It’s already July and we are halfway through 2019! It’s the right time to reflect on the goals we had set out at the beginning of the year and assess our performance vis-à-vis these goals. More importantly, if required we must recalibrate and realign our efforts in case we feel we have strayed from the milestones we had set for ourselves at the outset of the year. For the country, the first six months of the year were definitely eventful. The biggest festival of democracy on earth India's National Election 2019 - was held in the months of April and May and the results meant that PM Modi and his party retained power with a thumping majority. However, the country's economy faced a slowdown and our tourism industry suffered too. Since we all depend on the policy and programmes of our government, the run-up to elections until the results are out is always replete with uncertainties. People are keen to see the nature and composition of the new government before putting their money on something. A slight slowdown in economic activity before elections is usual. However, now that elections are behind us and we have a stable and strong government, we hope that business and travel activities will ramp up. Enveloping this month’s issue, which is focused on the burgeoning trend of convenience and personalisation as an important growth avenue, is our cover story (Page 18): 'Visa services to help you

begin your travel in comfort'. If you think about it, one thing that has transformed and eased travelling the most in recent years, it is the revolution of the visa application process. Powered by ever-evolving technology and its own pioneering efforts in this space, VFS Global has paved the way and eased the visa application process so much so that one doesn’t even need to step out of their home or office to apply for a visa today. The company goes so far as to collect your visa papers from, and deliver them to, your home or office, as per your choice. If you still choose to visit the visa application centre but want a highly luxurious visa applying experience, there are dedicated and exclusive Premium Lounges for discerning applicants. What is interesting though is that in spite of technological advancements in all facets of our industry, travel agents continue to have a pivotal role in travel planning and booking and that also includes visa related advice and assistance. Do read the interview of Mr Vinay Malhotra, Regional Group COO – South Asia, Middle East, and China, VFS Global, on page 20. Mr Malhotra asserted that 'Travel agents remain a key guidance mechanism in the visa services system.' As our new finance minister, Ms Nirmala Sitharaman prepares to present the first budget of the Modi Government 2.0, we expect that her budget will have enough ammunition to flare up economic activities in the country, including adequate provisions for the tourism sector. Turn to our story 'Budget 2019-2020: what the industry expects’ to learn more. In addition, there is plenty of news and information in this issue that will come handy while you plan your next travel. I hope you enjoy reading the issue as much as we have enjoyed compiling it!

hile seeking the continuity of the Government's tourist-friendly policies, India's travel & tourism industry expects the Government to increase its focus on the development and promotion of the tourism sector, through increased budgetary allocations, and rationalization of GST structure related to their businesses. For India with its huge young population, growing unemployment and lack of employment opportunities remain big challenges that require sustainable solutions. The country's manufacturing and other sectors are not in a position to create sufficient jobs to absorb the growing

number of unemployed youth. The country's tourism sector with its massive potential offers a huge opportunity to generate employment. SN SRIVASTAVA, President & Co-founder of Clarks Inn Group of Hotels, says, "Tourism and Hospitality industry can be the bulwark against growing unemployment and challenges of creating millions of new job opportunities for a young country like India, but for this to happen, the first and foremost, the industry needs this recognition from the government and the rightful attention it deserves. The first sign of that recognition and attention will be the appropriate budgetary allocation for the sector, besides introducing conducive tourism and hotel industry policies."

