EACH YEAR AS THE FOURTH OF JULY rolls around, I reflect on how blessed I am to live in a country where I am free to express and exercise my religious beliefs and to have such an abundance of opportunities for me and my family. Lately, however, we are beginning to experience a vulnerability like never before. The 9/11 attacks were horrific. Yet, many believed things such as that only took place in the “bigger cities” such as New York City or Los Angeles. We felt safe in our own community.

But things are changing. One only turn on the news to see the things that are happening in small communities not too different than our own. So how can we do our part to keep one another safe? While no one is immune, we need to be aware and to not be afraid to speak up when something does not feel “right.”

CHICKEN OR THE EGG... WHAT COMES FIRST?
WHAT COMES FIRST, the chicken or the egg? It’s a rhetorical question that makes you stop and wonder, how does one happen without the other? When it comes to construction, it’s clear to me that the egg came first. When building a new house or starting a remodel, everyone sees the fullplume chicken displayed on Pinterest or Houzz, but forgets that it first had to start out as an egg. For most, it’s hard to figure out the beginning stages and how to make progress. You decide that you want to do something, but you aren’t sure how to get started. The stages of new construction and remodeling both options follow these general principles. Introductory Concept - Figuring out a plan. This is the egg stage where you begin laying out the ideas. It starts by looking at examples. This can be on the Internet, attending a parade of homes, visiting home and garden shows, talking to people, and for some, it’s even sketching. Concept - Nurturing the idea. The egg is now laid and it must begin to develop. This oftentimes will involve the surrogate architect, interior designer, engineer or draftsman. At an initial meeting, you will bring your ideas or wish lists and they will

help nurture them. Your requirements may include things you need. Then you can list secondary important items. This would include desires like wanting a loft or having an office directly adjoining the master bedroom. You walk away from this meeting having left your egg on the table. Schematic Design - The professional takes your egg and fosters its development some more. They will draw initial schematics to allow your idea to become more of a 3-D visual. The architectural firm that I used to work for loved this stage — we would even create a concept story and let it develop from there. Design Development – During the big reveal from your surrogate, this stage is where you look over the drawings, floor plans, elevations, and in general, get to see the overall look of the space and decide if everything is where you want it. This may take several meetings, each followed by modifications. Construction Documents – After the design is

fully developed, the egg begins to hatch. The design development drawings are converted into construction documents and these are what’s used to build the house or remodel the space. These documents are what gets turned into the building department for approval, what the contractor will use to build the house, and what each tradesperson refers to during construction. Interior Finishes – After the floor plan is figured out, the elevations are complete, but before the construction documents are completely finalized, the interior finishes should be selected. This makes a difference with the final construction documents because if the window coverings need to be motorized,

SUMMER HAS ARRIVED! As a busy professional pet groomer, I frequently hear these words: “It’s time for Fluffy’s summer shave down!” from well-intentioned owners. Many “single” coated and toy dog breeds such as the poodle, Maltese, Portuguese water dog and shih tzu should be clipped regularly to keep their coat tangle and mat free. They have one layer of dense, protective guard hair. Not all coats, however, were created equal! “Double” coated breeds are those that grow guard hair coat and a soft insulating undercoat. Labrador retrievers, German shepherds, Australian shepherds, Siberian Huskies and golden retrievers are examples of pooches wearing a double coat. Severe summer clips on some double coat breeds can create some real problems down the road.
thinking it will decrease or eliminate shedding. Pet owners are often just plain overwhelmed by the sheer volume of their dog’s undercoat. As mentioned, dogs such as the Husky and German shepherd grow an undercoat below the guard hair. Not only does this double coat keep him or her warm in the cold months, but it also acts as a heat barrier, keeping him or her cool in summer, allowing self-regulation of body temperature. Occasionally, a double coat shave down will result in stubby and coarse hair growth. Rarely, dogs can experience pigmentation loss, or the coat simply doesn’t grow back at all. These potential side effects of coat alteration can occur weeks or years after a severe clip. In some dogs these changes can become apparent after only one clipping. While clipping a double coat certainly shortens the length of hair that is being shed, it does not halt the process and can actually increase daily shedding when the undercoat regrows, often more dense than before.
There are many reasons that owners request a summer clip on their double coated pet. Many feel he or she is too hot with the heavy coat. Some simply can’t keep up with the constant brushing and dematting, knowing their lovable pooch is happier with a short, mat free coat than a full, tangled one. Still others clip a double coated breed like a Husky

AGRICULTURE. IT IS WHAT MAKES UP a significant part of the North Idaho economy. Fortunately, General Feed and Grain in downtown Bonners Ferry has been committed to supporting the agricultural community here and throughout the Inland Northwest for over 70 years.

General Feed and Grain supports the lawn, garden and crop fertilizer requirements of homeowners and farmers utilizing a fertilizer plant capable of supporting standard and custom blend demands anywhere from 50-pound bags to bulk semi-truck loads. Their slow-release lawn fertilizer for homeowners has steadily grown in popularity over the last few years.
The business was opened in 1942 by Victor F. Rae. “My grandfather was a traveling salesman from Centennial Mills in Spokane when he purchased a run down, closed feed store with a small elevator” explained current owner, Victor A. Rae, the third generation of the Rae family to own General Feed and Grain. “He was joined by my father, Victor G. Rae, when he finished a U.S. Army enlistment in 1964.” The business has grown to include the iconic elevator that was built in 1954, the seed-processing plant in the early 1960s and the fertilizer plant in 1974.
With a desire to give back to the community that has supported them throughout the generations, General Feed and Grain enthusiastically supports the youth in North Idaho by giving to the 4-H programs and the Future Farmers of America. “We are proud to see our feed lines commonly displayed as show animal selections of choice at fair time every year by 4-H and FFA participants in Boundary, Bonner, and Kootenai Counties,” said Rae.
General Feed and Grain is a multi-faceted business that operates a feed store which offers over 30 varieties of whole and mixed feeds manufactured and sold using locally and regionally grown grains including wheat, barley, oats and corn. As the only feed store using exclusively local grains, General Feed and Grain is truly unique. Their feed is made in-house with non-GMO grains; they were the first in the state of Idaho to do so. Some of the products they carry include nonGMO poultry layer and non-GMO hog starter, grower, and finisher product lines.

MARGY ARNDT - 2ND GRADE TEACHER AT WASHINGTON ELEMENTARY BY PATTY HUTCHENS WHEN MARGY ARNDT’S eldest daughter graduated from high school, Arndt made a life changing decision. It was time for a second career. And there are many families in the Lake Pend Oreille School District who are grateful that she chose to go into teaching. “I knew I wanted to continue spending time with children and teaching seemed like the obvious choice for me,” said Arndt who is a second grade teacher at Washington Elementary in Sandpoint.

