VALENTINE’S DAY. It’s the day those without spouses or significant others dread. We’ve all been there. But is that really what Valentine’s Day is about? Advertisements seem to target couples— chocolate, flowers, romantic dinners and, of course, jewelry. It seems that the day is geared toward not only couples but especially toward showing the women in our lives how much they mean to us. Shouldn’t it be more? Now don’t get me wrong, I’m not encouraging all you men out there to cancel whatever special plans you have or return any gifts you may have purchased. I don’t want to be the cause of your relationship strife! What I do suggest, though, is to not limit Valentine’s Day to a celebration between spouses or couples. Take the time to do something special for those who are most important in your life, no matter what their relationship is to you. After all, love is not just about romantic love. Do you have an elderly parent? Have your kids create special homemade cards for them expressing how much they mean to them. Bake something special

Some elementary schools have Valentine’s Day celebrations while others no longer do. Don’t let that stop your children from creating special cards or homemade gifts for their friends and teachers. And when it comes to your kids, be sure and do something special for Valentine’s Day. Remember, to show someone you love them does not always have to mean an extravagant gift. Time spent making memories is the best gift of all. And in the end, it’s always a special feeling to know you are loved and appreciated.

tough situation in which they are not able to spend all their time with their newborn. To this end the Baby Cuddlers step in to provide the touch and warmth of a caring adult and to sooth them during their time of need.

The Baby Cuddlers program was started just a few years ago with only a handful of volunteers working a few hours each week. It was determined that these most fragile infants needed the comforting touch and warmth of human contact when a parent would not be able to provide them with their full attention. Current Kootenai Health Cuddler Program Chairman Eileen Wilson remembered hearing about the program from her daughter, a nurse, and decided to apply.

Putting a newborn baby into the hands of someone new is something not taken lightly. All applicants are screened via background check and the FBI fingerprint database. Those who are selected for the program go through a two-and-a-half-day orientation with hospital staff, which is followed by one-on-one training with Wilson, in which she goes over several protocol sheets and demonstrates proper handling. All applicants must be willing to get a flu shot, be non-smokers and cannot wear fragrance or have artificial fingernails, precautions all taken to provide the safest possible environment for the baby.

he Neonatal Intensive Care Unit (NICU) at Kootenai Medical Center can see anywhere from a couple to up to 16 babies a day, depending on what is happening in the maternity ward. Babies are brought to NICU for many reasons, most often when they are born premature, underweight or are in need of a medical procedure right after birth. Others are dealing with symptoms related to a mother’s drug or alcohol addiction. They are the most fragile infants in the hospital and are watched over by skilled nurses and also a group of highly motivated volunteers.

“About 300 people responded, and I was one that was chosen,” she said. “That was about three years ago now.” Wilson now coordinates with the 36 women and men who make up her team of cuddlers. Each is responsible for at least one four-hour shift per week, and the cuddling happens between the hours of 4am and midnight, seven days a week, all year long. “We provide them with comfort. We are actually the only people to hold them other than their parents who are not wearing gloves,” explained Wilson. NICU babies can spend just a day or two in the unit, but others might spend weeks or months. For parents who have other children at home, live a long way from the hospital or are recovering addicts, it creates a

When a cuddler arrives for a shift they find out how many babies are currently in the NICU. They then coordinate with nurses who handle just a couple babies each to see where they are needed. The nurse provides the cuddler with feedback on when the baby last ate and slept, and whether they might need less stimulation or rocking than others. Cuddlers dress in the same sanitized scrubs as the nurses and wash their hands up to their elbows for a timed two minutes before entering the room and picking up the infant. They sit in a comfortable recliner in a semi-dark room and can hold the babies for up to two hours at a time, taking needed bathroom and water breaks when necessary. Other times the cuddlers might assist to provide a comforting hand to an infant when blood is being drawn or other uncomfortable testing is

being done on the baby. It takes a special kind of person to do this work. “It’s very much a privilege to have this role and to manage these wonderful people who are willing to get up at 3am and be ready to work at 4am,” said Wilson. There are over 150 volunteers at Kootenai Medical Center that provided 32,000 hours of work in 2018, 3,000 hours of which came from the Baby Cuddlers program. With the program currently filled, it’s not surprising to Wilson that so many people want to be a part of it. “People are naturally drawn to babies and feel tremendous sympathy and concern when the mother is not there. For many of our volunteers, the experience brings them back to their own childbirth experience, and some of these people had premature babies as well,” she said. While they don’t often get to see the infants once they are released from the NICU, the team of volunteers knows the care they are providing is having a direct impact on improving the baby’s health and growth. Wilson is so happy with the results that she hopes to share them with other hospitals around the county. “I hope we can be an example of how this works and share our program with others because any hospital that has a NICU needs this program,” she said. S

o, this is my second month exploring the topic of minimalism. And, while I’ve come to conclusion that, as a family, we’re simply not cut out for being true minimalists, there are a few things that we can take from the concept when it comes to our home. If, like me, you have made a New Year’s resolution to simplify, then keep reading!

