Young families want to start out on the right foot, and for many that means addressing finances and developing a plan so their finances help instead of hinder them in the years to come. Addressing finances often means tackling debts, and eradicating or significantly reducing debt is essential for young families. But being beholden to debt isn't the only mistake young families make. The following are a few common mistakes that young families focused on their future should avoid. * Getting by without a budget. It's possible to live without a budget, but that doesn't mean it's prudent. Living without a budget makes it hard to corral spending or to know just how much you're spending each month. When sitting down to establish a monthly budget, the task can seem daunting, especially if you have never before lived on a budget. The first step toward es-
tablishing a budget is to determine the monthly costs of necessities (i.e., mortgage payments, car payments, groceries, etc.) and then make a list of those things you spend money on each month that aren't entirely necessary (i.e., cable television bills, dining out, and so on). This can help you trim some of those extra costs that can make it difficult to save for your future. The first couple of month living on a budget might be rocky, and you might need to make a few adjustments along the way. But establishing a budget will make it much easier for you to meet your long-term financial goals. * Failing to save money. Some young families feel their savings account is their home, the value of which they expect to appreciate considerably by the time they're finished paying off their mortgage. Un-
fortunately, the housing market of the last several years suggests that homes might not be as great an investment as they once were. In fact, many homeowners are currently underwater with their mortgages, meaning they have more debt on the property than the property is worth. Though the prevalence of underwater mortgages doesn't mean families should avoid buying a home, it does shed light on the importance families must place on saving money and avoiding the assumption that their home will finance their retirement down the road. There's no telling if the value of your home will keep pace with inflation over the next several decades, so it's important to save money and keep saving as the years go by. * Saving for college as opposed to retirement.

Parents, of course, want their children to go to college, and many would prefer that their kids won't end up buried in debt to afford tuition. That reality only emphasizes the importance families must place on making sound financial decisions that don't put their futures in jeopardy

Home,, Family,, Friendss & You What does it mean to be gluten-free? by Diane Mincher, Extension Nutrition and Food Specialist, University of Vermont Lately, I’ve seen more and more foods labeled “gluten-free.” What exactly is gluten, anyway? Gluten is a protein found in wheat, barley and rye. It’s also in spelt, a type of wheat, as well as triticale, a cross between wheat and rye. Some people — estimates say one in every 133 people — have trouble digesting this particular protein. Gluten can damage the digestive tract, which results in poor nutrient absorption and can lead to vitamin and mineral deficiencies. Some common symptoms of gluten intolerance include gas, bloating, diarrhea, cramps, unexplained weight loss, anemia, fatigue or weakness. The condition, called celiac disease, varies in its severity. Following a gluten-free diet isn’t as easy as avoiding bread, crackers, cereal and baked goods. Many processed foods may contain wheat, barley or rye, too, including beer, ale, lager, bouillon cubes, candy, potato chips, cold cuts and most cereals unless labeled gluten-free. French fries, rice mixes, flavored instant coffees, sauces, some processed and flavored cheeses, soy sauce, licorice, chocolate bars, self-basting turkeys, soups and vegetables in sauce are on the list, among others. Gluten also may be found in everyday products such as medicines, vitamins and lip balms. Almost all gluten-free products now label their package as gluten-free or use a “GF” symbol. Reading ingredient labels on products is very important to make sure that that the item does not contain wheat, barley or rye. Other foods or ingredients to avoid include bran, bread crumbs, bulgur, cereal extract, couscous,
cracker meal, durum wheat, farina, graham flour, high-gluten flour, high-protein flour, semolina, spelt, vital gluten, vital wheat gluten, wheat bran, wheat germ, wheat gluten, malt, wheat starch and whole or enriched flour. Baking without gluten can be challenging because gluten contributes important properties to various types of baked products like cookies, cakes, pastries and breads. Gluten-free cookbooks and online resources frequently offer gluten-free flour blend formulations for use in making cookies, cakes, quick breads and yeast breads. To bind and thicken glutenfree products, eggs and a starch-based product, such as guar gum and xanthan gum are used. If using these products, refrigerate all flours for freshness and quality but bring to room temperature before measuring. Gluten-free baked goods can lose moisture and quality quickly. Wrap them tightly and store in the refrigerator or freezer in an airtight container to prevent dryness and staleness. The gluten-free diet is a lifelong commitment and should not be started before consulting your doctor and being tested for celiac disease. Tests to confirm could be inaccurate if a person followed a gluten-free diet for a long period of time. 1 c. brown rice flour 1/2 c. rice bran 1 1/2 tsp. baking powder 1 egg
2 Tbsp. vegetable oil 1 Tbsp. honey 3/4 c. orange juice or water 1/2 c. blueberries Preheat oven to 400 degrees F. Combine flour, bran, baking powder in bowl. Stir to mix. Add rest of the ingredients. Mix well. Spoon into lightly oiled muffin cups. Bake 12 to 15 minutes, or until brown. Makes 9 muffins. Nutrition information per serving (one muffin): 151 calories, 3 grams (g) protein, 21 g carbohydrates, 8 g fat, 194 milligrams sodium.
