Eggs are symbolic of Easter. They're colored, decorated, hidden, and used in decorative items for the home. The one caveat to eggs is that they are quite fragile, and even hard-boiled eggs can be rendered useless with one accidental drop or blow. Instead of relying on breakable eggs for Easter fun, consider making stronger ones instead. Symbolic of rebirth and renewal, eggs are an integral part of setting the scene come early spring. Selecting a less fragile material to create the looks of real eggs can increase the potential for using them in many different applications. One of the easiest ways to create harder-to-break eggs is to make them out of clay. Modeling clay is a versatile medium that can be used to make everything from clay eggs to bunny figurines to religious items synonymous with Easter. A visit to the local craft store or even a chain retailer will likely turn up different clay products, which come in a variety of colors. You can create pastelcolored clay by mixing primary colors with white clay if you cannot find pastel colors in the store. There are two main ways to create egg shapes out of a ball of clay. One way is to roll a ball out of the clay and then roll it vertically between your hands to make the smaller end of the egg. Another is to use a plastic egg as a mold and stuff the clay inside. Pop open the

New twist on spring and Easter decorating top of the plastic egg and then gently tap the clay out. You don't even have to color your clay if you don't feel up to it. You may also use white clay, allow to dry, and then paint them using acrylic paints. Mix two clay colors together before forming into an egg to achieve a marbled effect. Also think about adding embellishments like stickers, ribbon, bows, and flowers to the eggs, much in the same way you would decorate real eggs. To display clay eggs in a vase or to attach to a spring wreath, thread a dowel or piece of florist's wire into the egg before allowing to harden completely. Then attach them as needed. Clay eggs can be used in place of regular eggs in just about every traditional egg use -- except of course for making egg salad! Plus, making clay eggs is a fun and safe craft for all ages. Eggs in a Nest Here's a creative way to show off clay eggs. Materials: 2 to 3 eggs depending on size Moss or raffia Ribbon Florist wire Weave or shape the raffia or moss into a nest shape large enough to fit the clay eggs. Secure as necessary with the wire. Decorate with bows made out of ribbon. Place the eggs into the nest and display where desired.

