Chow Line: Boost nutrients, cut fat in recipes I’m looking for easy ways to make some of my recipes and meals healthier. Any ideas? This is a great way to start the new year, and yes, there are plenty of ideas to increase nutrients and reduce fat and calories in the foods you prepare at home. Below are some favorites, primarily from Ohio State University Extension (see “Modifying a Recipe to be Healthier” at http://ohioline.osu.edu and eXten-

sion (see “Recipe Substitutions” at www.extension.org To reduce fat: Use evaporated skim milk instead of cream. Use 1/4 cup egg substitute or two egg whites in place of a whole egg. In quick breads, muffins, brownies or cakes, substitute half or all of the oil, butter or other shortening with unsweetened applesauce, mashed bananas or fruit puree. Note: Mak-

ing this substitution will increase carbohydrates in the end product — something to be aware of if you have diabetes. Use low-fat or nonfat yogurt in place of sour cream. Use low-fat cottage cheese pureed until smooth or low-fat cream cheese in place of full-fat cream cheese. Try lower-fat or nonfat versions of a variety of foods, especially milk, cheese, cream cheese,

mayonnaise, salad dressing and margarine. Use an air popper for popcorn. To increase fiber: Replace half the allpurpose flour in baked goods with whole-wheat flour. Add oats or finely ground fiber-rich nonsweetened cereal to replace some or all of the bread crumbs in a recipe, or to the crust or batter when making desserts.

Add beans or barley to soups, stews and casseroles. Add sauteed vegetables — cherry tomatoes, onions, spinach or zucchini, for example — to scrambled eggs. Don’t peel apples, cucumbers, zucchini or potatoes before eating them or using them in recipes. Choose high-fiber alternatives for cereal, bread and pasta — look at the Nutrition Facts labels. To increase other nutrients: Add cooked and mashed cauliflower to mashed potatoes, or add cooked chopped cauliflower to macaroni and cheese. Add chopped spinach or zucchini to pasta

sauce, soups and casseroles. For salads, choose romaine, endive or other dark-green leafy lettuce instead of iceberg lettuce, and include baby spinach leaves. Increase calcium by adding nonfat milk or dry milk to a casserole’s cream sauce or to cream soups. Increase antioxidants by sprinkling hot sauce on foods. The capsaicin in it shows promise in anti-cancer studies, though it may take quite a bit to have a discernible effect. Here are BBB’s Top Ten Scams of 2012: Top Overpayment/Fake Check Scam: Car Ads The online ad says something like “Get Paid Just for Driving Around” - a prominent company is offering $400+ per week if you’ll drive around with their logo all over your car. They send a check to you, which you are supposed to deposit in your account and then wire part of the payment to the graphic designer who will customize the ad for your vehicle. A week later, the check bounces, the graphic designer is nowhere to be found, and you are out the money you wired. Top Emergency Scam: Grandparents Scam The “Grandparents Scam” has been around a while, but it’s still so prevalent we need to mention it again: grandchild/niece/nephew/frie nd is traveling abroad and calls/texts/emails to say he or she has been mugged/arrested/hurt

and needs money right away (“.and please don’t tell mom and dad!”). Easy rule of thumb - before you wire money in an emergency, check with the supposed victim or their family members to make sure they really are traveling. Odds are they are safe at home. Top Employment Scam: Mystery Shopping If you love to shop, working as a secret shopper may sound like an ideal way to supplement your income. But scammers have figured that out, too, and many job offers are nothing more than a variation on the Overpayment/Fake Check Scam (above). The Mystery Shopping Providers Association says it’s not the practice of their members to prepay shoppers, but if you have your heart set on this type of job, you can find a legitimate gig through their website at www.mysteryshop.org Top Advance Fee/ Prepayment Scam: Nonexistent Loans Most of the scams advertise online and promise things like no credit check or easy repayment terms. Then the hook: you have to make the first payment upfront, you have to buy an “insurance

policy,” or there is some other kind of fee that you have to pay first to “secure” the loan. This year, we heard a new, aggressive twist on loan scams: consumers who were threatened with lawsuits and law enforcement action if they didn’t “pay back” loans they said they had never even taken out in the first place. Top Phishing Scam: President Obama Will Pay Your Utility Bills At the peak of summer with utility costs soaring, consumers got emails, letters and even door-todoor solicitations about a “new government program” to pay your utility bills. Victims “registered” with an official-looking website and provided everything scammers needed for identity theft purposes, including bank account information. Top Sweepstakes/Lottery Scam: Jamaican Phone Lottery In this one, the calls come from Jamaica (area code 876) but the person claims to represent BBB (or FBI, or other trusted group). Great news: you’ve won a terrific prize (typical haul: $2 million and Mercedes Benz) but you have to pay a fee in order to collect your winnings. Best just to hang