Like most elementary school teachers, Arndt teaches all subjects including reading, writing, math, science, social studies and art. She has taught for 11 years at the kindergarten, fifth and third grade levels and is currently teaching second grade where she hopes to remain. While teaching has many rewards, it is the relationships Arndt builds with her students that she finds the most exciting. “Each year I enjoy getting to know all of their unique personalities. It’s inspiring to watch their growth academically and socially through the year,” said Arndt. “I also enjoy the creative aspects of developing learning experiences throughout each day and year.” Arndt said it is important to her to encourage all students to remain curious and seek knowledge as lifelong learners. One way in which she accomplishes this goal is by displaying her own excitement to them when she learns something new. And of course there are always questions that arise that she may not be able to provide an answer for. In that case, she enthusiastically tells her students, “I don’t know, but let’s find out!” “This beings our next investigation,” said Arndt. When asked what one experience stands out most in her mind when looking back on the last 11 years of teaching, Arndt said it was difficult to name just one. But the moments

You just read a book.’ With a huge smile she replied, ‘You mean I can read now?!’ while her bright eyes scanned the room full of books.”

Photos courtesy Lake Pend Oreille School District. “An investment in knowledge pays the best interest.” - Benjamin Franklin HIGH SCHOOL GRADUATION marks the beginning of a whole new life chapter for students. For 18 years most have lived in a family setting and had many of their needs taken care of. Now they are embarking on new adventures and suddenly find themselves independent; whether it is college, the military or starting a career, they are about to experience a whole new world. And while it is an exciting time in life, it can also be overwhelming and a bit scary – especially with the cost of post-secondary education. Fortunately for this year’s graduating classes in Lake Pend Oreille School District, the cost of college will not be as overwhelming as once thought. Always known to be an extremely generous community, this year’s scholarship night at Sandpoint High School reinforced that widely-known fact. “This year there was over $161,000 in scholarships given out at Sandpoint High School alone,” said Jeralyn Mire, the post-secondary transition counselor at Sandpoint High School. “It’s staggering.”

With 85 of the senior students at Sandpoint High School applying for 812 scholarships, the process of selecting qualified applicants is something each grantor takes seriously. “I can’t explain how good I feel about giving these scholarships. I am so grateful that I can help out these young folks in their endeavor to make a good future for themselves,” said Sandra Jamieson, one of many who established scholarships to honor the students in Lake Pend Oreille School District. Each scholarship differs in amount and criteria. While some are need based, others may depend upon a student’s grade point average or the area of study they intend to pursue. But one thing is certain – all of the scholarships provided are greatly appreciated. “This year was one of the most diverse years we have had,” said Mire about the number of students who were awarded scholarships. Students at Sandpoint High School attended the awards

ceremony dressed in ties and dresses and were genuinely enthusiastic and supportive of one another. There were scholarships given out by community businesses, foundations and individuals, but also those from whom would not be considered your typical donors. “We have everyone from the kitchen cooks to school bus drivers awarding scholarships to these seniors,” said Mire. “It’s truly an amazing community.” Anyone who has ever applied for scholarships knows it can be a tedious process. But thanks to a grant from Panhandle Alliance for Education and work done by Sandpoint resident Kari Saccomanno, the process of applying was easier this year due to a common application. Mire said that all of the groups and individuals awarding scholarship money agreed to allow students to apply for many scholarships with the same set of questions. But it was not just Sandpoint High School students who were blessed with the generosity of the Sandpoint community; there were several recipients of scholarship money at Clark Fork High School and Lake Pend Oreille High School as well. We have 12 students who graduated on June 8th and $66,800.00 was given out through the local scholarships,” said Tom Prez, the counselor for Clark Fork Junior/ Senior High School. “In addition, about another $75,000.00 was given from the colleges students will be attending.”
Five of the 12 students graduating from Clark Fork received local scholarships. “The rest of the students were going to enter the military or the workforce and did not apply for scholarships,” said Prez. So what motivates scholarship money?

Jamieson shared the background behind her desire to award scholarships to the graduating class. A native of England, Jamieson met her husband on the east coast where they both worked for TWA – he as an airline captain and she as a member of the cabin crew. The couple moved to Sandpoint from her husband’s native Canada in 1992. It was 10 years later that her husband passed away all too soon. Then, in 2012, Jamieson decided she wanted to do something special to honor her husband’s memory on the tenth anniversary of his passing. “I couldn’t let the day go by without doing something very positive to honor his memory. I don’t know why I picked a donation to the scholarship program at Sandpoint High School. It just came to me,” said Jamieson. “We never had children, but why not help other kids to live out their dream to go to college or a professional school.” She called Mire and, as she said, the rest is history. “Jeralyn welcomed me with open arms and said the school would be grateful for the scholarship.” The first year she intended to donate one

scholarship for $1,000. But the choice of who would receive the award was too difficult, so she instead donated two $1,000 scholarships. The following year and each year since, Jamieson has awarded four $1,000 scholarships in memory of her husband. While in no way discounting the abundance of generosity of the donors, one thing Mire said is that there continues to be a need for scholarships that extend beyond the first year so the students can continue to receive help locally. The students have proven themselves and want to be able to continue in their education, but for some it can be a financial burden. As for Jamieson, she encourages others who can to pay it forward to the future generation. “I cannot stress what a wonderful thing it is to help out these so deserving students,” she said. “Any amount will help. Instead of giving Christmas gifts, why not decide to put money in a fund for a scholarship or to honor someone’s memory?” Congratulations to all the graduates of Lake Pend Oreille School District!

Sleep’s Cabins, located on the south side of the Long Bridge just off Highway 95 on Lakeshore Drive, has been a place where three generations have created lifelong memories. uccess in schools. Many think it depends strictly upon the quality of the teachers and curriculum. But did you know that statistics report that a student’s potential increases by as much as seven percent when their environment is properly ventilated, has adequate lighting and good acoustics? While the students in Lake Pend Oreille School District (LPOSD) have shown improvement in test scores in recent years, the facilities in which they are learning have continued to deteriorate at a pace where a catastrophic occurrence could leave LPOSD not only in a financial bind but also without a place to house students. “It’s not a matter of if it (a catastrophic occurrence) will happen, it’s a matter of when it will happen,” said Kendon Perry, a local resident and financial advisor who was one of several appointed to the Facilities Planning Committee last fall to research the needs and status of all the schools in the district.
While others, such as LPOSD Facilities Director Matt Diel, say they are not surprised by the results, it is definitely a long laundry list of things that must be done. According to LPOSD Board Chair Steve Youngdahl and Superintendent Shawn Woodward, the Idaho constitution requires that new construction or modernization of public school buildings must be paid through property taxes. Thus, their goal is to educate the community about the needs and of an upcoming Plant Facilities Levy that will go to vote on August 30. The amount of the levy may appear shocking to some, $55.1 million, but the projects are ones that will benefit not just one or two facilities but a majority of LPOSD. The ultimate decision of what would be tackled in the six-year plan and what would be brought to the voters in August was up to the LPOSD Board of Trustees. When they learned the facts presented to them by

