EDITOR’S LETTER One of the things I love most about my work is bringing people with common interests together – helping join up the dots between us. Last issue we shared that Life in the Village has formed a media partnership with St Richard’s Rii Hospice. This independent local charity tyy provides free, expert care and support for over 3,300 patients, their loved ones and the bereaved every year. John set up Shuttersphere, a photography social enterprise, in 2014, using pictures he’s taken of the local landscape to raise money for our hospice. Since then, he’s donated almost £10,000. As well as selling prints, framed prints and canvasses that make lovely gifts and keepsakes, John produces an annual calendar that is on sale now. And the best part is that 100% of the profits go to support St Richard’s. Take a look at his stunning images featured on page 18 onwards. I hope that you appreciate them as much as I do and that, together, we can boost his fundraising. Thanks for all your feedback and support this year, which comes in so many forms. WILDLIFE 2019’s State of Nature report estimated that we’ve lost 44 million breeding birds in the UK since 1967. This means those of us who love wildlife have a real incentive to do what we can to help - and more than half of us are now feeding birds in our gardens. Just 40 years ago feeding birds was a relatively unusual activity but as our landscape has changed – with the loss of trees and hedges, the tidying up of farms and the use of chemicals on the land that has destroyed insect populations - our gardens have become important refuges for wildlife. Whether you’re a seasoned hand or are just starting out, here’s
a practical guide to feeding our feathered friends as winter takes hold. Any effort you make will create a real difference to their chances of surviving the harsh months ahead. It will also be hugely rewarding, bringing colour, life and moments of wonder to your world. Appetising buffet With a multi-million pound bird food industry offering us everything from sunflower seeds to suet cakes, how do you know where to start? Different birds need different foods so the safest route to success is to provide a variety. Black sunflower seeds provide a high-energy nibble for tits, greenfinches and sparrows; the husks are easy for the birds to peel off but can leave a mess behind so some people prefer pre-shelled
sunflower hearts. Nyger seeds were once the sure-fire way of attracting beautiful goldfinches to your garden but, in my plot at least, they shun these tiny seeds if sunflower hearts are available. Peanuts are a favourite with many species, from the diminutive long-tailed tits to the larger great spotted woodpeckers and nuthatches. High in oils and proteins, they can, however, become poisonous if allowed to rot so be sure you replace them regularly and never put them out if they are mouldy. Always put them in wire mesh feeders to protect smaller birds that can’t cope with whole peanuts as they can pose a choking threat, particularly to chicks. Suet is a great energy supply, particularly in the coldest weather. Buy it in balls, cakes and pellets or make your own by adding seeds to

melted suet or lard then shaping it, smearing it on pine cones, or putting it into moulds. Mealworms will attract many birds but live mealworms are better than dried ones. If you do serve dried mealworms please avoid doing so during the breeding period as their desiccated nature can be harmful to growing chicks that don’t have access to water. Seed mixes are a good all-round choice as they contain seeds favoured by different species. Pinhead oatmeal and small grains like millet attract a range of birds from house sparrows to chaffinches and reed buntings. Try to avoid mixes that are heavy with wheat, barley or split peas as these can usually only be eaten by bigger visitors like wood pigeons. Mixes that are bulked out with these large grains are usually cheaper but are false economy as they attract a smaller variety of birds. Take care to choose a sustainable supplier, who grows with wildlife lifeinthevillage.co.uk | Winter 2019
habitats in mind, and try to buy UK grown food where possible. Vine House Farm manage their farm sustainably and donate a percentage of profits to Wildlife Trusts; in Worcestershire we’ve received more than £20,000 in the last ten years as a result. The RSPB, also, only supplies bird food that has been grown in line with their Conservation Grade standards. Water is a really important resource for all wildlife, including birds. To keep ice away during the winter months, try floating a small ball in your birdbath; the bobbing motion should help to prevent the water from freezing over in all but the coldest weather. Natural food Try to make your garden as wildlife friendly as possible. Plant trees or shrubs that will be laden with berries in winter as they will give a natural boost to the food chain; blackbirds and song thrushes will
certainly appreciate it. Make sure there’s a diverse range of habitats – from plants to log piles – to harbour the many creepy-crawlies that birds like wrens, dunnocks and blackcaps love to feast on. If your garden is big enough, grow some seeds yourself – sunflowers, for example, will bring bees in summer and birds in winter. And always prune with wildlife in mind, leaving ivy until all the berries have been gobbled up and letting shrubs such as buddleia and seedheads such as teasels, stand until spring. What not to feed Feeding scraps from your dining table can be both good and bad news so it’s worth pausing to think before throwing something out for the birds. Ask yourself a few questions: Is it processed, with added sugars and salts? If so, it won’t be good for them as salt is actually toxic and can affect their nervous system. 13

