JULY IS ONE OF MY FAVORITE MONTHS. Not only does it start to feel like summer, it also marks the halfway point of the year. It is amazing to me how fast 2018 has gone by. It seems like yesterday I was writing the January issues’ publisher’s note. July also brings to light the sacrifices made by millions of Americans over the years. They are the true American heroes. Our U.S. military who spend months, even years, away from their families fighting to keep us safe at home and abroad. Some pay the ultimate price and others come back changed forever. And then there are our firefighters and law enforcement officers. How many times have we heard in the last several months of police being shot and firefighters facing life-threatening situations while fighting not only structure fires but the massive forest fires we have experienced? We are truly one of the greatest countries in the world, and it is these people for whom we should be grateful. The halfway point of 2018 also marks a significant time for us at Like Media and Gig Harbor Living Local. In the upcoming months, we will be celebrating our second

annual Gig Harbor’s Finest event where we acknowledge the hard work and dedication of our local professionals. In addition, this fall we will be launching a new bi-annual magazine—253 Lifestyle Magazine. This will be a one-of-a-kind local lifestyle publication that focuses on the South Sound area. don’t know about you, but as soon as I see green grass and blooms on the trees, I can’t get the lawnmower out fast enough and start planning out this year’s garden. I love being outdoors. Whether it’s yardwork or hanging out at the lake, the sun on my freckles is just what I need to kick the winter blues to the curb. Summer is when people tend to come over and stay a bit longer, and the good weather is just an excuse to be outside on the deck or patio. That being said, we need to make sure we have a couple of easy meals in the fridge or freezer for those pop-in guests, that our barbecue tank is full and that the deck or patio is in good shape for entertaining. What items are essential to a successful and ready outdoor space?

Firepits are one of the things that create a gathering place; people know to find a seat and settle in for the evening, and it gives people something to look at when there’s a pause in the conversation. No one thinks it’s weird to gaze into the flickering flames of a fire, but if you had that same look on your face when you were just looking around at your friends, it may get a little awkward. The firepit can be on the patio in a raised unit or can be built in with pavers. Either way, it’s a must for summer entertainment. Seating is also a must. Providing enough seats on the patio or deck can be comprised of a loose interpretation of chairs. Pavers, patio furniture, boxes, benches, ottomans, boulders, wood blocks and even coolers all work as acceptable seating options for patios. As long as it’s something that keeps you up off the ground, keeps you close to the fire and provides a comfortable place to rest, it works.

It's mallow roasting season! Proximity to beverages and snacks is also important. This can be a table with items laid out like a buffet or a simple trough with iced beverages. It’s a good idea to have it right there on the patio or deck for two reasons: One, it keeps people out of the house (why clean when you don’t have to?), and two, easy access makes it easy for everyone to contribute. When people come over, they can throw their own beverage of choice into the ice and it’s ready for them whenever they need it. Pest control and lighting are also important items that shouldn’t be overlooked. The firepit will provide some ambient lighting, but there should be lights hanging or a path illuminated so people can find their way easily. Pest control can either be done naturally with the strategic placement of plants that repel insects or via use of candles that will repel or draw insects away from the gathering areas. However you make it work, the idea of moving the indoor entertainment to the outside will provide hours of good fun and countless memories.

anine Influenza Virus (CIV), what's the buzz? This virus, also called Influenza A, has been spreading through the Southern and Eastern United States for several years but continues to generate interest as it moves through various states in the West. There are two strains of CIV which are currently swirling through the canine population: H3N8, the one which spread through Florida in 2004; and H3N2, a presumably newer strain which appeared in many western states, including Central Idaho, this year.

Treatment:

Symptoms:

If you have a pet that visits dog-intensive areas such as dog parks, groomers or field trials and shows, the Idaho Veterinary Medical Association recommends a vaccination series against CIV. This requires two vaccines, normally two to four weeks apart.

The mild form of CIV often appears as a soft, moist cough that can persist for 10 to 30 days. Dogs may appear lethargic or have a lowgrade fever (102 to103 degrees). Sometimes dogs with the mild form have symptoms that resemble “kennel cough”—thick nasal discharge and a dry cough. These are “upper respiratory” signs and usually do not involve the lungs.

The more severe form of CIV can cause signs of pneumonia seen via increased respiratory rates and effort. This form usually causes a high fever (104 to 106).

Prevention:

With all this discussion of CIV, pet parents should note that a few cases in Idaho does not equal an epidemic. Educate; don't panic. For more information or recommendations for your pet's situation, please call your veterinarian.

Antiviral medication (Tamiflu) can be helpful, especially if used early in the course of the disease.

f you are an experienced investor, you have probably fine-tuned your portfolio through the years in response to market cycles or in pursuit of a better return. As you approach or enter retirement, is another adjustment necessary? Some investors may think they can approach retirement without looking at their portfolios. Their investment allocations may be little changed from what they were 10 or 15 years ago. Because of that inattention (and this long bull market), their invested assets may be exposed to more risk than they would like. Rebalancing your portfolio with your time horizon in mind is only practical. Consider the nature of equity investments: They lose or gain value according to the market climate, which at times may be fear driven. The larger your equities position, the larger your losses could be in a bear market or market disruption. If this kind of calamity happens when you are newly retired or two or three years away from retiring, your portfolio could be hit hard if you are holding too much stock. What if it takes you several years to recoup your losses? Would those losses force you to compromise your retirement dreams? As certain asset classes outperform others over time, a portfolio can veer off course. The asset classes achieving the better returns come to represent a greater percentage of the portfolio assets. The intended asset allocations are thrown out of alignment.1 Just how much of your portfolio is held in equities today? Could the amount be 70 percent, 75 percent, 80 percent? It might be, given the way stocks have performed in this decade. As a StreetAuthority comparison notes, a hypothetical portfolio weighted 50/50 in equities and fixed-income investments at the end of February 2009 would have been weighted 74/26 in favor of stocks by the end of February 2018.1

A Surprising Productivity Tool Forgiveness

n our fast-paced world, we’re constantly looking for ways to be more productive. How do you get more done in less time? If you and I were talking over a cup of coffee and I asked, “What practice, habit or system have you used to increase productivity?” what would you say? Most people would share the importance of decluttering their workspace, strategies for email, using the 80/20 rule, a specific planner, worksheet or business system they’ve put in place and so forth. A productivity strategy I rarely hear is forgiveness. Yet a single comment has the power to take us off our game for hours, days, weeks or more. It can actually disrupt an entire team. When’s the last time you hashed and rehashed a comment or an experience with a trusted colleague, employee or client? In the midst of the struggle, you longed for clarity and peace of mind. Meanwhile, productivity tanks. We lose our mojo. Precious hours are used to replay what was said and how to respond. Those hours are lost forever. Stress goes up and creativity goes down. This is costly at many levels. It’s no surprise that articles on forgiveness appear in the “Harvard Business Review” from time to time. Great leaders know when to forgive. They learn how to make gestures of reconciliation that heal wounds and get on with business.

