Welcome to the world of dining and entertainment in Spokane! With this, our ninth annual Spokane Sizzle, we offer you even more ways to find what ís special in the local food scene in Eastern Washington. Take a look around your neighborhood or visit one across town; new restaurants are still popping up all around, and the old favorites are standing the test of time. There’s no shortage of new restaurants, tasting rooms, wineries, breweries and gourmet shops around Spokane! Here are just a few of the new neighborhood favorites that have cropped up in the past year, along with those old favorites that have moved locations or have undergone recent transformations. Explore the new flavors of Spokane! DOWNTOWN "What is this Method?" you say? All things good, whirled or pressed into something so good for you it just might change your life, or at least make you feel good. Owners Nick Murto and Tyler Lafferty lead a healthy lifestyle with a plant-based diet. Nick and Tyler own Seven2 and 14Four marketing agencies in Spokane. The duo travels a lot for work to Seattle, New York and Los Angeles. While visiting those cities they became hooked on the various juice bars and vegan restaurants in there. They would come come and lament on how there wasn’t anything like that in Spokane. So in 2011 they began working on their plan to change all that. They were inspired to create a concept for a juice bar and café unlike anything they had been to in any city. They opened Method Organic Juice Café in August 2012 without any previous restaurant experience and a plan to create a unique customer experience. To be sure, they had the marketing plan down. One of Nick’s greatest sources of pride is to see someone walking down the street carrying a Method juice. Nick says, “The food is all plant based, and we make everything in house. We are one of the only all-organic restaurants in Spokane and one of two all vegan. Everything we sell is also gluten free, so people don’t have to question their order or even ask for special menus to accommodate their gluten intolerances. Our customers really care about what they are putting into their bodies. Many of our customers are athletes, and our food helps fuel them throughout their day.” Anyone who is eating gluten free or vegan, or simply cares about what they eat, can appreciate this concept coming to life

and flourishing here in Spokane. They have customers who have been devoted fans from day one. Everything is fresh, 100-percent organic vegan with no corn and little to no soy. Not only are they offering a selection of juices and smoothies, but the menu includes salads, quinoa/ sprouted brown rice bowls topped with fresh raw veggies and a choice of their Thai Peanut or Lemon Tahini sauces, Chia Pudding and takeaway snacks. Seeing their creation come to life, Nick says that the place has got soul: “The food has to be amazing and good for you as well. It’s like a club that you want to be a part of. Every time you go, you feel welcome and you can’t wait to go back. I love that we are making a difference in Spokane. You can only complain for so long without doing something about it. I wish more people would do what they could to help make Spokane a better place.” Insiders tip: Get both the Thai Peanut and the Lemon Tahini sauce 50/50 on the Quinoa Rice Bowls. Bridge Press and EMVY Cellars winery has moved! The historic Foresters of America Building at the corner of Pacific and Browne has undergone a meticulous renovation to become downtown’s newest winery. The two wineries come together to preserve the historical qualities of the building and yet make a perfectly functional yet charming winery and event facility for all to enjoy. Bridge Press owners Brian and Melody Padrta, and Mark and Valerie Wilkerson of EMVY Cellars, are excited to be able to expand their production capabilities in their new home. Making wine, enjoying it with friends and customers in the tasting room, providing entertainment and an event facility for gatherings; all comes together in their new winery. Europa has new owners! Aja and Jeff Engels purchased the restaurant in February 2013 from Janice and Dennis Maas, who ran it successfully for more than 22 years. Now Europa Restaurant and Bakery, Aja and Jeff are keeping the comfy casual, homey feel of the restaurant, but taking the menu up a notch. Menu items range from specialty pizzas on freshly made dough from Europa's bakery to fresh homemade ravioli and gnocchi and sirloin steak smothered in their own mushroom demi glace. Most items are made in house, including Europa's bread, pizza crust (even gluten free), all of their wonderful desserts and sauces, and

In duplicating the success of the Coeur d’Alene Fire Artisan Pizza for Downtown Spokane, Doug Johnson opened in the former location of Moxie on Sprague in February 2013. Fire’s new twin has the same simple menu, and they are cooking up their house-made, hand-tossed pizzas in a blazing 800-degree Woodstone oven in barely two minutes! Pair that with inventive salads and some great wines and brews, and the twin is officially identical. Open 11am to 10pm Sunday through Thursday, and til 11pm Friday and Saturday. 816 W. Located next to the Knitting Factory, The District Bar offers more than your average gastropub fare and craft cocktails. General Manager Matt Judge brings culinary expertise and a little savoir faire to the plate and beverages served there. This welcome addition to the Entertainment and Arts District neighborhood downtown offers a little fun and food before or after concerts and theatre events, a space for private parties and a vast beer selection that also includes a few local brews. WEST CENTRAL (NEAR DOWNTOWN) David Blaine has been in the restaurant business for more than 25 years and was offered a location opportunity he considered too great to pass up. Central Food opened in November 2012 with a stunning view overlooking the Spokane River and the city across it. The West Central neighborhood restaurant is a welcome addition to the new development growing up around them and beyond. Central Food is the simple concept, open for breakfast, lunch and dinner offering menus that accomodate fresh seasonal ingredients and ideas. They make everything in house from mayonnaise to smoking meats and bake their own European-style bread daily. David likes to keep things interesting, always playing with the menu and trying new things. He is sure to keep things fresh and exciting as his following grows. 1335 W. Summit Parkway 315-8036 Coeur Coffeehouse opened to open arms in the West Central neighborhood on Monroe Street and College Avenue. The neighborhood has been excited to see the space they created to bring people together and that they have a passion for coffee. Owner Mike Garrison says they are quickly gained a following because they feature local products and pay attention to details in preparation of the coffees. Featuring local coffees, Spokane’s Family Farm whole milk and local Chase Honey; they also make their own vanilla, chocolate and caramel sauces with all-natural ingredients. They offer espressos and French Press, Beehouse, Chemex and Aeropress filter brew methods.

