Vernal equinox
by Ann-Marie Imbornoni and Elissa Haney March 20, 2012, was a date that most of us recognize as symbolic of changing seasons. As we welcome spring, people south of the equator are actually gearing up for the cooler temperatures of autumn. What Happens at the Equinox? Far from being an arbitrary indicator of the changing seasons, March 20 (March 21 in some years) is significant for astronomical reasons. On March 20, 2012, at precisely 1:14 a.m. Eastern Daylight Time, the sun crossed directly over the Earth’s equator. This moment is known as the vernal equinox in the Northern Hemisphere. For the Southern Hemisphere, this is the moment of the autumnal equinox. Equinox Means “Equal Night” Translated literally, equinox means “equal night.” Because the sun is positioned above the equator, day and night are about equal in length all over the world during the equinoxes. A second equinox occurs each year on Sept. 22 or 23; in 2012, it will be on Sept. 22 at 10:49 a.m. EDT. This date will mark the autumnal equinox in the Northern Hemisphere and the vernal equinox in the Southern (vernal denotes “spring”). Hello Again, During the past two weeks we have chatted about words and how they are understood, used, misused, and misunderstood. The following highlights our chat. “Are you the defendant in the case?” the judge asked. “No your Honor,” he said. “I got a lawyer to do my defending. I’m the one who stole the chickens.” A man charged with murder bribed a friend on the jury to hold out for a verdict of manslaughter. The jury was out for a long period of time, but at last brought in a manslaughter verdict. Upon visiting the prisoner the following week, the friend was thanked. “You must have had a tough time getting them to vote for manslaughter,” the prisoner said. “Tough is the word,” replied the friend. “The other 11 wanted to acquit you.” Who would have ever thunk it, about 25 percent of the year 2012 has already gone by. Fourteen and fifteen year old teenagers wish it would go even faster. When they finally reach that mature age of sixteen, they can try for their driver’s license and if they fail, it will be the brownie’s fault. He or she must be blind in one eye or can’t see out of the other. After the license is issued, Dad’s car becomes my car, or our car, and Mom gets caught up in her prayer life. When they reach 17, they can’t wait until they will be considered adults and leave home. At about 22-23 they ask Mom and Dad if their old room is still empty and can they come home. Can you remember the first time you drove the family car? Back in the hills, during the Second World War, new tractors were not available for farmers or were cost prohibitive. Several of the area farmers removed the passenger cabins from an old car, shortened the wheelbase, converting these cars into doodle-bug tractors. It was with those doodle-bugs we learned to drive, often at the ripe age of 8 to 10 years old. I helped an adult friend named “Dib” convert an old star sedan into a doodle-bug. Today that old star sedan would be a rare collectors item worth thousands.

Dad drove a brown colored model A Ford and traded that Model A for a 1937 Chevrolet sedan at the Shipway Chevy Garage in Cherry Valley. Dad and Mom were so proud of that Chevy. They had our entire family post next to the car wearing our Sunday best. Mom with her flower-trimmed, wide-brimmed hat. Brother Wesley and I each holding a pet cat with Dad in his church suit. Our kid sister Ruth hadn’t made the scene yet. Those snapshots were treasured with copies sent to the family in Ireland. Our grandfather, Tom Morton in Ireland, had an American made Model T Ford. I was searching for a word in the dictionary when I ran across the word “poke” which we used quite often. If you were in a fistfight, you would poke the other guy in the eye hoping to create a black eye. And if you got poked in the eye causing a black eye, you wore it with pride. It was your badge of courage, especially if the other guy was older and bigger. Sometimes we would poke a little fun at someone. If a farmer was going to drive his team up to Jerry Perr’s Blacksmith Shop in Roseboom. His wife would send along a poke of food for the trip. At lunchtime in school during the war years we were often served “poke and beans” for lunch. Naturally every wood or coal stove had a poker, which you used to poke the burning wood or coal into flame. Quite often here in the park, we hear someone complain about the French speaking Canadians. “Why don’t they learn to speak English? They are here in America?” I was born here and lived in the U.S. for 77 years and I still have trouble with our English language. How about a little bit of blarney? Two valley businessmen were talking. “Is your advertising in the Original Valley Pennysaver getting any results?” “I’ll say it is,” moaned the second. “Last week we advertised for a night watchman and the next night we were robbed.” From what I can understand, our President wants to give millions of U.S. citizens a permanent government job without passing a civil service examination, he said. Their new position would be called “taxpayer.” Grow the government — grow taxes. Say hello to your neighbors; say I love you to your family. Talk your thoughts over with the Lord in prayer. Life will be more fun