Is it sticky? Fat from the Sunday roast, for example, can be harmful as it may end up smeared on feathers, reducing their waterproofing and insulating properties. Does it contain unsaturated fats? These type of calories will be burnt off too quickly and can leave a bird starving, unable to survive a cold night. Finely grated cheese and unsalted meats, cut small, are acceptable

but cured meat like bacon is best avoided. Chopped fruit will be welcomed all year round and blackbirds, fieldfares and other thrushes will be particularly pleased if you cut up a few apples or pears on cold winter days. Bread has long been fed to birds and is nutritious in small quantities and as part of a varied diet. On its own, however, it lacks nutritional value so the danger arises if birds eat
bread alone. Soaked bread is better than dry and brown is better that white. Avoid feeding bread during the summer months because parents might unwittingly gorge their chicks on it. The small print A word about bird health and safety. Feeders should be hung up high, out of reach of ground predators like cats. Birds like to know that they can

reach the safety of cover quickly so place your feeders or tables a couple of metres away from bushes, trees or ivy. If a feeding station doesn’t work where you initially put it, don’t give up, try it somewhere else. It’s also important to clean your feeders as there is evidence that diseases transmit more easily when bird are invited to congregate to eat rather than feeding in a wild environment. Greenfinches, in particular, have been hit by Trichomonosis which has wiped out large numbers. Wash feeders and birdbaths regularly with hot water and a mild disinfectant and make sure they’re dry before refilling with food. Avoid suet balls and nuts sold in nylon mesh which birds can easily get entangled in. Discarded mesh is also a hazard to wildlife so buy fat balls and nuts loose to put into permanent feeders. Always take care to secure lids on feeders so that curious birds don’t end up stuck inside them. up as well as a seed tray on the ground for birds like blackbirds, robins and dunnocks who don’t like eating mid-air. With all this food around, however, you can attract unwelcome mammals. To minimise this, beware of over-feeding; if the food doesn’t go down quickly, put out less each time. Keep the area beneath feeders clear of waste by regularly forking over the soil or sweeping slabs. In all the years that I’ve been feeding birds I’ve only seen squirrels or rats a handful of times but some people battle with the former on a daily basis. Squirrel baffles, feeders with special guards and guardian cages can stop squirrels to some extent but won’t stop them leaping onto feeders from nearby trees, vegetation or buildings. If it’s a problem, try adding chilli powder to your seed mix; birds seem not to be bothered by it but squirrels can’t stand it! Shelter too Once you’ve attracted birds to your garden, the next step is to keep them there by investing in nest
boxes. Although they are primarily used for breeding, they also provide essential shelter against the elements during winter and may be used as overnight roosts, sometimes by multiple birds. Whether you’re buying one or doing a bit of DIY, try these tips: • Choose a material that insulates well – wood at least 15mm-thick is the obvious option but you can buy boxes made from a compound of wood and concrete that lasts longer. Avoid metal or ceramics as the temperatures within them fluctuates and can end up killing chicks. Be careful to use only nontoxic preservatives and don’t treat the interior. • Aim for an interior size of 130cm2 (20in2). Whilst you don’t want the birds to have to work too hard to fill an enormous space with nesting materials, they will lay fewer eggs in smaller boxes. • 32mm is a good size entrance hole for sparrows and tits, 28mm if you want to restrict it to blue tits; secure it by adding a metal ring around the circumference to stop predators getting in. WILDLIFE to nest in colonies so you could try a terraced box with three compartments and entrances. Tits are happier with just one compartment whereas robins like open-fronted boxes. • Ensure any existing boxes are cleared of nesting materials and their associated pests in autumn. • Site your box out of reach of predators, sheltered from prevailing wind, rain and strong
sunlight. Open-fronted nest boxes should be tucked into vegetation but hole-nesting boxes should not be obscured by vegetation. Don’t site boxes too close to a feeding area as breeding birds may come into conflict with feeding birds. Similarly, except for sparrow terraces, don’t site boxes too close to each other as bird territories may overlap. Birds start looking for nests
from February so installing a box is a great job for the winter and an ideal Christmas present idea. Persevere if your bird box isn’t used in the first year; mine was unoccupied in year one but I’ve had birds nesting in it every single year since. 2019 was the first year that blue tits lost out to great tits so I installed a second box elsewhere and was rewarded with nesting blue tits in my garden too.

