Often, we take for granted the high price that these men and women pay so that we continue to be and remain one of the truly greatest countries in the world. The Fourth of July allowed us time to sit back and reflect on how fortunate we are to live in a country where we are free to express religious beliefs and are blessed with an abundance of opportunities. But don’t stop now. Make it a summer to celebrate and extend the patriotic feeling beyond just the Fourth of July. Offer prayers of gratitude for the blessings we have and for those first responders and military who serve our country and communities. Celebrate not only the joy that stems from the independence and freedom with which we are blessed, but celebrate the love of family and friends. There is still a lot of summer left. Plan gettogethers with friends, invite them for dinner or a day at the beach. Reconnect with people with whom you have lost touch. And while you celebrate, remember to give thanks that you live in a country that is one nation, under God, indivisible, with liberty and justice for all.

A Community Tradition Boundary County Fair offers something for everyone By Patty Hutchens
BETWEEN THE YEARS 1900 AND 1920, the population of Bonners Ferry grew exponentially from 349 residents to 1,236. The town became the center of a lumbering and farming community, and today the population is estimated to be 2,500. We are a close-knit, friendly community and one that likes to celebrate our heritage and the industries that have been integral to our history. For nearly 100 years, the Boundary County Fair has been a tradition for residents of North Idaho. Beginning in 1920, the fair has been a place for community members to gather and share all that is so wonderful about living here. And this year will be no different. Taking place August 16 through August 19, there will be many opportunities for all ages to enjoy this year’s fair. This year’s theme is “What’s Cooking at the Boundary County Fair.” “The theme for this year was submitted by Pat Dinning, and the artwork was by Gerrie Wood,” said Fair Administrator Paula Burt. Anyone can submit an idea or artwork for the upcoming fair by October. The fair board then votes on which one will be used for the following year. The theme will be displayed throughout the different areas, along with a coloring contest open to all ages and the kids’ recipe contest and award for the best-decorated cake reflecting the theme. Those involved with the fair, who include board members Chairman Bert Wood, Vice-Chairman Ken Goggia, members Glenda Poston, Gayle Alexander and Craig Kelson, Fair Administrator Paula Burt, Administrative Assistant Linda Cromwell and Maintenance Supervisor Donnie Plato, all work hard throughout the year to make sure this event is the best possible experience for everyone. And the Boundary County Fair is not only a fun tradition for the

community but also for visitors. Because admission to the fair is free, tracking the number of attendees is difficult, however, they know they have reached beyond the community when many travelers stop in and tell them how much they enjoy our small county fair and compliment the staff and board on how much they enjoy the traditional county fair. Not only is the Boundary County Fair successful due to the number of people who attend, but the backing it receives from countless people throughout North Idaho plays a large factor. “We have great support from our local businesses and community members. The fair would not be possible without everyone’s contributions. We appreciate everyone that supports us,” said Burt. According to the board, the biggest attraction throughout the four-day event is typically Family Fun Night, which is put on by 4-H and takes place on Saturday. It is an evening of family fun and entertainment for all ages that takes place in the outdoor arena followed by a family friendly dance in the indoor arena. “The livestock auction that takes place on Friday night of the fair also draws a large number of participants. 4-H and FFA (Future Farmers of America) participants have the opportunity to auction off their animals—rabbits, chickens, goats, sheep, pigs and steer,” said Burt. “We also have a parade on Saturday at noon.” Another big attraction that all ages enjoy watching is the lumberjack exhibition, which takes place each day.

One of the great things about the fair is the extent to which kids are involved. There are more than 200 4-H and FFA kids involved, showing animals, exhibiting a cooking or sewing project, participating in archery, and displaying jewelry and other projects they have worked on throughout the year. There are also open class exhibits for the youth to enter.

