Sound and Vision For his latest collection, acclaimed designer and music aficionado John Varvatos photographed a living legend who embodies signature style and outlaw attitude.

Growing up in Detroit during the 1970s, John Varvatos was obsessed with the Motor City’s reputation as one of the world’s most vibrant rock ’n’ roll hotbeds. When he launched his eponymous menswear label in 2000 (following successful stints at Polo Ralph Lauren and Calvin Klein), he sought to combine classic design and old-world tailoring with a distinctly modern, streetwise edge inspired by the music that has soundtracked his life. Thirteen years and numerous awards later, Varvatos has never abandoned the central role that rock plays in his clothing – a commitment he regularly exhibits in campaigns featuring musicians such as Led Zeppelin’s Jimmy Page and fellow Michigan natives Alice Cooper and Iggy Pop. For his fall 2013 campaign, Varvatos brought on board a legend of country music who nevertheless embodies rock’s rebel spirit: Willie Nelson. The 80-year-old Nelson was photographed for the campaign with his sons, Lukas, 24, and Micah, 23. “When you dress sharp in John Varvatos, it’s easy to feel like the biggest gangster badass in the room,” Micah said following the shoot, proving that rock ’n’ roll attitude may indeed be in the blood. •

The V Sign Thirty-five years after its founding, Versace continues to be recognized worldwide as a symbol of luxury and style.

When Gianni Versace established his selfnamed label in 1978, he likely never could have foreseen it becoming one of the most revered and iconic fashion houses of all time. Versace’s roots were modest, having learned to sew alongside the dozen seamstresses his mother, a dressmaker, employed at a sewing workshop in his native Italy. Abandoning architecture studies at the age of 26, he moved to Milan to work in fashion. When his company officially launched, Versace was 32. Described by Vogue magazine as a “fashion rock star,” Versace brought unprecedented excitement and glamour to both men’s and women’s fashion, using his fascination with celebrity (and his many celebrity friends) to help make the Versace name synonymous with red carpets, front rows, and a life of glamour. His untimely passing in 1997 temporarily halted the company’s progress and cast doubt upon its future, but the house of Versace bounced back. Today it remains among the most prestigious names in the industry. 2013 LEXUS RX 350 F SPORT The 2013 Lexus RX 350 F Sport features the new Lexus corporate nose – a sharp-angled hourglass from the Darth Vader School of Design. Underneath the sinister skin, the RX features a 3.5-litre V-6 that develops 270 horsepower, an eight-speed automatic transmission (vs. six-speed), and a sport suspension system that delivers sharper steering and a firmer ride. 2013 INFINITI JX35 The 2013 Infiniti JX35 is a luxury crossover SUV that seats seven with genuine ingenuity and no small amount of grace. The middle row of seats can be folded forward with one hand to provide easy access to the third row – even if a child seat is fastened in place. The 3.5-litre V-6 employs cylinder deactivation technology and is linked to a six-speed automatic transmission. Harness your
Adventure Even novice climbers can experience the highs of Western Canada’s dramatic peaks through a heli-hiking adventure along a Euro-style, fixed climbing route. By Celeste Moure
West of the Rockies, deep in the Columbias, perched on the edge of a cliff in B.C.’s Purcell Mountains, a first-time climber searches anxiously for a place in which to wedge a shaky foot, while cracked fingertips clutch rock. Some thousand feet below is a peaceful valley and the flat ground on which she, along with other adventure enthusiasts, stood less than three hours ago. The only thing keeping the climbers (one of whom confesses a fear of heights just before setting off) from falling are harnesses tethered to a steel cable, which are drilled onto the rock. “Yippee,” squeals the guide from overhead, where more cables, bolts and metal rungs indicate that the route – called a via ferrata – continues. Italian for “iron way,” via ferrata is a hugely popular style of climbing in Europe, where there are thousands of fixed climbing routes along the Alps, the Pyrenees and the Dolomites. Indeed, climbing on via ferrata dates back to the First World War , when Italian soldiers built bridges, ladders and tunnels, bolting cables and metal steps to rock faces in an effort to move troops quickly thought the Dolomites. Unlike the sport of rock climbing, which requires (along with serious technique) special shoes, ropes and belay devices, just about anyone can ascend a sheer cliff face this way.

