n part one, urban gardener Sass Ruthven inspired us to consider collective neighborhood farming. Growing local eats helps to solve many of our current issues by increasing our access to affordable, healthy organic food, bringing neighbors and community together, teaching skills with hands-on learning opportunities, lessening our need for transportation by using our local lands effectively and, last but not least, the produce tastes amazing and is as local it gets!

Developing the built environment creates many societal challenges. Green roofs are a great solution so that we may live in harmony with nature and reduce the negative impacts of development by joining the urban agriculture movement.

Sass designed and built her own green roof on her garage in 2010. Due to her successful endeavors, she then decided to add a green roof to the chicken coop in 2016. While she has no formal education on the subject, it’s helpful that her daughter majored in horticulture with green roof emphasis! What Sass knows is tried and true, from the practice of completing her own projects and helping others to design, install and maintain their green roofs.

While food production is not the main benefit of this building innovation, green roofs produce other kinds of bounty. Beyond their outstanding beauty, green roofs manage stormwater runoff onsite, which alleviates stress on many of our stormwater systems when they are overwhelmed,

Other benefits include ultraviolet absorption, noise reduction, improved air quality and the creation of new habitats to invite pollinators and increase biodiversity. And if you put a green roof on a structure you are actively living in, it will thermally insulate your living space by aiding to heat or cool your indoor climate in both summer and winter.

Green roof or fun roof? have a small amount of soil, so ornamentals are generally a better choice than edibles. As for maintenance, in the winter time she deadheads, weeds once a year, fertilizes around March and irrigates during the summertime using a hundred-foot soaker hose for her garage roof. The excess water slowly releases and collects into a rain barrel, which is then used to water her garden. She goes on to explain that depending on the slope of your roof, you may want to think about the best way to water: drip system, soaker hose, sprinkler or other forms of overhead watering. First and foremost, Sass states, “Unless it’s brand new construction, you have to beef up the inside to hold the weight. We did a weight test of saturated soil. The soil saturated in the winter time is four tons on just the garage. So you need to make sure your structure is sound enough to be able to hold that kinda weight on a bigger structure. If it’s something like

a chicken coop or a shed, because it’s a small structure, it’s not going to be an issue. We reinforced our garage.” Her hope is to eventually become a nonprofit. “I would like to be a teaching farm here and basically educate. I really like teaching and showing people how to do it for themselves. he way we live in our homes has changed considerably over the last 40 years. Open-concept living and a more casual lifestyle has led to the merging of two or sometimes three spaces: The kitchen, the dining and the living room—often called the great room. These spaces are designed for entertaining and hanging out; unfortunately, an open-concept space will also provide your guests with the view of a functional kitchen including the mess during a dinner party. I like to design these spaces to look good even while in use. Family Room vs. Great Room - A family room is casual in nature but very specific and generally used for one purpose. A great room is defined as a large room that combines features of a living room with those of a dining room or family room. Furniture Placement - Furniture placement can be challenging in an open-concept space because you have circulation paths and traffic flow to consider. If your space is smaller you may consider pieces that serve more than one purpose. Antiques and vintage pieces work well in small spaces because the average room size was smaller until the last half century. Most furniture makers offer condo-size or apartment-size sofas. Size/scale is the No. 1 mistake I see in the client’s home. Tip: Use blue painters tape to lay out the furniture arrangement (to scale) before you buy. Measure twice, and live with the tape on the floor for a couple days before you purchase. Allow 36 inches for circulation paths and 15 to 18 inches between the coffee table and sofa. Styling the Space - The Great room should be a natural extension of the kitchen; extending

the vocabulary of finishes throughout the space is recommended. Universal flooring can tie everything together. Area rugs can anchor these areas, and they can define spatial boundaries. A mix of patterns can give the space a more informal look. Because the nature of this space is open concept, furniture pieces should be consistent in scale and color but not all the same. It is best to avoid a “matchy-matchy” look. Mixing newer pieces with vintage and repurposed items will create a more interesting and livable space. This is also a great space to display a collection of family photos and artwork. Family and Pet Friendly - A space can be beautiful and kid and pet friendly. While no fabric is indestructible (or furniture for that manner), there are lots of good options available. I recommend high-performance fabrics and even outdoor fabrics in these high-use areas. Reclaimed wood is a great option for coffee tables or dining tables because they are often imperfect to begin with and they are going to continue to wear well over time. Since retirement saving is a behavior, it is worth considering ways to adjust behavior to achieve a better retirement. Delayed gratification or instant gratification? Financially speaking, retiring earlier can have drawbacks and may lead you into the next phase of your life with less income and savings. If you don’t love what you do for a living, you may see only the downside of working longer rather than the potential boost it could provide to your retirement planning (claiming Social Security later or tapping IRA accounts later so they can grow). If you see work as a daily set of unfulfilling tasks and retirement as an endless Saturday, Saturday will win out, and your mindset will lead you to retire earlier with less money. If you change your outlook to associate working longer with retiring more comfortably, you may leave work later with a bigger retirement nest egg—who wouldn’t want that? If you don’t earmark 66 or 70 as your retirement year, you can become that much more susceptible to retiring as soon as possible. You’re 62, you can claim Social Security; who cares if you get less money than you get at 66 or 70? While some retirees claim social Security at 62 out of necessity, others do, perhaps not realizing that inflation pressures and long-term care costs may render that a poor decision in the long run.

Hosted by the Gig Harbor Canoe and Kayak Racing Team in cooperation with the Tacoma South Sound Sports Commission and the City of Gig Harbor, the two-day event will take place April 21 and 22 at Skansie Park in historic Downtown Gig Harbor. he Peninsula School District Bond, which passed in 2003, is set to expire next year, and you will have the opportunity to vote on a new Capital Facilities bond on April 24. The Peninsula School District is proposing a $220 million 20-year bond at a stable tax rate of $45 per $100,000 of assessed property value. The numbers and goals were reached after a community-lead nine-month planning process which found four key areas the committee felt were in need of serious attention for the district: • Updating safety and security • Replacing outdated infrastructure • Addressing overcrowded classrooms

Deborah Krishnadasan and Jennifer Butler are cochairs of Stand Up for Peninsula Schools (SUP), a community organization in favor of passing the bond. “PSD schools are outdated, have unsafe conditions, are chronically overcrowded and the infrastructure of the buildings is failing,” said Krishnadasan. SUP points to the fact that the district has seen tremendous growth over the last 20 years, but there hasn’t been major capital funding in 15 years—the last new elementary school was built 25 years ago! “Our schools need major upgrades and replacement of systems such as heating, ventilation and air conditioning [HVAC], and roofs to keep our kids warm and dry. Ten of our 15 schools have HVAC systems past their serviceable life and are starting to fail, causing student evacuations and lack of water for drinking and flushing toilets,” said Butler. Another concern found by the committee was student safety and security. During the first three months of 2018, the nation is averaging a school

“All but two of our schools were built before the Columbine High School tragedy and lack the security features we now expect of our schools,” said Butler. “Our high schools have dozens of unsecured points of entry, and 25 percent of our elementary students learn in isolated, less-secure portables.”

