Valentine's customs then and now Valentine's Day is a holiday during February that commemorates love and romance and also the patron Saint Valentine. The history of St. Valentine is shrouded somewhat in mystery, and there are beliefs that many different people went by the name St. Valentine. One such individual was a holy priest who served in Rome, Italy. Some historians surmise that he was jailed for defiance during the reign of Claudius II, sentenced to death, and became a religious martyr. Pope Gelasius marked February14 as a celebration in honor of his martyrdom in 496 AD. Today, the Catholic church recognizes at least three different martyred saints named Valentine or Valentius. So how did St. Valentine's Day transform from a religious holiday into one far more secular? During the third century in Rome, Claudius II decided that single men served better as soldiers if they were single and had no attachments at home in the way of a wife and family. Thusly, he outlawed marriage. St. Valentine didn't agree with the views and reportedly performed marriages for young lovers in secret. It is this which may have propelled Valentine's Day to be more about love than religious obligation.

Another legend says that Valentine himself authored the first Valentine card. It has been rumored he fell in love with a woman -- the jailer's daughter -- while in prison and sent her a letter. He signed it, "from your Valentine." No matter the origins of the holiday, today St. Valentine's Day has become a day where love is celebrated. Lovers send each other cards and tokens of their affections. It is customary to go out for dinner and send flowers. Chocolates and roses seem to go hand-in-hand with Valentine's Day events. Although certain customs have become commonplace, some customs of Valentine's Day have fallen by the wayside. One such custom is the "drawing of names" that took place in the 18th century. Names of men and women (equal numbers of each) were placed into two different containers. A lottery of sorts took place where one man's name was drawn and matched with a woman's name. The people called were called "Valentines," and the pairing was considered a good omen of these couples marrying later on. Another lost custom was of a man wearing a paper heart with the person

he loved's name written on it. The heart was pinned to his sleeve, which gave way to the expression, "wearing one's heart on one's sleeve." A woman could do the same type of thing by wearing a charm known as a lovebadge near her heart. Where now we send out mass-produced Valentine's Day cards, original Valentine's were handmade and per-

The history of Black History Month Many Americans and Canadians know each February is Black History Month, a month dedicated to observing the history of the African diaspora is several countries outside Africa. The month is meant to educate people about the culture of those, including African-Americans, who left Africa and celebrate their various achievements in all walks of life. The origins of Black History Month can be traced to Harvard-trained historian Carter G. Woodson and minister Jesse E. Moorland. Woodson and Moorland founded the Association for

the Study of Negro Life and History, or ASNLH. This organization dedicated itself to researching and promoting the achievements of black Americans and others of African descent. In 1926, the ASNLH sponsored a national Negro History Week and chose the second week of February for the celebration for a very specific reason. The week coincided with the birthdays of Abraham Lincoln, the 16th President of the United States who presided over the end of slavery, and Frederick Douglass, the famed former slave who rose to prominence as a so-

Dear God, The other day, a 56-year-old suburban Dallas man facing marital and financial problems killed his estranged wife, two teenage children and three other family members on Christmas Day while dressed as Santa Claus before turning the gun on himself… A few days later, a western New York woman sent her husband on an errand then used a shotgun to kill her father, her 10-year-old daughter and herself…. Also in Texas……Santa Claus was shot dead by a jealous husband late Saturday night in a double murder…. Over in New Orleans we read….Detectives have arrested the live-in girlfriend of a man shot and killed the day after Christmas... In St. Maries, ID: A man has been arrested after a St. Maries woman was shot and killed on Christmas Day… It has been documented that in Syracuse, NY: A Syracuse man has been arrested on charges of beating his girlfriend to death on Christmas Eve. All these murders took place on Christmas Day or within a few days of the celebration of Christmas. I am heartbroken to hear news of such tragedies. It was my understanding that this season was the celebration of the birth of Your Son, Jesus. I was told that He came to save us from our sins. It is very hard for me to comprehend all of the evil that has taken place in just a few short days. These were just a couple of newspaper clippings that I read. There were numerous of murders that occurred all over the world, during this same time period. This is my prayer in response to all of this: That You would look down on all the corruption and begin to put compassion, love, forgiveness, and mercy into the hearts of men and women. We need it so desperately. We need to look at mankind as a whole and realize that You made us in Your image and in the likeness of Your Son, Jesus. It doesn’t matter which country we reside in, we all were created the same. We all bleed the same. We all breathe the same air. We all were birthed into this life through our mother’s womb. Help us to understand and accept our differences. Help us to see life as You see it. Help us to value what You have given us; LIFE ITSELF. Please hear my prayer! Marjorie