it wears out. I chose a color that we love, but that is also flexible. The planks have enough variation in them that if I change my mind and paint my now all white walls blue, orange or purple, it will still match nicely. As well, our area rugs are nice pieces that I intend to keep for a long time. They are fairly neutral in color and will look good with a variety of shades or changes to other pieces.

As a designer, my home is my playground. And as things have a tendency to change quickly in my house, it seldom makes sense to spend large sums of money on decorative items, as they will likely be changed out in a few months anyway. However, for permanent fixtures, be it flooring or furniture, I tend to support the idea of splurging on quality pieces that will last and look nice for years to come.

Our sofas were another splurge. We took the time to measure carefully and research what we really wanted and then took fabric samples home until we found just the right combination. Then I had them ordered at Sandpoint Furniture, and the result is just perfect for our oddly shaped living room. In addition, I know they will withstand years of love and hard use from our family.

Our flooring, for example, is a luxury vinyl product that has a lifetime warranty. We will likely get tired of it long before

When it comes to decorative items, however, the sky’s the limit. I enjoy perusing thrift stores and antiques markets for unique and quirky finds. And if I spend just a few dollars on something that brings me joy for a few months, or even a year or two, then I don’t feel so bad re-donating it when something else strikes my fancy. And while I don’t like a lot of clutter, especially in our small home, I do appreciate little odds and ends that bring personality to a space. My rule of thumb, however, is if something comes in, then something must go out. But, rules are made to be broken!

Festival of Hearts benefits Boundary Community Hospital

T

he Fry Healthcare Foundation is once again hosting its annual Festival of Hearts fundraiser, a memorable event that brings the community together in support of health-care services in our area. Now in its third year, the Festival of Hearts will take place on Saturday, February 9, at the Kootenai River Inn in Bonners Ferry.

There will also be an Open Your Heart paddle raiser during the event, the proceeds of which will be used for a blood bank refrigerator for the clinical medical laboratory. “Open Your Heart donations will be accepted at the Community Relations office at the hospital leading up to the event,” said Kuczka.

Each year, the goal of the event is to raise funds to assist Boundary Community Hospital in purchasing new equipment, thereby building upon the already exceptional care patients receive.

This Valentine gala features a four-course dinner, including wine, prepared by the Kootenai River Inn’s celebrated chefs. There will also be the popular dessert dash where tables compete to select a dessert from an array of locally made sweet confections.

According to Lauren Kuczka, marketing director for Boundary Community Hospital, the proceeds from this year’s event will go toward completing the purchase of the Spacelabs QUB Cardiac Monitors for the hospital’s acute care and emergency departments.

BFHS adopts resolution to promote academic focus BY PATTY HUTCHENS

W

ith 2019 on the horizon, Bonners Ferry High School Principal Kevin Dinning had an idea, one that he hoped would increase academic focus and productivity among his approximately 440 students. Dinning sought to adopt a New Year’s resolution to limit the use of cell phones and personal electronics during school hours among the students and staff. In a letter to the BFHS community, he introduced the resolution in mid-December asking for support from parents and the community. And so far, it’s been a huge success. “We set goals at the beginning of each school year in the fall,” said Dinning. “We are a living entity here as a school, so I thought why not adopt a New Year’s resolution for the entire school?” At Bonners Ferry High School there are an increasing number of chromebooks available to students to check out for use, so there are a limited number of occasions when a student should need to access his or her phone for

school-related things. The policy has always been that students are only allowed to use their cell phones before or after school, during lunch or at a teacher’s request for anything that is related to academics, and that policy will continue. By adopting the resolution, Dinning said he hopes that the entire school—students and staff—will be more conscious of engaging with others around them and realizing what is socially appropriate. “We are all here together at the same time. And while we think phones can help us be more social, they are actually causing us to disengage with one another,” said Dinning. “When you are here, you need to be here.” When he does see a student on a cell phone, Dinning will approach them and say, “I hope you can support Bonners Ferry High School’s New Year’s resolution,” and the response is almost always a positive one from the students. In fact, Dinning said students are also making

