February 9, 2013 Hello Again, This is America. America — the land of common dreams and threads. Where Native Indians lived as tribes and believed no one owned the land — their common thread — freedom to direct their tribal way of life. A land which people all over the world dreamed of — sacrificed, left their homes, friends, and families to travel on wooden wind-driven sail ships and later even millions more by coal fired steam ships to claim a new life of freedom. The common thread — freedom — where a man could be his own man, not a possession of a king. A thread they all shared — the right to own their own land, freedom of religion, and eventually freedom to establish their own government, and what a government they built. The thread which has shared in and helped shape democracy throughout so much of the world. This government was of the people — owned and managed by the people, not a huge central government — which will eventually control the people. Are we not a society of common threads? There is one thread more common than most. That thread is the love of homemade apple pie with a slice of old-fashioned cheddar cheese. Now we have a local prize winning cheddar cheese plant right here in Palatine Bridge. The Palatine Cheese Company. If you haven’t tried their famous 1st prize winning cheddar cheese, you are truly missing out. A special treat. I refer to Palatine Cheese as ‘our cheddar’ as it is made right here in ‘our valley’. When we travel to Florida we take New York State products as gifts to our friends. Naturally these gifts include apples, apple cider, honey and Palatine Cheddar Cheese. The biggest hit is the cheddar cheese. The next time you intend to visit friends, take along a pound or two of our cheddar cheese — the Palatine Cheese Factory cheddar. Your friends will know you really care. Are we not complaining that everything is made in China? Why not support a movement to purchase and use American made — Palatine Cheese is as American as Paddy’s Pig is to Ireland. Try it, you may like it — no, you’ll love it or I promise not to give your money back. You know how I hate to chatter about my friends unless I get a chance, but I can’t help myself with this little bit. See if you can believe, I have a camping friend who lives near the Tappan Zee Bridge — that is about four months of the year. Three — four months is at the St. Johnsville camping grounds and the remainder of the year either on the road or in Florida. He claims he was in the United States Marine Corps and retired as a police officer from the Big Apple Police Department. See if you can believe this — he claims he never heard of eating apple pie with cheddar cheese. In my opinion if the good Lord had inspired writers to write, the Holy Bible since the Declaration of Independence, he would have made it a sin to not eat apple pie with cheddar cheese — especially New York, Herkimer/Montgomery County, cheddar cheese. History claims that Little Falls in Herkimer County was the world headquarters for the

production of cheddar cheese. It has been written that Little Falls — Herkimer County cheese established the price for cheddar cheese all over the country and maybe the world. Herkimer County cheese was known by cheese lovers worldwide. In Little Falls — Cheese Day — was every day. Hundreds of wagons of cans filled with farm fresh milk were delivered by horse and wagon to the cheese factories. This chatter is not blarney. It’s the truth about cheddar. For the New York World’s Fair, a 34,951 lb. block of cheddar cheese was produced. It was estimated that size would use the equivalent of the daily milk production of 16,000 cows. In 2010, the United States produced 3,233,380 lbs. of cheddar cheese. I wonder, has any pizza maker ever tried cheddar cheese instead of mozzarella? Square dancing on Friday nights at the local Grange Hall and apple pie with cheddar cheese are woven into our early American rural culture. I can still hear the fiddlers, accordion players, saxophone or clarinets, drums, and even the piano. A good banjo player really added to the country sound. Naturally, the square dance caller set the tempo for every dance. We should have recorded bands such as Ken Haith with his band and caller Harold Brazee. By profession, Ken Haith was the postmaster in Cherry Valley. Yet, by his heart was a square dance bandleader. In Otsego and Delaware counties, Ernie Russ with his band was the man. Two boys, Pat and Mike, from Ireland by the way of Arizona snuck over the state line into Texas and were caught rustling cattle. After a short trial, both were sentenced to a hanging. They strung up Pat with a loose rope which slipped and he fell free into the river below and escaped. Mike said, “Boys be sure you tie a better knot. I can’t swim.” “How could you swindle those honest people who trusted you?” the justice asked. “Your honor,” the conman answered, “It’s nearly impossible to swindle someone who doesn’t trust you.” A blindfolded prisoner, standing 20 paces in front of the firing squad, was asked if he’d like one last cigarette. “No thanks,” he replied. “I’m trying to quit.” A mother asked her son why he lied so much. He answered, “I’m practicing to become a lawyer or a weatherman.” Mom replied, “You already qualify to be a politician.” It’s about noon Thursday. The weather report is that we are going to be hit with a major snow storm. If you are reading this, it’s probably Saturday or Sunday. Now you know if the weatherman was accurate, helping the truth out a little, or still practicing his profession of being a well-paid liar — maybe running for a local office. Sunday is known as the day of rest — the perfect day to go to church with your family or a friend. Give thanks unto the Lord and enjoy a dinner. The Bible says we should pray without ceasing. I take that to mean we should always be grateful, neighborly, and willing to obey and serve the Lord. Until next time — while flying through this life — travel with God as your pilot. Floral terms to know Before discussing table settings for their weddings, many couples find it helpful to brush up on some floral terminology before visiting florists. It can make you appear more knowledgeable and prepared if you understand what will be discussed and are able to choose what you want. It also helps to ensure your money is being spent in the best way possible. Here are some