Burt shared that the fair royalty is open to all 4-H and FFA students ages 15 through 18. Applications are taken each spring and royalty is crowned during the opening ceremonies. The highest scoring king and queen each receive a $500 scholarship from the Boundary County Fair Board. “We also have a Little Princess and Prince contest. This is for children ages 3 through 10 years old and chosen through a random drawing then announced at opening ceremonies,” said Burt. “Those entries are available August 1 and due by August 16. Festivities will begin on Wednesday with numerous activities throughout the day and culminating with the opening ceremonies that will take place at 6:30pm at the indoor arena. On Thursday, the food booths open at 7am to kick off a day that includes the lumberjack show, baking contests, cooking demonstrations, 4-H and FFA judging and showing and much more. Friday offers another opportunity to see the lumberjack show and chainsaw carving as well as a monster cookie contest and a paper airplane contest. Mark your calendar for 7pm that evening, as you won’t want to miss the market animal sale at the indoor arena. Buyer numbers will be available at sale time. On Saturday, the final day of the fair, there will be a variety of fun events including a watermelon eating contest, a soccer challenge contest, the parade and Family Fun Night.

WHAT YOU NEED TO KNOW
MY PARENTS ARE REMODELING their home, and not having done this before, they needed some guidance with what they should be doing and when. This made me think that most of us in the industry take for granted that you all know what you are supposed to be doing, and apparently that is not always the case! In a perfect world, your contractor would provide you with a list of items that you are responsible for picking out. However, most of them work with various trades and will send you into that store to pick out your materials, so that list is not necessary. They do this because we work with these contractors on a continual basis. This means we know their budgets, we know their expectations in product quality, and we know what they need us to do. For example, when a homeowner is sent in to our showroom, we help them select cabinets, countertops, doors, windows, trim, hardware, flooring materials, shower doors and window coverings. These are all items that require lead times and installation coordination with the builder.

It makes it pretty easy for you to walk into a showroom, select what you like and then be able to walk out. On the back end of that, we work diligently with your contractor to come up with a design, provide drawings and budgets, the ordering process, receive product and make sure it’s the correct color and wasn’t damaged in shipping. We then coordinate delivery and even installation by our professionals. However, if you need help with this process or don’t have a contractor who utilizes trade services like this, you may need assistance on what you need to be doing. You need to ask specific questions when you are first meeting with a contractor or potential contractor. Ask about timeframe, such as when the contractor could start, how long the anticipated work will take, what you should expect during construction, and then most importantly what decisions you are responsible for making along the way. Make a clear distinction of what you need to be doing versus what your contractor will be doing. In most new construction or remodels, you will be responsible for picking out the following:
• Sinks and faucets – material, style, color • Flooring – tile, vinyl, hardwood, carpet • Tile – showers, flooring, backsplash • Trim - profile, species, color • Interior and exterior doors • Finish colors of hardware for hinges, etc. • Windows – color, operating style, material • Wall texture and paint color • Window coverings – style, fabric, operating systems • Shower doors – glass selection, operating system, frame type • Any glass selections, such as mirrors or decorative cabinet glass • Door and cabinet hardware – finish, material, style • Light fixtures – finish, style The contractor will then coordinate correct sizes, rough-ins and installation of these items, and most offer their opinion when you ask, but ultimately, it’s your house and your decision on the finishes you put in it. If you need help coordinating these finishes, you can hire an interior designer or gather a group of your friends for a second opinion.

Farmers Market offers more than just a shopping experience. By Patty Hutchens.
FOR NEARLY 40 YEARS, the Bonners Ferry Farmers Market has provided a wonderful tradition for both locals and vendors during the summer months. It is one of the oldest farmers markets in Idaho, with an average of 30 vendors each market day who offer everything from salad mix, herbal vinegars and spices, handmade soaps, handspun yarn, basketry, jewelry, fine art, bakery goods, children’s clothing, pottery, flowers and even lawn furniture. But the Farmers Market, which was originally located at the Boundary County Fairgrounds before moving to its current location at the City Parking Lot, is more than a place for vendors to sell their goods; it has allowed some businesses to expand. According to Board Chair Gail Cathcart, some of the vegetable vendors have gone on to do deliveries as well. And for those who find themselves missing the market atmosphere and crafts during the off season, the Farmers Market also hosts a Holiday

