As always, this most American of holidays will be marked by parades, fireworks and backyard barbecues across the country. • $232.3 million - The value of fireworks imported from China in 2011, representing the bulk of all U.S. fireworks imported ($223.4 million). U.S. exports of fireworks, by comparison, came to just $15.8 million in 2011 • Almost 1 in 3 - The chance that the hot dogs and pork sausages consumed on the Fourth of July originated in Iowa. The Hawkeye State was home to 19.7 million hogs and pigs on March 1, 2012. This estimate represents almost one-third of the nation's estimated total. • 7.2 billion pounds - Total production of cattle and calves in Texas in 2011. Chances are good that the beef hot dogs, steaks and burgers on your backyard grill came from the Lone Star State, which accounted for about one-sixth of the nation's total production. • 6 - Number of states in which the value of broiler chicken production was estimated at $1 billion or greater between December 2010 and November 2011. Sometimes the answer to a serious problem seems to be hidden when it actually is right under our noses. A friend of mine enjoyed quoting a saying he learned from his father; “Those in the position of authority seldom act—they re-act.” With this in mind, let’s chat about the recent reaction to the Oppenheim-Ephrata Central School proposed increase in the school budget. The budget was voted down twice by the local tax paying public as it would have caused an increase in school tax. In other words, the tax-paying public said “no.” Now hear this! School superintendent, Dan Russom, was quoted by a local newspaper as saying, “Fortunately we can justify other spending cuts and the contingent budget will not impact our academic progress.” Praise be! Do you actually say it is not cut in stone?--“You must spend more dollars than you have and raise taxes.” Now! How’s that for reaction? Just think what would happen if public schools with over-taxed landowners and hospitals with patients who cannot afford their services or insurance premiums actually stopped spending millions upon millions of dollars on new building expansions and unwanted and unneeded projects. Most appear to be in a contest to see which can spend the most, and who ends up paying? School taxpayers and medical patients. You ask, “What else can they do?” How about fix or repair the old buildings? It appears some churches suffer from the same ‘new, bigger’ church building malady. I find it amazing that Trinity University in Dublin, Ireland—one of the most elite institutions of higher education in the world—brag about some of their buildings which are hundreds of years old. Should we ask, “How can their elite students in that elite university receive a proper education in old buildings?” Maybe they just don’t understand. Is it time for taxpayers to say no and force school boards to react by finding ways to cut back and save? So is the answer to higher school taxes to vote ‘no?’ Should the school taxpayers band together and tell Albany, “Cut out your mandates. We have had enough. We want control of our schools back in our hands again, not in the state’s.”? Sunday afternoon a group from the St. Johnsville Marina and Campgrounds visited the Masonic Temple for a smorgasboard. While there I picked up some new chatter. Have you ever wondered about a bottomless pit? Well, I sat next to two bottomless pits. I thought they could or would run the lodge into the poor house. Talk about eating! I hesitate to publish their initials but locally they are known as the “Two Bobs.” Now—that was not all that I learned. I was told by a reputable merchant and member who just happened to be working in the kitchen, “They kept one of the best cakes, a carrot cake, hidden in the kitchen for the kitchen help.” I don’t know his correct name either but I heard someone call him Curly. My motorcycle helmet is off to the lodge for a great meal. (I had three pieces of cake including one piece of the carrot cake.) Isn’t this proof you can’t trust newspaper people? Remember last week I was sort of suggesting I was looking for a new career and decided to stick with “Hello Again” ? A memory of years ago kicked into gear, I might still change my mind.