You may think that forgiveness is only for family, friends and those in your personal circles. Or maybe you already think of forgiveness in the workplace. Here are some actions you can take, whether on the job, in your business or with family and friends, to heal and move on. 1. If you notice a grudge starting to grow, take a deep breath. Pause. Relax your body. Notice what you’re noticing and feel your feelings. All too often, we try to push the feelings away because we’d rather not have them. This creates resistance and actually keeps the feelings in place. So, the first step is simply to be present to the feelings. 2. If you find yourself blaming the other person and growing resentment, do your best to stay present rather than add past hurts or future fears. If the feeling seems to be growing, set a time limit. Remember, the time you focus on blame and resentment takes away from your productivity. One of my mentors talks about the tendency we have to curse, nurse and rehearse our hurts. This only causes the feelings to grow and increase the likelihood that they’ll pop out at a most inconvenient time. 3. Forgiving the other person actually frees you to re-engage creativity and press forward with your goals and dreams, so forgiveness releases not only the other person, but you. Notice that the other person is more than their behavior. Find at least one good quality you can appreciate about the other person. It could be the way they wear their hair, the way they

M

ost 10-year-olds’ focus is on school and friends or perhaps their favorite sports or other activities, but for one local boy his focus is already on building a business. Justin Dennis, a student in Gig Harbor, was awarded the Entrepreneur of the Year Award at Washington Main Street’s Excellence on Main Awards Ceremony on April 24 in Port Townsend. Ten-year-old Justin approached the Gig Harbor Downtown Waterfront Alliance (GHDWA) in spring 2017 to present his proposed product— succulent planters utilizing recycled Cougar Gold cheese tins—for sale at the Gig Harbor Waterfront Farmers Market. His product was approved by the jury and Justin set to work preparing to be a vendor at the market that summer.

Justin had found his inspiration after visiting the WSU Creamery in Pullman and seeing a large stack of empty tins. With guidance from his parents, Justin has taken responsibility for every aspect of the business from that point, including putting together his plan, buying supplies, meeting permit requirements, managing multiple methods of payment and social media promotions. Each week, his “WSU Table Plants by Justin” booth included different learning opportunities on topics such as salesmanship and taxes. “We were impressed by both the creativity and commitment shown by this young entrepreneur,” said Mary DesMarais, GHDWA executive director. “He arrived on time for set-up and always had his booth taken down quickly at the end of each market day. Heidi Gerling, our market manager, was impressed with his dedication to complete his weekly

closing paperwork accurately and on time.” Justin’s goal is to create a “Kids’ Farmers Market Booth” at the market so that other young people can join him in this life-skills experience. He is actively working toward this goal, as well as on introducing new products into his own line. In addition to his budding entrepreneurship, Justin has also shown himself to have a philanthropic nature; he sold his planters at another GHDWA event in November, Girls Night Out, and donated $1 from every sale to a local charity. “Main Streets are, at their best, places for people of all ages to learn, explore, challenge themselves and engage in their local economy,” said Breanne Durham, Washington Main Street coordinator. “I am delighted by the opportunity to recognize Justin for his entrepreneurial and community-minded spirit.”

A vision that was a decade in the making finally came to fruition this June, opening its doors to the Gig Harbor community as a place for family, friends and colleagues to gather, connect and share experiences. The brainchild of Troy Alstead, former COO of Starbucks, Ocean5 and accompanying restaurant Table 47 both were inspired by the idea of community. “Community is the starting point behind the other part of our purpose, inspiring connections,” says Alstead. “’Community’ refers to the community that is our team (creating a great place for them to work and learn and grow) as well as the larger community of our guests and neighbors around us.” Born and raised in the South Sound, Alstead is a longtime resident of Gig Harbor, having raised his four children here. “The South Sound area, and Gig Harbor in particular, are not only beautiful but also are growing and vibrant parts of the region,” he says. “This is home. It is a wonderful opportunity to bring Ocean5 and Table 47 here.”

the alder wood used inside the building was locally sourced within 100 miles, and they have utilized reclaimed wood throughout the building including most of the tables in the restaurant. The carpet in the activity and event spaces is made from abandoned commercial fishing nets, reducing harm to marine life and beach and reef damage. From the low-flow toilets and solar-powered soap dispensers to water bottle filling stations and receptacles for glass, paper and plastic recycling, everything is environmentally conscious. Alstead and his team are developing programs, including beach cleanups and other volunteer opportunities, where people can get involved, connect and work together toward a bigger purpose. The hanging art piece in the lobby was made with recycled scrap metal from the artist’s previous project, which otherwise would have gone to the landfill and custom art by Gig Harbor resident and firefighter Craig Wellbrock can be found in the coffee lounge, restaurant and activity space. “We hope to identify other areas in the building to feature rotating artists in the future.” Social experiences at Ocean5 include 22 lanes of bowling, a two-story, state-of-the-art laser challenge area, huge arcade game room with dozens of interactive games ranging from the nostalgic classics to modern-graphic action games, and they have a redemption store that offers a mix of traditional and environmentally friendly prizes. At Table 47 restaurant, the team works

directly with their sources, creating personal connections with both the farmers and purveyors. Menus are created to reflect the season, allowing for a true understanding of how the food is grown and raised. “It’s important that the farms we partner with operate responsibly, in ways that are sustainable and gentle to the planet—ultimately impacting our oceans and seas,” states Alstead. Table 47 has partnered with local farms including Rusty Wheel Farm and Adam’s Mushrooms in Gig Harbor. They get much of their vegetables and berries from Four Elements Organic Farm in Puyallup, where they have a spot for their very own Chef ’s Garden. In addition to meat and seafood selections, the menu offers gluten-free, vegetarian and vegan options. The elevated craft food and drink is a differentiating factor at Ocean5 compared to similar entertainment spaces, as Table 47 prepares all the food throughout Ocean5, so guests can order from anywhere in the building and enjoy great food and drink whether they’re playing games, relaxing by the fire or socializing with friends. Gig Harbor residents agree that they were missing a gathering spot of this magnitude, and with the growing community they truly needed someone like Alstead to make this a reality. He has succeeded in his mission, going above and beyond all expectations. It’s Alexa’s goal to create an environment that encourages students to step outside of their daily routines and comfort zones.

