Immunize your child before the school year begins One of the most important things you can do to prepare your children for school is to get them vaccinated against serious childhood diseases like Measles or Whooping Cough. Children of every age need to have their vaccinations updated whether they will be in day care, preschool, kindergarten, high school or college. New York State law requires that every child planning to go to either a childcare center or school must be immunized against Polio, Diphtheria, Tetanus, Pertussis, Measles, Mumps, Rubella, Hepatitis B, Varicella (Chicken Pox), Hib and Pneumococcal disease. Hib and Pneumococcal immunizations are required for childcare and Pre-K programs only. If your child has fallen behind, or started getting vaccinated later than other children, ask your doctor for the ‘catch-up’ schedule. Health clinics and doctors’ offices are especially busy during the last few weeks of August, so it’s smart to make an appointment with your health care provider as early as possible. Aug. 11, 2012 Hello Again, With a car full of friends we wandered around the country enjoying the summer season with its colorful views. We ended up in Fly Creek and met up with a real live wolff. Before you get nervous and shed up your chickens, sheep, and goats, this wolff spells his named with two f’s (Wolff, not wolf), and they come in pairs. Mr. and Mrs. Wolff own and operate a nifty den in Fly Creek known as a quilt store. Our ladies were still chattering about the quaint quilt store on the trip back up through Fly Creek Valley on the way home. This is a special note to one of our faithful readers: Yes, we stopped in Cooperstown for one of the famous Schneider Bakery’s old-fashioned donuts. Two in our group committed an unfortunate crime — no donuts, apple turnovers. Some people never learn. We forgave them. They are out-of-staters. What’s even worse, they are basketball and not baseball fans. Sometimes friendship demands more than a fellow can handle. What do you do at 2:00 in the morning when you can’t sleep? Try this. Get up, get dressed, hop on your three-wheeled, red Can-Am roadster and take a ten-minute trip. Return home. Get out the “New World Dictionary” and look up the word capitalism. This is what Mr. Webster has to say for capitalism: The economic system in which all or most of the means of production and distribution, such as land, factories, railroads, etc. are privately owned and operated for profit, under fully competitive conditions. Later I went back to Mr. Webster to learn what he had to say about socialism. In Mr. Webster’s words: Socialism: an economic theory or system of the reconstruction of society on the basis of cooperation of labor and community of property. (End of Webster’s quote.) Businesses and property are community owned. You probably would not own your house, technically little of anything else. Businesses are not required to produce a profit. If a business is failing, it is owned and operated by the government so keep it going anyway and let the citizens collectively support it, dragging down all. If a business is privately owned, it is basically controlled by the socialist party. Denmark is held up by socialists as the finest example of socialism. However, the employed pay over 90% of their earned money to the government. You could easily ask, “Fred, why do you keep harping about capitalism and socialism?” My answer is simply: The controlling members of our government, the White House, and the Senate are obviously attempting to ditch our means of government and enterprise away from capitalism, reducing this greatest country on the face of the earth into socialism. In a capitalistic society individual people — citizens, and even those from foreign countries — can invest their own or borrowed dollars (capital) to start, buy, own in total or part, and personally manage their privately owned and controlled business. It remains an asset of actual persons and not the government. Now turn to page 1 in Fred’s Book of Wisdom and you will read a country boy’s boiled-down definition of capitalism and capitalists.

