EDITOR’S LETTER EDITOR: Carolyn Moore

WE ARE ONE I

t was this time last year that the very first issue of Like magazine hit the streets of Cork… and what a year it’s been. To sit down with Maria each month and brainstorm what we think the women of Cork will be interested in, or should know about; the fashion you’ll be weak for, the food you’ll want to try; the women who’ll inspire you and the homes that will excite, it’s truly been a pleasure. Watching each issue take shape, working with Cork’s most talented creatives – the photographers and hair stylists and make up artists who’ve helped make our vision a reality; the fabulous models who, bar none, have been a delight to meet and work with and get to know; Cork’s business community and our amazing advertisers, from retailers to hotels to restauranteurs, who have embraced and supported this crazy idea of a free magazine just for Cork – the whole process has felt like such an adventure, and we couldn’t let our first birthday pass without thanking everyone who has made this year possible. And what better way to mark this milestone than with our biggest issue yet! Along with all our regular style and beauty news, you can feast your eyes on not one, but two fabulous festive fashion shoots! You can whet your appetite for Christmas with our food and drink pages! You can deck your halls with our home style Christmas special, and most importantly of all you, can start your Christmas lists with over 20 pages of great gift ideas. We’ve done the footwork so you don’t have to, so whether you want to relax with a glass of wine and read our exclusive interview with Cecelia Ahern (page 36); get some tips on keeping the kids’ Santa lists in check (page 77); or find out what some of Like’s favourite ladies have on their Christmas wish lists (page 22), there’s plenty here to fill up all that time we’ve saved you. So happy Christmas from all of us here at Like. May your homes be filled with festive cheer, may your gifts be everything you wished for; may your turkey be browned to perfection, and may your guests be brave enough to try your eggnog!

Cheers!

2Q 1. What do you do? I’m a TV producer and presenter, currently presenting RTÉ’s science show 10 Things to Know About, having previously produced series like From Here to Maternity about Cork University Maternity Hospital and the IFTA nominated documentary A Parting Gift about body donation and Trinity College Dublin’s anatomy department. 2. Why do you do it? I like telling stories about interesting topics and people. Working in television allows you to get an insight into a world you initially know nothing about. It never gets boring and it is a privilege to be allowed into people’s lives and most private moments.

uestions with… Kathriona Devereux

6. If you could go anywhere in the world, where would you go? I’d love to visit Antarctica. I’d find it fascinating to be in such an inaccessible, inhospitable but stunningly beautiful place. Unfortunately I’m unlikely to go anytime soon unless someone else is paying!

7. Who or what always makes you laugh? My husband, Darragh makes me laugh every day. 8. What’s your happiest memory? Thankfully, I’ve lots of happy memories, which are hard to compare against each other. One of my earliest happy memories is eating a banana sitting on my bike seat whilst my mother cycled me to school. Most of my happy memories involve food of some kind! 9. What’s your favourite film? Given that it’s the film I’ve probably seen the most — The Sound of Music.

3. Where do you call home? I’ve lived in Dublin on and off since 1997 but Cork is officially home again.

10. What’s the last book you read? The Bone Clocks by David Mitchell. It was mad but compelling.

4. Where are you right now? Sitting at my kitchen table surrounded by the mess of feeding a one–year–old. Glamorous, I know!

11. What’s the most embarrassing thing you’ve ever owned? A shiny purple Nike tracksuit, circa 1993.

5. If you could have a drink with anyone, who would it be? I’ve just watched a clip of singer Adele pranking a load of Adele impersonators and I’d say she’d be good fun to have a drink with.

12. What’s been your proudest moment? Breastfeeding my son for more than a year. 13. What would you save if your house was on fire? Apart from the humans, a stack of

travel diaries I wrote on various backpacking trips over the years. 14. Did you cry on your first day of school? Nope. I was delighted to be there. 15. Did you cry on your last day of school? I cried on the last day of primary school, but at the end of secondary school I was ready for the next adventure. 16. What was the last thing that made you cry? Being the proud owner of a 12–month– old, I cry almost daily! Mainly due to lack of sleep and baby illogic. 17. What’s your favourite thing about Cork? The English Market. Full of lovely people and delicious things to eat. 18. Dinner or dessert? Dessert 19. Tea or coffee? Tea at home and coffee when someone knows how to make a proper cup. 20. Halloween or Christmas? Christmas! Cork presenter Kathriona Devereux can currently be seen in 10 Things to Know About on RTÉ One, Mondays at 8.30pm. To market, to market… A welcome addition to the Christmas season has been the advent of Christmas markets, a tradition borrowed from our European neighbours that makes for festive fun for all the family. A reprieve from the hustle and bustle, as well as lifting your spirits, Christmas markets offer the chance to sample something different, from adding local crafts to your gift haul, to getting local foods on your Christmas menu. This year, The Pavilion Garden Centre in Myrtle Hill will host a Christmas market over two weekends – November 28th and 29th and December 5th and 6th – and as if basking in the festive cheer wasn’t enough, the event will also

8

raise funds for Cork-based charity Irish Guide Dogs for the Blind. “This is our third year supporting Irish Guide Dogs for the Blind through our Christmas Market and we are delighted to support this very good cause”, said Charlie O’Leary, owner of The Pavilion Garden Centre. Illuminated with Christmas lights and enlivened with music, the market will feature up to 40 local craft and artisan food producers, a farmyard animal crib, local school choirs, children’s entertainment, and, of course, the opportunity to visit with the man himself, Santa, with a professional photographer on hand to capture the magic moment! STYLE

Boutique Bliss Oh Lordy! Our wallets are about to take a hit with the arrival on Oliver Plunkett Street of the uber-chic Olori boutique. While everyone loves the fleeting thrill of a high street bargain, there’s no denying it can come at the cost of our sanity as we struggle with ever-changing trends, crowds, and changing room queues, and it’s in providing respite for jaded fashion fans that boutiques like Olori really come into their own. There’s a lot to be said for the quieter pleasure of browsing a carefully curated selection of high quality, beautifully tailored, timeless wardrobe essentials, each with the

potential of becoming a true hero piece, and this is exactly what you’ll find at Olori. Sisters Susan Jane Corbett and Lisa Grainger stock a considered edit of pieces from brands like the cult Won Hundred and the Kate Middleton approved Goat, along with Irish knitwear from Janet Byrne and stunning accessories from Rada.

Earrings from a selection by Rada, from €65.

Ava dress by Goat, €690, Olori boutique

SHE’S ELECTRIC We’re just weeks into winter and already we’ve been battered by two storms, so if there’s one thing worth investing in this month it’s a statement scarf, and no one knows how to make a statement better than Irish knitwear brand Electronic Sheep. Their witty graphics and eye-popping colour combinations will brighten up even the most sensible black winter coat and provide a ray of sunshine on any grey day.

