The only months with higher sales were November and December. • Sales at bookstores in August 2011 totaled $2.4 billion. • As of October 2010, there were 79 million children and adults enrolled in school — from nursery school through college — throughout the United States. • The number of students age 5-17 who speak a language other than English at home was 11.8 million in 2010. Additionally, 8.5 percent of those children spoke Spanish at home. • Sixteen percent of all college students were 35 and older in October 2010. • Forty one percent of 18-24 year olds in the US were enrolled in college in 2010. • Fifty six percent of all college students in 2010 were women. I was encouraged by a friend to sit back, take a break. He said things could always be worse, so I did sit back, he was right, they got worse. I decided to laugh a little. Come and join me we can laugh together. An American Tourist, gazing down into the crater of a Greek Volcano said, “It looks like Hell”, The Greek replied, “It seems like you Americans have been everywhere. If you look like your driver’s license photo maybe you need an appointment with your doctor. Billy Sunday, the world famous evangelist, said, if there is no hell, a good many preachers are obtaining money under false pretenses. A seasoned politician is one who can recognize an unpleasant truth about his political friends and blame it on someone else. You know what I mean - blame it on Bush. •••

History seems to have a knack to recall a situation, point out a current problem and teaches how to solve it. While we should not dwell or attempt to live in the past we can learn from it. Possibly I can repeat a tale from American History and have it apply to our upstate economic situation, leaving us with a valuable insight. Remember the name, Major General William C. Mitchell? AKA Billy Mitchell? Billy was a young man when the two Wright Brothers gained worldwide fame by inventing or developing the first manned flight airplane at Kitty Hawk. To cut a long and interesting story short, from a very early age Billy looked into the future and saw the airplane would become the greatest war machine ever invented. In that dream he basically stood alone. He debated with superiors, the staff in the Pentagon and even the President of the United States. He was laughed at, ridiculed, threatened to be demoted and was demoted. American Generals and Admirals brushed aside his argument and told a confused public that Mitchell was a fantatical fool. Now, in the year 2012, ninety six years after Billy’s lessons at the Curtis Flying School in Newport News, VA, Billy Mitchell’s name has been nearly forgotten, the World’s most powerful war machine, the U.S. Air Force is ample proof that his dream was actually more than a dream it was a peek into our nation’s future. Is this not reasonable proof that the dream of one person should be at least listened to and studied. I do not take or wish for credit for the Dream of a Palatine Corridor Retail Business. I’m sure others have shared in the same dream. Is this dream not worth thinking about, with some affirmative action. Billy Mitchell’s dream changed our entire world forever. All we want to change is the employment structure for Upstate New York. Let’s Dream, Let’s Plan, and Let’s Create Businesses to give jobs to our people. The following is a quote in a letter from one of our Hello Again Readers. I truly enjoy and appreciate his thoughts, while in disagreement with his reasoning. This is a quote from a letter dated August 13, 2012 “In your recent commentary you praise capitalism but fail to mention its primary aim, which is the generating of capital. Profit is put above all considerations even the

good of the community, of employees, or the product/service a business provides (end of quote). I feel that I am back in college, enjoying a session in the debate club. Let’s follow the quote as an outline starting with Capital. Let the debate begin. 1. Capital: Without capital not one single business could be organized (born). Where does capital come from? It comes from some person, group or company who has earned and saved money from labor, and or previous profit. 2. Profit: When a business takes in more money than it has to pay out it is called profit, The condition of a company not making a profit is called “Broke” no employees, no benefits, no help for the community and its loss hurts all. In other words: No Capital - No Company, No Profit - No Company, No Company - No Community Benefit. Other numerous benefits come to a community fortunate to have a successful capitalistic business. Schools, houses, autos, sidewalk, roads, electricity, water, sewer, even churches benefit when the members obey God and either tithe or give as they have prospered. Again, no paycheck, no sharing or tithing. If in Denmark 90 percent of earned income goes to the Socialist Government and 10 percent tithed. Doesn’t that create a strange set of problems? As an example the villages of Canajoharie and Fort Plain received great benefits from the Beechnut packing company. Employees received paychecks, some for an entire lifetime. Most good people do not continually bad mouth, but rather appreciate their places of employment in our capitalistic system - proof every Monday they show up for work and every payday receive a paycheck. I wonder how well churches and charities prosper in a socialist society. England turned to socialism after the second World War and most of their churches closed their doors. Did a socialist order become their God? England was one of the world leaders in sending missionaries throughout the world. It is no longer true. You know the old saying from little acorns grow huge oak trees.

