t was this time last year that the very first issue of Like magazine hit the streets of Cork… and what a year it’s been. To sit down with Maria each month and brainstorm what we think the women of Cork will be interested in, or should know about; the fashion you’ll be weak for, the food you’ll want to try; the women who’ll inspire you and the homes that will excite, it’s truly been a pleasure. Watching each issue take shape, working with Cork’s most talented creatives – the photographers and hair stylists and make up artists who’ve helped make our vision a reality; the fabulous models who, bar none, have been a delight to meet and work with and get to know; Cork’s business community and our amazing advertisers, from retailers to hotels to restauranteurs, who have embraced and supported this crazy idea of a free magazine just for Cork – the whole process has felt like such an adventure, and we couldn’t let our first birthday pass without thanking everyone who has made this year possible. I’m a TV producer and presenter, currently presenting RTÉ’s science show 10 Things to Know About, having previously produced series like From Here to Maternity about Cork University Maternity Hospital and the IFTA nominated documentary A Parting Gift about body donation and Trinity College Dublin’s anatomy department. 2. Why do you do it? I like telling stories about interesting topics and people. Working in television allows you to get an insight into a world you initially know nothing about. It never gets boring and it is a privilege to be allowed into people’s lives and most private moments.

6. If you could go anywhere in the world, where would you go? I’d love to visit Antarctica. I’d find it fascinating to be in such an inaccessible, inhospitable but stunningly beautiful place. Unfortunately I’m unlikely to go anytime soon unless someone else is paying!

7. Who or what always makes you laugh? My husband, Darragh makes me laugh every day. 8. What’s your happiest memory? Thankfully, I’ve lots of happy memories, which are hard to compare against each other. One of my earliest happy memories is eating a banana sitting on my bike seat whilst my mother cycled me to school. Most of my happy memories involve food of some kind! 9. What’s your favourite film? Given that it’s the film I’ve probably seen the most — The Sound of Music.

3. Where do you call home? I’ve lived in Dublin on and off since 1997 but Cork is officially home again.

10. What’s the last book you read? The Bone Clocks by David Mitchell. It was mad but compelling.

4. Where are you right now? Sitting at my kitchen table surrounded by the mess of feeding a one–year–old. Glamorous, I know!

11. What’s the most embarrassing thing you’ve ever owned? A shiny purple Nike tracksuit, circa 1993.

5. If you could have a drink with anyone, who would it be? I’ve just watched a clip of singer Adele pranking a load of Adele impersonators and I’d say she’d be good fun to have a drink with.

12. What’s been your proudest moment? Breastfeeding my son for more than a year. 13. What would you save if your house was on fire? Apart from the humans, a stack of

travel diaries I wrote on various backpacking trips over the years. 14. Did you cry on your first day of school? Nope. I was delighted to be there. 15. Did you cry on your last day of school? I cried on the last day of primary school, but at the end of secondary school I was ready for the next adventure. 16. What was the last thing that made you cry? Being the proud owner of a 12–month– old, I cry almost daily! Mainly due to lack of sleep and baby illogic. 17. What’s your favourite thing about Cork? The English Market. Full of lovely people and delicious things to eat. 18. Dinner or dessert? Dessert 19. Tea or coffee? Tea at home and coffee when someone knows how to make a proper cup. 20. Halloween or Christmas? To market, to market… A welcome addition to the Christmas season has been the advent of Christmas markets, a tradition borrowed from our European neighbours that makes for festive fun for all the family. A reprieve from the hustle and bustle, as well as lifting your spirits, Christmas markets offer the chance to sample something different, from adding local crafts to your gift haul, to getting local foods on your Christmas menu. This year, The Pavilion Garden Centre in Myrtle Hill will host a Christmas market over two weekends – November 28th and 29th and December 5th and 6th – and as if basking in the festive cheer wasn’t enough, the event will also

