GLUTEN-FREE BAKING Those Yummy Cookies! In the last issue of Lifestyles Magazine I mentioned I had noticed a marked increase in requests for gluten-free products in the past few years. In our restaurant, we have experimented with various alternatives to wheat flour in order to provide options for our customers. I think we have found the best formulation for our scones (which we also make dairy-free) and we have a wonderful cookie recipe, which is gluten-free, dairy-free, egg-free and sugar-free but yummy. I thought I would share the flour blend again. I find works best for baking cakes, muffins, cookies and scones. Remember you must always add gum either xanthan or guar. It provides the binding needed to give the baked product proper elasticity, keeping it from crumbling. (½ teaspoon per cup of flour for non-yeast baking) All of these products are available at

the local Bulk Barn, most grocery stores and health food stores. Preheat oven to 350oF. Generously grease a large cookie sheet or line it with parchment paper.

Egg-Free/Gluten-free Soft Batch cookies 40 small cookies ½ cup gluten-free all-purpose flour blend ½ cup sifted coconut flour 1 cup very finely shredded unsweetened coconut 1 tbsp + 1 tsp baking powder 1 tsp baking soda 1 tsp guar gum or xanthan gum 2 tsps ground cinnamon ½ tsp salt 1 cup raisins, dried cranberries or chocolate chips ¾ cup coconut oil, palm shortening or butter, room temp 2/3 cup honey or agave nectar ¾ cup unsweetened applesauce 1 tsp vanilla extract

All-Purpose Flour Blend 1 ¼ cups white sorghum flour 1 ¼ cups white rice flour ½ cup tapioca starch/flour ½ cup cornstarch or potato starch Place flour blend, coconut flour, coconut, baking powder, baking soda, guar gum, cinnamon and salt in a bowl, whisking to combine. In a separate bowl, combine raisins, oil/shortening, honey, vanilla and applesauce, beating until smooth. Add dry ingredients and mix only enough to combine. Drop dough by rounded tablespoons onto prepared baking sheet. Flatten cookies into circles with damp fingers allowing ½ inch space between cookies. They will not spread. For larger

cookies, shape dough into portions of about 3 tbsps each and then flatten. Bake cookies on middle rack of preheated oven until lightly browned, about 15 minutes. For larger cookies, bake about 18 minutes. Half way through baking rotate pan in the oven. Cool cookies slightly then transfer to a rack to cool. Store cookies for up to a week in a covered bowl or tin, separating each layer with parchment paper. Refrigerate or freeze for longer storage. Simple Means to Saving Money

WHEN GOING GREEN Drop a few degrees in the shower to save thousands later.

I

f the recession of 2009 paid any positive dividends, the realization by many people that they need to pay closer attention to their personal finances would no doubt be one of the more beneficial side effects. That realization not only helped people gain greater control of their personal finances but it also helped the environment as well. As people began to look for ways to save money, things like increasing the fuel efficiency of their vehicles and saving on their energy bills began to take on greater importance. But those hoping to continue saving in the years to come can also make several small adjustments that can end up paying big dividends for their bottom line and the environment.

Use higher watts and less bulbs to save on your energy bill.

• Use your dishwasher. While it might seem that a dishwasher would be environmentally unfriendly, that isn’t the case at all. Doing a full load of dishes in the dishwasher is more efficient than washing those same dishes by hand in the sink. For example, energyefficient dishwashers use roughly 4 gallons of water per load. However, when washing a full load’s worth of dishes by hand, you can expect to use between 20-25 gallons of water.

• Consider moving the refrigerator. If the household refrigerator is exposed to direct sunlight or within spitting distance of the oven range, chances are the heat generated by either the sun or the range is forcing the refrigerator to use more power than should be necessary to operate. Refrigerators use as much as 2.5 percent more power for each degree that the surrounding room