common and some lesser known florist terms that can be advantageous to know. • Biedermeier: A nosegay arranged tightly with concentric circles of differently colored flowers. The flowers are wired into a holder with only one type of flower in each ring. • Bouquet: A dense bunch of blooms that are kept together in a bouquet holder, wired or tied with ribbon. • Crescent: One full flower and a

flowering stem wired together to form a slender handle that is held in one hand. • Garden: A centerpiece featuring wildflowers. • Nosegay: Small, round bouquets composed of densely packed round flowers and fill. • Oasis: Specialized foam that is used in bouquet holders and centerpieces to retain water and keep blooms fresh. • Pomander: A flower-covered ball that is suspended from a rib-

bon. It is often carried by child attendants. • Posies: Smaller than nosegays but similar in design. • Presentation: A bunch of longstemmed flowers cradled in the bride’s arms. It’s sometimes known as a pageant bouquet. • Topiary: Flowers trimmed into geometric shapes. • Tossing: A smaller copy of the bride’s bouquet to use in the bouquet toss.

St. Johnsville ice-skating rink draws community together

by Elizabeth A. Tomlin The idea came to Chris and Shelley Arduini of St. Johnsville in December. At the time they were brainstorming about what they could do with their children to enjoy the winter season. “There's not much available around here,” said Shelley, who has 4-year old twin girls and a 10-year-old daughter. “We decided that we would construct a place to ice-skate.” Arduini says that with the enthusiastic help and donations from the whole community they were able to put their idea into action right away on a piece of property she and Chris own. Shelley credits Lee Arduini, Neil Clark, Scott (Skeet) DeNinno and Karl Sorensen for their immediate response to help bring the idea to fruition. “The fire department supplied fire hoses and the village supplied water,” Shelley explained. “The whole community has been behind us all of the way!” The rink is 100 feet x 100 feet and constructed with a huge tarp for the bottom. “We had to order the tarp online,” Arduini stated. A tent, donated by Big Top Tents of St. Johnsville, has been erected at the site and folks from the area donate baked goods and hot refreshments for the skaters on Saturdays and Sundays. On weekends, the adults take turns at serving food, keeping the ice cleared with shovels and maintaining a bonfire for folks to warm up by. “Everyone helps out,” Shelley reported. There are also extra skates in various sizes that have been donated by the Arduinis and other people for kids who have none, but want to skate — although skates are not required to have a good time at the rink. “More skates are

Adults and older teens supervise and help the kids on the ice, although a parent or guardian is required to accompany any youngsters at the site. Lights are provided on Friday and Saturday nights, when the rink is opened until 9 p.m. The rink, located across from the St. Johnsville Marina, is opened to the public free of charge and is patrolled by the St. Johnsville Police. The skating rink is open any day for parents who want to bring their children down to learn to skate. “We have a lot of fun!” stated Arduini.

After dampening, the leather is “peened” with the flat end of the hammer in a series of light blows to form a serrated surface in order harden the edges and the heel. Traditionally, cobblers not only repaired shoes, but also made them. Today most cobblers focus on repair and restoration, instead of manufacturing. Many communities around the world have cobblers, and in areas where a shoe cobbler is not practicing, people can ship or mail shoes for repair.

In addition to resoling, shoe cobblers can also perform stretching, resurfacing, reshaping, reheeling, and other repairs. They can work with wood, jute, leather, synthetics, cotton, and other materials used to make shoes, and many also offer services like shoe dying and relacing. It can take approximately

four years of training to become a shoe cobbler. Most cobblers train by apprenticeship, often with a family member. This training includes learning the use of all the equipment utilized in the field, and working with a wide variety of shoes to learn about various approaches to shoe repair.
