When you need care quickly, but don’t need an emergency room, Bonner General Health Immediate Care is open seven days a week for urgent and minor care needs.

PUBLISHER Make Lifelong Memories IT WAS NOT THAT LONG AGO that we were taking out the patio furniture from storage and planning our activities for the summer months. Suddenly we find ourselves facing back-to-school shopping, moving kids to college and wondering where the summer went. Take this month to truly get all you can out of the rest of summer. Plan gatherings with friends, take the kids on daytime excursions or even plan a long weekend to get away and enjoy the sunshine and outdoors. In the Pacific Northwest, we are so fortunate to have a multitude of opportunities around us. Beautiful mountains to hike, lakes and the Puget Sound to recreate and festivals to celebrate are just some of the activities in our own backyards. Do you enjoy music? Check out the concerts going on in our area. Enjoy a show by Boz Scaggs and Michael McDonald at the Ste. Michelle Winery in Woodinville or one of the concerts at Sandpoint’s Festival at Sandpoint the first two weeks in August. There is something for everyone. If you have kids who love to explore, consider the Seattle Aquarium or the Woodland Park Zoo in the Seattle area or venture to Silverwood Theme Park just north of Coeur d’Alene.

THE HEART TO CARE. THE SKILL TO HEAL.

Take time to relax and enjoy life. The housework will still be there and the laundry may pile up a bit, but the memories you will make are something that will last forever.

YOUR MASTER BEDROOM

CREATE AN OASIS IN YOUR HOME

PEACE, TRANQUILITY, SERENITY ‌ these are words that make your shoulders relax, your eyelids heavy and have you picturing yourself in a quiet oasis. I imagine low lights, the smell of essential oils, my body the perfect temperature and in a state of relaxation in peaceful surroundings. This is also how your master bedroom should be; your oasis in your own home that you can escape to for some peace and quiet to shut the world out. To evoke this comfort, your bedroom should be painted in relaxing neutral colors. No bold energizing red, orange or bright yellows belong in the bedroom. Monotone colors are OK—use softened blues, greens and earth tones of tans and creams. Rule of thumb with decorating a bedroom: The headboard wall is usually the accent wall. If you are going to do any accent colors or hang artwork, vacation photos and so on, the headboard wall is where you want to do it.

INVEST IN A GOOD BED

Lighting needs to be ambient lighting with minimal task lighting, such as bedside lamps for reading. You should have easy control of lights so you don’t have to get up to turn them on or off. Dimmers are a good idea so you can control the level of lighting and the brightness in the room. No harsh textures. Glitter and polished shiny surfaces do not belong in the bedroom. Think of natural settings that bring you peace and incorporate those textures into your bedding, wall coverings, window coverings and flooring. If you have a hard surface in your bedroom such as wood or tile, use a large area rug. This rug should be alongside the bed so feet have a soft landing pad every morning. (This will also help with the acoustics.) Invest in a good bed. You spend a lot of time here. Make sure that it fits your body and provides the support and comfort that you need to get a good night’s sleep so you can awake feeling relaxed and energized. Scent also contributes to your emotional state.

SandpointLivingLocal.com

20

Give your bedroom a fresh smell; no harsh perfumes or incense that linger in the air. Keep it clean and light—lavender, linen and rose are relaxing scents that aren’t too heavy. If your bedroom has a lot going on now, simplify. Declutter, clean and put away items. Minimize furniture and accessories. Laptops, televisions and phones are things we may look to when there is downtime and we are getting ready for bed. You start scrolling through and then realize two hours later that you are still no closer to being relaxed than you were when you started. Keep these items to a minimum in the bedroom. They tend to stimulate your mind and thus are counterproductive to you being able to relax. Most bedrooms should error on the side of being more masculine than feminine. By this, I mean don’t go over the top with lace, frilly layers of bedding, shams and pillows. By keeping things simple, clean, smelling good and low-key, you will be relaxing in no time.

Of course, “legacy” can mean many things. In the broadest sense, your legacy is how you will be remembered by your loved ones, friends and the communities to which you belong. On a practical level, establishing your legacy means providing your family and the charitable organizations you support with the resources you’d like them to have. And that means you may need to take the following actions: Create your plans, communicate your wishes and review and update your documents. Let’s take a quick look at all these steps: • Create your plans. You will want to work with your legal professional, and possibly your tax and financial professionals, too, to draft the plans needed to fulfill your legacy wishes. These plans may include drafting a will, living trust, health-care directive, power of attorney and other documents. Ideally, you want these plans to do more than just convey where you want your money to go—you want to impart, to the next generation, a sense of the effort that went into building the wealth they receive. Without such an appreciation, your heirs may be less than rigorous in retaining the tangible legacies you’ve left them. • Communicate your wishes. It’s important to communicate your legacy-related wishes to your family members as early as possible. By doing so, you can hopefully avoid unpleasant surprises and hurt feelings when it’s time for your estate to be settled—and you’ll also let

people know what tasks, if any, they need to perform. For example, if you’re choosing a family member to be the executor of your estate, or if you’re giving someone power of attorney over your financial or healthrelated matters, they should be prepared. • Update your documents. During your life, you may well experience any number of changes—new marriage, new children, opening a family business and so on. You need to make sure your legal documents and financial accounts reflect these changes. For example, if you’ve remarried, you may want to change the beneficiary designations on your IRA, 401(k) and other retirement accounts—if left untouched, these designations may even supersede the instructions left in your will. And the directions in life chosen by your grown children may also dictate changes in your will or living trust. In any case, it’s a good idea to review all your legacy-related documents periodically, and update them as needed. In addition to taking the above steps, you also need to protect the financial resources that go into your legacy. So, when you retire and begin taking funds from your IRA, 401(k) and other retirement accounts, make sure your withdrawal rate is sufficient for your living expenses, but not so high that it eventually jeopardizes the amounts you planned to leave to your family or to your preferred charities. A financial professional can help you determine the withdrawal rate appropriate for your situation. With careful planning, and by making the right moves, you can create the type of legacy you desire—one that can benefit your loved ones far into the future.

HYPERTHERMIA KNOW THE SIGNS AND PROTECT YOUR FURRY FRIEND BY DR. DAWN MEHRA, NORTH IDAHO ANIMAL HOSPITAL

BE CAREFUL

SUMMER IS FINALLY HERE, and each year during July and August at North Idaho Animal Hospital, we treat patients suffering from heat exhaustion.

vehicle may increase by an average of 40 degrees Fahrenheit within one hour regardless of outside temperature! Bottom line: We can’t be too careful with our animal (and human!) companions.

Everyone understands the stress of direct sunlight on a furry dog or cat, and most folks are very careful not to over-exercise their pet (or themselves) in the middle of a summer day. However, we cannot emphasize enough the threat of a closed space—even with ventilation— on a warm day.

There are other conditions that can affect your pet’s sensitivity to heat. Bulldogs, and other short-faced canines, have very different breathing anatomy—their tracheas (windpipes) and airways are often reduced in diameter and become stressed easily by the heat. Panting alone can cause elevated body temperature! Obesity and other diseases can predispose a pet to hyperthermia.

Hyperthermia is life threatening and requires immediate treatment. A dog’s normal temperature ranges between 100 and 102 degrees; we consider anything higher than 104.5 degrees a true emergency. In a recent study from Stanford University Medical Center, researchers found that even on a relatively cool (70 degree) day, the temperature inside a

(more than 105 degrees) can actually become jello-like and literally melt. Blood in the urine may also be a life-threatening sign. What to do A hyperthermic dog (or cat) should be placed in a cool area. Your pet’s temperature can be lowered by placing cool moist towels around their groin, armpits, paws, ear flaps and abdomen. Airflow, by using an electric fan, can also aid the lowering of the temperature. This will help immediately and can drop the temperature 1 degree or more. Then get your pet to your doctor! As stated above, the inner organs are very susceptible to hyperthermic damage. What not to do

Custom Care to Fit Your Budget

Cooling pets too fast can actually shrink the peripheral (outside) blood vessels and prevent the core blood from cooling. This means you should avoid extremely cold water or ice. Try to reduce your pet’s stress level as much as possible as you screech into your veterinary hospital’s parking lot.