Market each November offering an opportunity to purchase holiday gifts by local artisans and winter produce, something they have been doing since 2004. ALPINE FAMILY MEDICINE will open its doors to the Sandpoint community August 1, 2017. Katie Sweeney, a board-certified family nurse practitioner, is bringing more than a decade of health-care experience to her patients. Having served the communities of Sandpoint and Bonners Ferry for the last six years, she is now ready to provide her patients with a new medical home. Born and raised in Sandpoint, Sweeney’s parents, grandparents and great grandparents are Sandpoint natives, and her husband was born and raised in Bonners Ferry. They are true locals in the community. The building that houses Alpine Family Medicine was built on Sweeney’s great grandparents’ property— where they raised their 13 children—many years ago. Her grandfather, Phil Bricker, ran the Tam-O-Shanter most of his life until his recent retirement, and her mother, Anna Phillips, has been a registered nurse at Bonner General Health for the last 22 years and has been a role model for Sweeney all of her life. Having attended eight years of college, Sweeney has a unique nursing background and has completed advanced education to prepare her in her role as a primary care provider. Her focus in not only on the treatment of disease but partnering with her patients and actively involving them in decision making that optimizes their overall health, taking a preventative approach to disease management. She and her staff believe in listening and spending time with their patients to achieve the very best outcome as well as maintaining cost-effective health-care options. At Alpine Family Medicine, they want to make it as simple as possible for patients by partnering together with them and taking the role as their health-care partner in the medical home. “Ideally, we want our clinic to function as the ‘home town’ medical clinic; the way our health care used to be,” Sweeney says. “Communication and follow-up is very important and a central goal for Alpine Family Medicine.” The clinic accepts most major insurance companies, as well as Medicare and Medicaid, and welcomes men, women and children. Services that are offered include management of acute and chronic illnesses, mental health,
wellness exams for the entire family as well as sports physicals and in-office surgical procedures. They specialize in women’s health care, offering a full spectrum of reproductive health care and services including IUDs, Nexplanon (implantable birth control) and birth-control management, though they do not provide maternity services. They are fully equipped to manage most chronic illnesses including heart disease, diabetes, asthma, COPD, abnormal menstrual symptoms as well as abnormal Pap-smear management, menopause, depression, anxiety, Coumadin management and more. Services also include in-house testing and in-house lab draws for blood work. They strive to meet acute care needs—including but not limited to coughs, colds, sinus symptoms, allergies, urinary symptoms, sprains or sports injuries and laceration—in a timely manner; most sameday appointments. They can perform in-office surgical procedures such as mole removal, toenail management and removal, laceration repair, joint injections, endometrial biopsy and abscess drainage and more. Sweeney is grateful for the opportunity to better serve the Sandpoint and Bonners Ferry communities and attributes the achievement of opening her own practice to those she most cares about. “The support from my family, friends and patients while planning and implementing my business plan has been plentiful. My husband and two daughters have helped with the office layout as well as my family,” she says. “My patients have been my central motivating factor to drive forward with opening this clinic. FINDING THE FALLS Easy access to spectacular waterfalls. By Colin Anderson
WITH SEEMINGLY COUNTLESS snowpacked peaks from Lake Pend Oreille to the Canadian border, it’s no wonder there are so many creeks, rivers and lakes, large and small, that dot the area. All that snowmelt has to end up somewhere, and as the snow melts season after season, the landscape has given way to some very impressive waterfalls. While you’re not going to find anything comparable to Niagara around these parts, what you will find are some very impressive falls amidst incredible backdrops, many of which require just a short hike to see up close. Let’s take a look at some of the more popular destinations around Bonners Ferry. Copper Falls Copper Falls is the furthest out on our list, being located just a few miles southeast of Eastport and the Canadian border. Copper Creek is located inside the Idaho Panhandle National Forest, and you’ll find the falls after an approximately 1/3-mile hike. It’s a bit steep in parts, but most kids and adults should do just fine. The falls are about a 160-foot drop, and despite a smaller volume of water than others in the area, they are a truly incredible sight. Camping is also available in the area for those who want to stay awhile.
While you’re not going to find anything comparable to Niagara around these parts, what you will find are some very impressive falls amidst incredible backdrops ... Smith Creek Falls Also near the border but further to the west is Smith Creek Falls. If you don’t want to do any hiking, this is the spot for you. Take 95 North to Highway One, then head onto Copeland Road and Westside Road. The drive in itself is very scenic. As the falls are on private property, there is a designated viewing area along the country road. The falls drop about 60 feet. Moyie Falls Moyie is one of the more well-known falls across Idaho and the greater Northwest. Its location just a ½ mile off of Highway 2 makes it incredibly easy to access, and it carries some of