raise funds for Cork-based charity Irish Guide Dogs for the Blind. “This is our third year supporting Irish Guide Dogs for the Blind through our Christmas Market and we are delighted to support this very good cause”, said Charlie O’Leary, owner of The Pavilion Garden Centre. Illuminated with Christmas lights and enlivened with music, the market will feature up to 40 local craft and artisan food producers, a farmyard animal crib, local school choirs, children’s entertainment, and, of course, the opportunity to visit with the man himself, Santa, with a professional photographer on hand to capture the magic moment! is the season for engagements, as Christmas, with all its magic and sparkle, provides the perfect backdrop for a romantic proposal. As such unique bonds deserve unique rings, more and more loved– up couples are choosing to create a bespoke engagement piece to mark their commitment, and in Cork, Michael Wall is the definitive name associated with gems. Specialising in bespoke jewellery, the diamond and gem specialist has just opened a stunning shop in the beautiful Winthrop Arcade where he offers a truly tailored approach. From the metal, to the stones, to the cut, to the setting; Michael Wall is intent on turning creativity into reality. “There’s no limit,” enthuses Michael. “If you can visualise something, then it’s possible.” Choosing bespoke, whether for an engagement ring, wedding band, or simply an exquisite piece, is an extremely personalised service. It offers a different avenue than simply picking a standard piece from a jewellery store, as with bespoke, the choices are endless. Over a coffee in his city centre store, clients go through designs with Michael himself, made to reflect their own personality, individuality and style. Settings like bezel, tension or channel; gems such as an intense violet blue tanzanite or an extravagant fancy canary yellow diamond; shapes from oval to radiant; and a complementary metal, are all decided on. The piece is also tailored and measured exactly for the client, to ensure a perfect fit, whether it’s a pair of earrings, a necklace or a ring. A 3D image of the bespoke item is then created using CAD software, and if required, a pre– production piece in silver. As Michael buys and supplies gems direct, it allows for scope when designing a piece. Looking after the

client, rather than striving for a sale, he offers his years of expertise on the best choice of gem. Skilled, passionate and local craftspeople are then commissioned to create the pieces by hand, to ensure excellence. Along with imagining pieces from scratch, old jewellery can also be remodelled and turned into entirely new pieces using the original gems and metal. “It’s great to see young couples getting engaged and to have both parties involved in the process,” says Michael. “I also love when it’s a pair of wedding bands being created, or in some instances, two engagement rings, as you can have matching gems and metals but different designs. Both will be completely unique but the materials come from the same origins.” Such bespoke bands are a perfect option for same–sex couples now planning to tie the knot under Ireland’s new marriage equality legislation. Along with bespoke designs, Michael is also carrying a number of stunning handmade pieces, priced between €200 and €500, in his store for Christmas — the ideal gift for someone who wants something a bit different. “Some are one–off pieces, some are surreal and out there with prehistoric type coral and exciting looking gems,” explains Michael. “Some are silver, some are rose gold plated, but all are cost effective.” A limited number of beautifully restored vintage watches can also be snapped up, while gift cards for any value are available, which can be put against a bespoke piece, or a watch repair and service. “My job is about looking after the individual, “ says Michael. “Without sounding clichéd, I’m putting the service back into personal service.”

The WRITE STUFF WITH 12 BOOKS PUBLISHED, CECELIA AHERN HAS ESTABLISHED HERSELF IN THE IRISH LITERARY HIERARCHY. SHE TALKS TO MARIA TRACEY ABOUT HER INSPIRATION, WHY SHE’S TACKLING YA LITERATURE, AND HER FRUSTRATION WITH THE COMPARISONS BETWEEN HER FATHER AND HER FICTIONAL CHARACTERS.

“W

e’re very judgemental,” explains author Cecelia Ahern, and the hypercritical society we live in is the inspiration behind her eagerly anticipated debut young adult series, Flawed and Perfect. No stranger herself to being on the receiving end of judgement, in 2002, the publishing sensation was written off as a one–hit wonder, as critics put the success of her first book, PS I Love You down to her connections. However, more than a decade on and with 12 books under her belt, Cecelia has established herself as one of Ireland’s top novelists. Her latest, the thought–provoking The Marble Collector, was released last month, while her YA debut, Flawed will be published by HarperCollins in March 2016, followed by Perfect in 2017. Warner Bros have already optioned the movie rights for the series, to be produced by Wendy Finerman — whose credits include Forrest Gump and The Devil Wears Prada. Set in a society where “Flawed” people are branded with an “F” and forced to live as second-class citizens, the novel revolves around a young girl, Celestine North, who makes a stand and subsequently faces life–changing repercussions. “I don’t call it dystopia,” explains Cecelia. “It’s set in a modern but fictitious world where people who