LESS IS MORE Fashion fans are beating a path to the newly opened Brands For Less in Merchants Quay Shopping Centre, as the slick new store offers… well, brands for less! Featuring fabulous fashion finds from brands like Michael Kors, DKNY, Guess and Calvin Klein, everything for sale is either a minorly flawed factory second or a gently pre-loved designer piece, and with up to 50% off recommended retail prices, there’s lots to love about this concept.

Toy Convoy blanket scarf, €185, electronicsheep.com.

Michael Kors handbag from a selection at Brands for Less, prices vary, see brandsforless.ie for more.

GREAT SCOTT Still seeking your perfect winter coat? We love this aptly named ‘Kendal Jenner’ coat from Pamela Scott, after the Kardashian star who is leagues ahead of her sisters in the style game. In the season’s hottest colour, sage green, and with autumn winter’s essential wrap detail, the subtle military styling and expert tailoring on this coat ensure it doesn’t straddle that questionable line between dressing gown and coat, but the comfortable cut makes it perfect for dressing up or down. €179.95 from Pamela Scott stores and pamelascott.com.

KEEP WALKING It’s been quite a year for WALK Shoes, as the family owned Paul Street shoe shop have bagged a variety of awards, from an international prize for their innovative window displays to a local Junior Chamber Cork nod for their environmentally friendly practices, including the use of nonchromium leathers in their stock, and their commitment to recycling and sustainable suppliers. Making eco-shopping a breeze, they’re also proving you don’t have to sacrifice style to be environmentally sound. We love their UGG Australia Grandle ankle boot, now reduced to €159 on walkshoes.ie.

BEAUTY

GOLDEN EYE Chanel is getting festive with the stunning Signe Particulier palette featuring a warm saffron gold to lighten up make–up, a velvety parma violet for a touch of softness and a slightly rosy satiny beige delivering light. Perfect to rock the latest bonze and gold–toned smokey eye look. €52, Brown Thomas.

START STROBING Just after we’ve mastered contouring, along comes strobing… but boy, do we love it! It’s all about highlighting areas of the face where the light naturally hits, creating a shimmering complexion. One of the best highlighters around is Giorgio Armani’s Fluid Sheer (€45, Brown Thomas), which dresses skin in an illuminating veil of radiance.

BORN TO SHINE Seeking to shimmer during the festive season? Here’s how to add a touch of sparkle to your party look.

SPRAY AWAY Sometimes we all need a touch of sparkle in our lives. The limited edition Sparkler from The Body Shop (€23.50) releases a fine shimmery powder to highlight the face, body and hair. Perfect for the party season, we’re in love with it all — the fabulous bottle, the iridescent sparkle and the gold shimmer!

PERFECT POWDER Time to get naked… figuratively anyway! Urban Decay’s Naked Illuminated Shimmering Powder for Face and Body (€29.50, Debenhams) is a smooth, silky powder with a just–perfect microfine shimmer that gives skin a luminous, radiant look. To quote the queen of the beauty blogging world, sosueme.ie’s Suzanne Jackson, it’s “utterly amazing”!

NAIL IT When done right, sparkly polish can exude glamour and sophistication. Try a metallic hue like the limited edition Lancôme Vernis In Love Golden Top Coat, which coats the nail with an enchanting flecks of gold. It’s perfect to layer on top of any classic polish. €19.50 at Lancôme counters.

LUSH LIPPY We all want a highly– reflective look to our lipstick, and Bobbi Brown has answered our prayers. The Shimmer Finish, pictured in Raspberry Shimmer, delivers luminous colour so lips look instantly lush, and as the lipsticks are packed with luxurious butters and oils, they are also nourished and conditioned. It’s win win. €26.50, Brown Thomas.

GLITTER BUG To add dimension to a look, try Inglot’s Body Sparkles. We love the glittery power of No. 64, with its rustic, sultry hue that can be used on the face, eyes and body. Pair it with Duraline (€12) to intensify the colour of any powder. €15, Inglot, Oliver Plunkett Street and Mahon Point Shopping Centre.

BEAUTY

EYE LOVE We’re officially in love! Urban Decay has done it again with its new limited-edition eyeshadow palette, this time in collaboration with none other than the utterly fabulous Gwen Stefani. It’s loaded with 15 must–have shades that are Gwen’s go-to kit for achieving her most iconic looks — 12 are brand new, and three are from the UD shadow

collection — with an insane range of neutrals and a few jewel tones to mix things up. The Hollaback Girl was also instrumental in the design of the case, a striking gold and white box with black polka dots that makes this palette a dressing table must have. It’s available now from Debenhams stores, priced €46.

BEST OF BROWS As we wrap up for winter, strong brows are once again in focus, and if you’re looking to channel Cara Delevingne rather than Dodgeball’s Fran Stalinovskovich davidovitchsky, help is at hand. Catrice Cosmetics has eyebrow essentials at the ready, like their Longlasting Brow Definer (€3.69, Penneys) which thickens and evens out irregularities in the brow structure; while Billion Dollar Brows’ Brow Gel (€24, Boots) locks in the look, giving brows a long–lasting, radiant glow while keeping them perfectly in place.

DETOX THE TRESSES None of us want to hear the word ‘detox’ in December. While not exactly the right time for our bodies — another mince pie anyone? — it couldn’t be a better time for our hair, and for that, we love Kevin Murphy. Whether you damaged your hair with excessive chlorine during the summer, or protected it with high– factor sun–creams, try the detoxifying shampoo Maxi Wash (€22) and the Angel Masque (€32), which has quinoa proteins that moisturise, repair and add shine. Pick them up at Alan Keville for Hair, Academy St, or online at shampoo.ie.

NOW CONCENTRATE As the saying goes “prevention is better than cure”, so we’re always looking for the latest product promising to fight the signs of ageing. Cue Shiseido Ultimune Power Infusing Eye Concentrate, which activates the skin’s immunity for visible results around the eyes. The newly–launched product is a follow–up to last year’s cult buy Skin Immunity Ultimune, and helps the eye area to resist damaging external environmental factors. It diminishes fine lines; regenerates dermal fibres; and strengthens the eye area. We’re sold. €65, Debenhams.

20

FESTIVE FINGERS After launching a 25–strong gel nail varnish collection — requiring no UV lamp — earlier this year, followed up by a gorgeous autumn/winter collection, one of our favourite bloggers, Suzanne Jackson is back again. If you fancy sparkling during the party season — and frankly, who doesn’t — then try the glittery new limited edition SOSU By Suzanne Jackson shades. There’s the deep red of Rudolf’s Mistress; the metallic silver of The Glass Slipper; and the bang–on–trend green of Poison Apple. Pick them up for €7.99 from select pharmacies and Penneys.