Describing the travel and tourism industry as a crucial contributor to the growth of the Indian economy, MAHESH IYER, Executive Director & CEO, Thomas Cook (India) says, " As the Industry has a powerful multiplier impact on employment generation, we are confident that the forthcoming Union Budget will strengthen the industry with the continuity of its tourism friendly policies to give a fillip to India’s Inbound, Domestic and MICE segments." Iyer is looking forward to increased focus and sustained delivery on key initiatives like UDAN, Heritage City Development and Augmentation Yojana (HRIDAY), integrated development of pilgrimage destinations through Pilgrimage Rejuvenation and Spirituality Augmentation Drive (PRASAD), increased allocation towards enhancement of the e-Visa initiative to include additional countries, development of new tourism circuits and attractions, along with an increased focus on infrastructure. RAJEEV KALE, President & Country Head – Holidays, MICE, Visa, Thomas Cook (India), expressed hope that the Budget will increase tax exemptions for the middle-class that will boost the tourism sector. Tax rebates will result in increased disposable incomes and hence create increased opportunities for travel. Expecting that the government will focus on the tourism sector in its budget proposal, NISHANT PITTI, Co-Founder and CEO, EaseMyTrip says that there should be no delay in refunds of GST since the postponement of such refunds blocks working capital and creates stress for the industry. "My expectation from this budget is that the government should continue the current tax immunity for start-ups and small enterprises" added Pitti. While welcoming the GST as a great step, SN Srivastava now expects a rational tax structure for the hospitality industry, terming such rationalization the need of the hour. The Federation of Hotel & Restaurant Associations of India (FHRAI) pointed out that the 28% GST rate applicable for room tariffs of Rs.7500/- and above is inappropriate and has appealed to the Finance Ministry for bringing in some major reforms with regards to direct and indirect taxes for the industry. “We request the Government to include two options in GST for restaurants: a composite GST with a flat 5% rate under which restaurants will not avail ITC and the other is a 12% rate with ITC,” said GURBAXISH SINGH KOHLI, VP, FHRAI.

DIPAK DEVA, MD, Travel Corporation India (TCI) also wants a reduction in 28% GST to encourage foreign travellers to visit the country. He also wants waiving off of tourist visa fee to encourage international travellers to visit India and increased investment in marketing to initiate global campaigns to promote Incredible India. “Ever since the GST came into effect, we’ve been requesting for the rate categorization of hotel tariffs to be on the basis of the transaction value instead of on the declared tariff. Hotels presently are required to levy either 0, 12, 18 or 28% GST rates based on the declared room tariffs. We recommend that the rate categorization should be done on the basis of transaction value instead and also that a uniform rate of 12 per cent be levied with Input Tax Credit being allowed for this infrastructure industry. We have also requested for GST exemption or a GST refund for their purchases made in India when foreign tourists return home. Tourists will be able to claim a tax refund at the airport at the departure and this will help increase the foreign exchange earnings for the country,” says Kamlesh Barot, pastPresident, FHRAI. He informed that FHRAI has requested for increasing the budget on tourism expenditure, designating Special Tourism Zones in each city for restaurants, bars and lounges to operate 24 x 7; availability of finance from banks and TFCI to be eased; restoring the rate of depreciation to 20 per cent from the present 10 per cent; and the removal of hygiene and sanitation monitoring regulations from all Municipalities in view of the All India FSSAI Act, to avoid duplication of process and manpower,” adds Mr Barot. “We hope this year’s Union Budget to take more progressive steps towards making Incredible India, Irresistible India to the discerning traveller. Also, FHRAI will continue to work inclusively with the Govt. towards making our country one of the top tourist destinations of the world,” added Kohli. Given the recent developments and challenges faced by the aviation sector, Mahesh Iyer believes that there is an urgent need to take corrective measures in the interest of the larger tourism, hospitality and business environment. "Our wish list also includes clarifying the issue of air travel agents being subjected to tax collection at source. We also look forward to a reduced corporate tax structure of 25% across the board," added Iyer.

INDIA’S TOURISM INDUSTRY FACING LEADERSHIP CRISIS:

RAJEEV KOHLI Thought leaders have a very important role to play in every sector. Every major industry in the world has thought leaders, but in India’s travel & tourism, such leaders are very few, and even these few have been sidelined. Rajeev Kohli Joint Managing Director, Creative Travel By Prem Kumar