The committee, which is comprised of a cross section of several members of the community, worked in conjunction with consultant Dave Teater to research and develop a six-year plan for the improvement of LPOSD’s facilities. After extensive investigation, their findings are troubling at best.
“There are likely a lot of ticking time bombs,” said Perry regarding the issues that could happen at any time. Teater has a background in teaching and his process is data driven; he helped bring a process to the entire evaluation process. The committee also worked with two architectural firms, ALSC Architects out of Spokane and Architects West, Inc. out of Coeur d’Alene “I was shocked at the condition of the buildings,” said Scott Schriber, owner of Selle Valley Construction and a member of the Facilities Planning Committee. When evaluating some of the facilities, they learned that to completely gut a building would cost 80 percent of what it would to rebuild. When the cost is that great, the committee decided it makes more sense to rebuild to avoid any hidden surprises.

the committee, they voted to accept all of the recommendations and to move forward with the $55.1 million Plant Facilities Levy. And for those who think there have been several plant facility levies in our past, you may be surprised to learn that the last ones were in 1953, 1987 and 2008. While much of what needs to be done is to rebuild or repair the structures, it is also necessary to update the schools. “Much of the learning that is taking place in our schools is driven by technology, all the way down to the elementary level,” said Perry of the need to update LPOSD’s facilities. As a financial advisor, Perry has analyzed the costs and the current financial status of LPOSD and is confident that those in charge have done a superb job managing the finances. “Lisa (Hals, Chief Financial Officer for LPOSD) has done a great job of building the reserve. Unfortunately, we may have to dip into it,” said Perry. So what are the projects that are being proposed with the levy? One will be to rebuild Sandpoint Middle School, which was originally built in 1954 and had classrooms added in 1965 and 1972. Currently, the condition of the school is listed as “unsatisfactory.” Not only will there be an
entire rebuild, there will also be an increased capacity to 675 students and an auxiliary gym will be added. The portable classrooms that now sit on the site will be removed. Northside Elementary, built in 1953, would also be completely rebuilt if the levy passes. Planned for a 2017 completion date, all portable classrooms would be removed and student capacity would increase to 180. Also in the committee’s proposal was the rebuild of much of Washington Elementary. It was originally built in 1958 and additional classrooms were added in 1973 and 1980. There was an annex added in 1994 and that will remain. Clark Fork Junior and Senior High School would also benefit from the levy. With a project-based curriculum, the levy would go to construct a new career technical shop. According to the committee, the current shop utilized by the students does not meet the modern project-based learning model.
Lastly, in an effort to provide preventative maintenance and improved energy efficiency and safety upgrades throughout the district, the committee proposed some of the levy proceeds be placed into a special project fund. With deteriorating infrastructure and buildings that are substandard or out of compliance, the committee is urging members of the community to educate themselves on what the needs are and how much it will cost them. “If someone’s property is assessed at $200,000 and holds the homeowner’s exemption, their total projected (school) tax would be approximately $384 for 2017; an increase of $200 a year or just under $17 a month,” said Perry. For Sandpoint High School, the addition of new classrooms would be a welcomed relief for many. The plan is to remove all of the portable classrooms as well as the art room and all would be housed in the new classrooms at the school. The proposal also outlines the need for new track and athletic fields on the campus of Sandpoint High School and Sandpoint Middle School.

DESPITE HAVING OPENED as recently as the year 2000, the Sandpoint branch of the East Bonner County Library system is scheduled to undergo a makeover and expansion beginning next spring. The amount of multimedia materials including books, newspapers, magazines, games, dvds and audio the library now possesses doesn’t adequately fit in the current space. Current plans include 10,000 square feet of additional space with a two-story addition on the southeast end and one-story addition on the northwest.

The expanded space will potentially include a large community room and separate children’s area allowing for more quiet space in the current location. In all, the project is expected to cost around $3 million dollars. Thus far $2.1 million has been raised, and the library does not plan on taking another bond to the community based upon the support they have already received from neighbors, grants and The Friends of the Library Foundation.

Library Director Ann Nichols said continuing to keep up with changes in technology and library trends is vital. “These trends were just beginning to emerge 16 years ago when this building was constructed,” said Nichols. “Today, our experience-based learning programs and community development initiatives have reached capacity in the physical space we have. Our social spaces are encroaching on our quiet spaces, and our professional meeting rooms are being shared with our makerspace programs.” While everyone knows a library is a place to check out reading materials, many are surprised to learn of the other amenities the local library system offers including WiFi, computer classes, meeting rooms, movies, e-books, audio books, video and board games, tutoring and a legal reference center. As technology continues to adapt, so will our local libraries. Final plans will be drawn up by Coeur d’Alene based Architects West and should be posted in the lobby of the Sandpoint branch sometime this month. Bidding on construction will begin in February or March of 2017. SANDPOINT’S SOLAR ROADWAYS IS PAVING THE WAY FOR CLEAN, RENEWABLE ENERGY FROM OUR ROADS
BY JANI GONZALEZ A REVOLUTIONARY CONCEPT OF generating energy from solar panels on our roadways – called smart highways – is coming to Sandpoint thanks to local innovators, Scott and Julie Brusaw, the husband and wife team behind Solar Roadways. Their company is installing their first public prototype for testing in town.
environmental issues through their sustainable and clean energy product. Once available, manufacturing the product would generate local jobs to serve an international market. Solar Roadways (solarroadways.com) is arguably one of the few companies in the world developing a smart highway prototype. The idea of installing solar panels in the road was initially a fleeting thought in Julie’s mind. But it was Scott, with a background in engineering, who began to bring the idea to fruition. With the encouragement of some friends, they began their journey of design and innovation and have gathered international attention along the way.
The exciting concept involves installing photovoltaic solar panels in our transportation corridors that would generate power for electric cars and virtually all of nearby infrastructure. The idea promises to create safer roads that warn drivers of oncoming emergency vehicles, traffic as well as pedestrians and animals crossing. Its heating elements would keep roads and walkways free of ice and snow. The tiles are meant for all pathways, including walkways and airport runways. The possibilities Solar Roadways promises keep growing as they could solve some major