temperature is above 70. If it’s simply not feasible to move the refrigerator, consider hanging curtains to shade it from direct sunlight. • Get rid of excess appliances. While a garage refrigerator is a nice throwback to yesteryear when homeowners routinely worked in their garages, those days are largely gone while the power-hungry appliances remain. Unless you routinely work in the garage, get rid of the refrigerator and other appliances such as a basement freezer that might be nice, yet unnecessary, luxuries. • Check the toilet for leaks. One way in which many households routinely waste is via a leaky toilet. Unlike a leaky faucet, a leaky toilet isn’t always obvious to the naked eye. To determine if your toilet has a leak, pour a little food coloring into the water in the tank and avoid using the toilet for a couple of hours. If, after a couple of hours, the water in the bowl has started to change colors, then the flapper in the tank is leaking. Replacing the flapper is inexpensive and easy, and can save you thousands of gallons of water each month while lowering your monthly water bill as well. • Turn the water heater temperature down a tad. Many people enjoy a hot shower, and there’s definitely nothing wrong with that. However, turning the water heater temperature down by as little as 20 degrees can reduce the monthly water bill while prolonging the life of the water heater at the same time. A higher temperature on the water heater leads to more mineral buildup and corrosion and a higher utility bill as well. But turning the temperature down 20 degrees won’t make for too noticeable a difference when you get in the shower, and it will save you money and wear and tear on an appliance that can cost more than $1,000 to replace. • Use higher wattage light bulbs. At first glance, increasing the wattage on light bulbs can seem as perplexing as the aforementioned tip to use the dishwasher more. On the surface, it might not seem as

What’s more, one 100-watt incandescent bulb emits more light than two 60-watt bulbs despite using less power. So decrease the amount of bulbs you use and up the wattage, and you’ll notice your home will magically get brighter as a result.

Many people think that adopting an eco-friendly lifestyle is expensive. Put A Cork In It?

What’s Going On With Wine & Corks? Lately you don’t know what to expect when you receive a bottle of wine as a gift. Will that be a screw cap, a traditional looking cork or perhaps a growing trend towards a synthetic version of a cork. In this article let’s get familiar with corks. Winemakers, wineries and scientists have been researching the pros and cons of natural and synthetic corks for years and there is much debate about which is better to seal your wine. Winemakers and wineries alike have many things to consider before capping a batch of wine.

What is “cork taint”?

Natural cork can harbor a fungus called trichloroanisole, or “TCA”, which causes musty odors and flavors in wine, generally referred to as “cork taint”. An estimated one in 20 bottles sealed with natural cork will suffer from a form of “cork taint” an especially nasty and costly problem for both the professional and amateur winemaker. For the wine industry this can add up to thousands of dollars in lost revenue. For the winemaker, even one bottle like this means disappointment. This is why you are seeing more and more wineries shying away from the traditional cork and moving to a synthetic version as recommended by Tim Vandergrift, Technical Services Manager, Winexpert, a retail group of do-it-yourself wine stores. According to Vandergrift, the synthetic cork makes sense since they go into and out of

the bottle easily, don’t rot, chip, split, leak or go moldy.

TIPS FOR MANAGING AND PREVENTING STRESS WHAT IS THE CAUSE OF MY STRESS? Stress can be caused by a number of things, but for many people, the main cause of their stress is work. In fact, a report from the National Institute for Occupational Safety and Health found that 40 percent of workers found their job was very or extremely stressful. Stress at the workplace has become even more overwhelming in recent years as the economy has sagged and workers who managed to keep their jobs were asked to do more to make up for smaller staffs. If work isn’t stressing you out, then it might help to maintain a stress journal, where you can track stressful incidents in the hopes of identifying just what it might be that’s stressing you out. Getting outdoors and exercising is one way to effectively manage and cope with stress.

For many adults, stress is an ever-present part of life. Though statistics on stress can be easily manipulated, it’s safe to assume many men and women experience significant stress, especially when the economy is struggling, as it has been over the last several years. The prevalence of stress serves to highlight the emphasis men and women must place on reducing it and, whenever possible, preventing it. Though it might prove impossible to eliminate stress, learning to manage that stress can improve your quality of life significantly. When attempting to manage stress, it can help to ask yourself the following questions.

