How to be a food safety geek by Deb Maes, Extension Field Specialist The word geek originally referred to a computer expert. Today, almost anyone can be a geek about something. I refer to myself as a food safety geek. I follow food-borne illness outbreaks and food recalls. I read barfblog.com on a regular basis to understand the science as well as the mistakes in handling food and how it is reported. And, I use a food thermometer when I am cooking meals. Why did I become so interested in food safety? As a new Extension Educator I listened to women talk about some of the food practices of their elderly parents. People left food cooling on the counter for hours. The kitchen sink was used to thaw foods. No one knew the temperature of their fridge, and didn’t even have a thermometer to check temps. Meat was considered done if the juices ran clear. With those things in mind, I started teaching the basics of food safety. They boiled down to “Keep Hot Food Hot, Keep Colds Foods Cold, Keep Everything Clean, and When in Doubt, Throw it Out!” Advice that’s still good today. Another part of my job
expected me to understand the science and process of home food preservation so that I could answer consumer questions. To say that it was “on the job training” would be an understatement. I can now field food preservations questions, answer consumer questions about safe food handling and for more than a decade I’ve taught food safety classes for food service providers. The cornerstone of my food safety education efforts is the ServSafe® course. This program using the latest science and research around safe food handling was developed by the Education Foundation of the National Restaurant Association and is recognized as an excellent training opportunity for food service staff and managers. Participants are expected to know among other things: the minimum temperature for cooking pork; what is the Temperature Danger Zone for food and how long food can stay in that range; how to clean and sanitize food contact surfaces; when an employee should be restricted or excluded from an operation and what temperature eggs should be at when delivered. day class, successful completion of a 90 question multiple choice exam will give the participant a five-year food safety certificate. Since June of 2000 I’ve taught over 90 classes and reached more than 1100 people. Almost 90 percent of those taking the test have passed. I like to think that I’ve done my part to see that food is safely prepared and served in many parts of New Hampshire. As a customer, how do you know if the restaurants you frequent have staff that know and apply food safety principles? For starters, ask them if someone is ServSafe® certified. Many places hang their certificates so that customers can see them. Watch the staff. Do they wash their hands regularly? Many restaurants are set up so that you can see this happening. The same applies to whether you purchase food at a “Mom and Pop” store, have sandwiches made to order or pur-
chase meat slices at the deli counter of your favorite grocery store. Are the restrooms clean? How about the table you sit down at? Is the fork you pick up covered with dried food? Are the staff aprons clean? Is food safety a priority at your favorite establishment? Encourage owners and managers to make sure that food safety is as important to them as it is to you. Almost 48,000,000 people in the United States get sick from food each year. About 125,000 people are hospitalized due to complications from food-borne illnesses. And of those, three thousand people die from food-borne illness. We have a safe food supply, and with the right knowledge about food safety restaurants and consumers can make it even safer. As a consumer, do everything you can to make sure that the food your purchase, bring home, store and prepare

Buy a thermometer and use it to check the temperatures of your fridge and freezer. Check the temperatures of the food you cook to make sure it is cooked enough to be safe. When purchasing homemade food, look for labels and handling directions. Bring leftovers home and put them in the fridge, right away. There is no guarantee that you won’t be sick from the food you eat, but learn how to control what you can. There’s no harm in being a food safety geek like me. So, to answer some basic food safety questions: Pork should be cooked to
a minimum temperature of 145°F — and yes it may be pink. Your fridge should be at 40°F and your freezer should be at 0°F. For consumers, food should stay no longer than two hours at room temperature, then it should be put in the fridge — and don’t worry, your fridge can handle hot foods. Eggs should be stored in the fridge, in the carton they come in. It is not necessary to wash your raw chicken, you might be spreading more bacteria than you are rinsing away. All home canned foods must be processed either in a water bath canner or pressure canner before being stored. A teaspoon of bleach in a quart of water makes a great sanitizer for counters and sinks. Just spray on and let it sit for at least 10 seconds. Better yet, let it dry naturally.

Senior news line by Matilda Charles Are you depressed? Depression in seniors is a lot more common than we let on. We point to aging as a reason for how we feel, but that’s not necessarily the case. There are any number of reasons why we might feel depressed: if we’ve recently lost someone in our life, if our health isn’t what it used to be, if we’re taking multiple prescriptions, if we’re alone or if we’ve retired and no
longer feel vital. Depression can impact all areas of our lives: our appetite, interest in activities, how we sleep and so much more. The key is to recognize the symptoms and get treated, because depression is treatable. If you can point to at least one item on the following list as being true, it’s time to talk to your doctor. • Having trouble sleeping or sleeping too much. • Losing interest in ac-
tivities or hobbies you used to enjoy. • Feeling isolated, or excluding yourself from activities with friends. • Thinking about death. • Skipping your medications, meals or baths. • Feeling anxious, hopeless, guilty or irritable. • Experiencing new aches and pains, or a worsening of existing ones. • Having trouble concentrating.