Original Valley PENNYSAVER • August 11, 2012

Page 7

The good old-fashioned way this great nation of the United States of America was built with. Not socialism, as some are trying to change our nation into. Socialism is one step before communism. If they win, we will be kissin’ cousins to Cuba, Russia, China, and a few more failing societies—oh yeah—Denmark too. What does all of this heavy weight jargon mean? Simply stated: 1. Capitalism: Businesses and property are privately owned. 2. Businesses survive by being competitive. 3. Businesses operate for profit or fail and go under if mismanaged. When I was a young married man, I helped my wife’s uncle on his farm while he was not able to work. One evening we were called to supper and his wife said, “I can put supper on the table anytime in 15 minutes.” With that her 10 year old son spoke up and said, “Yeah and that’s what it tastes like.” They were both correct. A city gal was looking at a woodchuck hole with dirt all around it in the cow pasture and asked, “What is that hole for?” The country boy said, “It is a woodchuck’s home — you know — a groundhog.” “I don’t think so,” she said. “I’ve looked at that hole for several days and I’ve never seen a woodchuck. Where is he now?” The country boy replied, “He went down in the hole to get more dirt.” A weather forecaster is one with whom the weather does not always agree. My favorite forecast is, “We have a chance of having weather today.” A woman said to Winston Churchill, “Sir, you are insufferable — if you were my husband I would feed you deadly poison.” “Madam,” the great orator replied. “If I was your husband, I would take it.” The following bit of chatter sort of points out that the news media carries a huge burden of weight to tell the truth, particularly daily newspapers, and so-called t.v. news reporter. During a baseball game a slugger started to raise a loud hullabaloo with the umpire about a strike call. Finally the ump said, “No matter what you think, if you read tomorrow’s daily newspaper, you will find that you struck out.” While working for a farmer we had words. He would constantly pull me off a job that was half done. That particular day, in a disgusted tone, I said, “Let me finish; I’ll be completely finished in a few minutes.” Later during chores, I overheard the farmer saying to his wife in an angry tone, “I felt like telling him to go halfway to hell.” When I was in college, I dated a classmate that I soon learned I didn’t care for. I remember thinking that the next time I date her, I will leave her home. Want to try something that really works? Smile and your neighbors will smile with you. Talk to our Heavenly Father—He will hear you and you will feel better. Christ—when He was on this earth even taught us how to pray, starting with “Our Father, who art in Heaven.” Christ did not have to believe in heaven. He came from heaven and knew it existed. Fred Lee and the Lee Family

In 2009, Herkimer County developed a Risk Assessment Profile that addressed the need for additional child care. For

every child care slot available for children from the age of infancy through five years old, there are two children in need of care. For each slot for children between the ages of six and 13, there are seven children in need of care. It is crucial for the health and well-being of a community to have well-organized child care centers. Because recent reports indicate that more than 26 percent of

Beauty & the Beast — a dream come true for local drama club by Elizabeth A. Tomlin Approximately 1,100 people spilled over at the Arkell Performing Arts Center at the Canajoharie High School over the Aug. 3-4 weekend. What was the attraction? The Canajoharie-Fort Plain Drama Club’s production of the magical musical Beauty & the Beast. Featured were the magnificent voices and acting of Melissa Bowley as the Beauty Belle; Adam Barnes as the Beast; Matt Hazzard as Gaston; Matt Soto as Lumiere; Rachael Takacs as Mrs. Potts; CJ Verderber as Cogsworth; Caitlin Hurd as Madame de la Grand Bouche/ Enchantress; Jenna Sierra as Babette; Bryan MacFadden as Maurice; Andy Haman as Lafou; and David Riley as Monsieur D’Arque; and an excellent supporting cast of many others.

Belle (Melissa Bowley) befriends the Beast (Adam Barnes).

Gaston (Matt Hazzard) wows the village girls with his strength and charm. Directing the play not this much!” White were college students laughed. Ashley Broady and Both girls credit Cassie White, both their support team, graduates of especially Stage Canajoharie High Manager Andrew School. Both are also Vroman, Costume first time directors. Creator Lisa Hill, “It was the drama Music Director club’s dream to per- Norma Bowley, Vocal form it — and we Director Julieanna wanted to keep the Sincavage, and back dream alive,” stage workers explained Cassie Stephanie Rogers and White. “It was so Theresa Travis, for worth it! It’s such an the overwhelming incredible experience!” success of the play. “It was a fantastic “We pretty much experience,” agrees had a dream team!” Ashley Broady. “It White explained. “It’s was more than I such a big show, it anticipated!” was great not going “I knew it was going home at the end of to be challenging, but the day in tears!”