him and his staff more accountable. “If a student sees me with my phone, they will also say they hope I can support the resolution as well,” said Dinning. As before, there are still consequences if a student is found using a cell phone for nonacademic reasons. The student has to turn his or her phone into the main office and serve one hour of detention before receiving it back. However, Dinning stresses that he would never put a student or parent in a situation where they cannot reach one another if necessary. “I’m aware that students need their phones for safety reasons,” he said. While the New Year’s resolution has only been in effect a short time, Dinning is confident it will continue to improve the academic focus of students and encourage students and staff to engage more with one another. “I’m really proud of all the students and staff for how they have supported this and have held one another, including me, accountable,” said Dinning.

Athletes of the Month sparking the school spirit

T

he Bonners Ferry High School cheerleading squad is a hard-working group of six young women, each of whom Coach Andria Hedrick is extremely proud. Hedrick, who has been coaching the squad since September, is assisted by Nicole Fitch and Kailee Cordle, all of whom were members of the graduating class of 2011. The squad is made up of Captain Katie Summerfield, Kaylee Worley, Kylie Underhill, Hailey Brooks, Isabella Sims and Nadia Fleck. “All of their skills and teamwork makes this team an amazing group of ladies,” said Coach Hedrick. The squad practices most weekdays with games held on both weekdays and weekends during the school year. “Practices are usually two to three hours and include a variety of material— choreography, performance dances, sideline cheers, performance cheers, stunting, tumbling, jumping, kicking, flexibility, strength training and team support,” said Hedrick, who adds that the team also makes posters, decorates lockers and handles game-day events and decorations. Since taking over the coaching position in September, Hedrick says the cheerleaders have accomplished amazing stunts in a very short time, exceeding any expectations Hedrick had. “They work hard, not only at practice but at home, too. For large events, such as Homecoming or Senior Night, the team choreographs performances for the crowd,” said Hedrick. The cheerleading team cheers for football, wrestling and basketball. In addition, the team cheers for at least one game or event of the other seasonal sports including volleyball, boys’ soccer, girls’ soccer and cross country. They also enjoy supporting the BFHS dance team at their school performances as well as the cheerleaders at Boundary County Middle School.

While the squad is highly visible at games, they also have a presence at other community events as well, participating in Badger Booster events such as the Homecoming Barbecue, town parades, and they are participating in the Bonners Ferry FFA and Community Partners Meals of Hope packaging event on February 4 at 5:30 pm at the middle school. “The cheerleaders are very active in other school activities such as BFHS Leadership Council, National Honor Society, FFA, Foreign Language Society and Honor Choir,” said Hedrick. “Through their busy schedules, they always find time to give back to the community!” The team is invited to a variety of competitions, most of which take place in February and March. This year they are attending the Prairie Classic on February 2 at Lakeland High School and the District III State Qualifier on February 23 at Coeur d’Alene High School. State

I

t is a program that reaches nearly 6 million youth and is present in all 50 states and 80 countries worldwide. And with the assistance of 3,500 professionals and approximately 500,000 volunteers, 4-H has changed the lives of many since it was first formed in 1902. 4-H is often thought of as an agricultural program, but the truth is it is much more. It is the largest youth organization in the world, and with a wide variety of programs from which to choose, 4-H provides countless opportunities for youth to have hands-on learning opportunities and become leaders in their communities. Present in rural, urban and suburban communities, 4-H addresses many of the issues the world is currently dealing with today including, but not limited to, global food security,

climate change, sustainable energy, childhood obesity and food safety. Not only that, but 4-H also has clubs and camps that offer many STEM (science, technology, engineering and mathematics) opportunities that include agriculture and animal sciences as well as robotics and computer science, just to name a few. According to Debbie Higgins, the University of Idaho Extension, Boundary County 4-H program coordinator, there were 243 students enrolled in 4-H last year. While the number of youth enrolled has dwindled since the 1980s, which Higgins said is expected, she did acknowledge that given the population of Boundary County, enrollments are going very well. There are many projects in which the youth can enroll, with some being more popular than others.