The atmosphere is uplifting, and people in the neighborhood have responded. They seem to appreciate a gathering place safe for the kids where they can get a healthy hot cocoa prepared with healthy ingredients. Don’t miss: The Chemex extraction. UNIVERSITY DISTRICT This past year, Spokane’s Northern Lights Brewery became No-Li Brewhouse after owners Mark and Stacy Irvin welcomed a new partner, John Bryant, and a name change. John is a Spokane native returned home as veteran of the craft beer world for more than 20 years; working with such notable brands as Deshutes Brewery, Odell Brewing and Oskar Blues Brewing. Mark is also a Spokane native, and his history of brewing craft beers spans 30 years, founding Northern Lights Brewery in 1993. The name change to No-Li became apparent due to another craft brewery with the same name back east. The new name is a jab to the funny bone and to remind you of the honest to goodness brewing happening there. Their passion for brewing is apparent, and together they have achieved even more recognition of their accomplishments with gold medals in the Great American Beer Festival and Japan International Beer Competition, a silver medal in the Brussels International Beer Competition and a bronze medal for the European Beer Star, Beer of the Year 2011 and Best ESB in 2012 by Seattle P.I., just in the past year. No-Li’s Crystal Bitter was named one of the 21 Beers of the Year by beer blogger Evan Benn at the St. Louis Post-Dispatch and is one of only 60 breweries selected for SAVOR: An American Craft Beer and Food Experience to be held in June in New York. No-Li is also named this year as Draft Magazine’s Breweries to Watch, making it even more than worthy of a stop in. No-Li. Still at the same great location on the Spokane River near Gonzaga University, it’s the perfect place for game-day visits or for a beer outside on the patio. Loco Dogz opened in the University District at the corner of Boone and Hamilton. With 100-percent real beef dogs or bratwurst, Andouillle and even a chicken or veggie dog, they go the extra mile to present flavorful originals. Tantalizing toppings include grilled onions, peppers, pineapple or apples, and fresh chopped everything, from the basics to their own coleslaw and mango salsa. In-house scratch-made sauces top them with the best—their own BBQ and Coney sauces, chili, Mama Lil’s cheese spread or cilantro lime mayo. All this and fresh baked buns! NORTH SIDE In a cozy space with a vintage furnished dining room, Morning Sun Bakery and Bean offers not only a comfy place for the neighbors, but an extensive pastry list that also includes cream cheese, caramel pecan and glazed cinnamon rolls, and local organic Roast House coffees in espresso and drips. The North Side neighborhood will never be the same. 5602 N. Wall St. ~ 241-3871 From the owners of Thai Bamboo comes Did’s Pizza and Froyo with their pizza, calzones and frozen yogurt, Hawaiian ice, bubble tea, smoothies and seasonal drinks, as well as beer and wine. A perfect place for families, Did’s offers a beach-inspired menu in celebration of Did, the surfer. They offer signature pizza creations, along with froyo selections of 18 flavors and 48 toppings, making it a crowd pleaser even for a stop in for a cool treat. Open for lunch and dinner 11:30am to 9:30pm Monday through Sunday; open late Friday and Saturday. 5406 N. Division St. ~ 808-2090 It’s time to celebrate. The original owners have returned to Prospectors Bar and Grill! Cheryl and Mike Didier sold the restaurant in 2010, but two years later, they decided to purchase it from the new owners and reopened it earlier this year.

The menu has returned to its former glory, with Prospectors' former Executive Chef Paloma Kunzelmann back at the helm firing up the traditional and comfort food menu items Prospectors was always known for. Portion sizes are smaller, but so is the bill! The open kitchen allows guests to be entertained as they watch chefs prepare their food. And now with its new liquor license, you can choose from a full bar of classic drinks, along with Draft and bottled beer, wine by the glass and reserve bottles. Lunch and dinner are served daily, 11am to 9pm Monday through Thursday, til 10pm Friday and Saturday. And don’t miss out on breakfast on the weekends starting at 8am. 12611 N. SOUTH HILL The Karatzas family moved Café Italiano from the North Side in November 2012, relocating the restaurant to the South Hill in the former West Wing location. Owner/ Chef Peter Karatzas has been a chef nearly five decades, starting out in Nassau and refining his skills in fine restaurants all over the world. He relocated to Spokane 23 years ago, blessing the area with his authentic Mediterranean cooking. At Café Italiano, guests will enjoy fine dining offered in a warm and inviting atmosphere. You can’t help but notice the original photos from around the world that Peter’s father-in-law took over the years while working for Kodak. Guests will find a set menu with rotating specials. Dishes are prepared with organic vegetables whenever possible, alongside the best ingredients, with specialty items from around the world such as red caviar from Greece, conch from the Bahamas and mortargra from Spain. They source their pork from Snake River and all the beef is Black Angus. The pasta is from Italy, and they bake their own bread in house. Peter is also a sommelier

and has fabulous wines to choose from. During the warmer months, they plan to have a patio with umbrellas. Dining at Café Italiano is sure to be an experience, from the great house-made sauces and food to the excellent service. 4334 S. Regal St. ~ 290-6943 Revel 77 coffee shop features several fine coffee roasters from the region; Victrola Coffee from Seattle, Water Avenue Coffee from Portland and local DOMA Coffee from Post Falls. Owners Mike and Deb Nelson opened the doors in November 2012 on Spokane’s South Hill at 57th Avenue with a desire to create a place for the neighborhood to come together. They love having the opportunity to get to know the customers who come in and offer them a comfortable, social place to be. They make all of their own syrups; the four main ones include vanilla, caramel, chocolate and peppermint. A popular item people keep coming back for are more of their Italian sodas made with house-made syrups. The neighborhood niche surprised them with customers coming by for brewing equipment and coffee amenities, too. Don’t Miss: The Salted Caramel Latte, a real crowd pleaser. When To Go: Catch the morning sun. Who To Bring: Kids. The hot chocolate (house-made syrup) is awesome. 3223 E. 57th Ave. ~ 280-0518 Just a bit out of the way in nearby Worley, Idaho, is where you will find Chinook at the Coeur d’Alene Casino. It’s undergone a remodel, but you might also call it a revival. Chinook Steak, Pasta and Spirits, a blend of fine atmosphere, fine dining and easy pricing, has proven to be a significant winner following dramatic changes completed in the restaurant in 2012 They turned Chef Molly Patrick loose to create her own recipes for the pasta sauces and unique salads and appetizers, but keeping on the menu the prime beef for which the restaurant was already so highly acclaimed. The result has been dramatic; guests are filling the room to enjoy quality beef, pasta dishes and the gourmet pizzas from a new brick oven. Behind The Smiles