“Click, Clack, Moo” at Elk Lake School Hi, I’m Allison Kiefer the Susquehanna County Dairy Princess. Dairy Ambassador’s Mercedes Spickerman, Mariah Tompkins and I recently visited the Elk Lake Elementary School. On our two day visit we stopped in to see the kindergarten, first and second grade classes. I read the book “Click, Clack, Moo, Cows that Type” by Doreen Cronin. Mercedes and Mariah took turns asking the young students some interesting dairy related trivia questions, such as; “Approximately how much water does a cow drink in one day?” The answer might surprise you, like it did the students — would you believe about a bathtub full? After the trivia game we made sure that the students got one of their 3-Every Day servings of dairy by serving either GoGurt or string cheese. The students really enjoy their healthy dairy snack. Before we left each classroom we made sure to leave some fun goodies for the students to take home to remind them how important it is to get those 3-Every Day servings of dairy. Special thanks to the kindergarten, first and second grade teachers and Principal Mr. Pirone for letting us make a dairy visit to the school.

Camp Summer camp is a popular way for kids to spend their summers, but many camps are expensive.The American Camp Association has found that overnight camps can cost anywhere from $325 to $780 a week. Day camp fees may be $100 to $275 per week. Parents who send their children to camp for an entire season might pay anywhere from $3,000 to $9,000 for the seven- to nine-week program.
Parents looking for an alternative to costly camps should consider local programs that offer summer activities. Libraries, schools and childcare centers may have programs that run the length of summer and are considerably less expensive than more formal camps. A YMCA or even a swim club may also put together activities. Parents whose children attend afterschool sporting classes, such as karate or soccer, may find that the organizations offer a camp or summer program. Day Trips If a parent is off for the summer, then day trips may be a possibility. Schedule a few day trips to different locations that the kids are excited to see. Newspapers routinely print "Go See It" or "Just Go" listings that highlight local events. The family can gather around the table and decide which outings would be interesting and then

Washing the car with a hose and a bucket of sudsy water is a fun way to cool off during the hot summer days and get a chore done. While parents should not expect a perfect job, they can rest assured that the kids will have at least an hour of fun in the sun and water. Set aside a patch of the yard that children can turn into their own personal gardens. Encourage digging in this area and provide seeds or seedling plants as well as kid-sized gardening tools. Each day the kids can check on the progress of their gardens.