A

lexa Shanafelt has experienced it all, from kindergarteners learning their very first lessons to high school seniors finishing up their very last test. Alexa just wrapped up her 19th year in teaching and has tackled each and every grade, k through 12. She was most recently at Kopachuck Middle School teaching sixth, seventh and eighth graders Spanish, multimedia productions and yearbook and never tires of watching the lights go off inside her students' heads. “The most rewarding moment in teaching is when a student has an 'a-ha' moment. A Spanish professor of mine called it 'ahando.' It's when someone all of a sudden gets it and usually exclaims that they did. That always makes me grin,” said Alexa. No matter what the age or subject, it’s Alexa’s goal to create an environment that encourages students to step outside of their daily routines and comfort zones by experiencing a new idea or completing a task they are timid about. “It can be scary, but you should try to speak in Spanish with a native speaker, publish that article, write that song. The best learning is done when you push yourself and try something that challenges you,” she said. Alexa is on her way to practicing what she preaches by stepping out of the comforts

of small-town Western Washington and embarking on a new journey. Having sold her family’s four-bedroom home and the majority of their belongings, Alexa, along with her husband, adult kid and two teenagers spent a year living on a 46-foot boat in the harbor in preparation for a yearlong trip. Before she hits 20 years as an educator, Alexa is taking a year off and the Shanafelts are casting off in MidJuly to sail down the Pacific Coast on their way to several stops in Mexico. Also coming aboard Noeta is the family’s properly named voyaging cat, Gilligan. During the yearlong trip, Alexa will be ‘boat schooling’ and ‘world schooling’ not just her teenagers but herself as well as they look to explore the unique cultures and geography of Mexico. iller whales and canaries have a lot in common.

Canaries have been used since the early days of underground mining to detect toxic vapors for miners as they chipped away at bedrock in pursuit of valuable commodities from coal and diamonds to veins of precious gold. The majestic orca that has become symbolic of the pristine waters of the Puget Sound has become the canary of the waters of what is known as the South Salish Sea. The health of the mammals has been used to indicate levels of oxygen and food available to sustain the creatures that that have shared the seas for centuries.

There are three pods of orca whales that make their home in the Puget Sound. All are endangered but none more so than the killer whales that roam the southern reaches of the Sound.

transient orcas that enter the Sound from the ocean in search of easily accessible food. The transient pods, she explained, come into the Sound from the Pacific to feed on the salmon when larger prey such as seals are not available.

“The Southern killer whale is native to the Puget Sound,” explained Rachel Easton, educational director of the Gig Harbor-based Harbor WildWatch. “The resident orcas are exclusively fish eaters. In fact, they prefer King Salmon.”

Humans are also a threat to the orcas.

Easton said her organization is concerned with the loss of salmon in the Sound over the past several months caused by intrusions from humans and the aggressive feeding habits of

“Whales communicate through a language of echoes that allows them to share source of food and warn other members of the pod about dangers,” said Easton. “Noise from the growing number of whale-watch excursions and pleasure boaters can confuse orcas and pose a danger to their ability to find enough food.” Harbor WildWatch is also monitoring the

The most endangered are the six- and seven-gill sharks that live at depths of up to 900 feet below the surface. “People, especially divers, are fascinated by these sharks and will gather around them in groups to watch them feed,” said Easton. “It seems that every diver in the Sound is looking for a way to capture their own YouTube moment.” The resident sharks and the orcas of the Puget Sound will be the focus of two activities this

summer that have been designed to raise money and awareness for the preservation of these ancient creatures. On July 14, Harbor WildWatch will host its second Apex Predator Day in conjunction with the Fox Island Museum. An apex predator, also known as an alpha predator, earns it distinction as being at the top of the food chain. The health of apex predators plays a critical role in maintaining the health of an ecosystem. The day will start with a beach walk at the Fox Island Boat Launch and continue at the Fox Island History Museum, where participants will be able to enjoy games, arts and crafts, interactive activities for all ages and a special exhibit about

the environmental impact of trash that ends up in the Sound. Three quarters of the pollutants that pose a danger to sea life in the Sound does not come from oil run-off, according to Easton. “You’d never think about pouring a quart of oil into the waters of the Sound,” said Easton. “But that’s the equivalent of a car with an oil leak that forces the driver to add a quart of oil to the engine between oil changes.” She said sharks are bottom feeders that often eat the decaying flesh of fish that have died and settled to the sandy bottom.


The efforts to save orcas and sharks from the danger created by humans began this year on World Ocean Day in June when 144 dedicated individuals helped clean trash from beaches along the South Sound. “The critical situation with sharks and orcas could correct itself if we could just leave the Sound five years to recuperate,” she explained. “Orcas are intelligent animals and will evolve to survive if left alone.” The Sound would also benefit from a change in attitude by residents of Western Washington. Easton said picking up dog poop every day would help the whales and sharks in the Sound. She said the run-off from the poop from one medium-sized dog can contaminate 15 shellfish beds, which, in turn, limits the availability of krill and other nutrients in the water. Her suggestion for people concerned about the health of the Puget Sound is to challenge restaurant operators to be part of the solution by reducing the amount of food wasted at dining establishments. The unused food could help feed the homeless if it does not end up in the Sound. Easton went on to question the amount of plastic used, and disposed of, every day. She said it is hard for people to change their way of thinking. “Think about the waste in one order of take-out food,” she said. “There is no reason why people cannot provide their own containers for food they want to bring home from a restaurant. We’ve expanded on the expression ‘Reduce, Reuse and Recycle’ by adding the word ‘Rethink.’” On August 15, Harbor WildWatch will welcome noted neuroscientist Dr. Lori Marino, the founder of the Whale Sanctuary Project on the East Coast to address an all-ages Cocktails and Fishtales presentation on the status of sea mammals at Ocean5.

According to Easton, the one-day effort removed 400 pounds of debris from local shorelines. Education is the main objective of the Harbor WildWatch organization. The nonprofit reaches out to local schools and maintains a presence at local farmers markets, as well as outdoor concerts in the area, to reach people who are empathetic to the cause. The effort, she said, gives volunteers the opportunity to interact at 600 events with an average of 32,000 people every year. Adult response has been judged a response by the growing number of memberships to the nonprofit group. The student program has been an unabashed success, Easton said with a smile, based on the waiting list of 5- to 12-year-olds who have enrolled in the 20 different programs for young people. “Residents of this area love to frolic along the shoreline of the Puget Sound,” Easton concluded. “We all have to realize there’s a price to pay to be living with such beauty. People need to understand that we are the newcomers compared to the orcas and sharks that populate the Sound. W

hen most kids go for a bike ride with Mom or Dad, it’s usually around the neighborhood, down to the park and back or maybe into town to grab some ice cream, but that’s not usually the case for one local elementary schooler. “My dad and I go on many training rides that are between 10 to 30 miles at a time. I eat good foods, like pasta and veggies, before all of my rides to give me energy,” said Ryder Murphy. Ryder is putting in the miles getting ready for his second Seattle to Portland bike ride. He completed the more than 200-mile ride last year at age 7 and was the youngest finisher in the event that can attract upwards of 10,000 participants. The ride begins in Downtown Seattle and passes through Puyallup, Chehalis, Longview, St. Helen’s and many more beautiful locations before ending in the Rose City.