DARK DESIRE Winter makeup, this year more than ever, is about deep and dark shades, beautifully reflected in MAC’s latest collection, Dark Desires. It’s all about sinfully delicious dark lips, sultry stares, and noir–hued nails, with names that suitably sum up the Dark Desires tag like Boyfriend Stealer for this stunning blackened plum shade (€20); Strip Me Senseless for a decadent blackened aubergine eye shadow (€21) and Unzipped for a dark green nail lacquer (€10). Out now, being bad never felt so good.

WISH LIST Some of Like’s favourite ladies tell us what’s topping their wish lists this Christmas… “As we get older we realise our Christmas lists get smaller and the things we want more than anything in the world can’t be bought… like to be granted an hour with our loved ones in heaven. But in saying that, everyone has a fantasy wish list. If I could wish for one material item this Christmas it would be the new Range Rover Evoque Convertible. I’ve been gazing at them since they were launched, so, Santa, I’ll have one of those please!

“In previous years I’ve known for months what I’d like for Christmas, but this year things are stacking up differently. This will be our last Christmas to be self-indulgent as our first baby arrives in the New Year. Being pregnant my emphasis has changed and is now solidly on accessories. My two favourites are Alexis Bittar’s lucite crystal drop earrings and Ralph Lauren’s Acadia mini chain cross body bag, but most of all I hope Santa can give me my size 8 figure back after baby comes!

Otherwise I’ll happily take the Christian Louboutin lipstick collection for my kit, so all my Make Up By Lola clients can have the most luxurious lips.”

It’s been phenomenal year for Elizabeth Christina Design, culminating in winning the Kilkenny Shop Style Award 2015. Who could wish for more?”

Tina Hemlock Coyne, award–winning milliner at Elizabeth Christina Design.

“Last year was a tough Christmas as I had family in hospital, so top of my wish list this year is just to have a healthy and happy family gathered for Christmas dinner. I also wouldn’t mind a full night’s sleep! If Santa could work some sleep charming magic on my small boy I would be delighted. I haven’t slept more than three to four hours in a row in over a year thanks to the arrival of my son Rory. It’s amazing how you can adjust to lack of sleep but if I got eight hours of unbroken sleep I would be a new woman for the New Year!” Kathriona Devereux, presenter and producer. Catch Kathriona’s documentary, A Parting Gift on RTÉ One on December 7th and 14th at 11.30pm.

“Top of my wish list this year is a ticket to Electric Picnic with boutique camping! It’s been a couple of years since I made it to the Picnic, and last year’s looked amazing so I don’t want to miss out again. With a baby arriving in March it would be nice to have something to look forward to. I also wish for sunshine all weekend long! As co-director of Lockdown Models I look forward to celebrating 10 years in business in 2016 with my partner Emer O’Mahony. We have lots of fabulous celebrations planned, and two of our big events include Cork Fashion Week and Miss Universe Cork, which go from strength to strength each year.” Vivienne McCarthy, co-director of Lockdown Models. See lockdown.ie for more.

“My wish for Christmas is an uninterrupted 12 hours of sleep — it’s the holy grail. I just don’t get enough of it these days! It’s not expensive and it’s widely available given half the chance! After that I will settle for world peace, a new Vivienne Westwood coat and a 12–pack of Tayto cheese & onion!” Dr. Pixie McKenna appears on RTÉ 1’s You Should Really See A Doctor, Wednesdays at 8.30pm.

“I seem to remember last year requesting some much needed time off, along with some designer make up brushes (which I’m still waiting on....hint hint). But in the busy wedding period that is Christmas, time off from a cancelled booking might very well be due to someone else’s misfortune, so this year I’m asking Santa for a PA to drive me to jobs, clean my kit, handle my admin, prep my food and do some light house work! Failing that, I’ll settle for a Nutibullet and a new tablet. I’m also lusting after the Wedgwood copper dinner service and some scented candles. How obvious is it I’m newly married? If Santa could also eliminate calories and find a cure for hangovers, I’d be forever grateful!” Kate Noonan, make up artist. Kate specialises in bridal and fashion make up, and is chief make up artist on The Today Show with Maura and Daithi. See katenoonanmakeup.com.

If I close my eyes and dream, I picture us on Christmas morning, waking up somewhere warm and beautiful. Santa has brought our gifts, and I was on his good list so I got a hamper of La Prairie, a set of Beats, silk pjs, a Bottega Veneta Handbag, and a new pair of Ray Bans, plus a magic wand I’d wave to get a Victoria’s Secret model’s body, a collection of clothes by Celine, Victoria Beckham, and Simone Rocha, and dinner for two with Colin Firth. In reality I’ll settle for hand-made cards from my kids, pjs from Penneys, a meal with my amazing husband, and the wonderful smell of Christmas tree and cinnamon candles, with a fire lighting, and wine chilled… I’m a lucky girl and I really do have everything I want in life! Lisa Fitzpatrick, stylist and TV personality. Lisa Fitzpatrick’s Fashion Fix returns to Cork in 2016. See fitzpatrickstyle.com for more.

“Even though Christmas is the busiest time of the year, it’s still the season that brings me most joy. I generally spend the full month of December working hard at the Rising Tide, but it’s a fun month, with guests celebrating work parties and welcoming family home from abroad. This year I have the added pressure of doing my law exams — which will be fun!

“Top of my fantasy list would be a self–cleaning house, a magically self–replenishing wardrobe, for Tom Ford to dump Julianne Moore and make me his muse instead, and for my blog Daily Diva Diary to go stratospheric after my new website launches in the new year… But my real Christmas list is a lot simpler. I want my family and friends to be safe, happy and healthy, but THE main thing I want is to see my brother this year. He is based in Cambodia and I haven’t seen him for over six years. So dear Santa… please bring him home (and if you’ve room for a Chanel bag, I’ll take that too!)”

I usually finish work on Christmas Eve at 10pm and take two days off. Even though I love giving and receiving gifts, my Christmas wish is quite simply for a happy and healthy Christmas. I adore spending time with my family and friends and feel blessed to be surrounded by the people that I love.“ Sandra Murphy, proprietor of The Rising Tide Restaurant & Bar, Glounthaune. For booking information see therisingtide.ie.

Top of my Christmas wish list this year is definitely some time out with my family. I travel quite a bit for my work, so any time I have at home with my family is cherished. This year I plan to go to Spain for a week to see my family and do a spot of skiing (which could be interesting).

Now if I’m being really honest, I’d love to get my hands on a light ring for my YouTube tutorials, and I’m also dying to get my hands on Inglot’s new Stardust Pigment collection, I’m obsessed with them and they’re amazing for the Christmas party season. Sarah Cummins, make up artist. Check out her tutorials on YouTube.com, SazCumminsMakeup, or book a masterclass with Sarah at New Minds Beauty Academy. See newmindsacademy.com for details.