“Currently our market swine project is the largest (4-H program) in Boundary County with over 100 youth participating,” said Higgins. “Our shooting sports projects are very popular also. We have a new project we are starting also— ATV/Motorcycle.” 4-H in Boundary County is a year-round program with a lull during the months of November and December. “Leaders Council and Livestock Committees meet monthly, some organizational clubs meet monthly, and most project meetings happen spring through summer with the fair being the finalization of their projects,” said Higgins. With so many kids involved, there is always a need for volunteers. Currently, Boundary County 4-H has 45 volunteers, but there is always a need

for more. “We are currently in need of a fishing leader,” said Higgins of the most urgent spot to fill. Anyone ages 5 to 18, without regard to race, creed, gender, marital status, handicaps, disadvantages, economic or ethnic backgrounds, is eligible to join 4-H. For ages 5 through 7, they participate in the Cloverbuds, while 4-H participants who are 8 to 18 years of age can participate in all programs, including competitive activities and events. And for those who are over 18 with special needs, they may participate so long as they are enrolled in high school.

RELIEF LOCAL DENTIST TRAVELS FAR TO HELP THOSE IN PAIN BY COLIN ANDERSON

M

aking people feel better comes naturally to Hank Willis. The Bonners Ferry-based dentist is part of a long family lineage in the field of health care.

“My dad is a family practice and ER doctor, his dad was a doctor, and my great grandfather and great grandmother were all MDs,” explained Hank. Growing up around medical professionals, Hank experienced the many aspects of health care from a young age. One of those great experiences was having a fun dentist as a kid, something that inspired him to take a slightly different path into the medical field, becoming the first dentist in the family. “As a kid I realized that dentistry offered the best for me of the health-care world—helping get people out of pain, really being a part of people’s lives, a stable work day that’s conducive to family life, being closely involved in community and attentiveness to fine detail,” he said.

For many, a trip to the dentist is pretty low on the list of fun things you’d like to do on a Tuesday afternoon, but Dr. Willis enjoys changing people’s perspectives and showing people that dentistry isn’t always painful. And while the occasional cleaning, scraping or filling may come with slight discomfort for us, Hank has seen many people with far more painful predicaments than the occasional cavity. As part of his commitment to easing pain around the world, Dr. Willis has traveled all over the globe to help isolated and rural communities receive desperately needed dental care. In the past six years he’s visited: Baja, Mexico, Burundi in Central Africa, Haiti and most recently the Philippines. While each destination presented unique situations amongst the patients, it was some of the simple procedures that we take for granted

here at home that made an immediate impact on the quality of life of so many of his patients. “In the poorest of countries there’s so much need for just getting painful teeth out. People will stand in line all day long just to have a tooth pulled and get out of pain,” he said. On his last trip, Hank was able to bring along his two older children and have them work alongside him. Dr. Willis taught them how to assist, organize and sterilize the instruments, and help patients through the procedures. While learning some of the finer points of the field of dentistry, they were also exposed to living conditions outside of the United States which, he says, gave them a great perspective on the needs that are out there around the world. “We need to take time to focus on and see the needs of others around us. In many parts of the world people never get to see a dentist and barely eek out a survival on the most basic of resources.” Dr. Willis is a passionate cyclist and was also able to find a way to mix

in one of his favorite activities while raising funds that support mission work in Africa. In May of 2017 and 2018, Hank, along with 11 other riders, traveled to Rwanda for a ride that would cover 500 miles in just seven days. The group climbed more than 49,000 feet and, in the end, their trips raised over $100,000. “It was physically the hardest thing I’ve ever done but also in the top 10 events of my life,” said Hank. Back at home in Bonners Ferry you’ll find Dr. Willis treating smiles and making you less afraid of the dentist at his practice. You will also see him out and about supporting several local community organizations as well including the Mt. Hall School Auction, the playground at the fairgrounds, bidding at the 4-H/FFA Auction and donating to the Food Bank. He gives presentations at local schools and provides care to those in need in his own backyard as well. “One of the beautiful things about our community is that people know each other. I’ll have employees or friends who will come to me and say, ‘So and so is really in a tough situation and can’t afford the dentistry

that they need.’ Whenever possible I look for opportunities to serve our community and those in greatest need,” he said. Dentistry is an expensive business to run, so Dr. Willis has to carefully balance that situation but ends up giving away a lot of dental care to those who need it most. Dr. Willis’ travels have taken him to some of the more impoverished places on earth where things we deem basic like medical care and clean water are difficult to come by. While helping those in need has always been a part of his family’s history, these experiences only strengthen his determination to help relieve the pain of those who are suffering. “After seeing the great needs of so many people around the world, it is