HOW CAN I MANAGE THIS STRESS? Stress levels can worsen depending on how you respond to stressful incidents. For many people, effective stress management revolves around finding healthier ways to cope. Unfortunately, it’s common to respond to stress in a host of negative ways. Overconsumption of alcohol, smoking, over- or undereating, withdrawing from friends and family, and sleeping too much are common, yet very unhealthy, ways to respond to stress. Managing and coping with stress involves finding solutions that benefit your emotional and physical health. Drinking too much or avoiding family and friends certainly won’t accomplish either of those things, so find healthier responses, which can include a better diet, quitting smoking, reducing alcohol consumption, and exercising more. If your solution to stress improves your overall health and involves something that makes you feel better both emotionally and physically, then you might begin to notice that the stress is no longer so overwhelming.

CAN I PREVENT STRESS? Stress prevention can be difficult, though it’s not impossible. Since so many people cite work as their primary cause of stress, it might be impossible to eliminate stress entirely. But there are ways to prevent unnecessary stress from overtaking your life. Recognize you have limits. High rates of unemployment have left many working men and women feeling as though they need to keep stretching themselves at work in order to keep their job and stay afloat. But you must learn to say “no” if stress has become overwhelming. Don’t take on added responsibilities if your workload is already excessive. Avoid the source of stress. When possible, avoid the source of your stress. For example, if you spend ample time each day sitting in a traffic jam, consider an alternate route to work or even public transportation. Learn to manage your time more effectively. Many overstressed people find there simply isn’t enough time in the day to get things done. Managing time more effectively, which includes planning ahead and not procrastinating, can help turn a hectic, stressful schedule into one that’s far more manageable. Make time to relax. Part of stress management and prevention is making time to relax and have fun. Spend time outdoors and don’t skip outings with family and friends. Use your alloted vacation time even if you just stay at home and relax. Taking time out for yourself can help you recharge and put you in a better position to cope with stress when it returns. Living with stress is something with which men and women have grown accustomed. But employing some management and prevention strategies can help you avoid succumbing to stress and can improve your quality of life as well.

HEALTHY ALTERNATIVES to potentially unhealthy ingredients

When trying to get healthy, men and women rightfully place great emphasis on diet and exercise. A healthy diet and routine exercise make a great team. Many people don't exactly jump for joy when adopting a healthy diet because they may feel the diet must be devoid of their favorite foods to prove effective.

But a healthy diet isn't necessarily one that lacks taste. In fact, changing a few ingredients is a great way to make some of your favorite dishes healthier while ensuring you still get to eat them. The following are a few ways to substitute healthy ingredients in some your favorite recipes. • Instead of whole milk, use fat-free or low-fat milk. • Replace heavy cream with evaporated skim milk or a combination of low-fat yogurt and plain low-fat unsalted cottage cheese. • Replace sour cream with low-fat unsalted cottage cheese or fat-free yogurt; fat-free sour cream is also a healthier choice than regular sour cream. • Swap cream cheese with soft margarine that

is low in saturated fat and free of trans fats and blend the margarine with unsalted fat-free cottage cheese. • Use margarine that is low in saturated fats and free of trans fats when a recipe calls for butter. • Choose egg whites instead of regular eggs.

But healthy eating goes beyond ingredients. Many people find it difficult to avoid all of those delicious yet typically unhealthy snacks. But even snacks can be healthy and provide an energy boost throughout the day. All it takes is choosing the right snacks as opposed to those most readily available, which are often the most unhealthy. • Replace potato or corn chips with pretzels or reduced sodium low-fat potato chips. • Avoid high-fat cookies and crackers in favor of fat-free or low-fat options, including graham crackers, rice cakes, and fig or fruit bars. • Choose angel food cake over devil's food cake. • Replace ice cream bars on hot afternoons with frozen fruit bars. • When making pudding, make it with fat-free

Hot, lazy summer days are too precious to waste in the kitchen. Enhance your outdoor leisure time with a visit to a local farmerʼs stand or market to choose fresh vegetables for this colorful recipe.

Grilled Vegetable Napoleons Ingredients: Substitute or add other vegetables as you wish. Some nice additions might be new potatoes or red peppers. Although the stacks are attractive and easy to serve, you may also arrange the grilled vegetables and cheese in a casserole.

