Valentine's Day is a holiday during February that commemorates love and romance and also the patron Saint Valentine. The history of St. Valentine is shrouded somewhat in mystery, and there are beliefs that many different people went by the name St. Valentine. One such individual was a holy priest who served in Rome, Italy. Some historians surmise that he was jailed for defiance during the reign of Claudius II, sentenced to death, and became a religious martyr. Pope Gelasius marked February14 as a celebration in honor of his martyrdom in 496 AD. Today, the Catholic church recognizes at least three different martyred saints named Valentine or Valentius. So how did St. Valentine's Day transform from a religious holiday into one far more secular? During the third century in Rome, Claudius II decided that single men served better as soldiers if they were single and had no attachments at home in the way of a wife and family. Thusly, he outlawed marriage. St. Valentine didn't agree with the views and reportedly performed marriages for young lovers in secret. It is this which may have propelled Valentine's Day to be more about love than religious obligation. Another legend says that Valentine himself authored the first Valentine card. It has been rumored he fell in love with a woman -- the jailer's daughter - while in prison and sent her a letter. He signed it, "from your Valentine." No matter the origins of the holiday, today St. Valentine's Day has become a
day where love is celebrated. Lovers send each other cards and tokens of their affections. It is customary to go out for dinner and send flowers. Chocolates and roses seem to go handin-hand with Valentine's Day events. Although certain customs have become commonplace, some customs of Valentine's Day have fallen by the wayside. One such custom is the "drawing of names" that took place in the 18th century. Names of men and women (equal numbers of each) were placed into two different containers. A lottery of sorts took place where one man's name was drawn and matched with a woman's name. The people called were called "Valentines," and the pairing was considered a good omen of these couples marrying later on. Another lost custom was of a man wearing a paper heart with the person he loved's name written on it. The heart was pinned to his sleeve, which gave way to the expression, "wearing one's heart on one's sleeve." A woman could do the same type of thing by wearing a charm known as a lovebadge near her heart. Where now we send out mass-produced Valentine's Day cards, original Valentine's were handmade and personalized letters. Within them individuals could write their exact sentiments to a loved one. On February 14th, people nipped by the love bug partake in many customs to show their love. How will you show that special someone you care this year?

How to floodproof your home Homeowners know no home is perfect. While the notion of a dream house is nice, every home eventually experiences a problem or two. Many problems are bound to occur sooner or later, but there are a few that diligent homeowners can prevent. One of those preventable problems is flooding. Any home with floor drains or plumbing fixtures below street level can flood, and this can be due to inclement weather, such as heavy rainstorms, local sewer system backup, or groundwater swelling. Flooding can even occur in the spring when melting occurs as the air temperature increases. While homeowners won't be able to control the weather, they can take steps to floodproof their home. * Do some preventive landscaping. If the ground around the home's foundation slopes toward the house, make some grading changes so that the ground slopes away from the home. * Insulate the heating ducts. Some home heating ducts are under the basement floor. In such homes, homeowners should make sure these ducts are properly insulated and watertight. * Make sure the vents all lead outside the home. The weather can cause moisture issues, but some moisture problems can come from inside the home as well. Clothes dryers and bathrooms are both internal moisture sources, and these sources should always be vented outside the home. * Clean gutters and downspouts. Gutters and downspouts should be
cleaned to ensure water is effectively being diverted away from the home. Clean gutters and downspouts in the spring after a long winter, and do so again in the fall to keep fallen leaves from blocking the flow of water. Downspouts should extend four feet from the outside wall of the house. * Inspect the home at least once a year. Before buying a home, buyers often hire a professional inspector to ensure the home is safe and sound. But the inspections should not stop once buyers sign on the dotted line. To prevent flooding, homeowners should inspect their home's foundation for cracks once a year. If the home has a chimney and fireplace, check for cracks there as well. If any cracks are discovered, consult a professional immediately. * Clean out basement drains. Basement drains should be cleaned annually from the house to the street. If the drains are still slow after cleaning, then clean them more than once a year. * When leaving the home for an extended period of time, turn the water valve off. Homeowners worried about flooding can calm those fears when going on vacation or another long trip by turn the water valve off at the source. This ensures that, should a line break while no one is home, water will not pump into the house. Floodproofing a home can save homeowners from potentially costly repairs and unsightly damage to a home's interior.

People often use the symbol "X" to represent a kiss at the end of a love note or card but don't understand how this letter came to be associated with the meaning of a kiss. The X or a "cross" was used as one would use their signature today, to mark a person's word to abide by a contract or agreement from a Christian perspective. The X was often then kissed as a further symbol of honesty. Eventually, the X itself came to represent a kiss and no longer just a signature. Why the letter "O" came to represent a hug is not as widely understood. Some say that it is because an O is a shape of