“Topping my wish list is a new Mulberry handbag. It’s my one luxury. I understand how busy Santa can be, so I’m more than happy to manage delivery if he can just call out the long number on the front of his credit card?! Failing that, domestic goddess in me would like a Robert Welch Signature block knife set and sharpener. Winning Stylist of the Year at the Hi Style Awards was absolutely amazing this year, so one of the biggest wishes on my list is that next year will be as great as 2015.”

CONSIDERING A BESPOKE JEWELLERY PIECE? DIAMOND SPECIALIST MICHAEL WALL IS THE JEWEL IN CORK’S CROWN.

Michael Wall Bespoke Jewellers 8 Winthrop Arcade (entrance on Oliver Plunkett St or Winthrop St). See michaelwall.ie or phone 086 868 7456.

A Gem in Cork

‘T

is the season for engagements, as Christmas, with all its magic and sparkle, provides the perfect backdrop for a romantic proposal. As such unique bonds deserve unique rings, more and more loved– up couples are choosing to create a bespoke engagement piece to mark their commitment, and in Cork, Michael Wall is the definitive name associated with gems. Specialising in bespoke jewellery, the diamond and gem specialist has just opened a stunning shop in the beautiful Winthrop Arcade where he offers a truly tailored approach. From the metal, to the stones, to the cut, to the setting; Michael Wall is intent on turning creativity into reality. “There’s no limit,” enthuses Michael. “If you can visualise something, then it’s possible.” Choosing bespoke, whether for an engagement ring, wedding band, or simply an exquisite piece, is an extremely personalised service. It offers a different avenue than simply picking a standard piece from a jewellery store, as with bespoke, the choices are endless. Over a coffee in his city centre store, clients go through designs with Michael himself, made to reflect their own personality, individuality and style. Settings like bezel, tension or channel; gems such as an intense violet blue tanzanite or an extravagant fancy canary yellow diamond; shapes from oval to radiant; and a complementary metal, are all decided on. The piece is also tailored and measured exactly for the client, to ensure a perfect fit, whether it’s a pair of earrings, a necklace or a ring. A 3D image of the bespoke item is then created using CAD software, and if required, a pre– production piece in silver. As Michael buys and supplies gems direct, it allows for scope when designing a piece. Looking after the

Like Magazine

client, rather than striving for a sale, he offers his years of expertise on the best choice of gem. Skilled, passionate and local craftspeople are then commissioned to create the pieces by hand, to ensure excellence. Along with imagining pieces from scratch, old jewellery can also be remodelled and turned into entirely new pieces using the original gems and metal. “It’s great to see young couples getting engaged and to have both parties involved in the process,” says Michael. “I also love when it’s a pair of wedding bands being created, or in some instances, two engagement rings, as you can have matching gems and metals but different designs. Both will be completely unique but the materials come from the same origins.” Such bespoke bands are a perfect option for same–sex couples now planning to tie the knot under Ireland’s new marriage equality legislation. Along with bespoke designs, Michael is also carrying a number of stunning handmade pieces, priced between €200 and €500, in his store for Christmas — the ideal gift for someone who wants something a bit different. “Some are one–off pieces, some are surreal and out there with prehistoric type coral and exciting looking gems,” explains Michael. “Some are silver, some are rose gold plated, but all are cost effective.” A limited number of beautifully restored vintage watches can also be snapped up, while gift cards for any value are available, which can be put against a bespoke piece, or a watch repair and service. “My job is about looking after the individual, “ says Michael. “Without sounding clichéd, I’m putting the service back into personal service.”

F E AT U R E

The WRITE STUFF WITH 12 BOOKS PUBLISHED, CECELIA AHERN HAS ESTABLISHED HERSELF IN THE IRISH LITERARY HIERARCHY. SHE TALKS TO MARIA TRACEY ABOUT HER INSPIRATION, WHY SHE’S TACKLING YA LITERATURE, AND HER FRUSTRATION WITH THE COMPARISONS BETWEEN HER FATHER AND HER FICTIONAL CHARACTERS.

“W

e’re very judgemental,” explains author Cecelia Ahern, and the hypercritical society we live in is the inspiration behind her eagerly anticipated debut young adult series, Flawed and Perfect. No stranger herself to being on the receiving end of judgement, in 2002, the publishing sensation was written off as a one–hit wonder, as critics put the success of her first book, PS I Love You down to her connections. However, more than a decade on and with 12 books under her belt, Cecelia has established herself as one of Ireland’s top novelists. Her latest, the thought–provoking The Marble Collector, was released last month, while her YA debut, Flawed will be published by HarperCollins in March 2016, followed by Perfect in 2017. Warner Bros have already optioned the movie rights for the series, to be produced by Wendy Finerman — whose credits include Forrest Gump and The Devil Wears Prada. Set in a society where “Flawed” people are branded with an “F” and forced to live as second-class citizens, the novel revolves around a young girl, Celestine North, who makes a stand and subsequently faces life–changing repercussions. “I don’t call it dystopia,” explains Cecelia. “It’s set in a modern but fictitious world where people who

36

make mistakes are branded “Flawed” but I think that’s what we do to each other anyway. I just introduced a country where it’s actually law. “I started thinking about what our society is like and how we really don’t give people a chance if they make a mistake. We’re always picking out flaws as opposed to just being positive.” Cecelia adds wryly that her research was simply to “go online and look at the news every day”. “What are we saying about each other now? What person has been turned into a ‘monster’ for a simple stupid mistake we’ve all quietly made in our own lives?,” states Cecelia. “And it’s mostly women that get the finger pointed at them. Even the way we’re talked about has an element of ‘judgement’. Articles will say ‘look at the woman showing off her post baby body’. She’s not ‘showing off’… she’s walking down the street in a dress! It’s the things we say about each other on small level and also on a larger level. How we put people up and destroy them over something very simple.” Picking up the pen specifically for young adults is unchartered territory for Cecelia, who so far has focused on an adult audience, but the reason for the move is simply the desire to challenge herself. Despite the launch date being months away, Flawed has already

37

garnered widespread attention, which will only be buoyed by the release of the film. Cecelia quips she “absolutely has someone in mind” for the lead role, but refuses to be drawn. “I think the clever thing is to not say it,” she laughs. Film talk aside, Cecelia outlines that with this novel she wanted to keep things fresh. “It’s a totally different readership, a different way of doing publicity. In a way I’m starting from scratch next year,” she admits. Indeed, since she first started writing, this is one 34–year–old who has continually challenged herself. At the tender age of 21 she wrote her first novel, the bestseller PS, I Love You, which was adapted into a major motion picture starring Hilary Swank. Cecelia’s subsequent novels such as Where Rainbows End — which inspired the movie Love, Rosie — If You Could See Me Now, and The Book of Tomorrow were also bestsellers, and she co-created the Emmy award– winning comedy series, Samantha Who? starring Christina Applegate. While all her plots touch on different themes, be it love, death, unexpected pregnancy, redemption, suicide or