½ cup olive oil 1 large eggplant, cut in 12 slices (1/3 -inch thick) 3 medium zucchinis, cut in 24 slices (1/4-inch thick) 3 large tomatoes, cut in 6 slices (1/3-inch thick) 3 medium red onions, cut in 12 slices (1/3-inch thick) ¾ cup ricotta cheese Salt and pepper to taste 2 teaspoons fresh thyme, chopped ½ lb. mozzarella cheese, sliced ¼-inch thick 6 sprigs fresh rosemary

Preheat barbecue and set on low. Brush vegetables with olive oil, season with salt and pepper, and grill slowly until tender, turning once. Transfer the vegetables to a tray, arranging them in a single layer, and cover tightly with plastic wrap. The vegetables may be grilled a day in advance, and refrigerated after cooling. Bring the vegetables back to room temperature before proceeding.

Stir together the ricotta, thyme, salt, and pepper in a small bowl. Place one slice of eggplant on a lightly oiled grill sheet or foil pan. Spread 1 tablespoon of the ricotta mixture over the eggplant. Cover with 2 slices of zucchini, 1 slice of onion, 1 slice of mozzarella, 1 slice of tomato, and 2 slices of zucchini. Spread 1 tablespoon of the ricotta mixture over the onion, and top with another slice of eggplant. Repeat this procedure with the remaining vegetables to make 5 more stacks.

Insert a wooden skewer through the centre of each stack to create a hole from top to bottom. Remove the bottom leaves from each rosemary sprig, leaving one inch of leaves on the top. Insert 1 sprig into the centre hole in each napoleon, and return to the barbecue. Heat for about 10 minutes on low, or until mozzarella is melted and vegetables are warmed through.

TIP #1 Trust your vendors

Couples often have unique ideas for their wedding day. It may seem tempting to spell out what you want in minute detail and insist on wedding vendors carrying out your wishes to a T. But the smarter idea may be to give vendors a little more free reign — after all, they are the professionals. “I had a vision in my head of what I wanted my centerpieces to look like,” offers Jean.

“I gave the florist my suggestions and the ‘feel’ of what I was trying to create, but ultimately I left the finished product up to her. When I walked into the

reception hall and saw my centerpiece baskets overflowing with fall-hued flowers, berries and twinkling candles, I was so excited I had left it up to the expert.”

Write down important phone numbers, vendor information and all the other details you’ll want instant access to. It’s important that such notes are taken in something that’s portable, allowing you to jot down notes immediately as opposed to forcing you to remember until you arrive home. • Create a to-do list. A to-do list is another great way to stay organized when planning your wedding. As you make certain decisions, simply strike those tasks from the list. This way you will know which tasks you’ve polished off and which ones you still need to work on.

• Create a wedding calendar. Keep a calendar devoted specifically to the wedding. Include appointments with vendors and information regarding payment schedules and other deadlines on this calendar. It is also best to hand wash your bras in cool water using only a fine fabric wash, such as "Forever New", as clearly your hands are much more gentle than any gentle cycle of a washing machine. However, if you do opt to machine wash your bras, I would strongly recommend that you ensure that the "hook and eye" closures of your bras are clasped together as this will prevent the hooks from tangling amongst other items that are being washed in the machine. You should also consider using a lingerie bag (or a "Bra Saver Bag") which will securely contain your bras separately from anything else you may be laundering. The wash bag will also prevent any unnecessary damage to occur to your

bras. Always machine wash your bras on the delicate cycle in cool water with a fine fabric wash. When it is time to dry your items, do not place any bras in the dryer as the heat will inevitably break down any elasticity in the bras and will promote detriment to the fabrication and/or the fabric of the garment. Hang dry your bras on a clothes rack, on a clothesline or simply lay them flat to dry on a plush towel for a relatively quick drying process. It is also beneficial to alternate between at least two bras every three days to allow the elasticity time to recover between washing, drying and wearing. This will definitely promote the longevity of your bras. Following these simple little steps can add many months of wear to all of your bras. FLIES