Passage of the Capital Facilities Bond would create a new elementary school to alleviate some of the overcrowding while also updating and improving current schools by bringing them up to meet all current codes and standards.

The bond would also address outdated sprinkler and fire-alarm systems. “Currently, 11 of 15 schools have fire alarms, sprinklers and/or onsite water levels for first responders that do not meet current code. Artondale and PHS have no sprinklers in many areas, including gyms and other common spaces where a large amount of kids gather,” explained Butler. As more children enter the school system, especially at the elementary level, teachers are experiencing larger class sizes, and many classrooms have been taken out of the main school buildings and into on-site portable classrooms. Growth projections show the need for 22 additional elementary classrooms by

The final main focus of the bond is to bring classrooms into modern times with updated technology and learning tools. This includes a focus on creating specific classrooms for STEM programs and other technology-based learning environments. The previous bond, passed 15 years ago, was at a property tax rate of $48 per $100,000 of assessed property value while the 2018 bond, which takes effect in 2019, is a rate of $45 per $100,000—meaning property taxes will be lower in 2019 even if the bond is passed. As with any vote, it is important to be well informed before casting your ballot. All projects in regard to the Capital Facilities Bond are

available on the district’s website and are clearly laid out in several formats. You can find this information at PSD401.net/bond. If you have additional questions, the district is continuing to hold live Q&A sessions on its Facebook page every Monday at 5pm leading up to April 24. You can also visit StandUp4Schools.org for additional information. In order to pass, the Capital Facilities Bond requires 60-percent voter approval. Organizations like Stand Up for Peninsula Schools are encouraging the community for a “yes” vote and believe this bond is a benefit to all in the community. “While there are additional needs in our district, the 2018 April bond will address the most critical safety and security needs at all schools,” said Krishnadasan. “This bond is a win for everyone,” said Butler. “The 2018 April bond replaces the 2003 bond expiring next year, and even with the approval of the replacement bond, local school taxes will decrease in 2019. Supporting the bond is the best way to create safer and more secure schools while being fiscally responsible to our tax payers.”

M

ath is a subject that gets progressively more challenging as you continue to advance your knowledge of the subject. For some, the way mathematics work comes easy, but for others it’s a struggle to reach for the moment where all the information finally clicks and the problem is solved. That is the moment that our April Teacher of the Month strives for. Paula Grande teaches math classes to seventh and eighth grade students at Key Peninsula Middle School and has been teaching for more than 20 years. Being a math teacher takes patience, and Paula says that patience pays off when her students get that ‘Oh!’ or ‘A-ha!’ moment. “Math class isn’t about making math easy because it isn’t always. Math class is about making math make sense because it does,” says Paula. Once students can make sense of the problem it can really open up a new way of thinking and possibly a new direction in what they want to pursue in life. Technology and science jobs are in high demand, and understanding mathematics is the root of these high-paying and rewarding careers. While not everyone will grow up to build the next great app, socialmedia platform or make machines run more efficiently, having the confidence to fail and try again and again without quitting is something math can teach us. Middle school can be a difficult transition for young people and a time when confidence in one’s self can diminish because of mounting academic and social pressures. Paula reinforces

that confidence in her students in hopes of showing each one the amazing things they can achieve, even through difficult struggles. “Regardless of whether my students go on to major in math or pursue another avenue, my goal for all my students is to realize success can be accomplished through hard work, critical thinking and problem solving. And everyone can do math,” Paula affirms. She recalls one student in particular, whom she taught in both seventh and eighth grade. This student came into Paula’s class not liking math and lacking the confidence that she could do well mastering the subject. Not only did this student struggle with math, but Paula learned during a parent-teacher conference that her student’s parents had their own struggles with math as well. “This student, like many struggling math students, lacked confidence. I worked hard to help her see she could do math, worked on her confidence and negative self talk while also working on her skills. [By the time] she left middle school, she told me she knew she could be successful in math—and even liked it!” recalls Paula. “A few years later, her mom told me that she was attending college and was going to study math because I had made her realize that math made sense and she could do it! She is now a mechanical engineer.” A teacher can change the world for her students, opening doors to new and incredible opportunities. And that is what Paula has done, and continues to do, each and every day she steps into the classroom.

pril is Parkinson’s Awareness Month, and it is very fitting that it is also Occupational Therapy (OT) Month because it is this allied health profession that has been instrumental in improving the function, independence and quality of life for folks with not only Parkinson’s disease (PD) but all neurologic disorders. Almost everyone knows an older person with Parkinson’s disease. According to the National Institute of Health, Parkinson’s affects more than 1 million people in North America and more than 4 million people worldwide. In the United States, PD occurs in approximately

13 per 100,000 people, and about 60,000 new cases are identified each year. According to Parkinson.org, Young-onset Parkinson’s disease is diagnosed before the age of 50 and “affects about 2 to 10 percent of the 1 million people with PD in the United States.” YOPD is diagnosed as early as 30 years of age when most are working, trying to manage their career, starting and raising a family. This diagnosis can have a devastating effect on family finances, relationships and emotional well-being while trying to cope with the daily symptoms of Parkinson’s.

When first diagnosed, dopamine agonists are prescribed. Often, patients feel better when they start taking medications, so they don’t feel they need to make the time for therapy. Before they know it, they need to increase the dosage and soon develop dyskinesia from the increased dose of dopamine agonists. Dyskinesia is unwanted, uncontrolled, excessive movement, which happens when the dosage ceiling is met prematurely without movement therapy. The next step is a Deep Brain Stimulator—an implanted type of pacemaker, which also has a voltage ceiling. Parkinson’s treatment should not be limited

to medications (dopamine agonists) because movement is important, and special sequential movement is key such as the internationally acclaimed LSVT- Big program, which is known to slow down the progression and can reverse the disease process when performed at the highest possible intensity and range of movement. I opened my private practice to reach out primarily to the young-onset Parkinson’s community because the current rehab models and support groups have mostly been geared toward seniors with PD. As an occupational therapist, it is an honor for me to help people

with neurologic disorders, and every patient has a journey that I get to be a part of. In this article, I am privileged to tell the story of Paul Burgess, one of my young-onset PD patients. He hopes that his experiences will help someone in our community to seek out and get the right treatment and to break the stigma of being young with Parkinson’s. Young onset PD is more intensely progressive, so it is imperative to start treatment immediately. Treatment needs to be more proactive than pharmaceutically treated alone. Paul is a creative director at Boeing. He has

been a graphic artist for 30 years and started experiencing the silent symptoms of PD years before he was diagnosed. His wife Victoria is a Gig Harbor real-estate agent and was looking for a different treatment approach for Paul’s symptoms, so she recommended occupational therapy to her husband. Paul’s chief complaint was a resting hand tremor he could not control. In contrast, an intention tremor happens when a person initiates an action or during the use of that limb (or other body part). The hand tremor made him anxious and self-conscious around others.