with the electronics embedded in between. In a Solar Roadways video, Scott explained that their design is similar to how bullet-proof glass is created in layers. Light-emitting diode (LED) lights embedded in them will replace painted road lines. The lights in the road will change accordingly to provide warning signs and warn when an animal or person is crossing. They can even be applied to sport courts, bike paths and walkways in public parks. Sport courts with the tiles could be programmed to create lines for different games. Their idea also eliminates the need for power lines and cables. The roads would have two channels which would form a cable corridor. One channel would house electrical cables, data lines, power lines, fiber optic cables and high-speed internet, virtually eliminating power outages from downed power lines. A second channel would transport storm water and melted snow to a treatment facility. Worldwide attention Solar Roadways has generated its share of publicity since 2009 when it was awarded $100,000 Small Business Innovative Research
(SBIR) grant from the U.S. Department of Transportation (USDOT). That grant money was used to build a 12-foot by 12-foot prototype installation with a focus on the product’s electronics on the Brusaw’s property. They’ve also gotten publicity from Popular Science Magazine, TEDx, Smithsonian Institution, New York Times, CNN, The Huffington Post, Newsweek, BBC News, Forbes, Popular Mechanics, The Wall Street Journal and Time magazine among a host of other media outlets. The grant sparked a chain-reaction of media attention. A mention in a documentary titled, “The Prototype” by Your Environmental Road Trip also helped spread their idea even further. They began receiving private donations and soon learned about GE’s Ecomagination contest. They entered and won $50,000. With publicity growing, they were encouraged to keep searching for funding. Around the same time, they again applied for a SBIR grant and this time were awarded $750,000 to continue further development of the glass tiles, the heating element and begin testing plus fund the construction of a solar parking lot. But the biggest funding has come from

the public itself. The Brusaws received an unprecedented $2.27 million in their Indiegogo crowdsourcing venture. The fundraiser also caught the attention of several notable celebrities and earned them an invitation to the White House’s first annual Maker Faire festival of science and innovation. They’ve received kudos from U.S. Senator Mike Crapo in a video posted on their site. “It’s truly visionary to anticipate how our existing transportation corridors can meet tomorrow’s energy needs. This is exactly the kind of overthe-horizon thinking that has brought Idaho’s own Solar Roadways to national and world prominence. We can all benefit from this public and private partnership which will create jobs and lessen our dependence on fossil fuels while utilizing available resources,” he said. In 2014, Solar Roadways received a third, two-year grant from the SBIR USDOT grant totaling $750,000. This funding has allowed them to conduct university-testing on the freeze-thaw cycle, perform durability testing and traction testing to show that the glass tiles are strong enough to withstand the wear and tear of commercial vehicles and also safe

enough to travel on in inclement weather. Most recently, Solar Roadways received a $50,000 Idaho Gem Grant from the State Department of Commerce plus a matching $10,000 from the Urban Renewal Agency. The grant funded the installation of a 150-square foot solar surface at Jeff Jones Town Square at Third Avenue and Main Street in downtown Sandpoint. This is the company’s first public project in their research and development to demonstrate the viability of their solar tiles. Solar Roadways is also conducting preliminary studies for Missouri’s DOT (MoDOT). MoDOT’s Transportation Management Center as part of their Road to Tomorrow Initiative. As part of the project, the state will collect solar data from two conventional solar panels in one of their parking lots. The data will show them how much energy that location will produce. MoDOT would next consider testing the
tiles in rest stops along Interstate-70 before installing them on the highway. “They’ve got 200 miles of I-70 they’d like to put advanced cutting edge technology on. If they were to do the 200 miles of I-70 with our panels – we haven’t calculated how much energy that would be – (it would) probably be enormous and take every business and home along the highway completely off the grid,” Scott said in a news segment. More recently, MoDOT announced testing a segment of Route 66 in Conway, Missouri with the modules. There are very few other entities in the world matching what Solar Roadways is attempting. In the Netherlands, Studio Roosegaarde is developing their concept of a smart highway using glowing lines. The lines are charged during the day and glow at night. They have installed their prototype on a bike path called the Van Gogh-Roosegaarde bicycle

path resembling the artist’s “Starry Night.” In the United Kingdom, a group called Highways England is beginning trials on electric highways. They will have an off-road prototype and will use inductive equipment installed under the roads. And in France, the government is planning to install solar panels on a 600-mile stretch over the next five years. Each smart highway is different but have the goal of safety and renewable energy in mind. Not all who have learned about Solar Roadways are a fan of the product. Critics have raised concerns over the efficiency, safety, strength and durability. There are questions as to how the panels would store power and deliver it to remote stretches and also how to keep the glass tiles clean and visible. While there will always be skeptics, one thing is certain, the ingenuity of such a multipurpose product is bound to benefit the public and be the roadway to even bigger innovation and green energy solutions.

The Best Exercise You’ve Never Done Learning the Turkish get-up for optimal strength and mobility. By Susan Moore, Better Gym, Gig Harbor
IF YOU WERE ONLY ALLOWED to do one exercise for the rest of your life, what would it be? Before you say the first thing that comes to mind, think about what you need to accomplish in this exercise. We exercise or train to gain strength. To gain stability, mobility, endurance and metabolic conditioning. You want to hit all muscle groups and ranges of motion. I’m assuming you know what my answer is because it’s in the subtitle. The Turkish get-up hits all of these qualifications and more to include open and closed chain stability and mobility, thoracic rotation and stability, linking the upper and lower body mechanics and more. But before I get too geeky on you, let’s define what this crazy exercise is. The
Turkish get-up is a precise way to go from lying down to standing up with a weight over head being held with one arm. And then back down again. When done correctly it is poetry in motion, but when incorrect can exacerbate many skeletal and soft tissue issues. The key is, take it slowly and unloaded until you get the hang of it, and then challenge yourself once you have the steps down pat. It takes practice, but is well worth it if you attack the challenge methodically and with patience. Here’s how it goes: 1.

perpendicular to the floor. The right knee is bent and the left arm and leg are both on the floor and 45 degrees away from the body. Both shoulders are packed into the body and the elbow is locked. Keep your gaze on the kettlebell until you reach the bottom of the lunge position. 2.
Roll to your left forearm while maintaining your shoulder position away from your ears and pointing your chest towards the sky.

Push your body away from the floor coming up to a post position on your left hand and wedged between there and your right foot.

Sweep your left leg under your body while further wedging your body between the right foot and left hand. Keep your shoulders packed and chest up. Your body should make a straight line with your left hand, left knee and left foot. You are now in the half-kneeling windmill position. You should be able to rock your hips towards your left foot, and your right hand holding the kettlebell should be directly over the right hand that is pressed against the floor. Both elbows are still locked out which is referred to as stacked.

Sit up so that your left knee is on the ground stacked under your left hip, shoulder and kettlebell. At this point, your gaze shifts to the horizon so that your neck remains in neutral and you don’t put any unnecessary pressure on your lumbar spine.

Now sweep your left foot so that it is directly behind the left knee and right foot and you are in the bottom of the lunge stance.

