Congratulations to our very own Lee Publications employee Les Chase of Canajoharie, NY. Les recently ran the 5K Boilmaker in Utica and finished 213 out of 4,000 runners with a time of 23:46 (7:41 pace)! Les has been training for months, it looks like his good work paid off!

The Boilermaker 5k was started in 2000 as a training run. The idea was as a stepping stone for those coming out of the Kid’s Run to move up to before jumping to the 15K. July 14, 2012 Hello Again, Farmer Murphy answered a knock at his kitchen door. “We’re having a raffle for your neighbor’s widow,” they said. “Will you buy a ticket?” “Sorry boys, I can’t help. My wife wouldn’t let me keep her if I won.” The same Farmer Murphy’s wife complained. “Look at the clothes I have to wear. If strangers came to visit they would think I was the cook!” “Well,” Murphy replied, “They’d change their mind if they stayed for a meal.” While rambling around on our red Spyder, we met Ken Gies and his son driving “Casper” hitched to a two-wheeled, rubber tired cart. We asked if we could take a picture for the Pennysaver and Country Folks. I think Casper, the beautiful pony, looked at the Spyder and said, “Get that modern thing out of my sight” and turned his eyes away. We learned that Casper was a new member of the Gies family until recently — green broke and already is behaving like an old trooper. We may not be ready to give up the red motorized Spyder but driving Casper sure looked like fun. If American history, starting just before or during the Civil War, could be transformed into a movie, it seems reasonable we of this century would be horribly shocked. That is horrified to see American citizens, brothers, sons, and fathers supported by their women folk ready and willing to kill each other with guns and swords over the slavery issue. Some thought it was their God given right to actually own other human beings — slaves. While others believed it was a sin against God and mankind stating: “No one has the right to

buy-own-sell or dictate to another person how they should live, work, worship, or manage their own lives.” In other words, have the right to totally control the life of another person, even taking their life if they choose. Most of the free world now — would not accept any form of slavery. On the other hand, the leadership of this country is attempting to steer the United States into a bigger and larger federal government. This proposed form of government will become socialism. When, and if, this country surrenders to socialism, the government in so many words will own and control everything, and we will in fact become the slaves of the state or ruling body. Denmark has been held up as the shining star of socialism. The central government taking care of all the Danes, including 90 percent of any earned income. That’s right, 90 percent of their earned money goes to the government. Do we think we should follow that shining star? Stop and reason this out: if the government controls the health program and runs low on money to pay for hospital care and you live to be — in their eyes — too old and absolutely need medical care, should they have the right to refuse medical care and leave you to suffer and fade away? I read the following article in a book titled “History of Montgomery and Fulton Counties N.Y.” published in 1878, about 134 years ago. Under the subhead of “Businessmen of Today”: Arkell & Smith’s Paper and Cotton flour sack manufactory is not only one of the most important establishments in the village (Canajoharie) but the largest of its kind in the world. Can you imagine “the largest of its kind in the world”? Sometimes I wonder — do we believe we live a better way of life than back in the mid1800s? Maybe looking at this old picture of the residence continued on next page

of Andrew Dunn Esq. in Fort Plain will cause a person to wonder. In our church last Sunday we had a guest speaker. The subject of his sermon was “churches should become more involved in their communities.” In this so-called modern day, we are told church people should stick to church, and let the local community take care of itself. Can you imagine what our private lives would be like if all Christian principles were withheld? If the time comes when biblical teaching is withheld totally from society, will it be even safe for you to walk the streets? Forget your mother, wife, or children. Let your imagination run wild. Will anyone, any property, be safe? The only conclusion I can come to is — the belief in God is the only fabric that holds society together. With that: visit church or at least send your children to church on Sunday.

A few thoughts from Grandpa: Grandpa says that even back in his day, there was something to make you sleep. They called it work! Old age does have some benefits. For instance, you can whistle while you brush your teeth. An old timer can remember when a babysitter was called mother. An old timer is a person whose annual property tax exceeds what he paid for the darn place in the beginning.

Remember to salute your neighbor with a happy, “Howdy neighbor!” and lend a helping hand where it’s needed.