the highest volumes of water year round. The tiered waterfall drops around 100 feet from the top with the lower levels dropping about 20 to 40 feet. Like most, spring runoff is the best time to see these falls at their peak, though water will be running here all year long. Myrtle Creek Falls Located across from the Visitors Center inside the Kootenai National Wildlife Refuge, this cool waterfall just became a lot more accessible. A newly installed American’s with Disabilities (ADA) approved trail allows an easy path in for those needing assistance getting around. The old ¼-mile trail is also still available. The viewing area is flat, and there’s room for plenty of people to snap photos. The narrow canyon cascades down into a pool near the top and chutes out another impressive drop as the creek descends. Across the panhandle you will find dozens more falls whether along the roadside or longer hike in. Permaculture is a Natural Fit | By Alison Henslee
NEW TREND ON THE FARM AGRICULTURE HAS BEEN A MAINSTAY IN BOUNDARY COUNTY for most of the past century. With fertile valley soil and farmable benches, incomes and food supplies have grown abundantly for generations. But there’s an agricultural trend that’s taking root in North Idaho with spreading interest, known as permaculture. Permaculture, by definition, is the development of agricultural ecosystems intended to be sustainable and self sufficient. The word, coined in the early 1970s by pioneers of the field, Bill Mollison and David Holgrem, is the combination of “permanent” and “agriculture.” Mollison describes it further: “Permaculture is a philosophy of working with, rather than against nature; of protracted and thoughtful observation rather than protracted and thoughtless labour; and of looking at plants and animals in all their functions, rather than treating any area as a single-product system.” In a county full of beautiful nature, permaculture could be viewed as a natural fit. For some growers, it’s a wide-open field to play in and learn from. Two local enthusiasts, Casimir Holeski and Josh Thomas, started gardening to provide healthy, affordable organic food for themselves and their growing families. While researching to expand their knowledge, they both came across permaculture, and after determining how well it fit their needs and lifestyle, turned it into rapidly evolving careers. Josh earned his permaculture design certificate from the Permaculture Research Institute, founded by another pioneer, Geoff Lawton. Josh and his wife, Carolyn, own The Homesteading Family, their story of a holistic lifestyle with an online presence (HomesteadingFamily.com), including a blog, Facebook page, Instagram and an ongoing series of YouTube tutorial videos. Josh runs his own permaculture design and consulting business, working locally, nationally and internationally; he traveled to Africa recently to design a project there. As the owner of Infinity Matrix Permaculture Nursery, Casimir keeps his focus local, working on a variety

He is the founder of the Boundary County Fruit and Nut Exchange and the Boundary County Orchard Reforestation Project, both intent on reestablishing and preserving historical trees still growing around the county, an interest shared with other enthusiasts. Casimir feels that permaculture is more than an agricultural term but part of how he lives his life throughout every aspect. He believes that whatever he grows, including his information and experience base, is not for his own benefit or financial gain but to be shared abundantly. Casimir has Facebook pages for all three entities for anyone wanting more information about what he does. Permaculture begins with a ridiculously easy step, per Josh: “Do nothing.” Stopping to observe the land before beginning your project will lead to a deeper understanding of where to start. Watching how the sun and shadows move across the ground throughout the day assist with planting according to plant’s needs or preferences. Looking at natural water distribution is useful for setting up water storage and planning growing areas. Paying attention to growing structure helps recognize the best places to plant.
Don’t be afraid to experiment. Experimenting with permaculture is crucial to learning. Josh found this out when an innovative growing hoop, planted with pole beans to provide shade for cabbages that don’t thrive in hotter weather, also inadvertently provided protection from the yearly onslaught of flea beetles. The pole bean canopy hid the cabbages, and they finished the season with better quality and less bug damage. Also watch nature for cues to handle problems. Casimir noticed that a tent caterpillar infestation in his first orchard was being removed by a swarm of hornets; something he confirmed by researching online. Hornets attack the caterpillars and use them to feed their young, eliminating the need for sprays and letting nature work with itself. Hornet nests near buildings are removed by spraying them with water, just as