(Steps 8-16) Reverse everything until you are back in the first position and then use both hands to safely bring the bell back to your body and roll your body and the kettlebell back to the floor.
This exercise is a labor of love. I have yet to come across someone who cannot at least perform a portion of this movement in a productive capacity. It can be frustrating to learn, but like I said, if you are patient and methodical the rewards are unparalleled. There are a ton of great resources on the interwebs and some incredible trainers in the Northwest who have studied this movement at length. Use every day as a practice of strength and see your strength, mobility and stability increase.

Because part is often painful or unstable, the athlete is advised to “stay off of it.” Water provides the ideal environment for accelerated healing. Gentle range of motion (ROM) should begin within hours of acute injury. If delayed more than 48 hours, scar tissue can quickly over produce, leading to tightening of the joint capsule and/or weakening of muscle fibers. Additionally, if the injured part is over stressed by load bearing, the healing tissue can re-tear, thus prolonging recovery and resulting in chronic pain and inflammation. The properties of water that accelerate the healing process include: Buoyancy - This is one of the key features of aquatic rehab. Buoyancy decreases the load on painful, inflamed joints. It allows for movement of the rest of the body so strength, endurance and speed are not lost during the recovery process. It also allows for more normal movement patterns such as running, while decreasing the gravitational pull.

There are three basic categories of strain/ sprains. Type I: overstretching of the tissue, which results in small tears within the muscle belly, tendon or ligament. Type II: partial tearing, which can often be the most painful of the three and can take months and sometimes years to completely heal. Type III: a complete rupture or tear of a muscle, tendon or ligament, often a significant amount of swelling or deformation is present in the absence of severe pain. If not properly diagnosed and rehabilitated correctly, a simple Type I strain/sprain can lead to an early end to a sports season, chronic pain, chronic instability and premature arthritic changes in the involved

MENTAL ATTITUDE: Large Waist Size Could Mean Higher Risk for Cognitive Disorders. In the May issue of the Journal of the International Neuropsychological Society, new research indicates a relationship between a greater waist size and lower levels of brainderived neurotrophic factor (BDNF), a protein that supports the survival of existing neurons in the brain and encourages the growth and development of new neurons and synapses, that may hasten the development of dementia and other cognitive disorders. While it’s unclear how central adiposity influences BDNF, researchers suspect engaging in BDNFpromoting behaviors like regular exercise and eating a healthier diet may protect the brain function of adults with a larger waist circumference. Diet: Cleanse Naturally Through Diet. Are you looking for a way to “detox” your body safely and naturally? The Academy of Nutrition and
Dietetics in its May 2016 issue offers advice on “cleansing” your body safely: drink plenty of fresh water, eat five to nine servings of fruits and vegetables daily, eat plenty of whole grains, consider a supplement to ensure proper nutrients, and consume fermented foods or take a quality probiotic to support gut health. A trigger point is a hyperirritable spot in the tissue surrounding a muscle that many people commonly refer to as a “knot.” In this study reported in The Clinical Journal of Pain in May, researchers examined the head, neck and shoulder regions of 143 women with either episodic or chronic migraines and found they each had an average of three or four trigger points in those anatomical areas. The research team suspects that these trigger points may either trigger the onset of a migraine headache or contribute to head pain once a migraine attack has begun. It was not because of nerves or excitement, but the frigid air that hovered around zero degrees Fahrenheit. Darlene Arviso, an elderly Navajo woman, chuckled from the driver’s seat as she saw me rubbing my hands next to her. “The desert isn’t just hot. It’s tough year-round,” she said. We were driving through Northern New Mexico,

just outside of a town called Thoreau on the Navajo Reservation. White snow sat on top of the red plateaus and rock formations around us. Beautiful as it was, this was no leisurely scenic drive. In this sparsely populated part of the country, Darlene is the only source of clean drinking water. I was sitting with the “Water Lady,” and that day, like every other day, she would be delivering clean water.
It was the first day of my internship with DIGDEEP, a water rights nonprofit based out of Los Angeles, California. As a recent college graduate in International Relations and a future Peace Corps volunteer, I had grown interested in global development. I viewed issues of clean water access to be as foreign a problem as Ebola or military coups. So it came as a great shock that my first project in providing such a basic utility began in the United States, just a day’s drive away from my apartment in Southern California. As Darlene and I drove that day, filling up cisterns, barrels and buckets with the precious clean water, it became clear just how real – and how American – this issue is.
Driving between homes I was able to pester Darlene with questions fueled by equal parts anger and confusion. As a resident of Thoreau for over 50 years, Darlene knows too well the troubled history that led to the lack of potable water in her community. A chemical sampling of the water from a traditional well would show a variety of fatal contaminants. Arsenic and uranium are found frequently throughout the southwestern U.S., a result of hastily constructed, then abandoned, uranium mines during the nuclear arms race in the 1960s. Both the uranium and the chemicals used to extract the ore have since seeped into the most immediate water tables, leaving the water that

one might extract from a basic well poisonous. The Navajo Nation, extremely tight on money and resources, has been unable to provide adequate housing or utilities for its people. As a result, Thoreau and other parts of the Navajo Nation struggle. More than just history, Darlene is intimately in touch with the struggles of those families to whom she delivers water. On a good day, Darlene can refill the water supply of eight homes given the restrictions of time and water she is able to carry with her 3,500 gallon tank. As the sole water source for a community of over 200 households, this means that a family
would have to make a 1,200 gallon cistern last for a month. For a household of four, that is just 10 gallons a day per person for cooking, cleaning, bathing and of course drinking; the average American uses over 145 gallons per day. Those who do not have a costly cistern system are not as fortunate. Many fill up buckets, barrels, jerry cans or whatever receptical they can find to store water for the month. Storing water in open containers often leads to contamination and disease. Thoreau is not an outlier. This small town shares its water problem with many other American towns and cities. Beginning in April of 2014, a change in water source rendered the tap water
undrinkable in the city of Flint, Michigan. Afterwards media outlets and politicians began a national conversation on water access. But still the problem remains greater than most understand. The latest census tells us that at least 1.7 million Americans lack access to clean, running water. These people are rarely urban dwellers like those in Flint. They are more often rural, isolated agricultural communities and are disproportionately Native American. In this year alone, 40 percent of Navajo Native Americans will live without running water. DIGDEEP is centered around the belief that every human deserves clean, running water. They are unique in their focus on American water issues, with projects in Arizona and New Mexico and more U.S. locations on the

horizon. For DIGDEEP, running water is a basic human right. The organization uses community centered approaches to solve water problems in a sustainable fashion. The organization is molded in the image of its co-founder and CEO, George McGraw. McGraw founded the organization in 2011. As a human rights law expert, he primarily worked on water rights issues while working for the United Nations Development Program. McGraw fused expertise and passion in creating a nonprofit focused on access to clean water following his work at the U.N. He challenged himself to introduce the issues of water poverty to the nation least affected by it. In the five years of DIGDEEP, they have launched projects in three continents, raised