All fur-ed up! Personal style advice from Kate Evans, Image Consultant and Coach My solution for a grim, dank winter’s day is to turn to your wardrobe as a source of inspiration and comfort. Just one plush garment can shield you from the elements and make you look luxuriously snug (and smug) – faux fur. Full pelt A thick, faux fur coat has winter written all over it. If you spend a lot of time outdoors, it’s a sound investment for the big freeze months. Colour is all-important. If the coat is at the top end of your budget opt for a neutral tone that will go with most items in your wardrobe and will give you lots of wear. If, however, you spot a vivid gem in the sale then go for it – but as long as you’re sure it’s in one of your ‘wow’ colours. Animal print furs are the ultimate statement if you have a dramatic or creative personality. Leopard used to be the go-to print, but you’ll now find quirky patterns inspired by Friesian cows or Dalmatian spots, if you prefer a monochrome colour way. Fur panels If you’re not convinced about a fullon faux fur, think textured panelling instead. Try a fur sweater teamed 24
with leather trousers or tucked into a cord skirt to offset the edginess. Furry trims Faux fur can be used as a glamorous accent and you can forego a scarf if you opt for a coat with a generous faux fur or shearling collar. And we organise joint events bringing residents and guests together, such as summer picnics and BBQs. We are privileged to have strong ties with local nurseries, schools and colleges who regularly visit, bringing joy and smiles to people’s faces. Having our own minibus helps support those we care for to be as independent as possible and foster engagement with the community across the region. It means we can attend community clubs, visit
places of interest such as local landmarks, heritage houses and gardens, tea rooms and restaurants, and take river trips. Friends and family are always welcome to visit, get involved, volunteer and accompany us. Cycling Without Age Volunteering benefits physical and mental health, as well as helping others. Whether you choose to become part of large organisation or pioneer a grassroots project, there are lots of opportunities locally Fresh air and friendship Cycle rides and care homes aren’t two things that you would naturally associate together but thanks to a fantastic non-profit initiative taking place around the globe, older people are now able to have all the fun and freedom of cycling. Cycling Without Age is a grassroots movement which started in Copenhagen in 2012 and now has affiliated local chapters across the world. Volunteers (pilots) sign up for bike rides with the elderly as often or as rarely as they want to. It’s all driven by people’s own motivation.

As at March 2019 more than 1,600 chapter locations around the world offer Cycling Without Age from well over 2,500 trishaws – and the numbers are still growing. More than 29,000 pilots ensure that the elderly get out of their nursing homes, and on the bikes to enjoy the fresh air and the community around them. They give them the right to wind in their hair. England has a growing number of local chapters, many of which came about through the power of social media sharing. Each is run by volunteers in line with guiding principles of generosity, slowness,
storytelling, relationships and without age. The idea bring generations closer together using special trishaws (three-wheel cycles with a passenger cab out front). They have electrical power assist, so there’s no need for pilots to be super-sporty. The rides are comfortable, fun and free, and enable people to experience their surroundings and nature close-up from the bicycle. The project builds bridges between generations and reinforces trust, respect and the social glue of society. Pilots and passengers alike enjoy the physical and emotional benefits. The joy of