Making its voice heard and representing its concerns to policymakers and authorities are some of the big challenges, India’s Travel & Tourism Industry is facing today. After the long-drawn parliamentary election, we have a new government, but the role of associations of the country’s travel and tourism industry during the election has been disappointing at a time when the industry is facing some serious challenges. According to Rajeev Kohli, Joint Managing Director, Creative Travel, India’s travel trade associations have let down their membership and the industry as a whole. “During 2019 elections, I did not hear any association approaching any political party to include the industry’s concerns and demands in their election manifestos,” said Kohli, who had served the Indian Tour Operators Association of India (IATO) in many capacities including its vice president and senior vice president. “The General Elections 2019 was not something unexpected; it was well-known that the elections were due in April-May this year, but no effort was made to connect with political parties to apprise them of our issues and problem and seek their commitments to address them” rued Kohli. He

stated that the industry is currently facing some sort of leadership crisis, and its current leaders have failed to provide desired leadership to the industry.

Many prominent industry players, who can provide constructive leadership to the industry, articulate its concerns and make the industry’s voice heard have been sidelined, said Kohli. Many key players of the industry, who are at the helms of India’s leading travel business organizations, don’t want to get involved in the politics of associations because of the narrow-mindedness of people in associations. An important aspect of leadership is thought leaders, whose role is well recognized in every walk of our life. Thought leaders are well-informed, experienced and successful people in their respective domains. They are visionaries and inspire people with their innovative ideas and success stories. Young entrepreneurs can learn a lot from them. “Thought leaders have a very important role to play in every sector. Every major industry in the world has thought leaders, but in India’s travel & tourism, such leaders are few, and even these few have been sidelined and underutilized,” rues Kohli. He added that some thought leaders were parts of associations, but have been shown the doors. Thought leaders can well be used to inspire and educate members of the industry, but our associations are unable to use them and the industry as a whole is deprived of their knowledge and insights gained through years of hard work and experiences."

INTERVIEW

INDIAN OUTBOUND TRAVEL HAS A VERY POSITIVE OUTLOOK: INTERGLOBE AIR TRANSPORT'S CEO Having already emerged as a major outbound travel market, India is expected to grow further over the next few years, according to MR SIDDHANTA SHARMA, President & CEO, InterGlobe Air Transport (IGAT). By Prem Kumar

To start with, what is your assessment of the current outbound travel from India?

India has emerged as a major outbound market over the past decade both in terms of volume as well as overall spends in the outbound travel sector. is already large market is expected to grow further over the next few years. International Tourism Boards are leveraging this opportunity and their increased interest in the Indian market is implied through their marketing and promotional activities. Every day more tourism boards are setting up their offices and increasing their presence in India and all these efforts, suggest a very positive outlook for the sector.

Mr. Siddhanta Sharma President & CEO, InterGlobe Air Transport (IGAT)

What kinds of trends have you noticed in the Indian outbound travel in recent years in terms of tastes, choices and preferences?

Historically, Indian travellers were perceived to be cautious, non-experimental and low spenders. However, the profile of

the Indian traveller has significantly changed over the last decade. e emerging middle class, financial empowerment of women and smart technologies has energized the sectoral grow further. As the income levels and size of population corresponding to those income levels rose, people started spending on tourism and for leisure activities more oen. Another reason was to brag about the fact that one has been to an overseas location. ‘I have got a visa stamp in my passport’ was a statement to make! e new age Indian travellers today are spending more and are exploring new destinations. Adventure, sight-seeing, exploring the unexplored and relaxation are the key drivers of outbound travel today.

How do you see the Indian outbound travel evolving in the coming years? What factors would lead to these prospective changes?

Indian millennials are the new fast-growing segment which has the propensity to spend. ey are more confident and adventurous than previous generations when it comes to travel. Millennials prefer independent travel over group tours and are less concerned about issues like language or cultural barriers. Higher disposal incomes and easy

EMIs are also acting as catalysts towards the increasing numbers of firsttime travellers entering the international holiday market every year. While South East Asia continues to be hot with the new travellers due to its proximity and affordable packages/cost, there is an emerging trend to experiment with their choice of destinations. Central Europe, Australia, Canada and China are witnessing high growth from the Indian market every year.

