Storage Guidelines for Fruits and Vegetables Cold storage of fruits and vegetables was used extensively by our ancestors to keep food after the harvest season. In modern times, the year round availability of fresh produce in the supermarket has reduced the use of home storage. However, even today there are benefits of home storage, which make it a good alternative to buying produce from the store. Most importantly, home gardeners often have excess fruits and vegetables that cannot be con-
sumed immediately but would store well. Even those without gardens can buy food ‘in season’ when it is fresh and inexpensive and then store it at home until a later date. Both these options are cheaper than buying food in the winter when it is often quite expensive. According to Webster’s New World Dictionary of the American language, the following provides a good definition of the word “ponder.” Ponder = to weigh mentally; think deeply about; consider carefully; to meditate. Now that we are learned students of Mr. Webster, lets draw up a chair around the old chunk stove, snack on some salted peanuts, sip on a Coke or Pepsi, and settle down for a serious mental weigh-in, or ponder. Lets get rid of the nonsense first and then get down to some serious considering or meditation. First ponder: If it takes a hen and a half a day and a half to lay an egg and a half, how long would it take a monkey with a wooden leg to kick the seeds out of a dill pickle? I confess at different times in the past years I have pondered this problem. I have also asked my wife to help me ponder. After a few seconds of deep consideration she asked, “What happened to the poor monkey’s leg?” which left us both pondering about the leg. Maybe he was hanging by his tail in a tree next to Darwin’s relatives when a great explosion—or a big bang—happened. Causing his tail to give way, he fell and crushed his leg. Is it possible he was an evolutionist and thought that a 3-legged monkey would be better? While we were still pondering, I remembered the letter I received a couple of years ago admonishing any mention of religion or politics in this paper. In keeping with her advice, I guess I should apologize to any of Darwin’s relatives. Maybe they were not even there, but in some other trees picking fleas off each other, popping the fleas like M&M’s. On the other hand, maybe whatever happened to those early Darwin relatives and their flea harvesting—should stay there. You know if it happened there, it should stay there. Furthering our attempt to ponder, what conclusion do you think would be appropriate for this? How much wood would a woodchuck chuck if a woodchuck could chuck wood? Approaching this ponder from a countryman’s point of experience we probably should discuss— are we pondering hard wood? Soft wood? Fine grain? Or what? On the other hand, why was the woodchuck chucking wood? It seems that wood chucking is a job for beavers. Attempting to be fair to Mr. Darwin and his famous theory of evolution, is it not possible the beaver with his advanced wood chucking capability evolved from the woodchuck? All he had to do was grow a big bulbous tail, grow oversized buckteeth, learn how to swim and build his house above water. Who knows? Maybe Darwin was right all the time. Let’s take a break and indulge in a little Irish blarney: I spend so much time chatting about Ireland you might wonder if I was born over there. No, I was born in a farmhouse in the township of Middlefield, NY. I wanted to be close to my mother that day. An Irish farmer said, “I know why the sun never set on the British Empire. God wouldn’t trust an Englishman in the dark.” I’m a fan of Fox News, which claims to be conservative, but on one of their—five— programs I wonder what image they are posturing. It appears to be spiked heels, long legs, uncovered thighs, low-cut tops. What’s next? Buns? Before we run out of paper, let’s get back to mentally weighing.