At 77 years old, do you think it’s too late to go to medical school? It is obvious some medical doctors have it made. Years ago in the Mayro office building in Utica, a doctor had this sign on his office door: “Office hours daily from 1:00 p.m. – 2:00 p.m. except Mondays, Wednesdays, and Fridays. Closed Thursday.” I could handle that schedule. Work one hour each week. You would think that a doctor working only one hour each week could not earn a living. Two years ago I had a root canal procedure performed by a dentist. From sitting down in his chair and getting up, it took him actually 55 minutes and the charge was $2,095. So if he had only one patient each week for one hour, the dentist would earn $108,940 per year. Not bad you say. Irony? The Food Stamp Program, administered by the U.S. Department of Agriculture, is actually proud of the fact that it is distributing the greatest amount of free meals and food stamps ever. Meanwhile, the National Park Service, administered by the U.S. Department of the Interior, asks us to, “Please do not feed the animals.” Their stated reason for the policy is because the animals will grow dependent on handouts and will not learn to take care of themselves. In this bit of humor, can we learn about our school tax structure? What happens when we keep on feeding the school systems with more tax dollars? In the next few issues we will discuss plans for the Palatine Corridor. Remember, no one can stop our plans because no one has a plan to stop it. A burglar broke into the home of a modern abstract artist. The artist was on the ball and made a sketch for the police. Within a few hours, due to the abstract sketch, the police booked two male turkeys, a bald ape, two watermelons, and the next-door neighbor’s Case tractor. As my art professor in college said, “It’s all in the eye of the beholder.” This tale may be true, then maybe it’s not. You be the judge. It was said the chief of police in St. Johnsville pulled over the chief of police from Fort Plain for speeding through his village. Inspecting the speeder’s license, he said “You are supposed to be wearing glasses.” “But chief,” he replied, “I have contacts.” With that the St. Johnsville police chief grinned and said, “I don’t care who you know—you were speeding and you’re under arrest.” Key points to remember: ·You are important. · You can be great if you believe you can! ·Opportunity comes to those who seek it. ·Fear of failure is the greatest enemy of every opportunity. We already live in one of God’s Garden of Eden’s, right here in upstate New York. With his help— let’s plan a path for the future for ourselves and our children. Remember your neighbor is your closest friend. Say “Hi, neighbor!” Some of the best friends you will ever meet will be sitting in the seat next to you in church and the greatest friend you will ever have, the preacher will be talking about. Patriarch and patriot; Robert Dygert by Elizabeth A. Tomlin Eighty-four -year old, 11th generation, Robert Dygert of Nelliston, NY proudly displays one of his prized family heirlooms, an original 13-star American flag, for July 4th. Dygert’s family moved to the United States from Germany in 1723 and erected the foundation of the dairy farm where he was born and still lives, on land that was deeded to the Dygert family by the Queen of England. This is where the
Dygert Dairy of Distinction was established, and it continues to proudly stand overlooking the Mohawk Valley, as an operational bicentennial farm. Dygert continues to help with daily chores on the farm, which now belongs to 13th generation Robbie Dygert and his wife Shannon, along with their 3-month-old baby boy, Dylan Dygert. Dygert’s Dairy of Distinction milks about 75 head. “Grandpa is our senior advisor,” says Shannon.

Still wonderful people out there
by Nita Bell On June 12, our farmer group of Red Hatters were meeting for lunch at Gino’s Restaurant in Canajoharie. There were 11 of us ladies meeting to have lunch and fun. We paid no
attention but a nice couple came in and sat across from us. There was no conversation between them and us. They got up and left, and when we went to pay our fills the waitress told us that the couple who had left paid our
entire fill with taxes and a tip for the waitress. She was visibly shaken stating as long as she had been a waitress nothing like that had ever happened before. The waitress felt they may have been just passing through
Canajoharie. We were very happy of course but we have wondered how he picked us to do such a nice thing for, maybe some memories. We will never know as no one knew them, and we have no idea where they were from.

Whatchamacallits On cold winter nights in the 1800s, the gathering place for families was around the hearth. Without radio or television for entertainment, a family’s focus would be on the fireplace, and not for warmth alone. Without all of the distractions modern life has imposed on us, families spent a lot of time together sharing each other’s company. Spending “quality time” together was the rule, rather than the exception. There were also fewer choices when it came to an evening snack. Apples were popular because they could be stored for long periods of time without “going bad.” It was a natural fit that the hearth fire and apples should come together. The apple roaster shown
here, from Willis “Skip” Barshied’s collection of antiques, would be placed on the hearth stone to cook one apple at a time. As kitchen gadgets go, the apple roaster
lacks the panache of something like the small, electric device that can scramble an egg inside its shell. The apple roaster is a simpler device from a simpler time gone by.