Child abuse has many forms. In late 2011 and early 2012, a pair of child sexual abuse scandals, one involving a former Penn State University football coach and another involving at least two teachers at a California elementary school, sent shockwaves through communities across the country. But child abuse is not just sexual in nature. Physical and emotional abuse as well as neglect are also recognized forms of child abuse, and it's up to adults to identify the symptoms so they can help protect defenseless youngsters. Prevent Child Abuse America, an organization dedicated to providing awareness and education about child abuse, notes that the first step in helping abused children is learning to recognize the symptoms of abuse. Child abuse is most often found in combination than alone. For instance, a physically abused child is often a victim of emotional abuse as well, while a sexually abused child commonly suffers from neglect. According to Prevent Child Abuse of America, the following are some of the symptoms both abused children and their parents might exhibit if the relationship is abusive. Though none are necessarily indicative of an abusive relationship, when these signs appear repeatedly or in combination, adults, be it teachers, relatives or anyone who suspects abuse, should examine the situation more closely. Signs an abused child might exhibit: * sudden changes in behavior or school performance; * show no signs that injuries or medical issues reported to parents have
been treated; * learning difficulties that cannot be attributed to specific physical or psychological causes; * overly compliant or responsible; * arrive to school early, stay late and be unwilling to go home; * appear constantly on the lookout, as if something bad is going to happen. Signs an abusive parent might exhibit: * indifference toward the child, rarely responding to a school's requests for information, conferences or home visits; * denial about a child's problems or blame the child for those problems, whether they exist at school or in the home; * encourage other adults to physically discipline a child if the child misbehaves; * view the child as a burden or someone who is worthless or bad; * demand perfection or a level of academic or physical performance that is impossible for the child to meet; * rely on the child for attention, care and the satisfaction of emotional needs. What child and parent might do: * rarely touch or look at each other; * state their dislike of one another; * consider their relationship entirely negative. Each type of child abuse comes with its own unique symptoms, and it's up to adults, whether teachers, relatives or someone in a position to notice recurring symptoms of abuse, to act before an abusive situation escalates. Cabbage has the right stuff Nutrition experts recommend that you eat cabbage or other cruciferous vegetables — meaning “cross-bearing” from the shape of their flowers, whose four petals resemble a cross — as part of a healthy diet. They suggest you eat at least 2 cups, 3 to 4 times per week. Cruciferous vegetables include cauliflower, cress, bok choy, broccoli and similar green leaf vegetables. I love cruciferous vegetables, but I’ve found cabbage to be the most versatile of the group. Cabbage is a good source of vitamins C and A. When choosing cabbage heads, select those that are firm and dense with shiny, crisp, colorful leaves. Examine the leaves to make sure that they’re free of cracks, bruises and blemishes. Severe damage to the outer leaves means there is probably worm damage or decay in the inner core as well. We enjoy stuffing cabbage leaves with a variety of interesting ingredients. This recipe for Cabbage and Potato Cups makes a great weekday side dish, or a unique appetizer when topped with thin slices of crispy Prosciutto or Parma ham, or bacon crumbles. Remember, eat more cabbage (or other cruciferous vegetables) and improve your health!
Cabbage and potato cups 1 medium onion, diced 2 tablespoons olive or vegetable oil, plus more for drizzling 1 (3 pound) head leafy green cabbage; discolored, damaged or tough outer leaves discarded 1 teaspoon minced garlic
1 1/2 teaspoons salt 1 1/2 teaspoons black pepper 2/3 cup chicken broth or water 2 pounds large boiling potatoes 1 cup buttermilk, shaken 1 cup, coarsely grated, extra-sharp white Cheddar or Pepper Jack cheese 1 tablespoon drained, bottled horseradish 8 tablespoons unsalted butter 3/4 cup Panko or fresh bread crumbs 1. Cook onion in oil in a large, heavy skillet over medium heat, stirring occasionally, until soft and golden, about 6 to 8 minutes. 2. Bring a 6- to 8-quart pot of salted water to a boil. Remove and discard the core of the cabbage and carefully lower the cabbage leaves into the boiling water using a slotted spoon. 3. Boil cabbage about 5 minutes, or until softened. Transfer the largest leaves (at least 6) to a bowl of ice water to stop cooking. Transfer remaining cabbage to a colander to drain. Transfer large leaves to paper towels to drain, then pat dry. 4. Using a nonstick muffin tin with 6 (1-cup) muffin cups, lightly spray each muffin cup or oil with 2 tablespoons of butter. Cut parchment or wax paper into 12 (10- by 2-inch) strips. Put 2 strips in a crisscross pattern in each cup to help with removing cabbage. (You will have a 2-inch overhang.) Line each cup with a large cabbage leaf. Coarsely chop enough remaining cabbage to measure 3 cups, then add to onion along with garlic, 1/2 teaspoon salt and pepper, and water, and cook over moderate heat, stirring occasionally, until cabbage is tender and browned, about 10 minutes.

5. Put oven rack in middle position and preheat oven to 350°F. 6. Peel raw potatoes and cut into 1-inch cubes, then cover with cold salted water by 1 inch in a 2- to 3-quart saucepan and bring to a boil. Cook potatoes until tender, about 15 minutes. Drain in a colander, then set potatoes in colander over saucepan to steam-dry, uncovered, 5 minutes. Using a large bowl and a slotted spoon or potato masher, mix the potatoes with the buttermilk, cheese, horseradish, remaining 6 tablespoons butter and remaining 1 teaspoon salt and pepper until combined well. 7. Fill each cabbage leaf with 2 to 3 tablespoons of mashed potato mixture. Then, place a layer of the sauteed cabbage mixture on the potatoes. Top with remaining potato mixture, and sprinkle evenly with breadcrumbs. Drizzle crumbs with olive oil. Fold edges of cabbage in toward filling (do not completely cover). At this point, you can cover and refrigerate the Cabbage and Potato Cups for 24 hours. Bring to room temperature (about 30 to 45 minutes) before baking. 8. Bake until heated through and edges of cabbage are well browned, 25 to 30 minutes. Transfer stuffed leaves to plates using wax or parchment overhangs. Makes 6 servings. SHORTCUT TIP: If you have at least 2 cups of leftover mashed potatoes, or leftover baked or micro-cooked potatoes, mix them with the rest of the stuffing ingredients to save time. Dear God, This is the time of year where many of us celebrate Palm Sunday and Easter. Those who have trusted in and placed their lives in knowing Jesus Christ as their personal Savior, view this season as one that brings real joy, real excitement, and real peace to our hearts. Why? because of the sacrifice that Jesus made for us. He allowed Himself to become the death penalty for our sin. I just want to say: Lord, Creator of heaven and earth; I thank you for the celebration of the triumphal entry of Jesus on that glorious day in Jerusalem. It is the beginning of Holy Week. It is a week of celebration that signifies who Jesus is: the “King of Kings” and “Lord of Lords.” Your Word shows us that when Jesus entered that city of Jerusalem, palm branches were being waved and used to make a path for Jesus’ entry. It also signified his journey to the Cross of Calvary where He was crucified. It sounds cruel, and it was, but it was a powerful demonstration of God’s love toward mankind. Jesus, the King of Kings, died on that cross, shed His blood, giving us the opportunity to mend our relationship with God the Father. The greatest part of this celebration is this: Jesus died, yes, He was buried, twas the custom, but He rose from the dead with victory over the grave. So, once again; Lord, thank you for paying the penalty for our sins and purchasing for all who believe in him, eternal life in Christ Jesus. May all who read this, Lord, come to a knowledge of who You really are and receive with their hearts, Your Son, Jesus. Truly, this is a celebration of celebrations!!! Your faithful follower, Russ