clear that we truly have it easy here in the U.S. Millions and millions of people do not have the comforts that we have at home, and Jesus called us to serve 'the least of these.'" Having already touched so many lives from North Idaho to Mexico, the Caribbean, Asia and Africa, Dr. Willis’ mission of relieving pain from the suffering continues today. Even the simplest gestures can make a huge impact in the lives of others; something he hopes resonates with others who have a gift or talent they can share with those less fortunate. “I’ve been blessed with the ability to give of myself and my skills to those who need it most, not only in the poorest of countries but also here at home.”

E

very year approximately 790,000 Americans suffer a heart attack, and for 580,000 it is their primary or first time attack, while 210,000 occur in individuals who have a history of a prior attack. A heart attack, or myocardial infarction, occurs when a part of the heart does not receive the correct blood flow. Most cases of heart attack occur due to underlying coronary artery diseases. It is important to recognize the signs and symptoms of a heart attack so that medical treatment can be obtained, reduce the risk of damage and help prevent cardiac arrest. The more time that passes before restoring blood flow to the area, the greater the damage and risk for sudden cardiac arrest. Not everyone will have the same symptoms or the same severity of symptoms. Some may have no symptoms but may just experience sudden cardiac arrest. Symptoms of a heart attack may include chest pain or pressure with or without radiation to one or both arms, jaw pain, pain in the mid back, shortness of breath, dizziness, nausea, vomiting and feeling sweaty or clammy, and pale skin. If you, or someone else, is experiencing any of these symptoms, call 911! Getting medical treatment on the way to the victim is key for survival. In a rural area it is tempting to place the person in a vehicle and rush to the Emergency Room. It is much better and safer to call 911 and get medical treatment headed to the victim. Emergency medical personnel who respond can start treatments as soon as they arrive. They are equipped to perform an electrocardiogram to determine the heart's rhythm, start an intravenous line to administer medications, draw blood for laboratory testing and, most importantly, they carry an automated external defibrillator (AED) to use if needed to provide a shock to the heart. Calling 911 also alerts the team in the emergency department of the hospital that there is a chest pain call in progress.

If you witness a person with sudden cardiac arrest, immediately call 911 and then begin hands-only cardiopulmonary resuscitation (CPR). Place your hands in the center of the chest, push fast and hard and do not stop until help arrives. A good way to determine how fast is to think of the song "Staying Alive" and push to the beat. Hands-only CPR is CPR without rescue breaths, and it has been shown to be as effective as conventional CPR for sudden arrest at home or in the public. According to The American Heart Association 2016 statistics, nearly 46 percent of out-of-hospital cardiac arrest victims survived when bystander CPR was administered. Unfortunately, only about 45 percent of people in sudden cardiac arrest received bystander CPR. You may fear doing CPR incorrectly or injuring the victim, but please remember that the emergency is that the heart is not beating and the loss of the circulatory system. If in doubt, always call 911 and start CPR—you quite possibly can save a life! February is American Heart Health Month and the perfect time to learn your risk for heart disease and the steps to reduce them. Heart disease does not just occur in older adults, it can happen at any age. Some risk factors include high blood pressure, high blood cholesterol, being diabetic and smoking. The biggest part of heart health comes down to making healthy choices. Age and family history cannot be changed, but the good news is that modest changes to your diet and lifestyle can improve your heart health and lower your risk by up to 80 percent. Boundary Community Hospital has been designated as Level IV Trauma Center and is in the process of being designated as a Level II STEMI Center by the State of Idaho Time Sensitive Emergency Program.

t’s the moment women dream of from the time they are little girls—the perfect wedding. And while it was typically assumed those weddings would take place in a church, today couples are finding breathtaking venues among God’s own beautiful creations to begin their life together. Whether on a mountain top, on the shores of a body of water or in the fields of places such as a vineyard or in the middle of a forest, there are so many incredible places from which to choose when it comes to saying “I do”—especially in the Pacific Northwest. Kendall and Dereck Lang were both raised in North Idaho and are outdoor enthusiasts, so when it came time to plan their wedding, there was no question it would take place among the beauty of the place they call home. On the shores of Lake Pend Oreille in Sandpoint with the backdrop of the breathtaking mountain range, they invited their guests to share in a celebration that reflected the couple’s love of North Idaho. “You cannot go wrong getting married anywhere outdoors in Sandpoint,” said Kendall. “And with the beauty of nature surrounding you, you do not have to have a lot of the decorations you would have to do if it took place indoors. If you put too much into it, it takes away from the natural beauty of your surroundings.” Because weather can always be unpredictable, the couple rented tents as a backup plan, but in the end, it was a beautiful day. In Western Washington, you have an abundance of places from which to choose. Whether it is on the shores of Puget Sound, in a castle or in the beauty of the majestic soaring trees, there is something for everyone. In Port Townsend, the Manresa Castle Hotel, which dates back to 1892, is a popular venue for those wishing Victorian elegance and a romantic setting. With a picturesque rose garden or the Victorian