38

friendship, one thing that remains consistent throughout all of Cecelia’s writing is the drive to write for herself. “Regardless of the knowledge and experience I’ve gained over the past 10 years, regardless of anything else I know… I still have to write in the exact same way I wrote PS, I Love You, which is just for myself,” she smiles. Certainly her latest offering, The Marble Collector — about a daughter who, on stumbling upon a mysterious collection of her father’s possessions, unlocks the secrets of the man she thought she knew — is a reflection of just that. “The title came from that simple expression, ‘I’ve lost my marbles’… which is something I say a lot,” she laughs. “I wanted to write a short story called The Woman Who Lost Her Marbles so I started looking into the world of marbles. From there it grew into this book, as the marbles became almost another character. They’re such beautiful things to look at… they’ve this whole little universe trapped inside.” While Cecelia admits she does draw on her own life experience for her novels, there’s a certain degree

Like Magazine

of frustration that her own father, former Taoiseach Bertie Ahern is being linked to the book’s paternal character, Fergus. “I’m either going to lose my temper with someone, or say ‘I’m not answering that’, or continue to be polite,” she says

with a smile. “I’ve had other father/ daughter stories — The Year I Met You has a very complicated father/ daughter relationship — but nobody wanted to compare that one, because they want to compare it to a man who has secrets. It’s frustrating that out of all of the novels they’re going to choose this one, and it says a lot about what they’re trying to project. “While I have a father, and I am a daughter, and everything I write is from experience and observation… she’s not me, he’s not my dad.” For Cecelia, now being a parent herself to five–year–old Robin and three–year–old Sonny, is both “exciting and exhausting”. “It’s getting easier as they get older,” she enthuses. “They’re getting sleep now.” After having the children, she decided to move to an office outside of the home to continue her writing. “It’s nice to be able separate life from work, and it’s nice to leave the work behind when you come home,” she says. “I’m writing about five or six months of the year — I’m lucky because I have what a lot of parents try to achieve, which is flexibility. So

when I’m working on a novel, I’m doing it four days a week, — it is quite intense. But if I do a good one or two days I know I can relax a little on other days. I can still do what I want to do with the children.” In terms of the writing process, Cecelia explains that, just as it happened with The Marble Collector, quite often a phrase or expression can spark her imagination. “I might want to understand the root of a phrase, or I might like the sound of word,” she smiles. “I’ll go to the dictionary to see what it means and it’ll inspire an idea or a scene or the kind of person who would use it. “One of the most bizarre ways I came up with an idea was when I had the MTV awards on in the background one evening and I heard an actor say ‘here’s the exclusive trailer of my new movie, 100 Names’. Well, I thought he had said 100 Names! I loved that title however, when I paid attention, I realised it was actually The Hunger Games. I completely misheard! So that inspired my novel last year —One Hundred Names.” However, despite her joviality, and

Located in Shandon Street, Togher and Mayfield

FREE DELIVERY SERVICE AVAILABLE

the seemingly effortless end results, Cecelia admits writing can be a hard process at times. “I heard authors say before that ‘you write through’. However, if you’ve a block how do you write at all? “But you do,” she continues. “You keep writing — writing bits you don’t necessarily need, but you’ll then get to what you do need,” she explains. “It’s like taking a run before you jump. I always find the first 20,000 words the easiest because all your ideas are fresh but then, all of a sudden, you’re like ‘oh, I’ve written everything in my head, what’s next?’. That’s the scary moment. I’ve learned from experience though, that whenever I feel like I can’t get through it, I can.” It’s this thought process that showcases what an experienced author this young Dublin woman has become. Smart, funny, talented, and extremely nice to boot, Cecelia Ahern, with her pretty extraordinary résumé, is a force to be reckoned with. The Marble Collector is published by HarperCollins and is in bookstores priced €19.50.

At the Salt Therapy Clinic we produce a micro-climate better than what is found in natural salt chambers. We start by purifying the air in a climate controlled insulated room to produce a germ free and allergen free environment. Then we fill the air with predefined concentrations of salt aerosol, suited to inhale without causing side-effects. You can then sit back and relax breathing normally and enjoying the positive effects of your treatments.

Great Expectations Do children expect too much at Christmas? Is the spirit of the season being lost? MARIA TRACEY looks at how to keep Santa list expectations in check.

F

rom the constant barrage of bright and ever so alluring toy adverts on TV, to the glossy catalogues dropping through the letter box... Christmas is a time fraught with gift expectations. As children pen their letters to Santa, many of the handwritten notes have left parents perplexed — are their children heirs to millions, or do they truly have no concept of budget? Every year, it’s the eternal materialism and commercialism battle, as parents face lengthy lists that can often be completely unattainable. Leading child and adolescent psychotherapist and father–of–three Colman Noctor outlines that Christmas, for many people, can be a stressful time. “This ‘stress’ can be emotional, physical and/ or financial,” he explains. “Managing the Christmas demands

can be a costly business and as the country journeys out of a period of austerity there’s a real fear that the trend will be another upward curve in terms of spending.” Colman, who’s the author behind Cop On — which looks at why children need some ‘cop on’ to survive and thrive in today’s world — states that managing expectations is a feature of contemporary parenting. “From keeping up with the ‘birthday party circuit’ to purchasing a full aisle worth of toys from Smyths at Christmas, parents are under ferocious pressure to spend more than they have. So how can we help people to manage that?” he asks. Colman states in terms of managing a child’s gift expectations, it’s important that a “culture or a value system” goes beyond just the holiday season. Children, he explains, need

to value the things they are given for what they are, and this must be more about the “meaningful value” of the item as opposed to its monetary cost. “Meaning and value ideally are very subjective concepts,” he says. “As the saying goes ‘one man’s treasure is another man’s garbage’. Children need to be thought the principles of ‘value’ and ‘meaning’ as part of a developmental process and not just a Christmas issue. “A child should delight in Santa bringing them something that they know they will like as opposed to him bringing a collection of things that they do not relate to.” Colman adds he’s aware that “this is all a bit idealistic”, but perhaps we do need to remind ourselves that we exist in a culture where we have lost sight of meaning. “As a society we have become more expectant and the more choice we have, the more diluted the quality of those options become and also the more choosy we become,” he says. “I make the comparison to the TV in the ‘80s. There were two channels to choose from and so we watched almost everything with minimal expectation. Now we have the choice of 1000 channels and continually complain that there is nothing good on. We need to teach children about managing expectation by first managing our own.” He states there’s a dilemma of introducing the issues of financial stress in the family to children. “You want children to be aware of the