While some of this may seem like blarney, it can’t really be true blarney. It happened here in America from a man who claims to be of American birth, so maybe it should be thought of as bullpen apples. During President Obama’s July 13th speech in Roanoke, Virginia he said and punctuated with hand waving, “If you’ve got a business, you didn’t build it, somebody made it happen,” implying the government. Lets ponder this. “Henry Ford could not have invented and produced the Model T Ford if the government did not first build the roads.” I would suggest we send to our President a few old magazines, newspapers, and books with pictures showing teams of horses pulling one of Henry Ford’s Model T cars out of a mud-filled trench in the middle of a road. On the other hand it might not produce any thoughtful gain. Is it possible he does not ponder for himself but has the government do it for him? Now that would be tricky, wouldn’t it? A government in the year 2012 that thinks. I’m sure some of the country folks who were building dirt roads with picks, shovels, and horses would have appreciated some government help. It seems the government could have at least sent those country folks a few bottles of horse liniment for their aching muscles. On the other hand, maybe those dirt roads had to be built by the government before God could create horses, mules, donkeys, and oxen. Something to ponder about, isn’t it? I can see it all now. The government intentionally allowed those mud holes and broken dirt roads to be there so that farmers could make a few bucks dragging stuck Model T’s out of the unroad, road. Is it possible the government caused the mud to be manufactured too? A little more pondering might cause us to consider carefully. What, or who, is a political liberal? If I knew the answer, it would be foolish to ask the question. It appears a liberal can be likened unto a man sitting on the fence who cannot think deep enough whether to stay there or climb down and do something worthwhile. You know—the old saying— never do today what you can put off until tomorrow. Something may happen and you won’t have to do anything at all. When one of those fence sitters refuse to take a stand on an issue, are they not automatically allowing one side or the other to win? Now that’s a ponder. That’s a voter who has poked holes in his own influence or vote. The following is repeated from a National Press Association published column. “But hang on to your wallets: The Kaiser Family Foundation survey showed premiums for job-based family health insurance coverage has risen by nearly $2,400 since 2009 when Obama took office.” Most of us in this country are citizens with the right and privilege to vote. Like the liberal who stands for nothing, those who do not vote have actually joined the liberals. Soon upstate New York will put on its colorful fall mackinaw. Warm days and cold nights leading into three to four months of winter. Build up your pile of firewood and packages of popcorn. Even the squirrels are preparing for winter with its snow and cold weather. In the Holy Bible, the good Lord says, “Come on to me who are heavy laden and I will give you rest.” When your personal pondering becomes too deep to handle alone, turn to God in prayer—you will find help. Fort Plain’s Summer Concert Series ends the season with The Dependents by Elizabeth A. Tomlin On Thursday Aug. 23rd, The Dependents performed for an eclectic crowd closing out the 2012 Fort Plain Summer Concert Series in Haslett Park. This opportunity gave original band member Christian Arndt a chance to show off his new Gibson Les Paul guitar to local fans. “I started lessons when I was in 3rd or 4th grade,” Arndt said. He and his sister Jocelyn have been performing locally in public together for five years, adding drummer Evan Searles and bass player Valerie Hoffman along the way. The Arndt siblings credit their parents for their success. “They’re very supportive,” said Christian. “They’re awesome!” Jocelyn agreed. The Dependent’s have acquired a large local following and over the past two years word has spread throughout upstate New York about their talent. Their first recording session took place this summer, culminating with the release of the CD, “Dry Cereal,” which has received excellent reviews. According to Fort Plain Village Clerk Dianne Hoffman, who’s in charge of planning the summer concerts, local musicians are featured in the weekly summer event. However, a variety of quality music is the goal. Hoffman isn’t exactly sure of the date that the summer
concerts began. “It’s been going on a long time,” she stated. “I remember it taking place ever since I was in high school. I remember Rex Pryor played there.” Hoffman says that Pryor was the band director at the high school. Planning for the summer concerts take about a year. “The grant process starts right now,” Hoffman emphasized. Concerts begin the first Thursday
following the 4th of July and the are six concerts each summer. Bands interested in performing for Fort Plain’s 2013 Summer Concert Series may contact Hoffman at 993-4271 for more information. Fort Klock celebrates 40th annual Craft Fair by Elizabeth A. Tomlin Despite the high winds and inclement weather, a huge amount of people crowded in to Fort Klock’s 40th annual Craft Fair on Sept. 8th and 9th to shop, bargain and buy from the 96 crafters who had set up booths for the weekend. “The event went very well, despite the storm,” reported director Cindy Sinchak. “The crafters all did very well.” Sinchak, who has been the director of the event for the past nine years, said that some of the crafters have been coming to the event for many years. Such is the case with Gail LaBoissiere, who hails from Melrose, NY, and has been attending the fair as a crafter for 25 years. “I like the area,” LaBoissiere said, cutting out a pattern while she talked. “I like the people here and the Fort

We like the fact that the proceeds go to the fort.” It seems that other people are also appreciating the many hours of hard work that Sinchak puts into making the event a success for everyone. Crafter’s booths were packed with customers and it was hard to move between the booths as people, their arms laden with packages, crowded the walkway. Interested in joining the crafters next year? Whatchamacallits Rushlight holders are one of America’s earliest lighting devices. In colonial days, before wax candlelight, these are what would light people’s homes. However, rushlights are more a British tradition than an American one. Because they were an important (sometimes sole) light supply, families would have bunches of rushes prepared in advance, much like stacked wood or buckets of coal is done for fuel. Rushes would be picked from the swamps, peeled back and hung to dry. Once dry, they would be dipped in animal fat and pinched in the top of the holder shown here. The rushes were varying lengths so therefore would burn at differring amounts of time. Estimates range from merely 15 minute burns to just
under one hour. The rush was typically held at a 45 degree angle. Held too vertically, the flame would not give enough light; held too horizontally and it burned too fast. References to rushlight holders in folklore and literature include the classic works of Anne Brontë and Charles Dickens or the famous Aesop’s Fables, such as the one below: “A rushlight in love with its own brilliancy once boasted that its light was brighter even than that of the sun, the moon, and the stars. Just then a door opened, and a puff of wind blew it out. On lighting it, its owner said: ‘Cease now your boasting. Be content to shine in silence. Heavenly lights do not blow out. Know that not even the stars need to be relit.’”