After determining how nature works, Casimir and Josh suggest laying out growing spaces known as zones. These zones range from one to five with higher maintenance plants that need careful tending being closer to the house, spreading out to hardier and more sustainable vegetables, berry patches, orchards, fields, woodlots and wilderness areas.
Then comes the fun part: Get busy! Try new layout ideas, practice companion or succession planting, utilize whatever possible with mindfulness of how it can protect or enrich the soil. Even weeds are beneficial as moisture-retaining ground cover while small; later, pull and use as mulch and to put organic matter back into the soil. Make compost with scraps and trimmings. Take extra care of what is sown and reap the benefits. Even though they’re leasing their farm, Josh and Carolyn have carefully plotted out adequate areas in the existing landscape to provide for their family of 10. By using every space effectively, nurturing existing fruit and nut trees and raising their own livestock, Josh estimates that 75 percent of their food comes from the property.

rain washes them away in the wild. Take advantage of an abundance of knowledge available locally and online. Josh and Casimir will gladly give advice; sharing to help others learn is a strong part of permaculture philosophy. Casimir recently hosted a panel discussion about exploring permaculture at the Extension Office, along with Josh and fellow enthusiast, Sean Mitzel of Cocolalla, and both men are open to teaching more. Kate Painter, University of Idaho’s agricultural extension educator in Bonners Ferry, believes permaculture fits well into categories the university supports as part of its ongoing work serving small farms and food systems locally. Along the current services, such as the Master Gardener program and plant and insect clinics, Kate hopes to offer more permaculture classes to help people learn how it can work for them. She also encourages anyone who is currently experimenting with permaculture to contact her if they’d like to teach a class. There’s a hands-on way to learn about permaculture-volunteering with the Boundary Community Hospital Food Forest, a project organized and co-developed by Casimir and assisted by Josh and Sean. The project includes reestablishing historical fruit trees on the vacant lot next to the hospital, along with creating a sustainable food garden for hospital residents and staff, with a working classroom, living agricultural museum and community space. Visioning for Boundary County’s permaculture future includes a local cooperative and marketplace to enable year-round income possibilities for farmers, producers and artisans. Marketing items online could be a viable option of that. Another goal is to expand permaculture with educational communityuniting opportunities, including ways to keep youth employed and gain skills for their own small-scale permaculture farms. While Boundary County has traditionally been blessed with agricultural abundance, there’s always room for learning and trying new methods to enhance what nature has already given. People like Casimir and Josh hope to spread permaculture roots deep, teaching others to share their passion and create viable, self-sufficient and sustainable ecosystems here that will last for generations to come.

WAR, NASA AND 3D PRINTING BOUNDARY COUNTY LIBRARY IS ANYTHING BUT AVERAGE

LIKE SEEMINGLY EVERY OTHER INDUSTRY, libraries across the country have to adapt and change to meet the demands of an ever more digital public. While some have stayed steadfast in keeping book rentals at the forefront, others are embracing new technologies for a more interactive library experience. The Boundary County Library is most definitely the latter. “Our library is vibrant with lots of life,” explained Director Craig Anderson. “There are still quiet corners where you can read and focus, but there is so much going on here from our reading programs, kids' story time, arts and crafts, and others just hanging out and visiting.” Anderson took over the director position this past October from longtime director and now retiree Sandy Ashworth. “There’s no way I could ever fill Sandy’s shoes, so I’m making my own shoes and trying to fill those,” said Anderson. He is committed to continuing Sandy’s big dreams for the library, and others have already noticed. After attending his first Public Library Directors’ Summit this past March in Boise, he received a phone call a short time later that the Boundary County Library was being nominated for the National Small Town Library of the Year by Library Eternal Magazine. Meridian Library director, Gretchen Casserotti, was impressed with the vast number of activities, programs and technology available at Boundary County Library and submitted the nomination. She and Anderson have been collecting data and outlining additional information for the judges and will submit their packet shortly with a

