• One bushel of corn will sweeten more than 400 cans of Coca-Cola. • There are about 800 kernels in 16 rows on each ear of corn. • The corncob (ear) is actually part of the corn plant’s flower. • The main ingredient in most dry pet food is corn. • Corn is America's number one field crop. Corn leads all other crops in value and volume of production. • A pound of corn consists of approximately 1,300 kernels. • Corn is used to produce fuel alcohol. Fuel alcohol makes gasoline burn cleaner, reducing air pollution, and it doesn't pollute the water. August 18, 2012 Hello Again Who will argue with this statement, “All of the cars around us, including our own, will rust and end up sooner then necessary in a junkyard if not properly taken care of. When kept clean, oil changed, garaged, with general repairs--vehicles last a long time. There was a story published recently in a magazine about a Volvo auto that is expected to arrive at the three million mile mark. The owner obviously takes care of it. You can visit auto junkyards and find brand new, basically no mileage cars that didn’t make it through their first day. The Volvo has been taken care of. The new junkyard car was smashed. Isn’t that what our lives and our surrounding is all about? If we feed, clothe, exercise and take care of our bodies we stand a better chance of living a healthy and long life. If our property — houses, cars, RV’s, and businesses, etc. are properly taken care of, they will serve us both well and long. Why is it that we understand these statements to be true and the effort of caring worth while? Can it be because it just plain makes common sense? Now! If that does make common sense why are we not attempting — trying — planning to create a business plan for the Palatine Corridor. I have to admit that I suffer from serious doubts about who really cares. Since mentioning the dream or idea of a Palatine Corridor, a dream to create a great employment center here in the Mohawk Valley. I was seriously tempted to let the idea or dream die. You ask why? Not one single Mayor, Trustee or Supervisor in any of the towns or villages have ever, not even once — shown any interest in caring for the future of the Dream Palatine Corridor, at least to this office. This is not true of the general public. Several, in fact, a reasonably large group of caring readers and business owners have shown interest and asked to be included in planning. A dream to build specialty shops, such as a Christmas Store, copied after the giant Great Bronner’s Christmas Store in Frankenmuth, Michigan, with its 150 employees or a Teddy Bear Shop and possibly a teddy bear factory, and shops such as American Doll, Yankee Curtain, an Amish restaurant such as in Pennsylvania and Ohio, an entire factory outlet complex complete with dozens of national famous brands. How about a country & western music opera house? I’m sure that Hello Again readers could add hundreds of great potential business ideas to this list. For example — how about building the Fort Plain fort into a real early American fort with daily activities, financial support for Fort Klock, and renewed interest in Fort Wagner. Just repeating: The area from Fonda to Herkimer, in the hands of a real promotion person or firm, would be a sitting duck for fantastic business growth. If we keep on doing nothing, we will get what we deserve.

Original Valley PENNYSAVER • August 18, 2012

Page 7

We have a Thruway exit at both ends with over 70,000 autos each day driving through our valley. If we draw a circle around our area statistics will prove that over 3 million people live within 50 miles of the so-called Palatine Corridor and people will actually travel hundreds and even thousands of miles to arrive at a destination such as Cooperstown, Saratoga, or Frankenmuth, Michigan. Do you know why they don’t come to the Palatine Corridor area? There is nothing to come to. Have you ever noticed how a humorous joke can fit a situation? A farmer and his farming friends, down in the Bible belt of Alabama, were falling on hard times. He and a group from the local congregation asked the preacher to pray for a more abundant crop. The preacher said, “O Lord, we pray thee in accordance with the request of thy people; that thou would send them a more abundant crop; but O Lord, thou knowest as they know, that what they needed first was deeper plowing, harder work, and more manure. Lord, I ask that thou bless them with more than they deserve.” An old familiar saying, “Put your money where your mouth is,” is certainly fitting at this time and for Lee Publications as well as everyone else. To bring our readers up to date, within the last 28 months, Lee Publications has created six new publications: The Original Valley Pennysaver, four separate area DollarSavers, The Original Family Pennysaver and this past week a new Herkimer-Oneida Pennysaver. These new publications caused our employee staff to grow by 15 and it gave more hours to existing employees. It is your support by reading these papers and shopping with the merchant advertisers, which makes this employment growth possible. For this we give thanks to the Lord and to you. Fall is quietly saying it is heading our way. It’s not merely whispering so long for this year but asking summer to hitch over to make room for another upstate beautiful country harvest and autumn season. In the beauty of our Heavenly Father’s upstate creation, we country folks should live and share and show our lives as a gift from him. Say hi to a neighbor. Neighbors often become our best of friends. Ask them to go to church with you. It could end up being one of life’s greatest gifts. If you see the little red cycle go whizzing by, wave hello. Fred Lee and the Lee Family P.S. Special Note to Advertisers: This week’s press run of the new Original Family Pennysaver was 13,000. Most will be read by Herkimer county folks with additional readers in Oneida County (Utica and surrounding villages). When you expand your advertising circle, you will expand your results.