Whatchmacallits There is a certain snack cracker that claims in its TV commercials that it will not use any cheese that is not “ready.” But in the real world, how do cheese makers know when a large wheel of cheese is done aging? The best way to tell if a cheese is “ready” is to taste it. But, to ripen properly, a cheese wheel needs to remain whole. A shallow cut would not be helpful, because most cheeses age from the outside in and ripen sooner near the surface. It would be a awful waste to cut an entire slice out of a wheel just to see how
the ripening is coming along. There is, however, a handy tool called a “cheese trier” that can be used to figure out what’s going on beneath the rind without taking out a
slice. The antique model shown here is owned by Willis “Skip” Barshied Jr. The instrument is inserted into the cheese and gives a good cross-section sample of the wheel.
After a small amount of the sample is tested, the remainder of the plug is reinserted. A small void is left in the wheel, but the testing does not significantly disrupt the aging process.

Rosie Lerner, Purdue Extension Consumer Horticultur-ist Cool-season crops such as lettuce, potatoes, peas, cauliflower and onions actually prefer the cool, moist conditions of spring. With the extended mild winter, coupled with unseasonably warm conditions just at winter’s end, our cool-season crops may be in fast-forward mode! But, especially given the mild conditions, gardeners need to remind themselves to allow soil to dry sufficiently before working to avoid soil compaction. Working wet soil tends to form hard clods that last all season. To quickly “test” the soil for workability, squeeze a hand full. If the soil crumbles easily between your fingers, it is dry enough to work. If the soil forms a muddy ball, then it’s best to wait until the soil dries a bit more. ‘A Festival of Organs’ showcases master organists by Elizabeth A. Tomlin What many thought would be a “typical” organ recital at Canajoharie’s St. Peter - St. Paul’s former Catholic Church, turned out to be a showcase of master organists. “I have never seen anyone play like that!” Fort Plain resident Sadie Dillenbeck declared. “It was just unbelievable!” Dillenbeck was one of the approximately 100 people who attended the ‘Festival of Organs’ who gave a standing ovation at the end of the hourlong performance. Cameras were set up so that the audience could view enlarged images, projected on the wall of the sanctuary, of the organist’s feet on the pedals and their hands on the keyboards, thus gaining an appreciation of the coordination of the hands and feet
required to play the complicated musical pieces. The audience was also able to better perceive the amount of energy and expertise that went into playing the selections. St. Peter - St. Paul’s new owner — and master organist — Eric Stroud and wife Jean, opened the church to the public for the event. “The whole community has been very welcoming to us,” Stroud said. “We have been looking forward to sharing this event with them!” Stroud and his wife, who maintain their residence in Madison, NJ, area, purchased the 150 year-old church from the Albany Roman Catholic Diocese late in 2010, mostly because of the 1977 Cary Opus 2-10 pipe organ, which boasts over 500 pipes. During the recital, Stroud presented an

He also showed photos of some of the largest organs in the world. The Festival of Organs included local organists Carol Cechnicki, who currently plays piano in the Second Time Around Band, and is the regular organist for Our Lady of Hope in Fort Plain and the Reformed Church of Canajoharie, and Norma Bowley. Bowley currently plays for Faith, Hope & Love Christian Fellowship of Palatine Bridge and the Good Shepherd Episcopal Church in Canajoharie, as well in several schools and other organizations. Stroud, who says that he and Jean love the Mohawk Valley and especially the Canajoharie area, is planning a 150th celebration on Friday, June 29, at the church to commemorate the “Feast of Saints Peter and Paul”, and he is “seeking items for a time capsule.” On Wednesday, July 4, patriotic music will be played in a “to be announced” event at the church.