It's said that one person's trash is another person's treasure. This often applies to discarded items that others find have real value. But it's not just those discarded trinkets that can benefit others. When trash like food scraps and other refuse can be turned into a fuel that powers machines or reduces solid waste, it can be a win-win situation. An innovation called Micro Auto Gasification System, or MAGS, is the world's first solid waste treatment appliance. The technology is being developed by the U.S. Navy in conjunction with Terragon Environmental Technologies, Inc. and the Canadian Department of Defense for use in military applications and isolated habitats. How the process works is that paper, cardboard, wood, plastic chemicals, food, cloth, oils, grease, biological material, animal waste, agricultural waste, and sludge are loaded into the treatment appliance. MAGS can process up to 40 kg (88 pounds) of as-received waste. The unit then powers a thermal process that "cooks"the waste in a high-temperature, low-oxygen environment, which essentially kills all organic material in the waste. The remaining material is a fuel gas dubbed "syngas." MAGS uses this fuel to run itself. Any residual waste in the unit like carbon is sequestered as a product called bio-char. It is a carbonaceous material that can be safely placed in landfills or used as a soil additive. Terragon says that a MAGS unit can treat the waste generated by a community of up to 500 people in a single day by reducing the volume by 95 percent. A system of waste management such as this can be beneficial in many applica-
tions. Ships that remain at sea for long durations of time, isolated communities without waste-treatment options, resorts, hospitals, and other situations where waste cannot be transferred to other facilities can use a MAGS unit to get garbage under control. The company has also developed strategies for liquid waste treatment that is married with MAGS into one product. The goal in all of Terragon's innovations is to sequester carbon to reduce the release of greenhouse gases and other pollutants that can critically harm the environment. While the technology is still in its infancy, the idea of harvesting energy from trash can have very practical applications beyond isolated markets. Some information indicates that enough trash to fill garbage trucks stretching from the Earth to the moon is generated every year in the United States alone. In America, 55 percent of waste is buried in landfills and most garbage decomposes very slowly. Relying on this garbage as fuel solves the problem of overflowing landfills and the dependence on fossil fuels. Also, the technology protects the environment in a number of other ways, especially by reducing ground and water contamination. (Although precautions are taken to protect surrounding groundwater, air and rain from landfill contamination, few people can argue that landfills are the most efficient method of waste management.) An offshoot of the green movement has been finding innovative ways to handle many of the problems of waste management around the world. MAGS is still being developed, but could prove an important part of the waste management industry in the years to come.

Dear God, It has been a joy to see all the write-ups about Tim Tebow, the quarterback for the Denver Bronco. It reminded me of the apostle Paul who shared with us in Philippians Chapter 1 verses 12-18 about him being persecuted in taking a stand for being a Christian. It has given me more courage as a Christian. I hope that when I am challenged, as Tim Tebow has been throughout his college and professional career, that I will not be ashamed to take the same stand as he has. I have enclosed the Bible passage for everyone to see. I hope that as they read it, they will be encouraged and begin to share their stories with You. I have really enjoyed reading “Dear God” each month and hope that others will find it rewarding to their lives. I was hesitant, at first, to write but once these articles began to surface, I knew I had to respond with a grateful heart. These words from the Bible tell me how important it is for “the gospel” God’s Word to be shared, even when people try to use them to cause trouble for others. I will do my best to remember these words and to apply them to my life. “Now I want you to know, brothers and sisters, that what has happened to me has actually served to advance the gospel. 13 As a result, it has become clear throughout the whole palace guard and to everyone else that I am in chains for Christ. 14 And because of my chains, most of the brothers and sisters have become confident in the Lord and dare all the more to proclaim the gospel without fear. 15 It is true that some preach Christ out of envy and rivalry, but others out of goodwill. 16 The latter do so out of love, knowing that I am put here for the defense of the gospel. 17 The former preach Christ out of selfish ambition, not sincerely, supposing that they can stir up trouble for me while I am in chains. 18 But what does it matter? The important thing is that in every way, whether from false motives or true, Christ is preached. 1 tablespoon butter or margarine, cut into small pieces 1 tablespoon sugar 1. Preheat oven to 425° F. Place pie crust on a rimless baking sheet lined with parchment paper. Dust a rolling pin and parchment paper with flour and roll pastry into a rough 13-inch circle. 2. Place pie filling in center of pastry, leaving a 2inch border all around. Grate 1 teaspoon of lemon peel; squeeze 2 teaspoons of lemon juice from the lemon. Sprinkle both over pie filling. Scatter butter over top. 3. Fold pastry back over pie filling to make an uneven edge of 11⁄2 inches, leaving center of pie filling exposed. Sprinkle sugar over pastry border. Bake 20 minutes until the filling is bubbly and the pastry is golden brown. Cool slightly. Serve with ice cream if desired.

Duncan Hines®, Comstock® or Wilderness® Cherry Pie Filling 1 pkg Duncan Hines® Moist Deluxe® Classic Yellow Cake Mix 1 cup chopped pecans or walnuts 1/2 cup (1 stick) butter or margarine 1. Preheat oven to 350° F. Grease a 13x9-inch pan. 2. Dump pineapple with juice into pan. Spread evenly. Dump in pie filling. Sprinkle cake mix evenly over cherry layer. Sprinkle pecans over cake mix. Dot with butter. 3. Bake 50 minutes or until top is lightly browned. Serve warm or at room temperature.

