in the beginning...

A few liquor retailers dusted off the cobwebs on a couple bottles of old port and sat down and had a meaningful discussion on selling booze while quaffing the rich creamy nectar. It was 21 years ago, and port drinking was then de rigueur – just. The result of that gathering was the formation of Liquor Barons, an independently-owned and operated retail liquor co-operative. The mission was to use combined buying power and offer a wider range of competitively-priced goods to customers, with a slant on local products. And the retailers were keen to remain individually flexible to target their own specific market. The philosophy remains the same today and there are now a whopping 41 stores in the group selling a huge range of liquor, with perhaps a few less port labels than were seen in the early nineties. As the store proprietors are the owners of Liquor Barons, they are enthusiastic about the brand, customer service is their highest priority and their product knowledge is second to none. The Barons has its own tasting panel consisting of representatives from specialist wine stores within the group and also well-known wine industry personalities. The panel meets fortnightly and systematically sifts through dozens of new-release wines, discards the dodgy ones and finds suitable additions for the group’s portfolio, based on quality and price. The panel’s reviews are then available to store owners to make their own buying decisions built on their customers’ tastes and budget. The Barons produce a not-to-be-missed colour catalogue of wine reviews each quarter called On the Vine and release two other prominent publications for its customers, Wine Barons and this BYO magazine. Liquor Barons is the dominant independent liquor brand in Western Australia with a store in most suburbs. It is imaginative and progressive and works continuously to improve sales for its members. The group won the Retail Banner Group of the Year at the 2011 Australian Liquor Industry Awards.

World Class Wines by Peter Forrestal

For a wine from Western Australia to be considered a world-class wine, I believe it needs to be capable of being served at a dinner table, in any company, anywhere in the world. It doesn’t have to be the wine of the night but it needs to sit comfortably in that company. It also needs to be capable of being cellared for at least ten and perhaps 20 years.

Great Southern Riesling It’s a recent phenomenon but I believe that a critical mass of riesling from the Great Southern deserve to be regarded as world-class. Increased vine age, better viticulture, and more instinctive, smarter winemaking have all contributed to this: as has the greater status that riesling enjoys in the region. Frankland Estate, Xabregas, Cherubino and Howard Park all have several rieslings in impressive portfolios. Castelli, Castle Rock, Ferngrove, Gilberts, Kerrigan & Berry, Three Drops, West Cape Howe have all won trophies in recent times for their rieslings and produce pristine whites of great intensity, that are taut, fine and zippy. Forest Hill and Trevelen Farm, too, have mature vineyards and are capable of making riesling to match the region’s best. At their best, all these will be world-class wines. Margaret River Chardonnay From its earliest days when a tasting of chardonnays of the world by Decanter in 1984 heralded the arrival of Leeuwin Estate, Margaret River has shown its potential for this variety. Wine shows around the country and blind tastings in the years since then have clearly established the region as home to Australia’s best chardonnays and producer of many world-class wines. Initially, Moss Wood, Cullen and Pierro led the way and over the years they have been joined by Vasse Felix ‘Heytesbury’, Xanadu, Voyager Estate, Devil’s Lair (especially Ninth Chamber), Brookland Valley, Cape Mentelle, Woodlands and Lenton Brae. In more recent times, newcomers Fraser Gallop, Hutton ‘Triptich’, Atticus, Heydon ‘Willow’, Higher Plane and McHenry Hohnen have all shown that they have the potential to make Margaret River chardonnay of the finest quality. At their best, all of these are capable of making world-class chardonnays to drink along with the best of Burgundy at the dinner table. Margaret River Cabernet Sauvignon It was cabernet that first made an impact in Margaret River and, right from the start, they drew the attention of wine lovers to the region. Moss Wood, Vasse Felix and Cullen made the biggest impact until Cape Mentelle took the country’s collective breath away with back-to-back Jimmy Watson Trophy wins in 1983 and 1984. Margaret River had arrived on the national scene as a region for cabernet of the highest quality. Since, then it has been tussling with Coonawarra over which is better. The pioneers remain among the best producers of cabernet along with Brookland Valley, Devil’s Lair, Fraser Gallop, Gralyn, Hay Shed Hill, Houghton ‘Gladstones’ Howard Park, Juniper Estate, Leeuwin Estate, Sandalford, Stella Bella ‘Serie Luminosa’, Voyager, Woodlands and Xanadu. Place the best of these Margaret River cabernets alongside first or second growth Bordeaux over dinner and you’ll understand why they are regarded as worldclass wines.