78

reason why they need to curtail their expectations but you don’t want to burden them with adult worries,” says Colman. “The balance is to suggest that things need to be within reason but reassuring the child that any financial issues are under control and nothing they need to worry about. An older child may be more able to hear about these concerns and manage them better than a younger child or a child of an anxious temperament.” He adds: “If I feel I must be the ultimate parent who can provide €1000 worth of gifts at Christmas and that this will be a measure of my parenting skill then I will go through parenthood feeling I’m falling short. Whereas if I know my child and know what they would like and buy them a gift that has meaning, and they acknowledge this effort then surely that is more representative of my parenting abilities.” Colman adds that children develop expectation not only from the behaviour of their peers but also from the culture of their family’s value system. “Sure they may look at their friends’ gifts and marvel at the size or quantity of what they got, but what you want is for them to then reflect on their own gift and see the unique value in that too and the value derives from it being something they wanted and were delighted to get because it meant something,” he concludes. “It is a product of a loving relationship and not because of how much it cost.” Geraldine Kelly, director of children and family services at One Family — a national organisation for oneparent families — outlines it can be hard to manage a child’s expectations at this time of year. “They hear so much about Santa as he is in the shops from September so there’s a lot of time for children to think and plan the letter,” she says. “Of course, children also hear others talk about what they are asking for and if you take a young child to the toy store they are heartbroken as they see so many exciting toys that they want. Try to avoid taking them into toy stores unless it is a planned trip in which they have some pocket money to buy a small toy on the day.” Geraldine adds the toy catalogues also contribute to the pressure, as “every page the child turns they see more wonderful toys they’d love”. “It can be useful to have one if you sit with them and go through the pages. However try to not leave it lying around. Explore with them what’s great about each game and help them figure out what they really would love,” she says. Geraldine states it

Even if you could afford to give your childen everything they wanted, would it be wise?

is also important to talk to children about appreciation, and explain that “Santa’s elves are working really hard to ensure all the children in the world have gifts on Christmas” — for some children that could be clothes and tooth brushes. “Encourage a little empathy,” she highlights. “Children can really feel empathy for the elves as well as all the children getting what they need. Help children to know that Christmas is actually about giving and not receiving, talk about ways they can give to others — this does not have to be in material ways.” Other practical advice, explains Geraldine is to think of a fair number of gifts to ask Santa for, perhaps one big gift and two smaller gifts, with three being the maximum. “They need to go through all the cut–outs and focus on what they really want and what is not ‘greedy’,” she says, adding that it’s important a child knows it’s not possible to have everything in the world. “As much as you’d love to give your child everything they want, would it really benefit them?,” she questions. “I often ask parents to think about what they would do even if money was not an issue, even then would it be wise to buy them everything they want? What would you be teaching your child? It is important to not feel guilty about what your child will get.” Geraldine adds that it’s also is important to make Christmas about more than just Santa, and if parents can offer their child time together, it will help them grow with confidence. “Help them choose games and gifts that you can all engage with on Christmas day,” she says. THE WORLDS MOST ADVANCED PROGRAMME Forget everything you have experienced before. At Motivation there are no group meetings, no fad diets and no empty promises. We tell you the truth about weight loss and why you have not succeeded in the past.

How our programme will help you

Why Motivation is different

Unlike other programmes, Motivation helps you to tackle your unwanted weight by identifying and addressing the habits, emotions and behaviours that are the root causes of your overeating and other unhealthy behaviours. In this way you can reach your desired weight and, more importantly, maintain it for life. Developed by world-renowned expert Dr. Maurice Larocque, the programme is based on the latest scientific findings by the world’s leading weight management experts and is the result of over 40 years of research and clinical practice in the fields of nutrition, weight loss and weight maintenance. He discovered that simply following a diet without addressing the underlying causes of the problem would only achieve short-term results because such an approach merely treated the symptom, not the cause. As Dr. Larocque puts it, “trying to lose weight by dieting is just like taking an aspirin for a toothache – you will only get short-term results. You can only change your physical weight when you change you “Mental Weight.”

At Motivation, we say it’s okay to have the occasional slip – it’s called being normal! We understand that on your journey you will encounter some bumps along the road to your weight loss destination. As Dr Larocque says, “It’s okay to cheat, but not to quit. Slips are marvellous opportunities to improve.”We are here to help and support you, not to find fault or criticise you!Losing weight and keeping it off is not a question of willpower – it’s about motivation. With our unique approach, you can remain motivated and focused right through your programme and beyond.

The figures are on your side Clinical studies* show 82% of clients weight loss was maintained for more than 4 years. This is a phenomenal success rate compared with conventional diets, which have a maximum of 5 to 6% of people maintaining their weight loss after just one year.

What is the Mental Weight concept? At the heart of our approach is Dr. Larocque’s groundbreaking discovery that each person’s habits, motivations, emotions, stress levels and self-image all make up their “mental weight”. This is the weight that you could potentially reach if you continue with your current habits and behaviours. At Motivation, we can help you to identify and reduce your mental weight so that it matches your desired weight, enabling you to easily maintain your weight in the long-term without having to continually struggle with your willpower. When you look after your habits, the scales will look after themselves. *Clinical study published in The Journal of Bariatric Medicine.

Do you want to know Your Mental Weight? For a quick and easy way to evaluate if you have a challenge with your Mental Weight, take this simple quiz. Answer ‘yes’ or ‘no’ to the following questions: 1. Do you eat when you are disappointed with someone or something? 2. Is eating an important source of pleasure in your life? 3. Do you have a tendency to eat when you are disappointed with your own behaviour? 4. Do you sometimes hide to eat or hide what you eat from others? 5. Are you more than 10% above your ideal weight? 6. Do you sometimes have uncontrollable food cravings? 7. Do you feel deprived when you are on a diet? 8. Do you tend to be obsessed by the scales? 9. In some ways, do you dread reaching your desired weight?

If you have answered ‘yes’ to even one of the above questions, you have a problem with your Mental Weight. Once we have identified the triggers and root causes that are causing you to over eat or make poor food choices, we have all the necessary tips, tools and techniques to help you to change these thought patterns around food.

Is eating making you hungry? Protein - All of our food plans are protein based – low in carbohydrate and low in fat: this is to avoid any increase in your cholesterol – and ensure that as you lose weight it is only fat that you lose and not lean muscle tissue. When you follow a low calorie weight loss programme the body’s need for protein dramatically increases. If you lose lean muscle tissue your metabolism slows down and you can end up looking gaunt and develop loose skin (flab). This is the danger when people go only by the scales – it doesn’t give you an accurate representation of your body composition. You will eat 3 meals per day from all the food groups plus snacks in between meals. A fantastic bonus on the motivation programme is that energy levels increase and when you reach your weight loss goal you will have a healthy toned appearance. Sugar - The most common physical cause of cravings and over indulging is hypoglycaemia (low blood sugar levels). This is usually caused by not eating enough, inadequate protein intake or eating too much sugar or carbohydrate rich foods. When experiencing hypoglycaemia, common symptoms include cravings, tiredness, mood swings, palpitations and sweating to name just a few. This can easily be rectified with the correct dietary information. Taking the first step... Your Assessment Consultation At your assessment consultation we: 1. Listen to why you are here and what YOU want to achieve from our programme. 2. Discuss your weight loss goals and what may be stopping you from achieving them. 3. Look at your history and what other programmes you may have tried. 4. E xplain how we are different and show you the tools we have available to help you get the results you are looking for. 5. C omplete your full Body Composition Analysis, where we measure your fat, water and muscle percentages. 6. Assess your measurements, calculate your Body Mass Index (BMI) and we check your heart rate and blood pressure. 7. Determine if our approach is right for you. Your assessment consultation takes approximately 30 minutes in total.