“I was proud and excited to be finishing the ride. One of my favorite things was beating my dad across the finish line,” said Ryder. “I really appreciated all the riders who encouraged me along the way. I think I encouraged them, too.” Despite the huge swaths of cyclists, Ryder isn’t too difficult to spot through the crowds both due to his stature and his eye-catching blue Specialized Hotrock bike. He hopes even more people recognize him this year as he’s trying to bring awareness to hunger in Washington. “I hope to also encourage other kids to get involved so maybe one day families in Washington could have enough food—even more than enough food,” he said. Ryder is partnering with Gig Harbor Peninsula FISH Food Bank and Community Service. The local nonprofit provides emergency food and clothing assistance,

The down side of R-12 was that it damages the ozone in the upper atmosphere. In the early ‘90s, many options were explored and the winner was R134a.

The R-134a systems don’t have this feature, requiring that the system be “evacuated” with a recycle machine to measure how much came out. If the system is low, a dye is injected before refilling; that way the leak will show up with a black light, saving money on finding where it is.

find that in life, fitness and nutrition, most people don’t know where they are going, why they are going there or if they even really care. This creates an attitude of anxiety, frustration and futility.

So where are you headed and why are you headed there? What if you don’t know the answers to either? One of the most powerful things I’ve ever done in my life is creating a vision board. A vision board can be done thousands of different ways, but in my case, it was a physical board with cutouts or printouts of all of the things that I thought I wanted in my life. These can be material things, metaphysical things, emotional things, family things, work things, whatever. Heck, you can even put a vision board on your vision board. What kind of car do you want to drive? What kind of house do you want? What kind of job do you want? By putting these things out there, you’ll start to have your destinations and carrots in front of you. You’ll begin to understand where you want to go and what it takes to get there.

There are a few complications to this. One is that you probably won’t have all the answers. That’s just fine. This will be a work in progress, evolving and moving over time. Things will come down, move around and new things will go up. Another is that you won’t be able to just Amazon Prime everything in your new life. It may take the rest of your life. But if you are diligent and continue to head in that direction, and you slowly start to realize all the things that you’ve posted, your success will breed more success, and you will start to understand that, in fact, this is the most incredible time to be alive, and that if you really want it, you can seek it out and realize it. Try it. I promise that it will give you purpose and planning in your life. You will understand why you get up and go to work in the morning (or don’t). When things get tough, you’ll know that it will all be worth it (or maybe it’s not). The worst thing we can do as humans is lose our sense of purpose. Seek to create and understand yours.

I

f you’re like most people, your view of exercise is unanimously positive. It’s something we could all use more of, improve at and give more to attention to in order to get the most out of our lives. However, what if your exercise was doing more harm than good?

Isn’t it odd that the very thing we believe will make us a better and healthier human is increasingly injuring us? Where it gets weird is when we end up at the physical therapist doing exercises to heal our injury from exercising. Just let that sink in.

Osteoarthritis is the leading cause of disability in Americans, affecting one in four adults and one in 250 children. Osteoarthritis is a degenerative change to joint structures as a result of underuse, overuse, misuse and injury.

Justifying injury, pain and joint damage as the price of working out and being in shape is akin to crashing your car every time you drive and accepting it as simply the price of driving.

The CDC reports hip replacements in 2000-2010 have more than doubled. For 45-year-olds, it has increased 50 percent!

Simply put, current exercise trends and functional fitness programs prioritize fitness over joint health, and without specific and intelligent training processes we will continue to see injury rates and joint degeneration rise.

As few as half of runners to as many as eight out of 10 will sustain an injury trying to get a jump on their bod for summer.

There are two requirements to resist injury and prevent degenerative changes to joints. First, your joints must be able to freely move into the positions in which the tasks you engage in require. Second, you must have maximum control and coordination of those joints in those various ranges of motion. Without both requisites, injury is not a matter of if but when.

Furthermore, studies show a minimum of one out of four to as many as three out of four participants sustained significant injuries participating in common high-intensity “functional” fitness programs; 10 percent of those injuries required immediate surgical intervention.

As the old saying goes: Use it or lose it. To maintain joint health, each joint should be moved strategically and independently through its greatest range of motion every single day to maintain its capacities. This simple daily practice can prevent further losses of mobility. However, to truly regain lost joint mobility, you must prioritize training your joints over everything else, unless of course your joints aren’t important.

Finally, collected data from the CDC reveals from 2011-2014, half of people engaged in exercise of any kind sustained an injury. Half! So the question is, if exercise is so good, then why is it racing people toward joint replacements and making Ibuprofen a major food group? Now, while pain is common, it is not normal. Unfortunately, somewhere along the way we have been sold the idea that pain is the price you pay for health.

hen hearing health-care professionals talk about hearing loss, we talk in terms of type, degree and

Type of hearing loss is determined by the auditory structures affected. Sound must travel through the outer ear, which encompasses the part you see (the pinna) and the ear canal (where you should not put cotton swabs), to the middle ear. The middle ear includes the eardrum (or tympanic membrane), the ossicles (the tiniest bones in your body: the incus, malleus and stapes) and the spaces around them. Vibration of the eardrum by incoming soundwaves in turn vibrates the ossicles, which are responsible for carrying the incoming information to the inner ear. The inner ear is where we find the cochlea (that snail-shaped organ of hearing), which is a fluid-filled shell containing all of the auditory hair cells, which are connected to auditory nerve fibers. Vibration of a membranous window by the footplate of the stapes causes movement of the fluid in the cochlea, which is picked up by the hair cells and encoded by frequency (similar to what we call pitch) along its route to the brainstem, where it is detected, then on to the brain for perception. A conductive hearing loss occurs when sound is not transmitted normally through one or multiple parts of the outer or middle ear. This type of hearing loss often makes sound much softer and can frequently be managed through medication and/or surgery. Among the causes of conductive hearing loss are: fluid in the middle ear from colds or allergies, a perforation in the eardrum, swimmer’s ear (otitis externa), ear infections (otitis media), excessive or impacted earwax (cerumen) or trauma to or malformation of the outer or middle ear. Sensorineural hearing loss is the type most commonly found in adults and is overall the most common type of permanent hearing loss. This type of hearing loss results from damage to the cochlea or the auditory nerve. As in conductive hearing loss, this type often makes sound softer and more difficult to