The days are longer, the weather’s warmer and events that have been in hibernation through winter are starting to emerge. It’s the time for celebration and that means sparkling wine, French, Italian, Spanish and Australian. They will all come out to play with some of the biggest names on the planet linking to some of the biggest sporting events on the planet. The F1 circus is one such even early in the New Year when the distinctive brand livery of Mumm will be well to the fore. It’s been an expensive association for Mumm but one that has helped push its brand to number two behind Moet. One of the Mumm products sure to be at the forefront of their marketing push will be the Blanc de blanc which Chef de cave Didier Mariotti took around the country earlier this year on a strong marketing drive. And almost certainly LVMH will be push hard with their controversial Dom Perignon 2003. And of course next month they just about all come out with the Melbourne Spring Carnival responsible for the traditional annual spike in French champagne sales. But of course Australian sparkling wine has also emerged as a real force. The challenge is to get consumers to realise that the quality justifies the sometimes high price tags. The reality is that many of these Australian sparkling wines are every bit as good as some of the French non-vintage wines. Wines such as Domaine Chandon, Arras , Sir James and Jansz are made with the same fastidious attention to history and detail as their French counterparts. The wines have complexity and flavour profiles that can match it with the best. Other wines that offer plenty in this category include De Bortoli’s new Rococo, Yellowglen’s Perle, and Accolade’s Bay of Fires will have significant presence through this period as consumers look for any reason to celebrate with a glass of bubbles.

Gene Roddenbury passes away on October 24th 1991. The creator of Star Treck had a portion of his ashes taken on the 1992 Columbia Shuttle mission and again in a Celestis spacecraft on the Pegasus XL rocket in 1997. The spacecrafts orbit deteriorated and it disintergrated in the atmosphere in May 2002 along with the ashes of 22 individuals. One of those individuals ashes belonged to Timothy Leary, we are sure Tim would have thought it a blast!

Rum Rebellion

was the only armed government take over in Australian history.

William Bligh is renowned as the Commanding Lieutenant of the doomed vessel, the Bounty and that notorious mutiny that saw him and a small band of men tossed in a long boat and incredibly navigate their way to Kupang on the island of Timor’s western tip. Bligh had a reputation of being a firm disciplinarian, the main consideration when offered the position of Governor of New South Wales by Sir Joseph Banks. He was appointed in March 1805. Once he arrived in the colonial settlement he was confronted by a coinage short community that had accepted rum as its most trusted form of currency. This left the way open to all manner of corruption as persons in positions of authority, namely the New South Wales Corps. The Corps had access to the imported spirits via one John Macarthur, the pioneer of the Australian wool industry, who famously graced our now defunct two dollar note. Bligh put an end to this unequal trade plus many other dubious practices which earnt him the destain of many. He had Macarther arrested, which was not long lived. Under the command of Major George Johnston the Corps soon arrived at Bligh’s residence and put him under house arrest. This was another mutiny Bligh would have to survive. In 1813 the new Governor Lachlan Macquarie ordered that 40,000 Spanish Dollars be punched making a small coin which became known as ‘The Dump’ and a larger one which was called ‘The Holey Dollar’. The Holey Dollar and The Dump soon replaced rum as the currency of the colony and remained in circulation for the next 13 years. Whether the name fits the story is open for debate. Historians believe it was more a struggle for power between government and private entrepreneurs, sound familiar?

On August 28th 2012 a “Hannibal Head” silver Holey Dollar minted at the Lima mint in Peru sold at auction for $410,000.

As summer approaches try using Hendricks Gin in your gin and tonic with a simple thin slice of cucumber as a garnish. A good rule of thumb to keep your drink tasting as it should; make sure you’re using a ratio of two parts gin to five parts tonic water to your drink. If you’re a fan of the darker spirits then the versatility of the an Old Fashioned can appeal to different guests, either made with bourbon or rum. Old Fashioned Mix 60mls Buffalo Trace Bourbon with a couple of large chunky ice cubes. Then mix in 10mls of sugar syrup (sugar and water reduced in a saucepan) and a couple of dashes of Angostura Bitters. Add some more ice cubes and garnish with a twist of orange peel. The bartenders secret; stir this drink plenty, the dilution of the ice and mixing in the sugar is key to making this drink taste perfect.