make mistakes are branded “Flawed” but I think that’s what we do to each other anyway. I just introduced a country where it’s actually law. “I started thinking about what our society is like and how we really don’t give people a chance if they make a mistake. We’re always picking out flaws as opposed to just being positive.” Cecelia adds wryly that her research was simply to “go online and look at the news every day”. “What are we saying about each other now? What person has been turned into a ‘monster’ for a simple stupid mistake we’ve all quietly made in our own lives?,” states Cecelia. “And it’s mostly women that get the finger pointed at them. Even the way we’re talked about has an element of ‘judgement’. Articles will say ‘look at the woman showing off her post baby body’. She’s not ‘showing off’… she’s walking down the street in a dress! It’s the things we say about each other on small level and also on a larger level. How we put people up and destroy them over something very simple.” Picking up the pen specifically for young adults is unchartered territory for Cecelia, who so far has focused on an adult audience, but the reason for the move is simply the desire to challenge herself. Despite the launch date being months away, Flawed has already

garnered widespread attention, which will only be buoyed by the release of the film. Cecelia quips she “absolutely has someone in mind” for the lead role, but refuses to be drawn. “I think the clever thing is to not say it,” she laughs. Film talk aside, Cecelia outlines that with this novel she wanted to keep things fresh. “It’s a totally different readership, a different way of doing publicity. In a way I’m starting from scratch next year,” she admits. Indeed, since she first started writing, this is one 34–year–old who has continually challenged herself. At the tender age of 21 she wrote her first novel, the bestseller PS, I Love You, which was adapted into a major motion picture starring Hilary Swank. Cecelia’s subsequent novels such as Where Rainbows End — which inspired the movie Love, Rosie — If You Could See Me Now, and The Book of Tomorrow were also bestsellers, and she co-created the Emmy award– winning comedy series, Samantha Who? starring Christina Applegate. While all her plots touch on different themes, be it love, death, unexpected pregnancy, redemption, suicide or

friendship, one thing that remains consistent throughout all of Cecelia’s writing is the drive to write for herself. “Regardless of the knowledge and experience I’ve gained over the past 10 years, regardless of anything else I know… I still have to write in the exact same way I wrote PS, I Love You, which is just for myself,” she smiles. Certainly her latest offering, The Marble Collector — about a daughter who, on stumbling upon a mysterious collection of her father’s possessions, unlocks the secrets of the man she thought she knew — is a reflection of just that. “The title came from that simple expression, ‘I’ve lost my marbles’… which is something I say a lot,” she laughs. “I wanted to write a short story called The Woman Who Lost Her Marbles so I started looking into the world of marbles. From there it grew into this book, as the marbles became almost another character. They’re such beautiful things to look at… they’ve this whole little universe trapped inside.” While Cecelia admits she does draw on her own life experience for her novels, there’s a certain degree

of frustration that her own father, former Taoiseach Bertie Ahern is being linked to the book’s paternal character, Fergus. “I’m either going to lose my temper with someone, or say ‘I’m not answering that’, or continue to be polite,” she says

with a smile. “I’ve had other father/ daughter stories — The Year I Met You has a very complicated father/ daughter relationship — but nobody wanted to compare that one, because they want to compare it to a man who has secrets. It’s frustrating that out of all of the novels they’re going to choose this one, and it says a lot about what they’re trying to project. “While I have a father, and I am a daughter, and everything I write is from experience and observation… she’s not me, he’s not my dad.” For Cecelia, now being a parent herself to five–year–old Robin and three–year–old Sonny, is both “exciting and exhausting”. “It’s getting easier as they get older,” she enthuses. “They’re getting sleep now.” After having the children, she decided to move to an office outside of the home to continue her writing. “It’s nice to be able separate life from work, and it’s nice to leave the work behind when you come home,” she says. “I’m writing about five or six months of the year — I’m lucky because I have what a lot of parents try to achieve, which is flexibility. So