HOME DINNER DATE Christmas is all about spending time with family and friends and there’s nowhere more perfect to do it than around the dining table. There’s something quite magical about stunning tableware, from glassware to coasters; runners to crockery — and it’s an easily affordable luxury too. We love this rich red multi swirl place mat (€3.95); red stitch dinnerware collection (from €29.70) and jingle napkin ring (€15.95) from Meadows & Byrne at Mahon Point and Ballyseedy Home & Garden Centre, perfect for seasonal celebrations; while the Stockholm solid oak extension table (€699) from Lakewood Furniture, Carrigtwohill is the perfect solution to any space concerns.

LUSCIOUS LUXE As the weather turns colder, it draws us more and more toward opulent tones and fabrics. Think decadence with bold and beautiful pieces that will be a worthy investment in your home, like precious metallics and sumptuous velvets. For some ‘wow’ factor, the Raleigh three–seater sofa from Caseys Furniture (€1,299 down from €2,099) is a stunning piece with its warm suede–like fabric and deep, rich colour, while the Rawley pendant (priced from €565) at LightPlan, Kinsale Road Industrial Estate, makes a real statement with its twirling ribbons of brushed satin copper.

GET CRAFTY We’re all aware of the importance of shopping local, using fresh, seasonal produce… so maybe we should consider being the same way about our interiors? Cork is heaving with talented ceramicists, textile–workers and furniture– makers, evident in the amazing creations on offer at Cork Craft and Design at Douglas Village Shopping Centre. One of the eye– catching pieces is the four–hook wall mounted hanger, made from spalted beech and walnut (€215) by Denis Cotter of Allua Furniture Design in Ballingeary. A thing of beauty that’s also practical and is supporting local… we’re sold.

BIN IT Sometimes the most basic items in our homes get overlooked in the style stakes. Take the humble bin, oft forgotten and seldom put into the spotlight. As we’re always rooting for the underdog, we love Orla Kiely’s latest range, as she has teamed up with Brabantia interior designs to release a new range of retro bins. Bound to brighten up any corner in any room, the iconic stem motif is available in cream on charcoal with an orange lid, and charcoal on cream with a yellow lid. Starting at €119 for a 12 litre, the collection is available at select Kilkenny stores.

MAKE A WISH We love candles all year round, but Christmas calls for something extra special. Sprinkled with real 18ct gold, Neom Organic London’s Christmas Wish delivers a seriously festive dose, with a dash of glitter, to the home. It combines 13 essential oils including cinnamon, mandarin and tonka bean — almost good enough to eat — to help ease post–shopping stress levels whilst evoking the comforting feeling of Christmas. Falvey’s Pharmacy in Douglas Village Shopping Centre are just one of two Cork stockists of this uber-luxurious brand of candles, perfect to treat yourself or someone else to this Christmas. Christmas Wish is priced €60..

GLASS ACT For some Yuletide cheer, Brendan O’Driscoll of the family–run J J O’Driscoll Superstore & Deli on the Ballinlough Road has picked his top tipples for red, white and sparkling drinkers — perfect for Christmas festivities. DOMAINE AUJARD REUILLY

Irish Eggnog

Gingerbread Woman

Christmas is a time for one-offs: pudding, Brussels sprouts, and eggnog! Eggnog is one American tradition we’ve been slow to adopt, but it’s a wonderful sharing cocktail and it’s easy to make - all that’s required is a good, strong arm for all that whipping! Traditionally made with Bourbon, for his recipe, Andy Ferreira of Raise the Bar prefers to use good Irish Whiskey.

Another quintessentially festive flavour Andy loves is gingerbread. “It makes a mean syrup that, combined with some Baileys and Kahlua, is about as naughty as it gets! Happy Christmas everyone and remember, be nice to the bartenders!”

INGREDIENTS: •  6 eggs, separated •  ¾ cup of sugar •  1 litre of full fat milk •  ½ litre of cream •  1 cup of good Irish whiskey •  ½ cup of spiced rum

PREPARATION: In a large bowl, beat together egg yolks with half a cup of sugar until they turn light in colour. Stir in the milk, cream, whiskey and rum, gently whisking the whole time. In a separate bowl, beat the egg whites with the remaining quarter cup of sugar until they form soft peaks. Take half the bowl of egg whites and add them to the punch. Keep the rest in the fridge. Grate lots of nutmeg on top and serve up in small glasses.

INGREDIENTS: For the gingerbread syrup: •  2 cups of water •  1.5 cups of granulated sugar •  2.5 teaspoons of fresh ginger •  ½ teaspoon of cinnamon •  ½ teaspoon of vanilla extract

PREPARATION: Combine the ingredients in a saucepan and bring to the boil. Reduce the heat and simmer for 15 minutes. Cover the saucepan and leave to cool. For two Gingerbread Martinis: Smash up a gingersnap cookie and rim the glass with the broken biscuit. In a cocktail shaker or jam jar add one egg cup each of Baileys, Kahlua, cream and half an egg cup of gingerbread syrup. Add lots of ice and shake it all up and serve.

For a crisp, dry white, look no further than Domaine Aujard Reuilly, hailing from the 15–acre estate of Bernard Aujard and his son, Damien, right in the heart of the Reuilly area. Its rich palette of aromas offer a good balance of floral and fruit notes and it’s a great value, high–quality wine. €17.99 RIB SHACK Straight from South Africa’s Western Cape comes Rib Shack Red, with ripe dark berry flavours and notes of mocha. Blending Pinotage and Shiraz, it will pair perfectly with an alternative to the traditional Christmas turkey - this is one for those who like their wine the way they like their meat: big, red and juicy. €10.99 LA FORNARINA PROSECCO If you’re seeking something sparkling this Christmas, try the delightful La Fornarina Prosecco. RECIPE

PORK AND APRICOT TERRINE

Mixing influences from Italy and France, Kay Harte of the Farmgate Café in the English Market recommends setting aside few hours to savour the slow, but simple process of making this impressive terrine. Great as a Christmas starter, it keeps for three to four days, so is also perfect for unexpected visitors, served with sourdough toast and cranberry sauce. INGREDIENTS: •  700g minced pork •  150g dried apricots •  200g diced white onions •  80ml port •  200ml red wine •  20g finely chopped fresh thyme •  350g of sliced streaky bacon •  100ml fresh orange juice •  100ml white wine •  Salt and freshly ground black pepper •  Optional: 25g pistachios

A 2lb loaf tin gives 10-12 slices. Mature for 24-48 hours before eating.