“It took us two years to decide this was the site where we would build our via ferrata,” says Carl Trescher, one of the guides from Calgary-based heli-skiing and -hiking pioneer Canadian Mountain Holidays, which helped design and build this particular via ferrata. There were a lot of things to consider, such as melting snow, facing the right direction and an escape route, should inclement weather or another emergency happen to arise. “We wanted a wild, exposed place that’s not such super hard climbing that you would never get there,” he says. “So that really narrowed our choices of where we could build the thing. Luckily, Mount Nimbus fit our entire bill.” Stretching jagged and sharp into the sky, Mount Nimbus is the kind of wild and extraordinary place that no casual hiker or climber could easily reach. Yet here is a group of nine, half of whom are consummate beginners, scampering over rocks with little hesitation. Like some of the most impressive via ferratas in Europe, this one offers an experience suited for Indiana Jones wanna-bes. Most other via ferratas in Canada (including one in Whistler, one near Lake Louise and another in Mont-Tremblant) are around 200 to 300 metres long. “As far as a full-day climbing experience in the

alpine,” says Trescher, “there’s nothing in North America like the Mount Nimbus ferrata.” To get here, climbers sign up for CMH’s heli-adventure at Bobbie Burns Lodge. After a helicopter ride to the alpine meadow and a demanding upward hike, climbers don helmets and harnesses, clip themselves to a bolted wire cable, and perform seemingly impossible feats like traversing knife-edge ridges, crossing a perilous-looking suspension bridge and clambering up vertical rock using metal rungs fixed to the mountain. Back at the lodge after a soak in the outdoor Jacuzzi and handcrafted cocktails at the bar, the group of climbers trade stories about the exhilarating, take-your-breath-away (both figuratively and literally) experience. The real enemy turns out to be not a fear of heights or physical prowess, but the climbers’ own bodies: tender soles, blistered hands and quadriceps unaccustomed to being, well, used. Curaçao
An island known for its bright-blue liqueur is a colourful, cosmopolitan and art-rich destination. By Karen Burshtein
Curaçao is not for fans of the monochromatic. From the pink flamingos bordering a turquoise sea to the bright fronts of the gabled Dutch architecture in Willemstad, the capital, the island is a veritable riot of colour. Even the eponymous liqueur is an intense blue. It’s not surprising that the island would appeal to the visually acute: witness the disproportionate number of artists on this island of 140,000 people, making Curaçao a fresh stop on the global art circuit. Some are local, others Dutch, French or American expats. They are gifted painters, sculptors and ceramicists whose work is several cuts above typical tourist-market fodder. Its art scene is only one aspect that sets the island apart from your average winter escape. The C in the so-called ABC Islands with Aruba and Bonaire (that made up the Netherlands Antilles until that administrative unit was dismantled in 2010), Curaçao is a cosmopolitan melting pot. Everyone seems to speak four languages. The official ones are Dutch and Papiemento, which is a melange of Dutch, African languages, Spanish, Portuguese and French. You get the feeling it only recently starting thinking of itself as a tourist destination, having been too preoccupied with being an economic powerhouse in the past. The island’s prosperity is reflected in the elegant Italianate mansions in the Scharloo neighbourhood of capital city Willemstad, a quarter that in its day was predominantly Jewish Portuguese Jews expelled from Spain during the Inquisition arrived here in the 17th century via the Netherlands, and they prospered. Their history and the history of the island are intertwined. FALL/WINTER 2013 35

The MikvéIsrael- Emanuel Synagogue is the oldest synagogue in continuous usage in the Western Hemisphere, its floors covered in sand to commemorate the Sephardic tradition of muffling the sound of prayer during the Inquisition. Adjacent to the synagogue is a fascinating museum dedicated to Curaçao’s storied Jewish history. Today, the community worries about becoming a Jewish Disneyworld for day-tripping cruise passengers. (Even as I was being given a tour of the museum, one came rushing in looking for matzo, the unleavened bread Jews eat during Passover. “There’s no matzo on the Constellation,” she moaned, frantically. “Can I buy some from you?”) While much of Curaçao’s wealth stemmed from the days of the Dutch West India Company, it’s also in no small part due to Curaçao’s history as a slave-trading post. The Kura Hulanda Museum shows in chilling words and artifacts the history of Caribbean slavery. I was intrigued when my guide told me that many contemporary lifestylers were buying some of the extant slave dwellings and restoring them as “starter” homes. We drove past several; one has been turned into a museum outlining daily life for blacks in that wretched period of history. Dotted across the island are landhuizen, once-splendid plantation houses, many of which have been turned into galleries. Among them, the Landhuis Bloemhof, built in 1735, now showcases some of Curaçao’s best known art names: Yubi Kirindongo, Ria Houwen and Ellen Spijkstra, whose divergent works are inspired by the island’s beauty. Luisette Verboom, whose family bought the Landhuis Habaai, taking it from a state of disrepair to state-of-the-art Gallery Alma Blou,