Obviously, the best possible solution to this issue is to avoid the situation all together. Thinking ahead and prevention is always the best cure.

LIFE & COMMUNITY HEART AND SOUL

THE BONNER COUNTY FAIR Celebrating 90 years of family fun. By Jillian Chandler

2017 MARKS THE 90TH ANNIVERSARY of the Bonner County Fair in Sandpoint, with this year’s theme—Remembering Our Roots. The fair takes place at the Bonner County Fairgrounds, located at 4203 North Boyer Road, August 8 through 12, and features more fun and entertainment than ever before. When the first Bonner County Fair was held in 1927 at the original fairgrounds at War Memorial Park, the Sandpoint Kiwanis was the main organization heading up the venture, with a modest 20 communities participating. Many would say that “fair” and “4-H” go hand-in-hand, but during the fair’s debut, the only 4-H project exhibited was Boy’s Potatoes. Flash forward to 2017, where the five-day event features fun and education in grand style. The Bonner County Fair is a family friendly event highlighting rides, live music, rodeos, a multitude of exhibits including 4-H livestock, contests, food booths and various activities for all ages. The fair kicks off with its longstanding tradition, Fair Royalty, which will be announced August 8, and concludes with the excitement of the Demolition Derby on Saturday night.

27

This year, there are many new activities, contest and competitions! According to Rhonda Livingstone, who has been fair manager for the past 15 years—but was involved in orchestrating entertainment, contests and demonstrations for the fair for more than two decades—there will be an exciting and entertaining new event this year with the mini motocross, sure to entertain audience members of all ages. In addition, fairgoers will be delighted by the Doo Wah Riders, Michael Swenson and Animal Cracker Conspiracy. Kids and adults alike will take joy in the USDA Petting Zoo, sponsored by several area businesses. To commemorate 90 years of the fair, there will be a Progressive History Wall in the main building and they will house and show a collection of antique tractors and machinery. Don’t miss out on this year’s fun at the Bonner County Fair. For more information, call 208.263.8414 or visit BonnerCountyFair.com.

ALPINE FAMILY MEDICINE opened its doors to the Sandpoint community August 1, 2017. Katie Sweeney, a board-certified family nurse practitioner, is bringing more than a decade of health-care experience to her patients. Having served the communities of Sandpoint and Bonners Ferry for the last six years, she is now ready to provide her patients with a new medical home. Born and raised in Sandpoint, Sweeney’s parents, grandparents and great grandparents are Sandpoint natives, and her husband was born and raised in Bonners Ferry. They are true locals in the community. The building that houses Alpine Family Medicine was built on Sweeney’s great grandparents’ property— where they raised their 13 children—many years ago. Her grandfather, Phil Bricker, ran the Tam-O-Shanter most of his life until his recent retirement, and her mother, Anna Phillips, has been a registered nurse at Bonner General Health for the last 22 years and has been a role model for Sweeney all of her life. Having attended eight years of college, Sweeney has a unique nursing background and has completed advanced education to prepare her in her roles as a primary care provider. Her focus in not only on the treatment of disease but partnering with her patients and actively involving them in decision making that optimizes their overall health, taking a preventative approach to disease management. She and her staff believe in listening and spending time with their patients to achieve the very best outcome as well as maintaining cost-effective health-care options. At Alpine Family Medicine, they want to make it as simple as possible for patients by partnering together with them and taking the role as their health-care partner in the medical home. “Ideally, we want our clinic to function as the ‘home town’ medical clinic; the way our health care used to be,” Sweeney says. “Communication and follow-up is very important and a central goal for Alpine Family Medicine.” The clinic accepts most major insurance companies, as well as Medicare and Medicaid, and welcomes men, women and children. Services that are offered include management of acute and chronic illnesses, mental health,

wellness exams for the entire family as well as sports physicals and in-office surgical procedures. They specialize in women’s health care, offering a full spectrum of reproductive health care and services including IUDs, Nexplanon (implantable birth control) and birth-control management, though they do not provide maternity services. They are fully equipped to manage most chronic illnesses including heart disease, diabetes, asthma, COPD, abnormal menstrual symptoms as well as abnormal Pap-smear management, menopause, depression, anxiety, Coumadin management and more. Services also include in-house testing and in-house lab draws for blood work. They strive to meet acute care needs—including but not limited to coughs, colds, sinus symptoms, allergies, urinary symptoms, sprains or sports injuries and laceration—in a timely manner; most sameday appointments. They can perform in-office surgical procedures such as mole removal, toenail management and removal, laceration repair, joint injections, endometrial biopsy and abscess drainage and more. Sweeney is grateful for the opportunity to better serve the Sandpoint community and attributes the achievement of opening her own practice to those she most cares about. “The support from my family, friends and patients while planning and implementing my business plan has been plentiful. My husband and two daughters have helped with the office layout as well as my family,” she says. “My patients have been my central motivating factor to drive forward with opening this clinic. I am thankful every day I get to help my patients. I absolutely love my career and feel very fortunate to be a medical provider. I have a great respect for this profession and for each and every patient that I get to see. Being able to see my patients through an illness or injury and come out to a healthier outcome is absolutely priceless.”

GOOD NEWS Ken Higdon’s passion to benefit future generations

G N I T S A

AL WHEN KEN HIGDON RETIRED, he had a dream that he was determined to fulfill—build a log cabin on a lake away from the hectic life of the big city. And just like many others who call this community home, Sandpoint fulfilled that dream. Sadly, his dream was short lived as Ken passed away unexpectedly following back surgery in January of this year. But in the short time he lived here, Ken was not the only one blessed; the people of Sandpoint were given the gift of his zest for life, his desire to share his stories and his love of community. Ken and his wife Sabrina moved here in October of 2014. He had retired after a 32year career in baseball, which ended with 17 years in the major leagues. He was clubhouse manager for the Los Angeles Angels the last 16 years of his career and was part of the World Series team of 2002. It was a grueling career that Sabrina likened to being “mom for 50 adult men.” But it was a career that not only fulfilled Ken’s passion for baseball but also led him to meet the love of his

life. Sabrina worked in the front office for the Angels selling sponsorships for the team. Ken’s and Sabrina’s paths occasionally crossed, and the two began to date after being acquaintances for five years. “He finally let his guard down,” said Sabrina. “He always said he’d never date someone he worked with.” That was 10 years ago, and the two married in 2009. Sabrina continued to work while Ken enjoyed retirement and researched for the next place they would call home. “It was a lifelong dream of his to live in a log home on a lake. He used to spend hours scouring magazines looking for the perfect log home and locations, mostly while sitting on airplanes flying from city to city with the ball club,” said Sabrina. “He was so happy when he met me, and I was happy to go along with his dream. I was even happier that he let me decorate the house. It was really a great partnership, and we had a great life together here. We didn’t have enough time together to enjoy it.”

The couple came to Sandpoint several times touring properties by boat until they found the perfect location. “Ken just loved the smalltown community feel of Sandpoint,” she said, and shared that Ken had made several friends in the world of baseball over the years, but he established some of his deepest friendships in our community. After moving to Sandpoint, they quickly made friends. Sabrina volunteered for Kinderhaven’s Festival of Trees, and the couple became involved in some activities for the Bulldog Bench booster club. “Ken liked to focus on things that involved kids,” said Sabrina. So when Ken passed away in January and the Los Angeles Angels asked Sabrina where she would like memorials to be sent, it seemed natural for Sabrina to consider a cause that would not only embrace Ken’s love of baseball and the Sandpoint community, but would also make a difference for kids in Sandpoint. “Ken loved what sports did for kids,” Sabrina said. Her first call was to her friend Clint

When Ken passed away in January and the Los Angeles Angels asked Sabrina where she would like memorials to be sent, it seemed natural for Sabrina to consider a cause that would not only embrace Ken’s love of baseball and the Sandpoint community, but would also make a difference for kids in Sandpoint.