Walk into almost any restaurant that has a prayer of keeping its doors open and you will be greeted with a smile. After all, you are the guest, and the closer to perfect and pampered a restaurant can make you feel, the better their bottom line. Any server or hostess who snaps at the clientele like Seinfeld’s Soup Nazi stands a great chance of finding themselves without a job just moments after that first or second complaint. Of course the best places fail to hit their mark every time, and in mediocre establishments, slow or shoddy service slips by with some regularity; but this just serves to make the point that we expect more. There are standards, and hospitality is supposed to be, well, hospitable. We are paying for it, right? And when it comes up short, we communicate that immediately by docking our errant server on their tip or registering our displeasure with the manager. So what we see at the counter at McDonalds or the booth at Red Lobster or the bar at our favorite neighborhood bistro is a smile—a smile from someone who has a job. Sure, it might be a starter job, but it is a job. WHAT YOU DON’T SEE In more than a decade as a restaurant critic, I didn’t stumble onto any expansive conspiracy hiding behind these smiles. But what I did discover changed my life and might rattle yours. SIZE: Food service workers are the largest employment group in the nation. Add in their hospitality siblings in hotels and together the restaurant and hospitality industry is nearly double the size of any other industry.

and managers and trickles down to everyone on the crew. This stress plus the TOUGH AND CHANGING HOURS make the industry a relational wasteland with massive rates of breakups and DIVORCE. Below management, a SAFETY NET is almost non-existent. Then there is the rates of DRUG AND ALCOHOL ABUSE. This one industry posts the highest numbers of abuse of any in the country. CATCH BASIN OF NEED: The industry is also the catch basin for the most vulnerable in our culture: at-risk teens, single parents trying to make life work, minorities, new immigrants and ex-felons who are trying to put their lives back together. Spokane’s Local Coffee Roasters A Toast to Local Roasts!

Spokane doesn’t need a mega-corporate coffee shop on every corner. We have some of our very own roasters, thank you very much. We have our own expert conscientious bean hunters buying, roasting and preparing coffees that offer much more than the ordinary sugary, milky, artificial blends the corporate stores are known for. Here in Spokane, we want to taste our coffee and savor its nuances. We want that creative sanctuary of the independent coffee house created as an alternative place for the neighborhood coffee klatch. Coffee beans come to us green from many subtropical countries that depend on the crop for their living. It is a seasonal crop, so the source countries vary throughout the year. And the flavor nuances in coffee come from the terroir and the interpretation of these beans by the roaster, always seeking to find the perfect roasting time to bring out the best qualities of each bean. Our local roasters are committed to the farmers they work with and the growth of fair-trade practices, certified organic and direct relationships with farmers whenever possible. Traveling to these faraway lands can be a costly venture, so many roasters depend on importers who have a reputation for doing the same direct purchasing, making the roasters confident that they are getting the best beans available. It was a lucky day when Leslie and Tom Hutchinson came to town in 1976 to open 4 Seasons Coffee Company, Spokane’s first local roastery and coffee house. They opened in the space now occupied by Atticus Coffee and Gifts, where 4 Seasons Coffee is still served and brewed with care. Their coffee and the care taken in the roasting process led to a strong following as they grew and moved to a larger roasting facility in 2001. 4 Seasons is served with pride at many of the finest restaurants

in Spokane. They started something big, and the local coffee scene has exploded with so much variety and high-quality roasters that it’s pure pleasure for coffee lovers here to support local coffee roasters. Simon Thompson opened Cravens Coffee in 1993 after a stint with Seattle’s Best Coffee. He is committed to finding the finest beans around the world to bring home to Spokane. Simon travels routinely to create and confirm relationships with the farmers whom he buys from and to see that they are practicing quality farming techniques. He feels this ability to know his farmer personally is what sets his coffee apart from the others. Thompson feels that the period between 1996 and 2006 was a golden time for coffee and describes himself and some of the other local roasters as second-wave roasters following the larger producers such as Starbucks, Peets and Green Mountain. And he thinks we are witnessing yet a third wave with smaller micro-roasters who want to ply their craft in a coffee-friendly city. DOMA came on the scene in 2000 with a passion for coffee, sourcing beans in direct relationships with farmers and paying top prices for beans; often well above standard Fair Trade pricing. They have placed sustainable practices in the heart of their mission and focus on food co-ops, small markets and cafés that practice quality consistent preparation. Deborah Di Bernardo opened Roast House just a few years ago after learning to love coffee while working with Thomas Hammer locally. Roast House sources beans globally from small farms and has a strong dedication to helping farmers make a living wage, especially women. Di Bernardo is the only roaster in the west to offer Congolese coffee