hear but also causes distortion even when sounds are loud enough to be heard. This may make someone say that things sound unclear or muffled, like people are mumbling. Sensorineural hearing loss can be a result of excessive noise exposure, aging, genetic or hereditary components, head trauma, drugs that are toxic to ear structures (ototoxic) or, in many cases, a combination of the above. This type typically cannot be corrected with surgery or medication and is usually treated with amplification (hearing aids or other assistive devices). A mixed hearing loss is one that combines features of both conductive and sensorineural hearing loss. This means that there is damage or an obstruction in the outer or middle ear as well as the inner ear or auditory nerve. The conductive portion of the hearing loss may be medically managed, but the sensorineural portion will remain. eflexology is the application of pressure to the feet, hands and/or ears to specific reflex points.

There are several theories about how and why reflexology works. One theory is that reflexology works with the central nervous system. In the 1890s, Sir Henry Head and Sir Charles Sherrington began research to show that there is a direct link between the skin and internal organs and that our entire nervous system will adjust to pressure or stimulation. This pressure sends a signal to the peripheral nervous system and then to the central nervous system, which sends signals throughout the body to respond by adjusting hormone release, change in blood pressure, heart rate, breathing and circulation.

A fourth theory is based on zone theory. The theory is that the body is divided into 10 zones and located within those zones are all of our organs and body systems. These zones are found in the feet and hands. By reflexing those zones we can access each area within a particular zone. If you look at your feet, the toes represent your brain and head reflexes. Beginning with the great or big toe, your entire spinal column can be accessed. From the top of your toe on the inside of your foot would be your cervical spine; just below your toe where it meets the top of your foot would be your thoracic spine; and from there your lumbar spine, beginning in the arch of your foot; and then on to your sacrum near your ankle; and lastly your coccyx or tailbone, located at your heal. These zones between reflex points are thought to connect all of our organs and systems through the nervous system.

Another theory is that when the body is in a relaxed state it can begin to repair itself. Reflexology can bring deep relaxation, which improves the circulatory, cardiovascular, endocrine, muscular, digestive, urinary and reproductive systems. With this theory, pain may be reduced with relaxation and a change in mood. There is also the theory that increasing the flow of blood, lymph, interstitial fluids and oxygen helps the body begin to repair areas where there is stagnation. What this means is that there may be areas where there is little to no movement of blood or fluids due to an injury, pulled muscle or area of poor

The American Academy of Pediatrics recommends no screens for children 2 years of age and younger and no more than two hours a day for older children.

5. Explore the outdoors. We know the Northwest can throw some wet weather at us. But don’t let the rain stop you. Dress accordingly, meet up with other families and explore the outdoors. Remember that being in the cold doesn’t cause colds.

Even background TV can interfere with a child’s ability to concentrate, and researchers have found that background noise can prevent children from hearing different sounds in words which affected their ability to learn new words and retain the ones they were taught. It can be tempting to use a screen to entertain your toddler while you are trying to get stuff done, but when you use screens as a babysitter you are actually shaping your child’s brain so that s/he will be less able to entertain herself/himself over time. Toddler brains are undergoing huge amounts of development every day. Young children’s brains are designed to develop optimally by engaging with the physical world and with the imagination rather than being fed passive viewing that bypasses the need for imagination. Here are some tips to help you avoid screen time for your toddler: 1. Choose toys that allow kids to create their own fun. For example, blocks, craft supplies and playing dress up all stimulate a child’s creativity. 2. Engage children in helping with daily household activities. Kids love to mimic us. They can help pick up dirty clothes, sort socks, sweep floors and water plants. Give them their own drawer of pots and pans and encourage them to pretend to cook when you are making a meal. It’s also good to get in the habit of cleaning

3. Read! Not just at bedtime, but find a few minutes during the day, too. 4. Get on the floor and play. Spend time encouraging the development of the parent/child bond with active play at their level.

6. Keep electronics out of sight. Unplug from your devices completely or consider checking your email, text messages or social media when your kids are not around. Make a rule about not using devices during mealtimes. Designate media-free locations at home such as bedrooms and dining spaces. Toddlers and preschoolers may not look busy, but they have important developmental work to do. Fantasy play, building with blocks, artwork, social interaction with their peers and siblings, cooking with their parents, climbing, swinging and looking at books are just a few of these critical development activities. These activities help your child's brain develop naturally, giving him/her people skills, problem-solving creativity, as well as becoming a foundation for math and reasoning. With the recognition that probiotics offer a tremendous benefit, there has also been an escalation in the number of options available. The challenge is how to sort through the myriad of choices.

I like to keep in mind when I eat that I am also feeding my microbiome. Bacteria that reside in my intestines and tend to wreak havoc love things that are sweet and made out of flour. Sugar, honey and agave can encourage the overgrowth of certain microorganisms. This also goes with breads, even gluten free, rice pastas, and almond-flour cookies. Juice, kombucha, many fruits and some forms of dairy can also be a tasty treat to detrimental bacteria. In moderation, the overgrowth that occurs from these foods in our gut can be dealt with. About 60 percent of our stool is bacteria that we eliminate every day. But when we consume this food regularly, we will likely start to have problems. Bloating, gas, diarrhea and acid reflux can all arise. Left unchecked, this may lead to foggy brain, problems focusing, sleep challenges and skin issues. Long-term this can cause much bigger problems. On top of a good diet, I take additional beneficial bacteria on a daily basis. These help repopulate and encourage growth of the good stuff. Some

The timing of potency claims is critical, whether this is at manufacture or expiration. At first, it seems a higher number is stronger. But probiotics will deteriorate over time, so the lower number could be a more potent option if good until expiration. The next thing we'll need to know is how many strains there are. You can have anywhere from one to 30 or more. Higher, again, is not always better, as a larger number of strains will diminish the potency of each individual strain. Overcrowding can also create chaos and competition since bacteria are antagonistic. Once you have a good idea of the potency, you'll then be able to compare products based on servings and price. I've seen products have four times the potency, and twice as many days’ worth, for half the price of another brand. So more expensive does not mean better.