riding in the trishaw cab stimulates spirits to fly and stories to flow! Starting a Cycling Without Age chapter can be an amazing experience. Nothing beats witnessing the joy of seeing the smiles of passengers coming back from their first ride with wind in their hair, rosy cheeks and full of stories. The organisation welcomes new people and has a simple affiliate model for communities, nursing homes, cities and individuals worldwide. They have a wealth of experience in working with nursing homes, city councils, other volunteer organisations and cyclist federations as well as great ideas of how to get the initiative off the ground and locals excited. A first for Cheltenham Locally, an innovative new partnership between marketing company Signal and charity Lilian Faithfull Care has enabled residents at St Faith’s Nursing Home to enjoy cycle rides. It was the idea of Lindsay Travis, a senior employee at Signal. “As a company we run a volunteering programme because lifeinthevillage.co.uk | Winter 2019
we believe in the benefits of this for both our staff and our local community. Last year I came across Cycling Without Age, and thought that setting up a project in Cheltenham would be brilliant. We’ve got lots of keen cyclists in Signal, and our office is very close to the Honeybourne Line, so it’s a really great fit for us.” Signal purchased the specialised trishaw and got together a team of employees who are giving up their work breaks to pedal the trishaw along the traffic-free picturesque Honeybourne Line. The charity Lilian Faithfull Care has been delighted to work alongside Signal as the project has developed. Suzanne Booker, Director of Care, comments, “It is fantastic to have the support of Signal… This project makes such a tangible difference to the lives of our residents. It is not just the wonderful experience of the cycle ride; but also the friendships and conversations it starts.” Cheltenham Borough Council have given their full support, ensuring access for the trishaw
along the Honeybourne Line. The project wouldn’t be possible without Signal employees; Aimée Mann explains what motivates her to volunteer. “I’ve seen the compassionate care that loved ones (like my late nanny who stayed at a Lilian Faithfull care home for a very short time before passing) receive, and I want to give something back to help the community.” The trishaw has a comfortable seat for two passengers so Lilian Faithfull Care residents can enjoy the ride alongside a carer or a member of their family. As one resident puts it, “I felt like the Queen! It was wonderful! Celebrate and remember Find ways to remember your loved ones this season with the help of St Richard’s
Celebrate and remember The festive season can be a particularly poignant time for many who are remembering and celebrating loved ones who are no longer here. St Richard’s Hospice recognises this and offers a range of services and events in the Worcestershire community to support people through this time. The hospice’s Lights of Love campaign sees families and friends dedicate a light to their loved one and uniting to share their experience of missing someone special. The

events are also a time where people find solace through lighting a candle at the services and taking time to reflect. (See panel for dates) Donations to Lights of Love helps the hospice to continue to provide all its care and support to people with a serious progressive illness, their loved ones and bereaved people across the county. Many people don’t realise the scale of the support offered to patients, their families and carers by the hospice. For example, the Family Support Team work includes counselling, bereavement support,
social work, community volunteer support, and support to individuals and families who are bereaved unexpectedly (through Bereavement Support South Worcestershire). Last year the Family Support Team received 1,716 referrals and gave 2,527 one to one support sessions, 207 group sessions and almost 5,000 telephone contacts. £238,872 was obtained for patients and families in benefits and trust fund grants by the hospice Citizen’s Advice team. Other activities include running Carers’ Groups, a bereavement

walking group; teenagers and children’s activity days; men’s and women’s space groups for patients and support groups for adults bereaved by suicide. The Family Support Team receives lots of heartfelt feedback on their work, including this comment from a bereaved relative in October: “One of your superb counsellors helped me to mental well-being over a very long period following my late husband’s diagnosis right the way through until months and months after his death. I owe St Richard’s, all your Family Support Team running various courses, groups and your amazing chef Kevin, as well as my amazing counsellor for helping me come to terms with life. Forever grateful.”