grown by the widows and families left without incomes after 20 years of war in that country. It is having a direct impact on their lives enabling them to support themselves. Spokane is also attracting coffee roasters from many other cities who want to craft their product with independence, such as Jeremy Williamson who came from Portland to Spokane to make his mark with Manners Coffee. Many coffee shops are pouring other brew methods besides espresso. Lindaman’s offers a brew bar with high-flavor drip coffee on individual pours and cold-brewed coffee. They were the first to offer Café Corretto; delectable coffees made with liquors and spirits. Now, one can find more than a few coffee houses are following suit and offering more methods to enjoy the java. The roasters and coffee cafés on the following page are dedicated to roasting and brewing coffee in its finest form to offer you a delicious coffee experience. You’ll have to drive past that logo shop and take a closer look in your neighborhood or take an extra look for that quaint café downtown; but for a taste of some great coffee, prepared with skill by people who care, you’ll want to stick with our Spokane experts’ touch. EJ’s Bistro opened its doors to Browne’s Addition on September 11, 2011, located next to the historic EJ Roberts Mansion. While catering and providing meals for events held at the mansion, the food grew to a full-blown identity all its own, thus inspiring the mansion’s owner, Mary Moltke, to purchase the historic house next door, with the intention of building a commercial kitchen. So Mary took the helm, obtaining her contractor’s license. She had the former apartment house space renovated, remodeling the space while being sensitive to the historic nature of the building. While she had done a great deal of construction and remodeling related to her historic rentals and EJ Roberts Mansion, she had never taken on a project of this magnitude. According to Mary, it was a long and arduous project to comply with current code while trying to maintain historic character. Mary’s heart is dedicated to her restaurant, and she enjoys being involved in all aspects of the business, spending much of her time at EJ’s. The small casual bistro offers a relaxed, comfortable, historic atmosphere, maintaining its own separate identity from the mansion’s upscale Bed and Breakfast. EJ’s is a great fit for the Browne’s Addition neighborhood, with its inviting patio, gas fire pits, evolving seasonal menu made with fresh organic ingredients as much as possible, and delicious cocktails sure to satisfy. EJ's also offers weekend brunch 9am to 1pm Saturday and Sunday. Like the mansion next door, it can be used for private events or open to the public. Must tries are the Beef-Lamb Burger (50/50) and the Baby Yukon Potatoes with rosemary butter and parmesan, and the Basil Drop cocktail. Menu items can be fully accommodated for gluten-free—EJ’s is a big supporter of the local Fusion Flours—and vegetarian guests. You will find local Dry Fly Distilling and Townshend Cellar on the drink list, as well as other local wines and brews. SIDE ADDITION From Browne’s Addition to Cheney, Spokane’s West Side is home to the beautiful Northwest Museum of Arts and Culture (MAC), the Spokane International Airport and Fairchild Airforce Base in Airway Heights and Eastern Washington University Campus in Cheney. In the 1970s and ’80s, Browne's Addition was considered less than desirable. Run-down houses with knee-high grass were a common sight; crime was rampant. When potential renters responded to an apartment ad and discovered its location, their response would be an automatic, “No thanks.” The neighborhood was known as Hippie Haven. Then, in the early ’80s, a group of optimistic neighbors began a branding campaign to put forth the neighborhood as historic—not just old. They came up with a logo and directed neighborhood funds received through a HUD grant to be spent on old-style street signs, historic plaques, a traffic turn-a-round and a replica gazebo in Coeur d’Alene Park. The branding campaign worked, and over the years, the perception of the neighborhood gradually changed. As the apartment occupancy rate increased, so did the revenue the building owners were willing to reinvest. Today, the upscale neighborhood is now full of classy, hip and high-end condos and refurbished stately homes. Take a stroll in Browne’s Addition to see how this magnificent area has once again come alive, allowing for growth of new businesses. This area is home to

The corner of Cannon Street and West Pacific is home to the Elk Public House, the popular neighborhood pub for all ages, with El Que taco bar and tequila shack out back. South on Highway 395 to Pullman at Cheney-Spokane Road you will find Chaps Café and Cake Bakery next to the Trading Company grocery store. Chaps is a charming and cozy café, serving breakfast, lunch and dinner, with occasional live music on the weekends for dinner. Also in this location is Latah Bistro, offering bistro fare with live music and top-notch service. On Sunset Highway, State Route 2, the Rusty Moose Bar and Grill is near the Hilton

Garden Inn. A little farther west to Hayford Road then north is the ever-entertaining Northern Quest Resort and Casino and its numerous restaurants and clubs. This is where you will find Masselow's, a fourdiamond award-winning restaurant who also received the Washington Restaurant Association's Fine Dining award this year. The west plains area is where Airway Heights, Medical Lake and Four Lakes surround Fairchild Airforce Base. Klink’s on the Lake is at Williams Lake, a surprising upscale restaurant that is way out of the way but worth the trip when you want to take the time for a drive and a little conversation while in search of some great food. With 35 years of success, multiple locations and a dozen restaurants in Spokane opened by people who have gone through their manager training, one would think that The Onion Bar and Grill and Frank’s Diner are the work of a national chain. Not so. These local treasures are owned and operated by local owners Kenneth and Christy Belisle, and retired business partners and founders Larry and Jan Brown. Both families still live, work and play right here in Spokane. Originally, The Downtown Onion Bar and Grill was established by Larry Brown in 1978. The Onion was the first of its kind and has appeared in countless write up and several movies. One of the most famous was Vision Quest with Matthew Modine, Linda Fiorentino and Madonna. For the past decade, Ken has been an owner and managing partner. Today, he and his wife Christy are setting the pace and tone for the next generation of The Onion Bar and Grill, and of Franks Diner, both Spokane “Landmark” Restaurants. “We have multiple generations of guests who frequent The Onion,” says Ken. “We have

always been guest directed and listen with genuine interest to what they like and don’t like." The Onion menus still offer all the great meals that people remember, but today they are better than ever. As Ken says, "The Onion’s culinary team prepares nearly everything from scratch daily using the finest products and fresh local ingredients. Our new menu speaks for itself, and our guests are loving it." Ken and Christy are parents with a young daughter and are committed to being family friendly. “All our meals must be affordable, fun, delicious and prepared using only the highest quality ingredients and thoughtful cooking methods. Our culinary team’s focus is to make that happen across the board in all Landmark Restaurants. The Onion has brought cutting-edge cooking methods to their classic American cuisine,” Ken insists. “Even our children’s menu has recently won a National award for healthier alternatives.” “Another great strength of the company has always been our longtime crew members working with our newer teams,” says Ken, “such as Sue McCoy, who still works on the