Creamy Hawaiian Apple Salad I think I’ve created almost as many apple salads as there are leaves on an apple tree! Apples add so much more than flavor when stirred into a palatepleasing salad. They also add fiber and vitamins. Try this tasty harvest-time apple salad and see if you don’t agree. 1 (4-serving) package sugar-free instant vanilla pudding mix 2/3 cup nonfat dry milk powder 3/4 cup water 1 (8-ounce) can pineapple tidbits, packed in fruit juice, drained and 1/4 cup liquid reserved 3/4 cup reduced-calorie whipped topping 2 cups cored, unpeeled and diced Red Delicious apples 3/4 cup miniature marshmallows 3 tablespoons chopped pecans 1. In a large bowl, combine pudding mix, dry milk powder, water and reserved pineapple liquid. Mix well using a wire whisk. Blend in whipped topping. Add apples, pineapple, marshmallows and pecans. Mix gently to combine. 2. Cover and refrigerate for at least 15 minutes. Gently stir again just before serving. Low carb, high risk? A new year brings with it new ways to lose weight — reinventions of old methods, new weight-loss products and commercials urging you to try this or that so you can be a new you in the new year. The diets that have become the most popular are socalled low-carb diets. But are low-carb diets really good for you? What is a healthy diet? Grain products, vegetables and fruits should be the foundation of a healthy diet. Eating foods that are moderate in sugars, salt and sodium, while also being low in fat, saturated fat and cholesterol will ensure proper nutrition. A diet that is full of variety will keep Americans healthy. Most of the popular low-carbohydrate diets have a one- to two-week period when carbohydrates are restricted to 20 grams or less per day. Carbohydrates are slowly reintroduced into the diet after the first two weeks until weight is maintained. The recommendation is to consume at least 130 grams per day. Although low-carbohydrate foods are restricted on these diets, eating foods high in protein and fat is advised. Because these diets restrict carbohydrates (a major source of energy in the diet), the body begins to break down muscle tissue for energy. When this occurs, water is released causing a diuretic effect. The rapid weight loss in the first two weeks on these types of diets is due to water loss, not fat loss. After the first two weeks, the weight loss will continue, but it is because of calorie restriction from the reduction of carbohydrates consumed. The most effective, safe and long-term way to lose weight includes eating a balanced diet combined with participating in regular physical activity. In
order to lose weight effectively, the amount of calories consumed must be less than the amount burned (i.e., physical activity). The results may be gradual, but they are proven to be safe, and the weight loss will be long term, as long as lifestyle changes are made. This menu for Thai Chicken and Mango Stir Fry contains all the elements recommended for a healthy diet, and it has fewer than 300 calories to jump start a healthy new you in the new year!
Thai Chicken and Mango Stir Fry This recipe uses fish sauce to add a burst of flavor to the dish. Fish sauce is a popular condiment in Southeast Asia. It’s made from salted, fermented fish that is pressed to release the accumulated juices, which are bottled and sold as Fish Sauce. You usually can find both regular and low-sodium brands in Asian specialty stores and in the Asian-food section of most supermarkets. 2 tablespoons plus 1 teaspoon fish sauce 2 tablespoons lime juice 1 1/2 teaspoons cornstarch 1 1/2 teaspoons brown sugar or Splenda brown sugar blend 4 teaspoons canola oil, divided 1 pound chicken tenders, cut into 1-inch pieces 3/4 teaspoon crushed red pepper 2 cloves garlic, minced 1 teaspoon minced fresh ginger 4 cups bite-size broccoli florets 1/4 cup water 2 mangoes, peeled and sliced 1 large red or green bell pepper, seeded and sliced 1 bunch green onions, cut into 1-inch pieces 1/4 cup chopped fresh cilantro 1/4 cup chopped fresh basil, preferably Thai

If you’re like me, the “think tank” can always use a little exercise, and it’s easier and definitely more fun to keep a resolution when you share the challenge with friends and family. That’s where games come in. Here are a couple of fun brain games to put smiles on faces and help everyone in the family keep their mind sharp. Take Two! When you don’t have time for a standard Scrabble board game, try this speedy version that uses the letter tiles without the board. My daughter taught it to us years ago, and our family is still hooked! Here’s how: Turn all the Scrabble tiles upside down in the center of the table. Each player takes seven tiles, turns them over and quickly creates words in his own crossword arrangement in front of him. Each word must connect with another, as it would on a Scrabble board. As soon as one of the players has used all seven tiles to form his words, he shouts, “Take 2.” Each player now draws two more tiles and attempts to work them into their arrangements. Continue this fast-paced play with each player drawing two tiles when someone shouts, “2.” As the game progresses, players may rearrange their words as they work in the new letters. When all tiles are gone from the center, the game proceeds until one player has used up all of his letters. Count individual scores by adding up the points printed on each of the letters for all words

Add the reserved sauce and chicken; cook, stirring, until the sauce is thickened and the chicken is heated through, about 1 minute. Stir in cilantro, basil and mint. Serve with lime wedges and over whole-wheat pasta or brown rice, if desired.