ick Anderson is an avid re-user and recycler. When my brother and I were very young, I remember my dad taking us on walks to nearby construction sites where we would pick up soda and beer cans leftover from the workers. After a couple months we had several large trash bags full, which we loaded up and took to the recycling center. To my young amazement, we were given money for these old cans and our first lesson about the rewards of work were born as my dad split the earnings between the two of us to open our first savings accounts. As we grew, we would look forward to Saturday garage sales with Dad where we would find all kinds of fun stuff for pennies on the dollar. I learned to ski in several $2 to $3 pairs of boots, caught baseballs behind the plate with a $.25 catcher’s mitt and still carry around a cooler we’ve had in the family for more than 25 years. My dad, Rick, continues his conquest of finding great deals while keeping items of value out of the landfill and is most interested today in one main item—bikes. Rick’s Bike Sale most likely got started when it was clear my brother and I wouldn’t be sticking around Minnesota for college. I ran off to Montana, and my brother to Arizona, an unfortunate byproduct for my parents exposing us to travel at a very young age. “When you boys went away to school it was too quiet around here, and we weren’t really done being parents,” my dad tells me. “We found a local mentorship program, got screened and started mentoring a young boy named John.” John is one of six siblings who were adopted by a single mother so they would remain together as a family. Mentoring involves spending a few hours a week with John; mostly hanging out, playing games, watching movies and providing a positive environment for him. As the bond grew and my parents met John’s siblings, Dad realized he wanted to do a little more for them. Noticing that not all of them had bikes, and the ones they had weren’t in great working order, Rick set out to the Saturday garage sales in search of six quality bikes. In no time he found them, tuned them up and gave them to the kids at a very small expense. The light bulb then went off in his brain. “I thought to myself, ‘I can find bikes pretty easy, tune them and fix them up, and whatever I sell them for, donate the money back to the mentoring program,’” he said. “I didn’t look too far into the future, but it’s really taken off and it’s unbelievable to see right now.”

Rick’s first bike sale was held out of his garage with help from my mom and a couple of neighbors. It raised a couple thousand dollars of which he was very proud. This past May was the 10th time he’s run the sale. It’s now held in an auto repair shop parking lot, staffed by a small army of volunteers. The most recent donation was $46,953 now split between two organizations. “All the people that help with this is just incredible,” Rick said. “People are so happy to give us bikes, everyone at the sale is smiling and I never have to recruit volunteers. Everyone is just happy to do it.” It took us 10 years but this was the first sale my brother and I attended firsthand. In the beginning we helped from afar, me writing press releases for Dad to send out to local news outlets and both of us encouraging our friends back home to spread the word about the upcoming sale. Living two time zones away and starting families of our own, it had slipped our minds as to what an important day and event this is for my dad. Luckily my mom gave us the motherly reminder about it and we all decided to surprise Dad with two more volunteers. He was blown away when I walked in the door around 6pm Thursday night and even more shocked the next morning when my brother came crawling up from downstairs for breakfast after I snuck out to pick him up from the airport at midnight.

FEATURE STORY The work for the next Rick’s Bike Sale typically begins about three weeks after the last one ends. People hear about it from friends and neighbors who picked up a bike or donated one and are eager to donate their unused bikes to the cause. Today, going to yard sales is more of a rarity as the phone rings almost daily with someone offering up a bike for donation. “It’s really fun to give the money, but I get just as big a kick out of keeping bikes out of the landfill and into the hands of someone who really wants it,” said Rick. Once a bike is donated, Rick, along with Randy Bailey and Greg Thompson, divide them up to get them tuned, adjusted, cleaned up and stored until the day of the sale. The lead up to the 2018 sale saw more than 530 bicycles donated—a ton of tuning for just three people. At any given time there are 40 or so bikes in Dad’s garage as well as wheels and tires hanging from the ceiling, and boxes of kickstands and brake cables he’s saved off bikes that were too broken down to be restored to working order. “If I can get a kickstand, handlebar grips or tubes off one of these bikes, that’s five more dollars I don’t have to spend which goes to charity instead,” said Mr. Recycle. As the sale grew, where to put everything became one of the biggest issues. Pleading with neighbors and friends, Rick found basements, and a few other locations spread across the county, but realized he needed a more efficient system in order to maximize his time spent on bikes and minimize traveling to and from storage. A local towing company was in possession of several unused semi trailers which have been offered up for the sale. Bikes are now secured and even hung from the truck roofs, and the trucks can accommodate several

When the sale weekend finally arrives, volunteers get set on their tasks. When I arrive at 7:30 on Friday morning, I’m surprised to find close to three dozen people ready to help out. I see my parent’s friends from college, our neighbors, my dad’s fishing-club buddies and my uncle and cousins. The semi pulls up and we start unloading. Bikes are organized into children’s, men’s, women’s, road bikes and vintage/classics, but not before more than 1,000 tires need to be aired up. Several volunteers have brought their own air compressors, and there are a few on hand at the shop. The seemingly monumental task is shockingly done in just a couple hours. My Uncle Dave sets to the task of getting all the bikes in line, and true to his unbelievable attention to detail, he has

Local high school honor society members volunteer to stay up all night and watch the bikes to make sure no one runs off with them, and after a 12-hour Friday set-up day, the main event arrives. Like a wave, people come rushing in, searching for the best selection early. Some have heard about the sale while others drove by and stopped to see what all the commotion is about. Volunteers in bright green shirts direct eager shoppers to the style of bike they are looking for, help adjust the seat to proper height and let them go for a test ride. Others man the shop for last-minute tuning and adjustments, and more take payments in the form of cash or credit. It’s a whirlwind of a day, and after four hours there are just a few dozen leftover, all of which will go to another garage sale to benefit a

local juvenile diabetes organization. In 10 years, Rick has donated $177,257 and saved thousands of bikes from landfills, but what might be most important to him is completing a cycle that started when he was mentored as a young boy. My dad has always been honest with us about the home he grew up in and how his father was not a nice man, putting it lightly. A neighbor, Russell Godfredson, sensed this and gave my dad a job in his Schwinn Bike Shop where he would earn $.15 per bike putting pedals, handlebars and seats on boys’ and girls’ models. It was a place where he was safe, treated with respect, taught the rewards of hard work and lessons in perseverance, something he instilled in his own children and something he hopes to instill in the other children he continues to mentor today. “The whole point is to let them know that you care, that they have value to you and that you

are listening to them. By your actions you are hopeful that something sticks. I know things definitely stuck with me,” Dad tells me. Rick knows he’s found his calling in retirement, which he promises is not far off. He’s insulated the garage so he can work comfortably outside during brutal Minnesota winters and even sold his fishing boat to make even more room and more time to devote to the annual sale. He credits the amazing growth to Greg’s commitment to fix any problem and Randy’s unstoppable energy and networking. “His mind never rests; he’s constantly making us better,” said Rick. “I’m always afraid another nonprofit will snag him away from me.” The bikes are already coming in for the 2019 sale. The high-end donations include fullsuspension mountain bikes, ultra-light $700plus new Trek and Specialized road bikes, and even a recumbent which they recently sold online for $3,500. in the family of six already midway through high school, Rick’s 10 years as a mentor with the same family will be coming to a close soon. He hopes that through the sale he can find a few people who like to tinker, whether young or old, and teach them how to fix bikes, much like Russell Godfredson did for him. As I hang up the phone on a recent call with Dad, he tells me he bought two classic-looking banana-seat bikes at a garage sale for $1 each and that he could easily get $50 to $65 for them. I can sense the excitement in his voice and how incredibly rewarding this is for him. He also lets me know of another $1 spent on a brand new fiberglass mop bucket and mop, perfect for cleaning up the shop area. A few more items saved from the landfill and put to good use. Keep up the good work, Dad.