when I’m working on a novel, I’m doing it four days a week, — it is quite intense. But if I do a good one or two days I know I can relax a little on other days. I can still do what I want to do with the children.” In terms of the writing process, Cecelia explains that, just as it happened with The Marble Collector, quite often a phrase or expression can spark her imagination. “I might want to understand the root of a phrase, or I might like the sound of word,” she smiles. “I’ll go to the dictionary to see what it means and it’ll inspire an idea or a scene or the kind of person who would use it. “One of the most bizarre ways I came up with an idea was when I had the MTV awards on in the background one evening and I heard an actor say ‘here’s the exclusive trailer of my new movie, 100 Names’. Well, I thought he had said 100 Names! I loved that title however, when I paid attention, I realised it was actually The Hunger Games. I completely misheard! So that inspired my novel last year —One Hundred Names.” However, despite her joviality, and

the seemingly effortless end results, Cecelia admits writing can be a hard process at times. “I heard authors say before that ‘you write through’. However, if you’ve a block how do you write at all? “But you do,” she continues. “You keep writing — writing bits you don’t necessarily need, but you’ll then get to what you do need,” she explains. “It’s like taking a run before you jump. I always find the first 20,000 words the easiest because all your ideas are fresh but then, all of a sudden, you’re like ‘oh, I’ve written everything in my head, what’s next?’. That’s the scary moment. I’ve learned from experience though, that whenever I feel like I can’t get through it, I can.” It’s this thought process that showcases what an experienced author this young Dublin woman has become. Smart, funny, talented, and extremely nice to boot, Cecelia Ahern, with her pretty extraordinary résumé, is a force to be reckoned with. Great Expectations Do children expect too much at Christmas? Is the spirit of the season being lost? MARIA TRACEY looks at how to keep Santa list expectations in check.

rom the constant barrage of bright and ever so alluring toy adverts on TV, to the glossy catalogues dropping through the letter box... Christmas is a time fraught with gift expectations. As children pen their letters to Santa, many of the handwritten notes have left parents perplexed — are their children heirs to millions, or do they truly have no concept of budget? Every year, it’s the eternal materialism and commercialism battle, as parents face lengthy lists that can often be completely unattainable. Leading child and adolescent psychotherapist and father–of–three Colman Noctor outlines that Christmas, for many people, can be a stressful time. “This ‘stress’ can be emotional, physical and/ or financial,” he explains. “Managing the Christmas demands

can be a costly business and as the country journeys out of a period of austerity there’s a real fear that the trend will be another upward curve in terms of spending.” Colman, who’s the author behind Cop On — which looks at why children need some ‘cop on’ to survive and thrive in today’s world — states that managing expectations is a feature of contemporary parenting. “From keeping up with the ‘birthday party circuit’ to purchasing a full aisle worth of toys from Smyths at Christmas, parents are under ferocious pressure to spend more than they have. So how can we help people to manage that?” he asks. Colman states in terms of managing a child’s gift expectations, it’s important that a “culture or a value system” goes beyond just the holiday season. Children, he explains, need

to value the things they are given for what they are, and this must be more about the “meaningful value” of the item as opposed to its monetary cost. “Meaning and value ideally are very subjective concepts,” he says. “As the saying goes ‘one man’s treasure is another man’s garbage’. Children need to be thought the principles of ‘value’ and ‘meaning’ as part of a developmental process and not just a Christmas issue. “A child should delight in Santa bringing them something that they know they will like as opposed to him bringing a collection of things that they do not relate to.” Colman adds he’s aware that “this is all a bit idealistic”, but perhaps we do need to remind ourselves that we exist in a culture where we have lost sight of meaning. “As a society we have become more expectant and the more choice we have, the more diluted the quality of those options become and also the more choosy we become,” he says. “I make the comparison to the TV in the ‘80s. There were two channels to choose from and so we watched almost everything with minimal expectation. Now we have the choice of 1000 channels and continually complain that there is nothing good on. We need to teach children about managing expectation by first managing our own.” He states there’s a dilemma of introducing the issues of financial stress in the family to children. “You want children to be aware of the