Harmony performs at Trinity Stone Arabia

Tomlin Fort Plain students of the group Harmony, under the direction of music teacher Julieanne Sincavage, and accompanied by pianist Norma Bowley, performed for attendees at Trinity Lutheran Church in Stone Arabia. “We often sing for community and school events, like tree lightings, Santa Claus visits, basketball games, pep-rallies, baccalaureate services, and graduations,” said Sincavage. Sincavage explained that the group normally consists of nine girls, however, Matthew Soto was filling in as a favor at this event, due to the unavailability of some of the group’s members.

The Harmony group includes the wellknown vocalist Tara Resch, who also sings with the Valley Choralaires, but will be leaving for college this fall. Sincavage says

formance. Trinity’s Ladies Aid group presented each performer with a corsage and served refreshments following the special music service.

Whatchamacallits Native American men who lived in the woodlands of North America were known for the odd-shaped knives they used. The so-called crooked knife, for the shape of its handle, was used by tribes that stretched the width of the continent from the far Northwest to what is presentday North Carolina. The example pictured here is from the antiques collection of Willis “Skip” Barshied. Crooked knife was a term coined by European settlers. To the various peoples who used it, the knife was known by many different names in the various languages and dialects they spoke — all of which mean “drawknife.” Drawknife describes the way in which the tool was used — by being drawn toward the user. “With its upturned tip,

the knife could be used for cutting, carving, shaving, gouging and smoothing to take fullest advantage of the plentiful wood, reeds, rushes and hides taken from the surrounding lakes and thick forests,” according to “Mocotaugan:

The Story and Art of the Crooked Knife,” by Russell and Ned Jalbert. Eskimos and natives of the Northwest Coast also used drawknives, but their’s typically had a much shorter blade.

To the Taxpayers in the Town of Palatine: It appears that, on a two or three year cycle, the Town Council is preparing to hit the “till” and taxpayers pockets to build a new town hall. Before i get too critical about this potential move, let’s see if some logic will support the reasoning behind this decision. Through the fall, winter, and spring months the town clerk is available 17 hours per week. Through the summer, it is at 10.5 hours. The town assessor is in her office 7.5 hours per week, year around. Court is usually held one night per week. It appears you would be hard pressed to argue that the town hall is open 40 hours per week. Do we really need an even larger building to sit empty most of the week? It is suggested that we need more room for public use and input, presumably at Council meetings. The problem with this is that public comment has been arbitrarily cut in half and the timing is such that there can be no comment on the current meeting until the next month. If there is a “hot button issue” that calls for public input, we already have a large town barn that can, and has been, converted to a meeting hall. The Town of Palatine, although rural in nature, and having agriculture as its major industry, has the bulk of its population in the Villages of Palatine Bridge and Nelliston. To locate a town hall miles away from the population centers could create a logistical problem for many village residents. The Town Justice Court, presently held in the Town Hall, and which in the past has struggled to cover the costs of its operation, may well be put out to pasture by the State which has designs of eliminating all or most of these kinds of town courts, so why build to accommodate them? As for trials, there have been 4 locally in the last 25 years. Regarding State requirements for town courts, I would submit that these may well be recommendations which vested interests like to call mandates! In closing let’s return to the use of the current facilities that seems to be the driving force in favor of a new town hall: record storage. And here I have to grudgingly admit, those records sit there, 24-7, 365 days a year, and yes there are those who feel records deserve the same creature comforts afforded to the rest of the building, even when it is sitting there, devoid of people and unused for the bulk of the work week. But please, surely there can be a facility built, on site, with a simple heater and a dehumidifier to keep the air dry and free of mold, for less than the half a million dollars a new town barn will eventually cost. So what do you think? If you think we need a new town hall, you are in luck, for you do not have to do a thing. If however, you think this is being done because others have done it first and they like to talk about their successes, then I would draw upon my Dad’s simple piece of logic to his sons growing up: Just because everybody else sticks their head in a bucket of water, does not mean you have to!” Want to be a part of government? Call or write your council people, call or write your town supervisor! Tell them we do not need or want a grand edifice to store our records. Earl Spencer, Palatine Bridge