Each leaf will remain in place on the tree for one year starting from July and December. After twelve months you can choose to renew your donation and keep the leaf on the tree or the hospice can send it back to you to keep and treasure forever. New fire pit for Ashton under Hill First School Children at Ashton under Hill First School are enjoying the benefits of a new fire pit thanks to the generosity of the team at Park and Landscapes, explains teaching assistant and forest school leader, Juliet Shiels “Ashton under Hill First School is set in a lovely village beneath Bredon Hill and overlooking the Vale of Evesham, so whenever possible, we use the wonderful countryside surrounding us to support the children’s learning. There has been a school on this site since 1878, constantly evolving, and we are lucky to have access to a dedicated wooded area that we use for forest school. I regularly take pupils on the one kilometre walk to visit a wood on the hill and learn about the natural environment – an activity that stems from our belief that the curriculum goes beyond the four walls of the classroom. Children in pre-school, reception and year one make weekly trips to Forest School. We also visit an orchard and the meadow behind the church. Older children go once a term. Forest school offers the children an invaluable opportunity to learn about the natural environment, how to handle risks and most importantly to use their own initiative to solve problems and

co-operate with others. There are times, however, when it’s just too cold to go far beyond the school so I thought it would be good to build a fire pit at school. I know that Tim Coppin, who has a son in year two, is a tree surgeon and runs a local landscaping company so I asked him if he could help. I was delighted when he offered to, not only supply the materials, but also to send his team to install it. The team created a square pit using four lengths of timber placed around a slab, surrounded by four huge tree trunks that the children use as benches. The timber was recycled from a large commercial project that Park and Landscapes was working on in Wembley.
Although, it was only installed a week ago, we have already used the fire pit twice, when the children made s’mores and hot chocolate, so it’s brought lots of pleasure. A friend first encouraged me to get involved after we opened our garden for a village event and I’m now also the Worcestershire Publicity Officer. The world is waking up to the health benefits of visiting gardens and I get a real buzz from seeing others enjoy our garden. Perfect for chilly winter afternoons this is one of the oldest and most popular cakes from Cotswolds based Meg Rivers Artisan Bakery. Being wheat free it’s a little crumbly yet delicious. It takes some commitment you need to start it two days before you want to bake it and let it rest for at least 24 hours before eating! It will absolutely be worth it.
INGREDIENTS 115g / ¾ cup Zante currants or any high quality currants 115g / ¾ cup sultanas/ golden raisins 70g / ½ cup mixed candied peel 60g / ½ cup chopped glace cherries 25g / 3 tablespoons chopped crystallised ginger 45g / ½ cup chopped walnuts 20ml / 4 teaspoons brandy 120g / 1 stick unsalted butter 80g / 1/3 cup packed dark muscovado/dark brown sugar 2 medium eggs 90g / 2/3 cup wheat-free plain flour 35g / ¼ cup ground almonds 1 teaspoon ground mixed spice / apple pie spice ¼ teaspoon ground cloves Topping 9 walnut halves 8 whole glace cherries Deep, 15-cm/6-inch round cake pan, lined with baking parchment

METHOD
• Start the cake two days before you want to bake it. • Put the currants, sultanas/golden raisins, mixed peel, glace cherries, ginger and chopped walnuts in a bowl. Add the brandy, cover with cling film or plastic wrap and allow to soak overnight. • The next day, preheat oven to 130ºC (250ºF) Gas ½ • In a large bowl, cream the butter and sugar together until pale and fluffy ffy. y • Add the eggs one at a time, beating between each addition. Add the flour, ground almonds and spices and slowly fold in until a smooth mixture is obtained. Add the brandy-soaked fruits and stir in. • Spoon the mixture into the prepared cake pan and spread level with a palette knife. Decorate the top of the cake with the walnut halves and whole glace cherries, placing them in a circular pattern. • Bake the cake in the middle of the preheated oven for about 90 minutes. A skewer inserted into the middle of the cake should come out clean. (The cake will remain soft to the touch when baked, unlike a sponge that will spring back when pressed with your fingertips. The finished colour is not very different from the uncooked state and there will often be a residue of nut oil on the surface, but don’t worry, the oil is absorbed back into the cake on cooling.) Remove from the oven and allow to stand for an hour or two before turning out onto a wire rack to cool completely. • Allow the cake to set for 24 hours before serving. The longer you can leave it to mature, the better. Cut with a sharp serrated knife using a sawing motion. • The cake will keep for six to eight weeks in an airtight container. www.megrivers.co.uk