Happy National Mom and Pop Business Owners Day to all husband-wife teams and family owned businesses out there. March 29th marks the annual observance of National Mom and Pop Business Owners Day to recognize family owned and operated businesses across the country. The observance of a National Mom and Pop Business Owners Day was the brainchild of a Florida man named Rick Segel, in honor of a women’s hat shop called Ruth’s that his parents opened on March 29, 1939, in Everett, Massachusetts. The business moved to Medford, Massachusetts and grew into a women’s specialty clothing store of 10,000 square feet and $2 million dollars in sales before it closed in 1997. The purpose of this holiday, according to the Holiday Insights Web site: “National Mom and Pop Business Owners Day celebrates small business owners. These individuals spend countless hours nurturing and growing their young enterprises. The workload demands, and lack of a hired staff, often translates into long and late hours, and many missed family and personal events. But, all in all, they love what they do. The Athens, Georgia News Courier even published a special section devoted to small business and the National Mom and Pop Business Owners Day. And in Roane County, West Virginia, a mom and pop business received special recognition in their local newspaper article for preserving a local landmark business in “Couple revives Mom-and-Pop store - Roane County store offers a little bit of everything:” “The Walton Thriftway is an old-time country general store. Morgan sells groceries - meat, dairy, vegetables, and so on. You can also buy hand-carved Amish furniture and wood, pellet and gas stoves. Want to rent a movie? He’s got those. In the back, a deli serves everything from sliced meats and cheeses to fast-food style hamburgers, tacos, pizzas, and ice cream. He provides tables and chairs for instore dining and there’s a self-serve “coffee bar” at the front. In a connected building off the back, a complete
hardware store offers a variety of tools and equipment, paint, plumbing and electrical items as well as a full line of livestock feeds along with hay and propane. If he doesn’t have it, he’ll order it. In the spring, you can get a bunny. “Upstairs, you’ll find a large antique and consignment store and a quilt shop, Sew Many Things, run by Morgan’s wife, Elonda. The quilt shop offers quilt kits, classes, and fabric supplies. “Business is booming in the store, located in a town small enough to count its population in the hundreds. “We’re not feeling the recession,” he said. “People don’t want to spend the gas to drive to the big stores. Sweet ways to celebrate the season (NAPSA) — A delightful way for your family to greet the spring can be by getting together and baking up tasty treats that signify renewal, such as Sweet Chicks and Bird’s Nest Coffee Cake:
Sweet Chicks Makes 18 chicks 5 to 5 1/2 cups all-purpose flour 1/2 cup sugar 2 envelopes Fleischmann’s RapidRise Yeast 1 tablespoon freshly grated lemon peel 1 teaspoon salt 3/4 cup evaporated milk 1/2 cup water 1/3 cup butter or margarine 2 large eggs Raisins
Powdered Sugar Glaze: 1 1/4 cups powdered sugar 2 to 3 tablespoons milk 2 to 3 drops yellow or red food coloring 1/2 teaspoon vanilla extract Combine 2 cups flour, sugar, undissolved yeast, lemon peel and salt in large mixing bowl. Heat milk, water and butter till very warm (120° to 130°F). Gradually add to flour mixture. Beat 2 minutes at medium speed of mixer, scraping bowl occasionally. Add eggs and 1 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface till smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes. Divide dough into 18 equal pieces; roll each into 10-inch rope. Tie each into a knot, leaving one end slightly shorter. Place knots, short ends up, 2 inches apart on greased baking sheets. Pinch short end of knot to form head and pointed beak. Insert 2 raisins for eyes. Press long end of knot down; with sharp knife, make 4 to 5 cuts to form tail. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes to 1 hour. Bake at 375°F 12 to 15 minutes or till done. Cover heads with small pieces of foil if they become too brown. Remove from sheet to wire rack. Brush with Powdered Sugar Glaze: Combine glaze ingredients in small bowl; stir until smooth.