will happily give you a tour of her gallery’s topnotch collection of photographs, sculptures and paintings. The gallery’s gift shop is a kitsch-free source of crafts and pottery you can take home. Mon Art Gallery is also worth a stop for its first-rate group of Curaçao and Caribbean artists. The food and drink scene is as colourful as the rest of the island. To find out how the turquoise liqueur named after the island is made, visit the factory in the Landhuis Chobolobo. (You’ll learn that though the Curaçao liqueur is blue, it’s made from oranges, or rather, the bitter peels of the laraha oranges, which the Spanish brought over, hoping that island growing would make them sweet.) At lunch, the Marsche Bieuw (old market) is packed with locals and visitors who sit at communal tables eating specialities like pika hasa (a seafood dish with red snapper) or stoba (papaya and beef soup), all cooked in giant pots over coals. The bustling, floating market is about as vibrant and colourful as it gets. At one stand, a fisherman has piled ice on his fresh catch; fish whose skins are as blue as blue curaçao – and his own aquamarine eyes. Restaurant & Café De Gouverneur has the feel of the island’s colonial past, in part due to its expansive veranda that faces pastel houses of the Handelskade waterfront (a UNESCO heritage site) and the pontoon bridge known as
the Swinging Old Lady. Order the keshi yená, another staple of traditional Curaçao cuisine: a blend of chicken, vegetables, spices and raisins, baked in a shell of Dutch Edam cheese. Oh, and this white-sand island has lovely little beaches. The sands overlook an aquamarine sea. Kit yourself out in flippers, mask and snorkel from one of the island’s many dive shops, then revel in undulating reef walls and multi-hued sea life below – like a walk through an underwater art gallery.

The New: Anderson Valley Northern California is still a pretty wild frontier. While the main streets of the town of Boonville, population 700, are only a 75-minute twisty drive from the tony boutiques and famed restaurants of Napa’s Yountville, the town is worlds away from its neighbours. The pinot noir coming out of the area has the whole region scrambling to snap up what may be the last, best place to grow cool-climate grapes in California. Boonville is about two hours north of San Francisco, half that from Sonoma. But the area is isolated enough that in the 1800s it developed its own largely unintelligible dialect, Boontling, which you occasionally still
hear in snippets from the locals. For a long time, wineries that used Anderson Valley grapes were located elsewhere (including famed Williams Selyem, Cakebread and La Crema). Then, in the mid-1990s, Duckhorn Vineyards set up Goldeneye, just north of Boonville, to attempt to create classic California pinot. The experiment worked spectacularly and the pricey Goldeneye offerings sell out each year. Newcomer Breggo Cellars (Breggo is Boontling for “sheep”) is going to be the next winery to make a stir, with its finely structured pinots and an Alsatian-style pinot gris Robert Parker called “the finest pinot gris
I have ever tasted in the new world.” The local lodging mirrors the area: small, quaint and unassuming. The Boonville Hotel is the sort of place you dream of finding in a small town: all charm, but with style to spare in its 10 rooms, and a family-style restaurant called Table 128, with refined, locally influenced comfort food. Napa is blessedly overrun with nice, off-thecharts accommodation, but there’s still no better place to stay than at Meadowood Napa Valley resort, a private-club-turned-exclusivelodging set on 250 acres (101 hectares) abutting St. Helena. Have Style, Will Travel Vivek Bhardwaj and Jeff Gadway were thrust into the international spotlight this year when they became the public spokesmen of BlackBerry prior to and during the launch of the Waterloo-based company’s much-anticipated BlackBerry 10 smartphones. Here, we ask the dynamic duo about work, play, and dressing for both. Q How long have you lived in Waterloo? A Vivek: Just over a year. Q How long have you worked at BlackBerry? A Six-and-a-half years. Q What brought you to work at BlackBerry? A I love technology. I’m a real gadget geek – like every young guy is – and I’ve always found communications fascinating. As a kid, I enjoyed breaking electronics apart and assembling them again – albeit with a few less screws – but they still worked. Q You’re in the midst of what is arguably the most important year in BlackBerry’s history. What is your current outlook and how do you keep your cool? A I view every year as the most important, but things are definitely interesting right now. Multibillion-dollar company turnarounds are exciting. I think we all enjoy being the underdog, the wild card. It gives us a sense of purpose. Right now, I feel like the gloves are on and my back has been on the ropes for a few rounds, but it’s time to fight back. So, you could say I’m in a good mood! I’d say staying focused, but also making sure you’re enjoying every second of it. That’s what keeps me cool, I think. Q You’re an ambassador for one of the world’s most innovative tech brands, so appearances are important. What does personal style mean to you? A I was in Indonesia earlier this year [giving a presentation] for work, and after I came off stage I was swarmed by BlackBerry fans who just wanted their photo with me. Very bizarre, but then again I see Hollywood does its best these days to exploit this with all sorts of tech-company films. I think, as a result, your appearance is important. I help represent BlackBerry and that means something – to us, to our customers and to anyone else out there who notices. My style is smart, but casual. Don’t get me wrong: I’m not in shorts and sandals, but I like to feel comfortable, show I mean business and that what I’m saying and doing means something.