Caroline Lawrence Recently promoted to Head of Marketing and Programming at The Roses, Tewkesbury, Caroline has worked for twelve years to keep the arts thriving locally I got my first job in marketing at the same time as starting a degree in Graphic Design. When I joined The Roses in 2007 I didn’t intend to specialise in the arts but now I can’t imagine working in any other industry. Back then, the theatre was relatively well funded. It’s a different landscape now and ensuring our survival is a constant struggle. That said, in the last five years we’ve completed a £1m refurbishment, opened a coffee shop and increased our audience numbers year on year. We feel incredibly lucky and grateful to have the local support that we do. So much depends on it. Ticket sales are one of our two main income streams, the other being fundraising, and my remit is to maximise bookings. For years I’ve marketed our events and services – planning campaigns, creating artwork and liaising with artists – and now also book all the acts. It’s a lot more work but I love having control of the whole ticket cycle. I’ve got a good instinct for which acts will sell and where I dare take risks.

Christmas presence Many of you will now be stocking up on Christmas presents and all I ask is that you don’t advertise what you’ve bought to thieves. Lots of seasonal shopping is now done online but if you are going into town, don’t leave your bags on display in an empty car. When buying online ensure the sites you use are reputable and your bank details are secure. Hide Christmas presents out of view and if you are leaving them under the tree make sure they can’t be seen from the street or it might just prove too tempting for a thief. If you live in a We Don’t Buy Crime village, remember to mark all your new goods with your SmartWater kit; it will deter thieves and means we can trace your belongings back to you if the worst happens.

Drink and drug driving Although drink driving is more socially unacceptable than in the past, it is still a concern, particularly in rural areas where people may think they can get away with it. The consequences of driving under the influence can be devastating and we will have officers on patrol specifically targeting those who drink or drug drive. Officers attending a road traffic incident always breathalyse the drivers at the scene. Even if you’ve only had one drink it can affect your judgement so you really have to question whether it’s worth it. Please, also bear in mind your intake the
morning after as you could still be over the limit. If in doubt, simply don’t drive. Officers, including the volunteers in our fantastic special constabulary, will be on duty throughout the festive season to help keep you safe and ensure everyone can enjoy the celebrations. Could you change a future? Every day there are around 65,000 children living with 55,000 foster families in the UK; and every 20 minutes another child comes into care. Foster carers fulfil a crucial role in society, providing children who can’t live with their birth families a loving and stable home for as long as they need, explains Karina Auer from The Fostering Network
The role of a foster carer Foster carers provide day-to-day care for children and young people, and advocate on their behalf. They support their child’s educational, health and social wellbeing, keep records of their activities and achievements, attend meetings and work with a wider team responsible for their care. Fostering can be challenging but it is also very rewarding. Foster carers have a unique chance to make a real difference to a young person’s 56
life, supporting them and working to help them develop and achieve their potential. Caring locally One such carer is Richard Haynes, 75, from Twyning village, Tewkesbury. Among other things, Richard worked with youth offenders and as a Scout leader, but since 2017 he has opened his home to unaccompanied asylum seeking children and local children in need. His spare bedrooms are now often
occupied by young people in care. Richard is an emergency carer who cares for children until longerterm arrangements can be made. That means he often only has little information about the young people that arrive at his doorstep. While some foster carers will look after children on a short-term basis until the child can return home or move on to a permanent placement, others care for children on a long-term basis, often for the duration of their childhood. LIFESTYLE means introducing the children who come to live with him to an entirely new culture in a country they might have never been to before. The unaccompanied asylum seeking children he cares for may have not slept in a bed for years and faced unimaginable hardships and dangers. When they arrive, Richard provides them with clothing and toiletries. To communicate, he uses Google Translate, sign language and picture dictionaries. Everyone can become a foster carer There are many myths surrounding who can foster and people often rule themselves out unnecessarily. Foster carers come from all backgrounds and bring a wide range of life and work experiences. Having patience and resilience is key, as is being confident to deal with situations that do not go to plan. Foster carers need to be understanding and enjoy working with children. All foster carers receive training before being approved to foster, giving them the tools, and complementing their skills and experience, to help meet the