culinary board and with the kitchen teams each week.” Sue was the Downtown Onion chef for 20 years and just celebrated her 28th year with Landmark. Sue adds, “In many ways I am retired, but working here part time allows me to use all my years of experience helping build the next generation of Onion restaurants. The Onion— and Landmark—has been the most wonderful family restaurant company I have ever known. They value their people like no other, and I am proud to support this next generation of Onion culinary professionals.” Team Onion is also very excited to introduce their newest member, John Little. John has an extensive hospitality background and is now The Onion’s operations manager. John says about working at The Onion: “I am excited and proud to be a part of such a great organization. which is a quality I deeply admire. It is also what made this such a good fit for me.” The North Onion is a beautiful, large facility, so during its current remodel they stayed with the original architecture, which they accentuated with new tones, fabrics and lighting. It is a terrific family and large-group restaurant with a new ‘Kids Zone,’ which offers games and non-stop cartoons. Fun! With countless plasma TVs, a huge local draft beer and wine selection, Happy Hour twice daily and all day Sunday in the lounge; The North Onion is the place to be to enjoy football season. The Downtown Onion’s décor and menu have grown up a lot from its eclectic 80’s neon. During its recent remodel, they brought The Downtown Onion back to its natural architectural roots. The beautiful original 100-year-old wood bar and historic turn-of-the-century ornate moldings, the leaded glass, thick wood columns, Alabaster chandeliers and street-side sidewalk sunroom lend the diner a chic New York metropolitan sidewalk bistro vibe. The downtown diner is from 1906 and is housed in Car No. 1787. It has been serving guests

Penne Isabella SERVES 1

INGREDIENTS 2 each Hot Italian Sausages ½ oz. Pine Nuts 2 oz. Fresh Ricotta Cheese 8 oz. Cooked Penne (4 oz. raw pasta) 2 Tbsp. Butter 6 oz. Dry White Wine 2 oz. Extra Virgin Olive Oil Pinch Basil 4 Tbsp. Sliced Garlic ½ tsp. Pepper ½ tsp. Salt Pinch Parmesan Pinch Parsley

METHOD Cook penne according to directions. In a separate hot sauté pan, add sliced sausage. Sear until chard on one side. Add sliced garlic and pine nuts. Sauté for 20 seconds then deglaze with 6 oz. of Chablis. Return to heat and add basil, salt and pepper and reduce by 50 percent. Add butter and penne pasta. Toss cooked penne until desired temperature is achieved. Remove from heat and toss with fresh ricotta. Make sure that all penne is coated with ricotta. Plate and garnish with parmesan and parsley.

Restaurant and Bakery NEW OWNERS; SAME GREAT RESTAURANT Europa first opened its doors back in 1982 just south of the intersection of First Avenue and Wall Street near the railroad bridge in Downtown Spokane. Since day one, Europa has been well received and a Spokane favorite, and after more than three decades in business—32 years to be exact—this beloved restaurant is still going strong. Earlier this year, the restaurant changed ownership; the first time in more than two decades. In February, after running the restaurant successfully for 22 years, Janice and Dennis Maas said goodbye, handing over the keys and entrusting the restaurant’s future to a new husband-and-wife team, Jeff and Aja Engels. The story of Dry Fly Distillery is a bit of a fishing tale—with a twist— which is about all you’d want to add to their award-winning product. Six years ago, Kent Fleischmann and Don Poffenroth were out doing a little fishing and sipping on what was considered the world’s finest vodka when they wondered what happened to the spirit: When did it become a flavorless, odorless base for cocktails? They refuse to disclose the brand that offended their palates, but they decided that liquor needed to be made better—so that’s what they did. Instead of lamenting the demise of vodka, they quit their corporate jobs and drafted a bill that would make distilling legal in Washington State. These maverick distillers have not only provided Spokane with a treasured local business, but the entire state with a new industry. When hatching their plan, they decided to do it right. They chose to be very inefficient and take no short cuts, which is generally the way of small distilleries. They use only locally grown ingredients including their wheat, which is provided by a 105-year-old homesteaded family farm in Rosalia, Wash. The boys at Dry Fly work hard to support the community that supports them. In doing so, they have created award-wining, memorable, world-class spirits and a heck of a fishing tale. As a result, the community is hooked. Their portfolio includes vodka, gin and limited-release, small-batch whiskies, which are sold nationally. Dry Fly has won numerous awards for its vodka, along with awards for their whiskey and gin. In 2011, Dry Fly was named Distillery of the Year by the American Distilling Institute. The North Side is Spokane’s fastest growing neighborhood. Division Street runs north from downtown into a kaleidoscope of fast food, national chains and international cuisine restaurants. The variety of options includes most major chains, and the cuisine flairs of Chinese, Japanese, Mexican, Russian, Indian and Thai … all handy stops for shoppers at Northtown Mall and the numerous shopping centers cascading north near the “Y” and along Francis.

It takes some looking to find the local hot spots tucked away like precious hidden gems among the neighborhoods surrounding these high-traffic commercial zones. Not far from downtown, Downriver Grill is one of those favorites nestled in the neighborhood near Audubon Park, south of Garland Avenue and just west of the park. This restaurant is a must for your list, along with The Flying Goat across the street, where you have to stop in and taste their unique and delicious award-winning pizzas. A

little further east on Northwest Boulevard you’ll find the Little Garden Café and Rancho Chico. Along Northwest Boulevard are several coffee cafés and other eateries with personalities all their own. Going north, where Indiana magically turns into Northwest Boulevard at the intersection of Monroe, will bring you to the popular local Greek and Mediterranean restaurant Azar’s on Monroe. There you will find an authentic menu and charming Greek atmosphere.