Keep your eyes on the road, your hands on the steering wheel, your right foot on the gas pedal, your cell phone in your pocket or pocketbook. Have a nice trip. CYC Boiling Pot 1st annual 5K race benefits Canajoharie Youth Center by Elizabeth A. Tomlin Over $3,000 was raised to support the Canajoharie Youth Center with the CYC Boiling Pot first annual 5K race. “The C.Y.C. was looking for a unique way to raise some necessary funds while involving and show casing our local community,” said race Director Tim Shepard. “Road races have greatly increased in popularity in recent years and we decided such an event was a good fit. The C.Y.C. board and the Boiling Pot 5K Planning Committee have been working together for months organizing an event that would appeal to people of all ages and fitness levels.” Shepard says that earlier this year, the former C.Y.C. director Vicky Everleth asked him to help plan a fundraising 5K run. “I thought it was a great idea,” said Shepard. “We formed a planning committee and hit the ground running.” No pun intended? Shepard joined the Board of the Community Youth Center and assumed the director's position for the Boiling Pot 5K. “It's been a real learning experience and a great time and we're looking forward to making this event bigger and better every year!” Shepard said enthusiastically. About 135 adults and 50 youth were entered in the race and a “1K Kids Fun Run” was held for the youngest children. The event had a festival atmosphere with music, food and activities for the kids as well

Shepard and the planning committee extend their heartfelt gratitude to all of the sponsors and volunteers involved who made this event a huge success. All proceeds raised from the race will be used to restore and improve programs and facilities at the Canajoharie Community Youth Center.

Chow Line: Now is a great time to try fresh herbs Last week, I used fresh dill weed in a recipe for the first time and was surprised how mild it was — very different from from the dried dill I normally use. I want to try using more fresh herbs. Any ideas on where I should start? Sure. But you should know that the first rule of cooking with fresh herbs is this: There are no rules. Have fun and experiment, using small amounts at first as you figure out what you like. Using herbs is a great way to add rich flavor to foods. They are often touted as alternatives to salt, which is linked to an increased risk of high blood pressure, but

they can also add zest when you reduce sugar or fat in a recipe. Ohio State University Extension has a free fact sheet, “Selecting, Storing and Using Fresh Herbs,” available to download at http://go.osu.edu/oh iolineherbs. Some of the advice it offers includes: • Handle fresh herbs gently. Oils that give herbs their aroma and flavor readily escape from the leaves, seeds and stems if they’re injured. • If you have more of an herb than what you can use immediately, you can store it in the refrigerator for a week or more by trimming off the ends of the stems on the diag-

onal and putting them upright in a tall glass or vase with an inch of water. Cover it loosely with a plastic bag, allowing air to circulate. Change the water daily. • Extended cooking will weaken the flavor of fresh herbs, so for soups or stews, add them in the last 45 minutes of cooking. On the other hand, in cold foods such as dips, dressings, cheeses or cold vegetables, add fresh herbs several hours or overnight before serving. • If you’re not familiar with the flavor of a new herb, mix it with margarine or butter and let it set for about an hour. Then spread it on a plain cracker to taste.

The fact sheet also lists some popular fresh herbs, from anise to thyme, and suggests dishes to try them in. The Academy of Nutrition and Dietetics also has some tips in an online slide show, “Flavor Your Meals: Must-Have Summer Herbs,” at http://bit.ly/flavorherbs. It offers information on using both favorite and uncommon fresh herbs, including rosemary, mint, basil, dill, oregano, cilantro, bee balm, chives, lavender and lemon verbena. Ayres Memorial Animal Shelter breaking ground for surgical suite in Sprakers by Elizabeth A. Tomlin “This has been a goal for six or seven years,” said Ayres Memorial Animal Shelter Board of Directors Vice President Joseph Rosemyer. Rosemyer was speaking of the surgical suite that is under construction at the Sprakers’ Shelter. “Right now we have to transport all animals to the vet for any surgery - spaying and neutering, or whatever needs to be done.” Rosemyer said the new building will be 32’ x 52’ and will be used primarily for surgical prep and operating as well as a “meet and greet room,” which may also be used to conduct rabies clinics, dog obedience training, animal assessment, indoor lawn sales and other activities. Special fundraisers, local foundations, bequests and generous contributions from the public and local businesses are funding the project. “We extend our heartfelt gratitude to these people,” said Board

President Ann Aksztulewicz. The first contribution was made to this fund in October 2005. Thomas Armitstead, DVM, drew up the plans for the surgical suite. “In addition, we have made many major improvements at the shelter during the past few years, and will continue to do so,” said Aksztulewicz. “We are fortunate to have a dedicated staff and volunteers.” The Ayres Memorial Animal Shelter is a 501(c) not-forprofit “Quality of Life Shelter” established in 1973. Claire Custer is the supervising manager at the Shelter. “Quality of life means that we do not euthanize for lack of space or length of stay,” explained Aksztulewicz. “Euthanization is only considered if an animal is severely ill or injured - or is extremely aggressive.” The shelter covers all of Montgomery County west of Amsterdam and contracts with nine towns and two vil-

lages. “The declining economic conditions have had an adverse effect on animal welfare,” confirmed Aksztulewicz. “The low cost of spay and neuter clinics sponsored and held by the Shelter will motivate people to have their animals fixed, as well as keeping them up-to-date on necessary shots. Above all it will be a deterrent to the over abundance of cats and dogs in our service area, thus minimizing the number of strays and the abuse they may endure.” Target date for the completion of the new surgical suite is October 2012. “We encourage everyone to support your local animal shelters,” remarked Board member Carolee Start. “They provide a vital and necessary service to your community.” The Ayres Memorial Animal Shelter is located at 133 Hilltop Road, Sprakers, NY.