Canal Days and Chicks Along the Mohawk by Katie Ranno During the weekend of Aug. 11, the town of Little Falls joined together to take part in the annual Canal Days celebration, which stretched from the main part of Little Falls all the way to the other side of the canal. Residents of Little Falls, such as Esther Haughton, said that Canal Days has become a yearly tradition for them. “I go [to Canal Days] to meet with old friends and see the vendors,” she commented. Vendors in the main part of Little Falls varied in goods, from homemade popcorn all the way to homemade air fresheners. Staple organizations of Little Falls also made an appearance at the event. The First Baptist Church of Little Falls set up their first booth at the event, giving away free cheese and water bottles to those that passed by. A representative from First Baptist said, “[Having a booth at Canal Days] is a good way to reach the community and promote the church’s ministry overall.” On the other side of the canal, at the hidden, scenic gem known as Canal Place, another facet of the Canal Days celebration was taking place, known as Chicks Along the Mohawk. Chicks Along the Mohawk is a juried craft show just for female entrepreneurs. First time Chicks Along the Mohawk vendor, Bethany Haas, owner of the

“Crafty B Designs” booth, was very excited to be apart of this side of the Canal Days celebration. “It’s a really cool opportunity

and a nice area to be selling in,” she said. Vendors sold goods that ranged from jewelry all the way to cupcakes, maple cotton

candy, and uniquely shaped soaps. Other activities during Canal Days included live music and hot food vendors.

Whatchamacallits Once upon a time, not so long ago, milking cows was not something one did by machine. Many (especially younger folks) romanticize the traditional concept of hand-milking after hearing stories at our grandparents’ knees. But our pastoral image of the farmer rising early and perching atop his three-legged stool, yawning and resting a tired head against the warm flank of his cow is not quite an accurate portrayal. A jittery cow stomping nervously in dense mud, tail whipping at flies and striking the frazzled farmer’s face is more correct. Eye injuries in milkmen/maids were the result. Hence the invention of this tool: the cow tail holder. One end of the instrument is fitted around the cow’s leg while the small end clamps onto the

This tool is from the collection of Willis “Skip” Barshied tail, holding it in place. Edwin Delhi, NY patented a cow tail G. Farnham of Dover, Maine holder and a 1935 newspaper invented this product, patent- details inventor Albert Giese of Benton Harbor, MI officially ing it on January 13, 1891. He is not the only person to revealing his cow tail holder to National Inventors’ claim this invention, however. the In 1901, Charles Colwell of Congress.