Loosely twist ropes together. Place twisted rope on large greased baking sheet; shape into circle and pinch ends together to seal. Place 7 eggs, evenly spaced, on dough, pressing between ropes in twist. Cover; let rise in warm, draft-free place until doubled in size, about 20 to 40 minutes. Beat remaining egg with 1 tablespoon water; brush over dough (not on eggs). Bake at 350°F for 30 to 35 minutes or until done. Remove from sheet; let cool on wire rack. Brush eggs with food coloring. Cabbage has the right stuff Nutrition experts recommend that you eat cabbage or other cruciferous vegetables — meaning “cross-bearing” from the shape of their flowers, whose four petals resemble a cross — as part of a healthy diet. They suggest you eat at least 2 cups, 3 to 4 times per week. Cruciferous vegetables include cauliflower, cress, bok choy, broccoli and similar green leaf vegetables. I love cruciferous vegetables, but I’ve found cabbage to be the most versatile of the group. Cabbage is a good source of vitamins C and A. When choosing cabbage heads, select those that are firm and dense with shiny, crisp, colorful leaves. Examine the leaves to make sure that they’re free of cracks, bruises and blemishes. Severe damage to the outer leaves means there is probably worm damage or decay in the inner core as well. We enjoy stuffing cabbage leaves with a variety of interesting ingredients. This recipe for Cabbage and Potato Cups makes a great weekday side dish, or a unique appetizer when topped with thin slices of crispy Prosciutto or Parma ham, or bacon crumbles. Remember, eat more cabbage (or other cruciferous vegetables) and improve your health!
Cabbage and potato cups 1 medium onion, diced 2 tablespoons olive or vegetable oil, plus more for drizzling 1 (3 pound) head leafy green cabbage; discolored, damaged or tough outer leaves discarded 1 teaspoon minced garlic
1 1/2 teaspoons salt 1 1/2 teaspoons black pepper 2/3 cup chicken broth or water 2 pounds large boiling potatoes 1 cup buttermilk, shaken 1 cup, coarsely grated, extra-sharp white Cheddar or Pepper Jack cheese 1 tablespoon drained, bottled horseradish 8 tablespoons unsalted butter 3/4 cup Panko or fresh bread crumbs 1. Cook onion in oil in a large, heavy skillet over medium heat, stirring occasionally, until soft and golden, about 6 to 8 minutes. 2. Bring a 6- to 8-quart pot of salted water to a boil. Remove and discard the core of the cabbage and carefully lower the cabbage leaves into the boiling water using a slotted spoon. 3. Boil cabbage about 5 minutes, or until softened. Transfer the largest leaves (at least 6) to a bowl of ice water to stop cooking. Transfer remaining cabbage to a colander to drain. Transfer large leaves to paper towels to drain, then pat dry. 4. Using a nonstick muffin tin with 6 (1-cup) muffin cups, lightly spray each muffin cup or oil with 2 tablespoons of butter. Cut parchment or wax paper into 12 (10- by 2-inch) strips. Put 2 strips in a crisscross pattern in each cup to help with removing cabbage. (You will have a 2-inch overhang.) Line each cup with a large cabbage leaf. Coarsely chop enough remaining cabbage to measure 3 cups, then add to onion along with garlic, 1/2 teaspoon salt and pepper, and water, and cook over moderate heat, stirring occasionally, until cabbage is tender and browned, about 10 minutes.

5. Put oven rack in middle position and preheat oven to 350°F. 6. Peel raw potatoes and cut into 1-inch cubes, then cover with cold salted water by 1 inch in a 2- to 3-quart saucepan and bring to a boil. Cook potatoes until tender, about 15 minutes. Drain in a colander, then set potatoes in colander over saucepan to steam-dry, uncovered, 5 minutes. Using a large bowl and a slotted spoon or potato masher, mix the potatoes with the buttermilk, cheese, horseradish, remaining 6 tablespoons butter and remaining 1 teaspoon salt and pepper until combined well. 7. Fill each cabbage leaf with 2 to 3 tablespoons of mashed potato mixture. Then, place a layer of the sauteed cabbage mixture on the potatoes. Top with remaining potato mixture, and sprinkle evenly with breadcrumbs. Drizzle crumbs with olive oil. Fold edges of cabbage in toward filling (do not completely cover). At this point, you can cover and refrigerate the Cabbage and Potato Cups for 24 hours. Bring to room temperature (about 30 to 45 minutes) before baking. 8. Bake until heated through and edges of cabbage are well browned, 25 to 30 minutes. Transfer stuffed leaves to plates using wax or parchment overhangs. Makes 6 servings. SHORTCUT TIP: If you have at least 2 cups of leftover mashed potatoes, or leftover baked or micro-cooked potatoes, mix them with the rest of the stuffing ingredients to save time.
