appetites for adventure and dining excellence. Each ship’s Executive Chef brings menu concepts, collectively designed by our Director of Hotel Operations, Ana Esteves, to life daily. Count on them to keep your expeditionary spirit well fed, so to speak, and for daily diversity and flavours from varying regions. Our pioneering culinary program is rooted in sustainability. We obtain fresh vegetables from a local grower in the Falklands, and fresh lamb from an island rancher. Our goal is for our guests to experience the geography through the food served wherever possible. Dining is part of the expedition experience and no assigned seating makes for easy mingling with congenial fellow guests and expedition staffers.