Three Numbered Facts

-1 million: The number of people in the U.S. who have been diagnosed with Parkinson’s. -30: The age at which Young-onset Parkinson’s disease can first be diagnosed in a patient. -60,000: Approximately how many new cases of Parkinson’s are identified each year.

During the initial evaluation he shared, “I have become anxious over little things. I have never been a bashful guy. I am used to public speaking, but now I am nervous about it. I don’t want people to be tuned in to my tremor instead of what I am saying.” Paul first noticed the silent symptoms of PD about six to seven years ago with distorted olfactory function. “I started smelling burnt milk constantly for a week, then it would dissipate and I would latch onto another scent for yet another week, and this went on for about a year. I went to my doctor and he discounted my symptoms as age related (in my early 40s) and gave me a flush of nasal decongestant fluid. After that, I lost my scent sensitivity altogether.” Not being able to smell impacted his love of fine cuisine, which he and Victoria enjoy at home and in their travels. Paul also presented with other classic Parkinsonian symptoms, such as restlessness, disturbed sleep and dystonia (pain and exhaustion because of the constant muscle contractions). He shared, “I can’t get comfortable, so it may take me an hour to fall asleep. It is difficult for me to turn in bed to find a comfortable position. I wake several times with arm and back pain, and I have to get up for work.” Paul experiences other common PD symptoms such as shoulder pain and arm fatigue; neck pain and stiffness; and lumbar pain on waking. Balance was affected when he started OT, as well as asymmetrical movement and loss of arm swing when walking. Driving was difficult when trying to use the foot pedals for acceleration and breaking in stop-and-go traffic during his two-hour daily commute to Seattle. He has an occasional right restless leg at bedtime.

Paul has made great gains, learning how to control his tremor, and arm swing has returned. His story may help others to recognize the early symptoms and to learn that if your doctor is not listening, find one who will. Therapy is most effective the earlier you begin. Finding a therapist who is experienced with Parkinson’s is a better use of time and your insurance benefits. I have adopted Christopher McDougall’s inspirational quote of the lion and the gazelle: “Every morning in Africa, a gazelle wakes up. It knows it must outrun the fastest lion or it will be killed. Every morning in Africa, a lion wakes up. It knows it must run faster than the slowest gazelle, or it will starve. It doesn't matter whether you're the lion or a gazelle—when the sun comes up, you'd better be running.”

Whatever the age of a person with Parkinson’s, movement is survival! They need to wake up every morning deciding whether they will be the lion or the gazelle. Whichever one they choose, when the sun comes up, they need to be moving to stay ahead of Parkinson’s disease!

Kirsten Ritchie Peninsula High School FOR KIRSTEN RITCHIE, participating in sports has taught her many lessons that she will apply throughout her life. “I have learned how to communicate clearly from talking to my coaches, and I have learned to build a good work ethic through years of practices and games,” said the 18-year-old senior who attends Peninsula High School. Kirsten plays varsity fast pitch and softball and has also played basketball. When all is said and done this spring, she will have eight varsity letters. “I have two All-League honors in basketball and three in fast pitch so far,” said Kirsten, who has served as captain for both the varsity fast-pitch and softball teams for PHS. She has also received the scholar athlete award in both of her sports every year and was named the South Sound Conference female student athlete for winter of this year. During her years at Peninsula High School, Kirsten said she has been challenged by

having so many coaches—four basketball coaches and two softball coaches. But the challenge of building a new program nearly every year was met with the help of her teammates. “They provided me and our programs with the stability needed to create a team,” said Kirsten. In the fall, she plans to attend Western Washington University where she will pursue a career in a health-care field, possibly becoming a pediatric nurse. “I also hope to incorporate travel and activism into my future plans.” Looking back on her time playing sports, Kirsten said it is the people she will miss the most: “My favorite thing about sports are the relationships I have created with my coaches and teammates.”

Diavionne DeWalt Gig Harbor High School A SENIOR AT GIG HARBOR HIGH SCHOOL, Diavionne DeWalt has been recognized for her athletic excellence by many. She has been named the MVP several times on her club teams, received the Athletic Brilliance Award from the GEMS organization and received the Blake Memorial Award. Diavionne will attend Prairie View A&M University on a fast-pitch scholarship and plans to major in architecture and possibly business with a goal of one day starting her own architecture company.

“When I was younger, I always loved looking at different styles of buildings or homes,” said Diavionne. “Once I got older, I liked drawing houses and floor plans and using a computer to create structures.” With a bright future ahead of her, Diavionne has also experienced significant heartache as well. Her father passed away in February. Going back to playing ball after his death was one of the biggest challenges she has ever faced. “He’s the person that got me into sports and the first person that I threw a ball with. He taught me the basics and was there for me through it all. I’m grateful to have the support of my mom, Ja-Angel DeWalt, and

other friends and family to support me in the future,” said Diavionne. “They have played a big part in everything I’ve done, and I appreciate them being there for me and helping me stay focused on getting me to the next level.” Diavionne also expressed her appreciation to one of her former coaches, Felitia Conley, who she said taught her important life lessons. “She said, ‘It’s not about you when you get up to the plate; it’s about that person in front of you and the person behind you. Your job is to help them, and they will help you,’” recalled Diavionne. “When I first heard it, it was almost like I fully understood the game for once. Everything seemed to make sense, and the concept of the game for me changed. I stopped playing for myself, and instead I played to make my teammates better and push them to be their best.”

ach year, the Rotary Club of Gig Harbor recognizes a member of the local community with their annual Star Award. The 2018 Star Award winner is Kurt Grimmer, financial advisor, Legacy Capital Partners, LLC, and licensed agency through the Wells Fargo Advisors Financial Network.

those outside the Rotary Club who embody this selfless service. “Nominees cannot be a member of the Rotary Club, and they have demonstrated service in the local community over time that is not part of their professional life.” Club members nominate individuals, and Shaffer serves on the committee which finalizes the winner.

There are two more Rotary Clubs in Gig Harbor. Each year the three clubs join together to recognize their Star Award winners the first Friday of February. The Rotary Club of Gig Harbor North’s Star Award went to Robin Malich; The Rotary Club of Gig Harbor Midday Award was awarded to John Dionas.