According to you, how is the current crisis in India's civil aviation affecting the country's tourism?

e tourism sector in India, over the past few months, has been influenced by various factors, ranging from capacity issues, reduction in long haul flights, the closure of airspace in the region, making it unviable for some carriers to fly to India. e sudden decline in ca-

pacity has led to an increase in international airfares due to which many travellers are tweaking their plans, and some are choosing cheaper short-haul international destinations.

What are the changes you are noticing in India's travel trade? How should India's travel agents deal with the challenges they are facing?

e growing middle class, higher disposable income, low fare international flights, ease of visa and liberal foreign exchange policy has made travel easier and far more lucrative. e number of international travellers has not only grown from the metros, but also from tier II and III cities across India. OTAs are distributing inventory of airlines and hotels in addition to providing financing solutions that provide them with a credit facility looking at their past purchase record. Innovation and collaboration providing value to all

the stakeholders is the key to success. To remain relevant in the changing travel landscape, they need to continue to provide world-class services by: • Providing quick access to relevant information and the ease of online booking • Being transparent in the fees they charge for their services • Adding value through customisation of travel itineraries and promote experiences rather than focussing just on ticketing

"Indian millennials are the new fast-growing segment which has the propensity to spend. They are more confident and adventurous than previous generations when it comes to travel."

TRAVEL AGENTS REMAIN A KEY GUIDANCE MECHANISM IN THE VISA SERVICES SYSTEM

In a country like India, travel agents continue to have a pivotal role in travel planning and booking. For many reasons, the majority of Indian travellers still prefer going through travel agents, according to MR. VINAY MALHOTRA, Regional Group COO – South Asia, Middle East, and China, VFS Global. In an exclusive interview to TnH, Mr. Malhotra said that travel agents also remain a key guidance mechanism in the visa services system, offering visa applicants their valued advice and support on a visa application process. Excerpts: By Prem Kumar

Q

As an increasing number of travellers are planning their trips on their own, has the role of travel agents changed with regard to the visa application process?

In a country like India, the trust and reliability of a customer-focused and specialised travel agent still hold a very high premium. e personalised 360-degree service offered by a travel agent that goes way beyond the preliminary visa application stage, and continues all through the travel life cycle, is definitely in demand among travellers who want to be free of the hassle of planning a trip end-to-end on their own. While several young travellers may be planning and booking holidays online on their own, the large majority of Indian travellers prefer going through travel agents for various reasons: knowing there is someone to turn to in case of trouble faced with bookings or on the trip, complete guidance for obtaining a visa, a persisting lack of trust in online transactions, the need for Indian meals, the comfort of having an Indian guide, especially for better communication and so on and so forth.

Q

With the ever-growing use of technology and personalisation in the visa application process, how can travel agents serve their clients better as far as visa services are concerned?

Travel agents remain a key guidance mechanism in the visa services system – advice on the application form and supporting documents needed, or submitting the applications on applicants’ behalf for countries that don’t require biometrics, especially for group travels, while also offering a personalised 360-degree service that goes way beyond the visa application stage. at said, in a fairly short period, we have seen the travel business undergo a transformation on many levels. Platforms of consumption have gone online, mobile and social – there’s a plethora of mobile and web-based options for consumers so that services have become available at the customer’s fingertips. However, while a customer will appreciate if service is available on their smartphones, they will have high recall value if they receive a professional, personalised service and that’s where the unparalleled element of physical interaction with a trusted travel agent comes in.

Q

Is there any service or programme exclusively designed for travel agents, keeping in mind their needs?

For the last 18 years we have been present in India, we have continuously engaged with travel agents on a regular basis to

improve the overall visa services ecosystem for the end customer. e success of this synergy is very evident in our optional Visa At Your Doorstep service, for instance, where 95% of those who opt for this service are travel agents, who invite VFS Global to deliver this service for their customers at their location of choice, anywhere in India. Besides preferred pricing for Visa At Your Doorstep group applications, VFS Global offers travel agents a wide range of innovative and extremely useful services that smoothen the visa application process, including Premium Lounges for personalised service, and ability to apply outside regular hours (prime time services) including dedicated counters.