St. Johnsville ‘Advantage After School Program’ awards students by Elizabeth A. Tomlin Seventy-five children from the St. Johnsville Central School ‘Advantage After School’ program received awards on June 15. “These are 75 amazing kids,” said program director Chanda Travis. “Each kid has impacted us.” Each child in the program, which accommodates children in the elementary school, received an award spanning areas of personal growth to impacting the group as a whole. Each child is recognized. “Their personalities are very distinctive and I could not pass up the opportunity to recognize that. Therefore, I plan an awards ceremony for our very last day of program. I award each student a certificate because every single one of them deserves to be applauded,” Travis stated. Travis has coordinated and directed the program for 3 years and is assisted by Samantha Carter, Caitlin Walker, Katie Rice and other volunteers. “The St. Johnsville Advantage after school pro-
gram creates an opportunity for me to impact the lives of 80 students, every year,” said Chanda Travis. “Every time one of my students smiles as me, I know that I have made a small impact on their lives,” Travis says the program provides a safe environment for children that otherwise might have to go home to an empty house after school. Family vacations are a tradition for millions of families across the globe. Such vacations have declined in number over the last several years, when many families were forced to cut expenses in the midst of a struggling economy. Though the economy has gradually begun to rebound, families with fresh memories are still reticent to commit to costly vacations. One of the more affordable and family-friendly vacation options is camping. Families get the chance to experience some of nature’s most idyllic settings at a fraction of the cost of expensive resort vacations. But before venturing out in the great outdoors, a family should consider the following tips to ensure their camping vacation is a swimming success. • Research the weather. Before choosing a campsite, get a firm grasp of what to expect from Mother Nature while you’re there. Research weather patterns and how much the
weather can vary during the time of year when you will be vacationing. Does the weather fluctuate significantly during the daytime and nighttime hours? Is rain likely or unlikely? Weather conditions will dictate which gear is necessary for the trip, and families might want to avoid campgrounds that are frequented by rain. Adults might be able to cope with a rainstorm or two, but such conditions may make everyone miserable. • Find an activityfriendly campground. When looking for a campground, look for one that boasts a lot of activities. Adults might enjoy the simple relaxation of camping, but kids will likely need more to do. Look for a campground that can offer activities the children will like, such as hiking, kayaking, rafting, or even mountain biking. • Determine who you are as campers. Not all campers enjoy the rustic life of camping. Some need to combine camp-
ing with the amenities of modern life, including running water and toilets that flush. Campers should be honest with themselves in regards to their needs in amenities when researching campgrounds. If you and your family will need a shower, consider renting an RV for the trip or choose a campground with accessible showers and restrooms. Veteran campers might scoff at such amenities, but families would likely prefer some combination of roughing it in the wild and modern day living. • Get the right gear. Entry to many campgrounds is free or nearly free. However, camping gear could cost money. The good thing about camping gear is it’s reusable. If this year’s camping trip is a success, then next year’s trip won’t cost nearly as much. Visit a local camping store and explain your situation, including what you hope to get out of the camping trip and where you’ll be heading. An associate
should be able to help you find the right gear for your trip, including a tent, lights, a water filter, cooking materials, and inflatable mattresses. The materials needed for a successful camping trip are many, but again these materials are reusable and can last a lifetime if families choose the right gear. • Stock up on the essentials. Once you have purchased the right gear, don’t forget to stock up on the other essentials. Particularly during the warmer months, campgrounds can be very hot and insects abound. Be sure to bring adequate amounts of sunscreen and bug spray and apply each liberally every day. Even if the sky is overcast, apply sunscreen to avoid painful sunburn. Other essentials include toilet paper (bring more than you expect to use), bottled water, plates and utensils, and garbage bags. Be sure to bring extra garbage bags to avoid littering in the campground.