On Garland Avenue lies a neighborhood full of charm and ambiance; like walking downtown in one of Norman Rockwell’s paintings. The Garland District is home to the historic Garland Theater, with movies at far lower prices than the big-box movie theaters, and the tiny Bon Bon cocktail lounge. Get there early; it can be crowded! Just down the street, The Blue Door Theatre performances are every Friday night, offering improv and sketch comedy suitable for all ages. Shopping in quaint shops in this little district is an appetite builder. Restaurants here offer family style eateries: Kim’s Teriyaki near the Garland Theater, The Rocket Bakery coffee shop, Celebrations Cupcakes, The Milk Bottle and Ferguson’s Diner. Pubs and bars in this neighborhood include the Garland Pub and Grill, Rick’s Ringside Pub, the Brown Derby Tavern and the Garland Drinkery. North on Wall Street you will find the Wall Street Diner and Morning Sun Bakery. At West Francis lies the Five Mile Shopping Center where Five Mile Heights Pizza Parlor has been a longtime favorite for Spokane families. Also located there are GoGo Burritos, Das Stein House, Pita Pit and Tonicx lounge. Heading east along Francis will bring you to the popular Swinging Doors Tavern, Mamma Mia’s Italian Restaurant and Aloha Island Grill. At the intersection of Division and Francis is the Aces Casino and nearby Tomato Street, a fun family Italian restaurant, and north to Flamin’ Joes, a sports bar boasting a menu with 27 different wing sauces. Spokane’s South Hill encompasses several different areas, all equally worth a mention— and a visit. The lower South Hill area includes the medical centers of both Sacred Heart and Deaconess hospitals. This is where doctors’ offices and medical buildings are the scenery, and the nearby restaurants pepper the steep hillside landscape in between the trees and tall buildings. Located south of I-90 paralleling Downtown Spokane, the lower South Hill encompasses approximately Fifth through 14th avenues, first along Grand Avenue, accessible from South Stevens downtown. The rest of the upper South Hill branches out from 14th up the hill to 29th, and then farther up to 57th Avenue. The Medical Center area is focused on serving those who work and visit the doctors’ offices there, and nearby Beau K Florist is helpful for that hospital visit. The east side of the lower South Hill is the

FERRANTE VINO Tony and Robbie Ferrante were introduced to Paul Kitzke of Kitzke Cellars in Richland, Wash., by a favorite Ferrante’s customer, Kate Hart. Paul and Kate are both Ferris graduates. Together with Tony and Robbie, they came up with a wine that would pair well with Ferrante’s fresh Italian cuisine. Ferrante’s also offers a staff-tasted and approved selection of regional and Italian wines.

LOCAL ARTISTS Dewi Campbell has been a part-time employee and featured jewelry artist in the shop for many years; one that Ferrante’s customers are happy to see when they come in and she is managing the counter. Her jewelry and her personality have a loyal following. Marisa Lewis of Mishakaudi Jewelry in Spokane is becoming a successful jewelry maker nationwide. Her creative, affordably priced pieces have sold well in the marketplace before she became famous. In March 2005, Spokane Valley welcomed a new restaurant, which opened its doors and introduced unfamiliar and exciting flavors for its guests to discover. Eight years later, Max at Mirabeau continues to offer its guest fresh tastes, with menu items offering many locally grown and produced products. Max strives to incorporate the best the surrounding area has to offer, and using the best ingredients available is an integral part of it mission. “Here in the Inland Northwest, you can find some of the best food products in the world!” says Food and Beverage Director Garth Hicks. “It would be crazy not to use the bounty the land is offering up.” To ensure quality—from the purveyor to the customer—the staff at Max works closely with a variety of sources. Once they have the ingredients, each dish is consistently prepared the same way, following an exact recipe, using the same production techniques, insisting every dish is the best it can be each and every time it is made.

allergies and food preferences, starting with raw ingredients allows for the chefs to deconstruct and reconstruct existing dishes to cater to those needs. “From dairy free to gluten free, to raw, to vegan, no dietary need puts a kink into the love and passion we put into every dish,” says Garth. Each chef and cook is trained using Max’s developed recipes, complete with pictures, tasting sauces at every step of production to ensure quality. To keep the menu bright, Max chefs are consistently exploring new flavors and experimenting with new dishes and ingredients, along with perfecting existing menu items. And the chefs and cooks don’t stop there. Once the food is prepared, it is not thrown onto a plate. Rather, each dish is plated so that it is visually appealing before the guest ever tastes it. As Garth says, “You eat with your eyes first!” With five menus offering 100-plus menu items served 20 hours a day, Max truly has something for everybody. PALOUSE THUNDER CAKE

MAX at Mirabeau / Spokane Valley SERVES 8

INGREDIENTS ½ lb. Bittersweet Chocolate ½ lb. Butter 1 c. Sugar 6 each Eggs 1 tsp. Vanilla 1 c. Shepherds Flour ½ tsp. Salt ½ tsp. Baking Powder 24 Dark Chocolate Disks (3 disks per cone)

METHOD Preheat oven to 300˚F. First melt chocolate in double boiler. Whip eggs with sugar until frothy, temper eggs with chocolate, then combine with the rest of the chocolate. Combine dry ingredients well in bowl, mix into chocolate mixture. Do not over mix. Spray paper cones with oil. Place in paper soda cups. Place in deep baking dish, at least 3-inches deep. Pour batter into cups, filling them ½-inch from the top. Insert three chocolate disks in top of batter, barely covering. Bake 40 to 45 minutes. Center should be somewhat moist.

Robert Karl Cellars is devoted to bringing the beautiful gift of wine from the earth to your table. From their early accolades and the plans they have followed from the beginning of their endeavor, the excellence of the wines is no accident. Winemakers/owners Joe and Rebecca Gunselman have a passion for winemaking and chose the Horse Heaven Hills American Viticultural Area to grow their grapes and their wine business. The Horse Heaven Hills AVA is considered one of the most prominent 6,000-plus acres to grow grapes in the entire Columbia Valley, and Joe believes that Horse Heaven Hills grows the best Cabernet in the world. As Rebecca says, “The very best wines require the very best grapes. That’s why we are totally committed to the Horse Heaven Hills … committed to make the best.” And although she does the marketing

for the winery, she believes that the wine sells itself. Joe was first inspired to be a winemaker while working toward his MBA, while doing a marketing project for a family winery. He fell for the winery business right then and there. Joe and Rebecca started looking—in Joe’s usual scientific method—for the best place, where the very best grapes were coming from, and they found exactly that in Washington State, according to Rebecca. They believe that the terrior (soil and locale), the climate and the Columbia Valley’s angled slopes come together to create the most ideal growing conditions in the world. This is the place where the Gunselmans chose to live. Wine is their passion and their job. In doing it well they have a lifestyle they love. SPOKANE’S NEWEST OLD WINERY People have been watching. They have seen the brick cleaned up, the windows papered, the scent of fresh paint and the sounds of renovation going on within its walls; the reinvention of this 100-year-old historic building in Downtown Spokane has been no small task. Two wineries come together here to create a new life for this downtown corner and to bring out the best in each other. The wine tasters in town are excited to see Bridge Press and EMVY cellars’ vision come to life. Once home to Foresters of America Royal No. 19, the winery owners are utilizing the historic qualities of the original building to create the new winery with a re-purposed vintage chic that will add a fine feather to the cap of Downtown Spokane. It’s another historic