Barrel Drive sets new record at Fort Plain’s 25th anniversary of the 4th on the 3rd by Elizabeth A. Tomlin A spectacular fireworks display highlighted the 25th anniversary of Fort Plain’s 4th on the 3rd celebration. “Police counted 750 cars parked on the field for the fireworks,” commented Jim Katovitch, Chairman of the Fort Plain Community Activities Council, volunteers who are in charge of the event. “Figure three per car, that is at minimum 2,250 people in the park for the fireworks.” And that estimate doesn’t include folks all over the surrounding areas who were watching from the comfort of their backyards and those parked bumper to bumper in cars and trucks all along the area roads. “We must have entertained 7,000 people!” Katovitch laughed. Katovitch figures there were about 3,000 attendees in the park throughout the day, where food, music, games and 35 vendors were available — in addition to the featured guests, Rhonda Leavitt’s Reptiles, of New Lebanon, NY, Birds of Prey, and Ziyara Shriners’ Clowns. Dawn Hanifin, founder of the original event recalls how the whole thing began. “In 1988 I was on the Village Board when

My objective was to take advantage of our beautiful park and had very limited funds to work with. The Village Board allotted $1,200 - $1,500. People I talked to wanted the celebration and a band concert. I spoke to the fireworks company and found it was cost effective to have the fireworks display on the 3rd instead of the 4th. So, I thought why not have the 4th on the 3rd?”

Hanifin said, “The First Reformed Church of Fort Plain jumped right on the bandwagon and has sponsored a barbecue at the event every year since the beginning.” Hanifin was honored at this year’s event for her contribution to the community. “It’s delightful to see how successful this is year after year,” Hanifin said. “People come back every year.” “Four-hundred-seventy-two kids enjoyed the bounce houses,” Katovitch reported. “The Old Time photo booth gave away 600 pictures, so that means a picture of our celebration is posted on 600 refrigerators in the area!” Katovitch says the barrel drive set a record for collecting $5,600 this year and they also received $7,600 in donations from the community. The entire event cost about $15,000. “So, we just about broke even,” Katovitch figured. “This is a highlight of the summer for the kids of Fort Plain,” Katovitch commented. “We do it for the kids. The whole community comes together to make this celebration work “It’s a beautiful thing to celebrate America this way,” Hanifin stated.

Researchers find potential ‘dark side’ to diets high in beta-carotene New research suggests that there could be health hazards associated with consuming excessive amounts of beta-carotene. This antioxidant is a naturally occurring pigment that gives color to foods such as carrots, sweet potatoes and certain greens. It also converts to vitamin A, and foods and supplements are the only sources for this essential nutrient.

But scientists at Ohio State University have found that certain molecules that derive from beta-carotene have an opposite effect in the body: They actually block some actions of vitamin A, which is critical to human vision, bone and skin health, metabolism and immune function. Because these molecules derive from betacarotene, researchers predict that a large amount of this antioxidant is accompanied by a larger amount of these anti-vitamin-A molecules, as well. Vitamin A provides its health benefits by activating hundreds of genes. This means that if compounds contained in a typical source of the vitamin are actually lowering its activity instead of promoting its benefits, too much beta-carotene could paradoxically result in too little vitamin A. The findings also might explain why, in a decadesold clinical trial, more people who were heavily supplemented with betacarotene ended up with lung cancer than did research participants who took no beta-carotene at all. The trial was ended early because of that unexpected outcome.

The scientists aren’t recommending against eating foods high in betacarotene, and they are continuing their studies to determine what environmental and biological conditions are most likely to lead to these molecules’ production. “We determined that these compounds are in foods, they’re present under normal circumstances, and they’re pretty routinely found in blood in humans, and therefore they may represent a dark side of beta-carotene,” said Earl Harrison, Dean’s Distinguished Professor of Human Nutrition at Ohio State and lead author of the study. “These materials definitely have anti-vitamin-A properties, and they could basically disrupt or at least affect the whole body metabolism and action of vitamin A. But we have to study them further to know for sure.” The study, partially funded by Ohio State’s Ohio Agricultural Research and Development Center (OARDC), is scheduled for publication in the May 4, 2012, issue of the Journal of Biological Chemistry. Previous research has already established that when beta-carotene is metabolized, it is broken in half by an enzyme, which produces two vitamin A molecules. In this new study, the Ohio State researchers showed that some of these molecules are produced when betacarotene is broken in a different place by processes that are not yet fully understood and act to antagonize vitamin A. Harrison, who has a partial appointment with OARDC, is an expert in the study of antioxidants called carotenoids, which give certain fruits and vegetables their distinctive colors. Carotenoids’