Home,, Family,, Friendss & You Wake up to Eggs: the gold standard for a healthy breakfast What’s low in calories, easy to fix, very economical and satisfying enough to keep you full for hours? That’s a no brainer — it’s the incredible egg. At only 70 calories for one large egg (let’s not even begin the packed with top quality protein, loads of vitamins and minerals talk), it’s a super way to start your day. The easy to fix part (a lot of folks don’t believe that) haven’t realized that cooking eggs in a microwave is a total cinch and even children can spray a cup, crack in an egg, swoosh it around a bit, toss in a handful a cheese and nuke it for 60 seconds. It slides out onto whole wheat toast and the cup goes into the dishwasher — done! No time to eat? Just wrap it up in foil and head out the door. And cost wise, we’re talking about a dime an egg. What kind of breakfast cereal costs a dime a serving? None I want to eat. In fact, a simple omelet, taking little more than two minutes to fix will make a really cost effective breakfast, plus you get to recycle whatever leftovers you have in the fridge for the filling. When you think of satiety, that’s where eggs really shine. The combination of nutrients in that egg, combined with uber-protein is what you want when you can’t stop for a mid-morning snack. In fact, research shows that folks that enjoy eggs for breakfast, compared to a high carb entrée, end up consuming 300 to 500 fewer calories throughout the rest of the day since they just aren’t that hungry. These are all good reasons eggs have been crowned the gold standard for breakfast, but the nutrition itself (sorry, we just have to mention it) is reason

enough to get your day started with an egg. Eggs contain 14 percent less cholesterol than previously thought, Vitamin D, choline (for memory health), every vitamin in some amount except Vitamin C, lutein (for eye health), loads of minerals, and the list goes on — in fact, if you could eat the shell, you’d even have some calcium! And after a night’s fast, filling up with top quality protein gets everything moving and working the way it’s supposed to. So in this new year, when you Wake up to Eggs and send yourself and the kids off with the perfect breakfast food — one that’s low in calories, easy to fix, economical, satisfying and infinitely nutritious — you know you are starting the day off to a good beat.

Quick and easy breakfast ideas ~ for one or two Easy Egg Breakfast Quesadillas 1/2 cup shredded Mexican cheese blend (2 oz.) 2 whole wheat OR flour tortillas (7”) 4 slices Canadian-style bacon (2.5 oz.) 4 eggs, beaten Salsa Sprinkle 1/4 cup cheese on one side of each tortilla. Top each with 2 bacon slices. Coat large nonstick skillet with cooking spray; heat over medium heat until hot. Pour in eggs. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds. Continue cooking, moving eggs around until thickened and no visible liquid egg remains. Do not stir constantly. Spoon eggs on top of bacon, dividing evenly. Fold tortillas over filling to cover, pressing gently.

Microwave Denver Scramble Slider 2 Tbsp. chopped red or green bell peppers 1 tbsp. chopped onion 1 egg 1 thin slice deli ham, chopped (1 oz.) 1 Tbsp. water 1 slider-size bun or whole wheat English muffin, split, toasted Ketchup (opt.) Place veggies in 8-oz. ramekin or custard cup. Microwave on high, 30 seconds; stir. Add egg, ham and water, beat until egg is blended. Microwave on high 30 seconds; stir. Microwave until egg is almost set, 30 to 45 seconds longer. Season with salt and pepper, if desired. Serve in bun with ketchup, if desired. Makes 1 serving Per serving: 204 calories; 7g total fat; 197 mg cholesterol; 22g carbohydrate; 2g fiber; 14g protein

Microwave 1-Minute Ham & Egg Breakfast Bowl 1 thin slice deli ham (1 oz.) 1 egg, beaten Shredded Cheddar cheese Line the bottom of 8-oz. ramekin or custard cup with ham slice. Fold ham in half, if necessary. Pour egg over ham. Microwave on HIGH 30 seconds; stir. Microwave until egg is almost set, 15 to 30 seconds longer. Top with cheese. Serve immediately.
