Area wineries no strangers to the winner’s circle By Matthew Bolich, The Sentinel When it comes to winning awards, medals and even the prestigious Governor’s Cup, Central Pennsylvania wineries have excelled. For example, area wineries have won scores of awards in the Pennsylvania Farm Show’s Wine Competition. All wines entered in the farm show’s judged competition must be legally able to be labeled as Pennsylvania wines. But what goes into making an award-winning bottle of wine? Scott Bubb, owner of Seven Mountains Wine Cellars in Spring Mills, Centre County, feels that it starts with persistence and the attention given to achieving a perfect balance. “This means that neither the sugars or the acids dominate the wines,” says Bubb. “When these two components are in balance the finish of the wine will taste just like the fruit that was used to make it.” As a home winemaker for 33 years prior to opening the winery, Bubb took the opportunity to start Seven Mountains after the New Holland plant in Mifflin County closed, allowing him to embark on a new career. He feels consistency of product is another important factor for award-winning wines. Bubb says, “We maintain our quality by sourcing our grapes and fruit from reputable sources that consistently, year after year produce high quality products. You can’t make great wine from bad fruit.” Winemaker Scott Hilliker agrees that balance and quality of the fruit are vital

components to winning bottles. He has been a winemaker at Centre Hall’s Mount Nittany Vineyard and Winery for five years, and tastes the product from grapes all the way to finished bottle so as to maintain consistency. The winery’s Nittany Mountain Blush has been a Governor’s Cup winner and balance is key according to Hilliker. “The qualities that I feel allowed it to win were its balance between sweetness and acidity,” he noted. “The wine had very nice aromatics typical for that grape variety and had a nice fresh, fruity, clean taste to it.” The weather in the Northeast can play a part in a vintage and annual consistency. Hilliker stated, “There are always vintage variations from year to year. Some of our wines are blends and to keep a consistent style from year to year the blend amount can change to help keep the same flavor profile. Some of our wines are single varietals and they change taste and flavors from year to year. (We are) just trying to work with Mother Nature and not do too much in the wine cellar and show off how that vintage was.” Like any product that takes lots of energy, testing and resources to produce, winning an award brings a great sense of pride and accomplishment to area winemakers. In 2010, Seven Mountains Wine Cellars won the American Wine Society Best White Wine for their 2009 Vidal Blanc, which meant a great deal to Bubb and his team. “All the awards are special but the American Wine society awards have a special meaning for us as this is a national award where we compete with some big name wineries from all across the United States. Names like Gallo and Trinchero are some of the largest producers in the country, and to know our wines can compete with these is a testament to what we do.” Seven Mountains has also won four Governor’s Cups for their ice wine, which involves a very different process to make this sweet dessert wine. “These grapes are left hanging on the vine until they freeze solid in the middle of winter” says Bubb. “They are then hand-picked and pressed while frozen, resulting in a very

sweet (38 to 40 percent sugar), very low yield product. All the water in the grapes is in the form of ice crystals, and is removed from the juice.” They next ferment about half of this sugar to alcohol and retaining the rest as all-natural residual sugar. Pairing of food and wine are also an important part of what makes a wine special. According to Mount Nittany winemaker Hilliker, the Nittany Mountain Blush pairs well with spicy Asian and Mexican dishes, like a grilled chicken with Thai peanut sauce. “It also goes well with any array of chesses paired with fruit chutneys,” he said. Katy Flood, co-owner of Hungry Run Wine Cellars in Lewistown, notes some of the foods that match well with some of their award-winning bottles. Of their 2020 bronze-winning Chardonnay at the 2020 PA Farm Show she says, “This is our naked (unoaked) Chardonnay, done completely in stainless steel tanks. It exhibits tropical aromas with great depth and structure. (It) pairs well with light dished like fish or pasta with veggies.” For these local winemakers, attention to detail when it comes to their craft has resulted in high achievement and accolades. And area residents get to enjoy the fruit of their labor literally.

If you enjoy visiting your local tap house, do the owners a favor by sharing your thoughts about the experience on online review sites. Fruits and vegetables are vital components of a nutritious diet, and few foods pack a more nutritional punch than blueberries. Verywell Health says blueberries are touted as a superfood because they are full of antioxidants, vitamins, fiber, and phytosterols, which are micronutrients that can significantly lower LDL cholesterol and reduce the risk of heart disease. Blueberries also are low in saturated fat and may help lower triglyceride levels. A study published in the Journal of the Academy of Nutrition and Dietetics found that women who consume blueberries on a daily basis have lower blood pressure. Furthermore, researchers in Finland determined a berry-rich diet supports healthy aging and controls the risk of chronic diseases. Enjoying a blueberry muffin or a cup of blueberries with breakfast are two ways to consume more blueberries. But those are not the only ways to incorporate more blueberries into your diet. 1. Make a smoothie. Blend blueberries into a smoothie containing frozen yogurt and other fruit. Drink it any time of the day as a filling snack or even a small meal. 2. Whip up blueberry relish. Diced fresh blueberries tossed with onion, diced tomato and various seasonings can be used to top fish tacos or spread on toast rounds. 3. Create a fruit salad. Blend together various fresh fruits into a deli-