antioxidant properties are associated with protecting cells and regulating cell growth and death, all of which play a role in multiple disease processes. For this work, he joined forces with co-authors Robert Curley, professor of medicinal chemistry and pharmacognosy, and Steven Schwartz, the Haas Chair in Food Industries and professor of food science and technology, both at Ohio State. Curley specializes in producing synthetic molecules in the pursuit of drug development. Schwartz is an expert at carotenoid analysis, and, with Harrison, also is an OARDC researcher. Curley manufactured a series of beta-carotenederived molecules in the lab that match those that exist in nature. The researchers then exposed these molecules to conditions mimicking their metabolism and action in the body. Of the 11 synthetic molecules produced, five appeared to function as inhibitors of vitamin A action based on how they interacted with receptors that would normally launch the function of vitamin A molecules. “The original idea was that maybe these compounds work the way vitamin A works, by activating what are called retinoic acid receptors. What we found was they don’t activate those receptors. Instead, they inhibit activation of the receptor by retinoic acid,” Curley said. “From a drug point of view, vitamin A would be called an agonist that activates a particular pathway, and these are antagonists. They compete for the site where the agonist binds, but they don’t activate the site. They inhibit the activation that would normally be expected to occur.” Once that role was de-

fined, the researchers sought to determine how prevalent these molecular components might be in the human body. Analyzing blood samples obtained from six healthy human volunteers, the scientists in the Schwartz lab found that some of these anti-vitamin-A molecules were present in every sample studied, suggesting that they are a common product of betacarotene metabolism. The compounds also have been found previously in cantaloupe and other orange-fleshed melons, suggesting humans might even absorb these molecules directly from their diet. Harrison noted that the findings might explain the outcome of a wellknown clinical trial that has left scientists puzzled for years. In that trial, people at high risk for lung cancer -- smokers and asbestos workers -were given massive doses of beta-carotene over a long period of time in an attempt to lower that risk. The trial ended early because more supplemented participants developed cancer than did

those who received no beta-carotene. This outcome was reinforced by results of a follow-up animal study. “Those trials are still sending shockwaves 20 years later to the scientific community,” said Harrison, also an investigator in Ohio State’s Comprehensive Cancer Center. “What we found provides a plausible explanation of why larger amounts of beta-carotene might have led to unexpected effects in these trials.” The research also has implications for efforts to bio-engineer staple crops in developing countries so they contain excess beta-carotene, which is considered a sustainable way to provide these populations with pro-vitamin A. Existing projects include production of golden rice in Asia, golden maize in South America and cassava in Africa. “A concern is that if you engineer these crops to have unusually high levels of beta-carotene, they might also have high levels of these compounds,” Harrison said. The researchers are continuing to study these

compounds, including whether food processing or specific biological processes affect their prevalence. Previous studies have suggested that oxidative stress, which can result from smoking and air pollution exposure, can lead to higher production of these anti-vitamin-A molecules, Harrison noted. This research was supported by the National Institutes of Health and OARDC. OARDC is the research arm of Ohio State’s College of Food, Agricultural, and Environmental Sciences and is the largest university agricultural bioscience research center in the U.S. Additional co-authors include Abdulkerim Eroglu, Carlo dela Sena and Sureshbabu Narayanasamy of the Department of Human Nutrition; Damian Hruszkewycz of the College of Pharmacy; and Ken Riedl and Rachel Kopec of the Department of Food Science and Technology, all at Ohio State. Harrison, Curley, Eroglu and dela Sena also are affiliated with Ohio State’s Biochemistry Program.