She often wonders when he sleeps due to his extensive volunteer work. “He just loves children and has coached soccer for over 15 years as well as helping to maintain the soccer fields during the season by placing the lines for games. Each year the Waterfront Alliance has a flower basket program which takes a core of volunteers who serve on the watering team. Grimmer is one of the volunteers who starts at 5am before the parking spaces fill up to help water all the baskets. One of his volunteer activities Shaffer really appreciates: “He helped establish a Dragon

The “Mr. Gig Harbor” nickname comes from his volunteer participation in many local events. “If there is a local event in Gig Harbor that requires volunteers, chances are you will see Kurt there,” she said. You can typically find him volunteering at the Gig Harbor Food and Wine Festival and working the Girl’s Night Out event each year. Grimmer expressed his appreciation for the Star Award. “It was a great honor. I am humbled by the award and I am quite flabbergasted, as there are so many terrific and wonderful people in our community that are also very deserving of such recognition,” he said. “The Rotary Club is so important to our community because they are first a service organization,

and they provide and donate resources both financial and volunteer for the benefit of the community. Additionally, they do the same at the international level. They accomplish things that would otherwise not get accomplished or fall through the cracks.” The Rotary Club of Gig Harbor is very involved in service. Locally in March, they participated in a project to plant trees at Gateway Park. The club is helping with the Courage Classic Bike Ride which raises money to help children. Their international projects include supporting exchange students, and they donated $1,000 toward a project in the Philippines where Rotarians replaced a roof on a retirement home. The club supports the Rotarian mission to help eradicate polio. This mission began in 1979 in the Philippines when Rotarians helped support the immunization of 6

million children. In 1988, there were 125 countries that were polio endemic and that number has dropped to three. On an interesting note, for every $1 the Rotary contributes to polio eradication, they receive $2 from the Bill and Melinda Gates Foundation. “Whatever Rotary may mean to us, to the world it will be known by the results it achieves,” said Paul Harris, Rotary founder. Rotary International was founded as the Rotary Club of Chicago by Harris in 1905. He wanted a place where professionals from varying backgrounds could meet, exchange ideas and support the local community as a service organization. The name came from rotating meetings among the members’ offices. The organization has grown to more than 1.2 million members all over the world.

Does your engine temperature start to rise in stop-and-go traffic? Most people will turn off the A/C and just roll down the window or run the vent on a nice but not hot day here in the Pacific Northwest. But then the temp rises when you slow down. Most cooling systems rely on air being forced through the radiator by vehicle speed. And in order to save power loss when not needed, mechanical cooling fans are becoming obsolete, with the manufacturers using electric cooling fans. The cooling fans are designed to come on automatically when the A/C is operating, as this keeps cool air passing over the condenser and radiator. The back-up sensor will turn on the fans at 235°F, but not until then, and with normal temp in the low 200s, that can appear hot when it is in fact a safe operating range. So if your car starts to heat up, simply turn on your A/C and it should drop right back to normal. If it doesn’t, then there might be an issue with the A/C system. Most new cars actually get better fuel economy with the windows up and the A/C on. Try it; it’s true.

The truth about carbohydrates By Kenny Markwardt, CSCS WHEN I MAKE A RECOMMENDATION TO clients about eating more carbohydrates, I usually get a response of, “Wait, won’t carbs make me fat?! Aren’t carbs the devil? Don’t you read the covers of magazines in the grocery stores? Just what do you think I’m here for!?” Sigh … No, no, definitely no, and I think you’re here to look better, move better and feel better. In our current day and age, an era of social media misinformation and the loudest person in the room getting the most attention, carbohydrates have gotten a bad rap, and that’s unfortunate.

First off, carbs are delicious. Who doesn’t love pasta, rice, fruit and occasionally a little sugar? Second, carbs are fuel. If you plan on doing any sort of exercise or physical activity where you need fast energy, you need carbohydrates. If you feel drained, tired and like you just don’t have that “go” that you need for your favorite activities, you’re likely low on carbohydrates. This is especially true if you’re chronically exhausted from your exercise. Even the authors of the most popular books are admitting now that one of their biggest regrets is recommending people do intense exercise on a low-carbohydrate diet. That’s how people crash and burn.

Third, body fat is added on due to an overconsumption of calories. It doesn’t matter if these are calories from fat or carbohydrates; eating too many will add fat to your body. (I left out calories from protein because I almost never see people overeat protein, and if you’re exercising, protein will generally convert to muscle and connective tissue, not fat). In fact, study after study has proven this again and again. As long as protein consumption is adequate, it doesn’t matter what your fat versus carbohydrate intake looks like. Your body fat changes will reflect your over or under consumption. "But wait! I know someone who lost 100 pounds on a low-carbohydrate diet!" I completely believe that, and have seen it myself. I’ve also seen people lose that much weight on a low-fat diet. I’ve also seen that happen on a Paleo diet. I’ve seen people lose weight in an infinite number of ways—some healthier and more constructive than others. Remember the overconsumption of calories is how weight is gained. Moderating that calorie intake will lead to weight stabilization and under consuming those calories will lead to weight loss.

So, by restricting your carbohydrates, you’re probably lowering your calories incidentally. No matter what you choose, whether it be to restrict your fat intake, go “Paleo,” practice intermittent fasting or go vegetarian route, your net calorie intake is lower. So what’s a person to do? It’s probably the least sexy word in the dictionary, but moderation. Make lean meat and vegetables your primary goal for every meal. A fist size of each for women and two fist sizes of each for men is a great place to start. Then go moderate with all of the other things. Have bread. Have pasta. Have rice. Have dessert once in a while. If you’re gaining weight or you’d like to lose weight, it’s time to refine and pare down those “extras.” Choose what makes the most sense to you. Most people already know what they should be cutting out. If not, log your food for a week on MyFitnessPal. If you need help, or need the accountability (which is usually the hardest part), hire a professional. Just know that if it sounds wacky, it probably is. Don’t choose a quick fix, a pill or anything that involves only drinking shakes or not eating entire groups of macronutrients. The ultimate goal is to seek long-term health and vitality.

“People think they’re doing everything they can to battle spring allergies,” says allergist Bradley Chipps, MD, president of the American College of Allergy, Asthma and Immunology (ACAAI). “But many still find themselves under siege from pollen and other allergens that appear once the weather starts to warm up. What they don’t realize is that by following a few simple rules they can make life a lot more pleasant and their allergies more bearable.”

1. It may not only be allergies. In some cases the symptoms you are experiencing may not be caused by allergies alone but by another complication such as asthma. Research shows two-thirds of people with asthma also suffer from allergies, making symptoms worse during the spring season. If your symptoms include a persistent cough or feeling winded quickly, asthma could be the cause of your trouble. If this sounds familiar, consult your allergist, who can help identify the source of your asthma and help treat your allergies to manage your symptoms.