Mohawk Valley families honored at DiamondDawgs Game by Elizabeth A. Tomlin The Mohawk Valley DiamondDawgs baseball team and management honored their host families at the July 29 home game at the Veterans Memorial Field in Little Falls, NY. “Personally, this has grown into a relationship between our family and the DiamondDawg organization,” said Chris Nellis of John G. Nellis Dairy near Fort Plain. “We have hosted players on the farm for two years now.” Although most families usually host one or two players for the season, this year the Nellis family was recognized for hosting four baseball players, including Jesse Burratt (Baton Rouge Community College). At the game Burratt was awarded a plaque by New York Yankees all-time great pitcher Tommy John and DiamondDawg President &General Manager Travis

Heiser, for pitching the DiamondDawgs' first perfect game. Burratt had pitched a seven-inning, no-hitter in a double-header at Bellizzi Field in Albany- recording the first no-hitter in the Perfect Game Collegiate League and in the Mohawk Valley DiamondDawgs franchise history. “I have been around baseball all my life and I think that the people of the Mohawk Valley have a great opportunity to take the DiamondDawgs Baseball Team and make it the number one summer collegiate baseball team in the country,” said John. “We have had over 30 players, in 5 years, sign professional baseball contracts,” Heiser reported. Other host families recognized at the game included Jeff and Joanne Heiser, Bob Failing, Paula Colvin, Sandi Sheperd, Jean and Barry Smith, the

Volunteer caters to those with special needs by Tony LaRussa, Tribune-Review Kristen Wolfe was looking for a way to continue her family’s tradition of volunteering when she began attending Grove City College in 2009. “During my freshman year, I got involved with a group called Young Life, which has an outreach ministry for teenagers,” said Wolfe, 20, a senior psychology major. “But there wasn’t much available for teenagers and young adults with special needs, which is a group of people I really loved working with while volunteering at a summer Bible

camp back home.” When the Fort Plain, NY, native learned that Young Life operates Capernaum clubs in other parts of the country for young people with physical and mental disabilities, she decided to start chapters in the Mercer County communities of Grove City and Greenville. In recognition of Wolfe’s dedication to helping others, she has been selected to receive the Trib Total Media’s Volunteer of the Year award. Wolfe said the Capernaum clubs she helped start are a way for young people with mental and physical

disabilities to experience activities that other children enjoy. “Unfortunately, our culture doesn’t always welcome them and is quick to write them off. Having the clubs allows them to get together for food and games, go out for lunch, take walks or just hang out and watch a movie.” While Wolfe is elated at being recognized, she believes that the people she assists are the ones who deserve recognition. “I love these kids. They’re the bright light in my week,” she said. “Having the chance to be their friend has taught me

Kristen Wolfe, 20, has been actively volunteering since 2008. She continues to give despite personal health obstacles.

Page 37 so much and helped keep me going during some difficult times.” Brad Mowry, an area director for Young Life who nominated Wolfe for the volunteer award, said that in addition to balancing her ministry while carrying a difficult academic load, she has grappled with significant health problems. Last summer, Wolfe was diagnosed with narcolepsy and in the fall she learned that she had to undergo gall bladder surgery. “Even while facing these challenges, Kristen continued to volunteer,” Mowry said. “And to ensure she wouldn’t miss any Capernaum Club meetings, she scheduled her surgery over Thanksgiving break. “She possess a quality rare in our society today of putting others before herself. Her sacrificial service, maturity and wisdom beyond her years make her an excellent role model and very deserving of recognition,” Mowry said. Wolfe said her family participates in volunteer projects such as providing meals to disadvantaged people. Since 2008, she has volunteered at a summer youth camp in Rome, NY, for children with special needs. Wolfe is the daughter of Pat and Kate Wolfe. She has a sister, Caribeth, 22, and brother, Tim, 17. Learn more about metal roofing & siding Multi Family Yard Sale

by Dr. Leonard Perry, Extension Professor, University of Vermont When choosing low shrubs or woody groundcovers for landscaping, consider some of these northern natives. All the following plants are hardy to at least USDA zone 4 (-20 to -30°F low in winter), and grow in sun or at least part shade unless noted for full sun. Calling our region home, they are often better adapted than non-native plants (meaning they need less care and have fewer pests), and may provide more benefits to birds and pollinators. Small shrubs are generally those under 6 feet high, fitting well in the middle to front of borders, and for low plants along building foundations. They are often effective planted in masses. Those with attractive flowers or leaves can be used as specimens, either alone or planted among other shrubs and perennials. The black chokeberry (Aronia melanocarpa var. elata) is very hardy, reaching up to 5 feet high