Broady and White were impressed with the six weeks of hard work, night after night, that the whole cast put into making the production such a success — many forfeiting their summer vacations to accommodate the rehearsals. The cast and crew totaled 60 members, with the youngest being second graders. Special thanks goes out to all who supported the drama club in their production of the play, including the band which provided musical accompaniment, Don Travis and Dwyan Heroth for set construction, Chelsea Stanley for designing the “phenomenal” rose and other set design, Mike Riley and Dillon Oeser for lights, Stephanie Terwilliger and Chris Hopler for the sound, and to the Schoharie High School Drama Club for numerous set, prop and costume donations. White & Broady are hoping that someone will be hired to work with the Canajoharie Fort Plain Drama Club full time. However, if not, “We’ll do it again!” they chorus.

The teapot Mrs. Potts (Rachael Takacs) joins the teacups in ‘Be Our Guest.’

Whatchamacallits Chewing gum is as American as apple pie and baseball. The practice of chewing the resin or gum of spruce trees was introduced to early European settlers of North America by Native Americans. Spruce gum is the processed dried sap of the spruce tree. Spruce gum was collected and sold in the eastern United States, making it America’s first commercial gum. Since it is a natural product, spruce gum didn’t come pre-packaged. Lumbermen in Maine and the Adirondacks would carve boxes in their spare time to give to their sweethearts who lived far from the wilderness logging camps. These spruce gum boxes were also known as gum books. The loggers would carve them from a solid piece of wood and shape them to

closely resemble a book. The box pictured here is from the collection of Willis “Skip” Barshied. Spruce gum began to lose popularity when paraffin based gums began to be pro-

duced in the middle of the 1800s. However, spruce gum can still be purchased today by anyone with a taste for the past. Purveyors of spruce gum can be easily found on the Internet.

The Town of Russia, whose trail is currently listed in the 2012 Herkimer County Trails Map/Guide, will be enhanced for hikers and outdoor sporting enthusiasts. The Town of Webb is investing in a waterfront recreation and revitalization project, and the Creating Healthy Places minigrant funds are earmarked for enhancing the waterfront’s playground. Over the past two years, Herkimer

County HealthNet has invested nearly $120,000 in Herkimer County’s trails and playgrounds. One of the objectives of the Creating Healthy Places work plan is to establish, improve and promote the use of neighborhood or community trails and physical activity spaces in Herkimer

County. The goal of the Creating Healthy Places to Live, Work, and Play grant is to prevent obesity, Type 2 Diabetes and other chronic diseases through the implementation of sustainable policy, systems, and environmental changes on communities where people live, work and play.

NYS Public Health Law requires that all dogs, cats & domestic ferrets shall have initial vaccinations administered against rabies no later

than 4 mos. of age and stay up to date with revaccinations. Re-vaccinations are required one year later and a booster shot every three years. Pet owners should bring proof of their pet’s last rabies vaccination. This helps the veterinarian determine whether the pet will receive a one or three year vaccination; without it your pet will receive a one year vaccination only. To assure the safety of other pets and people; dogs must be leashed; cats and ferrets must be contained in a pet carrier or box when attending the rabies clinic. Veterinarian administration fee is $10/rabies vaccine. Contact Montgomery County Public Health, 518-853-3531.

Automotive Brake Safety Awareness Month When it comes to the safety of your vehicle, the brake system is at the top of the vehicle safety checklist. Brake Safety Awareness Month in August, sponsored by the Motorist Assurance Program (MAP), is a great time to have your brakes inspected to make sure they are in safe working condition. The Car Care Council recommends checking the brakes routinely and repairing or replacing when necessary. Brakes are a normal wear item for any car and eventually they’re going to need to be replaced. Several factors that affect brake wear include driving habits, operating conditions, vehicle type and the quality of the brake lining material. Never put off routine brake inspections or any needed repair, such as letting the brakes get to the ‘metal-to-metal’ point, which can be potentially dangerous and lead to a more costly repair bill. If your car is pulling to the left or right, or if you hear odd noises when you apply the brakes, you should inspect your brakes. Other warning signs include an illuminated brake warning light, brake grabbing, low pedal feel, vibration, hard pedal feel and squealing. For routine maintenance, check a vehicle’s braking system at least once a year. A thorough inspection should include brake