Gunter. They talked about it and came up with the idea of constructing an indoor pitching and batting area at Travers Park. “We wanted to make it something that would benefit all kids, not just those in the high school. This is something that can be used by everyone in the community, from Sandpoint Little League to dads taking their kids to the park to play ball,” said Clint. They are currently working with the City of Sandpoint on plans and have raised approximately $4,000 thus far. Sabrina would like to eventually enclose the structure completely and hopes to keep the fundraising going. As both Clint and Sabrina recall Ken’s life, they grow tearful talking about the man who was so full of life. “Growing up here like I did, you at times take things for granted,” said Clint. “It is so great to see others like Ken relish the time they have here.” Clint said he misses his close friend and loved sharing time with him and listening to his stories. On one occasion, Ken shared his World Series ring with Clint and let him try it on; it is something he will never forget. “Here we are so far removed from major league sports,” said Clint, who added that he enjoys meeting people from all over who now call Sandpoint home. “New friends spark such cool experiences that you are not expecting. It

makes our town a lot richer.” For this year’s Little League season, Clint coached the Sandpoint team the Angels. “We wanted to be the Angels to honor Ken,” said Clint. For opening ceremonies of Little League season, Sabrina arranged for 200 Los Angeles Angels hats to be given out to the kids. Keeping Ken’s memory alive and benefiting the families of Sandpoint is something that keeps Sabrina going, even on the toughest days. “He was a great guy who worked so hard and never took anything for granted,” said Sabrina. As all those who knew Ken continue to grieve, Clint finds comfort in doing what he can to help raise funds for the structure to be built in Ken’s memory. “As Ken’s friend, it helps to heal and bring something for future generations to enjoy,” he said. SANDPOINT’S

BY THE #S September 1

The date Don will retire.

6

The number of grandkids Don has that he plans on spending more time with.

1974

The year Don first got into the glass trade.

THE OPEN SIGN is flashing, the front doors are unlocked and the music is on. The store doesn’t open for another two hours, yet Don Thomas is already sitting at his desk. He’s as reliable as they come, as genuine a person you’ll ever meet and loyal through and through. When he first thought about coming to work at Selkirk Glass & Cabinets 10 years ago, he knew he wanted it to be his last job. He’s accomplished this feat and as of September 1, he’ll be retiring from the place he’s always been proud to say he worked. His plans for retirement? He has six young grandkids that’ll be traveling and sleeping in Grandpa’s new travel trailer. He’s got a few fishing holes that need to be tested, and he’ll have more time now to dedicate to his artwork and painting talents. He won’t be completely absent from Selkirk though. He’ll still be the familiar voice we hear in the Selkirk radio ads, which has become a trademark for the company. He’ll also be the first person called when the store needs help in the glass shop. And more than likely, he’ll have to field a few phone calls when we’ll need to pick his brain for its wealth of knowledge; knowledge that

can only come from 41 years of experience in the glass industry. Don first got into the glass trade in 1974, but when the housing crunch hit Missoula, Montana, in 1979 is when he really began specializing in custom shower doors and mirror work. There isn’t much he doesn’t know. A customer walked into the store the other day holding an obsolete piece of “glass,” and Don took one glance and said “Easy Bake Oven huh?” He took it back to the glass shop, fabricated a new piece and that customer walked out with exactly what they needed (and the younger generation in the store got schooled on what the heck an Easy Bake Oven is). This experience comes from not only working in glass shops and installing, but from owning his own business. When he moved to North Idaho in 1979, he found himself not only a business owner, but single-handedly raising three boys in diapers (2-year-old twins and a 1-year-old). He says that’s when divine intervention hit and he met his wife, Cindy. Divine Intervention is right—with Don and Cindy together, good things happen. The

selflessness they possess and their willingness to help others is remarkable. Any of us would be proud to say we’ve accomplished a single thing they’ve done over the years, but their list of contributions goes on and on. You’d think that with work and raising three kids, Don and Cindy wouldn’t have been able to squeeze anything else in their busy schedules, but while the boys were still young, Don and Cindy were volunteer EMTs for six years in Spirit Lake. They worked full time, yet after work on Monday, Wednesday and Friday from 6pm to 2am, Don volunteered his time and Cindy volunteered the off days that Don didn’t. Like two ships passing in the night, Don and Cindy did this as a service to the community in which they lived. Most of us would only do this if it meant extra income, so I’ll pause here for that to sink in on how much of a sacrifice that must have been for the two of them. No matter which community they live, Don and Cindy are always happy to help those in need. Here in Sandpoint, Don worked tirelessly for 10 years raising money for Toys for Tots. He made it his mission to raise as much money as he possibly could each year. He wasn’t bashful about using his community ties, and no contractor was safe from being hit up for donations. Don would post those donations publicly, and it became a friendly competition among contractors to see who could donate the

most. Receiving between $3,000 and $6,000 each year, the real winner was the Toys for Tots program, thanks to Don’s ingenuity. It’s no surprise that Don has a soft spot for kids. Maybe it’s that trademark voice of his, but kids don’t see him as a stranger, and any kid that comes into the store always leaves a toy richer. Don has toys stashed away in the cabinets in his office, and whenever a customer comes in with a young child, Don can be seen putting his work on hold, and before you know it, that kid has a new toy to take home and play with while the parents shop. Santa Claus must have recognized this warm demeanor within Don because he has trusted Don and Cindy with his believers and their children for the past 20 years. Not only are Don and Cindy in direct communication with Santa Claus each year figuring out which kids are naughty or nice, they shop for, organize and provide hand-wrapped gifts for each child while representing Mr. and Mrs. Claus. Don does not take this responsibility lightly. He reads directly from the letters mailed to Santa and somehow knows secrets of the children that are shared only through letters to the North Pole. Although I‘d love to share more about how truly special this is, Santa doesn’t want too much revealed about this magical connection with Don for those little ones reading this.

SandpointLivingLocal.com

38

As you’ve read, both Don and Cindy have soft spots in their hearts for their community, but they also feel rewarded being a part of it. When Don was hired in the Spring of 2007 at Sandpoint Furniture/Carpet One, it was with the intention that he would help mold and shape the newest part of their complex, Selkirk Glass & Cabinets. He completed his commitment to his previous employer on a Friday, and he was scheduled to start this new job Monday. He never made it there on Monday. That weekend, Don broke his back, was flown to Harborview Medical Center in Seattle and was in a drug-induced coma for the next six weeks. The family oriented board members of Selkirk Glass & Cabinets/ Sandpoint Furniture/Carpet One assured Cindy that Don’s job would be waiting for him whenever he was ready to work. Finally, in May of 2007, with rods in his back, vertebrae fused and a new appreciation for life, Don was able to come to work and has been here ever since. He’s the first one in and sets the tone for each day—to say he will be missed is an understatement. We’re blessed to have worked with him the past 10 years and look forward to his occasional visits after his retirement in September. Between now and then, please stop in and say hi to Don and when you hear his voice on the radio, know that the man behind the mic is a pretty special guy.

IF YOU ARE LOOKING for a full-service waterfront resort and marina that offers flexibility and convenience coupled with excellent customer service, look no further than Dover Bay Resort and Marina. Owner Ralph Sletager, a Sandpoint native, has been successfully developing and managing real estate through his company, Waterfront Property Management, for more than four decades. Since 2008, Sletager’s Dover Bay Resort and Marina has been offering guests from both near and far a surreal retreat in Dover, Idaho. The four-season, full-service resort features well-accommodated vacation rentals and waterfront bungalows for groups and individuals eager to explore the area. The property offers one of the top restaurants in the area—Dish at Dover Bay—and one of the best marinas around, with a boat launch, gas dock, and seasonal and temporary moorage.