Dear God, This is the time of year where many of us celebrate Palm Sunday and Easter. Those who have trusted in and placed their lives in knowing Jesus Christ as their personal Savior, view this season as one that brings real joy, real excitement, and real peace to our hearts. Why? because of the sacrifice that Jesus made for us. He allowed Himself to become the death penalty for our sin. I just want to say: Lord, Creator of heaven and earth; I thank you for the celebration of the triumphal entry of Jesus on that glorious day in Jerusalem. It is the beginning of Holy Week. It is a week of celebration that signifies who Jesus is: the “King of Kings” and “Lord of Lords.” Your Word shows us that when Jesus entered that city of Jerusalem, palm branches were being waved and used to make a path for Jesus’ entry. It also signified his journey to the Cross of Calvary where He was crucified. It sounds cruel, and it was, but it was a powerful demonstration of God’s love toward mankind. Jesus, the King of Kings, died on that cross, shed His blood, giving us the opportunity to mend our relationship with God the Father. The greatest part of this celebration is this: Jesus died, yes, He was buried, twas the custom, but He rose from the dead with victory over the grave. So, once again; Lord, thank you for paying the penalty for our sins and purchasing for all who believe in him, eternal life in Christ Jesus. May all who read this, Lord, come to a knowledge of who You really are and receive with their hearts, Your Son, Jesus. Truly, this is a celebration of celebrations!!! The Only Pizza You’ll Ever Want Again Yield: 4 servings Prep Time: 15 minutes Cook Time: 20 minutes Crust 1 16-ounce package pizza dough, brought to room temperature 2 teaspoons extra virgin olive oil 2 tablespoons grated ParmigianoReggiano Toppings 1/3 pound broccoli from trimmed broccoli bin in produce section, 1/3 head 1 tablespoon extra virgin olive oil, 1 turn of the pan 3 cloves cracked garlic 1/2 pound chicken breast cut for stir fry, or chicken tenders Salt and freshly ground black pepper 1 cup part skim ricotta cheese 10 sun dried tomatoes in oil, drained and sliced 1 cup shredded mozzarella cheese, available on dairy aisle 12 to 15 leaves fresh basil, torn or stacked and thinly sliced Preheat oven to 500°F. On 12-inch nonstick pizza pan, stretch out dough and form pizza crust. Drizzle olive oil on crust and spread it
The Only Pizza You’ll Ever Want Again with a pastry brush over the dough to the edges. Sprinkle crust with grated Parmigiano-Reggiano. In a small covered saucepan, bring 2 inches water to a boil. Separate broccoli tops into florets, discarding lower stalks or reserving for soup. Salt water and add broccoli florets. Cook, covered, 3 to 5 minutes. Drain broccoli and set on cutting board. Chop broccoli florets into small pieces. Heat a small nonstick pan over medium high to high heat. Add oil, cracked garlic and chicken. Season with salt and pepper. Brown chicken until lightly golden all over, 3 to 5 minutes. Chop sautéed chicken and garlic on a cutting board into small pieces. To assemble pizza, dot crust with broccoli and chicken. Dot crust with spoonfuls of ricotta, spreading gently with the back of spoon. Add sliced sundried tomatoes, scattering around pizza to edges. Complete assembly with a thin layer of shredded mozzarella. Place pizza in oven on middle rack and lower heat to 450°F. Bake 12 minutes, until cheese is deep
golden in color and crust is brown and crisp at the edges. Remove from oven and let stand 5 minutes. Top with lots of torn or shredded basil. Cut pizza into 8 slices using pizza wheel and serve. Stretch a Buck Turkey and Bean Burrito Burgers Yield: 4 servings Prep Time: 20 minutes Cook Time: 16 minutes 1 cup cold leftover white or brown rice 1 pound ground turkey 1 (15-ounce) can pinto beans, rinsed and drained Palmful chili powder 1 1/2 teaspoons cumin, half a palmful 1 1/2 teaspoons coriander, half a palmful 1 tablespoon grill seasoning, (recommended: Montreal Seasoning by McCormick) 1 tablespoon canola oil 1 ripe avocado 1 clove garlic, grated or finely chopped 1 lime, zested and juiced 1 jalapeño or serrano pepper, seeded and finely chopped 1/2 small red onion, finely chopped 1/2 cup sour cream 4 red leaf lettuce leaves 1 ripe tomato, sliced 4 crusty rolls, split Combine rice, meat and beans with spices and grill seasoning. Form 4 big patties, then heat 1 tablespoon oil (a turn of the pan) in a large skillet over medium-high heat. Cook patties 7 to 8 minutes on each side. While burgers cook, combine avocado with garlic, lime zest and juice, jalapeño and red onion. Mash to roughly combine, then stir in the sour cream. Place burgers on buns with lettuce and tomato, and top with sour cream guacamole. Tip: To keep leftovers fresh,