millions of dollars, and brought clean water to numerous families across the world. It was to my surprise given the organization’s accomplishments that I was joining a team of merely six people, with only two of them being full-time employees. DIGDEEP is a small, intimate team of passionate changemakers. Over the course of five months I had the pleasure of working with a dynamic group who have been able to achieve so much with so little. Over my time with the nonprofit, I was able to be involved in a wide array of tasks given our small staff. But when I was able to focus on my own projects, I spearheaded a new campaign on the Navajo reservation. My task was
simple: to bring running water to one family who need it more than most. For La Tanya Dickson and her family, access to clean water means so much more than drinking or bathing. While working with La Tanya I learned that water means happiness; water means family. I first met La Tanya at the community center in the desert town of Birdsprings, Arizona. The bulletin board that hung above our table read “Veterans of Birdsprings” with photos of men and women in uniform below. While we made our introductions, two of her young boys played a giggly game of tag. But that day, it was their little sister Lisa who would be the subject of our conversation. For the past 16 months, Lisa had been living in

house as well as the basic in-home water amenities. Once given the goahead by the Navajo Nation, DIGDEEP will partner with the local Keyah Construction company to begin building.
When Lisa was just three days old she was diagnosed with microvillus inclusion disease, a genetic disorder of the digestional tract which prevents her from processing food and extracting nutrients. As a result of her fragile health condition, Lisa requires constant medical attention and a safe and sanitary environment. But like the majority of the families in the Birdsprings area of the Navajo reservation, Lisa’s family lacks the vital resource of running water. Just months after her diagnosis, Lisa was denied an intestinal transplantation because of her family’s lack of this basic necessity. Without water and electricity, a recovery in her own home would be impossible. La Tanya has already missed some of her child’s most important milestones in development. Lisa’s first laugh, birthday and steps have been in a medical group home under the supervision of nurses, not her family.
After launching a fundraising campaign for Lisa, DIGDEEP received an overwhelming demonstration of support from the public, raising the necessary funds in just over a month. “Lisa’s story is so powerful because it so clearly illustrates the ancillary effects of water poverty,” McGraw said. It is not just about bringing water to the thirsty. For Lisa and her family, clean water means a safe home. It means a family coming together. For communities across the world, clean water access means drastically lower instances of disease and infections. It means women and children can spend less time hauling water and more time attending school or earning money. Water access is an all encompassing issue. It means education, economic development, security and gender equality.
After hearing about Lisa’s story, DIGDEEP pledged to help bring running water to her home and reunite her family. To do so we raised $50,000 to build a 1,200-foot water line extension to bring water to the

It will soon introduce a second water truck to deliver concurrently with Darlene, cutting the month long waiting period for families down to roughly two weeks. The neglect and irresponsibility that lead to the water crisis will take years of creative problem solving to undo. Difficult as it has been and will continue to be, DIGDEEP is dedicated to doing it. In the water truck with Darlene on my first day, I repeated the same few words again and again. “Really? Here? In America?” This ignorance that I embodied on my first day is the very thing that I have since tried to combat. Because despite the collective national silence on water access, the problem is not going anywhere. The 1.7 million Americans will continue to struggle without running water and these communities will disproportionately be poor minorities, particularly Native Americans. It remains one of the great embarrassments of our nation. “Really? Here? In America?” Darlene responded with a disappointing nod, again and again. Do you dream of giant tubes surfing the North Shore? Grab a taste of reality and adapt, because wakesurfing is here! Grab your boat, or your buddy’s boat, your surfboard, and a rash guard and get going! Once you’re out there, get your momentum trailing behind the boat holding onto a ski rope. When you’re feeling it, let go and ride that man-made wave out. Wakesurfers take it to the next level, creating new tricks and trying to do one better than the next guy. Fun fact: Canadian musician Chris Hau recorded a video in 2013 in which he played a song on a guitar while wakesurfing. Try to top that!
Hydroboarding
The wave of the future is here. Why ride in the water when you can ride over it? Create your own breeze on a hot summer day by strapping on some jet packs and coasting above the water’s surface. Helmets and floatation devices are a must if you’re renting your gear, but the hydroboard itself is buoyant, so feel free to take a breather in the water if your legs can’t handle the pressure. Also, you’re connected to a watercraft via a large hose that forces water into the boots and down through the jets, giving the rider the ability to fly up to 49 feet in the air or dive up to eight feet underwater.

Paddleboarding
Who doesn’t want a casual day of fun on the water with friends? Paddleboarding is a great low-impact exercise when you propel yourself through the water using a paddle, standing or sitting on a paddleboard. Paddleboarding was originally performed in the open ocean, with the participant paddling unbroken swells to cross between islands. These days, and in our Northwest region, it’s all fun and games. Paddleboards can be surprisingly affordable to own, and most rentals are even more affordable for a day’s use, making it the perfect water intro sport for newcomers to the area. Bonus points: Paddling standing up puts tension on stabilizer muscles, building strength, stability and increasing your center of balance.
Air chair, also known as hydrofoiling, is basically sit down waterskiing. With the motto “Be safe, have fun, go BIG,” air chair is gaining a name for itself. Your balance skills have to be onpoint in this sport, as it takes some strength and balance to maneuver over the wakes your boat will throw back at you. Once you’re up, you’ll start to rise out of the water and onto the lower blades of the air chair, and you’ll be able to feel the wind rushing underneath you. If you don’t look down, it will feel like you’re miles above the water, minus the spray from the waves. We won’t talk about the spray.

Diving
Diving conjures up such an elegant picture. While we don’t have the tropical coral reefs that we typically associate with when we think of diving, the Pacific and Inland Northwest is home to varied water life that can be seen best when fully submerged. Diving requires some lessons, as there is a lot of gear involved. Our inland lakes, such as Lake Pend Oreille, have a depth to them that is best explored from below, as you can dive further than the light can reach. Further to the west, the ocean salt water teems with life, from the mundane to more unusual special of swimmers.

Tubing is a sport the whole family can enjoy. Grab your life vest, your tube, your protégés, and your buddy’s boat if you don’t have one, and head on out to the water. If you trust your friend driving, you can build up speed and get a little adrenaline rush. If you have a little guy on the tube with you, they might prefer a more relaxing turn around the water with you. othing says summer like the great American road trip. There is something freeing about packing up the car and taking a vacation, even when the destination is within close proximity. The Pacific Northwest brims with endless splendor and opportunity for adventure. Idaho’s and Washington’s abundance of pristine waterfalls is enough incentive to hit the open road. There are hundreds (if not thousands) of waterfalls that will leave you awe-inspired.