• Don’t forget to have fun. Families should emphasize having fun when visiting the campground. Because camping is not a resort-style vacation, it’s up to Mom and Dad to entertain the kids. Bring along a guitar for a campfire sing-a-long, and pack

On July 4, 1776, the Continental Congress approved the Declaration of Independence, starting the colonies on the path to freedom. The next day, John Adams wrote to his wife, describing the time as “the most memorable epoch in the history of America” and saying he was “apt to believe that it will be celebrated by succeeding generations as the great anniversary festival. It ought to be commemorated as the day of deliverance .... It ought to be solemnized with pomp and parade, with shows, games, sports, guns, bells, bonfires, and illuminations, from one end of this continent to the other, from this time forward forever more.” Our founding father hit the mark. Indeed, 236 years later, we still celebrate our nation’s birthday with cookouts and music, parades and fireworks. We deck ourselves and our backyards with red, white and blue in tribute to our independence and as a show of our patriotism. As we enjoy the festivities with friends and family, we should also remember what our freedom costs, both to achieve and to sustain. Waste not your produce by Dr. Leonard Perry, Extension Professor, University of Vermont Research done in the past by the University of Arizona, in cooperation with the United States Department of Agriculture, found that on average families throw out up to a quarter of their fruits and vegetables due to spoilage. By knowing a few facts about proper storage, and following a few simple practices, you can minimize how much of your produce spoils before you eat or use it. This can save quite a bit of money. The Arizona study from 2002 found that the amount of produce that spoiled in an average home before it was eaten amounted to 470 pounds a year, about 14 percent of all food brought into the home, which amounted to throwing away about 600 dollars a year — a higher figure today adjusted for inflation. You
can lessen this loss greatly by purchasing or picking at the right stage, not storing certain fruits and vegetables together, storing them properly (not all like it cool), and using some before others. In regards to purchasing, there are a couple main points. Most stores have the produce as you enter, so you buy it before all else, lengthening the time it is not cool and moist. Instead, pick the produce last after you’ve chosen the nonperishable goods. Then get the produce home as soon as possible. Plan other errands before this shopping, or carry a cooler (especially if warm outside) in your vehicle if not going directly home. Also, pick or purchase at the right stage and in good condition. Apples or peaches without bruises, firm oranges, dark green spinach, bananas that are slightly green and not all the way
yellow with brown spots- these are all examples of good quality produce. Such details, including harvesting from your garden, are covered in more depth in books and online sites such as from Cornell University (www.gardening.cornell.edu). While it is tempting to store produce in airtight bags, don’t. As produce ripens it respires or breathes. Storing any in tight plastic bags stops this, causing them to suffocate and speeding up decay. Some fruits and vegetables, as they ripen, emit ethylene — a gas that is odorless and colorless, but that can speed ripening of other sensitive crops. That is why spinach will turn yellow in only a couple of days if in the refrigerator crisper along with an apple. So keep such ethylene releasers apples, cantaloupe, and honeydew separate.
Don’t refrigerate other ethylene producers at all, including avocado, unripe bananas, peaches and nectarines, pears, plums, and tomatoes. If fully ripe you may store these cool, but return to room temperature for best flavor. Other crops not to refrigerate include potatoes, onions, winter squash, and garlic. Cold (not freezing) delays ripening and spoiling of many crops, but not these. These are cold sensitive, and can lose flavor and moisture when too cold, or their smells can taint other produce. Keep in a cool, dry space that may stay between 50 and 60 degrees (F). They may store a month or more with proper conditions. A special note on potatoes: keep them away from light, as in a paper bag, to prevent them from greening and becoming inedible. The University of California at Davis has
a simple guide on where to store what (usfoodsafety.ucdavis.edu/files/ 26301.pdf). Finally, after you’ve bought or picked fruits and vegetables, use the ones first that spoil most quickly. But don’t bruise or break their skins, such as pulling stems off, before ready to use as decay microorganisms will enter and begin their work. In the first one to three days, eat or use asparagus, ripe avocados, ripe bananas, broccoli, cherries, corn, green beans, mushrooms, mustard or similar greens, and strawberries. Next, in days 3 to 5 from purchase, use cucumbers, eggplant, grapes, lettuce and similar greens, pineapple, and summer squash such as zucchini. By 5 to 7 days from purchase, plan to use many other crops such as bell and similar peppers, blueberries, Brussels sprouts, cauliflower, leeks, or-
anges, parsley, peaches, pears, plums, spinach, tomatoes, and watermelon. Under proper conditions several crops will store and can be used much later after a week, including apples, beets, cabbage, carrots, celery, garlic, onions, potatoes, and winter squash. In spite of your best efforts at purchase, storage, and use, you still may have some produce left. Rather than let it spoil or throw it out, have a “plan B”. Mine is to either freeze or can if room and time, or I have some recipes such as casseroles, soups or stews that can use up much leftover produce. I then freeze the finished product, what we don’t eat, making future meals quick and easy with a simple thawing and reheating.