2. Take a deep dive for spring cleaning. Spring cleaning is a must for many people, but if you suffer from allergies, it’s even more important. Clearing dust and cobwebs can ease your sneezing, but for better results, roll up your sleeves and give your home a deep scrub. A thorough cleaning can eliminate allergens such as dust mites and mold, and clear the air. 3. Start your relief early on. Don’t wait for your eyes to begin watering before taking your allergy medicine. Start your medications at least two weeks before the season begins so that they will already be in your system when you really need it. 4. Clean your air effectively. When looking for support to clean the air in your home, don’t choose an ionic air filter. These filters require more airflow to operate properly than most homes are able to provide. Instead choose a HEPA room air cleaner rated with a Clean Air Delivery Rate. If you have central air, change your filters every three months and use filters with a MERV rating of 11 or 12 to keep your air as clean as possible.

HOW LOUD IS TOO LOUD? EARPLUGS ARE AN IMPORTANT SUMMER ACCESSORY BY DEANNA IFF, AU.D., CCC-A, HEAR FOR LIFE AUDIOLOGY WE LIVE IN A NOISY WORLD. While everyone knows that earplugs should be worn in loud environments, we often overlook the hazardous levels of noise that can be present during common activities. In this short article, we will cover some of the dangerous sounds you should be considering, the potential consequences of noise exposure and how to protect your ears from serious damage. According to the Centers for Disease Control and Prevention (CDC), approximately 40 million Americans between the ages of 20 and 69 have noise-induced hearing loss. We often associate this type of hearing loss with occupational exposure, but of those 40 million, more than one in two do not have noisy jobs. And although the percentage of the population affected by hearing loss increases with age, the young are not immune. More than 5 million individuals between the ages of 6 and 19 are also experiencing hearing loss related to noise exposure. Loud noise causes hearing loss by damaging the hair cells in your inner ear. So named because of the little hairs (cilia) that move in response to sound, hair cells are responsible for sensing sound and converting that sound into electrical signals, which in turn are sent to the brain. Hair cells cannot regenerate, so damage to these cells leads to permanent hearing loss. So, when does noise become dangerously loud? The loudness of a sound is measured in decibels (dB). Noise-induced hearing loss can be caused by exposure to noise over 85 dB for an extended period. Although most of us do not have access to a professional sound-level meter, there are apps available for download that can give you a good idea of the noise level. Below are the approximate dB levels of some common sounds: • 60 dB - Normal conversations, dishwashers

• 80 dB - Alarm clocks • 90 dB - Hair dryers, blenders and lawnmowers/ leaf blowers • 100 dB - MP3 players at full volume • 110 dB - Concerts, clubs, car racing and sporting events (hearing loss can occur in less than five minutes at this level) • 120 dB - Jet planes at takeoff • 130 dB - Ambulances and fire-engine sirens • 140 dB - Gun shots, fireworks and custom car stereos at full volume It is important to note that hearing loss can occur with very limited exposure to the loudest of these sounds. If you’d prefer to avoid the hassle of using a sound level meter to determine whether noise is endangering your hearing, here are some simple rules. In general, noise is dangerously loud if: • You have to shout to be heard • It is painful to your ears • It makes your ears ring • It makes your hearing seem muffled Protecting your ears does not have to be an ordeal. For most typical noise exposure, standard foam earplugs are sufficient, if inserted properly. If you spend more time around high levels of noise, you may want to consider investing in custom earplugs, which can be made for almost any type of exposure. ound is all around us and comes in many forms: yelling, banging, clanking and honking. It is sometimes ambient or background. It can also be noise and distraction, soothing or violent, loud or soft. For those with a hearing deficiency, loud and numerous sounds can be almost maddening, creating increased heart rate, agitation and fatigue because the sounds have now become unwanted noise. In the same way, soft and soothing sounds and tones can bring a sense of harmony, peace, comfort, joy and wellness. It has been proven that soft music affects people’s, animals’ and plants’ health and growth. Dr. Masaru Emoto did an experiment with water and sound. In his experiment, the water exposed to soft music and soft voices formed beautiful ice crystals, while the water exposed to loud music with violent lyrics and heavy metal did not form crystals at all or formed very “ugly” crystals. Our bodies are made up of approximately 70 percent water and 30 percent minerals. All of our cells are made of water, and we are vibrational by nature. So exposure to loud and unpleasant sounds can cause illness, anger, fear, rage, a feeling of being unwell, headache, irritability, etc. When we respond to those types of sounds, our bodies tense and put us at disease, leaving us open for disease. When we hear

soft and soothing sounds, our bodies tend to relax and quiet, lowering our blood pressure, anxiety and stress, allowing our bodies to begin to heal. BRAIN FOG, POOR MEMORY AND LACK OF CONCENTRATION Discovering the cause will help lead to the solution BY HOLLY A. CARLING, O.M.D., L.AC., PH.D

H

ow many times have you said in the last few weeks how bad your memory has become? Can’t remember? If you are like most people, it is becoming more and more of an issue. Why? It’s not just about getting older. If that were the case, why are kids complaining of that too?

sugar-related issues (diabetes or hypoglycemia).

The causes of brain fog, poor memory and lack of concentration are exhaustive. First of all, we have to assess whether there is truly need for concern or just a casual loss of memory. We all experience “brain freeze” when we just can’t remember a word or we walk into a room and can’t remember what we wanted in there. But if it starts occurring at an alarming rate, we need to rule out a potentially serious cause.

Nutritional Deficiencies - I find nutritional deficiencies to be of primary concern. Irondeficiency anemia and a B-vitamin deficiency top the list, but only from a gross-deficiency standpoint. Since vitamins, minerals, amino acids and fats are all necessary for proper brain chemistry, a deficiency in any of the essential brain nutrients can affect brain function, which includes foggy thinking, memory and the inability to concentrate.

Let’s get the worst ones out of the way: tumor, Creutzfeldt Jacob Disease, encephalitis, ALD, HIV, neurosyphilis. Also of great concern would include lead poisoning, alcoholism, recreational drug use, blood disorders, Lyme disease, Epstein Barr virus, epilepsy, stroke, result of brain surgery, diabetes, liver cirrhosis and of course Alzheimer’s disease and senile dementia.

No nutrition conversation is complete without touching on the adverse side of foods. Foods containing artificial sweeteners, hydrogenated fats, aluminum and other such concoctions can also impair clear thinking. Other toxins such as amalgam fillings and other sources of mercury, lead, silicone implants, fluoride toxicity and other environmental toxins can contribute. Sugar, preservatives and certain additives can contribute to difficulty concentrating and foggy thinking, plus they rob other nutrients which could have helped.

