories of the last several years, are reticent to commit to a home, and might compromise with a condo or co-op. But if a home is what you really want, and another living situation that mirrors apartment life is going to make you miserable, don't settle for that situation for the sake of security. Doing so could cost you financially, especially when you realize the situation isn't what you'd hoped for and look to sell earlier than is ideal. * Skimping on the cost of an inspector. An inspector is your last chance to find out if a home is your dream home or a money pit. Even if a house appears to be everything you want, don't close on the sale until the house has been thoroughly inspected. The old adage that advises against judging a book by its cover certainly applies to buying a home, and prospective buyers should enlist the services of a qualified inspector before closing on the sale of a home.

Bathing suit season is on the horizon and summer fun might drive some into a panic. However, there are bathing suit styles that enhance what you want to show off and conceal what you want to camouflage. The first step in choosing a bathing suit is to make an accurate assessment of your body shape. Stand in front of the mirror without any clothes on and figure out which features define your physique. Perhaps your bust is large, or you have more curve in your hips. Maybe you are tall and lanky. Taking note of your body will help narrow down your swimsuit options. Next, go through your current swimsuit collection and find out which bathing suit you've worn in the past has
best suited your shape or earned you a few compliments. You may want to choose the style that is the most comfortable and supportive. When selecting a new suit, choose one that is similar in cut to your favorite. Swimsuits are designed to fit snugly and are made from elasticized fabric. Chlorinated water or saltwater can either shrink fabric over time or allow it to wear out and sag. Be honest about your current clothing size and consider buying a swimsuit in one size larger so it won't cut off your circulation or make you appear uncomfortable. You also want to be reasonable about which styles you can wear. That will be dictated by shape and also by the activities you plan to do in the swimsuit. For
example, if you live an active lifestyle and surf or play water sports, a supportive, one-piece style swimsuit may be a smart choice. If you have a large bust or one that is extremely small, you may want to avoid revealing bikini tops, which may look overly filled or not filled out at all. Here are some other tips based on body type. * Plus size: Choose a one-piece style that features a single color that is the polar opposite of your skin tone. Fairskinned people should look for darker colors, while dark-toned individuals should select brighter colors. Try to find a suit that is fitted at the waistline to slim you in this area. * Short legs: High-cut leg openings on swimsuits help to elongate the legs and make you appear taller.
* Small bust: Select a bikini top that has triangular-shaped cups, ruffles or a tie-front to add a little bulk to the area. * Large bust: Choose a top that comes with a supportive bra -- those mesh bras in most bathing suits won't keep the breasts contained and supported. Many bathing suit manufacturers now offer swimsuits with more substantial bras inside. * Pear shape: Emphasize the top of your body with a bold color or pattern and downplay the bottom with a dark shade. * Short torso: Select a two-piece suit that draws attention to the chest and shoulders and a bottom that sits lower on the hips to elongate the torso. There is no right shape when it comes to wearing a bathing suit. It's possible for anyone to look flattering when hitting the beach or lounging poolside.

Zesty summer steak salad 1 beef top sirloin steak, cut 3/4” thick (about 1 lb.) 1 tbsp. Mrs. Dash Garlic & Herb Seasoning Blend 1 medium sweet onion, cut into 1/2” thick slices 6 cups chopped romaine lettuce 1 medium tomato, sliced 6 Hard-boiled eggs peeled and quartered New York Style Sea Salt Bagel Crisps Dressing: 1/3 cup red wine vinegar 2 tbsp. honey 1 tbsp. olive oil 2 tsp. dried basil leaves 1 tsp. Mrs. Dash Seasoning Blend
Combine dressing ingredients in small bowl. Reserve 1/3 cup for salad. Brush remaining dressing on onion slices. Press 1 tablespoon seasoning blend evenly onto beef steak. Place in center of grid over medium ash covered coals. Grill steak, covered, 7 to 11 minutes (on gas grill, 8-13 min over medium heat) for medium rare (145°). Grill onion 10-12 minutes or until tender, turning occasionally. Carve beef into slices. Arrange lettuce on serving platter. Top with beef and tomato slices, onions and eggs. Drizzle with reserved dressing. Serve with Bagel Crisps as desired. Makes 4 main dish servings