Aside from sealing your ducts, the simplest and most effective means of maintaining your air distribution system is to assure that furniture and other objects are not blocking the airflow through your registers,

Herkimer County HealthNet announces Incentive Awards for Herkimer County Municipalities HERKIMER, NY — Herkimer County municipalities may apply for Incentive Awards from Herkimer County HealthNet to support the efforts of the Creating Healthy Places to Live, Work, and Play grant initiative funded by the New York State Department of Health. Herkimer County HealthNet is offering four$5,000 awards to be used for non-infrastructure, municipal projects that promote extracurricular physical activity, access to outdoor recreational facilities, areas that support bicycling and walking, and safety in areas where persons are or could be physically active. Projects that qualify should take place between the dates of April 1, 2012 and January 31,
2013. The Creating Healthy Places grant’s purpose is to assist communities with infrastructure improvements that will decrease rates of childhood obesity and Type 2 Diabetes by increasing opportunities for physical activity for all abilities for Herkimer County residents. Study: An apple a day lowers level of blood chemical linked to hardening of the arteries Eating an apple a day might in fact help keep the cardiologist away, new research suggests. In a study of healthy, middle-aged adults, consumption of one apple a day for four weeks lowered by 40 percent blood levels of a substance linked to hardening of the arteries. Taking capsules containing polyphenols, a type of antioxidant found in apples, had a similar, but not as large, effect. The study, funded by an apple industry group, found that the apples lowered blood levels of oxidized LDL — low-density lipoprotein, the “bad” cholesterol. When LDL cholesterol interacts with free radicals to become oxidized, the cholesterol is more likely to promote inflammation and can cause tissue damage. “When LDL becomes oxidized, it takes on a form that begins atherosclerosis, or hardening of the arteries,” said lead researcher Robert DiSilvestro, professor of human nutrition at Ohio State University and a researcher at the university’s Ohio Agricultural Research and Development Center. “We got a tremendous effect against LDL being oxidized with just one apple a day for four weeks.” The difference was similar to that found between people with normal coronary arteries versus those with coronary artery disease, he said. The study is published online in the Journal of Functional Foods and will appear in a future print edition. DiSilvestro described daily apple consumption as significantly more effective at lowering oxidized LDL than other antioxidants he has studied, including the spice-based compound curcumin, green tea and tomato extract. “Not all antioxidants are created equal when it comes to this particular effect,” he said. DiSilvestro first became interested in studying the health effects of eating an apple a day after reading a Turkish study that found such a regimen increased
the amount of a specific antioxidant enzyme in the body. In the end, his team didn’t find the same effect on the enzyme, but was surprised at the considerable influence the apples had on oxidized LDL. For the study, the researchers recruited nonsmoking healthy adults between the ages of 40 and 60 who had a history of eating apples less than twice a month and who didn’t take supplements containing polyphenols or other plant-based concentrates. In all, 16 participants ate a large Red or Golden Delicious apple purchased at a Columbus-area grocery store daily for four weeks; 17 took capsules containing 194 milligrams of polyphenols a day for four weeks; and 18 took a placebo containing no polyphenols. The researchers found no effect on oxidized LDLs in those taking the placebo. “We think the polyphenols account for a lot of the effect from apples, but we did try to isolate just the polyphenols, using about what you’d get from an apple a day,” DiSilvestro said. “We found the polyphenol extract did register a measurable effect, but not as strong as the straight apple. That could either be because there are other things in the apple that could contribute to the effect, or, in some cases, these bioactive compounds seem to get absorbed better when they’re consumed in foods.” Still, DiSilvestro said polyphenol extracts could be useful in some situations, “perhaps in higher doses than we used in the study, or for people who just never eat apples.” The study also found eating apples had some effects on antioxidants in saliva, which has implications for dental health, DiSilvestro said. He hopes to follow up on that finding in a future study. The study was conducted as a Master’s thesis by graduate student Shi Zhao, and was funded by a grant from the U.S. Apple Association/Apple Product Research and Education Council and a donation from Futureceuticals Inc. of Momence, Ill. Also involved in the study were associate professor Joshua Bomser and research associate Elizabeth Joseph, both in the Department of Human Nutrition, which is housed in the university’s College of Education and Human Ecology.