with an upright oval shape. Yet it can spread a bit wider. The shiny green leaves turn a wine-red in fall. The white flowers yield purplish-black berries favored by wildlife. You may find cultivars (cultivated varieties) with larger fruit and even brighter fall color. This plant is adaptable to either wet or dry sites. The quite hardy fragrant sumac (Rhus aromatica) needs to be sited carefully as it can spread rapidly to 8 feet or more. This makes it a good choice for slopes, especially ones that are dry, or too steep to mow. The glossy green leaves with three parts (“trifoliate”) somewhat resemble poison ivy leaves, and turn lovely fall colors in yellow, orange, or red in some years. When crushed they are aromatic, hence the species name. While the species can reach up to 6 feet tall, the cultivar ‘Gro-Low’ reaches about half that. The snowberry (Symphoricarpos albus var. laevigatus) is mainly grown for its white fruit on arching branches. This plant

too can spread to 8 feet, but not as aggressively as the sumac, so is good too for slopes. If it becomes scraggly after a few years, prune back in spring to near the ground and it will regrow. There are several native shrubs you might consider for landscapes that are even shorter, only reaching 3 to 4 feet tall. One of these is the less common sweet fern (Comptonia peregrina) which is not a fern at all but has fernlike, dark-green leaves. It too is a good choice for dry slopes or banks, is quite hardy, and will take sun or shade. Leaves on these are pleasantly aromatic, somewhat like leaves of the bayberry. The bush honeysuckle (Diervilla lonicera) is not a honeysuckle, but has light-yellow flowers like those of the honeysuckle vine. Leaves turn nice fall colors. It only gets about 2 feet high, but can slowly spread to 5 feet or so. It is good in sun or shade, and tolerates wet or dry soils. You may find the cultivar ‘Copper’, so named for its coppery

new growth. The hardy native bush cinquefoil (Potentilla fruticosa) has small yellow, rose-like flowers in June and then sporadically through the summer. There are many readily available cultivars of this shrub from 2 to 4 feet high, and with various flower colors including white, pink, reds, and oranges in addition to yellows. It grows rapidly, and grows well in dry and infertile soils, but needs sun. You may find the species in old pastures, and cultivars along foundations and in borders. Native spreading groundcovers under a foot or so high, and that prefer acidic soils, in-

clude three berries. Bearberry (Arctostaphylos uva-ursi) is good for sandy or gravelly soils, and is salt tolerant. It has bright red berries in fall and bronze-red leaves then. Lowbush blueberry is the native version of the larger-fruited ones we all know. Mountain cranberry or lingonberry (Vaccinium vitis-idaea) prefers cool sites, has evergreen leaves, and small white to pink flowers. Plant at least two plants of the latter for best fruiting. For a low, evergreen groundcover you might consider the common juniper (Juniperus communis) or, better yet, one of its cultivars such as Blueberry Delight, ‘Berk-

shire’, ‘Green Carpet’, or the upright ‘Pencil Point’. You’ll see the native species growing in old pastures just as with cinquefoil, and the cultivars along walks, fronts of borders, and in sunny rock gardens. For more examples of native plants, including larger ones, as well as many other good shrubs and trees for Vermont, see Landscape Plants for Vermont, available from the Vermont Master Gardener program (www.uvm.edu/mastergardener/). Check your state nursery association for local nurseries that carry a wide range of hardy landscape plants (greenworksvt.org).