Home,, Family,, Friendss & You Sweet ways to celebrate the season (NAPSA) — A delightful way for your family to greet the spring can be by getting together and baking up tasty treats that signify renewal, such as Sweet Chicks and Bird’s Nest Coffee Cake:
Sweet Chicks Makes 18 chicks 5 to 5 1/2 cups all-purpose flour 1/2 cup sugar 2 envelopes Fleischmann’s RapidRise Yeast 1 tablespoon freshly grated lemon peel 1 teaspoon salt 3/4 cup evaporated milk 1/2 cup water 1/3 cup butter or margarine 2 large eggs Raisins
Powdered Sugar Glaze: 1 1/4 cups powdered sugar 2 to 3 tablespoons milk 2 to 3 drops yellow or red food coloring 1/2 teaspoon vanilla extract Combine 2 cups flour, sugar, undissolved yeast, lemon peel and salt in large mixing bowl. Heat milk, water and butter till very warm (120° to 130°F). Gradually add to flour mixture. Beat 2 minutes at medium speed of mixer, scraping bowl occasionally. Add eggs and 1 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface till smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes. Divide dough into 18 equal pieces; roll each into 10-inch rope. Tie each into a knot, leaving one end slightly shorter. Place knots, short ends up, 2 inches apart on greased baking sheets. Pinch short end of knot to form head and pointed beak. Insert 2 raisins for eyes. Press long end of knot down; with sharp knife, make 4 to 5 cuts to form tail. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes to 1 hour. Bake at 375°F 12 to 15 minutes or till done. Cover heads with small pieces of foil if they become too brown. Remove from sheet to wire rack. Brush with Powdered Sugar Glaze: Combine glaze ingredients in small bowl; stir until smooth.

1/4 cup butter or margarine 9 eggs 1/2 cup chopped almonds, toasted 1 tablespoon water Food coloring Orange Glaze: 1 cup powdered sugar 1 to 2 tablespoons orange juice Combine 1 1/2 cups flour, sugar, undissolved yeast, orange peel and salt in large mixing bowl. Heat water, milk and butter until very warm (120° to 130°F); stir into flour mixture. Stir in 1 egg, almonds and enough remaining flour to make soft dough. Knead on lightly floured surface till smooth and elastic, about 6 to 8 minutes. Cover; let rest on floured surface 10 minutes. Divide dough in half; roll each half to 30-inch rope. Loosely twist ropes together. Place twisted rope on large greased baking sheet; shape into circle and pinch ends together to seal. Place 7 eggs, evenly spaced, on dough, pressing between ropes in twist. Cover; let rise in warm, draft-free place until doubled in size, about 20 to 40 minutes. Beat remaining egg with 1 tablespoon water; brush over dough (not on eggs). Bake at 350°F for 30 to 35 minutes or until done. Remove from sheet; let cool on wire rack. Brush eggs with food coloring. Drizzle Orange Glaze over bread: Combine glaze ingredients in small bowl; stir until smooth. Serve warm. Refrigerate any leftovers. More recipes and tips are at www.breadworld.com.