“The natural beauty of the area that surrounds us is paramount to attracting tourists to the area,” he says. “We pride ourselves on the high level of service we provide the guest, along with excellent amenities including a salt-water pool and hot tub open year around.” In addition to providing locals and visitors a haven unlike any other, they host community events, as well as weddings, on site throughout the year at The Homestead Barn. This year’s events include Concert with a Cause, with money raised benefiting a local high school

Based in Dover Bay, the retreat offers something for everyone, whether it’s sightseeing in one of their float planes, wake surfing on Lake Pend Oreille or taking advantage of the many other incredible attractions in the area; guests are sure to enjoy a stay at Dover Bay. Nestled in a dramatic natural setting and located on Lake Pend Oreille, Dover Bay Resort and Marina includes more than 9 acres of parks and beaches, 9 miles of walking and biking trails which connect to the North Idaho Pathways and is just 3 miles from Downtown Sandpoint, where a multitude of art galleries, restaurants and retail outlets are ready to be discovered. The property is distinct in that it features irreplaceable natural amenities, creating a rare opportunity to be part of a waterfront community. As Manager Matt Meneghini says, “Where else can you find a 285-acre community directly on the shores of a fantastic lake? The location of having the second largest freshwater lake west of the Mississippi out your front door, a world-renowned ski mountain out your back window and the quaint friendly town of Sandpoint nearby is distinctive.” According to Meneghini, Dover Bay is an easy weekend getaway for the second home buyer, with just a 90-minute drive from Spokane, 45 minutes to Coeur d’Alene and 30 minutes to the Canadian border.

student who was diagnosed with leukemia. In the fall, they partner with Washington Elementary School and the Washington School PTA, raising funds for the school and its activities. Throughout the year, they support other organizations by hosting dog walks and donating to other fundraising events. Annually, Dish at Dover Bay hosts the Festival at Sandpoint poster unveiling, which took place mid-July. When it comes to what is most rewarding about the work they do, Meneghini says: “We get to see, talk to and work with people every day of the year. Even better, they are on vacation and enjoying themselves. It is great to see people have the time of their life after a healthy dose of

The Idaho Club Re-Energized New home sites and plans for a new clubhouse igniting enthusiasm

t was December of 2008 when the clubhouse at The Idaho Club burned to the ground in a devastating fire, extinguishing all the hopes and dreams of so many. Since that time, the club has gone through some highs and lows, but now it promises to be better than ever. Earlier this year, The Idaho Club, a Jack Nicklaus signature golf course, was sold to Valiant Idaho LLC, and the plans to rebuild a new clubhouse complete with a year-round restaurant are well underway. While they will utilize the same footprint to rebuild the clubhouse, the new structure will be far different from the previous one. “It will be more of a mountain-modern style with a lot of light and windows,” said Rich Curtis, who along with Carrie LaGrace are the exclusive listing agents for the home sites at The Idaho Club through Tomlinson Sotheby’s International Realty. There will be many amenities for residents and members to enjoy including a workout room and pool, as well as a full restaurant open to the public.

According to Curtis, they will break ground on the new clubhouse in the spring of 2018 and are hoping to have it fully operational by Christmas of that same year. Now a semi-private club, there are both golf and social memberships available. And in what used to be an initiation fee of $50,000, it is now only a one-time fee of $3,500 to join plus monthly dues. Curtis and LaGrace are excited about the new energy that is part of The Idaho Club and said interest in purchasing real estate at this scenic location has escalated considerably over the

last 60 days. With a new waterfront marina planned complete with lot sites, boat slips, a common area and facility for members, the newly added lots are drawing people both locally and from other parts of the country. There will be a shuttle available for people to commute to the course from the marina so it is feasible to load your clubs in your boat and ride over to the marina for a round of golf at The Idaho Club. What more could one ask for than a day on the lake and on the golf course? “The confidence is back and owners are doing a lot to make this happen,” said LaGrace. With 80 lots for sale, Curtis and LaGrace have sold five lots and currently have four under contract in the past 60 days. The attraction is not just in the golf or the Rendering showing view of the pool

beautiful surroundings; people also are drawn to The Idaho Club because of the fact it is a gated community that offers an abundance of various price points. “And we have Lake Pend Oreille and Schweitzer all in one place,” said Curtis. On Moose Mountain there will eventually be a place where they can host weddings offering stunning views and larger lots up to five acres in size. Interest in home sites has been primarily from people out of town seeking a second home,

but locals are looking to move out to The Idaho Club as well. “It’s really the best of all worlds—it is rural, yet only 9 miles from town, you have the scenic mountains and the safety of a gated community,” said La Grace. And of course there is the wildlife—eagles, moose and more. Is your interest piqued? Check out the video clips on their website, TheIdahoClub.com. There are realtors on location from 11am to 5pm seven days a week to provide tours.

2017 FESTIVAL AT SANDPOINT Bringing people

together through music

By Jillian Chandler

MUSIC UNITES PEOPLE. IT BRINGS GROUPS of all ages and all walks of life together to enjoy the universal love of song. Now in its 35th season, The Festival at Sandpoint continues to create an atmosphere that nurtures musicians and spectators alike year after year, with its annual summer concert series. For both the performers and audiences, each concert that takes place during The Festival is a success. What better way to spend a summer evening than enjoying a concert under the stars at Memorial Field? What most don’t realize— or what rarely crosses one’s mind—is what goes on behind the scenes to make each show happen, each season, seamlessly. There are countless people behind the scenes, each and every year, working tirelessly to do their part in continuing to bring this spectacular music event to life. According to Executive Director Dyno Wahl, “We are celebrating 35 years of music under the stars on the lake in Sandpoint, Idaho, this year. I think the Festival’s secret of success over the years has been community support—from the generous contributions by individuals and businesses to the gift of many hours of time from hundreds of volunteers—The Festival at Sandpoint is treasured and celebrated by the people who make it happen.” Dick and Mary Vail have been the chairs of artist transportation for the past 22 years. including airport pickups as well as transportation when the artist is at the venue. They cover the headliners as well as opening acts. Dick is the main driver, and a majority of their drivers have worked with them for more than 15 years. Involved for more than two decades, Mary has this to say: “We keep coming back because we believe in The Festival, and the folks we work with are wonderful. I can’t say enough good things about Dave Nygren [production manager] and the gals in the office. … The crew working backstage –especially hospitality—is great, and we have an excellent working relationship with them.” She added: “We are glad when all the rush is over the week following the final concert and have lots of memories to take with us.” This year marks Sue and Art Andrews sixth year as co-chairs of backstage hospitality. Each day during The Festival, they work with tour managers to meet their needs throughout the day, which can involve setting up and serving breakfast, lunch and dinner, as well as arranging after-show food and being on the field from early morning to after midnight, including cleanup after each concert, and the list goes on. As they said regarding their involvement with The Festival at Sandpoint: “We enjoy contributing to the community by making the artists’ visit to Sandpoint a pleasant one, with professional and competent service while they are with us.” In addition, “The Festival is a very special event, both for artists and attendees, with our beautiful

Spokane Symphony conducted by Gary Sheldon with piano soloist Tien Hsieh (August 13). Supporting artists include The Roman Candles and The White Buffalo. And don’t forget about the Family Concert, “The Frog Prince,” Sunday August 6, featuring The Festival Community Orchestra and Sandpoint’s Studio One Dancers. Whether behind the scenes attending to the performers to those on the ground directly serving audience members; each and every volunteer’s contribution is essential and irreplaceable. This year when attending The Festival at Sandpoint, do a little something different. Extend a thank you and a warm smile to those festival volunteers with whom you come in contact. They are there for you, and your outdoor concert experience is made better thanks to them.

Improving Posture

By Ryanne Lemon PTA, Certified Personal Trainer, Physical Therapy Assistant at Idaho Pain Clinic WHEN THINKING ABOUT POOR POSTURE, most people think of slouching, with shoulders forward and neck extended to hold up the head. This posture is called Kyphotic posture due to increased kyphosis, or rounding of the upper back. Prolonged periods of this postural deficiency can lead to shoulder, back and neck pain, as well as decreased range of motion in these three areas. While this posture is relatively easy to see, there are usually many more postural deficiencies in the body that lead to this “hunched back” appearance which are important to address when thinking about correction.

Although postural anomalies can be caused by anatomical irregularities (i.e. scoliosis), it is most common that they are caused by muscle imbalances throughout the body. We will focus on the most common scenario, which is caused by sitting at a desk on a computer for long periods throughout the day. In this case, the hips are flexed causing the hip flexors (psoas muscles) to become tight, and the hip extensors (gluteus) to become lengthened and weak. This leads to the hip flexors pulling the pelvis into a forward tilt position. With this forward tilt at the bottom of the body, the upper back and shoulder draw forward to try and keep the body balanced. This in itself leads to poor posture, and

when you add in the forward position of the head and neck while working at a desk, the problem becomes even worse. Long periods of staying in this position can make a person go from simply being sore after long periods of sitting, to having an actual postural problem with chronic neck, upper and lower back, and shoulder pain.

Although postural anomalies can be caused by anatomical irregularities (i.e. scoliosis), it is most common that they are caused by muscle imbalances throughout the body.