Q

While visa application is one aspect of the travel process, how can travel agents tap into opportunities in this process, and also in the larger changing travel sector?

e travel fraternity being a key partner in the visa services ecosystem and we are constantly in touch with them through informational mailers offer and forwarding any important communication from the governments. Recently, we have taken note of process-related queries brought to our notice by travel partners, we are stepping up efforts to share this information directly with them, so they can better serve their customers and set the right expectations. e market is only growing, with outbound travel, domestic and international on a steady rise. e increasing affordability of travelling abroad, and many countries recognising the value of tourism to their economic agendas, are also contributing to this consistent growth. ere is tremendous growth potential in what we can all offer. Our focus is always to work together with our partners to introduce faster and better services and products. When it comes to travel, we truly believe the sky is the limit.

Many travellers think their airlines will reimburse them in case they miss their flights due to connecting flight delays or in case of flight cancellations, but most airlines do not reimburse unless it’s for some grave, unavoidable reason. More often than not, the fine prints in airline insurance make it nearly impossible to get any coverage. Also, in case you have to cancel your flight due to illness or an emergency, you are left high and dry without insurance. It’s important to weigh in the coverages and the fine prints of the policy exclusions. One may research online to compare the different plans that are offered, factoring in the coverage benefits, premium amount, medical cover, upper age limit, and most importantly the brand reputation of the insurer, widespread international assistance network, and a consistent track record of seamless claim settlement, not to forget the specific destination and trip duration, before buying. With travel insurance in place, rest assured, your trip is well covered, and you can enjoy without worry! The Aananda Imperial lives up to the reputation of introducing the concept of luxury hospitality in Bilaspur and is striving to reckon on the national hospitality scene. By Swaati Chaudhury

In today’s hashtag generation, luxury hospitality in tier-III cities of India is coming of age and e Aananda Imperial, the four-star property from the house of V N Inn Private Limited in Chhattisgarh’s Bilaspur serves as an exemplary case. Best known as the premier and only luxury MICE property in Bilaspur, the Aananda Imperial entices like no other. An invitation to visit the property made me travel to Bilaspur and halt for a day. It was an overwhelming experience to witness the kind of incredible facilities on offer in the hotel for its valued guests along with the substantial growth the hospitality group has notched up. e hotel has its own way of welcoming its guests by lighting the ceremonial lamp and putting tikka on the forehead that reminds us of our Indian tradition- Atithi Devo Bhava. Spread over 1 lakh sq. , the hospitality group has a built-up area of 70,000 sq.  and threw opened its doors sometime in

We focus upon the feel-good factor of our guests and keeping with the quality of service and consistency, we believe that Bilaspur is a destination of historical, cultural and spiritual significance.” In an exemplary show of unity in diversity, the hospitality group is into hosting a host of festivals including Durga puja, Diwali, Eid, Holi and Baisakhi. Roy Choudhury said, “We are rebranding our hotel as a MICE property of Chhattisgarh. We are looking beyond horizon and we are interested to establish Bilaspur as a destination and once this happens, we expect a steady stream of MICE travellers will flow in. Very soon, we are kicking off a documentary feature on Bilaspur with a view to showcase it as an ideal travel destination and promote it as a preferred weekend destination. ere is Ratanpur Fort lying around 25 km from our hotel and Mahamaya shrine at Ratanpur revered as one of 52 Shakti Peeths of India.” Looking ahead, the eco-friendly hospitality group has drawn up some grandiose

TIME FOR THE TOURISM MINISTRY TO PICK UP THE GAUNTLET Despite its varied and immense tourism potential, India's share in the global tourism still remains low. Lack of standardization in India's travel and tourism industry severally daunts the country's appeal among tourists. A NIL KUMAR PRASANNA C EO, AXISROOMS