Now let’s look at other, more likely, causes. I like to start with the most obvious, because, believe it or not, they are the most likely to get missed. Sleep Deprivation - Either because of lack of number of hours of sleep, poor quality of sleep or sleep apnea. Emotional Upheaval - Anxiety, depression, feelings of being overwhelmed, stress and any negative emotion that is in excess. Hormonal Imbalance - This can manifest as PMS, menopause, andropause (male menopause), hypothyroidism, reduced adrenal function and

TAKING ACTION! One man’s story of #metoo By Patty Hutchens

A

s he walked into the restaurant, the last 25 years instantly melted away. He was my high school boyfriend, European travel partner and a man who I had not seen in nearly three decades. Most importantly, he was—and always will be— someone whose lifelong friendship I treasure deeply. We sat across the table from one another catching up on each other’s lives. The challenges and joys of raising children, dreams—some fulfilled and some unfulfilled—and more. The nervousness that I initially felt had long dissipated. I felt like it was just yesterday that we were young and innocent without a care in the world. The hours passed quickly. It was well into our time together, reminiscing about vibrant antics in Switzerland, France and Italy, when the conversation suddenly turned serious. Tom came to see me that day with absolutely no intention of sharing a secret he had held within his soul for decades, sharing his pain with only a few select people. But he found himself opening up about the most painful part of his life. He avoided eye contact with me as he softly said, “I was sexually molested as a child.” Suddenly, certain things I had observed about him over the years made

perfect sense. The times he felt guilty for things that a typical 17-year-old young man would experience in a relationship with his girlfriend. His struggle to hold a job. His issues with authority. My heart filled with sadness and my own eyes filled with tears as I witnessed the pain in his eyes. I wondered silently, “Why is he choosing to share this with me now?” We had traveled through Europe together, witnessed one another at our best and our worst, and yet it had taken him 36 years to tell me about this horrific event that occurred when he was a vulnerable 7-year-old child. And then he continued to share his story. Minnesota, the state in which he lives and where we both grew up, had enacted the Child Victim Act in May of 2013. The law changed the statute of limitation applied to civil legal claims for survivors of childhood sexual abuse with certain restrictions. Under the previous law, any opportunity that Tom had to file a lawsuit against his perpetrator had long ago expired. He had filed a police report after a dozen years in counseling, but the statute of limitations was only three years from the abuse then. Yet with the enactment of the 2013 Child Victim Act, there was now a window of three years that allowed Tom to finally confront the man, in a legal setting, who abused him. “I could finally hold him accountable,” said Tom of the torture that endured well

FEATURE STORY beyond the incidents of his youth. “I wanted him to finally see, in black and white, that he didn’t get away with it.” But the deadline was looming. With the new window allowing certain qualifying victims to file a lawsuit by May 24, 2016, Tom had just a little over a month to file a civil case and serve the man with the summons and complaint. I had practiced law but had left the field several years earlier to raise my children. Besides, I was a bankruptcy attorney and I had never been licensed to practice in Minnesota. But I was determined to find justice for this dear friend who desperately needed an advocate. After contacting several of my friends and getting referrals to local attorneys, it became clear that the Minnesota lawyers who were well versed in this field were busy with lawsuits against the Catholic Church—going for the deep pockets. I utilized the investigative skills I had acquired in previous positions and located the man who had assaulted Tom. I found the name of a nonprofit agency that advocates for sexual-abuse victims. The attorney agreed to take his case, and the lawsuit was filed and the defendant served the final day before the new statute of limitations expired. The first hurdle was met. Sadly, the perpetrator did not have a lot of money and, in the end, the case was settled for nowhere near what Tom’s true monetary damages had been calculated to be—like a penny on the dollar for the lost wages amount alone. And that does not include physical or emotional damages yet. Imagine losing a couple million dollars. But he was able to hold his perpetrator accountable and might have let his perpetrator know that sexual abuse

In the last several xmonths, we find our country in a whole new era of women coming forward each and every day to say they were victims of abuse. caused Tom harm—and still continues to affect him. Yet, true justice had not been served, as there was also a confidentiality clause in the settlement agreement. Tom could not disclose the nature of the settlement or disparage the defendant in any way. “The pain of being gagged by the settlement has framed a different bondage,” said Tom. It was heartbreaking, as one of Tom’s many reasons to pursue the lawsuit was to encourage other possible victims of this man to step forward. He doubted he was the only one and almost everyone he told had posed the question, “Who else?” It has not yet been a year since the end of the lawsuit. His pain continues. The question remains, “What would true justice even look like?” But having shared his story with certain people has provided Tom with some emotional encouragement he’s craved for all these decades. “Opening up [to others] has provided me with more support than I have ever gotten. Yet, it is still not enough to sustain me past the hurt,” said Tom. “This rapist severely damaged the core of my being.” In the last several months, we find our country in a whole new era of women coming forward each and every day to say they were victims of abuse. The #metoo movement is strong. It is supportive. No longer will women be silenced by the threat of powerful men. They are sharing their stories and they are, for the most part, being believed. But we must not forget that there are men who are also victims. And there are children whose voices have not been heard; children unable to figure out what happened much less to be able to come forward and articulate it. In media reports, many perpetrators counter the accusers by saying, “Why did they [the victims] wait so long to come forward? It cannot be true, especially since they waited so long.” While it is encouraging to see so many coming forward, there are still many who are not. The reasons are many. Shame. Fear of people not believing them. Inability to take any legal action due to too much time having passed. But what if, like Minnesota and other states, there was not a statute of limitations? In Minnesota, the statute was extended for just three years’ time and only applied to civil actions. I would advocate, as I am sure many would, for no statute of limitation in either civil or criminal actions. The reasons for either extending or eliminating the statute of limitations on this type of law are clear. Such a law change encourages victims to break the silence and empowers them. The reality is many victims are not prepared for a long time, sometimes many years—sometimes never—to deal with the

physical and emotional ramifications of abuse, much less press criminal charges or bring a civil action. And as far as the confidentiality clauses, let’s do away with those as well. Stop protecting those who are the perpetrators. It perpetuates the abuse. By allowing victims to come forward and share their stories, we can encourage others to do the same. As for Tom and so many like him, the reality of life continues with obstacles. It took him 36 years to share that part of his past with me, and many others from his youth still do not know. He recently told me that it is a source of embarrassment for him, and he has felt very alone during this journey. “While the #metoo [movement] is a breaking out point for many, I’m still left in the shadows. I stay in the shadows. I’m embarrassed I only live in the shadows after those glory days of [a] younger me who wasn’t all wrapped up in the aftermath of the perpetrator’s twisted whim,” said Tom. “That’s the difficulty of living each day. It still taunts me.” In the past few weeks, Tom has found some new hope. He learned about a treatment through a colleague of mine called EMDR [eye movement desensitization and reprocessing]. It is a form of psychotherapy that uses eye movements or other forms of bilateral stimulation to