The Explosion

of hand made craft beers It has becoming increasingly difficult to believe that there was a time that West Australians only drank Swan and Emu and Nescafe, consumed very little wine, and rarely dined out. One of the Little Creatures’ founders, Howard Cearns, believes that the beer revolution had its beginnings in the West was because of the more mature beer market here due to the state’s large British population. These were more open-minded and eager to drink ales rather than largers. It led to an influx of Irish pubs and made it possible for Phil Sexton and the team at Matilda Bay Brewery to introduce the Belgium-influenced Redback Wheat Beer and English-style dark ale, Dogbolter. The depth of flavour attracted a market to these beers. This was helped by linking it to sophisticated pubs with good food like the Sail and Anchor in Fremantle, a locality that was more cosmopolitan and more bohemian than most. Yallingup’s Bootleg Brewery gave more exposure to craft beers by combining their production with tourism. Their Wils Pils, an easy drinking pilsener and Raging Bull, a strong English-style dark ale, made their mark. This all happened at a time when Australians were discovering boutique wines and cheeses, looking for casual dining venues, and seeking more flavour in coffee and beers. Howard Cearns suggests that there is an analogy between what happened with beer and coffee. Beer was being made by a mixture of malt, yeast, water and one type of hops (pellets). Nescafe was made by adding water to freize dried beans. Hand crafted beers were made by infusing whole hop flowers which gave better aromas and deeper flavours. Baristas were roasting and crushing beans and infusing water. This has paved the way for small brewers to spearhead the introduction of new, richer and more complex styles.

Little Creatures Brewery was a landmark and gave the craft beer revolution huge momentum. Their Pale Ale was so refreshing with its hops giving substantial flavour hits of citrus and stone fruits yet balanced by restrained bitterness. They also impacted the mid-strength market with the full-flavoured toffee and caramel tones of the Rogers dark ale. Their Little Creatures facility at Fremantle has also boosted the marketing of these craft beers. One of the great success stories of the craft beer revolution has been the Swan Valley’s Feral Brewery. Its Feral Hop Hog is a sensational Indian Pale Ale (IPA) crammed full of hops: complex, clean and refreshing with well-balanced bitterness to finish. Its Swan Valley location is a tourist drawcard and its beers are widely available. Based in Fremantle, Gage Roads has two brisk selling beers – the flavoursome IPA Sleeping Giant and the Atomic Pale Ale. These have been the trend setters who with other innovators like Mountain Goat, Nail, and Colonial continue to grow this small segment of the market at a time when mainstream beers are either stable or in decline.

We saw the creation of the “Men in Skivvies” and children went Wiggle mad all over the world.

Cider is increasingly the drink of choice of a new wave of young drinkers. And its growth is not being lost on companies big and small seeking to take advantage of the cider phenomenon. The big national brands are experiencing unprecedented popularity but small boutique niche styles often very localised have also emerged. Cider has been around for centuries, perhaps thousands of years, having probably been made before Roman England. Certainly William and his conquering Normans played a significant role with the introduction in the UK of methods of production from northern France where orchards and vineyards flourish. In Australia it naturally followed that it would be part of our culture from the early settlements and as a general rule it was a much-localised product, rarely venturing into neighbouring towns. That, it seems, has changed with the arrival of the much-enjoyed cider from Sweden, Rekordelig. The sweeter styled cider comes in a range of flavours and has taken the country by storm, now the second most popular, just behind Strongbow but ahead of Mercury. Watch the bars and home BBQ’s this summer for the long tall glasses filled with ice and cider. At the same time as the arrival of overseas competitors the number of local smaller scale producers has also increased with a range of different ciders made from traditional apples and pears, as well as other fruits. Boutique ciders have also sprung up in traditional Australian wine regions such as the Yarra Valley, Margaret River, Pemberton, Beechworth and the Huon Valley. Cider is being enjoyed by a new demographic of young people who are looking for a less bloating alternative to beer. It appears to have no gender bias and appears to be equally popular for males and females. And the big companies are ramping up their spending to take advantage of this fastest growing segment of the market. CUB with its Strongbow, Mercury and Bulmers has three of the top five brands while Lion Nathan with its Tooheys Five Seeds has a healthy percentage of the market, With spring upon us, and summer around the corner, the light-refreshing boost of a cider is set to reach a new audience of drinkers.