In Loving Memory Two mothers honor their sons by serving others By Patty Hutchens

reedom. It is something that many take for granted. We go on with our day-today lives, often not giving much thought to those who are fighting for our country at home and overseas. Unless you are over 50 years old, you don’t recall much of the Vietnam War and those that came before, when young men anxiously waited to see if their draft number came up. Yes, it was different then. But the reality is that even though young men and women are not drafted, there are countless individuals who voluntarily put their lives on the line every day. And of those, many never make it home. And for those who do make it home, they may never be the same. For those who have lost a loved one to the horror of war, the hurt never goes away. But losing one to war does not necessarily always mean death. It may mean that person comes back emotionally scarred, suffering from post-traumatic stress

disorder (PTSD) or other mental health issues that can bring about lifelong challenges which could potentially result in suicide. For those who have lost a loved one to either death by the hands of the enemy at war or by suicide from PTSD, they do what they can to carry on in life. Here are a couple stories of people who have chosen to take their anguish and turn it into something positive to honor their loved one’s memory. Gig Harbor, Washington, resident Leslie Mayne lost her son Kyle Farr to suicide in March 2009. Kyle served in the U.S. Army and, after being honorably discharged, he was treated for PTSD both overseas and in the U.S. After being released from treatment, Kyle committed suicide. With unspeakable pain and grief, Leslie launched Permission to Start Dreaming—a new take on another PTSD. The foundation, formed in 2011, partners with veterans’ programs both locally and nationally and holds annual events such as Race for a Soldier, which originated in 2011, Swing for a Soldier golf tournament and Pull for a Soldier trap shooting event. The hope is to not only raise funds to help with the needs of veterans suffering from PTSD but to also raise awareness among the public about an ever-growing epidemic. Since launching the foundation, nearly $300,000 has been raised. “We have supported many veteran organizations since 2011,” said Leslie. “We have funded, and will continue to do so, strength-based alternative and holistic retreat programs that last far beyond the actual experience.” In addition, they host a monthly Veteran Huddle meeting and are providing their first Veteran

Workshop in October that will focus on promoting and fostering post-traumatic growth. “At the end of November, we are sending six combat veterans to participate in the Warrior PATHH program in hopes to deliver a similar program in the Pacific Northwest next year,” said Leslie, referring to a progressive and alternative training for healing heroes, the nation's first non-clinical program designed to cultivate and facilitate Posttraumatic Growth amongst those struggling with PTSD and/ or combat stress. According to Leslie, the biggest need for our men and women who return from overseas is ensuring they have the connection to the right relationships, right resources and the right responses for the trauma they have experienced. There are also many ways we as a community, family member or friend can help those experiencing PTSD and depression. “Reach out to organizations like ours and ask for support and help. We will get them connected to the right resource. Get involved with our events. Begin the right relationships with organizations like ours that contribute to ‘mental fitness’ and programs that promote doing the internal work to be the best versions of themselves after their military service. Asking for help is not a sign of weakness. We need our military members to continue to serve their country at home, in their churches, communities, businesses and families,” said Leslie. Theresa Hart is a mother who also took her grief and channeled it into making an impact on veterans. Theresa formed Newby-ginnings of North Idaho in

October 2013 in honor and memory of her son, SPC Nicholas Newby, who was killed in action in Baghdad on July 7, 2011. The mission, which includes serving the families of the fallen, those who have served and those who are continuing to serve, has provided Theresa with an opportunity to channel her loss into something that gives her pride and purpose. Newby-ginnings is located in Post Falls, Idaho, and is a place where veterans, active servicemen and women and Gold Star families can come for not only basic household necessities but for peer support, resources and referrals to appropriate agencies. Run entirely by volunteers, their shop has served more than 2,500 individual and enrolls at least 10 new veterans each week. It helps keep the memory of Nicholas alive while also serving others. As for Leslie, it is the memory of her son that keeps her moving forward to make a difference. “Kyle would have thrived in the veteran community that our foundation has created. He loved the outdoors, sports and connecting with his friends. He loved to laugh, and he wanted to make us proud. He loved his country. He despised bullies. He needed to get real help with his addiction and learn how to make peace with his time in the military. He cared deeply about his friends, loved his family and wanted to serve his country. Drugs are not the answer to helping people with trauma. It is not what is wrong with you; it is what happened to you. As a country, we make a promise to our war fighters that we will have their backs when they return. The institutions have failed them. We cannot. Kyle would probably think his mom was on the right track of encouraging our civilian community to step up their game in these matters. I miss him so. His two sisters and brother carry on, but we ache still inside.�

As important as it is to support them emotionally, physically and spiritually while they are in active duty, it is equally important, if not more so, to be there when they finally come home and return to civilian life. Upon returning home, there are many men and women who find themselves unable to pick up where they left off, struggling to connect with their families, friends and communities as they once had. Through their canine team and raisers, this nonprofit organization raises and trains these service dogs for veterans at no cost to those receiving them. Delivering thank-you notes to first responders. Get your kids together to write small thank-you notes to take to your town’s local police and fire stations. Maybe your child is inspired by them, or you appreciate their bravery for the community. This is a fun and heartfelt way to show your gratitude to the heroes next door. hat were once the three small Eastern Washington towns of Kennewick, Pasco and Richland has now transformed into the bustling metropolitan area known as the Tri-Cities. “Fun in the Sun” is the motto due to almost 300 sunny days each year, making the area popular year round for outdoor activities. The confluence of the Yakima, Snake and Columbia rivers creates a water paradise for kayaking, stand-up paddle boarding, sailing, power boating, water skiing, fishing and much more. Golf is one of the top sports in the region, and it’s easy to see why with 10 challenging courses which can be played almost every day of the year. It is no wonder that the Tri-Cities are becoming a top vacation destination in Washington state. A great vacation starts with a great place to stay. The Columbia Point area is a nice central location with a marina, walking trails, restaurants and lodging. You can even catch a dinner cruise. After dinner take a stroll on the Richland Riverfront Trail and watch the red, yellow and pink hues of the sunset. It is truly breathtaking. Turn in early as your next day begins promptly in the morning. Today you will tour the B Reactor National Historic Landmark, which was part of the Hanford Unit of the Manhattan Project. The tours are free of charge but you must register online to reserve your space. B Reactor tours begin at 9am on Saturdays and depart from the Interim Visitor Center. Plan for four hours which includes a short video and introduction at the visitor center, travel to and from the B Reactor and time at the site. The reactor was the world’s first full-scale plutonium production reactor. It produced the plutonium used in the atomic bomb dropped on Nagasaki. The ride to the Hanford Site is quiet and remote. There is an eerie feeling when you step off the bus and enter the reactor. Once inside, after a briefing, you have the run of the place. There are many interesting artifacts, and the reactor itself with the rows and rows of fuel cells is a dramatic structure. It is a very interesting experience.