assist clients in changing thought patterns of distressing memories and beliefs. After two sessions, Tom is more hopeful now than the past 47 years of secrets that have been binding him. “I hear about stories on the news about abuse and am able to listen without feeling physically ill,” he recently shared. Used often for the treatment of post-traumatic stress disorder, EMDR treatment assumes that when a traumatic or distressing event occurs, it can overwhelm one’s normal coping mechanisms with the memory, and the associated stimuli are inadequately processed and stored in an isolated memory network. Yes, the recent #metoo movement has shown great progress in encouraging women—and men—to come forward. But there is still much work to be done. This is just one man’s story. Let’s give a voice to those who have been silenced far too long. If you know someone who is a victim, offer to listen. Encourage them to come forward and seek help. hen considering your life, it’s important to ask yourself for whom you’re living. Is it for you or for other people? If you’re not prioritizing things like self-care and creating time for yourself, you’re just sabotaging your potential. Your ideal life isn’t necessarily the realization of all your dreams, such as unending happiness and immense wealth. Instead, it’s you making the most of what you’re capable of. By redesigning your life, you can realize the importance of putting yourself first. Be the best version of yourself. It is essential that you understand that putting yourself first does not mean you neglect others. This is not a matter of selfishness or irresponsibility. If you want to be a good person to other people, you need to be a good person to yourself first. Think of it like money. Most financial advisors will tell you to pay yourself first. Set some money aside in a savings account before paying all your bills. Similarly, if you take time for selfcare, you will have more energy when it comes time to care for others—and you will be happier when doing so. There’s no one way to care for yourself. You need to be aware of all your needs, from work and home obligations to physical and mental needs. In any given situation, you need to think about what you can do to make things easier for yourself. Here are some examples to help you get started. Make Lists - You might feel like there’s so much to take care of that you can’t possibly take time for you. If there are all kinds of thoughts jumbled up inside your mind, it’s time to let them out. Make lists as much as possible. These can be both long and short term. For the long term, you can make a list of goals like making sure you and your spouse have one date night a month, saving up for a down payment on a house or saving up for a nice family vacation. Short-term lists can be for chores and errands that need to get done before the end of the week and taking an hour each night to read that book that has been gathering dust on your nightstand. You can use task management and productivity apps that help you easily write and consolidate these lists. Take Breaks - If the only place for “break” in your vocabulary is working at a breakneck pace, you need to unwind. You might think that you are working smarter by working harder. However, you’re just going to exhaust yourself. Make sure that you are taking breaks on a regular basis. You can try the Pomodoro method of productivity, where you work for 25 minutes at a time, with short breaks in between each session. You don’t want to let yourself work nonstop until you inevitably hit a wall.

Evaluate your current life and whether you're making enough time for yourself. By prioritizing yourself, you can ultimately make the most out of your life. Get Help - The reason you’re feeling so constantly exhausted might be due to taking on too much at once. If you’re able to get help, you should speak up. For instance, you might be doing nearly all the chores in your house. Ask your spouse and kids to pitch in, reminding them that the more they help the more time you will have to spend with one another. Don’t Procrastinate - Self care isn’t about avoiding obligations; it’s about handling them properly for the benefit of your future self. Procrastination is often done out of fear. We believe that a project is so daunting that we try to comfort ourselves by avoiding it. However, we just end up hurting ourselves when we’re nearing the due date. Save yourself from stress by starting projects early. Even if it seems insignificant, it will be worth it. Wake Up Early - You can start your day off on a much better note by getting up earlier. While your bed might be hard to resist getting out of, waking up early can be conducive to a brighter and more energetic you. You can also accomplish so much more. Give yourself a routine that makes your mornings something to look forward to. You can try yoga, meditation, going for a short walk, reading a chapter from a captivating novel and more. Best of all, you can know that you’re starting your day by focusing on yourself. Speak Up - Part of redesigning your life means having more confidence. If there’s something you don’t like that someone keeps doing to you, let him or her know. If your boss is giving you too much work and preventing you from spending time with your family, try to negotiate with him or her. If your best friend is being insensitive about your personal struggles, tell them. You should also be willing to cut relationships with people who are toxic toward you. Setting boundaries can be very liberating! Learn To Say No - Being agreeable is fine, but you shouldn’t be a pushover. If you say yes to every request, you’re going to find yourself overwhelmed. It

If you know that you won’t be able to accomplish something, tell them you can’t in as polite but firm of a manner as possible. Cut Back On Technology - How much do you find yourself sucked in by the hypnotic spell of your smartphone, scrolling endlessly through social media? You’re not going to feel proud of yourself when you look back on your life and see how much of it was wasted. Restrict your usage of your phone and computer whenever possible. Use this time to appreciate things like nature, the company of others or just your own thoughts. Creating time might seem impossible to you, as there are only 24 hours in a day. However, you need to make the most of those 24 hours. Evaluate your current life and whether you’re making enough time for yourself. By prioritizing yourself, you can ultimately make the most out of your life.

Since the exterior of your home is not easy or inexpensive to change, you should start with the interior design. Choosing colors is the first step to making your home a reflection of your personality. The colors should be ones that you enjoy looking at and also ones that create a calming mood. Choose paint colors that transition well from room to room. Have some fun and check out shades in different light, as the colors can change depending on the time of day and location in the room. Psychologists have spent a great deal of time studying the effect that certain colors have on our mood. As it turns out, colors can drastically change our mood and sway it in a certain direction. Long story short, you should pick colors that will improve your mood. There are lots of resources and ideas online. Check them out for some inspiration! After you have spent enough time choosing colors, it is time to work on the rest of the interior design of your home. One important idea is to make sure you make it unique. This doesn’t necessarily mean that it has to contain exclusive items; they just shouldn’t be similar to the average home. When your home is filled with unique items that have special meaning to you, it becomes more personal because you know that it is original to your space. Consider putting up little pictures or designs on the walls. These objects don’t have to be the center of attention or big in size. The little things can be very powerful and help you personalize your home. Make sure to consider color combinations to ensure that these little items will match your overall color scheme. While reducing screen time during the day is a loftier challenge, eliminating it from the start and end to our day is very achievable. CRAVE! 2018 A TASTE OF .. AND TOAST TO … THE FLAVORS OF THE NORTHWEST

T

he Northwest is a region full of fresh flavors. Due to the varying climate and landscape, we are able to produce and harvest a vast assortment of vegetables, grains and herbs. The sunny, temperate climate and mineral-rich soils across Central Washington help grow some of the most incredible wine grapes found anywhere in the world. Fresh fish, oysters, clams and shrimp are pulled from the coasts of Oregon and Washington and often find their way onto one’s dinner plate in less than 48 hours. Ranchland all across the area provides well-regarded beef, and the forests of North Idaho provide a bounty of deer and elk for those loving the spirit of the hunt and preparing wild game. The traditions and flavors of this wonderful region we all call home will be on full display at an annual celebration of incredible food and drink where your taste buds will receive a workout like never before. CRAVE! is putting the finishing touches on its second annual event, which kicks off the evening of Thursday, July 12, and continues through Sunday, July 15. The CenterPlace Regional Events Center in Spokane Valley, Washington, will host the event. The 54,000-square-foot facility will be teeming with chefs, caterers, winemakers and brewers, all of whom will be putting forth their best creations for the event. CRAVE! is the brainchild of Inland Northwest native Adam Hegsted. Well known to frequent diners in the Inland Northwest, Hegsted is a graduate of the Northwest Culinary Academy and Art Institute of Seattle and is a 2016 James Beard Award semi-finalist. His regional restaurants include the likes of Farmhouse Kitchen & Silo Bar in Ponderay, Idaho, Eat Good Café in Liberty Lake, Washington, and several Spokane restaurants including The Wandering Table, Gilded Unicorn and recently opened Incrediburger & Eggs. Hegsted’s vision for CRAVE! is to celebrate, enrich, challenge and expand our regional appreciation of culinary, nutritional and cultural diversity. Through his connections in the culinary world, Hegsted is able to secure chefs not just from the Spokane area but the entire Northwest and other major metropolitan areas across the nation. “We are planning on 60 chefs including 15 for each main event,” said Karen Stebbins of Vision Marketing, the team