On that note, when thinking about correcting this rounded shoulder posture, it is important to not only focus on muscle imbalances of the upper back, but look at the hips and core as well. It may be wise to consult a professional such as a trainer or therapist to help analyze posture and find out where the deficiencies lie. Listed below are some ideas to get started with most common postural deficits: • Sit on a Swiss ball rather than a chair at work. This encourages good sitting posture while maintaining balance on the ball as well as continually activating core muscles to stay balanced on the ball. • Take frequent breaks to stand up, stretch and move around with long periods of sitting. Another consideration would be to get a desk that can be adjusted so one can work standing up. • Apply kinesio tape along the muscles of the upper back. This helps facilitate the muscles to maintain appropriate resting length by giving a tactile stimuli when the muscles are overly lengthened. When the tape is stretched, it helps remind the body to correct posture. It is most effective to have someone trained in taping to apply the tape in the correct position and with the proper tension. If this is not an option,

online resources can illustrate and educate different applications and techniques. • Consider seeking out professional postural assessment. A trained professional can determine where any muscle imbalances lie and create an exercise program to help correct the problems. Many new technologies are available at select medical facilities such as a new product called the Upright TM Pro. This is a small device that attaches to the back and calibrates for proper posture. Once proper posture is determined, the device may be worn throughout the day and sends a signal to the wearer when they are in poor posture so that they may correct accordingly. This is a very new technology with a lot of promise for workplace ergonomics and even pain prevention. It is important to address the problem before posture and upper back pain gets any worse. The longer the problems go unaddressed, the more difficult they are to solve, and the higher the likelihood that the imbalance could become permanent.

ROCKIN’ AND ROLLIN’

YOUR FEET

TAKE CARE OF YOUR FEET AND THEY’LL TAKE CARE OF YOU! BY CHRISTINA M. RUST, DPT, CORNERSTONE PHYSICAL THERAPY

IF YOU’RE WALKING CORRECTLY, chances are your feet are “rockin’ and rollin’” the right way. The human foot and ankle is a strong and complex mechanical structure containing 26 bones, 33 joints—20 of which are actively articulated—and more than one hundred muscles, tendons and ligaments. Our feet are designed to absorb and distribute the ground reaction forces that occur when our toes hit the ground, whether we are walking, running, hiking or dancing. Normally, during the stance phase of gait, our heel strikes the ground first, we transfer our body weight forward onto the ball of the foot and then push off on the big toe to propel us forward to the next step. In addition to this rocking motion, the foot is also designed to roll approximately six to eight degrees laterally. The arches are built at an angle to encourage a normal medial to lateral rolling motion. All that rockin’ and rollin’ literally saves our feet from the pounding they experience throughout the day. On the opposite end of the spectrum is the foot structure known as pes cavus, or high arches. This type of foot is rigid and does not absorb ground reaction forces well. Folks with high arches tend toward developing foot pain, bunions, achilles tendonitis and plantar fasciitis. A trained specialist, such as a physical therapist or orthotist, can identify kinetic and biomechanical problems with gait. The specialist first watches the way you walk, looking for movement abnormalities or painful compensatory patterns. A physical examination of the entire body, including postural alignment, usually follows. Specific testing of the mobility in the joints of the feet and toes with palpation of painful areas, calluses or corns is also included. Observation, clinical diagnosis and casting or molding of the foot anatomy used to be how a foot-care professional determined if orthotics were necessary.

Your Goals Are Our Priority!

Sandpoint’s Only Full Size Warm Water Therapy Pool Now, revolutionary advances in Computerized Gait Analysis systems such as Footmaxx are now the new gold standard for custom foot orthotics. Computers can capture gait biomechanics at 150 images per second. This is 20-times faster than the human eye. With amazing speed and accuracy, the computer can pinpoint exact abnormalities in movement that may occur with each step we take. In addition, the module that forms the base of a custom orthotic can now be fabricated out of many different types of materials, including carbon fiber. The combination of computerized technology and highly advanced materials creates the most customized orthotic on the market—not only for the individual but also for the specific activity. That means you can get an orthotic designed for walking, hiking, golfing, skiing, soccer, football and more. If you are having any foot or ankle pain, knee pain, hip or back problems, it could all be because your feet aren’t rocking and rolling correctly. Take care of your feet, and they will take care of you!

EMERGENCY DEPARTMENT VS IMMEDIATE CARE CLINIC GUIDELINES TO MAKING THE RIGHT DECISION BY BONNER GENERAL HEALTH

WHHEEA RL E TSH HO Y UTL IDP I G O ?

“SHOULD I GO TO the emergency room or to immediate care?” This is a question many people ask when they are injured, ill or have a family member who needs medical treatment. With summer upon us, people are more active, and we are experiencing some extreme heat. Both are factors that can lead to increased injuries. It is important to choose the right level of care. The Emergency Department is the right choice if you or a family member is experiencing a life-threatening illness or injury. You will want to go to the Emergency Department to treat: • Difficulty breathing • Any symptoms of stroke: face drooping, slurred speech, arm weakness, sudden vision trouble or sudden trouble understanding simple statements • A major burn • Persistent chest pain that radiates to your arm or jaw that may also include sweating, vomiting or shortness of breath • Severe head injury • Coughing or vomiting blood • Severe pain in your chest or upper abdominal pain or pressure • Pregnancy complications if you are

BY COLIN ANDERSON

AS WE SIT DOWN FOR COFFEE and catch up for the first time in more than a year, Jim Morrison tells me he has another funeral to go to on Saturday. This will be the fourth this month with not even half the month gone. It’s become a reality for Jim as the more people he meets and connects with, the more of his newfound friends lose a battle that families in every corner of the nation are far too familiar with. “I feel obligated to these families and for my own self. I feel survivor’s guilt. But when you’re in a war there are going to be casualties, but just because there are casualties doesn’t mean you stop fighting,” he tells me. The reason for these feelings in Jim is the last 13 years of waking up to yet another sunrise he wasn’t supposed to see. January 4, 2004, Jim Morrison was given a 2 percent chance of survival and a diagnosis of six months to live. Upon returning from a hunting trip he felt an awful sickness in his chest and the diagnosis was stage 4 lung cancer, despite the fact Jim

was not a smoker. Like everyone who receives a death sentence, Jim was devastated, but the thought of death quickly washed away from his thoughts; he was going to survive this. Jim began putting goals in front him, the first being to walk his daughter down the aisle despite the wedding date being set past his life expectancy. When the idea of moving the wedding date came up, Jim told her absolutely not and months later found the strength to stand and escort his daughter on the most important day of her life. As Jim’s battle with lung cancer continued, he went through tremendously debilitating bouts of chemotherapy, and for a long time the only thing he could keep down and subsist on was little bits of water and gummy bears. What he never did along the way was quit. Jim had horrible days just like every other terminal cancer patient but was determined not to focus on the statistics but rather his own preservation. Fast forward to 2017 and Jim Morrison is alive.

He has twice-a-year checkups, but in the past decade, there has been no sign of the cancer that was supposed to put him in the ground before the end of 2005. He credits three ‘f ’ words for keeping him alive: faith, family and facilities. Jim’s diagnosis changed his outlook on life and his life’s mission forever. Gone are the days of caring about trivial matters, possessions and not being honest with one’s self. Today, tomorrow and each day he continues to live is about sharing his story of survival and creating an army of cancer warriors. “I’m a workaholic and this is my new career. If God spared me for a reason, it wasn’t to screw around with the rest of my life, and the best reason to live is to help others,” says Jim. Jim’s other unexpected career is that of an author. He chose to write his first book, “To See Another Sunrise,” in order that he might inspire others who receive a cancer diagnosis. The book is brutally honest, and Jim leaves very little off the table about the man he was before,

during and after his cancer. Anyone who has met or listened to Jim can attest that this brand of honesty is never leaving this man. As Jim meets weekly with those battling cancer, he is not there for comforting “it’s gonna be ok” phrases; Jim is in attack mode. “I’m in reality mode,” he says. “Sweet talking people doesn’t help anybody, and some people don’t like that. You’d be shocked at how many people just roll over and quit.” These days Jim says he doesn’t have time for people who just want others to feel sorry for themselves about their cancer. “As soon as they get the diagnosis, they think death, my card has been pulled, and they quit. My philosophy is that life starts with cancer, it doesn’t end. The priorities you should be pursuing come to light with a diagnosis.” Jim lives and does most of his visits in North Idaho and Eastern Washington, but as his book has found its way into the hands of people