national winner likely being selected by late August. “Win or lose, just being nominated is an incredible honor,” said Anderson. One particular section of the library that often catches the eye of both visitors and librarians across the country is the presence of a Fab Lab. Fab Labs were the idea of MIT professor Dr. Neil Gershenfeld and were created as a way for community members to share upto-date technology to help solve problems as well as create and discover. “You can learn how to make anything from art pieces to rapid prototyping and possibly turn your invention into a business,” said Anderson. The Fab Lab is located in the basement, which undertook a remodel to make sure all the equipment would fit. Inside you will find a 3D printer, laser cutter, milling machine and a CNC machine. While there are other Fab Labs in the area such as Sandpoint and Coeur d’Alene, Anderson believes this is the only lab in North Idaho that is library based and affiliated with the Fab Foundation. The foundation connects rural communities like Boundary County with others that have labs so they can build connections and brainstorm amongst each other. While there’s no shortage
of Internet in and around Bonners Ferry, accessing the technology you read about online is much more difficult to find. The Fab Lab is one of the few places you can experience these things hands on. The Boundary County Library also features free access to Linda.com and Microsoft Academy. These programs feature literally hundreds of courses that you can take and become certified in emerging technology. Access is expensive at home, but you can sign up with a free account at the library; a great option for those looking to get a jump start on an education or parents who don’t have time to attend full- or part-time college. Another unique setup is the library’s Polycom system. Through a big-screen TV and live camera feeds, the library is connected to places like the Alaska Zoo, Toledo Zoo and even NASA. A couple times each month the library hosts discussions which can range on everything from asking NASA scientists what it’s like living in space, to seeing and learning more about wolf behavior from biologists. Anderson said the recent wolf discussion
went very well with questions coming from all ages and visitors being very respectful to one another despite the often polarizing topic. For upcoming discussions through the Polycom system, you can check out the big board when you walk into the library or see the schedule on the library website and social media channels. On July 29, the library will be holding a celebration of “Hobbit” and “Lord of the Rings” author J.R.R. Tolkien. The local chapter of the Society for Creative Anachronism (SCA) will be dressing up in medieval attire and putting on metal working, blacksmithing and chainworking demonstrations. There will likely be battle demonstrations as well, similar to what you would find in the pages of “Lord of the Rings.” Taking a note from other libraries around the region, the Boundary County Library is now also holding monthly Nerf Wars. Kids can bring their own Nerf guns, or thanks to a generous donation from a library employee, can borrow one from the library and do battle in the adjacent park, capture-the-flag style. “Our first Nerf War had 16 kids show up, and

we’re expecting more as we continue,” said Anderson. While not official yet, the idea of bringing the Nerf war inside the library in the colder months is gaining steam, and he wouldn’t be surprised to see that become a reality soon. Having kids running around a library firing Nerf weapons was probably something that previous generations would have never thought they would see. While events like these break from the traditional ultra-quiet, readingonly environment, they are helping keep kids engaged and looking forward to going to the library, and it takes a staff dedicated to a unique environment to make it all come together. “Without the interaction of our staff

and patrons, and the relationship building they do, none of this would be possible,” said Anderson. Whether it’s story time with the kids, live chatting with animal experts across the country or turning your idea into reality with the latest technology, the Boundary County Library offers an experience like few others in the country. It’s entirely possible that the next great invention is being cooked up in the Fab Lab right now at the same time children are discovering a love for the written word. And if books are still your thing, don’t worry; there are plenty of those to be found as well.

This is common slang for a condition called joint hypermobility or joint laxity, and it simply means that someone is able to move their joints farther than most people can; and in some children (and adults) this condition may be the cause of joint pain.

et me start by saying, on any given day, you can cook like a chef.
I am a chef. I am a husband and father. I am an American worker. At home we cut coupons and plan family meals. We look for the about-to-be-out-of-date meat deals at the grocery store because we know that everything is fine and it’s fill the freezer time. We do the enormous once-a-month pay day “it’s time to load the SUV and maybe get some gas credits at the local mega outlet where everything comes in tubs, eight packs or sacks that you actually, for once, do need help out to the car with, yes and thank you.” In our family repertoire, we have the good ol’ standards that get us through things like soccer practice, swim class, school functions or the not so occasional “dad has to work at the restaurant late tonight” type situations. This is our modern family life.

Now … fast forward, or back, to that situation, chef or not, where you have opened, closed and re-opened the refrigerator door at least 500 times, staring at your depleting inventory wondering, “What am I going to do for dinner tonight, to … to … WOW everyone? To not have the peanut gallery basically Yelp you into another chili-mac-a-tuna-saurus monstrosity that ends up more in the disposal than in their little Siskel and Ebert stomachs. I’m here to help. You have enough “stuff ” in your arsenal at all times to make amazing meals, but you forget your inventory. And I do too. Here is a personal example of our weekly family dinner that I have not yet organized. In the tall, cold rectangle box that houses random items, I found: parts of a beautifully cooked and left-to-die chicken, a wilting red pepper that was probably supposed to be the star of some kind of unknown greatness, an onion that is starting to grow and some horrible winter tomatoes that should not have been in refrigeration in the first place—or even ever grown for that matter—but there they are. Oh … and a lime. I keep those around because I enjoy limes. By limes, I mean tequila.