wood-paneled library as possible places to say “I do,” The Manresa Castle makes a bride’s dream of a storybook wedding come true. In Snohomish off Highway 2, you will find Twin Willow Gardens whose Cedar Chapel is a truly magical place to welcome friends and family to your special day. The beauty of the trees and the rustic feel of the outdoors provide an intimate setting. Maddie and Ryan Horton wed last summer and began their planning by researching venues throughout the Pacific Northwest. “I even started looking at venues on places like the website WeddingWire.com,” said Maddie. “I stumbled upon Settlers Creek. It didn't even have a photo by the name, but I liked the sound of it so I did a little more research, and the first photo I saw of it blew me away!” The photo showed an aerial shot of a beautiful dance floor with string lights and the silos lit up under a starry night sky. “It was like nothing I had ever seen before and was the perfect combination of Idaho and elegance. I wanted an outdoor setting that showcased the beauty of Idaho, but I didn't want a rustic feel. I wanted it to be romantic and elegant, which is really everything this venue encompassed. This was the only venue I toured, and I was instantly sold.” Although Maddie grew up in North Idaho, she and Ryan live in Southern California, so there were definite challenges to planning what could be considered a destination wedding in their case. “The biggest challenge was time management and preparedness. Lucky for me, I was one of those girls with wedding Pinterest boards well before I even had a boyfriend, so when it came time to choosing vendors I was able to do that pretty quickly,” she said. “My advice would be to choose your vendors as soon as possible and fully take advantage of your time when you are in the location of your wedding. I came back twice before arriving two weeks before the wedding. Those two trips I took I made sure to book every important thing I could think of. It helps to always be prepared when meeting with vendors; have photos of what you envision, and it makes the process go so much smoother.”

In addition to the beauty of the location, Maddie said she chose it because it was unique. In addition, the venue included a wedding planner which Maddie said made everything run smoothly. When planning a wedding in a different location from where you live, she said it was a huge benefit to have a full-service venue. “They provide food, they order the rentals, provide set up and take down,” said Maddie. “Everything is provided by them except cake, flowers, music, special decorations and any extra vendors you may want.” Like Kendall, Maddie made sure to have a backup plan in the event of poor weather. “We had not only a plan B but a plan C as well in case something else crazy were to happen,” she said. She encourages couples to trust their instincts when it comes to choosing the place to begin their happily ever after. If you are like she and Ryan, you will know when you have found the perfect spot. “Honestly, I had a huge list going of locations I thought could work and that I thought might be worth looking into. I thought that I would need to narrow them down when it came to it, but when I found Settlers Creek I knew immediately that I wanted it. We went, we saw, we booked.”

With amazing views, mountain tops can also provide a beautiful venue for the beginning of a couple’s life together. Schweitzer Mountain Resort in North Idaho is very popular, and it’s not just for summer weddings either. According to the sales staff, there are 20 to 25 weddings each year at the resort, with two to five of them being winter weddings, with some couples skiing down the mountain from the ceremony to the reception. “The majority of our couples get married on top of the mountain or in the village,” said Dig Chrismer, marketing manager for Schweitzer Mountain Resort, which was named as one of the Top 10 Most Scenic Ski Resorts in the World by USA Today in 2014. No matter where a couple chooses to get married, the important thing to remember is follow your heart. “When searching for the perfect place, be true to yourself. Get married in a place that is special to you and is comfortable. Make it a reflection of you,” advises Kendall. “And if it’s a place you are passionate about, your ideas for the rest will flow from there.”

Receptions can be formal or informal, appetizers or multi-course meals. No matter which way you go, there are some important subjects to consider when choosing the company that provides your meal.