all over the country, so has Jim. He’s been a keynote speaker at symposiums and summits, and has visited patients in hospitals all over. He’s recently given his presentation in New York, Washington, D.C., Colorado and North Carolina, as well as completing a five church tour across British Columbia. “I look forward to any opportunity to share a book and hear a story. It’s amazing the amount of people across the country the past few years that have reached out to me. I can tell you that I don’t think there’s a county in the U.S. that doesn’t have cancer in it,” Jim says. When being vetted for speaking engagements, Jim is often asked about his presentation and style. He’s been taken out of contention for some engagements because organizers felt his message wasn’t sympathetic enough. Despite that, Jim’s message isn’t changing. He continues to look at cancer as a war between the disease and the person, and if that person isn’t ready to fight for everything they hold dear, the disease is going to win out. Jim’s phone rings and new emails pop up daily from people locally or nationally reaching out

for guidance either for themselves or a loved one. Jim organizes monthly Cancer Warrior meetings in both Coeur d’Alene and Post Falls, Idaho, but also visits people in hospitals and in their homes. “Within the first or second meeting I can see if they are going to be a warrior. With others I come out of the meeting, sit in my truck and just shake my head. Cancer will take you down the path of fear or the path of faith. Faith conquers fear, so it’s simple: Are you going to overcome cancer or not.” Jim’s base of cancer warriors come out to his monthly meetings to continue to convey their plan of attack against the disease. First-time visitors are often surprised by what goes on but leave with a new appreciation for life and wanting to continue living it. “I’ve gone to funerals of people with treatable stage 1 cancer, but in my Post Falls group I have two braincancer survivors, both of which are more than five years past a diagnosis of death. Those are the true warriors,” he says. While there are stories of triumph and individuals overcoming this disease, the truth is some of Jim’s best and most inspiring warriors did not have the same outcome as he has. Despite losing their life to

SandpointLivingLocal.com

cancer, Jim still considers them victors in the war. “I’ve seen many uplifting and positive people pass, but if and when they die, they die in peace.” Since gaining regional and national attention from his first book, Jim has encountered an amazing array of stories. As he gathered these experiences, he knew it was time to once again share his experiences, although this time the focus would be on the people he’s met. Cancer - My Rainbow in the Dark is a collection of these stories. In it are tales of unbelievable acts of courage and survival as well as low points of family members leaving their cancer warrior in the middle of their battle. It maintains Jim’s strict level of honesty and transparency in life and encourages the reader to look inward and become more honest. You will read the story of Charles Clock, a man who spent 30 years of his life battling cancer and beating it five times, as well as a father who sent a copy of “To See Another Sunrise” to his drug-addicted daughter in prison and credits the book for getting his little girl back clean and sober. Glancing through online reviews of the book, you will find others battling addiction, abuse,

One person at a time. self-pity and other afflictions who can apply the message to their own situations as well. “I knew these stories had to be told; those who thrive despite their circumstances is amazing to me,” Jim says. His original three ‘f ’ words of faith, family and facility have now grown to 13. One of the most common questions he receives during presentations and book readings is, “How did you find the strength to keep going?” Jim pulls out his ‘f ’ words to make things as clear as possible. “I do it for God, I forgive, I forget the statistics and focus on surviving.” Jim’s technique is not a cure for cancer, and he is not promising this to anyone, but the bottom line is he was given a 2 percent chance to live more than six months, and with a combination of his personal faith, a supportive family and an incredible team of doctors and cancer facilities, he is cancer free. In Jim’s eyes, a cancer diagnosis is somewhat of a blessing as it allows you to focus on what is really important in your life. “All you have to do right now is survive, so what the hell difference does career, diet, exercise, money or anything else make if you don’t survive this?” Jim now looks at cancer one individual at a time. He has fully embraced his role as a mentor to those who want to truly live and become a cancer warrior.

What he wishes to convey to everyone he meets is his belief that the number one way to extend and live a better life with cancer is attitude. “There are very good things that come from cancer. You have to fight to see them and when you do, you’ll realize just how special cancer can be.” As we wrap up our hour-long interview and finish the last of our coffee, Jim hands me a stack of five books to pass along. It takes me very little time to think of people to get these to. The first will be my mother, who through early detection has kept her cancer in check however has battled recurring bouts with the disease but maintains a positive and fulfilling life. I’m not sure if this attitude came from her strong will or after reading Jim’s first book, but I like to think it’s a combination of both. Once she’s read it, she will pass it to one of her best friends and neighbors who in her late 50s is battling aggressive breast cancer and is not expected to live a full life. Will the book help save her life? Will it make an impact and give her peace during her final days? Will one of her three children or husband read it as well and take something from it? I simply don’t know. What I do know is these five copies will find their way out into the world and at some point make a direct impact on someone’s life, and that’s all that Jim Morrison hopes for each time his words are read and his stories are shared.

KITCHEN ESSENTIALS By Jillian Chandler

F

or those who enjoy spending hours in the kitchen, cooking up feasts for their loved ones, it is ideal to have a kitchen space that is simplistic yet functional, accompanied by the proper, easy-to-use kitchen tools. Here’s a list of great kitchen gadgets that the at-home

chef should invest in, making food preparation easier and faster, allowing for more time to spend with family and friends around the table to enjoy a great meal.

Meat Thermometer Different meats require different internal temperatures to determine if they’re done and ready to eat! This can be difficult to determine if you don’t have a proper meat thermometer. You don’t have to spend a lot of money to have a useful tool to make cooking steaks, burgers, chicken, seafood and pork to the perfect temps. You can purchase a simple—yet accurate and affordable—thermometer, such as the Taylor Dial Pocket Thermometer, for as little as $5. If you’re into the high-tech gadgets, check out the new Thermapen Mk4. You can spend close to $100 for this advanced thermometer, but it takes the internal temperature in just two to three seconds, with the display rotating right-side up so you can read it in any position!

Microplane Microplane graters are ideal for zesting fruits like limes and oranges and work great when grating various food items such as ginger and nutmeg to garlic and cheeses. They come in a variety of shapes and sizes, allowing shoppers to find the one that fits their style best. Most are priced less than $15, making it not only a useful but affordable kitchen aid in any home. From the ergonomically designed Microplane Soft-Handle Fine Grater for $9.95 to the new Microplane Fine Rotary Grater with its renowned etched technology offering a razor-sharp blade that turns hard cheeses into wispy fine slivers for $17.95, any dish can be turned into a piece of art with the added touches this appliance offers.

You can find very basic, simple-to-use, but slow and lower quality for less than $30. If you have the taste and style of a professional chef, you may opt for something with more functionality and speed, high quality and durability, for a price tag surpassing the $150 mark.

There’s nothing as frustrating as going to dice up that tomato for your summer salad and your beautiful tomato ends up a squashed mess. Knives are essential in the kitchen, and as one of the most used items, it’s worth the investment to buy good quality knives. You don’t have to break the budget to find a superior knife set that will get the job done. In the end, it will save you time, frustration and money. Want a knife that will allow that crisp, precise cut? Sorry, that $35 set just won’t do. Instead, a good starting point would be a Wüsthof knife set, which you can find in the low $100 range. Though they can seem a little clunky, these knives will get the job done at an affordable price.