Broccoli and Cauliflower Gratin Mac ‘n Cheese Yield: 6 servings Prep Time: 20 minutes Cook Time: 1 hour 1 small head or bundle broccoli, trimmed into florets 1 small head cauliflower or half a large head, trimmed and cut into florets 1 pound whole-wheat macaroni or penne or other short cut pasta 2 cups sour cream or reduced-fat sour cream 1 tablespoon Dijon mustard 1/3 cup finely chopped chives 2 cloves garlic, peeled and grated or crushed into paste A few drops hot sauce Salt and freshly ground black pepper 2 1/2 cups grated extra-sharp cheddar Bring large pot of water to a boil over medium heat. Salt water and add broccoli and cauliflower florets. Boil vegetables for 5 minutes, then remove with a spider or a strainer and drain. Add pasta to water and undercook by about 2 minutes, drain. Meanwhile, combine sour cream in large bowl along with mustard, chives, garlic, hot sauce, salt and pepper, to taste. Add pasta and cauliflower and 2/3 of the cheese. Stir to combine, then transfer to a casserole dish or Ziploc VersaGlass container and cover with remaining cheese. Cool and chill for a make-ahead meal. To heat and eat, put casserole on baking sheet and bake in the middle of a preheated 375°F oven until deeply golden and bubbly, about 40 to 45 minutes. Tip: Make a double batch and freeze for a later date.
Broccoli and Cauliflower Gratin Mac ‘n Cheese
After more than 50 years of shrinking households, evidence from the 2010 United States Census indicated that the number of people living under one roof has once again started to grow. The changing economy and high unemployment rates have driven many people to once again join together and live under one roof. Furthermore, adult children who had previously moved out of their parents' homes are increasingly moving back in just to make ends meet. This cohabitation could lead to some conflicts along the way, especially among siblings who faced off against each other while growing up. Sibling rivalry is a common occurrence among brothers and sisters, but there are ways to keep it in check. What is sibling rivalry? Some siblings grow up as best friends while others seemingly never stop fighting. There are a number of reasons why they may get into arguments with each other. In many cases, brothers and sisters fight out of jealousy or to compete for a parent's attention. According to KidsHealth.org, here are some reasons a sibling rivalry may develop. * Personalities: Every child has his or her own personality and temperament. This doesn't always match up with the temperament of a sibling. If one child is easygoing and adventurous and the other child is shy and clingy, this can cause a rift in their ability to play well together. * Age: Age can factor in to how siblings get along. A child who is seven years old and a child who is three years old have very different interests and levels of development. They may not be able to share the same toys, and having fun together on an intellectual level is not easily achieved. This can cause bickering and usually fights when the younger sibling wants to emulate the older one. * Special needs: A child may have a developmental delay or illness that requires extra attention from Mom and Dad. Other siblings may be jealous of the
extra attention their brother or sister could be receiving, even if the attention is justified. * Learning by example: Children often take their cues from Mom and Dad. If parents are unable to resolve their differences amicably and tend to blow things out of proportion, siblings may feel like this is the right way to handle their problems as well. Stopping the fighting Constant bickering and yelling can take its toll on the household, leading to a more stressful environment. Therefore, parents are often eager to put an end to the disagreements as soon as possible. Certain strategies can help relieve sibling rivalries. * Don't play favorites. Never show or tell one child that he or she is a favorite over the other. This can cause a lifelong resentment among siblings and even compromise parents'relationship with their children. Parents should do their best to share equal time with all children and avoid favoring any of the kids. * Don't take sides. Try not to get involved in disagreements between children. Parents should try to remain neutral, only intervening if there is a chance of danger or physical fighting. By coming to the rescue of a particular child, parents may make it seem like one is protected and exacerbate the rivalry problem. * Don't play the blame game. Siblings are their own instigators, and it takes more than one person to get into a fight. Instead of pointing blame, figure out
what consistently causes arguments and try to avoid those situations. * Resolve things with the kids. When parents must step in, it's important not to dole out the punishments and take over. It is imperative to coach children through an argument and help them find their own solutions. Otherwise the kids could always run to their parents to serve as referees. Parents should help their children develop the skills they need to be able to successfully work through difficulties on their own.