preservation to be counted among the many in Spokane that are on the city’s historic register and soon also on the National Historic Register. Owners Brian and Melody Padrta of Bridge Press Cellars and Mark and Valerie Wilkerson of EMVY Cellars have been determined to keep the romance alive in the building. The two wineries share the building and equipment to make their own unique wines. The new tasting room is being restored on the south side of the building. “The brick walls, original tin ceilings and southern exposure; it’s all about feeling relaxed, welcomed and taken good care of by our wonderful staff,” says Melody. A new patio area on the east side will allow seasonal outdoor sipping and doubles as a crush pad at harvest time. The basement barrel room is reminiscent of a European cellar with the original stone walls and aromas of aging wine laid down in barrels. “It’s so romantic and just an elegant space for dinners and small parties, particularly wedding rehearsal dinners or wedding receptions,” says Valerie. Modern amenities and functions such as fire protection have brought the building into compliance with modern-day codes and city regulations. The second floor is home to a huge ballroom with a hardwood floor and full theatrical raised

stage, bar room and a room perfect for the installation of a commercial kitchen, with a separate entrance on the west side. They plan to lease it to a business that has an interest in restoring it as an additional event facility to further expand the types of events that the winery can host. As Valerie says, “Our dream would be to open in time for some of this years’ summer wedding season. We know of a couple of brides who have that same dream!” Both couples enjoy the entertaining side of the wine business and meeting fellow wine lovers. With the opening of their tasting room last year, they enjoyed providing entertainment and bringing people together to share it with them. The winery, the wines and the restoration of the Foresters building have become a labor of love for both Bridge Press and EMVY. “Our goal is for you to feel it, too; from the time you walk through the door to the time your wine hits the glass,” says Melody. The best reason to visit the winery? To see the way they have kept the history and charm alive while refining it into a winemaking and celebrating facility. The most fun for Val is the unexpected “oohhs and aahhs” when people enter the building—at the moment they realize that the curbside appeal could not reflect the beauty within.

Brian and Melody Padrta of Bridge Press Cellars started their winemaking quest in 2005 as a collaborative project with Dave Westfall and John Mueller of Grande Ronde Cellars. They met as teenage caddies for a bridge tournament at the Ridpath Hotel, and their bottles have sported the name and imagery of the game from the start. Their son Edward also joins in the fun working at the winery along with them. Their Bridge Press court began with cabernet sauvignon, and now offers a red blend, 2012 Rosé, 2012 Pinot Blanc, 2012 Riesling, and a 2009 Cabernet Sauvignon. The cabernet sauvignon is the king of their court, laid down in 100-percent French oak for 20 months and in bottle for at least a year. Best Seller: The 2009 Cabernet Sauvignon Gotta Taste!: Their newest wine coming out, the 2012 Riesling. EMVY Cellars is an acronym of sorts with a play on letters if you will. M or EM for Mark and V or VY for Valerie has brought them together for EMVY, as they always are in life, a husband-and-wife team with a passion for bringing people together to enjoy wine. They enjoy meeting people at the tasting room, watching someone try the wine and seeing they enjoy it. They got the inspiration to formalize their winemaking hobby into the business with a little help from their friends. According to Valerie, “We took a couple of trips, both to France and Italy, with John Allen of Vino Wine Shop, and experienced tasting some of the region’s most prestigious wines. We had access to wineries that took our breath away.” These trips triggered in Mark a serious interest in wine and learning about the who, what and how of winemaking. With no background of winemaking, Mark and Valerie relied on Grande Ronde Cellars to help them get started. Adds Valerie: “And literally, it was a round table of friends who created the name and blended our first wine, still called “Devotion.” The first 2002 Devotion was received even better than they expected. “The most fun for both of us getting started in this ‘hobby’ is that our wine is above average and people like it!” says Val. She says they originally blended wines they liked to drink themselves, and it was an unexpected bonus that others enjoy drinking their wines as well. “The original label states, “Enjoy a few bottles with friends,” and we are thrilled that so many people have come to love our wines.” The 2002 Devotion is a blend of Cabernet Sauvignon and Merlot—both from Seven Hills

Vineyard for their first release. Their current wine lineup includes the Bordeaux-style 2008 Devotion, (recently rated 92 points by Wine Spectator) a non-vintage VEBA Rouge, 2009 VEBA Blanc and 2011 Chenin Blanc. The standout is their 2007 Devotion, which has been very well received and is selling well to make EMVY proud. A Red Mountain Merlot and Syrah will be released in 2013. WINING IT UP AT THE CELLAR The Cellar at 317 Sherman is a unique and inviting destination spot for dinner, drinks and music. “With the new location, we started fresh,” says owner Patricia Power. The columns have been wrapped with beautiful stained wood, ceiling refurbished, new lighting, bars with touches of backlit onyx, all bringing new warmth to the building. “As we were updating the 105-year-old building, we tried to keep the architecture and interesting elements from the original building but give it a modern feel, especially in the lower lounge area where we have beautifully exposed stone walls,” adds owner Tom Power. There are three levels to enjoy: The Mezzanine, which overlooks the main floor, is a unique dining area that can accommodate up to 40-guest reception style or 30-guest table seating for private parties, business meetings and small receptions.

The Cellar Lounge below street level offers seating for 80 including a relaxing sofa area. Voted Best Wine List by the Idaho Business Journal 2013, the 3,000 bottle extensive wine collection is housed behind a temperaturecontrolled glass display. The Cellar offers the only Enomatic self-serve wine-by-the-glass system in the area. “We wanted to create a completely new wine experience for people,” says Patricia. In the new lounge, guests can interact directly making wine-by-the-glass purchases using a prepaid card: a one-ounce taste, a half or full glass of wine, self served. This system allows access to more wines by the glass, along with more expensive wines one wouldn’t normally have access to. Eight white and 16 red wines range from average to high-end wines, without having to commit to the full bottle. “The downstairs is a very comfortable, casual, unpretentious space where you can go and enjoy

a great wine experience or vodka martini from our fully stocked bar. It’s a hands-on social event,” says Tom. The street-level main floor has table seating for 100, a grand piano and pianist for dinner music and a second full bar. When it comes to the menu, there are still The Cellar favorites: Lamb Shank, Flank Steak and Baked Brie. They have added more steaks to the menu, signature pizzas and fresh fish specials. In addition to wine, the drink menu features classic hand-mixed cocktails with a focus on a selection of fine Scotch and Whiskey. Stop in and stay a while. You’ll be in no rush to leave.