India: A tourist magnet India is known for its rich diversity in culture, language, lifestyle, food, and a vast variety of tourist destinations - from scorching desserts to expansive coastlines. India is a travel brochure unto itself. India has been riding on this eastern mysticism and technological advancement to attract affluent travelers from the west as well as from the east. Today, we see more Chinese, Japanese, and Koreans visiting India during rough winters back in their home countries. And not to forget a growing list of domestic travelers who are keen to explore their own country - India - before exploring foreign destinations. However, there seems to be a lack of standardization in travel and tourism management in India. is is in no way to call the administrators and ground level workers short, but when compared to tourism departments of other countries, we lag behind them all severely. May be because there isn't proper cohesion between central and state tourism and travel authorities, or maybe we haven’t upgraded to the modern age of travelling. ere seems to be a tremendous disconnect with innovation and tourism in India. Why is that? Bring in standardization digitization, and accountability Do you remember a tourism India television advertisement which had Bollywood

actor Aamir Khan in it? Where he goes about addressing people and the TV audience about the real value of 'Atithi devo bhava' - meaning a guest akin to god? It was all very touchy, but did the television advertisement really make a mark at the grass root level? I am not so sure. But, I can see why it was the right step to address a major concern. We have all heard a lot of accounts of cheating, fleecing, and other untoward incidents experienced by travelers - both international and domestic tourists. ere is a

theme behind all such experiences - desperation. When we look at small hotels and homestays, those privately owned offering terrific, value for money, standard services; we wonder why this can't be found in government run hotels and bungalows across the country. To be fair, there are gems of properties to be found which are immaculately run and serviced - especially in Mysore - which is run by the state tourism department. We have seen falling behind in weaving standardization across all travel and lodging facilities across the country. Is there a standard in service and property maintenance and unified code of conduct and operations shared by all government owned properties and services? How many of the millions of employed by the tourism and travel departments vouch to be accountable? Here are some pressing issues which needs immediate, long term planning: Lack of disable-friendly tourism How many tourist destinations in India are disable-friendly? Not many. e number of disabled tourists many not by in the high millions, but it goes to show the severe lack of modern travel standards in India. Lack of skilled workers From government employed tourist guides to rickshawalas plying the streets, millions of direct and indirect stakeholders are grossly

untrained in the English language and so skills. Free movement of information sets the standard for each tourist transaction. India needs a cohesive plan to tackle this void. Lack of Visa on arrival for major countries Cumbersome travel laws and rules are major hindrances for foreign citizens to consider India as their travel destination. We should pick a leaf from the European Union and implement Visa rules akin to Schengen privileges. Lack of accessibility to tourist destinations It is only now that the government is opening its eyes to developing domestic airports across tier 2 and 3 towns. Indian Railways is nowhere near the standards of Eurail or China Rail. And not to forget lack of quality State and National Highways. When people don't get smooth travel options to major destinations, they just don't travel -

causing severe loss of tourism revenue. Lack of international-standard accommodation Most international tourists prefer high quality accommodation, while most domestic travelers prefer budget friendly stays. ank goodness for brands such as Treebo, Oyo, and FabHotels to have brought some semblance in standardized budget accommodation. ere needs to be a major overhaul in standard of service at government owned properties. Service and luxury taxes are high India is notorious to levy high taxes on luxury goods and services. is especially shoots cost of 4 and 5 star accommodation. e government should rethink taxing tourist revenue. Safety of women We have seen international tourists; especially women become targets to nefarious ac-

tivities. Sadly such activities take domestic victims too. If this is the message we send to the world about women's safety - India will say goodbye to millions of travelling families and young women travelers. Security concerns Shootouts, bomb blasts, and other terrorist activities are a major problem for every country, not only India. However, lack of tight security at major tourist destinations in India is concern which has to be addressed with modern safety solutions. Environmental impact not accounted for Some Indian states have implemented strong, ethical environmental best practices such as ban on plastic use, usage of renewable energies etc. However, at the top level, India's tourism department seems to be completely ignorant to set a country-wide environmental code of business. is negligence takes a toll on tourist destinations and local governments.