Spaghetti MEASURE If you enjoy making pasta dishes and you haven’t yet heard of—or purchased—a spaghetti measure, you’re in for a surprise! This kitchen tool is designed to scale uncooked pasta portions accurately; very important for the summer months while many are trying to control their food intake. vitamix These have been all the craze for the past decade or so—and have been a staple in restaurant kitchens for decades—but with a high price tag, this item can seem more of a luxury than a kitchen necessity. The truth is … your life will never be the same. From hot soups and baby food, flours and dough, nut butters, frozen desserts, batters, dressings, sauces, dips and spreads, to nondairy milks, smoothies and juices, the Vitamix is the ultimate solution. cutting boards First off, it is important to note that wood cutting boards are better than plastic ones because they have a natural antibacterial agent. Plus, they’re better on your knives—which is important if you’ve made the leap to investing in higherquality, more expensive knives—as plastic boards dull your knife faster while wood absorbs the force of your knife. Resilient end-grain cutting boards are the way to go. A top choice by chefs, John BOOS cutting boards are NSF restaurant certified and available anywhere. In addition, with a beautiful wood board, it’s pleasing to the eyes and a welcome addition to your countertop. As you do your research, they may seem expensive, but they’re a lifetime investment—and a work of art.

silicone mats If you are a baker, these are a must have when it comes time to those tasty homemade treats. Silicone mats allow you to safely prepare and bake cookies, pastries and candy. But these versatile mats can also be used when oven roasting potatoes and vegetables. In the mood for a homemade pizza? Prepare and roll your dough atop a silicone mat, then place the mat on a baking sheet and cook your pizza! The options are endless! There are plenty of choices to suit your needs. et me start by saying, on any given day, you can cook like a chef.

I am a chef. I am a husband and father. I am an American worker. At home we cut coupons and plan family meals. We look for the about-to-be-out-of-date meat deals at the grocery store because we know that everything is fine and it’s fill the freezer time. We do the enormous once-a-month pay day “it’s time to load the SUV and maybe get some gas credits at the local mega outlet where everything comes in tubs, eight packs or sacks that you actually, for once, do need help out to the car with, yes and thank you.” In our family repertoire, we have the good ol’ standards that get us through things like soccer practice, swim class, school functions or the not so occasional “dad has to work at the restaurant late tonight” type situations. This is our modern family life.

Y O U R D E S T I N AT I O N G A R D E N C E N T E R

Now … fast forward, or back, to that situation, chef or not, where you have opened, closed and re-opened the refrigerator door at least 500 times, staring at your depleting inventory wondering, “What am I going to do for dinner tonight, to … to … WOW everyone?” To not have the peanut gallery basically yelp you into another chili-mac-a-tuna-saurus monstrosity that ends up more in the disposal than in their little Siskel and Ebert stomachs.

You have enough “stuff ” in your arsenal at all times to make amazing meals, but you forget your inventory. And I do too. Here is a personal example of our weekly family dinner that I have not yet organized.

SHOP LOCAL. BE LOCAL.

In the tall, cold rectangle box that houses random items, I found: parts of a beautifully cooked and left-to-die chicken, a wilting red pepper that was probably supposed to be the star of some kind of unknown greatness, an onion that is starting to grow and some horrible winter tomatoes that should not have been in refrigeration in the first place—or even ever grown for that matter—but there they are. Oh … and a lime. I keep those

around because I enjoy limes. By limes, I mean tequila. So here is what I did in a recipe format. Oven cranked to 500°F. Cut tomatoes in half, place on a pan and put in oven until blackened. Cut open and remove all seeds and ribs (white-ish part) of the red pepper and cut it onto strips like french fries. Cut the onion in the same manner. (We call that cut julienne, cool to know, but doesn’t change the flavor.) Throw them into a medium hot cast-iron pan with a little butter or oil until they are soft. I found some random things in the pantry cabinet to complete this gourmet meal. While the peppers and onions are wilting away, start cooking some white rice. To the cast-iron pan, add garlic and chili powder (add two tablespoons of tomato paste if you have it). Blend blackened tomatoes in blender or food processor and add to the pan. Shred chicken and add that. Simmer and reduce until rich and saucy. Squeeze in lime juice and salt to taste. On a plate, place rice to one side, ladle your culinary magic over half of the rice allowing it to spill onto the plate and garnish with cheese, tortillas, cilantro and lime wedge. (I didn’t have these last items but hey, it was still good!) There are some basic items to keep around the kitchen that will allow you to create meals at a moment’s notice; things like potatoes, rice,

garlic, soy sauce and chili powder. I like to keep fennel seeds. If you quickly toast them in a pan you can take breakfast potatoes to a whole new level. Here is a basic recipe for a side dish that will transform your dinner table into a restaurant. • 3 large russet potatoes baked and cooled just enough to be able to handle them. • 1.5-ish cups of flour • 1 egg • 2 teaspoons salt Peel the potatoes and run them through a ricer (food mill). Beat egg and salt together. On a cutting board, spread out potatoes and mix in egg. Work in flour and knead with your hands adding flour until you have a dough-like consistency. This should be about three minutes. With your hands, roll out ropes that are about a half-inch thick. Cut ropes into one-inch sections. Slightly press an indentation with your thumb into each piece. In a pot of lightly boiling salted water, drop in gnocchi—believe it or not, that’s what you just made—a few at a time. They are done when they float to the top. In a hot pan, add a quarter stick of butter. Let it brown a little. Add gnocchi and sauté until lightly browned. Add freshly chopped sage,

salt and pepper to taste. Finish with parmesan cheese. This is an easy and great side dish to any meal that will turn basic things like roasted chicken with sautéed zucchini into a plate you would see in your favorite restaurant. Try your gnocchi with a cream sauce or a marinara to mix things up. Remember, it’s just food. Have fun!

TRAVEL & LEISURE

PERFECTION REFINED: Latest evolution of the ideal Northwest getaway By Dan Aznoff

IF YOU WERE GIVEN the opportunity to design the ultimate vacation destination in Washington, you’d start with a romantic point of waterfront tucked into the Northwest corner of the state surrounded on three sides by the pristine waters of the Puget Sound with inspirational sunsets to the west and views of a majestic Cascade peak that dominate the horizon to the east. Your resort would have a casual atmosphere with dining options that range from fine bistros to casual eateries. Between meals, guests could divide their time between water sports, the challenge of seaside golf courses and the indulgences of a world-class spa. Your slice of perfection would have easy access to beachfront trails that twist past mountains of bleached driftwood with access to tide pools teeming with life from the sea. The beach would be within walking distance from a dense forest that offers shade from the sun and cover for the small

animals that live under the canopy of the tall evergreens. Once you’ve found the ideal location created by nature, you could add some of the best man-made enhancements that make every adventure a memorable experience, like a charming little town with quaint restaurants and retail shops filled with the usual trinkets and distinctive clothing. And of course, there would be restaurants that reflect the heritage of the community. The good news for individuals who are more doers than planners, this ideal holiday retreat already exists. It is the oftenoverlooked destination of Semiahmoo near Blaine. Located on the Washington coast just 90 miles north of Seattle and 40 miles south of Vancouver in British Columbia, the Semiahmoo Resort features award-winning dining, an outdoor pool, full-service spa,

two award-winning golf courses and access to a myriad of outdoor activities. The destination is just the right distance away for a romantic weekend getaway. The golf courses and spa make it an ideal location for an important business conference that does not exclude spouses. The beaches and forest make it a great place for an extended vacation with children. And the pet-friendly facilities make the resort a place the entire family can enjoy. The Semiahmoo Resort was built inside the historic low-profile structure that was once the world’s largest salmon cannery. It sits on 1,100 acres of a long sandy spit near the Canada–U.S. border. The resort takes its name from the name of the indigenous people in whose language means “halfmoon,” which describes the crescent-shaped land the resort was built on. The destination opened as the ultimate golf getaway in 1994 as home to the Loomis Trail Golf Club and Semiahmoo Golf and Country Club. The latter was designed by Arnold Palmer and was voted the sixth best golf course in Washington state by Golfweek in 2011. For some reason, the original hotel, restaurants and spa closed in December of 2012. The property was purchased one year later by a hotel group from Seattle who reopened in August of 2013 after $6 million in renovations. The upscale resort now has 183 deluxe air-conditioned guest rooms plus 28 luxury suites. The dining options at Semiahmoo cater to almost every palate, including snack bars on the golf course and inside the spa. The Packers Oyster Bar behind the hotel offers casual waterfront dining and an exceptional happy hour. The Pierside Kitchen offers choices that highlight fresh seafood from the waters of the Puget Sound and produce from farms in the nearby Skagit Valley. The Great Blue Heron Grill offers cuisine in an elegant atmosphere that is appropriate for a quick burger or a romantic date-night dinner. For the adventurous types, the hotel has bikes, kayaks and paddleboards available for