by Martha Filipic Q: Our son is about ready to apply to college. We know he will need some loans, but we think they should be limited. He says this is “good debt” and tells us not to worry about it. We want to learn more, but where do we start? A: College financing can be complex and the decisions overwhelming. Helping your son realize the implications of taking on too much debt could be one of the most important lessons he learns. More and more people are concerned about the level of student debt, which has topped $1 trillion in the United States. According to the Institute of College Access and Success, two-thirds of college seniors graduated with loans in 2010, carrying an average of $25,250 in debt, with some reaching $55,000. And that doesn’t count graduate or professional school. According to the FinAid website, which offers great guidance (www.finaid.org), financial advisers recommend students limit total student loans to less than what they expect to earn as their starting salary after they graduate. That means those studying to be teachers or artists, for example, should be much more cautious than those studying engineering or computer science. There are several types of loans available to finance a college education. Federally backed need-based loans — the Federal Perkins Loan and the subsidized Stafford Loan — generally offer the best terms. Non-subsidized federal loans - the unsubsidized Stafford Loan or the Parent PLUS loan (made to parents, not students) have higher interest rates but are more widely available. Private loans — from foundations, banks or other financial institutions — generally have higher interest. Different types of loans have different repayment options. Some loans allow stretching repayment periods to up to 25 years. Some allow monthly payments to be based on income.
Your son’s college financial aid office can help sort through the details. But to prepare, the nonprofit College Board has useful information at http://bigfuture.collegeboard.org/pay-for -college/loans. A good place to start is “8 Tips for Taking Out Student Loans.” Also, the information at www.cashcourse.org/osu can help. Go to the website, backed by the National Endowment for Financial Education, and click on “Paying for College.” There’s a lot of information there, but it’s presented in easily digestible pieces. Just start at the beginning, and you’ll learn a lot. Beyond that, encourage your son to apply for as many scholarships and grants as he can. This “free money” does not have to be repaid, and if he finds enough, he might be able to graduate debtfree. It takes effort, but the time and energy spent on applying for scholarships could pay off big and allow your son to start his post-college life in a much more comfortable financial position. State Education Commissioner John King Jr. on Oct. 1 appointed a Board of Canvass and designated a place of canvass for the Oct. 18 merger vote involving the Herkimer, Ilion and Mohawk school districts. King also released a notice of special meeting, which sets the merger vote for noon to 8 p.m. on Thursday, Oct. 18, at the Herkimer, Ilion and Mohawk school districts. Herkimer-Fulton-Hamil-
ton-Otsego BOCES District Superintendent Mark Vivacqua has been designated as in charge of the operation of the election. Polling will be conducted using electronic voting machines, and absentee ballots are available at the central office of each school district. The 27-member Board of Canvass is comprised of nine residents from each school district. A complete list of the board
members can be found online at www.herkimerboces.org. The Board of Canvass will act as a board of elections at the central voting site at the Ilion Central School District. For the voting site at the Herkimer Central School District, the Herkimer Board of Education will act as the board of elections, and for the voting site at the Mohawk Central School District, the Mohawk
Board of Education will perform the duties of a board of elections. These boards of elections will inspect the voting machines and poll books before the voting begins and supervise the conduct of the voting — including acceptance of challenges at each voting site. After the polls are closed at each site, the chairpersons of the boards of elections at Herkimer and Mohawk
Scouts do project with Folts Adult Services It may have been Columbus Day and school was not in session, but
the Ilion Cub Scout Troop #9 was very busy working with the registrants and
staff at Folts Homes Adult Day Health Services (ADHS) in Herkimer.
The Ilion Cub Scout Troop #9 did a special project with the Folts Homes Adult Day Health Services registrants in Herkimer on Columbus Day.
Their community service project for the day was to be creative and have fun working together to build hanging bird feeders and birdhouses out of wood. Using precut wood pieces, the group learned the steps needed to assemble them, and how to carefully hammer in nails and add hinges to the lid. Painting the houses will be the final personal touch, and everyone is looking forward to enticing a variety of birds to their backyards. will deliver the sealed voting machine results and sealed poll books to the Board of Canvass at the central voting site in Ilion. The Board of Canvass will then canvass the vote on Proposition No. 1, which is the vote on whether the three schools should merge. The results for each district will be canvassed separately, including absentee ballots. If Proposition No. 1 is approved by each district, the machine results from Propositions No. 2 and 3 from each district will be intermingled and counted in aggregate, including
absentee ballots. Propositions No. 2 and 3 would only go into effect if Proposition No. 1 is approved. Proposition No. 2 asks voters to decide whether the new school district would have five, seven or nine Board of Education members. Proposition No. 3 asks voters to decide whether the Board of Education members’ terms would be for three, four or five years. After the results for the propositions are determined, the Board of Canvass will certify the results to the state education commissioner.

Share your childhood memories with your kids while you enjoy these old-fashioned apple activities updated with a twist. Apple taste-testing Have your family taste-test several varieties of apples, including specialties from your area. First, sort them by color and name, such as Granny Smith, Red Delicious, McIntosh, etc. Help your children pronounce and identify them correctly. Which are sweetest, tartest and juiciest? Which would taste yummy dipped in a caramel sauce or baked in a pie? Edible apple art At mealtime, eat your apple art. For each serving, make an edible apple bowl by cutting the top 1/4 off an apple and scooping out the fruit and core with a grapefruit-style knife. Check Engine Light The check engine light comes on when there is a problem affecting the vehicle’s exhaust emissions. If the light comes on and stays on, make an appointment with an auto repair shop to have the problem checked in the near future. However, if the check engine light begins flashing repeatedly, the catalytic converter is over-heating. Should this occur, drive the vehicle to a repair shop immediately for further diagnosis. Disregarding a flashing check engine light could start a fire, destroy the catalytic converter and result in necessary repairs that could easily exceed $1,000.