After the bus drops you off at the visitor center, head over to the Atomic Ale Brewpub & Eatery for lunch. It was founded by owner Aaron Burks in 1997 with an atomic theme that highlights the history of the Hanford Site and honors the workers who flooded to the area in 1944 to work at the plant. The first wood-fired oven in the Tri-Cities still kicks out delicious pizzas with the distinctive crispy crust of a wood-fired pizza. The menu is a good complement to the hand-crafted ales Atomic Ale is known for. Make sure to check out the glowing “atomic rod” and the radioactive warning sign. It’s a fun photo op. After lunch, plan to take an intro to stand-up paddleboarding (SUP) class with Northwest Paddleboarding. This fun class will teach you the basics you need to enjoy this trending sport. It is surprisingly easy to learn, and the boards provide a much steadier base than you would expect—so sturdy in fact that the company offers yoga classes on the boards. If you have younger children and at least three people, you can reserve a private Intro to SUP class. Children must be at least 6 years of age to take the class. It is held at Two Rivers Park in a lagoon off the Columbia River. For dinner, head over to Tulip Lane to Tagaris Winery and Taverna

They can get up from the table and there is plenty of room to explore the large patio and artwork. The menu has a large variety, and you can make a meal out of a selection of Tapas. In addition to wine there are some great craft cocktails. In the morning, head over to the Uptown Shopping Center, which was created by the Atomic Energy Commission and opened in 1949. The shops will be closed but the center has a vintage feel with lots of artwork and is worth a drive by. You are here to visit The Spudnut Shop. It is Richland’s oldest coffee shop and home of the world-famous Spudnut, which is a doughnut made out of potato flour. There is a reason these Spudnuts are so famous. They are light, puffy and slightly sweet and oh so good. This is where the locals hang out. The shop has been featured on the Food Network’s “Unwrapped” and the Travel Channel special “Donut Paradise.”

For your last activity before heading home, visit the REACH Museum. This bright, airy museum’s focus is the natural and cultural history of the reach of the Columbia River and greater Columbia Basin. The exhibit on the Manhattan Project adds additional information and exhibits not seen at the Manhattan Project National Park. The section on the Ice Age Floods is very interesting and shows the great effects these floods had on the area. Make sure to step outside to see the vintage trailer and enjoy the views of the Columbia River. It is easy to see why the Tri-Cities are a top vacation destination in Washington state. Overnight Wheat and Spelt Courtesy of Millville Pizza Co.

Ingredients:

This recipe makes 1 loaf Bulk Fermentation: six hours Proof Time: four hours (70°F room temperature, maximum 42% humidity) Sample Schedule: First mix at 6am, second mix at 6:30am, fold three times between 7 and 10am, bulk ferment until 2:30pm. Leave in mixing bowl and set in fridge at 2:30pm and leave there overnight. Remove from fridge and shape four hours before baking

Materials:

2 ¾ cups whole wheat flour (75%) ¼ cup spelt (5%) ¾ cup white bread flour (20%) 3 cups water (90°F) (80%) 1 tbsp. sea salt (scant) (2.6%) ½ tsp (scant) instant dry yeast (0.3%)

Method:

• One (1) bread proofing baskets • One (1) Dutch oven • One (1) cooling rack

First Mix In a large mixing bowl, combine whole wheat flour, spelt and white bread flour with water (90°F). Cover and let rest for 30 minutes. Second Mix Sprinkle sea salt, (scant) instant dry yeast evenly over the flour/water mix. Mix by hand. Gently stretch and fold dough, working around the bowl so all sides are stretched and folded. After completing one full circle of stretch and fold, pinch dough six to eight times to thoroughly combine the yeast and salt with the flour/water mix. Repeat this step three times. Fold Stretch and fold three times more over the next three hours (see above for stretch-and-fold description). Do not pinch dough. The ingredients have already been thoroughly combined! Cover with saran wrap and place in fridge overnight. Shape Remove and uncover dough from fridge. Cover work surface with white flour and knead dough until slightly warm and with a smooth surface. The ball should be medium-tight to the touch. Dust one proofing basket with semolina and place dough ball in basket. Proof Cover and set dough in a warm area for four hours. Remember to begin heating oven 30 minutes before proof so the oven is heated when the dough is ready to bake. Preheat oven to 450°F with Dutch oven inside from start. Bake loaf in Dutch oven for 22 minutes. Remove from Dutch oven and bake for additional 12 minutes. Enjoy!

Note: To test if your dough is fully proofed, poke the dough about ½ inch in with your finger. The finger indention should gradually rise back up. Under-proofed dough will be hard to indent and over-proofed dough will not repair the indention.

Now in its 14th year, the Golferitaville tournament will be held at McCormick Woods on Friday, July 20. You’ll weave your way through 18 holes and hundreds of pink flamingos while donning your best island living attire. Put on by the Midday Rotary Club of Gig Harbor, Golferitaville raises upwards of $50,000 for local nonprofits. These include CASA children’s advocates, the PTSD Foundation for veterans, Red Barn Youth center, high school scholarships and more. Harbor History Museum’s Round Rock Contest

Held on the beautiful Gig Harbor waterfront, this annual event features unique and original art and crafts, music, food booths, authors and illustrators, artist demonstrations, children's activities and the Peninsula Art League Members' Art Exhibit. Participants search for the roundest natural rock they can find and submit it to the Harbor History Museum between July 24 and August 1. The winners will be announced at the Harbor History Museum Vintage Fair on August 11. Cash prizes will be awarded to the five rocks judged to be the most perfectly rounded rocks.