So here is what I did in a recipe format. Oven cranked to 500°F. Cut tomatoes in half, place on a pan and put in oven until blackened. Cut open and remove all seeds and ribs (white-ish part) of the red pepper and cut it onto strips like french fries. Cut the onion in the same manner. (We call that cut julienne, cool to know, but doesn’t change the flavor.) Throw them into a medium hot cast-iron pan with a little butter or oil until

they are soft. I found some random things in the pantry cabinet to complete this gourmet meal. While the peppers and onions are wilting away, start cooking some white rice. To the cast-iron pan, add garlic and chili powder (add two tablespoons of tomato paste if you have it). Blend blackened tomatoes in blender or food processor and add to the pan. Shred chicken and add that. Simmer and reduce until rich and saucy. Squeeze in lime juice and salt to taste. On a plate, place rice to one side, ladle your culinary magic over half of the rice allowing it to spill onto the plate and garnish with cheese, tortillas, cilantro and lime wedge. (I didn’t have these last items but hey, it was still good!)

There are some basic items to keep around the kitchen that will allow you to create meals at a moment’s notice; things like potatoes, rice, garlic, soy sauce and chili powder. I like to keep fennel seeds. If you quickly toast them in a pan you can take breakfast potatoes to a whole new level. Here is a basic recipe for a side dish that will transform your dinner table into a restaurant. • 3 large russet potatoes baked and cooled just enough to be able to handle them. • 1.5-ish cups of flour • 1 egg • 2 teaspoons salt Peel the potatoes and run them through a ricer (food mill). Beat egg and salt together. On a cutting board, spread out potatoes and mix in egg. Work in flour and knead with your hands adding flour until you have a dough-like consistency. This should be about three minutes. With your hands, roll out ropes that are about a half-inch thick. Cut ropes into one-inch sections. Slightly press an indentation with your thumb into each piece. In a pot of lightly boiling salted water, drop in gnocchi—believe it or not, that’s what you just made—a few at a time. They are done when they float to the top. In a hot pan, add a quarter stick of butter. Let it brown a little. Add gnocchi and sauté until lightly browned. Add freshly chopped sage, salt and pepper to taste. Finish with parmesan cheese. This is an easy and great side dish to any meal that will turn basic things like roasted chicken with sautéed zucchini into a plate you would see in your favorite restaurant. Try your gnocchi with a cream sauce or a marinara to mix things up.

Nk’mip Cellars: Canada’s First AboriginalOwned Winery One of Nk’mip’s most celebrated accomplishments is its winery, which is run in partnership with wine producer Vincor Canada. Although the onsite vineyard is small, (24 acres), the Band’s success in creating award-winning vintages from its 243-acre vineyard on the outskirts of Osoyoos has helped to give Canada’s first Aboriginal-owned winery international acclaim.

hen Canadians want to experience arid sunny weather, they head for British Columbia’s Okanagan Valley, a 125-long crevasse of shimmering lakes, rolling pasturelands and dramatic vistas. Vineyards drape themselves across gentle hillsides, tucked into imposing mountainsides of forests and sagebrush. Peach, apple and cherry orchards, once the agricultural “fruit basket” of BC, nestle small hillsides with fruit stands at every turn. What was once a formidable “desert” of rattlesnakes, small cacti and unbroken landscapes now serves as Western Canada’s favorite summer getaway. The southern tip of this oasis is home to Canada’s “pocket desert,” a 24-mile strip of dramatic rock faces and gently sloping hills of sparse forests and sagebrush terrain that frames the town of Osoyoos (Oh-soo-yoos). It’s also home to the Southern Okanagan’s most unusual travel destination: Nk’mip Resort. Tucked into the eastern hillsides that overlook Canada’s warmest freshwater lake, the resort was developed by the Osoyoos Indian Band
in the 1990s, and in recent years has become a model example of community ingenuity and spirit. The resort, which is designed to meet the vacation interests of just about every traveler, features luxury accommodations, an award-winning winery, an RV park, an Aboriginal cultural center and a golf course with dramatic views. But it’s also garnered international attention for its success in educating visitors about Native Canadian history through displays, interactive attractions and opportunities to learn about and appreciate the Osoyoos Indian Band’s history and culture. The resort was officially launched in 1998 under the leadership of Chief Clarence Louie, who believed that his community’s economic challenges could be overcome with careful planning and investment. Like many of Canada’s Aboriginal communities, the Osoyoos Indian Band had faced poverty and unemployment for decades. It was also hampered by restrictive federal laws that prohibited Aboriginal communities from mortgaging their own land on reserves, so coming up with ways to create jobs and sustain economic development was