lining wear, brake fluid level, rotor thickness, condition of hoses and brake lines, brake and dash warning lights, as well as taking the car for a test drive to detect other potential brake system problems. Source: www.carcare.org

away the equity. Scammers tie homeequity mortgages to other financial products. And, it learned, homeowners were found in default if they failed to pay property taxes or homeowners insurance. The biggest concern, however, is if only one spouse’s name is on

the paperwork. You can’t take a reverse mortgage unless you’re age 62. If only one spouse is that age, then only that person’s name goes on the paperwork. If that older spouse dies, the younger spouse can be evicted from the home if he or she can’t come up with all the money to immediately pay off the mortgage. (c) 2012 King Features Synd., Inc.

Hanging on to summer flavors by Jennifer Jennings This summer will go down in the record books as one of the hottest and driest on record. We’ve been lucky in New York. The worry of drought damage hasn’t disappeared, but the summer storms have finally hit parched fields. In my farm family at least, people are breathing a little easier. And while analysts and economists predict a rise in food costs come fall, I’m currently focused on savoring the taste of summer for as long as possible — well into winter. Summertime is the peak for New York vegetables and right now farms are ripe with edible possibilities. My family owns and operates a dairy farm. This means that the fields are full of corn and soybeans, both crops intended solely for the animals we keep and care for. However, our garden is pretty pathetic, thanks to a fertilizer mishap by my father. Luckily, we are still able to reap the bounty of fresh veggies summer offers. Anyone can easily enjoy the delicious harvest New York farmers provide. Local farm stands, farmers’ markets and produce auctions are great resources for fresh, local produce — either a

few ears of sweet corn for dinner or a few bushels of beans to pickle, can or freeze. My father and mother spend Saturday or Sunday afternoons doing the latter. Freezing farm fresh veggies is an economical, convenient and amazingly delicious endeavor. One afternoon’s labor and $25 or so provides green beans as a side dish for nearly a year. And don’t get me started on the corn which tastes just as sweet and summery in January as it does right off the cob in July. Taking the time to preserve local produce connects the consumer to the farmer who raised the fruit and veggies. It continues the heritage of agriculture that has shaped New York State and ensures local agriculture continues in our communities. Plus, it brings a smile to your face in the middle of winter as you savor the taste of summer. Here is quick and easy pickle recipe. Though it isn’t processed or sealed tight to keep in the cupboard till winter, it will keep in an air-tight container in the refrigerator for a month or so. Hungarian Pickles 3 large cucumbers (sliced paper thin)

1 t. salt 1/4 c. sugar 1/8 c. water 1/4 c. distilled white vinegar 1/2 t. celery seed 1/4 t. paprika 1/2 medium onion (sliced thin) 1. In a large bowl, combine the cucumbers and salt. Mix well and set aside for 30 minutes. 2. In another bowl, combine the remaining ingredients and stir until everything is incorporated. 3. After 30 minutes have passed, squeeze the cucumbers to remove most of the liquid. Add the squeezed cucumbers to the brine mixture. Mix thoroughly. Let sit in the refrigerator for 45 minutes to 1 hour. 4. After the mixture has had time to marinate, remove the cucumbers and onions (with a slotted spoon) and fill canning jars tightly, pressing down often with the back of a spoon. Pour the remaining brine over the cucumber mixture in the jars, filling the jars with liquid up to 1/4 inch from the top. 5. Place sterilized lids on top of the jars and seal. Pickles can be kept in refrigerator for up to one month. The same recipe can be used to pickle

green beans, but the beans should be blanched first. Jennifer Jennings is the

District 8 Promotion and Education representative for New York Farm Bureau representing Albany,

Fulton, Montgomery, Rensselaer, Saratoga, Schenectady and Washington counties.