Because of the rough terrain and its remoteness, few individuals exert the effort to visit this waterfall, which is a bonus for those looking for more of a solitary wilderness experience. The waterfall is typically reached through the Canadian side in British Columbia. Neither stateside nor Canada pose an easy or accessible entry route. A four-wheel drive is certainly required to navigate the rugged terrain. Visitors should anticipate at least a 10-mile hike before they reach the falls. Three large glaciers on the face of Mount Redoubt form Depot Creek. Under warmer conditions, this powerhouse of a waterfall can pump out a volume of 500 cubic feet per second as it plunges nearly 1,000 feet to its base. In this instance, the triumph is well worth the adversity.

BIG SPRING CREEK FALLS –Skamania County, Washington If a picturesque landscape not far from the beaten path is what you are looking for, Big Spring Creek Falls located in the Gifford Pinchot National Forest cannot be rivaled. This mossy, stair-stepped, enchanted cascade is the essence of a photographer’s dream. This serene waterfall consists of three tiers where the tallest drop is only 15 feet. The waterfall can be seen from the road and is easily accessible for foot traffic. This is truly one of the most camera-friendly landscapes that needs to be at the top of your waterfall road trip.
PANTHER CREEK FALLS – Skamania County, Washington Panther Creek Falls is considered to be one of the most unique waterfalls in the country. The roughly half-mile trail is well-groomed and is rated as an easy hike to the viewing point. This distinctive waterfall located in the heart of the Gifford Pinchot National Forest that is uncongested and apparently few people are aware of it. Hikers will unveil a richness of hanging moss and vibrant colors. The water seems to emerge as streamers from an enchanted forest. After a full day of abundant activities in the Gorge area, travelers can indulge and stay at the nearby Carson Ridge Luxury cabins.
DEPOT CREEK FALLS – Whatcom County, Washington This waterfall in the North Cascades National Park is considered by some to be one of the best waterfalls in the world. Unfortunately, this waterfall

SHOSHONE FALLS – Twin Falls, Idaho The list of best waterfalls would not be complete unless it includes the renowned “Niagara of the West.” Shoshone Falls is located on the Snake River only 3 miles to the northeast of Twin Falls. The falls plummet over 200 feet (which is almost 50 feet higher than Niagara Falls) and is nearly 1,000 feet wide. The city of Twin Falls maintains and operates a lookout that is easily accessible and provides optimal views of this majestic cascade. This waterfall is best seen in spring or early summer as agriculture and irrigation season tend to diminish its velocity. The park offers shaded picnic areas, hiking trails, boat ramps and play areas, making it ideal for the entire family. SNOQUALMIE FALLS – Snoqualmie, Washington As a premier attraction for Washington State, Snoqualmie Falls draws in nearly 1.5 million visitors each year. Its appearance on the television show “Twin Peaks” made this 268-foot waterfall a cult series icon. The twoacre park and observatory are easily accessible to visitors. There is the option of a 0.7 mile (non-strenuous) informative trail from the upper to the lower falls. This waterfall is perfect for families and pets. The falls are located only 30 miles from Seattle and offer a true Pacific Northwest experience. THOUSAND SPRINGS - Hagerman, Idaho Just to the south of Hagerman is one of the most unique geological areas in Idaho. It is here that ribbons of water pour from the permeable basalt face of the canyon. This waterfall road trip experience is on a 67-mile scenic byway that stretches along the corridor of the Snake River. This waterfall destination is a genuine family vacation as it offers a resort and spa experience for the family. There is something very freeing about rolling down the windows of a car to feel the embrace of summer. Allow for the wind to tangle your hair and for the sun to kiss your face. We must live for these days – these simple moments of setting aside the grind of existence so that we may fully live. Get out of the house and go see something beautiful. To witness the wonders of these falls will make space for something amazing to be born inside you. Start here. Pack your car and hit the open road to experience at least one of the pristine waterfalls of Idaho and Washington.

Africa AN AMERICAN’S PERSPECTIVE

THERE IS NO DOUBT that a trip through the vast expanses of Africa is the trip of a lifetime. The exception is my wife, who returned for a second visit last May to share her excitement with me. The truth is, an African safari was never on my bucket list. But when I sensed the exhilaration and saw the photographs Susan brought back from her excursion with my son, the long plane flight and the rustic accommodations were no longer an insurmountable challenge.

Our adventure was broken into four separate, equally thrilling segments. We started off at a private game lodge in South Africa, made our way to the inspirational grandeur of Victoria Falls that forms the border between Zambia and Zimbabwe, then to the stark remoteness of raised tents in the Okavango Delta in Botswana, and finally across the continent to Tanzania where we traversed the Serengeti and spent a remarkable day in the Ngorongoro Crater.

Elephant Plains The 21 hours of flying – including the last 40 minutes on a small single-engine prop aircraft – all seemed like a small price to pay after our first day on our bush tour with Dawie Jacobs at the Elephant Plains Lodge in the Kruger portion of northeast South Africa. FROM OUR MAKORO AND HIKES ON ADJACENT ISLANDS, WE CAME FACE TO FACE WITH A 65-YEAROLD BULL ELEPHANT AND SEVERAL HIPPOS WHO WERE NOT THRILLED TO SEE US INTRUDE ON THEIR SOLITUDE.
after dark. On our first afternoon we were treated to an hour observing a pride of 13 lions and the sighting of a rare African pangolin, an animal that looked like a cross between an armadillo and an artichoke. Our first morning ride set the bar extremely high. Dawie spotted a leopard in search of her next meal. We watched as she crept through the tall brush….then bounced on a small duiker, a tiny member of the antelope family. The leopard made the dash and all we could hear was a faint yip. When we caught up to the leopard, she had her breakfast pinned with one paw. The end did not come quickly but, surprisingly, it was not bloody. The leopard began her meal while the duiker was still struggling to escape. Later that same day we watched as two lions performed their mating ritual. The courtship took almost a half an hour. When the mating finally took place, it happened literally below the passenger door of our vehicle. The actual
mating took only about three-and-one-half seconds. We were fascinated to learn that big cats often mate 50 times per day when they are in season. Within our first 48 hours in the brush, we had up close and personal experiences with each member of the “Big Five” (lion, elephant, rhino, leopard and the Cape buffalo). Dawie told us we were “incredible lucky.” But I think we were just lucky to have him at the wheel of our Land Cruiser. The next day we watched an emotional reunion between a leopard and her cub. But the highlight for my wife was on the third morning when we left two leopards mating to discover wild dogs feasting on an impala. Dawie was shrewd enough to place our vehicle on the shore of a watering hole where the dogs came to play after they finished devouring the impala. Dawie was not only a wonderful ranger, but an incredible photographer as you can see from