cious fruit salad. Squeeze fresh lemon juice on top to prevent browning of the fruits used. 4. Whip up overnight oats. Mix equal parts of almond milk, oats and Greek yogurt together in a container and let sit overnight. In the morning, mix in favorite some blueberries. Add a little pure vanilla extract for added flavor. 5. Add blueberries to batters. Mix blueberries into pancake or waffle batters to add extra nutrients to meals. 6. Flavor your drinks. Drop blueberries into water, fruit juices or lemonade for a nutrition-

al boost. Dress up sangria with blueberries for an added punch to this popular cocktail. 7. Mix up energy bites. Pair nuts, oats, chia seeds, flax seeds, and other healthy ingredients with blueberries. Utilize maple syrup or honey to keep ingredients together, and bake until golden brown. Many different recipes are available online for these types of treats. Blueberries make nutritious additions to any diet, and there are various ways to incorporate more of this flavorful fruit into your meals.

Take Prince Farrington's Bootlegger Tour

Commonwealth of Pennsylvania by 1926. His moonshine was not only good, but it was said that it was the best moonshine people ever tasted. Prince Farrington was not only well known in Central Pennsylvania, but also with statesmen in Harrisburg and from Pittsburgh to Philadelphia. Now, although the Prince made excellent moonshine, he was raided by Williamsport Police and the FBI, arrested a number of times, and fled from Pennsylvania. Prince Farrington did one-day return to Lycoming County and passed away in the Williamsport Hospital in June of 1956 of cirrhosis of the liver.

Home mixology was already booming in popularity before the pandemic saw bars closing, driving further demand for liquor and bar gear. Gadgets Smoke infuser. If a smoky bloody Mary sounds like heaven, check out a smoker made specifically for drinks. Aside from smoking your drinks, you can also cold smoke cheese, appetizers, nuts and dips. Smart gadgets. The Bartesian leads the field here. Think of it as a Keurig for liquor. Stock this smart device with basic spirit such as gin, vodka, tequila,

whiskey and rum, as well as water. Then insert a “capsule” with the flavors for your preferred drink, press go on the touchscreen and watch the magic happen.

Gear Decanters. Decanters come in all shapes and sizes. If you’re looking to gift a decanter, why not look for a model with a theme, such as a globe with an antique ship that appears to float on the liquor’s surface, or a Star Wars-themed decanter in the shape of a Stormtrooper mask. Diffusers. Spirits diffused with flavors of fruits or spice are on trend. Do it yourself at home with an infuser. While you can use just about any glass vessel to infuse spirits, it’s so much more visually appealing in a fancy infuser. These make great gifts. Breathalyzer. It’s important to stay safe while drinking. One way to drink responsibly is by checking your blood alcohol level before getting behind the wheel. After all, even if you’ve only had one drink, you’re taking a risk when you drive. You can find a handheld Breathalyzer for less than $100. Cool cubes. Sphere and square ice “cubes” are all the rage. The clearer you can make them, the better. You can find two-part molds to make your preferred shape. Be sure to follow the directions, which usually include using distilled water.

Some wines need to be aerated — exposed to oxygen to break down tannins and sulfur compounds, softening the flavor of the wine. This is especially true of young, strong wines such as Malbec, Shiraz, Cabernet Sauvignon, Bordeaux and Burgundy. Simply opening the bottle and letting it sit won’t do the trick. It’s important to expose as much surface area as possible to oxygen. You can aerate in two ways — decanting or using an aerating tool.

Decanting: An Old Standard Wine has been decanted for thousands of years, dating back to Ancient Rome. The original purpose was to separate liquid from sediment in the container in which the wine was made. Decanting also serves to aerate wine. Though several exotic decanter designs have come on the market in the past several years, a classic, simple glass wine decanter will do. Wine Spectator offers the following steps for properly decanting a wine:

1. Set the bottle upright for 24 hours or more before drinking, so the sediment can slide to the bottom of the bottle. 2. Remove the capsule and cork; wipe the bottle neck clean. 3. Hold a light under the neck of the bottle; a candle or flashlight works well. 4. Pour the wine into the decanter slowly and steadily, without stopping; when you get to the bottom half of the bottle, pour even more slowly. 5. Stop as soon as you see the sediment reach the neck of the bottle. Sediment isn’t always chunky and

Prices range from $15 for a simple handheld aerator to $99 for a battery-operated aerator that pumps wine from the bottle and serves it through a tap, and up to $449 for an app-controlled smart wine aerator that uses a scan of a bottle’s label to decant it just right in seconds while you pour. While a simple handheld aerator will do, the aficionado who enjoys a glass of wine frequently might opt for more high-end gadgets.

DIY If you need to aerate a bottle of wine quickly without an aerator, there are a couple of do-it-yourself methods that will work in a pinch. Cook’s Illustrated reports great results from pouring wine between two pitchers 15 times. It also reported that putting the wine in a blender on high provided a better taste than skipping the decanting altogether.