Cluster Flies are generally outdoor insects. However, as the weather gets cooler, they look for shelter indoors. They tend to congregate in areas which receive the most sunlight and may be found in extremely large numbers on windows, patios, between walls, in false ceilings, in basements and in any infrequently used areas of your home. They are not associated with poor sanitary conditions. Cluster flies look much like common houseflies but are slightly larger with yellow-gold hair in their thorax and gray hairs on their abdomen. They do not buzz around like a housefly, but are more sluggish moving and emit a buckwheat honey odour. When crushed they leave a smelly, greasy residue. Cluster fly adults overwinter in sheltered areas and emerge in the spring to mate. The larvae are found in the bodies of earthworms. They are found across Canada wherever you find earthworms, usually in welldrained soil covered by grass. They can be very annoying especially near farms. Cluster flies number in the hundreds to thousands! They usually return each year. Cluster flies enter your home

through very small openings. To avoid this, caulk all openings to prevent the flies from entering your home. If you already have these flies, vacuum the windows and then go outside to empty the bag. A professional exterminator will then spray all windows, cracks and crevices with a preventative repellant. Cluster flies may need to be treated on a yearly basis, often in the spring and around Labour Day. Although cluster flies do not carry disease, they are a nuisance that you will want to eliminate! Radon is a naturally occurring radioactive gas that comes from the decay of uranium found in most soils. Gaps in suspended floors and around service pipes are additional entry points for radon. Once radon enters a home, it then becomes trapped inside, where buildup can occur. Radon buildup can potentially be very harmful or even fatal. A radioactive gas, radon is among the leading causes of lung cancer in the United States. In fact, only smoking causes more lung cancer deaths than radon, which can enter a home whether that home is new, old, well-sealed, or drafty. Homeowners concerned about radon, which is invisible and odorless, should have their homes tested.

Planning Your Dream Home? The First Thing You Need To Know

Most people complete their building projects successfully, others unfortunately, do not. There are many reasons why their project took the route it did, not the least of which was their preplanning and preparation skills. Success in home building is quite simple, “On Time and Within Budget”. It’s an often-used term in the building industry, but one that is seldom respected. The desire to build one’s own home is personal and as individual as the styles and designs of the endless variety of homes themselves. Some get physically involved to provide a level of self-satisfaction from being able to stand back and say, “I did it myself”. For others it’s because they’re not convinced that the level of quality in the current mass-produced track housing meets their standards. Many do it to save money, or at least try, while a good number just believe that it’s the only way to get what they really want. It is important to understand what you are trying to achieve in building a new home. What is your present lifestyle, your future plans, and how will your home meet those needs? If you are retiring, you probably figure on staying in the house for the rest of your life. A young and growing family may focus more on affordability rather than create comforts. A middle-aged couple with teenagers and two careers will need lots of room and convenience while physically challenged people have special

design needs to fit their lifestyles as well. Understanding yourself and your needs are as important as any of the skills that are needed to see this project through to a successful completion. A number of skills are required in this project, coordination, planning, negotiating, scheduling and supervision. The most important skill however is communication, as it is a part of all the others. The other major part of this project will be the paperwork, lots and lots of paperwork. Yes, the paper chase is the biggest part of building a house. Usually the paper chase is conducted by the general contractor, for which you


LIFESTYLES MAGAZINE would pay him/her a percentage of the total cost of the project that can easily range up to 20 percent or more of the project cost. A good general contractor or project coordinator is a valuable asset and worth every dollar. Taking on this part of the project yourself has the potential of some significant savings. It also carries the risk of some serious cost overruns if you are not prepared to put in the required hours and keep the project on track. To be a general contractor or project manager takes no more that a pencil, a calculator and a phone. It does not require tools or a truck. It does not require an architect’s degree. What it does require is an ability to handle the paperwork and communicate with other people, the two skills that can determine success in building a home or cottage, Most general contractors do get involved with some or all of the physical construction while project coordinators seem to stay more with the management side of the busi ness.

There are many different approaches to building a house and one of your biggest decisions will be how to get involved in your own project.