Q You travel a great deal for your work. Assuming you like to pack light, what are the essentials you bring with you? A “A great deal” is a good way to put it! I like to think of airports as my home away from home. Packing light is key. I see so many people rushing through airports with way too much luggage or not the right travel gear. I have a dozen black T-shirts; they’re comfortable and don’t crease on a flight. Also, I usually have a light jacket, smart but comfortable jeans, and shoes. The rest of my gear is lightweight too: one suit, I always pack an extra work shirt or two. Oh, and my gym kit: I like to keep in shape, and travelling takes its toll, so I try to exercise when I’m abroad too.

A Initially, I got connected with the company though my university co-op program. As a student in Waterloo, BlackBerry was a local icon. I knew a few people with BlackBerry smartphones at the time and thought they were really cool. I came to love the speed of the tech industry – nothing ever stands still. It means you have to think and work fast and creatively. Q You’re in the midst of what is arguably the most important year in BlackBerry’s history. What is your current outlook and how do you keep your cool? A We’re in an exciting time right now; we’ve just launched a brand new platform and are on a journey to define a new era in mobile computing. Things are just getting started. Keeping cool at the office comes from knowing I work with an incredible team here in Waterloo and around the world – very talented people who are united and focused by the same vision for what we’re trying to do. But to really keep cool, you need balance. I try to get to the gym, run, and get out for hikes with my girlfriend and our dog. Q You’re an ambassador for one of the world’s most innovative tech brands, so appearances are important. What does personal style mean to you? A As someone who’s often out speaking on behalf of BlackBerry, I try to use my personal style to help reflect that BlackBerry is a new company with a new culture. In the past, BlackBerry used to be seen as being just for the suit-wearing Wall Street and “ibanker” types. That’s definitely not the case today. At the global launch of BlackBerry 10 back in January, I wasn’t wearing a suit; I was wearing a pair of jeans with a vest, a paisley blazer and suede shoes.

Appetite for Life Growing out of a single restaurant that opened more than 55 years ago, the Charcoal Group now has Waterloo’s diverse palates completely covered. Has anyone who grew up in Kitchener-Waterloo during the past half century not eaten at the Charcoal Steak House? Arguably no other restaurant in the region is familiar to and loved by so many, and across so many generations. Dating back to 1955, when Del and Ortha Wideman purchased and, in short order, renamed an eatery called the Charcoal Pit, it has remained a destination-worthy steakhouse in the classic mould while constantly evolving to reflect diners’ changing tastes. Jody Palubiski’s familiarity with the Charcoal Steak House is better than most. He worked there during high school, and even when his subsequent career in the restaurant industry took him away to Toronto, he returned to Waterloo often to dine there and at the two other rooms housed within the “Charcoal complex” at 2980 King Street East: the Italian-themed del Dente and the casual, cocktailcentric Martini’s. “It was the place my wife and I enjoyed many date nights,” he recalls fondly.