Gardening in a drought by Dr. Leonard Perry, Extension Professor, University of Vermont Even if not officially in drought conditions, many areas in recent summers have had less than normal rainfall or very dry surface conditions. If one looks at the climate data (weather.gov), many areas have had 2 week periods with no rain, or with very little, or any rain came all at once in one area and none in another nearby. The rule of thumb for plantings is an inch of water per week. If you’re faced with dry garden conditions, there are some ways to keep your plants and lawn alive while minimizing water usage. Cultural practices • If still planting flowers and vegetables, use wider spacing to reduce competition for soil moisture, mulching between plants. • Incorporate organic matter into the soil, which will aid in water retention. Compost also adds nutrients, but breaks down

faster than peat moss — another common amendment. Peat moss lasts longer in the soil, at least a year or more, but adds few nutrients and acidifies the soil (which is easily corrected with liming). • Use three to four inches (after settling) of organic mulch (pine or cedar bark, weed-free straw, wood chips, or similar) to prevent soil from drying and losing moisture to the air. Keep mulch away from trunks and off the top of desirable perennials. Using plastic mulches or weed fabric around shrubs, in paths, or in vegetable and annual flower gardens in which plants are spaced regularly can help as well. Or place thick layers of newspapers in rows, covered lightly with mulch as you do with the weed fabric. • Fertilize less, both less in amount and less often, and avoid applying too much high nitrogen fertilizer. Too much nitrogen results in excessive

growth and increased need for water by lawns and plants. Organic fertilizers provide less nitrogen to the soil and usually release it slower over a longer period, as well as help improve soil humus, which helps hold water. • Choose and place plants properly. Don’t select plants that prefer moist conditions, and place them in a dry area. Choose plants more resistant to drought. These include many other plants in addition to cacti and succulents, such as those with deep taproots (baptisia or false lupine), thick storage roots (daylilies), or waxy coated leaves (sedum). Perennial flowers need water when newly planted, but once established require much less water than annual flowers. Native plants may be a good choice as well. • Don’t apply pesticides that might cause injury to stressed plants, or which in heat need to be watered in. • Avoid pruning when

plants are stressed and not growing and are thus unable to heal wounds quickly. Pruning also may stimulate side shoots and more growth, creating the need for more water. • For evergreens, use antitranspirant sprays on leaves to help prevent water loss. Or erect windbreaks around such plants, if they’re small or new and in a windy area. Burlap strung between posts is effective. For routinely windy sites, consider planting a more permanent windbreak of spruces, firs, or other evergreens to screen other plantings. • Water slowly, well, and deeply every couple days or even less unless plants wilt or soil is quite poor. This promotes deeper rooting than light daily watering. • When watering, don’t use sprinklers unless on areas of lawn. They waste water, often in dry conditions with half evaporating. Rather hand water, using a reduced flow rate. Especially with dry or crusted soil, a forceful stream of water will simply run away from the desired plants. There are many inexpensive watering devices that easily control the flow right at the hose end, including shut-offs and “water

breakers”. This way too, you can turn the water off while moving between plants and locations. • If you haven’t planted perennials and woody plants yet, wait until the weather moderates and rains return. I often wait until early fall to plant these, as the days are cooler and less stressful on the plants, there is generally more rain, and there is still time for plants to establish before winter. Plus I find it is easier to water a group of pots that to drag the hose all over the yard, often forgetting to water some new planting. • Use hoeing and soil cultivation of weeds sparingly. Continually disturbing the soil surface will result in it drying out much faster. You may have to cut weeds off at the soil surface, or use contact or systemic herbicides and save the cultivation until drought conditions ease. At least the bright side is that under drought, weeds won’t grow as fast either! But keep weeds down, as they compete with more desirable plants for water. Container plantings • Move container plants to more shaded areas, so the soil won’t dry out as quickly. • Use pottery containers