rent. For those who enjoy activities on the sand, there is beach volleyball, sandcastle building and a nightly gathering around a fire pit where the resort provides all the ingredients to build the perfect s’more. Whether or not you have a sweet tooth, the seats around the fire pit offer exceptional views across the water of the armada of sailboats and yachts that troll the international waters and across to the shops and homes in the Canadian town of White Rock. Semiahmoo Spit offers more than 300 acres of tideland and roughly 1.5 miles of trails ideal for walking, biking and birdwatching. The region’s tide pools, estuaries and waterways attract thousands of geese, ducks, gulls, loons and shorebirds each year and recently made the Audubon Society’s list as one of Washington’s top birding destinations. It attracts a thriving population of endangered species including

the bald eagle, peregrine falcon and the marbled murrelet. Point Whitethorns Marine Reserve and Blaine Marine Park are both located just a few clicks from the front door of the resort. Both offer waterfront experiences worth the price of admission. The first ½ mile of forest trail at Whitehorn is wheelchair accessible and takes visitors past twisted stumps and specimens of native growth forest. The beach itself is strewn with heaps of driftwood and makeshift shelters built around fire pits. Lucky visitors to the beach can get up-close views of the seals that feast off the fish in the waters that lead into the Strait of Juan de Fuca. If you’re quiet (and really lucky), you can see bald eagles positioned on top of the tallest old trees as they watch over the beach for signs of migrating salmon. The eagles can be seen in mid-air battles with crows as

Canadians who come into the United States to buy their limited daily allotment of milk. A Blaine favorite for all ages is a ride on the Historic Plover Ferry that plies the waters between the Blaine Harbor marina and Semiahmoo Spit. Built in 1944, the ferry was originally used to transport workers to and from the cannery at Semiahmoo. The 20-passenger ferry provides a great vantage point to watch the eagles soar and seals frolic in their own backyard. The ride also provides close encounters with majestic pleasure craft that anchor in the harbor of White Rock on the Canadian side of the waterway. Space is almost always made to accommodate bikers or passengers who walk on for the short ride from Blaine back to the resort. The ferry departs on the hour from the Blaine Visitor’s Dock and returns on the half hour from the Plover Dock at Resort Semiahmoo. The floating piece of history operates during the summer months, beginning Memorial Day weekend through Labor Day, including on the Fourth of July. the rivals compete for the highest perches on the oldest trees. The pristine beach gives no clue of the history of the reserve. The shoreline was originally an unattractive piece of seashore that was held, but not developed, by the Whatcom Land Trust (WTL) until an oil spill from a Bellingham refinery in 1999 dumped thousands of gallons of thick oil on the beach. The WTL used fines levied against the oil companies to purchase .3 miles of the Georgia Strait wetlands from BC Hydro that was developed to become Whatcom County Park. That purchase was leveraged to fund access to the beaches and protect the shoreline from future environmental damage.

From the solitude of the deserted beach, it’s a short drive into the community of Blaine that sits just south of the international border. Blaine is the American side of the shared home of the Peace Arch international monument. There are sidewalk cafes in town that straddle the boundary. The Peace Arch City Cafe offers gluten-free options for breakfast or lunch, while Bob’s Burgers & Brew earns its top spot on every review of restaurants in Blaine for its grass-fed beef and scores of ice cold beer on tap. The one must on every visitor’s list is Edaleen Dairy Ice Cream Shop, where tourists stand in line for a cone of maple nut ice cream with

For shoppers, nearby Birch Bay Square offers outlet prices on items not normally found in discount centers, including an outlet for discounted food and toys for pets. The Big Box Outlet in Langley, BC, offers a favorable exchange rate in addition to discounted prices. The bottom line is that Semiahmoo offers something for everybody. It is an overlooked treasure that deserves to be enjoyed by locals in addition to visitors from around the world. No need to design your perfect vacation destination. Just pack your bags—and don’t forget the binoculars.

Food & Drink Recipe PARSLEY, SAGE, ROSEMARY AND THYME ROASTED SALMON A simple recipe inspired by iconic lyrics. Ingredients • 4 Wild Salmon Fillets (approx. 1.5 lbs. each) • 1 Tbsp. Fresh Parsley • 1 Tbsp. Fresh Sage • 1 Tbsp. Fresh Rosemary • 1/2 Tbsp. Fresh Thyme • 1/2 cup Olive Oil • 1 Tbsp. Balsamic Vinegar

Preperation • Preheat oven to 400°F. • Place salmon fillets in a large baking dish. • Add the olive oil and ensure the fish is well coated. • Add a bit of the balsamic vinegar to the top of each fillet. • Finely dice all herbs and mix together. • Sprinkle the herb mixture over each fillet. • Cover, refrigerate and let marinate for 1 hour. • Bake for 20 minutes (more time may be needed depending on thickness of the fish) and serve.

ROSEMARY Rosemary is an aromatic evergreen shrub with needle-like leaves, blossoming in spring with white, pink, purple or deep blue flowers. Though native to the Mediterranean region, it’s extremely hardy and easy to grow and maintain indoors or out. The leaves, twigs and flowering tops are extracted for use and add a bright, unique flavor to a variety of foods such as pork, turkey, beef, fish, stuffing, vegetables, soups and even cocktails! And fresh is best!

HEALTH BENEFITS OF OMEGA-3S IN SALMON

Due to its unusual omega-3 fatty acid content, salmon has earned its research reputation as a health-supportive food. Just 4 ounces of baked or broiled salmon contains at least 2 grams of omega-3 fats. This is important because on average, U.S. adults consume less than this from all other foods combined over several days! The American Heart Association recommends that everyone eats fish (particularly fatty, coldwater fish) at least twice a week. Findings have shown that omega-3 fatty acids may help decrease the risk of numerous cardiovascular problems: lower blood pressure, reduce triglycerides, slow the development of plaque in the arteries, reduce the chance of abnormal heart rhythm, reduce the likelihood of heart attack and stroke and lessen the chance of sudden cardiac death in people with heart disease. Consuming omega-3-containing fish has also been associated with improved metabolic markers for cardiovascular disease. Omega-3 fish oil contains both docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA). The delicious flavor combined with the nutritional benefits of fresh wild-caught salmon makes this protein a great choice, especially April through November, when the salmon season runs. During this time, it is easy to find fresh salmon at your local markets—and it’s the least expensive compared to other times of year. Not only does wild salmon provide brilliant flavor and nutrition, it is easy to prepare and enjoy, even by those who might not always prefer fish.

ARTS & CRAFTS FAIR Pend Oreille Arts Council hosts fun for the whole family By Patty Hutchens

FOR 45 YEARS, THE ANNUAL ARTS AND CRAFTS FAIR has been a delight for locals and visitors alike. Sponsored by the Pend Oreille Arts Council (POAC) for the past 39 years, the event has evolved into a highquality arts and crafts fair featuring artisans from around the country. “We also focus on introducing local children to the arts through our Kaleidoscope Kids’ Booth,” said Hannah Combs, the arts administrator for POAC of the highly popular attraction at the fair. With approximately 100 vendors, the booths are diverse, and this year vendors will travel from as far away as Wisconsin, Illinois and Kansas. “It’s the perfect amount [of vendors] to host at City Beach,” said Combs. “And there is still breathing room to take in the local performances or sit down in the shade and enjoy a meal from our food vendors.” And while many vendors have come back year after year, including many from Spokane and closer, this year they will have 35 new vendors. When processing the applications, those at POAC assign each vendor to one of nine categories: ceramics, fiber, glass, jewelry, metal, painting, photography, wood or miscellaneous. The miscellaneous category can include anything from food products, such as honeys and jams, to unusual objects like sculptures carved from antlers or innovative hanging planters or soaps made with local herbs. Among the many vendors are some of the local POAC artist members who not only participate in the fair, but also produce artwork for the numerous POAC gallery shows throughout the year, including ArtWalk. Worried about parking? For the first time, there will be a shuttle service open to the public and vendors. It will pick up at City Beach by the information booth, at 3rd and Oak by the city lot and at 5th and Church. Both days it will drive the route every half hour between 8am and 5pm. The Arts and Crafts Fair will take place August 12 and 13. Be sure to come down to City Beach and enjoy all that POAC has to offer at this family event.