This year on the shelves of your local wine shop, you’ll see rose — from conventional to complex, flat to sparkling — as well as Portuguese wines that vary from light whites to bold reds, and a variety of flavored wine seltzers.

How to plan a perfect game night Shared experiences are ideal ways to make new friends or solidify established relationships. Bonds can be strengthened even further when those shared experiences include entertaining activities. This is a great reason for adults to incorporate routine game nights into their social calendars.

Before the widespread proliferation of digital video games, board games were a go-to way to have fun. with salt and add a lime wedge, if desired.

Heat oven to 350 degrees Fahrenheit. In a large bowl, toss together the tomatoes, olive oil, garlic, salt, and pepper, and chili powder. Spread tomato mixture onto a baking sheet and roast in the oven for 15 minutes. Add tomatoes to a high powered blender with 1/4 cup water. Blend on high until totally smooth. Add tomato puree to a cocktail shaker with tequila, lime juice, and ice. Shake. Mix together the chili powder and course salt on a small plate. Use a lime wedge to wipe the rim of your glass, and then dip in the chili/salt combination. Fill glass with more ice. Pour margarita into the glass and garnish with lime wedge. Enjoy.

The History of Absinthe

After a century-long absence from store shelves, absinthe is once again for sale in the United States.

This liquor has been controversial over the past 200 years since it was invented, but it’s mostly a lot of hype about a drink that’s perfectly harmless. Also known as “The Green Fairy,” or “la fee verte,” it is made with wormwood, a medicinal herb used to cure fever and diarrhea and used by French legionnaires to fight off malaria, according to Flaviar. Its bitter flavor caused it to be called by a Greek word — apsinthion — that means “undrinkable.”

Origins In the 17th century, Swiss apothecaries distilled the herb into absinthe. Aside from wormwood, absinthe is made from anise, fennel and other herbs and has a flavor of black licorice.

Marketed as a party drink, absinthe was a popular drink in Europe in the 1800s. Parisian bars offered “the Green Hour,” a happy hour meant especially for absinthe, according to Flaviar. Disease ravaged French vineyards, reducing wine output and helping fuel absinthe’s soaring popularity. Absinthe found its way into art and literature, having been depicted by Picasso, James Joyce, Van Gogh, Oscar Wilde and Earnest Hemingway. Wilde wrote, “A glass of absinthe is as poetical as anything in the world.” Winemakers, who were concerned about losing market share to absinthe,

seized on a 1905 murder by a man drunk on absinthe to paint the spirit as a dangerous hallucinogen. Along with help from the temperance movement and questionable science, winemakers succeeded in persuading several countries to outlaw absinthe, beginning with Sweden in 1910, the U.S. in 1912 and France in 1915.

A Modern Comeback Today we know that absinthe is not a hallucinogen. Beginning in the 1990s, Absinthe began to make a comeback when a Czech version was marketed. In 2000, a French version was made, and by 2007, the United States had lifted the ban.

How to Drink It Drinking absinthe requires some knowledge and supplies. Because it is bitter and high-proof, you’ll need sugar to help tame the Green Fairy. Doing so creates a white cloudy aesthetic called the louche. You’ll also need an

absinthe spoon. Here’s how to do it, according to The Spruce Eats. 1. Pour about 1 ounce of absinthe into an absinthe glass. 2. Lay an absinthe spoon across the top of the glass rim and place a sugar cube on the spoon. 3. Slowly pour ice-cold, distilled water onto the sugar, just enough to saturate it. Allow it to sit until the sugar cube begins to dissolve. 4. Pour more water over the sugar slowly until the desired dilution is found and the sugar is completely dissolved. The most common ratio is between three and five parts water to 1 part absinthe. As the water hits the liquor, the louche will swirl through the liquid, creating a visual spectacle and releasing the absinthe’s herbal bouquet. 5. Allow the louche to rest, then stir in any remaining undissolved sugar. 6. Enjoy.

For a better perspective of the influence on craft beverages, check out these 2019 statistics reported by the Brewer’s Association (BA). • The volume share for brewers was 13.6%, which is a growth of 1.1% over 2017. • Brewed beer accounted for 26,347,950 barrels produced by craft beer groups. • There were 942 new openings in 2019 and only 294 closing. • Over 161,000 new jobs were created, for a growth of 7% over last year. home. A separate study focused on Kent County, Mich., showed that small breweries generated $7.05 million in direct spending from over 42,000 visitors. The tourism industry also benefited in profits from over 14,000 hotel room visits. Festivals and celebratory events impact local economies by inviting mass numbers of attendees to indulge in shopping and tasting.

Small-Town Growth Smaller communities receive a significant boost as a home for craft breweries. The residents are provided a social hub to network with peers and find locally sourced beverages. Owners of the facility are also treated to a boost in business by renting the building for events like weddings, birthday parties and corporate gatherings. Support these smaller businesses when they host events that showcase local talents like musicians or artists.