Nk’mip RV Park The Nk’mip RV Park, set on the shores of Lake Osoyoos, has been around for decades, a hidden secret dating back to when Osoyoos was still a small village and RVing in Arizonalike summer weather was an unheard of novelty in Canada. “The RV Park has been around since the 1960s,” said Katrina Baptiste, the RV Park and Campground’s general manager. But it was several decades before the owners realized they had a real gem that was worth expanding. “[The Band] really started to develop [the RV park] back in ‘97,” said Baptiste. One of its additions was a “snowbird-friendly” area for winter RVers there for the colder months, close to clubhouses and a pool. “There are some people who have been with us for 12 or 13 years—every summer. It’s become their summer vacation,” and those who return each year often bring their families and friends, building a yearly cadre of regular RVers. Today, the park features 389 RV and camping sites, including more than 100 sites near the lakeshore. A snack bar is open in the summer, and a pool and numerous walking trails are available year round. Spirit Ridge For many, it’s Nk’mip’s Southwestern-style luxury accommodations that make the resort a success. Crowning the top of the hillside and overlooking Nk’mip’s vineyards is Spirit Ridge Vineyard Resort & Spa, a tasteful
collection of both short-term and long-term accommodations. Guests have access to a variety of amenities, including a spa, restaurants, riding stables and an onsite golf course. They also have the option to purchase a residence that offers them the same quiet ambiance and stunning views, yet is set apart from Osoyoos’ busy seasonal attractions. Nk’mip Desert Cultural Centre One of the Band’s goals is to protect the last vestiges of the pocket desert and its delicate ecology. One way it is doing that is by educating visitors about the culture and history of the area. Scientists continue to debate whether Osoyoos is really surrounded by a desert. Some maintain that the area’s 300 millimeters of rain and snow disqualifies that classification. Yet others point to the area’s desert-friendly wildlife and unique terrain as proof. So researchers now call this arid pocket a shrubsteppe: a name that is less attractive, but more accurate in explaining why Nk’mip’s famous winery, for example, is so successful in carving a niche out of a desert-like environment that isn’t really a desert: it’s dry, hot (90 to 104 F) in the summer and often has the ambiance of Arizona’s or Western Washington’s summerbaked resorts. That dry climate also has helped to define the customs and way of life of the local Aboriginal community. At the Nk’mip Desert Cultural

Centre, visitors can learn about the many ways the region’s first residents learned to survive and thrive in the arid Okanagan. They can also learn about the cultural traditions that were passed down, and the huge societal, cultural and educational challenges that residents faced as Canada developed as a nation. Visitors can also pay a visit to Spirit Lake, a sacred spiritual location that is available for viewing from the distance. Nk’mip and Osoyoos Attractions The town of Osoyoos has its own recreational opportunities as well. Lake Osoyoos, Canada’s warmest freshwater lake, is a favorite destination for boaters, swimmers and fishermen alike. Numerous trails snake along the shoreline and in the hillsides, offering plenty of photo opportunities and gardens to enjoy. A local waterside park and amusement park offer added family enjoyment on hot summer days. Visitors can also learn about the city’s innovative efforts to keep the lake healthy and free of overgrowth. During the fall, a brightly colored “paddlewheel” boat rototills the milfoil growing in the lake. In the summer, another boat harvests it, keeping the water and its unique ecology healthy. Coffee houses, a gourmand’s selection of restaurants, art galleries, nearby music venues, parks and shops are all available to travelers during the summer and fall, rounding out opportunities to experience Canada’s most unique pocket desert oasis.