Your choices will vary, from hiring a general contractor that will build you a turnkey house, complete with your new home warranty, to physically building it yourself. Some will have a contractor put up a shell which they will complete themselves. You may prefer to hire the skilled work out to professionals, but handle all the paperwork, acting as your own general contractor. The approach that you take will depend on the time and skill that you can bring to your project. The other issue here is the amount of money that you may be trying to save. That could take precedence over time and skill. The money factor, usually the most integral part of the decision process, is the most perplexing. An often-asked question is, “how much money can I save by building my own home”? This will spawn a number of different responses depending on the recipient of the question. My answer is nothing, because most people will spend all the money they have saved and all the money they can borrow to build their home. Add to that the fact that they will spend that amount of money weather they are building the home themselves or having it built for them as a turnkey. The difference you see is in the size and quality of the home they get for their money. Yes that sweat equity will translate into a larger home or one of higher quality, but most will spend it all. That’s why the you shouldn’t focus on how to save money, but rather how to build your home on time and stay within the budget that is set out to complete your project. You will be a lot happier! Kick it off October 18th with RON WESTRAY Jazz Credentials Extraordinaire! And, He's A Professor At York University

Jazz musician and composer Ron Westray is best known for his work as lead trombonist with the Lincoln Center Jazz Orchestra directed by Wynton Marsalis and his collaborations with Wycliffe Gordon. He launched his professional performance career in the early 1990s, recording and touring nationally with the Marcus Roberts Septet. He has appeared in concert with such luminaries as Ray Charles, Bob Dylan, Willie Nelson, Stevie Wonder, Benny Carter, Dewey Redman, Roy Haynes, Randy Brecker and a host of other pre-eminent artists. A regular on the New York City club circuit, he has played premier jazz venues such as the Village Vanguard, Blue Note, Sweet Basil’s, Iridium, Jazz Standard and Smalls, and is a standing member of the Mingus Band.

In addition to his concerts and recordings with the Lincoln Center Jazz Orchestra, Professor Westray has recorded as a sideman on such major labels as Columbia, Sony Classical and RCA Novus. His latest CD as leader is Medical Cures Cures for the Chromatic Commands of the Inner City (Blue Canoe Records 2008). He co-leads with trumpet player Thomas Heflin on his most recent recording, Live in Austin (Blue Canoe Records 2011). As a composer, Professor Westray’s personal catalogue comprises dozens of original compositions and arrangements for big band and mixed ensembles. His commissions for the Lincoln Center Jazz Orchestra include the monumental score “Chivalrous Misdemeanors – Select Tales from Don Quixote” (2005) and arrangements of the works of Charles Mingus and Ornette Coleman. His charts have been published by Walrus Music. Professor Westray was an assistant professor in the Jazz Studies Department at the University of Texas at Austin prior to his appointment at York University. He joined York's Music Department in 2009 as the Oscar Peterson Chair in Jazz Performance, a position endowed by the Government of Ontario to commemorate legendary Canadian jazz artist Oscar Peterson. He teaches in the jazz program and co-directs the York University Jazz Orchestra with Professor Al Henderson.

THE BRODKORB SIMMONS Guerrette Trio The Brodkorb Simmons Guerrette Trio (or “BSG Trio”) is a new jazz group composed of young musicians playing well beyond their years. Having studied and played jazz since the age when most kids are playing Pokemon, pianist Carter Brodkorb (13), bassist Rees Simmons (15) and drummer Daniel Guerrette (15) have recently started performing in a growing list of jazz clubs across Toronto.

Training undertaken by the members of the BSG Trio include ten years studying in the Humber College Community Music Program, the Yamaha Music System, the Royal Conservatory of Music, years of private lessons as well as attending several summer jazz camps. Numerous awards have been garnered, including dozens of Kiwanis awards, Humber Awards, Musicfest Gold standards and Honour Awards as well as the Festival’s top award for their respective instrument.

Members of the BSG Trio are also the youngest-ever players in the City of Brampton Concert Band, Musicfest's Yamaha All-Star Band and the Jazz.FM91 Youth Big Band. Members have also received several full scholarships to camps and the Humber program. They have been honoured and are privileged to receive invitations to "sit in" with some of Canada’s greatest and most accomplished jazz musicians. The BSG Trio, with its combination of original compositions and classics, aspire to create an exciting interpretation of jazz.

The Brodkorb, Simmons and Guerrette Trio consists of Carter age 13 on piano, Rees age 15 on bass and drummer Daniel, age 15. This programming fits in very nicely with the Orillia Jazz Festival's
