POTENTIAL NEGATIVE HEALTH EFFECTS OF REFINED FIBER It has been estimated that the average American consumes only about 15 grams of dietary fiber daily, falling well below the recommendations to get at least 25-35 grams daily. Although whole food sources of naturally occurring fiber are abundant in most grocery stores, the rise in refined fiber (for example, inulin coming from chicory root) added to processed foods continues to grow. Fiber has been known to promote bowel regularity and has even been associated with reducing risks for heart disease, diabetes and certain types of cancer too. Researchers from Georgia State University have conducted a study to test the effects of an inulin diet in mice. After 6 months, the mice developed jaundice and many who had pre-existing imbalances in gut bacteria also developed liver cancer. These findings can have potential implications for human health and caution should be taken with consuming refined fiber in highly processed food sources. As always, it is important to focus on a diet consisting mostly of nutrient-rich whole foods ,especially plentiful fiber-rich whole foods, while also limiting intake of highly processed foods whenever possible.

FEATURED RECIPE OF THE MONTH Roasted Cauliflower With Chickpeas & Pomegranate from www.twopeasandtheirpod.com
Ingredients & Materials Needed:
• 1 medium head cauliflower, cut into florets
• 1 (15 oz.) can chickpeas, rinsed and drained
• 1 1/2 tsp. garlic powder
• 1 1/2 tsp. ground cumin
• 1 tsp. paprika
• 1 tsp. chili powder
• 1 tsp. kosher salt
• 2 Tbsp. olive oil
• 1 Tbsp. fresh lemon juice
• 1/2 cup pomegranate arils
• 2 Tbsp. chopped fresh parsley
Instructions: 1) Preheat oven to 400º F. 2) Place cauliflower florets and chickpeas in a large bowl. Add the garlic powder, cumin, paprika, chili powder, and salt. Drizzle with olive oil and fresh lemon juice. Stir until the cauliflower and chickpeas are well coated.
3) Place on a large baking sheet and bake for 45 minute or until the cauliflower and chickpeas are slightly crisp.
4) Remove from the oven and add the pomegranate arils and fresh parsley. Serve immediately.