some of the photos printed with this article. Deep in the Delta From South Africa we spent a day at Victoria Falls. Then traveled by car, ferry boat and tiny airplane to the Oddfellows Camp deep in the Okavango Delta. Instead of Land Cruisers, our twice-daily game drives were on dugout canoes known as a makoro. Our four nights in Botswana were highlighted by a close encounter with a raging hippo who rumbled through our camp about 12 yards from where we were having dinner. The tents were fun, but the real adventure came watching and listening for animals while using the outdoor toilet and bucket shower. From our makoro and hikes on adjacent islands, we came face to face with a 65-yearold bull elephant and several hippos who were not thrilled to see us intrude on their solitude. We saw herds of wildebeest in fields guarded by impala and zebra who roamed the

perimeter. The most frightening incident of our stay took place one afternoon when Susan was confronted by a cobra. The snake raised its head, but thankfully slipped back into the brush as my wife calmly stepped backward and beyond the range of his fangs. From the rustic raised tents in the delta, we flew across the vast African continent to Tanzania. Our adventure in the Serengeti took us to three separate lodges, each with their own unique splendor. We were treated to breathtaking views of Lake Manyara and the white-linen opulence of the Kirawira tented camp. Our wake-up call in the morning at the luxury camp was a charming room steward wearing white gloves when he brought coffee and pastry to our veranda on a silver tray. It was on the six-hour drive across the Serengeti that we were privileged to witness a partial migration of wildebeest. The sight of the large
animals rumbling in front of our vehicle for as far as the eye could see was truly inspirational. The Serengeti is also the only place in the world where you can see lions that climb trees. At one point, we watched a female sitting majestically on a branch while 12 lions from her pack hung from the limbs of a nearby tree. Garden of Eden Our final stop was at a lodge perched on the edge of the Ngorongoro Crater, close to where the first proof of humans were discovered. It’s easy to believe that this is where the Garden of Eden once might have existed. Inside the steep walls of the crater were several distinct ecosystems, ranging from a lake populated with pink flamingos to desert terrain where animals lived without any natural predators. There is so much more to reflect from our African adventure. But it is important to

emphasize, like all vacations, the best part was the people we met. That began with Dawie and the staff at Elephant Plains, to our guide Rep who pushed our makoro through the shallow waters of the delta with his long pole, to Amos who drove us for six days in Tanzania and shared the traditions of his native people, the Maasai. Unfortunately, space limitations do not allow me the opportunity to mention the giraffes that pose for photos or the thousands of mischievous baboons who entertained us for hours at a time. An African safari is truly the vacation of a lifetime. If it’s not on your bucket list, it should be.

FOOD AS MEDICINE SHIITAKE MUSHROOMS PACK IT IN
SHIITAKE MUSHROOMS have been used by the Chinese culture for nearly 6,000 years for medicinal purposes, but it is their rich and smoky flavor that is capturing the attention of many today. And if you are one who finds yourself putting shiitake mushrooms in your grocery cart, you will be happy to know that the benefits of eating them extend far beyond their flavor. Not only do shiitake mushrooms provide support to one’s immune system, studies have shown that they also can help protect us against cardiovascular diseases. In addition, consumption of shiitake mushrooms provides you with a good source of iron for your diet. When preparing shiitake mushrooms, keep in mind that they are porous so do not expose them to too much water as they will become soggy. Instead, clean them use minimal water by simply wiping them with a damp kitchen cloth or a mushroom brush, which can be purchased at most kitchen stores.
Tofu is a bean curd that is made by curdling fresh soy milk pressing it into a solid block and then allowing it to cool. The liquid is then discarded and the curds are pressed to form a bond. Tofu provides a wonderful source of protein, iron and calcium. Nutritional, healthy and tasty, tofu has also been thought to provide protection against cancer and heart disease.
One of the ways to cook shiitake mushrooms is to saute them over medium heat in broth. When the broth begins to steam, add the mushrooms and saute for seven minutes, stirring constantly the last four minutes. If you are looking for new ways to enjoy this flavorful food, consider the following: • Add some mushrooms to miso soup. • Saute mushrooms as described above with onions and garlic and serve as a topping for chicken. • For a quick and easy Asian pasta dish, saute shiitake mushrooms with snap peas and tofu. In a skillet, place 1 tablespoon of sesame oil over medium-high heat and add tofu cubes. Cook and stir frequently until tofu is golden brown. Once cooked, turn off heat and set aside. In another skillet, place olive oil over medium-high heat and add diced potatoes. Stir frequently. Once they start to brown, add ⅛ cup of water and cover for 2 minutes or until tender while continuing to stir frequently (this will steam the potatoes). Add onion and 1 tablespoon liquid aminos and cover for 1 minute. Remove lid and add kale and Swiss chard stirring constantly until greens cook down. Add 1 more tablespoon of water and continue to stir. Once kale and chard are almost cooked down add shiitake mushrooms and 1½ tablespoons of tamari and add tofu. Remove from heat and serve.

A TIME OF CELEBRATION Summer provides an abundance of activities. By Melody Vanhorn. Photos courtesy Celebrate Life and The Festival at Sandpoint. WITH SO MUCH HAPPENING in Sandpoint each August, it is hard to choose which activity to participate in. To start, why not take an opportunity to get out and enjoy a beautiful walk across the Long Bridge and help give back to the community at the same time? The Celebrate Life Fun Run/Walk is an annual fundraising event that helps generates funds for those who have been diagnosed with cancer. The funds raised through sponsorships, registration fees and donations are distributed throughout North Idaho to provide assistance to cancer patients and their families in a variety of practical and unique ways. Join them at 9am on August 13 at Dog Beach, on the north side of the Long Bridge, for the 13th Annual Celebrate Life Fun Run/Walk. The run, walk or ride will travel across the scenic Long Bridge as a gathering of family, friends and neighbors are doing what others cannot, celebrating life. To register please visit celebratelifefunrunwalk. org and help make a difference in the lives of others. And of course there is always the Festival at Sandpoint. Now in its 34th year, this year’s festival provides something for everyone. WIth local favorite Bridges Home to Emmylou Harris to Ben Harper and the Innocent Criminals, you can enjoy music of all genres. The Festival at Sandpoint kicks off on Thursday, August 4 with the Brew Fest and runs through Sunday, August 14 with the Grand Finale Concert featuring the Spokane Symphony Orchestra along with the return of jazz pianist and composer, Vadim Neselovskyi, and two Sandpoint natives, Jason Moody and Hailey Fuqua. And if you have small kids, you will not want to miss the family concert on Sunday, August 7. In addition to the instrument zoo, the Festival Community Orchestra and Sandpoint’s Studio One Dancers will perform “Peter and the Wolf ” for all to enjoy. Get out your calendar and explore all there is to do during summer in Sandpoint!