that’s behind putting on such an event. “We have Josh Henderson out of Seattle, Matthias Merges from Chicago, as well as others from Missoula, Lewiston and Walla Walla.” The chef likely traveling the farthest for CRAVE! is Hugh Acheson, whose restaurants are well-known around Atlanta and Athens, Georgia. “I was raised with three older sisters by a professor of economics, and I tired of fish sticks,” he said, “and so I got a job in a kitchen at 15.” Like many aspiring chefs, Acheson started out cleaning kitchens and prepping food, moving his way up and never looking back, happy that he could realize his dream. “I am glad I did because I found the occupation for me, where I can always be a learner and relish in the beauty of discovery each and every day.” Acheson will be one of many guest chefs putting on cooking demonstrations during the event. Each will bring something different to the table, and guests will have a firsthand look at how they can prepare gourmet meals in their own kitchens. “I am doing a demo in which I will show people how to cook beef striploin with worldly ingredients. It will be a fun trip to Washington mixed with Thailand, mixed with the homeland of Canada and my current home of the American South," said Acheson. “If I can do a demo where people laugh and learn and take away

one thing about making food easier, I have done my job.” There are several ticket packages available for CRAVE!, allowing attendees to take part in the entire four-day event or pick and choose which events are most enticing. The best part about each event is that once your ticket is purchased and you’re through the door, you won’t need to worry about pulling out your wallet again as unlimited tastes and drinks are included with each session. Grand Tastings are held in the afternoons on Saturday and Sunday and feature small plates from dozens of chefs, with each plating some of their most unique and interesting creations. This is when you will also find the demonstrations from regional and nationally acclaimed chefs. If seafood is what you’re after, you’ll want to attend the Seafood Bash on Thursday evening, which features all kinds of fresh flavors using Northwest ingredients. The Friday night theme is Foods from Around the World, and each booth will be providing their distinctive twist on popular worldly cuisines as well as dishes you might not have experienced before. Saturday night is Smoke & Fire, which features the best of the best when it comes to barbecue. CRAVE! wraps up on Sunday with a family friendly brunch and final grand tasting event. Overnight White Bread Courtesy of Millville Pizza Co. This recipe makes 2 loaves

Bulk Fermentation: 5 hours Proof Time: 1 1/2 hours Sample Schedule: First mix at 7pm, second mix at 7:30pm, divide and shape into loaves at 8am the next morning and bake at 9:30am.

Ingredients: • 7 ¾ cups White Flour (1,000 grams) • 3 1/3 cups Water (90°F) (780 grams) • 1 tbsp. + 1 tsp. salt (22 grams) • ¼ tsp. (scant) Instant Dry Yeast (0.8 grams)

Materials: • 2 Bread proofing baskets • 1 Dutch oven • 1 Cooling rack

• First Mix - In a large mixing bowl combine 7 ¾ cups of White Flour with 3 1/3 cups water (90°F). Cover and let rest for 20 minutes. • Second Mix - Sprinkle 1 tbsp. + 1 tsp. salt and ¼ tsp. (scant) Instant Dry Yeast evenly over the flour/water mixture. Mix by hand. Gently stretch and fold dough, working around the bowl so all sides are stretched and folded. After completing one full circle of stretch and fold, pinch dough six to eight times to thoroughly combine the yeast and salt with the flour/ water mixture. Repeat this step three times. • Fold - Stretch and fold twice more over the next 1 1/2 hours (see above for stretch-and-fold description). Do not pinch dough after second mix! Cover and let rest at room temperature overnight. • Divide - Moderately flour work surface and divide dough in half, each about 850 grams (approximately 1.87 lbs.). • Shape - Dust two proofing baskets with flour or semolina. Shape each piece of dough into a medium-tight ball. • Proof - Cover and set dough in a warm area for 1 1/2 hours. Remember to begin heating oven one hour after proof so the oven is heated at 1 1/2 hours and the bread does not over proof. • Bake - Preheat oven to 450°F with Dutch Oven inside from start. Bake first loaf in Dutch oven for 22 minutes. Remove from Dutch oven and bake for an additional 12 minutes. Repeat for second loaf.

This bread is excellent for grilled cheese sandwiches or as a complement to spaghetti or other red sauce-based meals.

Arbor Day Celebration ACTIVITIES AND FUN ABOUND FOR THE ENTIRE COMMUNITY

eeping green spaces lush and healthy helps create a more beautiful community. Trees provide oxygen, wildlife habitat and welcoming shade on a hot summer day. Each year, thousands of trees are planted across the country during Arbor Day festivities, and you can join the action by stopping by the annual Gig Harbor Arbor Day celebration. Arbor Day is Saturday, April 28, and the annual event is put on by the Gig Harbor Peninsula Arbor Day Organization, a local nonprofit group. Community members are encouraged to meet at the Gig Harbor City Hall/Civic Center where they can partake in several fun activities and also pick up their own sapling to plant. For the past 18 years, the organization has been handing out these small trees to elementary school children, and many of those small trees are now flourishing all across town. The program runs from 11am to 1pm and includes complimentary refreshments and free

trees for all in attendance. Contest winners will be announced and awarded including the middle school-aged video category, as well as student poster, kinder art and the first through third grade essay winners. An arborist will be in attendance to answer your tree-related questions, the Harbor Heights Orca singers will provide music, and there will be naturethemed arts and crafts, activities and games for the kids. You’ll have your chance to enter in a raffle for prizes, and the exclamation point at the finish is having all those in attendance help put a new tree in the ground at the Civic Center at 1pm. Volunteer opportunities are available at GigHarborArbor.org, and you can learn more about day-of events online via their website or through the organization’s social media channels. Enjoy your free tree, plant it in a special place in your yard and watch it grow as the years go by.

The Gig Harbor Film Festival offers an opportunity for filmmakers of all ages to create cinematic gold within 72 hours. Filmmaking started on March 15, and official selections will be screened on April 8 before a live theater audience at The Galaxy Uptown Theatre.