Pink potato salad 3 lbs. baby red potatoes, washed, skins on 1 small onion, diced 7 hardboiled eggs, sliced, 1 reserved 1/2 green bell pepper, diced 6 sliced radishes 1 cucumber, peeled and diced 1 cup frozen peas, thawed 3 Tbsp. fresh, chopped parsley Dressing: 1/2 cup chili sauce 2 cups mayonnaise 1/2 cup French dressing 2 tsp. salt 3 tsp. onion powder 1/2 tsp. pepper 1/4 tsp. garlic powder Paprika for garnish Prepare dressing. Boil potatoes until tender but firm. Cool slightly, cut in half and add dressing while still warm. Let sit while preparing other ingredients; then fold them in. Refrigerate. Garnish with sliced egg and paprika. Makes 8-10 servings
Mushroom and egg salad* 3 slices brown bread and olive oil
3-4 eggs, hard boiled and peeled, set aside 1 head frisée lettuce 1 bunch watercress 9 oz. chanterelle (or your choice) mushrooms 1 tablespoon butter 2 cloves garlic chopped For dressing: 1 Tablespoon capers 1 tablespoon chopped fresh tarragon 1 teaspoon Dijon mustard 1 1/2 Tablespoons red wine vinegar 1/4 cup olive oil Tear bread into 1” chunks. Drizzle with light olive oil and a touch of salt. Bake in 350° oven for 20 minutes, moving chunks around halfway through. They should be golden. Wash and tear up lettuce and watercress and spin-dry. Trim soiled ends of mushrooms and wipe clean. Melt butter in skillet, add garlic; swirl in bubbling butter until they begin to turn brown; add mushrooms. Season with S&P, cover; toss again and fry on high heat, uncovered, until soft. Make dressing by whisking those ingredients together. To Serve: Coat salad greens with dressing; arrange on plates with croutons scattered. Toss on mushrooms and arrange sliced eggs on top. Add a grind of cracked pepper and a touch of Kosher salt on yolks. Makes three main dish or six appetizer salads *Recipe adapted from Coloring the Seasons, by Allegra McEvedy
Corn chip salad 1 large head iceberg lettuce, washed, spun and torn 6 hard boiled eggs, chopped large 1/2 lb. bacon, fried, drained and crumbled 3/4 lb. grated Cheddar (or your favorite) cheese 4-6 cups corn chips, crushed Dressing: 1/4 cup brown sugar 1 cup mayonnaise 2 Tbsp. vinegar 1/4 cup milk Mix lettuce, eggs, bacon, cheese and corn chips together in a large bowl. Mix Dressing ingredients together and pour over salad just before serving. Makes 6 entrée servings
Lettuce salad roll ups Whole lettuce leaves (Romaine or Iceberg), washed and dried Tuna, Chicken or Egg Salad Put a scoop of salad in each leaf. Be safe with fireworks this season Fireworks are synonymous with summer. They mark special occasions, festivals and warm-weather holidays like Independence Day. When handled by professionals, fireworks can be quite the spectacle. However, if lit by amateurs, fireworks can be very risky. Though they offer awe-inspiring views, fireworks can be dangerous. According to data collected in 2008 by the Centers for Disease Control and Prevention, an estimated 7,000 people in the United States were treated in emergency rooms for injuries sustained from fireworks during the period of June 20 to July 20, 2008. Nearly half of all people injured were children under the age of 15. Most injuries occurred to young people under the age of 20.
The Canadian Hospitals Injury Reporting and Prevention Program states that fireworks injuries often occur around the injured patients' homes, and fireworks injuries require hospitalization far more often than injuries that do not involve fireworks. All types of fireworks have an inherent danger, even sparklers. Sparklers burn at more than 1,000 F and can ignite clothing very quickly. Those who take an active roll in the lighting and shooting of fireworks are more prone to injury. The most common injuries include burns and injuries to the eyes caused by cuts and foreign objects lodged in the eyes. Although fireworks injuries are common, they also are largely preventable. The following are a few safety tips aimed
at helping people avoid injury when enjoying fireworks displays. * Keep your distance. It is important for all people watching fireworks to keep their distance from explosives. Even the best-made fireworks can sometimes veer off course and fly into spectators. The further the distance away the display is, the better chance for safety. * Avoid amateurs. Professional fireworks companies know the ins and outs of fireworks and often have safety procedures in place. Fireworks may be ignited remotely by a computer or an electronic fuse device, keeping people away from ground zero. An amateur may not have the dexterity or skills to get away from the lit firework in time. When enjoying
fireworks, just make sure the person putting on the show is a professional. * Exercise caution around fireworks. Some people construct their own fireworks from spare parts or try to up the ante by adding an accelerant to achieve a bigger boom. These practices are dangerous and can lead to highly unpredictable explosions. It's never good to make your own fireworks show, but if you find yourself at a party where someone is experimenting with fireworks, exercise extreme caution. Fireworks can be a fun spectacle when handled by professionals in a safe manner. Families can consider watching a city- or town-sponsored fireworks display instead of risking injury with athome pyrotechnics.