BUFFET OR PLATED

CAN THEY WORK WITH SPECIALIZED DIETS? It might be important to have gluten-free, vegetarian or vegan options for your guests, so ask if these options are available. If the dinner is plated this might just be a few dishes, whereas buffet style would need to be one of the main dishes. You can also ask if they source their ingredients locally or if meals are previously frozen or prepared fresh. Be sure to ask if there is an additional charge for these options.

ver the past few years my wife and I have come to really appreciate traveling in the month of September. With summer vacations over, kids going back to school and tolerable weather around most of the country, people aren’t necessarily putting travel high on their list during this month. Residing in the Northwest and being far from pale blue and bathtub warm ocean waters, we are happy to take a beach vacation any time of year. If you do head to the southern United States, Mexico or the Caribbean this time of year, you are always rolling the dice as mid-August through the end of October is peak hurricane season. While that can certainly ruin a vacation, your chances of being stuck in a major storm are pretty miniscule and your chances of having prime beaches, easy reservations and calmer streets are all but a sure thing. This past September we decided to book a six-night trip to Cabo San Lucas, Mexico. Located on the very southern tip of the Baja Peninsula, this once small fishing village would be unrecognizable to those who visited some 30 years ago. The towns of Los Cabos and Cabo San Lucas are connected via “The Tourist Corridor,” where a staggering number of all-inclusive mega resorts reside. As our friendly cab driver pointed out, there were six new massive resort complexes currently under construction. As we traveled the near hour-long (and $70) ride from the International Airport to Downtown Cabo San Lucas, we were pleasantly surprised at how green and beautiful the surrounding landscape was. The area is very much a dessert but still quite colorful. The driver showed us where George Clooney’s oceanfront villa was (currently for sale) and some incredible golf courses where six-figure membership gets you through the front gate. Alas, these were not in our travel plans.

AS YOU WOULD EXPECT, SEAFOOD IS THE SPECIALTY IN MOST RESTAURANTS AND CAFÉS IN CABO. WITH HIGH HEAT DURING THE DAY, WE FOUND OURSELVES MOSTLY MUNCHING ON APPETIZERS AND FISH TACOS.

Many come to Cabo San Lucas for the all-inclusive hotels. Here you’ve already pre-paid for just about everything: room, food, drinks and entertainment. While I can very much understand a vacation in which you don’t have to plan anything, leave the pool or rarely take out your wallet (except to tip of course), we are much more into exploring new places, so our destination was an older condo complex set just a block back from the beach. When we talked with several Cabo veterans about going down in September, they all told us to push the trip off until October when the heat and humidity would both drop significantly. There is no sugar coating it; September is a hot and humid month for the Baja peninsula. With Hawaiian island-like weather most of the year, many locals actually leave during August and September to take their vacations away from the heat and humidity. With plane tickets and hotels 40 to 60 percent cheaper during these months, we decided the little bit of extra heat would be OK to deal with. The Beach The main attraction to most tropical vacations is the beach, and Playa el Medano is the center of all the daytime action in Cabo San Lucas. Playa el Medano stretches from the marina up along the entire bay and is the main safe swimmable beach in the area. The beachfront is littered with casual bars and restaurants, a few expensive all-inclusives and, as like the rest of Mexico, plenty of vendors. Dressed in all white

and constantly meandering up and down the beach, they are looking to sell you everything from hair braiding and henna tattoos to sombreros, jewelry and cigars. While it can be a little overwhelming at first, a simple “No thank you” or just ignoring their attention-grabbing pitch will often lead them to move on rather quickly. Vendors are not allowed inside the beachfront restaurants either, so as long as you aren’t in the first couple rows of beach-front seating, you’ll be left more at peace to take down your margarita or Dos Equis. Water sports are easy to arrange here with jet skis and parasailing easily rented right from the beach. A dip in the warm waters feels incredible after walking through the humid air. The seas are less tranquil in the fall, but you can still wade out about 20 to 30 yards with your feet on the bottom. Water taxis are running constantly to take visitors out to Lover’s Beach at El Arco, the area’s famous landmark. While still busy, there are no services here, so it’s a little less hectic than on Playa Medano, and seeing El Arco up close is also a memorable sight. The Food As you would expect, seafood is the specialty in most restaurants and cafés in Cabo. With high heat during the day, we found ourselves mostly munching on appetizers and fish tacos. We found Tacos Gardenias right behind our condo and ended up eating there several times. The fresh fish