Practice safety and common sense when hiking A warm breeze, the sound of a bubbling brook and the fresh smell of pine in the air are just some of the draws of hiking. There’s nothing quite like getting outdoors and enjoying nature. Although hiking isn’t inherently dangerous, being at the mercy of the elements does imply some risk. As a result, it pays to be prepared when embarking on a hiking trip.
Even novice hikers know to avoid bug bites and apply sunscreen before heading outdoors, but there are also some lesser-known potential hazards on the hiking trail. Heeding these tips can keep a person safe. • Plan ahead. Understand the terrain and the trails before you begin the hike. Visit the park or area’s official Web site to access detailed, printable trail maps and other in-
formation about the area. Make note of ranger stations, portable bathrooms and any other places you may want to use as pit stops along the way. Give a copy of the trail map to someone staying behind, marking your planned place of entry. In the event you get lost, the person at home can alert authorities to your approximate location. • Know your environment. Hiking trails can be

found all around the world. Some may be arid and barren areas, while other areas may be lush and tropical. Each of these regions brings with them their own share of plants and animals. It is wise to know which species you may encounter along the way so you will know how to treat a bite or a brush with a poisonous plant in the event of an emergency. • Be mindful of the weather. Before going on the hike, get the latest weather report from a few different sources. This way you will have an average picture in your head of what the weather will be, and you can choose your footwear, clothing and other essentials based on that forecast. Few things can spoil a trip faster than unpredictable weather and failure to be ready for it. • Pack a supply kit. It’s easy to go overboard on gear, but there are some basics that should be hiking essentials. Include a first aid kit, a Swiss Army Knife, matches or a lighter, aspirin, a flashlight, and toilet paper in your supply kit.
• Bring water. Water is essential when going on a hiking trip. By the time you are feeling thirsty, you are already dehydrated. Bring at least 1 to 2 liters of water per person. Keep in mind that this may mean adding 3 to 4 pounds to the pack. When necessary, trade excess weight in other supplies for water, since water is most essential. Drinking from springs or lakes is not adviseable. Animals bathe and relieve themselves in that water, and it might be teeming with bacteria. • Pack snacks. Bring along lightweight snacks, such as granola bars, dried fruit and nuts. Avoid sugary or starchy snacks that your body will burn up in no time, leaving you feeling hungry again. Keep food in tightly fitted containers so aromas won’t lure curious animals in close. • Embark early. The temperature is lower in the morning, and the sun is less intense in early morning as well. In addition, starting early reduces the chance you will be hiking in the dark. • Be aware of your surroundings. Although most animals will be con-
tent to avoid a hiking party, if they are provoked or caught off guard, they may defend themselves. Watch where you are walking and avoid going off the trail. If scaling rocks, be careful where you put your hands. There may be snakes or small rodents lurking in crevices. • Carry a field guide. Refer to a field guide to help identify plants, trees and animals you may have seen. • Take plenty of photographs. Most hikers want to document the sights around them. Capture the moments with photos and be sure to make prints later. • Carry out only what you carried in. Litter can ruin a natural landscape and put animals in danger. Always bring a trash bag and remove your spent items. Also, leave nature as you found it. Resist the urge to take flowers or saplings or any other samples of the environment.
