As soon as I moved in, I opened the French Bistro. Over the years I bought the building next door and transformed it into a boutique hotel with a bar, French bistro and conference facilities.

What’s the best thing about where you work?

I love the square where we are. It is a very special place for me. Looking at Brighton seafront everyday just makes me happy. I do come from Biarritz, a seaside resort in south of France.

What’s your average day like, or is it ever average?

My average day is made of 12 hours. I normally start with a New Steine Breakfast and run around from the moment I walk in.

I check the arrivals for the day, reservations, check in, check out, concierge service and move in to my office to deal with the marketing & accounts.

What is the biggest challenge or opportunity currently for you and the New Steine Hotel?

The biggest challenge is to ensure that we offer consistency in service and quality but I hope we are doing well.

What exciting plans are there for the New Steine Hotel?

I am pleased to say that the exciting plan is for my guests to discover the new look and full refurbishment I just did over the winter. Of course with the current situation it is to carry on trading in the safest way possible.

What do you like most about Brighton?

What I love about Brighton is the diversity. It reminds me of London

when I first arrived in the 1980’s. Being able to see all sort of different looks and people from all sorts of different countries too.

I also love being able to walk everywhere and live in a vibrant city. I can’t imagine living anywhere else.

If anything at all, what would you like to be doing as an alternative career?

To be honest, I am lucky to be doing exactly what I love.

Apart from Brighton of course, where else would you most like to live?

I can’t imagine living anywhere else. It would be nice to be able to spend a bit more time in Biarritz where I come from and have a holiday home but Brighton is my home to live.

“Trying is buying” with Develdas luxury chocolates

Develdas is a small independent brand of Luxury Chocolates with a shop at Brighton Marina and online through their Website and Facebook page.

Their Valentino chocolates are made

Lifestyle by a family-run business in Belgium. The chocolates are handmade and made to order and therefore always fresh unlike a supermarket where a box can easily be 1 year old before you get it home. From when they order their chocolates the production time is about 10 days to when they arrive at their shop. The cost involved in this process is high as in the summer they are shipped by air cooled transport.

Their slogan is “trying is buying” the quality is superb and the freshness is evident but the taste is out of this world. Many times in their shop you hear a lot of “oh my God, these are amazing”.

They partner with the Valentino family in Belgium as they are well established and good to work with. They are easy to talk to, open to suggestions and will bend over backwards to get you the answer to a question about any of our products. For example, we had a call from a customer who is diabetic and needed to know the exact sugar/carb content per 100gr of the Valentino Sugar Free range. We could not find it in the files, so I approached Valentino and they went so far as to send me the original technical fiche of that product, analysing every single ingredient in percentages. That is something they do not normally share but they did it because they requested it. Valentino are very supportive of Develdas in everything we do and allow us to promote their range of Luxury Chocolates through a contract we have in place with them.

In the range there are over 100 different chocolates, of which we carry about 40 in the shop. We can make up Ballotins with regular chocolates, vegan, alcoholfree, sugar-free, gluten-free, dairy-free (though that is usually vegan) all with the same great quality. There are a lot of chocolates out there in the marketplace but some are either bland or very similar to each other whereas the chocolates that Develdas offer are different, delicious and truly luxurious.

Customers who visit the shop enjoy the choice and we always have ballotins ready made and pre-packed with a selection of our chocolates either in the shop or on the website.