The meal and a mbiance were incredible. ceviche and molcajete were incredible. Fresh fish or shrimp tacos were grilled or fried and came with a tray of about a dozen different sauces, salsas and garnishes to make an awesome and affordable lunch or latenight snack. Baja Brewing Company was started by a couple of friends from Colorado and now has three locations. We frequented the one atop the Cachet Beach Hotel roof just about every day. With so few tourists around, we were able to snag the tables with the best view, kick back and enjoy solid craft beers. As mentioned earlier, many locals will take off during the humid season, so a few of the more heralded restaurants were closed for a few weeks while the owners took their vacations. I would estimate this was only about 5 to 10 percent of the restaurants, and we were able to find plenty to eat everywhere we went. We splurged one evening and went to Los Tres Gallos, which focuses on locally sourced traditional Mexican fine dining. The open-air restaurant was dimly lit, and you feel like you are eating in a 200-year-old courtyard. The meal and ambiance were incredible.

Once the sun goes down the music goes up and loud beats pump into the streets as employees look to lure you into high-octane parties at places like The Giggling Marling, El Squid Roe and Mandala. The over-40 crowd often makes its way to Cabo Wabo in hopes of spotting owner Sammy Hagar or some of his buddies up on stage for an impromptu live set. We found a few of the smaller bars a bit more appealing like Happy Endings Cantina with its two beers and two shots for $5 daily promotion and Pochos with its open patio and views of the super yachts parked in the marina. While partying and beach going is always available, there is plenty more to do with a week in Cabo. Some of the best sport fishing in the world is found off its shores; there are horseback and ATV trips into the surrounding dessert; and a day trip up to the town of Todos Santos can give you a break from fast-paced Cabo to enjoy a peaceful and artsy community where you can also visit the Hotel California from the famed Eagles’ song.

The Nightlife

There is always a reason off-season travel is cheaper, but those willing to risk the potential for less than ideal conditions often come away with an incredible experience for a lot less than they would have otherwise paid.

Other than the beach, many come to Cabo for its renowned nightlife which is located around the marina and the streets directly behind it.

WHITE BEAN SHAKSHUKA WITH GOAT CHEESE Recipe & Photo Courtesy of Marina Gunn

INGREDIENTS • • • • • • • • • • • • • •

3 tbsp. olive oil 1 medium yellow onion, finely chopped 2 carrots, finely chopped kosher salt 4 cloves garlic, minced 1 tbsp. ground cumin 2 tsp. harissa 1/2 tsp. paprika 1 tbsp. tomato paste 1 can (28 oz.) crushed tomatoes 1 can white beans (cannellini or great northern) 4 large eggs crumbled goat cheese chopped fresh flat-leaf parsley

METHOD • In a large skillet with high sides, heat the olive oil over medium heat. Add the onion, carrots and ½ tsp. salt. Stir and cook for 10-12 minutes until onions are transparent. • Add the garlic, cumin, harissa, paprika, a pinch of salt and cook about 2 minutes. Stir in the tomato paste, crushed tomatoes and white beans. • With a wooden spoon, create four wells and crack in your eggs. Cover and simmer until the whites are cooked but the yolks are still runny (5-6 minutes). Sprinkle salt and top with goat cheese and parsley and serve.

Workshops promote creativity and community BY PATTY HUTCHENS

In this busy world, it is often difficult to carve out time for ourselves. Finding time to relax, connect with others and become inspired is something many find challenging. Now there is wonderful opportunity to do just that. Alison Henslee is the owner of The Creative Soul Collective, a platform that seeks to foster individuals’ creativity while also drawing together members of the community through workshops and classes as well as other fun events. The Creative Soul Collective recently hosted a vision board workshop on “Mapping Your Best Life,” which helped those in attendance to create a beautiful vision board as a beautiful reminder of their intentions for 2019. On February 22 from 5:30 to 9:30pm and February 24 from 10am to 2pm, join Alison for her workshop titled “Love the Layers of You” which will consist of creating beautiful collages while creating and realizing self-love. The March “Spring Forth” workshop will take place on March 29 from 5:30 to 9:30pm and March 31 from 10am to 2pm and will focus on painting and planting ideas for this spring! The good news is that these workshops are open to everyone, whether you consider yourself artistic or not. “This is about getting in touch with your creative side and fostering community amongst women,” said Alison. “There is absolutely no skill needed. We’re all about having fun!” The cost for each workshop is $40 which includes instructions, conversation, supplies, food, drinks, laughter and inspiration!