reason why they need to curtail their expectations but you don’t want to burden them with adult worries,” says Colman. “The balance is to suggest that things need to be within reason but reassuring the child that any financial issues are under control and nothing they need to worry about. An older child may be more able to hear about these concerns and manage them better than a younger child or a child of an anxious temperament.” He adds: “If I feel I must be the ultimate parent who can provide €1000 worth of gifts at Christmas and that this will be a measure of my parenting skill then I will go through parenthood feeling I’m falling short. Whereas if I know my child and know what they would like and buy them a gift that has meaning, and they acknowledge this effort then surely that is more representative of my parenting abilities.” Colman adds that children develop expectation not only from the behaviour of their peers but also from the culture of their family’s value system. “Sure they may look at their friends’ gifts and marvel at the size or quantity of what they got, but what you want is for them to then reflect on their own gift and see the unique value in that too and the value derives from it being something they wanted and were delighted to get because it meant something,” he concludes. “It is a product of a loving relationship and not because of how much it cost.” Geraldine Kelly, director of children and family services at One Family — a national organisation for oneparent families — outlines it can be hard to manage a child’s expectations at this time of year. “They hear so much about Santa as he is in the shops from September so there’s a lot of time for children to think and plan the letter,” she says. “Of course, children also hear others talk about what they are asking for and if you take a young child to the toy store they are heartbroken as they see so many exciting toys that they want. Try to avoid taking them into toy stores unless it is a planned trip in which they have some pocket money to buy a small toy on the day.” Geraldine adds the toy catalogues also contribute to the pressure, as “every page the child turns they see more wonderful toys they’d love”. “It can be useful to have one if you sit with them and go through the pages. However try to not leave it lying around. Explore with them what’s great about each game and help them figure out what they really would love,” she says. Geraldine states it

is also important to talk to children about appreciation, and explain that “Santa’s elves are working really hard to ensure all the children in the world have gifts on Christmas” — for some children that could be clothes and tooth brushes. “Encourage a little empathy,” she highlights. “Children can really feel empathy for the elves as well as all the children getting what they need. What would you be teaching your child? Christmas is a time for one-offs: pudding, Brussels sprouts, and eggnog! Eggnog is one American tradition we’ve been slow to adopt, but it’s a wonderful sharing cocktail and it’s easy to make - all that’s required is a good, strong arm for all that whipping! Traditionally made with Bourbon, for his recipe, Andy Ferreira of Raise the Bar prefers to use good Irish Whiskey.

Another quintessentially festive flavour Andy loves is gingerbread. “It makes a mean syrup that, combined with some Baileys and Kahlua, is about as naughty as it gets! Happy Christmas everyone and remember, be nice to the bartenders!”

INGREDIENTS: • 6 eggs, separated • ¾ cup of sugar • 1 litre of full fat milk • ½ litre of cream • 1 cup of good Irish whiskey • ½ cup of spiced rum

PREPARATION: In a large bowl, beat together egg yolks with half a cup of sugar until they turn light in colour. Stir in the milk, cream, whiskey and rum, gently whisking the whole time. In a separate bowl, beat the egg whites with the remaining quarter cup of sugar until they form soft peaks. Take half the bowl of egg whites and add them to the punch. Keep the rest in the fridge. Grate lots of nutmeg on top and serve up in small glasses.

INGREDIENTS: For the gingerbread syrup: • 2 cups of water • 1.5 cups of granulated sugar • 2.5 teaspoons of fresh ginger • ½ teaspoon of cinnamon • ½ teaspoon of vanilla extract

PREPARATION: Combine the ingredients in a saucepan and bring to the boil. Reduce the heat and simmer for 15 minutes. Cover the saucepan and leave to cool. For two Gingerbread Martinis: Smash up a gingersnap cookie and rim the glass with the broken biscuit. In a cocktail shaker or jam jar add one egg cup each of Baileys, Kahlua, cream and half an egg cup of gingerbread syrup. Add lots of ice and shake it all up and serve.