For an avid India Cricket team skipper Virat Kohli fan, a visit to his restaurant, Nueva Bar and Dining located in South Delhi's culinary hotspot Sangam Courtyard is a must to get a perfect opportunity to come face-to-face with him. Even if you are not a fan of cricket you should visit Nueva, the latest addition to the galaxy of eateries which offers a classy and chic dining environment. It is one of the few restaurants to specialise exclusively in South American fare. It is spread across two floors, the ground floor featuring a plush lounge and bar where you get to taste the best from Tapas menu with some exciting drinks. e first floor is a smart dining area; décor done tastefully with a white and gold theme. As you climb up the stairs, the large glass panels allow you to see chefs in action in a state of the art kitchen. At ‘Nueva’, food has been very aptly paired with art and philosophy by Chef Michael Swamy, a Cordon Bleu-trained patisserie. As the Owner & Chef Patron of Nueva, Swamy says, “As Nueva stands for new, we intend to introduce new dishes very oen.” It is important to mention here that Nueva is probably the only restaurant that offers fine dining, high tea and tapas under one roof. Nueva is an awesome place for kiddos too as they get to order from a separate kids’ menu. So we, with high expectations were at Virat’s famous Nueva that serves authentic South American food along with inspirations from Spain, Italy, Portugal, France and Japan. Well, we were not disappointed. e ambience was nice. We were welcomed with warm smiles.

Verdict:

Ameal at Nueva is 'just right’, it has just the right mix of ambience and delicious food, and above all its Virat Kohli's favourite. The beautifully crafted restaurant gives a feel of three concepts within a single space - Fine Dining at an affordable price, food and service worthy of a Michelin Star. The portions are quite sufficient for a fine dining restaurant and every dish is gorgeous, plated and decorated perfectly.

Address: Sangam Courtyard, RK Puram, New Delhi. Timings: Between 12:30 pm and 3:30 pm, and from 7:30 pm to 11:30 pm. A meal for two cost – 2500 INR ++

We were awestruck as we picked up our menu book. It looked like a freshly created art piece, only one of its kinds. Yes, no two menu covers are the same at Nueva. If you look across your table, you will notice your neighbour guest is holding the menu with a different cover. e drinks, soups, salads, mains and desserts are all artistically presented. You should also ask for the signature delicacies, designed by the chef. We started with an exotic mocktail Refresco Batido, made of luscious Guava and mango, parsley and skimmed crème. e mix n match of two of my favourite fruits was just an eye-opener for me and I was now expecting more exotics coming my way. Aguadito, a soup of exotic vegetables with glass noodles and a lentil soup followed. e lentils in soup form, i.e. what we call a simple Daal in our homes was given a new dimension here by the chef. For salads, we had Quinoa Garden flower salad, and I must accept the fact that I have never found nutty Quinoa to be so tasty before. Croquetas de Hongos y Queso, cheese and potato croquettes rolled in panko crumbs and fried to crispness followed and we loved that too. From the wide variety of sushi variety from the menu, we the Tempura Roll made of Asparagus with truffled cream cheese and ponzu sauce and it changed my likings for asparagus. Crystal Dumplings, filled with exotic vegetables followed, but I guess I should have given that a miss. It seems that these dishes weren't enough, and what followed before the mains was something I have never done in Delhi. A palate cleanser in the form of a tasty ice slush flavoured with exotic spices and strawberry. We enjoyed savouring Tofu with Truffle along with Japanese sticky rice, shitake mushrooms and an exotic Vegetable platter. Moving to the desserts, we ordered the two choicest desserts offered by the chef, Cinnamon Tiramisu and an interesting dessert, Parched. Parched was amazing, it had delicate cinnamon flavoured tuile and Belgian dark chocolate. It basically was chocolate ice cream with chocolate noodles and hazelnuts. We finished up our meals with another drink, Citrus Dream, an amazingly tasting bright citrusy drink and le aer promising our host for a revisit soon.