that are glazed on the outside, which prevents much water loss. Or use plastic containers which, if unattractive, can be set into more attractive outer pottery ones. • Don’t crowd too many plants into containers, or use large containers for large plants. This will help keep them from drying out as often and requiring watering daily or more often. Use water absorbing products in containers and hanging baskets. Lawns • If seeding or repairing lawns, use drought resistant grass types such as fine fescues. • Leave grass clippings after mowing to act as mulch, and recycle nutrients and moisture. • If water is not available, allow grass to go dormant. Unless there are extreme conditions for a long period, grass usually will begin growing again once conditions improve. • If your lawn routinely in summer dries up, such as on poor and sandy soils, consider investing in an inground irrigation system if possible and your lawn is a priority. If too expensive for a whole lawn, consider adding it in stages, or just in certain areas. • Consider turning some lawn into a mass planting of groundcovers this fall that won’t need mowing and that will withstand drought. • Don’t mow grass when it is dormant and not growing. Even when growing, set the mower height at two to three inches high. High mown grass develops deeper root systems that are better able to withstand drought. • Avoid walking and playing on dry, dormant lawns as much as possible. If water is restricted or in short supply, give highest priority to the following: • Newly planted trees, shrubs, and perennials • Newly seeded lawns or repaired lawn areas • Plants on sandy soils or windy and exposed sites • Vegetables when flowering Current information on drought conditions, with more information and maps, can be found at the National Drought Mitigation Center (drought.unl. edu). Save those tomatoes Is there anything better than a tomato, picked from the vine with the warmth of the sun still on it, given a quick rinse, and bitten into or sliced? Perhaps you prefer yours with a dash of salt, or combined with fresh mozzarella and basil, and a splash of balsamic vinegar. However you enjoy fresh tomatoes, you know that the local growing season doesn’t last forever. While the texture of a fresh tomato cannot be saved after the season, the taste and nutritional goodness of tomatoes, including Vitamin C and lycopene, are still present after freezing, drying or canning. Tomatoes are safely canned in a boiling water bath canner after some extra acid (2 Tablespoons bottled lemon juice per quart jar) is added. This will help prevent spoilage and deadly botulism. The best quality happens

when the tomatoes are peeled, cut, and quickly but gently boiled for five minutes before placing in the canning jars. The addition of other ingredients to the tomatoes changes the processing time, and sometimes the type of processing. Adding vinegar, peppers, onions, and other seasonings creates a pickled product with a higher acidity level than plain tomatoes. The necessary processing times for salsas or chili sauces are therefore shorter. However, an addition of peppers, onions, seasonings and even meat changes the acidity in the opposite direction and the resulting mixture now requires processing in a pressure canner. The pressure allows the temperature to reach 240 degrees, necessary to destroy Clostridium botulinum, the bacteria that causes botulism. To safely can a tomato

mixture, always use a laboratory-tested recipe. Many can be found in

the Ball Blue Book or on the USDA National Center for Home Food

Preservation website. If you can’t find a recipe to your liking, then can the tomatoes without any seasoning (except the necessary lemon juice) and add the other ingredients after opening the jar. Drying tomatoes in New York State requires a dehydrator with a thermostat and a fan. High humidity makes it impossible to sun-dry them here. Dip tomatoes (Roma or plum-shaped are best) into boiling water for about one minute and then core, peel and cut into 1/4” slices and place individually on dehydrator racks. Dry at 145 degrees for 10-18 hours. The time will be determined by the amount of moisture in the tomato. When the pieces become crisp, they are ready to be stored in airtight containers. Packages stored in a freezer will maintain excellent quality much longer than those stored

at room temperature. If you prefer to freeze tomatoes, don’t expect them to be used in salads or sandwiches. Freezing breaks the cell walls and the texture is greatly changed. Frozen tomatoes are excellent in soup, stew and sauce recipes. Tomatoes may be frozen raw after dipping in boiling water to loosen skins, then coring and peeling them. They may be placed in freezer containers whole or cut in pieces. For better quality and taste, core, peel and cut in pieces before cooking gently for 10-20 minutes (5-10 minutes if making juice.) For juice, press through a sieve to remove seeds. Cool the hot tomatoes by placing the pan into a container of cold water, then package in freezer containers. However you choose to preserve tomatoes, you will reap their nutritional benefits and their flavor year-round.