up and then file a phone fraud report with the appropriate government agency (see below). Top Identity Theft Scam: Fake Facebook Tweets You get a Direct Message from a friend on Twitter with something about a video of you on Facebook. In a panic, you click on the link to see what the embarrassing video could possibly be, and you get an error message that says you need to update Flash or other video player. But the file isn’t a new version of Flash; it’s a virus or malware that can steal confidential information from your computer or smart phone. Twitter recommends reporting such spam, resetting your password and revoking connections to third-party applications. Top Home Improvement Scam: Sandy “Storm Chasers” BBB spends a lot of time investigating and reporting on home improvement scams, but this year we saw an unusual amount of “storm chaser” activity following Super Storm Sandy. Hello Again January 16, 2013 With the New Year already a few days old, I couldn’t help but wonder what will the future bring? Our president seems to be winning the war about collecting more taxes, especially from you and me, while hitting the super rich with a big hike. He stated he will not cut back on spending, in fact, wants to spend more. Now I know he is a pretty clever politician, but how can we get back on our feet by borrowing money so that we can give away more than we have? Do we have a president or a magician? I often wonder what it will be like in Heaven — while I believe that it will be wonderful, I have to admit I’m in no hurry to find out. Besides, my wife promised she is going to bake more apple pies. I believe J.F. Kennedy was the last president to wear a tall beaver stovepipe hat when he was sworn in. Is it possible that he was the last, hoping to pull a rabbit out of the tall hat? This is a tale about a lovely, yet famous, White House bathtub. In a 1917 column, the famous humorist and writer H.L. Mencken wrote that Millard Fillmore, a native of Moravia, while President of the United States, had the first bathtub installed in the White House. This was a hoax. However, the natives of Moravia assumed the bathtub story was true and introduced wheeled bathtub races as part of Fillmore Days in his birthplace village. The President Fillmore bathtub blarney was believed by the good residents of Moravia and to this day wheeled bathtub races are held each year even though years later, Mencken fessed up to his line of blarney. Now more than 160 years after Millard Fillmore’s stay in the White House, a new line of White House bathroom blarney may be given birth. It would be easy to columnize our president; President Barack Obama, suggesting he almost never took a bath in the White House. The question properly exaggerated could be, “How could he? He is almost never in Washington long enough to need one.” I believe he is now in Hawaii. Who says that blarney is wrong? It made both Millard Fillmore famous and loved. It also added greatly to H.L. Mencken fame and Moravia, New York, is now in the history books. I believe H.L. Mencken’s column did not appear until 47 years after the death of President Millard Fillmore. Now I ask you, is that an example of freedom of the press at its meaningful best? Mencken came up with real bathtub blarney and the folks of Moravia, rather than taking a bathtub bath, put wheels on it and go for a bathtub ride. The old saying, “Experience is the best teacher!” — does this apply to slow learners? Since the days of President Franklin Delano Roosevelt, nearly every president has beat his predecessor by spending more right up to and including Mr. Obama. Now here is the catch. The United States of America was quite possibly the most successful industrialized nation in the world. Our factories manufactured clothing, shoes, machinery, household appliances, autos, trucks, airplanes — you name it — and sold, not only to our own citizens but to consumers throughout the world. Now because it costs so much to manufacture here in this country due to taxes and constantly growing wages, consumers here in this country and the remainder of the world can no longer afford American-made anything. We raise wages, then have to charge more over and over again each year. We have a new policy — expand the number of government employees. We, the

free-enterprise workers, are taxed for, and when those taxes do not cover, borrow money from China. I realize we — you and me — are just down-to-earth, hard-working, tax-paying, American citizens and if we swallow the idea of constantly growing our government and raising wages, are we not also slow learners? Last year our government officials and financial advisers suggested we should learn to tighten our belts, which was a good thing, because what’s happening now is enough to scare our pants off. The best that I can recall, it was during the spring or summer of 1947 or possibly 1946, when I overheard my mother and father discussing the possibility of leaving Middlefield and moving to Cooperstown. Cooperstown was about seven miles away on the other side of Murphy Hill. That hill was the cause of the move discussion. During the winter of 1947, I believe in January, Dad was driving home during a snow blizzard from his place of employment at Bassett Hospital in Cooperstown, and plowed into a huge snow bank near the top of Murphy Hill. Heavy snow was falling and the wind made visibility nearly impossible. The 1937 Chevy he was driving was hopelessly buried with no chance of being dug out. After trying for over one half hour to dig the snow away from the car, he knew it was useless. He started walking through the waist-high drifts down the Cooperstown side of the hill. After a dreadful near one hour, half-crawling and digging his way through the drifts, he arrived at the Holiday farm which was part way down the hill. The Holiday’s had grown accustomed to blizzard weather on Murphy Hill, invited Dad in to their home and gave him a hot dinner and a warm bed to sleep in. Holiday’s had a telephone and were able to contact Charlie Hearn or Lee Roberts at the Hearn Store and asked them to contact my mother to say that Dad was safe in their home and would surely make it back home to Middlefield the next day. I believe it was Lynn Wilson, the town of Middlefield Road Supervisor, driving their huge Walter’s snow fighter snow plow, who found Dad’s car. With his wingman, he shoveled the snow away from Dad’s car and turned it around and drove it back down the hill to Holiday’s. Several times Wilson said they totally expected to find Dad’s body buried in the snow and hoped the huge Big Walter’s snowplow had not already covered him. Dad spent nearly a week homebound suffering from hypothermia. Winter-blizzard stories like this one were common. The weather conditions have changed in my lifetime. Though we still have some snow and below-freezing temperatures, seldom do we learn of a snow created disaster except for auto pile-ups. When I was a boy, our dairy farm neighbors, on a regular basis had to deliver cans of milk down to the main plowed road in the village to meet the milk truck with a team of large work horses hitched to a bobsled with runners, not wheels. The following is proof that weather is not the only thing that changes. A shorthaired girl said to a long-haired boy on their second car date, “Of course Daddy doesn’t mind our being alone together. He thinks you are a girl.” According to the Holy Bible, there is something that never changes. Read John 3 verse 16. I quote, “For God so loved the world that he gave his only begotten son.” Turn to Matthew, Mark, Luke, and then John and read all of John 3:16 and the following verses. I’m sure they will give you something to study. Remember to speak well of and to wave or say hello to your neighbors. God placed all of us near each other for a reason. Happy New Year.