METHOD: 1.  Mix the pork mince and port together and leave to marinate for 24 hours. 2.  Heat the oven to 160°C / Gas 3. Oil the base and sides of your loaf tin,

then line with cling-film, allowing enough to cover the top of the terrine. Likewise, arrange the bacon so it covers the base and the sides of the tin, with an overlaps for the top, so the terrine is wrapped in bacon when served. 3.  On a low heat, cook the onions with the red wine and thyme for 10 –15 mins, until the liquid has cooked off, then allow to cool. Gently warm the orange juice and white wine in a pot, add the apricots and leave to macerate. 4.  Mix the cooled onions through the pork and half fill the terrine tin with the pork mixture. Arrange a layer of juicy apricots in the middle, and add the remaining pork mixture. Fold the overlapping bacon over the top laying extra strips across the top to fill any gaps. 5.  Wrap the cling-film across the top and cover the tin tightly with tinfoil. 6.  Stand the tin into a roasting dish, pour in boiling water to come about halfway up the sides and bake for approximately one hour and 20 minutes at 160°C. At this point you can remove the foil and bake for a further 10 – 15 minutes to brown the top. 7.  Cool completely, then wrap in parchment paper and chill. Allow the terrine mature in the fridge for at least 24 hours, or preferably two days, so the flavour can develop.

RECIPE Miso Marinated Wagyu Rump, Black Garlic Cream, Organic Spring Onion And Carrot, And Grilled White Asparagus INGREDIENTS:

This recipe from Bryan McCarthy of Greenes Restaurant showcases one of his favourite ingredients - Wagyu rump from Michael Twomey’s Butchers in Macroom, with a natural fat content and marbling that gives the meat an unctuous flavour unique to this breed. Organic vegetables also feature, alongside miso and mirin, available from Asian food stores. SERVES TWO.

•  2 X 200g Wagyu Rump steaks •  1 tsp white miso paste •  2 tsp soya sauce •  3 tsp mirin •  1 shallot •  100ml white wine •  250ml chicken stock •  100ml cream •  2 white asparagus spears, peeled & trimmed •  2 baby carrots, cleaned and peeled •  2 spring onions, cleaned •  50g fresh peas •  Rapeseed oil for frying •  50g butter •  Salt & pepper •  150ml cider vinegar •  1 tsp sugar •  150ml filtered water •  1 bulb of black garlic, peeled •  1 sprig of thyme

METHOD: 1.  Three days beforehand mix the miso, soya and mirin together, and marinade the beef in this mix for 72 hours. 2.  Also three days beforehand, mix the vinegar, sugar and filtered water. Thinly slice the carrots on a mandolin or with a vegetable peeler, and pickle in the

vinegar mix in a sealed jar until needed. 3.  On the day, pre-heat the oven to 180 degrees Celsius. Cook the asparagus, peas and spring onion for one minute in the simmering chicken stock then refresh in ice cold water. 4.  Remove the beef from the Marinade and sear for four minutes on each side in a smoking hot griddle pan with a little oil. Set aside to rest in a warm place for 7 minutes. 5.  Deglaze the pan with the white wine and add to the chicken stock. Sauté the shallots and thyme in a little butter, then add the chicken stock and reduce by half. Add the cream and black garlic and reduce by one third, or until a nice sauce consistency. Blend and season to taste with salt & pepper. 6.  Sear the asparagus & spring onion on the griddle pan till lined & season to taste with salt & pepper. 7.  Reheat the peas in the black garlic sauce.

TO SERVE: Place the Wagyu rump in the oven for 1 minute. Place two spoons of black garlic sauce and peas on each plate. Slice each rump in half and place a piece on each pool of sauce. Carve the asparagus at an angle and place a piece on each piece of beef. Arrange the spring onion and some pickled carrot around the plate.

C U LT U R E GET IN THE FRAME We love music with a conscience, and the critically acclaimed singer/ songwriter Glen Hansard has that in bucketloads. Currently on a European tour with his big band, Hansard returns home in December for a series of shows that includes two Cork gigs on December 15th and 16th. All profits will be donated to Right2Homes, a not–for–profit organization which provides funding to support legal initiatives aimed at preventing bank repossessions of family homes. Tickets are €30 plus booking fee from everymancork.com.

Fancy a night out? Stuck on ideas? Here’s your guide to what’s going on…

SIMPLY WONDERFUL Perhaps one of the best Christmas movies of all time (although we do also adore Elf) is It’s a Wonderful Life. Starring James Stewart as George Bailey, it’s about a man whose attempted suicide on Christmas Eve gains the attention of a guardian angel who’s sent to help him in his hour of need. Digitally remastered (yeah!), it’s being screened at the Triskel from Thursday, December 17th until Wednesday, December 23rd. Tickets are €8.80 from triskelartscentre.ie.

CHRISTMAS JOY Get into the Christmas spirit in Cobh, as Cork songstress Caroline Fraher joins tenor John Daly and director of music at St Colman’s Cathedral, Dominic Finn in concert. The trio will perform at Sirius Arts Centre’s annual Christmas special on Friday, December 11th at 8pm — a perfect festive gathering, with mulled wine and mince pies also served on the night. Tickets are €15, available from siriusartscentre.ie or 021 4813790.

PANTO SEASON It’s starting to look a lot like panto in Cork. In the Opera House, the magical story of Beauty and the Beast — running from December 10th until January 17th — has been rewritten with wondrous twists and hilarious outcomes while at The Everyman, magical Aladdin will be brought to life from December 5th until January 10th. Tickets for Beauty and the Beast are €25-€30, with a family rate of €80–100, available from corkoperahouse. ie and Aladdin tickets are €26, with a family pass €95 from everymancork.com.

TICKETS FOR THE NEW YEAR... Stuck for Christmas gift ideas? For a fail safe present, try tickets for a show. Here’s our pick of what’s on in 2016. One of the first acts announced for Live At The Marquee is country singer Nathan Carter, who’ll take to the stage on Friday, July 1st. Carter, who’s introduced a whole new generation of fans to country music, launched his new DVD just last month, filmed at the summer’s Live At The Marquee show. Tickets

for next year’s gig are €28, at ticketmaster.ie. For those thinking comedy, the gig of the new year has to be Des Bishop’s Grey Matters. He returns to The Everyman with his new show from Thursday, February 25th to Saturday, February 27th, embracing the ‘grey’ and letting the wisdom of his years inspire his stand–up. The show is at 8pm, and tickets are €27 from everymancork.com.

House are a great buy. The show entitled Happening, comes to Cork on Thursday, January 21st starring twins Stephen and David Flynn, who’ll host an evening of recipe demos, stories and some tastings of delicious Happy Pear food. Tickets are €20 from corkoperahouse.ie.