needs of any child in their care. Throughout a foster carer’s career, there will also be opportunities and expectations to complete further training, as well as ongoing support. More foster carers needed We estimate that in the South West alone 660 new foster carers are needed in the next twelve months to provide stable, secure and loving homes. Cllr Richard Boyles, cabinet member for children’s safeguarding and early years at Gloucestershire County Council, said: “We believe
there are lots of people in the county who would like to help these children but might not be sure where to start. It typically takes between six and eight months to become a foster carer, so I would encourage anyone who thinks they could provide a stable and loving home for a child to take the first step and get in touch with us today.” Richard has never regretted his decision to become a foster carer. ‘Fostering has taught me a lot and it definitely keeps me young mentally. When caring for children it becomes obvious that all children have the same basic needs, regardless of where they come from. They need a place to feel safe, worthy and cared for. There is nothing like seeing a child, who arrived very emotional – distressed, angry, and fearful – leaving, smiling and with a hug. INGREDIENTS 2 tbsp rapeseed oil 25g butter 2 large leeks, sliced and washed including most of the green part 1 stick celery 1 white onion 2 springs fresh thyme, leaves only, plus a few for garnish 3 cloves garlic, peeled and chopped 3 parsnips, peeled, cored and chopped finely 75g cooked chestnuts, plus a few extra for garnish 1.5 litres chicken or vegetable stock Salt and pepper
METHOD
• Add the oil, butter, leeks, celery, onion, thyme leaves and peeled garlic to a large pan on a medium heat. Season, put a lid on and allow to sweat for 10 minutes, stirring occasionally. • Add the parsnips, chestnuts and stock, bring to the boil and simmer until tender (about 20 minutes). Make sure the vegetables are completely covered with stock, if not add a little more. • Cool a little then blend until completely smooth before returning to the pan and reheating. Add a little more stock if the mix is too thick. • Check the seasoning and serve garnished with chopped chestnuts and fresh thyme leaves. • Chef’s tip: dress soup with a drizzle of oil for a tasty finishing touch.

Roasted Leek, Endive, Walnut and Apple Salad with Goats’ Cheese Serves 4
INGREDIENTS 3 leeks, most of the tough green top removed and the remaining part cut into quarters 2 tbsp rapeseed oil 2-3 red endives, leaves separated 100g halved walnuts, roughly chopped 2 eating apples, e.g. Braeburn, cut into thin slices 300g goats cheese log, crumbled 100g pomegranate seeds 60
DRESSING 2 tsp Dijon mustard 1 tsp runny honey 1 dessert spoon cider vinegar 3 dessert spoons extra virgin rape seed oil Salt and pepper

METHOD
• Preheat the oven to 190°C. Place the quartered leeks onto a baking tray and drizzle with the oil. Season, cover with foil and cook for 25-30 minutes. • While your leeks are cooking, prepare the rest of your ingredients and make your dressing. Place the Dijon mustard in a small jar along with the honey, vinegar and oil. Add a little salt and pepper, place the lid on top and shake hard until combined. • Once the leeks are cooked, remove them from the oven and cut into quarters again, lengthways. Through a glass, darkly As the evenings lengthen, try these darkly mysterious martinis from Brockmans Gin. Pour this smooth spirit of the night, with its blueberry and blackberry notes, to create two martinis. One features chocolate and coffee and the other combines gin with chocolate and red fruits The Mocha Martini 35ml Brockmans Gin 15ml Mozart Dark Chocolate Liqueur 50ml Fresh espresso To sweeten, add vanilla syrup, sugar syrup, or sugar cubes to required taste before shaking. Add all the ingredients into a shaker and hard shake with ice. Double-strain into a chilled martini glass. Garnish with a flourish of dark chocolate (shaved or grated) and fresh raspberries.