LOCAL BREWS WHEN IT COMES TO GREAT LOCALLY BREWED BEER, SPOKANE’S CUP—OR, RATHER, ITS PINT GLASS—INDEED RUNNETH OVER. STORY BY: RICK BONINO PHOTOS BY: BRETT FONTANA

Five years ago, only three places around here were making their own beer. Today, the total is nine and counting, with new ones surfacing all the time. And they’re producing suds to suit almost every taste, from bashful blondes to hoppy India pale ales to hearty stouts. Some say we’re simply catching up. “If Bend [Oregon] can have 10 to 12 craft breweries of a decent size, Spokane can have 10,” says No-Li Brewhouse’s John Bryant. No-Li—formerly Northern Lights—is the oldest brewery in town, and the biggest. Since its relaunch under the new name in May 2012, it’s been winning awards around the world, including a coveted gold medal for its Crystal Bitter at the Great American Beer Festival. Despite what the name might suggest, Crystal Bitter is a well-balanced, burgundy-colored ale that’s apt to please beginners and beer geeks alike. The more adventurous will enjoy No-

Li’s Inland Imperial series, including Jet Star Imperial IPA and Wrecking Ball Imperial Stout. A pair of relative newcomers, Twelve String and Iron Goat, are carving out their own niches. Most everything at Twelve String is guitarthemed, reflecting brewer/owner Terry Hackler’s other passion in life. A former contractor and accomplished carpenter, he’s also responsible for the tasteful woodwork at his Spokane Valley taproom. Beer-wise, while Terry likes his hops, one of his biggest sellers is the dryly fruity, mellow Mango Mambo. Intended as a summer seasonal, it’s proved so popular that he keeps it on yearround. Iron Goat’s namesake is the mechanical garbage-eating goat sculpture in Riverfront Park. With oil and pastel painter Sheila Evans as one of four partners (two married couples), the vibe is artistic at the brewery’s tasting room, in a

century-old brick industrial building that also houses Sheila’s studio. You can’t go wrong with any of the goatthemed brews, from Bleating Red to Head Butt IPA to the smooth Goatmeal Stout. Just down the street, the Budge Brothers, Brad and Bruce, have won fans with their hoppy, orange-hued Orangutan Pale Ale. Big Barn Brewing, at Bodacious Berries and Fruit on Green Bluff, produces an assortment of homespun beers during the growing season that utilize the bounty of the bluff, such as berries, honey and pumpkins. For more exotic tastes, Ramblin’ Road is serving up spicy, fruity Belgian-style beers, including an IFA (India Farmhouse Ale) that combines the brewing traditions of rural Southwest Belgium with the hop-heavy India pale ales common to the Pacific Northwest. In Downtown Spokane, the Steam Plant,

Bernie Duenwald’s father, daughter and son, respectively, there’s a hoppy Seven Seventy India pale lager that Bernie will put up against anyone’s IPA. Both Golden Hills and River City are production breweries that don’t serve beer onpremise, meaning they have to rely on bars and restaurants to spread their wares. Fortunately, the number of places pouring local and regional beers is growing almost as rapidly as the brewery ranks, from larger operations such as Manito Tap House, Post Street Ale House and Waddell’s to cozier neighborhood joints like the Hop Shop, Pints Alehouse and Jones Radiator. Many other establishments that offer draft beer might carry a hometown handle or two. “The market is so much bigger than what it was,” says River City’s Gage Stromberg. “So many more places are serving craft beer in a

serious way; so many more people are going out and buying craft beer.” So if you haven’t already, why not join them? You’ll be supporting local businesses, learning new things and meeting new people along the way. You might even gain a new outlook on life. In the immortal words of Edgar Allen Poe: “Who cares how time advances? I am drinking ale today.” [SS]

formerly associated with the Coeur d’Alene Brewing Co., continues to make a wide range of house beers from Strawberry Blonde to the popular Double Stack Stout. Meanwhile, the family who owns Coeur d’Alene Brewing has launched River City Brewing in downtown’s Carnegie Square District. The flagship is River City Red, an easydrinking, lightly roasty amber ale. The brewery also is reviving some styles under the Coeur d’Alene name, including the huckleberry ale and vanilla bourbon stout. To the west, Golden Hills Brewing in Airway Heights is making its mark with a series of cleanfinishing German-style lagers—think Budweiser, but far more flavorful. That’s uncommon among smaller-scale brewers, because the extra conditioning time involved ties up tank space. Along with Clem’s Gold, the reddish Lizzy’s Lager and Ben’s Brown, named after brewmaster

Pullman, Wash., is home to Merry Cellars Winery and east to Moscow, Idaho, lies Wawawai Canyon Winery and Camas Prairie Winery. Wawawai Canyon began with planting 12 different varietals in 1994, and Merry Cellars has been hand crafting premium wines on the Palouse since 2004. The Lewis-Clark Valley is home to Clearwater Canyon Vineyard and Winery, Basalt Cellars and Colter’s Creek Vineyard and Winery, with their new tasting room and wine bar in Julietta on a beautiful back road into Moscow. During the late 1800s, wineries from the Lewis-Clark Valley were producing awardwinning wines from up to 40 varieties of grapes in local vineyards throughout the fertile temperate Clearwater River terrain. growing industry there. In recent years, the valley is being replanted and nurtured with care to produce premium quality fruits for the wineries there. Now, a re-invented and promising wine country, with six wineries making notable wines with grapes from the valley and beyond, are achieving accolades all their own. This is a tasting loop-tour local wine lovers can enjoy, just a short overnighter from home.