Is RV travel the way to go? Adventurous folks thinking aout taking a road trip this season may consider renting or purchasing a recreational vehicle (RV) for the trip. Traveling by RV has its share of supporters and detractors, and it’s best for those new to RVs to consider their advantages and disadvantages. RV vacations have the potential to be quite memorable. Ensuring they’re memorable for the right reasons can mean the difference between an enjoyable trip and one that’s full of problems. RV trips tend to be carefree adventures that do not follow a strict itinerary. RVers need to be able to adapt to changing weather conditions, traffic, detours and other unforeseeable situations. If

you’re the type of vacationer who prefers a set schedule with everything spelled out for you, RV vacationing may not be the way to go. According to a recent study by the Recreation Vehicle Industry Association, approximately 8 million Americans own an RV and use them on vacation. There are many advantages to RVing, but also some disadvantages. Here are some things to think about before embarking. Advantages Nothing says family time quite like being together in an RV and seeing the country. The close quarters mean everyone gets to stick together and enjoy each others’ company. With the driver charting his or her own course, many different sights can

be seen along the way, making an RV trip a truly customizable vacation. Because there are no check-in or out times, travelers can spend as little or as much time as they want at specific stops along the way. Also, renting a campsite is generally much less expensive than staying in a hotel room. With RV travel, there’s no need to pack and unpack from site to site. And meals can be eaten out, or money is saved by cooking some items right in the RV. One of the main advantages of RV travel is there is always a bathroom on hand. That means no rushing to find the next rest stop or gas station — an especially valuable asset to parents of young children. Many vacationers find

that taking driving vacations allow them to slow down and see the sites they would have missed had they traveled via air or train. Exploring such hidden gems is possible from an RV. Disadvantages Some of the things that make RV travel advantageous are the things that others would prefer to avoid. For example, the close quarters can become irritating after a long trip, as there are really no places to escape to in an RV for privacy. RVs can also be cumbersome to drive and do not have the same horsepower as a van or truck. This can make trips seem like they are crawling. While some people love the unpredictability of RV trips, others crave struc-

ture and the dependability of resort activities. RV travel takes work — planning stops, destinations and all the little details. This is certainly not an uninterrupted vacation on a tropical coast. RV travel saves money on hotel fees, but the cost of gasoline can still make it an expensive venture. And while an RV’s builtin kitchen makes it easy to save on meals, for many people dining out and letting others do the dishes is an integral part of a good vacation.

Comfort is another thing to consider. RVs do offer more amenities than sleeping in a tent at a campsite. However, beds are modest and there is the expectation that people will be in close proximity. If a husband or father snores, there is little escaping that noise. RV travel presents a very good option for lowcost family vacationing. But the pros and cons should be weighed, and the opinions of all involved can be considered before planning the excursion.

I want to make sure I’m eating the proper portion sizes, but I don’t want to weigh and measure everything I eat. Is there an easy way to estimate servings of different foods? Actually, there are a number of ways to do this, and one is right at your fingertips. The 2012 Complete Food and Nutrition Guide from the Academy of Nutrition and Dietetics (formerly the American Dietetic Association) includes a “Visual Guide to Amounts,” using an average-sized hand to help you estimate. It’s an important topic, as portion sizes have swelled (along with the average waist) over the years. You can use these tips to make sure you eat enough (or more) of: • Vegetables, fruit, cereal, or cooked beans, rice or pasta: A cup is about the size of your fist. • Nuts, seeds or dried fruit: An ounce fits in a small cupped handful. • Seafood: Three ounces of cooked seafood is about the size of your palm (no fingers). And use similar guides to limit these servings: • Meat and poultry: Three ounces is about the size

of your palm. • Cheese: An ounce is about the size of your thumb, from the tip to the base. • Peanut butter: A tablespoon is about the size of the

tip of your thumb, down to the first joint. • Butter, margarine, mayonnaise, oil or sugar: A teaspoon is about the size of a fingertip, from the tip to the first joint. Of course, your hand size may vary, so you might want to weigh or measure a few items after you do an initial estimate. That way you will know if you can choose a pork chop, for example, that’s slightly larger

than the palm of your hand, or if you should take one that’s a bit smaller. The “plate method” is another way to estimate portion sizes. All you do is imagine your dinner plate is divided in half, and then one side is divided in half again. Use the first half for n o n starchy vegetables — broccoli, zucchini or salad, for example. Use one-fourth of the plate for lean meat, fish, poultry or other lean protein. And use one-fourth for starchy vegetables, such as potatoes, corn or peas, or other starchy foods, including beans and such grains as rice or pasta. It uses common household objects to help estimate appropriate portion sizes (for example, a small potato is about the size of a computer mouse; 1.5 ounces of hard cheese is about the size of three dice). Take a look and see if that’s even more helpful (if not as handy) as the other methods.