by Larry Cox Rookwood vase Q: While attending a church sale in Iowa earlier this year, I spotted a Rookwood vase, which I bought for $100. After returning to my home in Texas, I asked an antiques dealer if he could identify it for me. He claims it is the work of Ed Diers, one of his poppy patterns executed on a vellum flaring vase. He could not give me an idea of its value, and that is why I am writing you. — Betty, College Station, Texas A: You got quite a deal. One of the better references for this type of ceramics is “Warman’s Rookwood Pottery: Identification
and Price Guide” by Denise Rago and Jonathan Claney (Krause Publications). According to this reference, your vase was made in about 1927, and in mint condition is valued in the $4,000 to $6,000 range. This process was introduced in 1851 and remained popular until about 1875. You picture appears to be from the 1870s and would probably retail for about $50. Q: I inherited a lithograph from 1908 entitled “Winter in New Hampshire.” Does it just have sentimental value or is it a collector’s item? — Christine, Apple Valley, CA. Selecting and storing wood Because a lot of energy can be wasted burning wet wood, you should use wood that has been properly seasoned. Properly seasoned wood is harvested in the spring and allowed to dry throughout the summer. Look for wood that is of even color, without any green. It should have a mois-
ture content of 20 to 25 percent by weight. Some well-seasoned wood can in fact be too dry for today’s airtight modern stoves. If you place wood that is too dry on a bed of coals, it will instantly give up its gases as smoke, wasting unburned smoke and producing creosote buildup.
All species of wood have a similar heat (Btu) content on a per pound basis when completely dry. Therefore, denser woods will generally cost more and burn longer. Woods like oak, hickory, and pine will burn overnight. Aspen builds a hot fire, which helps clean the chimney.
Store your wood away from the house in case termites discover the woodpile. The top of the pile should be covered, but leave the sides open so air can circulate. If possible, store the wood a foot off the ground to keep it dry. Source: energy.gov

Fall Heating Choosing and installing wood- and pellet-burning appliances When choosing a wood- or pellet-burning appliance, it’s important to select one that’s properly sized for the space to be heated. When an appliance is too big, residents tend to burn fires at a low smolder to avoid overheating, which wastes fuel and is one of the biggest causes of air pollution. A reputable dealer should talk with you about size requirements, but a good rule-of-thumb is that a stove rated at 60,000 British Thermal Units (Btu) can heat a 2,000-squarefoot home, while a stove rated at 42,000 Btu can heat a 1,300square-foot space.
Wood-burning appliances and fireplaces may emit large quantities of air pollutants. Wood smoke contains hundreds of chemical compounds including nitrogen oxides, carbon monoxide, organic gases, and particulate matter, many of which have adverse health effects. In many urban and rural areas, smoke from wood burning is a major contributor to air pollution. Because of this, some municipalities restrict wood heating appliance use when the local air quality reaches unacceptable levels. Others restrict or ban the installation of wood-
burning appliances in new construction. Before installing a wood-burning system, you should contact your local building codes department, state energy office, or state environmental agency about woodburning regulations that may apply in your area. If you have an older wood-burning appliance, consider upgrading to one of the newer appliances certified by the U.S. Environmental Protection Agency (EPA). They include a catalytic combustor that allows combustion gases to burn at lower temperatures, thereby cleaning the exhaust
gas while generating more heat. All woodstoves sold today should bear an EPA certification sticker. High-efficiency appliances not only have lower emissions but they are also often safer, because complete combustion helps to prevent a buildup of flammable chimney deposits called creosote. If you want to retrofit an existing non-catalytic wood-burning appliance with a catalytic combustor, you can buy a catalytic damper. These are available as kits and are usually installed in the flue collar. Source: energy.gov

Cabbage comes in season around the end of summer when the weather begins to cool. Once the cold autumn months begin to roll in, cabbage can be used in a variety of ways from soups and salads to main dishes. September starts our harvest season for cabbage and it is easy to get your hands on and enjoy this unique and versatile vegetable! Cabbage may not be included on everyone’s grocery list, but it is versatile and nutritious. According to More Matters campaign, cabbage is
probably more recognizable as sauerkraut or Cole slaw to baseball fans and picnic goers. Hundreds of varieties of cabbage are grown throughout the world, but the most common in the U.S. are green, red and Savoy. When choosing cabbage, look for solid, heavy heads with leaves full of discoloration. Cabbage should be stored in a plastic bag in the refrigerator. Keep cabbage chilled even after cutting. After cabbage has been cut, try to use the remainder within two days. Cabbage can be stored up to seven days. Cabbage is a low calorie food and contains a variety of vitamins and antioxidants. Cabbage is also a good source of fiber! There are a variety of

Cut into small chunks and place in a large bowl. 3. Add orange juice and stir. 4. Add cabbage, raisins and yogurt. 5. Mix lightly and chill. Yields six 1-cup servings