PORK AND APRICOT TERRINE

Mixing influences from Italy and France, Kay Harte of the Farmgate Café in the English Market recommends setting aside few hours to savour the slow, but simple process of making this impressive terrine. Great as a Christmas starter, it keeps for three to four days, so is also perfect for unexpected visitors, served with sourdough toast and cranberry sauce. INGREDIENTS: • 700g minced pork • 150g dried apricots • 200g diced white onions • 80ml port • 200ml red wine • 20g finely chopped fresh thyme • 350g of sliced streaky bacon • 100ml fresh orange juice • 100ml white wine • Salt and freshly ground black pepper • Optional: 25g pistachios

A 2lb loaf tin gives 10-12 slices. Mature for 24-48 hours before eating.

METHOD: 1. Mix the pork mince and port together and leave to marinate for 24 hours. 2. Heat the oven to 160°C / Gas 3. Oil the base and sides of your loaf tin,

then line with cling-film, allowing enough to cover the top of the terrine. Likewise, arrange the bacon so it covers the base and the sides of the tin, with an overlaps for the top, so the terrine is wrapped in bacon when served. 3. On a low heat, cook the onions with the red wine and thyme for 10 –15 mins, until the liquid has cooked off, then allow to cool. Gently warm the orange juice and white wine in a pot, add the apricots and leave to macerate. 4. Mix the cooled onions through the pork and half fill the terrine tin with the pork mixture. Arrange a layer of juicy apricots in the middle, and add the remaining pork mixture. Fold the overlapping bacon over the top laying extra strips across the top to fill any gaps. 5. Wrap the cling-film across the top and cover the tin tightly with tinfoil. 6. Stand the tin into a roasting dish, pour in boiling water to come about halfway up the sides and bake for approximately one hour and 20 minutes at 160°C. At this point you can remove the foil and bake for a further 10 – 15 minutes to brown the top. 7. Cool completely, then wrap in parchment paper and chill. RECIPE Miso Marinated Wagyu Rump, Black Garlic Cream, Organic Spring Onion And Carrot, And Grilled White Asparagus INGREDIENTS:

This recipe from Bryan McCarthy of Greenes Restaurant showcases one of his favourite ingredients - Wagyu rump from Michael Twomey’s Butchers in Macroom, with a natural fat content and marbling that gives the meat an unctuous flavour unique to this breed. Organic vegetables also feature, alongside miso and mirin, available from Asian food stores. SERVES TWO.

• 2 X 200g Wagyu Rump steaks • 1 tsp white miso paste • 2 tsp soya sauce • 3 tsp mirin • 1 shallot • 100ml white wine • 250ml chicken stock • 100ml cream • 2 white asparagus spears, peeled & trimmed • 2 baby carrots, cleaned and peeled • 2 spring onions, cleaned • 50g fresh peas • Rapeseed oil for frying • 50g butter • Salt & pepper • 150ml cider vinegar • 1 tsp sugar • 150ml filtered water • 1 bulb of black garlic, peeled • 1 sprig of thyme

METHOD: 1. Three days beforehand mix the miso, soya and mirin together, and marinade the beef in this mix for 72 hours. 2. Also three days beforehand, mix the vinegar, sugar and filtered water. Thinly slice the carrots on a mandolin or with a vegetable peeler, and pickle in the

vinegar mix in a sealed jar until needed. 3. On the day, pre-heat the oven to 180 degrees Celsius. Cook the asparagus, peas and spring onion for one minute in the simmering chicken stock then refresh in ice cold water. 4. Remove the beef from the Marinade and sear for four minutes on each side in a smoking hot griddle pan with a little oil. Set aside to rest in a warm place for 7 minutes. 5. Deglaze the pan with the white wine and add to the chicken stock. Sauté the shallots and thyme in a little butter, then add the chicken stock and reduce by half. Add the cream and black garlic and reduce by one third, or until a nice sauce consistency. Blend and season to taste with salt & pepper. 6. Sear the asparagus & spring onion on the griddle pan till lined & season to taste with salt & pepper. 7. Reheat the peas in the black garlic sauce.

TO SERVE: Place the Wagyu rump in the oven for 1 minute. Place two spoons of black garlic sauce and peas on each plate. Slice each rump in half and place a piece on each pool of sauce. Carve the asparagus at an angle and place a piece on each piece of beef. Arrange the spring onion and some pickled carrot around the plate.