Palubiski’s affection for “the Charcoal” was so great that, in 2003, he came onboard with its current owners, Tim and Tom Wideman (Del and Ortha’s sons, who took over in 1991), and their partner, John Zizzo, to help develop more restaurant concepts in Waterloo. Today, what’s known as the Charcoal Group of Restaurants also encompasses Wildcraft Grill Bar, the Bauer Kitchen and the Bauer Bakery & Café, Beertown Public House (with additional locations in Cambridge and London), and the catering division Wildcraft Wherever. Each restaurant within the Charcoal Group is the result of meticulous planning by Palubiski and his colleagues. For instance, Beertown, the most recent addition to the family, came about from a combination of travel, research, and glancing a magazine cover by chance. “There’s a restaurant I love in New York City that is actually a ‘liquor bar’ and it has this great, authentic buzz about it,” Palubiski says. “The team was gathering materials and images and making a lot of notes to flesh out a place that would deliver that type of experience. that time, I saw the cover of GQ magazine and in the bottom left corner was a story title called ‘The Birth of the Modern Beer Bar.’ I just loved the sound of that – it instantly reminded me of the Miles Davis album, Birth of the Cool. From that point, the ‘Beer Bar = Cool’ notion was on for me. Within a few weeks, Chef Michael Hodgson and I were in New York City, touring the places that were mentioned in the article.” No matter what the restaurant concept or how it materialized, Palubiski says every Charcoal Group dining experience is united by a commitment to quality – in food and in service – and a recognition of the increasing sophistication of customers’ palates. “There have been incredible changes in the industry over the past 15 years: the past five years have seen radical change! We’ve seen our guests’ knowledge increase through Food Network Canada and other culinary shows and competitions, and the internet and social media. Food issues have become more mainstream: organic, GMO, gluten-free, buying local. All of these changes present great opportunities.” Publuski adds, “There’s a great quote: ‘When the winds of change blow, some people build walls and others build windmills.’ As an independent company, the Charcoal Group can adapt and evolve to whatever conditions are affecting our business at any given time. For eight seasons, from 2001 to 2010, millions of viewers tuned in weekly to watch Kiefer Sutherland, as federal agent Jack Bauer, have the longest day of his life on the Fox hit show 24. Jack is back. Or, at least, he will be in 2014, when Fox debuts the revived series, 24: Live Another Day. When not chasing bad guys on TV, Sutherland collects Gibson guitars and takes lessons. “[Music] really dictates a lot about my life, how I view things and feel things,” says the actor. But don’t worry, he assures – he’s not in a band nor does he have plans to record a vanity record anytime soon. Growing up in Toronto, Sutherland convinced his mother to let him study guitar. However, music took a back seat as his acting career took off. The son of Donald Sutherland and Shirley Douglas, he got his first movie role in Max Dugan Returns, in 1983. By the late 1980s, he had cemented his star potential with some decidedly creepy roles in Stand by Me, The Lost Boys and Flatliners. In 1992, he landed a role in A Few Good Men, starring Tom Cruise and Jack Nicholson, but followed it with a slew of box-office disappointments including The Vanishing and The Three Musketeers. Sutherland decided to take a break from Hollywood to hone his rodeo skills, and, with his circuit partner, went on to win first place in the 1998 U.S. Team Roping Championships. Meanwhile, Sutherland kept buying Gibson guitars, many of which he loaned to his struggling musician friend Jude Cole. “When he started to do well, I said, ‘Jude, remember all those guitars I lent you? I want them back,’” Sutherland recalls. “And then we realized we had amassed an incredible collection.” A decade ago, the pair opened Ironworks Music – a guitar museum, recording studio and record label all in one – in the trendy Silver Lake neighbourhood of Los Angeles. “It’s literally for bands that we have developed and that we’re finding,” says Sutherland. “It’s unbelievable how many fantastic bands there are out there that are just not being heard. We just want to make records and try to figure out how to get them out there.” •
