My annual goose watch is nearly over. Last Saturday one of our fellow Hello Again readers ran out of Stewart’s as I was backing away, pointing and yelling, “There go your geese.” Sure enough, a sky full of geese traveling east along the south side of our valley. Hundreds, if not thousands of geese in several V formations were up there enjoying our valley. Turkeys don’t fly in a gaggle formation so I guess my next sky watch will be for Old Saint Nick and his reindeer. We can be sure Rudolph with his red nose will be up there in the lead if he’s not too old. In my mind’s ear I can still hear Gene Autry, the famous singing movie cowboy, singing “Rudolph the red nosed reindeer, had a very shiny nose.” I imagine wise old Santa already knows to stay away from the airspace over the thruway. With all of the trips he has to make, the thruway would put Christmas gift giving out of business if the thruway authorities considered Santa’s sleigh as a truck. Maybe Santa with his flying sled will fall under a federal government outreach program and will borrow money from China to support Rudolph and his friends. See — we never have to lose hope. If we could gather around the old chunk stove at Charlie Hearn’s general store one more time, what tales we could spin. Our so-called modern way of life has changed so much our chatter about the good old days would sound like a barrel of blarney fresh from the old country. Pat and Mike would have a field day in that group. Herkimer County Arts and Crafts Fair by Katie Ranno On Nov. 10-11, Herkimer County Community College hosted the 36th annual Herkimer County Arts and Crafts Fair. This year, the fair showcased over 125 vendors with over 3,000 people coming through the doors during the weekend long event. The fair was filled with

whole frozen turkey can be stored in your freezer for up to 12 months. • Select the size of turkey based on number of servings needed. There is no appreciable difference between female (hen) and male (Tom) turkeys in tenderness, white/dark meat ratio or other eating qualities. Hens typically weigh between 14 to 16 pounds and Toms 15 pounds on up, so choose the size which best fits the number of dinner guests you expect. • Consider alternative turkey cuts if you are having a small gathering for the holiday. Other
turkey products that are readily available include a turkey breast, tenderloins, cutlets, drumsticks or thighs. Or ask your butcher to cut a whole fresh bird in two halves, roast one half and freeze the other half to use later. Frozen Turkey: • Purchase during special value sales and store the bird in the freezer until the thawing time begins. • Store at 0 degrees F or below. • Thaw under refrigeration, in cold water, or in the microwave: Refrigeration: Allow approximately 24 hours per five pounds to thaw in the
refrigerator. Cold Water: Allow approximately 30 minutes per pound to thaw in cold water; change water every 30 minutes. Do not use warm or hot water. Microwave: Follow the manufacturer’s directions and begin to roast the turkey immediately following the microwave process. Fresh Turkey: • Store at 26 F and above. • Purchase for convenience because thawing is not required. Cost may be slightly higher due to special handling required by the store. • Order in advance to
assure availability. • Place fresh raw poultry in a refrigerator that maintains 40 F and use it within the time frame on the package label, or freeze at 0 F. Hard-Chilled Turkey:
• Store at temperatures between 0 F and 26 F. Treat this bird like a fresh turkey; it has a shorter shelf life than a frozen product. (c) 2012 King Features Synd., Inc.
Talking turkey • In the U.S., an estimated 46 million turkeys were eaten at Thanksgiving, 22 million at Christmas and 19 million at Easter. • The average weight of turkeys purchased for Thanksgiving is 16 pounds. • When Neil Armstrong and Edwin Aldrin sat down to eat the first meal on the moon, their foil food packets contained roasted turkey with all of the trimmings. • It’s estimated that turkeys have 3,500 feathers at maturity. The costume that Big Bird wears on “Sesame Street” is rumored to be made of turkey feathers. • Wild turkeys can fly for short distances up to 55 mph and can run 20 mph sustained. Domesticated turkeys cannot fly. • President Andrew Jackson ranked turkey hash No. 1 among his favorite foods. • A turkey typically has about 70 percent white meat and 30 percent dark meat. • White meat is generally preferred in the United States, while other countries choose the dark meat. • Only tom turkeys gobble; hen turkeys make a clicking noise. • A turkey can drown if it looks up when it rains. Whether you buy a fresh or frozen turkey, proper cooking and handling of the bird will ensure a delicious holiday meal. Here are some tips from the National Turkey Federation: • Purchase one pound of turkey per person to be served. This formula allows for the holiday meal plus a little left over for the prized turkey sandwich. • Check that the packaging is intact, and avoid purchasing a bird with packaging that has rips or tears. • Save on supermarket specials by purchasing more than one turkey. Seventy-seven percent of families lack home fire escape plan Every day at least one child dies in a home fire. In that same day, 293 children suffer from a non-fatal unintentional injury caused by a fire or burn. In a nationwide effort to educate parents about the importance of fire safety Safe Kids and the United States Fire Administration are teaming up to ask every family to create a home fire escape plan and to practice it with the entire family. According to a recent NFPA study, 77 percent of American households have not developed and practiced a plan to ensure they could escape quickly and safely during a home fire. Home fires account for nearly 90 percent of all fire-related fatalities, and young children are at a particularly high risk because they don’t perceive danger as readily and can lack the ability to escape a life-threatening fire situation. “Fire can spread rapidly through a home, leaving a family as little as two minutes to escape safely once the alarm sounds,” said Rich McCaffery, Community Educator at Bassett Medical Center and Safe Kids of Otsego County. “Along with a properly installed smoke alarm, parents should plan several escape routes out of their home and then designate a safe place to meet. Then practice with your kids so they know exactly what to do.” Safe Kids and the United States Fire Administration are encouraging everyone to create and practice an at-home fire escape plan using the Safe Kids downloadable worksheet. The worksheet provides a diagram to help children and parents work together to create and practice their own fire escape plan. In addition to plan, parents are encouraged to test all smoke alarms frequently, replace batteries at least once a year and install new alarms every 10 years. “Working smoke alarms reduce the chances of dying in a fire by nearly half,” said [Coordinator], Safe Kids [Coalition] Coordinator. “We recommend that all parents and caregivers make sure they have a working smoke alarm on every level of the home, outside every sleeping area and in each bedroom. Installing these important safety devices could save the life of a loved one in case of an emergency.” Safe Kids Worldwide and the United States Fire Administration also want to remind families that fires are preventable and we must join together to help reduce the number of home fires, and the resulting deaths and injuries. “We rely on the fire service to fight fires once they occur; however, the prevention of fire is up to all of us,” said McCaffery.“Fire is everyone’s fight.” Additional tips for planning and practicing how to escape from a home fire include: • Make sure all windows and screens can be opened quickly. • Security bars should have a quick release device so you can open windows and doors in an emergency.
• For upstairs windows, have an escape ladder that fits your windows. Make sure your children know that the escape ladder is for emergencies only and is not a toy. • Practice feeling the door, doorknob, and cracks around the door with the back of your hand to see if it is too hot. Help your children practice this step. • Teach children to “get low and go” if there is smoke when they are leaving the home. • Choose a safe place to meet in front of your home where you can be seen from the street. • If you cannot safely escape your home or apartment, stuff the cracks around the door and air vents with duct tape, towels or clothing and call 911. For more information about fire safety for children and families, to receive a fire alarm, as well as helpful tips call 607-547-4812 or 607-547-5256 or visit www.safekids.org.
